Sotiris Neophytidis, a Sommelier at Parklane Hotel in Limassol and winner for the last two years of the Cyprus Young Sommeliers Competition, has been awarded 3rd position in the final of the International Young Sommeliers Competition 2019, which took place in Gdansk in Poland last month. The Cyprus Young Sommelier of the Year Competition will take place at Kyperounda Winery in November between 20th and 22nd. This is an annual event which is considered very important for the development of professional sommeliers on the island. It is organised in cooperation with Cyprus Sommeliers Association. Cyprus will have a new “Best Young Sommelier“ very soon, but big congratulations to Sotiris for his outstanding international finishing position. It is one of his dreams to “win the international competitions organised by the International Association of Sommeliers (ASI)” someday, and at this rate, he is well on his way to turning that dream into reality.

He lives in Paphos with his wife, Niki and his son is studying at university in the UK.

“I UNDERSTAND THAT STUMBLING BLOCKS CHANGE YOUR PATH IN LIFE BUT THIS WAS HARD.”
TELL US ABOUT YOUR BACKGROUND. Both of my parents are Cypriot but I was born in South Africa. I was educated at a British School there and this was where my fascination and love for all things British, began. At school I loved drama and theatre studies. It was an academic school and I particularly enjoyed languages and art. My great joy at school was debating and public speaking in which I eventually majored. After school, I wanted to study media and journalism but in the South African era of Apartheid this was difficult to get into as a career. In the end, for my degree, I studied Graphic Design. I then went on to teach History of Art and Graphic Design. A turning point for me occurred when I was teaching art history to a group of students. The subject was the origins of pornography. We were looking at the painting by the French artist Jean-Honoré Fragonard, entitled “The Swing”. It is a very famous work and shows men looking up the skirt of a lady on a swing but it can be open to many interpretations. Everyone can interpret paintings in their own way and I found this fascinating. WHEN DID YOU START WRITING/BROADCASTING AND REALISE YOU HAD A TALENT FOR THIS? I wrote my first novel in 1991. It was called “The Turkish Princess”, and was about the conflict between the Greeks and the Turks. This was because, as I grew up, I was constantly reminded about my Greek culture and heritage. I was very much a part of the Greek community in Johannesburg and wanted to represent Greek interests. I felt very honoured to win the South African Sunday Times award for my book, “Best Newcomer”, at such a young age. I was a radio presenter on a Greek radio station and my show became very popular. I was on every day from 4pm 6pm. This led me to study Journalism, Media and Drama as a post graduate at the Johannesburg Arts Foundation. This was exactly what I had wanted to study and I felt that I had found my niche. Later, I was on a community TV station and a weekly music show. This led me to set up a PR company and I was lucky enough to work with international stars from all over the world. After organising some important fashion shows, I purchased the rights to hold the beauty pageant, Miss Greece of South Africa. I got more and more into PR and advertising and managed to run everything successfully together. WHY DID YOU RELOCATE TO CYPRUS?
“I SEE LIFE AS A GAME OF CHESS. SOMETIMES PIECES IN FRONT OF YOU CHALLENGE YOU.”
After meeting my wife, Niki, in South Africa and the birth of our son in 2000, I became more and more aware of the crime in South Africa. There was a massive escalation and people were being killed around us. I felt very strongly that the levels of rape and murder were getting out of control and I wanted a safer life for my family. In South Africa, we were bolted up in our home and afraid to go out. After a holiday in Cyprus, we knew this was where we wanted to be. In 2002 we came to Cyprus and have been here ever since.
13
EXCLUSIVE INTERVIEW
We came at a time before the European Union and I liked the British influences on the island. I worked in an ad agency and also enjoyed being part of the local radio station, hosting the evening slot from 7 - 9pm. In 2005, with my background in marketing, I was very happy to start employment with my current employer as head of their Creative Department. I am using all my skills at an international level. HOW HAS LIFE BEEN IN CYPRUS? Life was great, until I suffered a near fatal car accident in 2008. I suffered a severe pelvic break and was confined to bed for six months which, as an active and busy person, I found very, very difficult. I had to totally learn how to walk again. I understand that stumbling blocks change your path in life but this was hard. I do, however, feel that it strengthened my character. Whilst I was recovering, I had the time to write my autobiography entitled, “Where is Home? - A Journey of Hilarious Contrasts”. The doctors said that, at this point, I would never walk again but I was determined to get back on my feet. It was when I could hear my son suffering upstairs from an asthma attack that something just happened. I knew
“I WANT THE FILM TO BE A TRIBUTE TO CYPRIOT WOMEN... NO WORDS CAN EVER TRULY DESCRIBE WHAT THEY WENT THROUGH.” I had to get to him, and found myself walking up the stairs. I see life as a game of chess. Sometimes pieces in front of you challenge you. It is about taking one step back and looking at the bigger picture and then strategising a way forward. This applies to all areas of my life. Whilst as a person I am an extrovert, sometimes it is easier to pause, reflect, assess and then act. This is how I live my life now. I turned my book into a stand-up comedy show (SOLD OUT),
“WE SHOULD NEVER FORGET WHAT HAS HAPPENED IN THE PAST AND WE SHOULD ALWAYS LEARN FROM IT.”
14
November 2019
which I hope inspires others and makes a difference to people. If I can help one person look back at dark moments and make it easier for them, then I am happy that my words have made a difference. I use my books to communicate messages. I say it how it is, but in a diplomatic way. People can either love it or hate it. After the success of the comedy shows, I was asked by one of the local networks to write for Greek television. TELL US ABOUT OTHER PROJECTS YOU HAVE WORKED ON. The last few years have been very busy for me. My book “Odd One Out”, was published in 2018. I wrote this book wanting to go against the social norms and believe that I have broken down some social barriers. On the front cover, I have the headline - “I am who I am. Just deal with it.”, which I like, but my favourite quote from this book, - “I prefer not to think before speaking. I like being just as surprised as everyone else by what comes out of my mouth”. This is very me. I was also very involved as the writer and director of the award-winning production of “Melina”, based on the life of Melina Mercouri. I saw her photo in a subway in Athens and was drawn to her as a subject. I was mesmerised. I wanted to pay tribute to Melina. My production enjoyed great international success, and was awarded “Best International Show” in New York’s United Solo Theatre Festival.
“I FEEL STRONGLY THAT IT IS INEXCUSABLE TO HAVE CYPRUS AS A DIVIDED COUNTRY.”
15
EXCLUSIVE INTERVIEW WHAT INSPIRED YOU TO WRITE YOUR FILM “74”? I feel strongly that it is inexcusable to have Cyprus as a divided country. I want to raise awareness on an international level about the conflict of 1974, and show the real story through the eyes of people who were there. As part of my research, I approached many refugees and interviewed them. They were keen to take part and gain the opportunity to get their stories across to the world. It was, however, a real emotional rollercoaster for me hearing so many extraordinarily sad stories, especially from the female perspective. The women had no weapons and they felt that the men had abandoned them, who were forced to go off to war and defend their country. I really consider that the women of Cyprus, at that time, were the real soldiers of the war, as they were left to defend their families whilst suffering mental and physical anguish. I have taken their real stories and written the film basing it on characters that come from Morphou, Kyrenia and Varosha. I have merged these stories into four leading figures who represent each town as a female character. The fourth character is called Girne who represents the Turkish Cypriot women during the conflict.
16
November 2019
I want the film to be a tribute to Cypriot women, who fought tirelessly throughout the war and experienced the horrendous brutalities of torture and rape. No words can ever truly describe what they went through. We have just finished auditions for the lead roles. We had almost 5000 applications and filming begins next year, in Cyprus, with an international and local film studio. It will be filmed at various locations all over Cyprus. Primarily, we will use authentic villages and I hope that Paphos will play a part in it. The film will show stories from 1974 to the present day. My main focus in the film will be on the stories of the women whom I have interviewed. I hope to get the messages across about the true human sufferings of war. I hope that through hearing stories of previous wars, it will help us to think much more carefully, in the future, about firing the first shot. We should never forget what has happened in the past and we should always learn from it. The reality and consequences of war are very destructive. To update our readers on the progress of the film “74”, we look forward to returning to Paul Lambis next year, and visiting him on his film set in Cyprus.

PLANNING A NEW POOL WITH A CLIENT IS EXCITING FLORIDA POOLS & SPAS This month’s Featured Business has been awarded to Florida Pools which has been established in Cyprus for over 20 years and are one of the leaders in the pool industry. They have two shops in Paphos; one located in Tremithousa and the other in Kissonerga. Both shops have fully trained staff to help clients look after their pools in the correct way. Anna Wall, managing director of Florida Pools explains, “Our main focus is to supply what we believe to be the best pool chemicals across the whole of the Paphos District. We have also expanded into pool and jacuzzi construction”. Chemicals, safety products, building complex kits and everything you need for the safe running of your pool are all available at Florida Pools & Spas. Anna states “People come from Limassol to buy our products as some of them are only available through us. Sogeclor is a product we really believe in and we import it into Cyprus ourselves. We also rate the quality jacuzzis that come from America, as these are superior to others, so again, we import them. We are also the sole suppliers of Aqua Net for the Pafos Region.”
When we asked Anna, what was the best part of her job, she explained that, “Planning a new pool with a client is very exciting. We try to offer a traditional customer service whilst at the same time exceeding their expectations”. The practical side of the business is run by their senior technician, Marek Minarech, who has been with Florida Pools for over 12 years. He has a vast array of experience and oversees all of their projects. Going forward, Florida Pools has developed a maintenance team so that they can look after their customers’ pools using their own products. All the staff are registered and qualified. Marek says, “This was a natural extension for our business due to the high demand from our customers”. Anna and her team are great believers in giving back to the community they serve. Through their charity endeavours, Florida Pools has made a considerable amount of money for several local charities including: Paws, Pasykaf, CPSG and both local hospices. Members of their team also completed the Cyprus Marathon this year, which Florida Pools were delighted to sponsor.

SAVE TIME, SAVE A LIFE ST GEORGE & BLUE CROSS AMBULANCE SERVICES
Sadly, we all think it will never happen to us. We cannot foresee what is ahead and when we might need the services of paramedics in the event of a medical emergency. When you are in the middle of a medical crisis you need to make it as easy as possible to avoid panic setting in and make reaching medical assistance as quick and easy as possible. This is where the ambulance service offered by St George & Blue Cross is, quite literally, a life saver. The highly experienced operations manager, John Thompson explains, “Our ambulance service has only one aim and that is to provide a professional, caring service to all who need us in the Paphos region. We attend calls from Kathikas to Pissouri. All our staff are highly trained and experienced and have varied medical backgrounds, including NHS trained paramedics and technicians. Other members of our team are from the army medical corps and we even have a trained paramedic from South Africa. Our drivers are either also paramedics or come from a police or military background”.
Emergency Ambulance Response Service St George & Blue Cross Hospitals offer an emergency ambulance response service to members (this includes family members / relatives staying in the property at the same time as the member) which includes transportation to a local hospital of your choice - unless the crew consider it appropriate to go to an alternative hospital due to clinical need.
26
November 2019
There are no additional costs for emergency callouts and reduced costs if you need transfer to and from hospitals for appointments. The best part of this service is that the ambulance crew know where you live. When you take out a subscription, a member of the team will come to your home and prepare a detailed map and instructions to get to your home in the event of an emergency. That way, there is no confusion and pressure when you make that already stressful call. Membership packages offer a variety of benefits and discounts at the St George and Blue Cross Hospitals. Membership can be taken as a single person or a couple. The unique St. George & Blue Cross ambulance service operates out of a dedicated facility in Kissonerga, Paphos. WHAT IS YOUR BACKGROUND? I was born and brought up in Nicosia and still live there today. Originally my father started his hotel business in Famagusta, where he rented a hotel from the Church. After the invasion in 1974, he was forced to leave. He later opened one of the first hotels in Paphos called the Paphos Beach Hotel in 1975. Today, the hotel is very well known as Almyra. As a family, we lived in Nicosia but spent a lot of our childhood in the hotel in Paphos. During the 1980’s the land next to the Paphos Beach became available and he built the Annabelle, which was the first five-star hotel in the city. It was in 1998 that he opened Anassa, just as I returned from my studies abroad. I studied Communications and Political Studies in America gaining my Masters. After a year spent working on communications in London, I returned to Cyprus and started working for the Thanos Group of hotels. I was fortunate at this time as Anassa was just becoming operational and I was able to have input into the branding of the hotel right from the start. Anassa was the first hotel in Cyprus to charge such a high room rate and the challenge was to specifically position Anassa as the destination, as opposed to Cyprus. We were bringing a new luxury market to Cyprus that had never been experienced before. Guests were attracted to the hotel and the extensive facilities it offered. TELL US ABOUT THE HOTELS AND DEVELOPMENTS IN THE THANOS GROUP. It was about fourteen years ago that we totally changed the look and name of Paphos Beach Hotel. My brother, Thanos Michaelides, my sister, Anna Michaelides, and I decided to relaunch the hotel to a new market which was designer led. The hotel had a unique style of architecture from the 1970’s which we did not want to lose. At Almyra we offer the whole experience from stylish interiors to the latest trends in food. There is a particular clientele who want this lifestyle on holiday. Just over two years ago we bought the Aloe Hotel in Paphos. We have big development plans for this hotel, which we are looking forward to announcing in the near future. Last year we finished an eleven million euro renovation at the Annabelle Hotel, which included adding an additional

EXCLUSIVE INTERVIEW
“MY CHILDREN HAVE BEEN THE BIGGEST INFLUENCE IN MY LIFE.” floor. We created duplex suites, with views over the castle, a roof top bar and restaurant and a new spa with an indoor pool complex. All the interiors were designed by an interior designer from Paris, Joëlle Pléot. Almyra is closing in December for a 3-month renovation. The main focus will be to refurbish all the bedrooms and the lobby. It will reopen again next March. The style will remain the same and we do not intend to change the contemporary design concept of the hotel. WHO HAS BEEN THE BIGGEST INFLUENCE DURING YOUR LIFE? My children have been the biggest influence in my life. Other than them, there are certain people that I have encountered in life who have inspired me and experiences that I have had along the way have had a profound effect on me and made me the person I am. TELL US ABOUT YOUR CORPORATE SOCIAL RESPONSIBILITY SCHEME WHICH YOU OPERATE AT THANOS HOTELS. We started this a few years ago. We developed a team of people, within the company, who were tasked with endeavouring to find ways to increase our energy-efficiency and the same time, protect the environment. We also wanted to tackle waste management. From there we created our own scheme and extended it into other areas of the group. For example, we have now removed all plastic straws from the hotels. Going forward, we would like to be as plastic- free as possible. We need to be aware of our waste. When you have a large company, you need to be responsible for the area around you. Your business is in a neighbourhood and you need to look after it. Earlier this year we did an event where children were encouraged to put plastic waste into a large fish designed container. We paraded this, from Almyra to the castle, to raise public awareness on World Environmental Day. Our aim is to look after our community. The Thanos group also supports staff members who participate in athletics events in either Cyprus or abroad. We believe that in our hotels the most important people are the staff - if they are happy - then our guests will be very happy. HOW DOES ART FIT IN WITH THIS SCHEME? In addition, we created a plan whereby we wanted to try to support art in Paphos. We wanted to give artists a platform to exhibit their work so that they could get publicity. We cover all the costs and do not charge the artist for work that is sold. At the same time, we are bringing our immediate community into the hotels to see the exhibitions. We also offer workshops for children and adults. This ticks

multiple boxes as people today want experiences in their exciting lives rather than just owning objects. To come and meet an artist, experience a workshop, equals a new experience.
Through the Sophia Foundation, we have recently started supporting a scheme that is designed to provide cooked meals for deprived children and we are funding this at a school in Latchi.
TELL US ABOUT YOUR CHARITABLE WORK.
Two years ago, we were presented with an award from the President of Cyprus, Mr Nicos Anastasiades, for our volunteering activities.
For us here at Thanos giving back to the community is very important. We support multiple registered charities which will wisely spend the money we raise for them. We have done many events for Pasykaf, Alkionides and the Sophia Foundation. Every year at the Almyra we have a team of staff members who take part in the Paphos Marathon to raise funds for Pasykaf. Four years ago, when we started, we had just twenty runners, but this year it had grown to over one hundred! Regular “Coffee with Love events are also held to raise further funds for Pasykaf. We are also very involved with the creation of a fund offering scholarships to those wishing to study for a Masters degree. I am President of the committee together with the Round Table 7 of Paphos. We offer scholarships, which are available to anyone from Paphos. This year we have two students who are doing their Masters through this scheme. One is studying in London and the other in Cyprus.
WHAT DO YOU THINK ABOUT THE CHANGES IN PAPHOS? I actually live in Nicosia but after my children have finished their schooling, I would love to move to Paphos. During the summer, as a family, we spend a lot of time in Paphos and really enjoy it. After 2017, a lot of impressive work has been done in the city. It has certainly changed for the better. We are looking forward to the beach development and improvements in front of both Annabelle and Almyra. WHERE DO YOU GO ON HOLIDAY? I love the Mediterranean and often head straight to Greece. Every year I try and go somewhere new. This year I have been so busy I have not managed it but before the end of the year I will visit a new destination. Last year, as my new place, I went to Africa with the Sophia Foundation. At home and abroad, I really enjoy running and cycling.

EXCLUSIVE INTERVIEW
“…WE ARE EXTREMELY FORTUNATE TO HAVE THE OPPORTUNITY TO ENJOY SUCH FINE ORCHESTRAS.”
TELL US ABOUT YOUR INVOLVEMENT WITH THE CYPRUS SYMPHONY ORCHESTRA? I was appointed earlier this year as the Treasurer for the Cyprus Symphony Orchestra Foundation (CySO). I like the concept of managing the arts and was very happy to accept this position. The CySO Foundation encompasses two orchestras - the professional one and the Youth Orchestra. As the only professional symphony orchestra in Cyprus today, the Cyprus Symphony Orchestra has evolved rapidly into a modern, dynamic orchestra with a strong presence in the musical life on the island. At the same time, it is a national symbol representing Cyprus in Europe and beyond. Our duty is to promote classical music and culture in Cyprus and to support the musicians and to help them grow. The Orchestra employs the most gifted musicians in Cyprus and from abroad, and I strongly believe that we are extremely fortunate to have the opportunity to enjoy such fine orchestras, and their concerts are not to be missed. Our 2020 programme is very exciting and very different to previous years. It is a treat to look forward to. WHICH ARTISTS DO YOU PERSONALLY ADMIRE? On an international level, I was recently fascinated by the mysterious artist - Banksy. I especially like his latest work “Devolved Parliament”, which portrayed chimpanzees in the role of members of the UK House of Commons. It sold at auction at Sotheby’s for 12 million dollars. Closer to home, I admire the work of Polys Peshlikas, as he is a great example of an artist of the old school who paints on canvas. I also like Yiannis Sakellis, very creative and always on trend, the sculptor, Arsentiy Lysenkov, whose sculptures are out of this world, and work by Charalambos Margaritis, a very gifted and special artist. The photographer I particularly like is Michael Kouloumos, who does beautiful black and white photographic work. We are looking forward to having his photographs in all the bedrooms at the Almyra as part of the refurbishment. We are very sure that our guests will enjoy his work. THE RAISON D’ETRE of THE THANOS GROUP IS “To create a deeper connection, with a unique humane passion while achieving growth and profit, being lighthearted and celebrating life”.

MY SECRET PAPHOS
MY SECRET PAPHOS PAWEL SIKORSKI Yurts in Cyprus
Pawel Sikorski is originally from Poland, but moved to Cyprus in 2009 and started his business, Yurts in Cyprus, in 2013. He is renowned for providing an excellent quality bed and breakfast service and welcomes anyone to join him in his ecological B&B lifestyle venue in Simou Village, Pafos region. Throughout the summer, the space serves as an excellent outside music venue. YOUR FAVOURITE BEACH?
YOUR PERFECT DAY OFF?
Asprokremmos Beach, near the Baths of Aphrodite. I love to snorkel there and enjoy the breathtaking views of the Akamas hills and Tylliria Mountains. I avoid it in August though because then it seems to be everyone’s favourite beach.
I just go with the flow and sense what my soul needs. It can be staying at home in the heart of nature, going for a walk, reading a book or going for a drive to see friends. Life is full on, so when I have time to myself I like to let go and watch the story unfold.
YOUR FAVOURITE RESTAURANT?
YOUR FAVOURITE CHARITY?
Meraki Market Café - Love their casual setup and great choice of vegan and vegetarian dishes. I enjoy hanging out there, bumping into friends and networking. Their events are also great and give an opportunity to meet like-minded people.
I don’t really have a favourite charity but I am happy to support any charities which reach out to me. In the past I’ve contributed to a few through my business or playing in a band - Friend’s Hospice, PAWS or Paphiakos to name a few.
YOUR FAVOURITE PLACE TO GO FOR A COFFEE?
YOUR FAVOURITE WINERY?
Deloubak in Paphos - great coffee, cosy atmosphere. They play good music too and when you come down from the mountains you can indulge yourself in people watching! There’s always a nice crowd hanging out there.
Vouni Panagia Winery - I appreciate that they use local grapes and it is a family-owned and run winery. I’ve been buying their wines for years for my business and the quality of their wine is always consistent. My favourite is Barba Yiannis - Vintage Maratheftiko.
YOUR FAVOURITE PLACE FOR A COCKTAIL? I’m not a great fan of cocktails, but when I fancy one I head down to Island Beach Bar in Latchi and watch the sun go down from there. The bartenders make excellent signature cocktails, using some very aromatic local herbs - yum!
YOUR FAVOURITE WALK? Definitely Aphrodite’s Trail starting at the Baths of Aphrodite! I get a feeling of excitement on the way up to the highest point as the views are mind-blowing! I have done it in different seasons and once, even did it in the middle of the night during a full moon.

November 2019
YOUR FAVOURITE SPA? Ayii Anargyri Spa Resort - right on my doorstep and set in a tranquil valley, surrounded by nature and the quaint village of Miliou. The sulphur spring has a great history and has been providing healing through the centuries. A great place
to relax and recharge the batteries. YOUR FAVOURITE WEEKEND AWAY? I’m usually busy on weekends, so my week doesn’t break down this way. I love to spend my free time being active, so anything from rock climbing through to sailing, hiking or backpacking to a road trip – anything goes!

MY SECRET LIMASSOL
MY SECRET LIMASSOL ANNA-MARIA ATHANASIOU Author
Anna-Maria Athanasiou has lived in Limassol for twenty-four years with her husband, two sons, dog and six rescue cats. Ten years ago, she decided to put an idea for a story on paper and ended up writing a two-book series in secret. Her debut novel, ‘Waiting for Summer’ was closely followed by the second in the series. Anna-Maria has since published her La Casa d’Italia trilogy and is currently working on her latest book.
YOUR FAVOURITE BEACH? Without a doubt, my favourite beach is Curium Beach, just outside Limassol. So much so I featured it in my books! I love the fact there are no buildings around. Just the sea and high rock faces behind you. YOUR FAVOURITE RESTAURANT? We’re lucky here in Limassol as we have a huge choice! It is tough to choose one, but my go-to restaurant is Chesters Bar & Restaurant in Uptown Square. There’s every kind of cuisine there, so you can have anything from a classic burger to an Indian, Thai or Sushi!
Old Town of Limassol but I tend to meet up with friends at The St Raphael Hotel bar. It’s relaxed and the view of the coast is beautiful at sunset. YOUR FAVOURITE WALK? Nothing too exciting other than walking my dog Zeus around our neighbourhood. We have a few set routes and stick to those. It’s nice to wander around and greet people who live close by. Zeus is quite the rock star in our area! YOUR PERFECT DAY OFF? My perfect day off would depend entirely on the time of year. Summer would be spent at Curium beach from morning until sunset with my family as company and a good book. Winter would probably be a road trip to some part of the island for a lazy lunch and taking in the views. YOUR FAVOURITE CHARITY?
YOUR FAVOURITE PLACE TO GO FOR A COFFEE? I tend to visit many different cafés around Limassol, depending on my mood. At the moment, I’m loving Marina Breeze Lounge Bar at Limassol Marina. It’s slap bang on the water with a fabulous view of all the yachts.
I support a few charities but The Alkionides Charity is the one I spend most of my time helping. They help anyone who needs it, which covers everything for the sick and the poor. I like the fact that they do not discriminate. They just help everyone who has a desperate need. YOUR FAVOURITE WINERY? I have honestly not been to any wineries except for Hadjiantonas Winery near to Limassol, for a rather superb birthday party. My favourite wine shop though is DRINKLOBBY which holds various events throughout the year. YOUR FAVOURITE SPA? I’m pretty low maintenance but I have enjoyed some very effective body treatments at iBeauty Clinics. They also tailor-make face creams for your individual needs and have a fabulous team. YOUR FAVOURITE WEEKEND AWAY?
YOUR FAVOURITE PLACE FOR A COCKTAIL? Again, we are so spoilt for choice in Limassol! There are some excellent places in the Limassol Marina and throughout the
I’ve never had the luxury of a weekend away on the island, but if I could manage to get away, it would probably be to a quiet luxury resort. Somewhere I could take my laptop and write for hours without any interruptions.

MY SECRET NICOSIA
MY SECRET NICOSIA SASKIA CONSTANTINOU Producer & Presenter of SaskiaUnreserved at RikClassic Saskia was born in Famagusta and studied in Johannesburg, South Africa. She relocated back to Cyprus in 2000 and joined the Cyprus Broadcasting Corporation, where she developed her own daily classical music programme, PM Classics. Saskia now lives in Nicosia and is the producer and presenter for SaskiaUnreserved at RikClassic. YOUR FAVOURITE BEACH? I love going to Finikoudes Beach in Larnaca – it is close to Nicosia with ample free parking, lots of sunbeds and super restaurants for a sumptuous lunch. With the sparkling water of the Mediterranean, teaming with small fish to swim with, what more could one want? YOUR FAVOURITE RESTAURANT? Heraklis Café in Ledra Street. It brings back happy memories of when my daughter was a toddler and treating her to super ice-cream. Now she’s older, we love their light lunches and watching the diversity of people passing by. YOUR FAVOURITE PLACE TO GO FOR A COFFEE? Second Cup Coffee Shop in Lakatamia – the service is great, with ample parking and olive trees for shade. It is still a hidden gem in the area. YOUR FAVOURITE PLACE FOR A COCKTAIL? I abstain from drinking alcohol as I drive all the time. I prefer a non-alcoholic cocktail with a meal at Ocean Basket, which is one of the only places I go out to eat. YOUR FAVOURITE WALK? My favourite would have to be in the mountains of Sweden and Norway, which are lush with perfect hiking trails. On a daily basis though, in Nicosia, walking with my dog around the neighbourhood during the early morning. There are still

huge fields to wander through and explore. I get to see the sunrise and even on the same route, I always find something new in the fauna and flora. YOUR PERFECT DAY OFF? Is there such a thing? I love travelling, so whenever I’m abroad, it is perfect. If in Cyprus, pottering around the garden and getting things done is very satisfying. YOUR FAVOURITE CHARITY? I don’t have one – everybody who helps someone else, whether an individual or a big organisation, is worthy of mention. YOUR FAVOURITE WINERY? I am not a specialist in this regard but I am amazed by the knowledge, expertise and selection offered by French Depot. YOUR FAVOURITE WEEKEND AWAY? It has to be out of the country, otherwise one just ends up working at home. So, nothing better than packing a small bag and heading to Amsterdam, Berlin, Salzburg, Stockholm or Krakow – every place has something magical. YOUR FAVOURITE SPA? It is in a super hotel in Salzburg – pristine hygiene, wonderful atmosphere and all delivered with perfect service. Worth visiting for a weekend away and so easy to get to from Cyprus.
WINE COLUMN Written by George Kassianos President of Cyprus Sommeliers Association
“KOLIOS WINERY OFFERS A COMPLETE EXPERIENCE FOR WINE LOVERS.”
KOLIOS WINERY PAFOS REGION
The ‘Vouni Panayias – Ambelitis’ wine region, at a height of 1100m, is considered to be one of the highest altitude wine regions in Europe. Surrounded by breathtaking views of the Cedar Valley and Pafos Forest, the steep slopes are covered by vineyards planted in loamy soil with high levels of clay and limestone. The area is known for its mild climate and sunny, dry summers but also holds a reputation for above-average rainfall during the cooler months. All of this combined, creates the ideal habitat for the harvesting of excellent quality grapes. In 1999, the brothers, Marios and Leonidas Kolios, decided to develop their hobby of winemaking to a professional level and opened the Kolios Winery, which is positioned on a mountain peak between Ambelitis Village and Chrysorroyiatissa Panayia. Out of respect for local traditional architecture, they built the winery using local stone. Inside though, it is fullyequipped with all the modern winemaking equipment. They specialise in organic farming in their vineyards covering 100 hectares and produce, on average, 350,000 bottles per year. Marios holds the role of ‘winemaker’, while Leonidas oversees the sales and commercial aspects of the business. Marios’ wife, Euthymia Kolios, manages the restaurant and winery. Kolios Winery offers a complete experience for wine lovers. It is here you can find some of the highest quality wines in Cyprus, a retail shop, offering a range of wine accessories, and a highly recommended restaurant with an uninterrupted panoramic view of the valley. Marios Kolios is a typical countryside man with a deep love for nature. He spends most of his time tending to the vineyards but occasionally helps his brother in the running of the Kolios Butchery & Delicatessen in Paphos. His mission is to make wines that are balanced and complex, reds that can age and create harmony on the palate. They produce high quality wines using both local and international varieties. Their only white and best-selling wine, Persephone, is made 100% from the indigenous Xynisteri grape and is available in dry or medium-dry. The Kolios Rosé, Cornetto, is made using the Mavro grape and the Status 99 is a red blend known mainly for its sweetness. They also produce the Ayios Photios red blend, which is made mainly of Maratheftiko and Mavro grape varieties combined.
“I love working in the vineyards, picking the grapes at the right time and allowing the wine to be what it is meant to be.” Mario says. Curated tastings take place in his low-key tasting room, where conversations about the wines are encouraged. When they were building the winery, they discovered a natural spring in the cellar that still runs today. As long as the fire inside Marios is still burning, the spring will probably still be running.

RESTAURANT REVIEW
AMBIANCE RESTAURANT COCKTAIL BAR
“… a façade reminiscent of a top London eatery“.
This month our awarded restaurant is Ambiance which has recently opened in the Old Town of Paphos, nestling down a side street just off Kennedy Square. Ambiance has a façade reminiscent of a top London eatery. Everything about it has been designed beautifully and some serious money has been spent on the plush interiors. This restaurant has got it just right with tables perfectly positioned to afford privacy and the most comfortable seating we have ever experienced in a restaurant. Large banquette bench seating runs the entire length of both walls and the table settings are beautifully laid. There are tables inside and a couple outside on the Old Town’s characterful streets. THE ‘AMBIANCE’ MENU The menu offers a gastronomic selection of eleven starters and twenty-one main course options which are divided into Platters, Salads, Pizza, Pastas and mains including steaks, burgers and pork chops. The chef has been inventive and creative. He has put his own take on a lot of well-known dishes and from our experience this really works. WINE & DRINKS LIST The wine and drinks list are both extensive with great emphasis on the fashionable Gin which has its own menu. The wine list has a choice of red, white, rosé and fine champagnes but sadly didn’t contain many Cypriot options.

November 2019
We enjoyed a bottle of New Zealand Red, called “Mud House”, priced at 21 euros. LARGE PORTIONS We had been warned by friends that the portions were large so we voted to enjoy just a main course, which was a shame, as many of the starters were so appealing. My dining companion selected the Pork Chops which arrived filling a very large plate. He said they were cooked to perfection and a very generous portion of two large, meaty pork chops. It seemed only right to try their variation on a beef burger which arrived on a baguette bottom shaped the same way. It is a long time since I have had a beef burger in a restaurant and this one was truly excellent. The quality of the meat, with a hint of cheese and barbecue sauce, made it a burger to remember. Ambiance is now definitely on the list of restaurants to return to, as there was much that appealed on the menu. Next time, I think, we will share three starters as a meal as there are so many unique variations on the classics. The service was excellent and for once with a new restaurant they have covered all angles. The vibrancy of the atmosphere was apparent in the way everyone was enjoying themselves. Our only thought in the future is that it is probably wise to book as Ambiance’s popularity grows - which it will.

MEET ITALO BASSI
LEADING ITALIAN CHEF Bassi has led the kitchen at the three Michelin starred restaurant, Enoteca Pinchiorri in Florence, for the last 27 years. He now runs his own restaurant called ConFusion in Porto Cervo, in Sardinia, which is described in the latest Michelin guide as “an enchanting, dream-like décor which provides the setting for an unforgettable gourmet cuisine”.
With his background in Tuscany, Bassi was delighted to assist with the testing of the recipe for My Cooking Box. My Cooking Box is a unique idea direct from Italy whereby all the ingredients for this recipe can be bought in one box. The experts have carefully selected all the raw ingredients with special attention to their origin.
PICI TOSCANI is a type of pasta which came originally from Siena in Tuscany and is like a thick hand-rolled fat spaghetti. The pasta, with a sauce of truffles and anchovies, works in perfect harmony with the breadcrumbs. The tastes are further enhanced through the use of the finest garlic oil and the aroma of oregano which take the whole dish to another level.

“TRUFFLE PICI WITH BREADCRUMBS AND ANCHOVIES” My Cooking Box includes everything you need to prepare this dish and all ingredients have been sourced from Italy.
PICI - PASTA DI SEMOLA DI GRANO DURO “Pici” is a simple pasta shape, the name probably deriving from the way it was originally made. This pasta is made in Italy by an artisan pasta maker where the art of pasta making has been handed down from father to son since 1860.
SALSA CON ACCIUGHE E TARTUFO This is a prized food from ancient times. Legend has it that the truffle was born of a thunderbolt, thrown near a tree by Jupiter. It is a product with extraordinary flavour that only grows in specific environmental and atmospheric conditions. These combine to make the unique taste. Truffle and anchovies are blended to create an intense sauce, which is perfect to enhance the taste of the “pici” pasta and breadcrumbs.
OLIO EXTRA VERGINE DI OLIVIA - PRODOTTO ITALIANO The highest quality of olive oil comes from Puglia. Olives are handpicked and carefully selected before being washed and stone-crushed to release the flavour and fragrance. This specific oil has received a wealth of certificates and awards and also has the great honour of being awarded the “TRE FOGLIE” from GAMBERO ROSSO. The full cooking box range including other recipes are available from all branches of Wine and More by French Depot in Paphos, Limassol and Nicosia. They are also available online with direct delivery from www.teresa-roberto.com.cy
RECIPE Once you have your My Cooking Box, empty the contents and follow these simple instructions. Thankfully someone has already done all the hard work for you! 1. Bring 2 litres of water to boil in a large pot (with less water, use salt proportionally). 2. Take the sauce out of the package and put into a bowl. Do not worry about the truffle yet. 3. Leave anchovies in the package. Take the upper part of the sauce and keep aside in a bowl. Leave anchovies in the bottom of the jar and don’t worry if a little truffle is mixed with anchovies. 4. In another bowl, mix the breadcrumbs and the oregano, then add half of the extra virgin olive oil provided and stir. 5. Add the cooking salt and the Pici pasta to the boiling water. 6. Keep at a low heat and stir gently after 12 minutes to avoid damaging the pasta. 7. Heat the remaining garlic-flavoured oil and the anchovies in a frying pan over a medium heat for two minutes, stirring with a spoon until the fish are completely melted. 8. For the Pici to be perfectly “al dente”, cook for 20 minutes (or longer if you like softer pasta). 9. Drain the cooked pasta and add to the anchovies and the oil in the pan. 10. Sauté for about one minute over a low heat. 11. Arrange the Pici in the centre of the plate to form a nest shape and sprinkle with the breadcrumbs. 12. Garnish with 4 teaspoonfuls of the truffle sauce which was previously set aside. 13. Add the remaining extra virgin olive oil and enjoy!

THE PLACE TO BE
THE PLACE TO BE
Arabica Elysia Park Resto | Bar | Café PAPHOS In this month’s edition of Cyprus in Style Magazine, The Place to Be has been awarded to Elysia Arabica All Day Lounge Bar. A lot of redevelopment has been happening recently on one side of the large and very luxurious Elysia Park, situated in the Universal area of Paphos. One of the new businesses that has recently opened is a branch of the already established Arabica brand. The new Arabica at Elysia Park has a much more lavish feel than its sister cafés. Positioned by the extensive pool areas of Elysia Park, this new Arabica offers spacious indoor and outdoor seating areas. With the sounds of the fountains, it certainly makes an excellent spot for the ultimate relaxation. The restaurant offers a great variety of dishes. The menu offers hot and cold delicacies including combo dips, prawn cocktail, smoked salmon tulips, stuffed mushrooms and their inhouse Arabica kebab. It also offers mains of salads, pasta, risotto, meat and fish which also includes, for those of us with expensive tastes - lobster. They also offer a variety of sharing plates. It is an excellent place to visit from morning until night to enjoy breakfast, lunch or dinner. Alternatively, you can pass by for a coffee or one of their cocktails from their wide-ranging menu. Their signature and classic cocktails are priced from 7 euros. On the day we visited we just fancied a snack, so enjoyed sharing a club sandwich. The restaurant was quite busy which meant we had quite a long wait for its arrival. We will definitely return as it is in a great location with easy parking and serves as a great meeting point for friends and business colleagues.

“WE WILL VERY SOON BE CELEBRATING OUR 50TH ANNIVERSARY.” HOW DID YOU DECIDE TO BECOME A LAWYER? Both of my parents were lawyers so I was brought up in a house where the law formed part of our daily routine and was a major topic in our conversations. My mother was originally a lawyer but moved into the banking sector. I went to the UK and qualified as a Barrister at Grey’s Inn. After four great years in the UK, I wanted to return to my roots, and came back to Paphos in 1994 to begin my career in law. I successfully passed my Cyprus Bar examinations, and achieved the highest grades of that year. I started working with my father Andreas, who had established his law firm in 1970 and later was joined by my brother George. We will very soon be celebrating our 50th Anniversary as a Law Firm in this industry, and are looking forward to reflecting upon our achievements and successes, and continuing to grow and move forward.
HOW HAS THE COMPANY GROWN OVER THE YEARS? It has been a fantastic journey - expanding from a team of five staff to over twenty-two today. It is very satisfying that over the years our team has helped thousands of people and has been able to build strong relationships and maintain them as long-term clients. Over the decades we have offered a professional, friendly and personal service to a diverse range of clients; from international companies to individuals from overseas, who want to make Cyprus their home. Our aim has always been to build a long-term relationship with each and every client, based on respect and mutual understanding.
“…BEING LUCKY ENOUGH TO TRAVEL INTERNATIONALLY ENABLES ME TO LEARN AND EXPERIENCE A WEALTH OF DIFFERENT CULTURES”.

EXCLUSIVE INTERVIEW
“I AM FORTUNATE TO BE IN A WORKING ROLE THAT I AM EXTREMELY PASSIONATE ABOUT, JUSTIFYING SOME OF THE SACRIFICES I HAVE TO MAKE.” WHAT ARE YOUR AREAS OF EXPERTISE AT YOUR FIRM? All aspects of the law relating to investment in Cyprus; from immigration matters (especially under the permanent residency scheme and Cyprus investment programme) to litigation. A big part of our business has always been real estate transactions and due to the high demand we have a dedicated and highly experienced team of lawyers, who cover the most complex multi-faceted real estate issues. WHAT IS THE BEST ADVICE YOU CAN OFFER TO OUR READERS? In this modern world of technology and ease of access to information online, it is tempting to consult the internet over legal matters. Although sometimes this can offer some basic guidance, it entails inherent dangers. It is like seeking a medical solution without seeing a professional doctor. So my advice would be to always obtain professional legal advice for legal issues. Do your research online to find a professional, and always follow recommendations from friends and associates.

“RECENT LEGISLATIVE CHANGES HAVE HELPED IN ISSUING THOUSANDS OF TITLE DEEDS” TELL US ABOUT YOUR WORKING DAY.
WHAT DO YOU DO TO RELAX AWAY FROM WORK?
I usually start very early and finish late. I would definitely say that there isn’t a dull moment in my day. My team and I consistently face challenges and we need to actively seek solutions to a variety of queries. We have a specific department for private clients and are often faced with cases that require a very careful approach, due to the sensitive nature of the issues involved.
I am a traditional family man, and my wife, kids and family are the number-one importance in my life. I always feel most relaxed when near to the sea. My ideal day-off would be spent with family at the beach, that would be my real “happy place”. I feel so fortunate to live on an island that is chosen by millions for their annual holidays. We have everything on our doorstep.
The day always goes quickly with meeting after meeting. Being the managing partner also incurs a number of additional tasks and responsibilities, which requires extra time and care to be taken to ensure everything is completed efficiently.
I am also a keen skier and enjoy skiing in the Troodos Mountains. I especially like the fact that we have had lots of snow over the last few years. The only worrying part is that my sons are becoming better skiers than me!
WHAT IS THE BEST PART OF YOUR JOB? The best part of my job is being able to address successfully the needs of my clients and to provide solutions to the problems that are worrying them.
I enjoy running and try to go for a run a couple of times a week. It keeps me fit and helps me wind down. My wife and I love travelling and we really enjoy the Greek islands. Greece is such an amazing and diverse country, which is often overlooked by Cypriots, as it is so close to home.
The nature of my work is extremely varied, and in turn so are the people who I meet. I am naturally a people-person, so enjoy the aspect of my work that involves meeting with many different kinds of people, and of course being lucky enough to travel internationally enables me to learn and experience a wealth of different cultures. WHAT IS THE WORST PART OF YOUR JOB? I am a natural workaholic and a perfectionist and take great pride in ensuring that my job is done correctly. Of course, this level of dedication can, at times, impact the amount of time I allocate to my personal life. This can be unfair on my loved ones, such as my wife Melina and children, who are so supportive of me at all times. I am fortunate that they understand that managing a successful and wellknown law firm requires time and dedication, and that if an international client flies into Cyprus at short notice, we will always prioritise them and ensure they are met and well looked after.
57
EXCLUSIVE INTERVIEW
I have a close network of friends whom I have known since my childhood. I always try to make time to get together and enjoy real conversations with them. Sometimes I wish I had more time to spend with them, and, of course, my family but I am fortunate to be in a working role that I am extremely passionate about, justifying some of the sacrifices I have to make. HOW DO YOU SEE THE PROPERTY MARKET IN PAPHOS PROGRESSING IN THE FUTURE? It is difficult to say with complete certainty what the future of the property market will be. However, all statistics indicate a steady and healthy growth in property across Cyprus. Recent legislative changes have helped in issuing thousands of Title Deeds in long standing cases and have also afforded additional protection to buyers. This has definitely given more certainty to the market and strengthened the confidence of buyers from across the world to select Cyprus as their chosen investment location. WHAT IS YOUR OPINION ON THE REDEVELOPMENT OF PAPHOS? During the last few years we have seen huge improvements in the infrastructure of Paphos, as well as the renovation of the historical centre. It really is putting Paphos in the same league as other leading resorts. At the same time Paphos has managed to maintain its own identity as a safe and distinctive destination. Paphos is an up and coming multicultural city, with something to offer everyone, and has a vibrant atmosphere that will only continue to grow. WHO HAS BEEN THE BIGGEST INFLUENCE IN YOUR LIFE? Without question, the biggest influence in my life has been my parents. They taught me that success can only happen with hard work and honesty and, above all, to always treat every person I meet with the greatest of respect and equality.

WHERE LUXURY IS PERSONAL CRYSTAL SERENITY VISITS PAPHOS
This month, we were delighted to be invited, by the team at Century Travel, on a ship visit to the 6-star Crystal Serenity. This was an afternoon when invited guests, together with the staff from Century Travel, had the amazing opportunity to visit the ship whilst it was anchored just off Paphos harbour. As we are newbies to cruising, it was great to experience what this select world entails.
As the paying guests departed from the ship for their day on Cypriot shores, we took the return boat to the ship to learn more about Crystal Cruises and especially about Crystal Serenity. On embarkation, we were shown to the theatre area where a presentation by Daniel Essex, Managing Director of Century Travel, took place. We were then split into small groups and shown around the ship. And what an experience it was! The World of Crystal consists of ocean, river and yacht expeditions. Crystal Cruises are well known as a 6-star cruising brand, offering the ultimate in luxury to their guests. On the ship visit we attended, we were very impressed that over half the invited guests had already taken a Crystal Cruise and spoke very highly of their experiences. Clearly, many of them were there to book their next Crystal Cruise with Century Travel and catch up with some familiar faces.
All-Inclusive Luxury Experience The Serenity has a maximum capacity of 980 guests and has a staff to guest ratio of 1 to 1.5. This is high in the cruising world. What seems to set Crystal apart from their competition is, the fact that their cruises come with so much that is already included in the price - open bars and lounges with complimentary fine wines, champagnes, spirits, specialty coffees, Michelin inspired cuisine and specialty dining. In addition, you have a restaurant by Nobu Matsuhisa called Umi Uma and nightly entertainment programmes.
Personal Enrichment There is also an extensive personal enrichment programme offering every type of class you can possibly think of, from bridge to learning everything imaginable about IT. Also, a big plus for those who want to keep in touch with business and home, is that you have free unlimited wi-fi. Everything is included in the price of the cruise and the only extras are spa treatments, the casino and shore excursions. We were lucky enough to view some of the cabins on the ship which ranged all the way up to a Crystal Penthouse Suite you could live in it! Absolutely beautiful! After a magnificent afternoon tea, it was sadly time to leave the ship to make way for the returning guests.

HEALTH & LIFESTYLE
“I FEEL DEEPLY CONNECTED TO NATURE” Meet ‘Dharmalivi’ Influential Vegan Blogger & Social Media Personality
The debate over the health benefits of Veganism continues worldwide and while many believe that eating meat is essential for a healthy diet, others are more driven by promoting animal rights and reducing their carbon foot print for a healthier planet. In this month’s edition of Cyprus in Style Magazine, we speak to Liv Unni Sødem (@Dharmalivi), an influential vegan lifestyle blogger and social media personality from Norway, now living in Cyprus.
“I love how eating plants makes me healthier and happier, so sharing that is fun!”
Liv follows a Whole Food Plant-Based Diet, otherwise known as the WFPB Diet. We asked her to tell us a little more about it and why she chose this diet as a new way of life. She explained in detail, “The WFPB diet is rich in nutrients and can make a big impact when it comes to reducing your risk of today’s top chronic diseases, like type 2 diabetes, heart disease, high blood pressure, high cholesterol, cancer, obesity, various metabolic health issues and more. For me, it has proven to increase energy levels, improve mood, athletic performance, sleep patterns and aid better digestion. Not only that, a plant-based diet is also beneficial to the environment and saving the lives of animals across the globe.”
VEGAN S.W.A.P TEST We asked Liv to enlighten us on the various ‘food swaps’ available for meat lovers considering a Vegan lifestyle change. 1. WHAT FOODS ACT AS GOOD REPLACEMENTS FOR MEAT? Turning vegan does not mean you need to give up juicy burgers or BBQs. There are many meat alternatives that vegans love to eat including burgers made with beans, mushroom and/or nuts and mixed with different vegetables. Or if you want the vegan ‘junk food’ go for a Beyond meat burger or Linda McCartney rosemary sausages. You can find meat substitutes like these in most big supermarkets, but Alphamega is probably the best for vegan choices in Paphos. Mostly, I cook whole food plant-based meals and use meat substitutes such as beans, legumes, lentils, jackfruit, mushrooms and tofu. In Europe, organic tofu is grown for those more conscious about the environment. There are also other, processed meat replacements such as tempeh, seitan, textured vegetable protein (dehydrated soy), Beyond meat, Quorn and more.
64
November 2019
Even though some are a healthier option to meat, it´s important to limit the amount of processed food in your diet. I follow the (approximate) 80/20 rule; mostly whole foods and some processed foods. 2. WHAT DO YOU EAT INSTEAD OF DAIRY PRODUCTS SUCH AS CHEESE & MILK? There are so many plant-based milks to choose from. You can make your own hemp seed milk or opt for the many others, such as Koko dairy-free milk, oat, almond, rice, soy, coconut, cashew or hazelnut milk. Most of the plant milks and vegan yoghurts have added vitamins such as Vitamin B-12, Vitamin D and calcium. There’s also a wide range of vegan cheeses, vegan mayo, vegan ice cream and you can use coconut milk/ cream to make whipped cream! 3. CAN A VEGAN DIET BE RICH IN IRON? Yes, of course. I tend to use cannellini beans/white kidney beans, lentils, tofu, tempeh, chickpeas, black-eyed peas, red kidney beans, amaranth, dark chocolate/cocoa, spinach, dried apricots, hulled hemp seeds and molasses. Also, if you eat foods that are rich in vitamin C, this helps the absorption of iron in the body. For example, like broccoli, leafy green vegetables, sweet potato and citrus fruits.
4. WHAT IS YOUR FAVOURITE & MOST RECOMMENDED VEGAN SNACK? I have so many favourite vegan snacks, it is so hard to choose just one. I love everything from homemade oat cookies and
oyster mushroom chips to raw cakes, but my most recent favourite is ‘raw protein bars’ - I tasted some at The Vegan Fam Festival in Cyprus, made by Vivolife Cyprus, and decided to get the protein powder and try.
HOW TO MAKE RAW PROTEIN BARS - IT’S SO SIMPLE!
They are great on-the-go and as a snack in between meals. Energy bliss! You’ll Need:
Chocolate Layer (optional)
• 20 dates • 1 cup of Koko dairy-free milk • 1 scoop of VivoLife salted Maca Caramel protein powder (you can make this recipe without protein powder, just use less milk. Another option is peanut butter or anything you like). • 2 cups of organic oats (I mix 1 cup of porridge oats with 1 cup of rolled oats) • 1/2 a cup of walnuts • 1/2 a cup of desiccated coconut (not the super dry white type) • 1/2 a cup of hulled hemp seeds (to either roll protein balls in or sprinkle on top) • Optional; chocolate layer with desiccated coconut
You can either use vegan chocolate and melt it together with a little plant milk, or make chocolate from dates, raw cocao powder and plant milk. You’ll Need: • 10 soft dates • 1 tablespoon of raw cacao • A little dash of plant milk
The Method: 1. Soak the dates in hot water until soft. 2. Put pitted dates together with 1 cup of Koko dairy-free milk in a food processor at high speed. 3. Add the protein powder in before adding oats, walnuts & desiccated coconut. 4. Transfer the mixture to a baking tray with baking paper. 5. Press down to make an even layer & transfer to the freezer for about 15 min. 6. Take out and slice into around 10 bars. Or roll into balls.
Method: Soak dates, pitt when soft. Put in a food processor on high speed with a little dash of plant milk. Add one tablespoon of raw cacao poweder. You can add a drop of wild orange essential oil/carob syrup/maple syrup for sweetness. Mix. You can also add small bits of dried berries like goji for the extra taste and texture. Pour the blend over the raw cakes and place in the freezer until ready.
Happy healthy snacking! 65

TOP HAIRCARE ADVICE FROM THE PROFESSIONALS! Woodward & Marescu
This month we are delighted to gain the benefit of the advice of the professional hairdressers, Jonathan Woodward and Alexander Marescu, based in their new salon in the Old Town of Paphos. They use the exclusive product range of Davines, which comes from Italy. Davines was launched in Parma, Italy, in 1983 and was originally a research laboratory for other brands, before launching their own range. It is available all over the world in over ninety countries. President of the company, Davide Bollati, states, “By creating beauty sustainably, we encourage people to take care of themselves, of the environment in which they live and work and of the things they love”. Davines product range was launched in Cyprus in 2005 and are stocked across the island at over 120 salons. Further information can be found at www.davines.com. Jonathan has worked in the hairdressing industry in London, Vienna and Birmingham, and has made his home in Cyprus for the last 14 years. He works in the salon with his partner, Alexander, who is a colour expert. Their salon is fashion focused and on trend. This month we asked them for their top haircare advice which can really make a difference:
OI OIL
€35
1. If you have naturally coarse or curly hair, always use an oil which will moisturise, so that your hair appears shinier. 2. For hair that lacks body, use a volumizing spray that does not contain alcohol. This will stop your hair drying out. 3. People on the go all the time, should consider using a dry shampoo. This will add thickness and bounce, and refresh the hair. 4. Even if you are growing your hair always cut the ends every 6 weeks. 5. If you are using hair irons, invest in a good heat protection product. 6. For blonde coloured hair, use a shampoo with a silver base, which will stop the colour going brassy. 7. Always have a deep conditioning treatment before and after, a colour service.
8. Never use baby shampoo. It is a myth that it is good for adult hair. It is not designed for this purpose.

EXCLUSIVE INTERVIEW
LUXURY INTERIOR DESIGN EXPERTS MEET ANDREAS PAVLOU & GLEN YOUNG OWNERS, AMPERSAND INTERIORS
Andreas Pavlou and Glen Young met over 26 years ago when they were both working in London. They relocated to Cyprus, where Andreas was born, and opened Ampersand Interiors in Paphos nearly fifteen years ago. Combined, they are a leading force in interior design, providing everything necessary to create the perfect scheme. In this month’s edition of Cyprus in Style Magazine, we speak to both of them to learn more about their story and pick up some of their exclusive interior design tips.
70
November 2019
“WHILST WE STARTED WITH CURTAINS, WE SOON EXPANDED INTO OTHER PRODUCTS. WHAT IS YOUR BACKGROUND IN INTERIOR DESIGN? Glen: When I was working in London, my main focus was on interior lighting schemes for high end clients. I did commissions for Hotels and Embassies located all over the world. I also dealt with A-list clients as the company I worked for, Arnold Montrose, was a leader in the industry. I was lucky enough to work with the leading interior designers, David Hicks and Laurence Llewelyn-Bowen, on lighting schemes. The leading store, John Lewis, was also an important client with whom we worked on a regular basis. Andreas: In London, I worked as the export manager for a fashion company which supplied clothes all over the world. I organised exhibitions with the Department of Trade and Industry and travelled all over Europe. Both my parents are Cypriot but I grew up in London. HOW DID YOU BOTH COME TO CYPRUS? Glen: At the time just before we relocated to Cyprus, I was working for Next Retail in the UK. I was an area manager and my duties also included looking after franchised operations overseas. One of those franchises was in Cyprus,
so I found myself travelling here on a regular basis. I helped set up the stores, especially with the visual merchandising. Andreas accompanied me on some of the trips and we found ourselves enjoying our time in Cyprus more and more. With Andreas fluent in Greek, we did more trips together and decided to buy a holiday home in Peyia, so we could further enjoy the island. Andreas: Buying our holiday home was our first step to our new life in Cyprus. Eventually after a few years, an opportunity presented itself for us to move here fulltime and we started a property company in Paphos. This went very well but over time we missed the design element which had played a significant part in our previous careers. At that time, there was a massive demand for interior fittings and we realised that we could provide that service combining both of our professional backgrounds and skills. It was over fifteen years ago that we opened our first retail space, which, at the beginning, was to provide high quality curtains to our customers. When we both came into some money, we went to a trade show in Frankfurt and managed to spend 60,000 pounds in one day! Thankfully the business just took off from there. HOW HAS AMPERSAND DEVELOPED OVER THE YEARS? Glen: Whilst we started with curtains, we soon expanded into other products. In 2008 we moved into a purpose-built showroom, which enabled us to also supply furniture and high-quality light fittings. Our main product today is still curtains but we have massively expanded the range we offer.
71
EXCLUSIVE INTERVIEW
We have thousands of fabric books for our clients to select from and we are very pleased to supply some of the biggest names in the textile world including Romo, Villanova, Zinc, Harlequin and Dilzas. Andreas: In addition to curtains we also supply and can make anything with fabric. These include bedspreads and headboards for the bedroom. Everything is made to measure - any fabric and any design. We have whole collections which complement each other. We like to work with our clients to help them coordinate the look that they are hoping to achieve. We also take on whole house designs, where we will supply everything the client requires. This year, we have also been involved in restoration projects, where we have redesigned a dated property and made major changes. Occasionally our clients are not in Cyprus but we are always happy to manage the project for them from here. Glen: Last year we did a whole villa in Aphrodite Hills. It was a complete refurbishment and redesign. Our clients were based in South Africa but they trusted us with the project and scheme and the final design was agreed between ourselves online. WHAT IS THE BUSIEST PART OF YOUR BUSINESS? Andreas: Without doubt, made to measure curtains are the major part of Ampersand. We go out to the client’s house and will advise our clients on the design and what works best for their property. We do this not only with a design viewpoint in mind but also taking into consideration the practicalities in the home. Glen: Another important part of the business is our upholstery service. We do chairs, sofas and anything you might want to cover in fabric. Due to our vast selection of fabrics in-store, we are able to supply the fabrics and work with an upholsterer in Paphos, so that we are able to keep an eye on the process. We find that a lot of our clients might move from the UK with an expensive and very comfortable settee. Rather than take the risk that a new one might not be so comfortable, the solution is to reupholster in a new, amazing fabric which will give a totally different look to the room. We also offer a cover and make service for garden and outdoor furniture. These fabrics are UV resistant and can make a big difference to the look of an outdoor space. By re-covering everything in the same fabric you are bringing it all together. In the showroom, in addition to fabrics and everything already mentioned, we also have a large selection of lighting, furniture, silk flowers and wall art.
“GOOD LIGHTING CREATES THE WHOLE FEEL OF THE HOUSE.” 72
November 2019
“I AM A FOLLOWER OF THE RULE: ROOM TO ROOM COORDINATION. WHAT ARE YOUR INDIVIDUAL TOP DESIGN TIPS FOR THE HOME? Glen: With my background in professional lighting, I am a great believer in getting the lighting scheme correct. There are different types and moods of lighting. You have lighting for practicality and also for ambiance. Good lighting creates the whole feel of the house. Lighting apart from just looking good has to be able to work in the home, so I always take this into consideration. I also strongly believe and follow the rule that a room should have no more than 3 accent colours in it. If you go even one more colour than this, it can mess up the look of the room you are trying to achieve. If you use three colours thereafter you can experiment with textures to create the desired look. Andreas: I am a devotee of using soft furnishings in a big way in the home. This might be through the clever use of cushions placed carefully on a chair, bed or settee. If you select the right cushions and colouring and arrange them
73
EXCLUSIVE INTERVIEW
in a professional manner, you can change the look without a massive investment. At our showroom we have a large selection of cushions in different designs and colourways. A settee can look very bare and dull without cushions. They can add an explosion of colour to the room. WHAT ARE YOUR ROLES IN THE BUSINESS? Glen: I am very much sales focused and front of house. Andreas: I am more involved in the behind the scenes side of the business. This includes production, finance and the operational procedures that go into the installation of what we supply. As I speak Greek it is also easier for me to deal with the multiple teams that we work with. We are also lucky to have as part of our team, Yioula Papacharidemou, who started with us at the beginning of this year. When we are on the road attending meetings, Yioula is in the showroom. She brings to Ampersand a wealth of interior design knowledge from her previous family business and she also studied interior design in Italy. As a lot of our fabric suppliers are in Italy, it is very useful to have her Italian language skills for communication. WHAT MAKES THE BIGGEST DIFFERENCE TO A HOME DESIGN SCHEME? Glen: I am a follower of the rule “room to room coordination”. If you are keen on a colour scheme follow it throughout the whole house. Don’t have one colour scheme here and then through the door another, clashing colour selection. If you like black and gold - follow it throughout. Yes, introduce subtle accent colours but try and keep a minimal colour scheme in every room so that the whole house flows from one room to the next. Also, if you have followed a specific colour scheme, upholstered furniture can be moved from one room to another as they will match.
74
November 2019
WHAT IS THE BIGGEST PROJECT YOU HAVE WORKED ON? We have worked on a number of private residences across the island for international clients. We have also worked with hotel groups supplying curtains and blinds. An exciting project for us last year was the refurbishment of a very large yacht based in Limassol. We replaced all the soft furnishings and were invited to stay on the yacht by the owners, which was a lovely treat. WHAT ARE YOUR FUTURE PLANS AT AMPERSAND? We are always excited to bring in new fabric range books. Recently, we have started working with Harlequin whose fabrics have proved to be very popular with our clients. Another new addition to our selection is a new range called “Divine Savages” by our friends Jamie and Tom. They are exceptional designs. As the property market is strong, we have been inundated with design requests so we expect to be busier than ever. WHAT DO YOU DO TO RELAX AWAY FROM WORK? Andreas: We both enjoy landscape gardening, cycling, cooking, dining out and travelling on city breaks. Our favourite destination is Prague, followed by Rome. We also travel to Greece about four times a year combining business and travel. WHAT WOULD BE YOUR DREAM PROJECT? Glen: To work on a Knightsbridge penthouse with the designer Kelly Hoppen. I am a big fan of Hoppen’s work and her bold use of dark colours. I like the way she highlights with black. I would also want to include some furniture from the range by Andrew Martin. Andreas: My dream would be to design the interior of a five-star hotel from scratch. To be able to do all the interior design in all areas - soft furnishings, furniture and wall art, right down to the last detail!

Award-Winning Bronze Sculptor in Cyprus A philosophical soul heavily influenced by his past, Philippos Yiapanis is now internationally recognised as one of the most famous, award-winning Cypriot sculptors on the island. Based in the Limassol District and working from his hugely impressive sculpture park and gallery in Fasoula, life has not always been this successful. His dedication, passion and love of art are what got him to where he is today. It is through his sculptures that he expresses his deep and profound messages to the world.
Yiapanis was born in Famagusta in 1957, but like thousands of refugees, was forced to leave his town as a result of the Turkish invasion in 1974. It is, without doubt, an event that influenced his life thereafter and his work as an artist. Upon visiting the sculpture park and gallery for an exclusive guided tour, prepare for a tear-jerking experience as he speaks from the heart about his ongoing battle, dating back to when he was a prisoner of war during the invasion. Each sculpture tells a story and each story is a piece of his life. Yiapanis works primarily in bronze from his studio in his very own ‘Mikri Salamina Sculpture Park’ in Fasoula. This is where he lives with his wife, Maria Yiapani, and from where he works continuously on new sculptures every day. The female form, birds, fish and the human need for freedom are all inspirational topics that are clear for the eye to see in many of his sculptures.

In 2014, Yiapanis was presented with the ‘Sports & Arts’ award by the International Olympic Committee. In 2016, The Art Nest was distinguished as a remarkable project in the International Build Awards and Yiapanis was presented with the award for Innovation in Cultural Design & Best Cypriot Cultural Design Project. In 2017, Mikri Salamina Sculpture Park & Museum emerged as the Best Public Service Architectural Building in the European Property Awards, which is an internationally recognised institution and part of the global organisation of the International Property Awards. In 2019, Yiapanis was awarded Silver in the Cyprus Tourism Awards under the categories of museums, cultural and historical sites on the island. Today, you can travel the island and see Yiapani’s works on public display throughout various cities including Paphos, Limassol, Nicosia, Larnaca and Ayia Napa. On page 2 of this article, we have listed some of Yiapani’s most iconic works.
MONUMENT OF ‘PEACE & TOLERANCE’ Recently unveiled by the President of the Republic, Mr Nicos Anastasiades, together with the Community Board of Agios Tychonas, it is with great generosity that, Mr. Nikolay Ivchikov donated this sculpture to Limassol.
OLYMPIC SPIRIT Selected in 2008 from 110 “excellent works” in the International Olympic Landscape Sculpture Contest. Olympic Spirit was also selected by the Chinese Post Office to decorate a Special Edition Album dedicated to the Olympic Games. The sculpture is now on display at the Olympic House & Park in Nicosia.
MONUMENT FOR THE DEAD & MISSING PERSONS
The Monument of Peace and Tolerance
Dedicated to the unknown heroes of the Turkish invasion in 1974, this sculpture was placed in the square of Dead & Missing Persons at the refugee settlement in Agios Athanasios in the Limassol District. The sculpture was designed in honour of those who fought and lost their lives in Pentadaktylos, Mesaoria and Morphou during the invasion. It hosts 110 names of the late heroes and is one of Yiapanis’ most iconic works since he started his career in sculpting.
