A very important joint exhibition is to take place, by Konstantinos Kyrtis and Constantinos Ptochopoulos, at the Blue Iris Art Gallery in Paphos. It is entitled, ‘The Face of an Acquis’. Konstantinos studied Art and Design in California and has exhibited in solo and group exhibitions in Cyprus, USA and the United Kingdom. He is a renowned portraitist.
“The Best Restaurants from across the Island” were announced, last month, at a show-stopping ceremony at the Four Seasons Hotel in Limassol. For the first time, the Toques d’Or Awards have come to Cyprus from Greece, where they have been in operation for over twenty years.
Constantinos studied art at Aristotelion University in Salonica and now lives and works in Larnaca. He grew up in an artistic environment, as he is the son of the painter, Petros Ptochopoulos. He has exhibited in Cyprus, Greece, Japan and Dubai. The Blue Iris Gallery is owned by Polys Palas and Panikos Tryfonos. Polys states, “We are very excited to bring together these two artists, who both concentrate on portraits. It will be an amazing experience to see their works hung together in the gallery.” The exhibition will open on 7th December at 19.30. The gallery is open Tuesday to Friday 11.00 until 13.00 and 15.00 until 17.00. Saturday by appointment only.
The awards are aimed at Cyprus’ leading hotels and restaurants, to recognise the industry’s professionals, who are at the top of their game. The winners were decided by a panel of experts, who anonymously visited over 150 Cypriot venues, across the Island. The judging process began in 2018, when the evaluations, and reviews of the establishments started, for this year’s competition. They visited eating places in Limassol, Larnaca, Paphos, Protaras, Ayia Napa, Paralimni, Troodos and Polis, and experienced, as part of the process, over 1600 dishes. Congratulations to all the winners of 2019, especially The Lodge Restaurant in Paphos, which was given a Top Notch Award. This month, we are delighted to feature the Chef and joint owner at The Lodge, Peter van Rijn, in our regular article, “From the Chef’s Table”. See page 46 for further details.

Twenty years ago, she settled in Paphos, organising and taking part in numerous cultural events, piano recitals and chamber music performances. Tina Chester (soprano) hails from north west England, where she studied classical and performance techniques with various teachers. She encountered considerable success at Music Festivals and spent many happy years ‘treading the boards’, singing and performing in a plethora of roles. Christina Aristodimou was born in Paphos but raised in Nicosia. Today, she works as one of the Directors of Aristo Developers, focusing on Business Development and Marketing. When she first joined the company, she started working in the Customer Service Department, which she developed, and then joined the Marketing Department at their Head Office in Paphos. She was later appointed as Nicosia Regional Manager. She studied a branch of science, Pharmacy/Toxicology at Athens University, and, after she graduated and completed her MBA, she joined Aristo Developers, a company her father founded in the 1980s. Today, she lives in Nicosia, with her family.

Indeed, in my line of work, and with my role in Aristo Developers, travelling is a must, and it goes without saying, it is part of the job description. I treat all my business travels with the utmost respect, no matter where I am heading. I make it a habit to study the history and current state of affairs of each country, before a visit. It would be unfair of me to pinpoint a destination as a favourite. Each place has its own unique merits and attributes, enhancing my business travel experience. WHY DO YOU THINK SO MANY FOREIGN NATIONALS RELOCATE TO CYPRUS? WHAT ATTRACTS THEM HERE? The list of benefits to foreign nationals is endless. WHAT ARE YOUR FAVOURITE PARTS OF CYPRUS? Having visited many countries, and met with people from so many different cultures, I always like to visit places where I find genuine people, with whom I can learn from, share experiences with and relax in the natural environment. Scenery wise, I prefer the mountains and the forests. This is something I think; I carry from my childhood. I always remember spending much of our summertime vacations in the mountains of Paphos, with my cousins and family friends. I remember exploring nature and hearing the gentle sound of summer breezes, blowing through the pine leaves. I now always avoid crowded places. AS YOU HAVE SUCH A HIGH-PRESSURE JOB, HOW DO YOU RELAX AWAY FROM WORK? I am not sure if I ever relax. I am always thinking of something. My mind is always alert. I try to spend as much time as I possibly can, with my two children. Stefania, now 15, a strong personality teenager, and Nicholas now 9, a very active boy, particularly with his art classes and music. The age difference between them does not help us to combine their interests, but we try! What relaxes me the most is spending time with good friends. Either by way of a nice cosy get-together dinner, a concert or a short trip away. If I’m by myself, I usually like to read or listen to my favourite music. DO YOU HAVE ANY FURTHER PLANS FOR COMMERCIAL PROJECTS SIMILAR TO THE KINGS AVENUE MALL? THE KINGS AVENUE MALL in Paphos was one of the pioneering projects of our Group, after VENUS ROCK GOLF RESORT and THE INTERNATIONAL SCHOOL OF PAPHOS. It was developed during difficult times because of the economic and banking crisis in Cyprus. It did, however, prove to be an innovative and successful project, which undoubtedly upgraded the Paphos Commercial ecosystem. For the moment, we do not have further plans for Commercial projects of this size. However, smaller-scale commercial projects, integrated to the Golf Resorts, similar to our new flagship project, EAGLE PINE GOLF RESORT IN LIMASSOL, will be developed. WHERE DO YOU SEE THE FUTURE AND DEVELOPMENT OF THE ARISTO BRAND? We are optimistic about the future. During the first half of 2019, property sales rose by 24.4%, corresponding to 5,500 units from one year earlier, based on the figures of the Department of Lands and Surveys. The housing market improvement is partly driven by Cyprus’ robust economic growth over the past three years. In 2018, the economy expanded by 3.9%, according to the Statistical Service of Cyprus. The housing market is expected to continue to improve in the coming months, thanks to strong demand and improvements in the banking system. However, we are far below the peak levels of 2006. There is still room to achieve better results.

LEGAL ADVICE ON SELLING YOUR PROPERTY IN CYPRUS Demetris Demetriades

Selling a property can be a challenging and stressful process. It comprises of many different procedures, until the successful completion of the transaction. Put your mind at ease from the start, with good legal representation.
Marketing your Property
Appointing an estate agent is the most convenient way of marketing your property, as it increases exposure to prospective purchasers.
Selling a Property with a Title Deed
A property with a separate title deed, provides for a straightforward sales transaction. The sale can be concluded via a Sales Agreement (recommended) or, by signing, the LRD Transfer Form (N.313), directly at the Land Registry.
Selling a Property without a Title Deed
Having no separate title deed in place, does not prevent you from selling your property. The sale can be concluded via an Assignment Agreement, by virtue of which you will assign to the purchaser, all of your rights and obligations, arising from your original Sale Agreement.
Reservation Agreement
Once you have secured a sale, a Reservation Agreement is signed between the Seller and the Purchaser, setting out the main parameters of the transaction.
Receipt of Funds
At this stage, you will have to decide how and where you would like to receive the sales proceeds, and verify, with your Financial Institution, that the Purchaser is in compliance with the anti-money laundering requirements.
Sales Agreement
Following the receipt of the reservation deposit, your lawyer will negotiate, with the purchaser’s lawyer, regarding the content of the Sales Agreement to be signed.
Capital Gains Taxation
CGT in Cyprus is fixed at 20% on the profit you make from selling your property. Each person is entitled to a number of allowances, which reduces tax liability by: €17086,00, provided, it is a first time sales transaction (oneoff transaction) €25629,02, provided, it is the first time selling agricultural land (subject to certain conditions) €85430,10, provided, the individual is selling his main residence (subject to certain conditions)
*Important note:
An individual claiming a combination of the above allowances, may only receive a total maximum of €85430.10.
Communal Expenses – Utilities- Community and Immovable Property Taxes
Communal expenses, as well as Community and Immovable Property Taxes, will have to be settled up to the date the seller had possession of the property. The same applies to the utilities of the property, which should be settled in full and transferred into the name of the new Owner, at the time of completion.
Delivering Possession of the Property and Transferring the Title Deed to the Purchaser
Possession is delivered to the Purchaser, once the full selling price has been paid. The title deed of the property, and/or the rights upon the property, are then transferred to the purchaser’s name.

LA BODEGA PREMIUM CAVA is positioned, as you drive out of Paphos, on the back road heading to Chloraka, from the Old Town. As you pass, you can see the tables outside and great activity taking place from their enthusiastic wine tasting customers. This is not just a wine shop; it is so much more than that. The business was opened exactly 11 years ago by three brothers, who all share a love of wine and the finer things in life. Kyriacos Kolokasides is at the helm in the cava and loves nothing more than imparting advice to his customers, about his wines and premium products. Kyriacos explains,
“For me, it started as a hobby and I took more and more lessons to learn about wine. I realised that you couldn’t buy the wines I desired in Paphos and decided, with my brothers, to fill a gap in the market”.

And so, La Bodega was born, with the name reflecting Kyriacos’ love of fine Spanish wines. Since its opening in 2008, they have expanded into other areas to bring top of the range brands direct to their clientele. Today, the cava stocks wines, spirits, chocolates, delicatessen products, teas and coffees. They have taken the time to source the finest quality brands from all over the world and they travel extensively to buy the very best. The wine side concentrates on offering a selection of local and international wines, and most of the bottles are kept in a specially designed temperature-controlled room. Kyriacos states, “We have established a line of Cypriot wines working directly with producers, to try to offer new grape varieties. Our wines are produced with unusual grapes, which are unique and limited in number. In the future, we are going to expand the selection of rare Cypriot wines, which we can then recommend to our clients”.

This month’s Featured New Business, is awarded to the very new toy shop in Paphos, called ToyBox. It is the brainchild of Iryna Pourdjs, who lives in Paphos, with her husband and two children. Following a high-level career in retail, working as a regional manager for the clothes shop Mango, she decided to open ToyBox, after she struggled to find quality toys for her own children. As Iryna says,
“My children are invited to so many parties on a regular basis and it was impossible to find nice presents in Paphos. EXECUTIVE DIRECTOR, PAFOS REGIONAL BOARD OF TOURISM
Nasos Hadjigeorgiou was born in Limassol but moved to Paphos at the age of 14 years old. Apart from studying and working abroad, he has lived in Pafos ever since, and now lives in Konia, Pafos, with his wife and two children. His career in tourism started 30 years ago at the age of 17, when his family owned and operated a tourist apartment complex. He went to America and gained his Bsc degree in Hotel, Restaurant and Institutional Management from the Johnson and Wales University. He went on to study, at postgraduate level, Business Administration, with a specialisation in marketing. Since 2007, he has been a member of the Chartered Institute of Marketing in the UK and since 2008, he was elected as the Vice Chairman of the International Network ECTN (European Cultural & Tourism Network), which is based in Brussels. In 2014, he was appointed by the President of the Republic of Cyprus as a board member of the Cyprus Tourism Organisation, where he served successfully until January 2019. Today, he is the Executive Director of the Pafos Regional Board of Tourism. VISION FOR PAFOS - QUALITY. “QUALITY IS WHAT WILL TAKE PAFOS FORWARD.” HAVE YOU ALWAYS WORKED IN TOURISM? After my graduation, I worked for several organisations, including cruise ships, aviation companies, hotels, tour operators, Pafos Hotelier’s Association and the Tourism Committee of the Pafos Chamber of Commerce. This gave me a full overview of the tourism industry. Since 2008, I have been employed by the Pafos Regional Board of Tourism. It is my job to promote Pafos as a destination, to Cyprus and the rest of the world. Our vision is that the Pafos region should become a quality destination, where visitors can enjoy a wide range of experiences, which will contribute towards sustainable tourism development in the region, whilst, at the same time, always respecting the natural environment.
WHAT IS THE LATEST NEWS FROM PAFOS REGARDING TOURISM? The Pafos region is one of the most popular destinations in Cyprus, attracting over 1.5 million visitors on an annual basis. The destination is certainly changing with the area undergoing huge upgrades, which are focused on the enrichment of life for both locals and visitors. These include important developments to the infrastructure at the beach front areas, upgrades in the centre and a host of other improvements. All organised parties, at regional level, including local authorities, travel associations and hoteliers, are working together towards a common goal, which is to create a modern infrastructure, which will raise the image and aesthetics of the region. The end result will be a new, modern, well developed and welcoming destination. QUALITY IS WHAT WILL TAKE PAFOS FORWARD.

“WE CERTAINLY HAVE SOME STRATEGIC AIMS FOR PAFOS. THESE INCLUDE … INCREASING THE AIRLINES FLYING INTO OUR AIRPORT.” WHICH COUNTRIES DO YOU FOCUS ON THROUGH YOUR MARKETING? Our top priority markets are the UK, Germany, Russia, Central Europe and we are now extending to other emerging markets. Obviously, we focus on markets where our airports are served well by the airlines. Lately, due to the increase in air connections to secondary markets, we are now paying attention to new countries, including the Baltic States, Lebanon and Israel. Apart from just countries, we also focus on segments of society, which we want to attract to come to Pafos. These change according to the season. In the summer, we focus on families and young couples, whilst in the winter and, out of season, we focus on sports tourism, conference incentives, nature lovers, long stayers and the more mature traveller. HOW DO YOU SEE THE FUTURE OF PAFOS TOURISM? Pafos has a great future in tourism. I am very happy to say that both local authorities and the private sector are now concentrating on quality, and working on the enhancement of the visitor experience to Pafos. The increased numbers from 2015, until today, are a direct result of the efforts of all involved, including, the local authorities and Government departments, Pafos Regional Board of Tourism, Cyprus Tourism Board and the Deputy of the Ministry of Tourism, hoteliers, travel agents, Hermes airports and everyone in Pafos, who is involved in the industry.
Another aim is to make Pafos an all-year-round destination for visitors. This can be done if a satisfactory air connectivity exists, the development of our infrastructure and by utilising our existing facilities. For example, through the opening up of opening the Olympic size swimming pool at Yeroskipou last winter for an additional 2 months, meant that we were able to attract international swimmers to come to Pafos during this period. Over 60 national teams came to train in Pafos as a result. This extends to other areas of sports tourism. We are also aiming to balance the visitor mix and ease the overdependence of a few specific tour operators and markets. This will take Pafos a step forward and closer to our strategic focus of making Pafos an all-year-round destination. WHAT ARE YOUR THOUGHTS ON THE REDEVELOPMENT OF PAFOS? As a citizen and tourist professional of the city, I now have the opportunity to feel even more proud of the Pafos region. The refinement of the Old Town is of great importance, as has been the development of the beach front promenade and public beaches. The introduction of green areas and the removal of illegal extensions and signs on buildings, have also improved the visual look of the area. 2017 was the starting point for these changes. They will certainly enhance the visitor experience, and make our tourists want to return in the future. CAN YOU TELL US ABOUT ANY CURRENT PROJECTS YOU ARE WORKING ON?
We certainly have some strategic aims for Pafos. These include, but are not limited to, increasing the airlines flying into our airport. We need to fill some of the gaps that exist, and we are particularly working on improving flights from Nordic countries, France and Central Europe.
There are several. We are developing nine new cycling routes. We are also working with the Department of Fisheries to enrich the artificial reefs in the Moulia and Polis area and running several projects related to the interpretation of archaeological sites and other places of interest. We are completing a mobile app for the Unesco Archaeological Park and are installing touch screens in the visitor’s centre.
We are happy to report that there are new flight routes planned from Beirut, Malta and Germany in 2020, and possibly more flights from France.
We are in the final stages of launching an augmented reality application at Aphrodite’s birth place. Recently, we have completed the new snorkelling park in the area of the

We are involved in the European wine routes, ITER VITIS, and we are working on launching new experiences for wine lovers. We are also planning to introduce smart apps for the Bath of Aphrodite and Yeroskipou Sacred Gardens, in order to associate the myth of Aphrodite even more with Pafos. The implementation of Pan European projects, such as the religious route of St Paul, is a very important plan, aimed to be completed and registered in the council of Europe by 2020. In addition, a great effort is also placed in contributing to the upgrading of the aesthetics by eliminating visual pollution, upgrading the facilities of the coastal areas (lifeguards, equipment and beach facilities), improving public transport and much more. WHAT ARE YOUR PERSONAL FAVOURITE PARTS OF THE REGION? The area around the Town Hall will always be a favourite for me, as this is where I went to school as a young boy. It is great to see the huge improvements that have taken place.

I also like the area around the Lighthouse, where you can always see a mesmerising sunset and, of course, I like the castle and the harbour area. It is the boats and the views which make it special for me. Out of Pafos, I like Polis and Latchi because of the crystal-clear waters and the unspoilt and beautiful nature. HOW DO YOU PROMOTE PAPHOS AS A DESTINATION? The Pafos region, through the Pafos Regional Board of Tourism, undertakes a series of annual promotional actions in order to promote PAFOS AS AN ALL-YEAR-ROUND DESTINATION. We participate in more than 15 travel exhibitions, workshops and presentations every year. Together with our partners, CTO/Deputy Ministry, hoteliers and others, we accommodate travel agents, journalists and tourist professionals from targeted markets. We continuously upgrade our print and digital promo material, brochures, films, websites and apps. We invest in digital marketing, including social media, promotional campaigns in main source areas and develop markets with strategic partners, such as airlines. We are also implementing promotional campaigns in Cyprus for domestic tourism by investing in print, broadcast media, social media, radio competitions and PR actions. WHAT IS THE BIGGEST PROBLEM YOU FACE IN THE TOURISM INDUSTRY? The image that Pafos is internationally recognised as a one-dimensional resort and a standardised destination for, mainly, sun and sea holidays. Pafos also has to deal with the high pressure on the natural environment and cultural identity, the high operating costs of hotels with other businesses, shortages of personnel, the seasonality and the dependency on a small number of large travel organizers. In the long run, we also need to address the over-reliance on the UK market, which is currently uncertain due to Brexit, and the possible future exchange rate fluctuation. In addition, the dependence, to some extent, on the Russian market, and the limited number of flights from markets which, we feel, we could serve well, such as France, Netherlands, Ireland, Nordic Countries etc.

WHY HAVE SO MANY TV PROGRAMMES BEEN FILMED RECENTLY IN THE PAFOS REGION? We have been working on these for a long time. International programmes take Pafos to the world. We support filming companies looking to film here, and source them competitive hotel packages and other related services. We also assist in securing permissions to film in locations such as historical sites and the airport. It is something we are looking to expand in the future. It has two benefits; it promotes the destination but also brings in revenue from the people who are based here, very often for a long length of time. There have been many programmes filmed in Pafos in the last year, and we look forward to more in the future. We also have plans to relaunch the Pafos Regional Film Committee, which will be linked with the National Film Commission.

TOTT Events & Lockdown Paphos Experienced cabaret singer and entertainer, Matthew Edmondson, used to work performing for travel companies and on cruise ships. Together with his wife, Kate, they set up a performance company in Paphos in 2009, and have been supplying entertainment to hotels and coastal cruises ever since. They also own an “Escape Games” business, called Lockdown Paphos. Matthew lives with Kate, their two children, two dogs and two cats.
WHAT IS YOUR … FAVOURITE BEACH?
PERFECT DAY OFF?
I love going with the family to Timi Beach near the airport. It’s less crowded than some other beaches, and has colder currents, which are nice and refreshing in the heat of the summer.
I love to go on a boat ride from Latchi to the Blue Lagoon. The prices are very reasonable. Afterwards, we always stop off and visit our friends in Koilli village. On other days, we go and play an escape game in another part of the Island. Even though we own an Escape Games business, we love experiencing other people’s take on them.
BEST RESTAURANT? On a rare evening off in the summer, we will often go to the beach and then stop, for dinner, at KENTROIKON, in Mandria. This informal pub and grill does the best Jack Daniels ribs and also offer a Chinese menu. My children love the desserts. On a date night with Kate, we enjoy Namaste Indian Street [2] food, in Kato Paphos. BEST PLACE FOR A COFFEE? During the winter, I am looking forward to trying some more of the great coffee shops and tea rooms, popping up in Paphos Old Town. I love sitting and people watching at Second Cup on Kennedy Square. BEST PLACE FOR A COCKTAIL? I’m not a cocktail drinker. I’m more of a spirits man. For a night out, I always head to Craft Bar [1] in Paphos Old Town. They always have the gin I drink, and serve it alongside great tunes, together with a warm and friendly service. FAVOURITE WALK? As a family, one of our favourite walks is the nature trail in Miliou village, between Paphos and Polis. I always make sure that I’ve got good waterproof boots on, as it can get a little muddy.

FAVOURITE CHARITY? There are so many great charities locally, but for me, I have to say Animal Rescue Cyprus. I used to host the “Hot Dog Show” at Paphos Harbour, for several years. The hardworking team at Animal Rescue Cyprus work tirelessly on the animal’s behalf. I was in talks with them just last week, on how I can be better involved again. FAVOURITE WINERY? Tsangarides Winery in Lemona Village is, by far, our favourite. Kate and I will take a ride up there several times a year. I’m always the designated driver! FAVOURITE SPA? If only there was time for a spa treatment. I will plan that for some time next year! FAVOURITE WEEKEND AWAY? We went on a really good weekend away with the kids to a cottage in the Troodos Mountains last winter. If we manage to get away as a couple, Kate and I enjoy a city break. We’re heading to Budapest soon, to play Escape Games and enjoy the Christmas markets.

WHAT IS YOUR … FAVOURITE BEACH?
PERFECT DAY OFF?
My favourite beach is, without doubt, Lady’s Mile. I love its endlessness, and it is especially inviting for taking long winter walks.
Since we’re rarely at home these days, my perfect day off would definitely start with a lengthy coffee in bed. A Germanstyle breakfast would not go amiss either. And then, a road trip, preferably through picturesque mountain villages, and eventually deciding on a local taverna, to enjoy some delicious Cypriot food.
BEST RESTAURANT? Fat Fish is always a good choice. I’m a seafood lover and, as I live on an island, I just love sitting by the beach and enjoying just that. It has a great selection of fresh fish, and I cannot miss the opportunity for octopus and some Barbouni, whenever I’m there. Their wine list is also exceptionally good, as is the atmosphere and service. BEST PLACE FOR A COFFEE? Admittedly, I don’t have a favourite coffee place. There are many good places and it always depends on my mood. For a relaxed coffee, business meeting or catch-up with friends, I would probably choose Four Seasons Hotel. For people watching, I would go to 2GO in the old port. BEST PLACE FOR A COCKTAIL? Madam it is! It has such a good vibe, with such an eclectic and international mix of people. The cocktails are top-notch, with an overwhelming selection of Gins to choose from. FAVOURITE WALK?
FAVOURITE CHARITY? Make a Wish Foundation (One Dream, One Wish). Giving life to our children of the future and giving them, and their families, all the support they need during difficult times. Everyone has dreams and wishes, but if they were your last, then they, most certainly, should be fulfilled. FAVOURITE WINERY? Vlassides [1]. I’m in love with their Sauvignon Blanc. FAVOURITE SPA? I cannot refuse a couple of hours in the relaxing atmosphere of the Amara Hotel [2]. FAVOURITE WEEKEND AWAY? Mountains. They are just magical, and there’s so much to see and do. Couple these with a stay at Casale Panagiotis, and we’re all set.

A cycle and picnic in a Nicosia park is always nice, but nothing beats a day trip to a beach in Paralimni, or a drive up into the mountains.

It is not a restaurant as such, but I absolutely love the food at The Gym [1] in old Nicosia.
I don’t have one particular favourite, but a few! Caritas Cyprus, Future Worlds Centre and Save Akamas would be my top selected charities.
BEST PLACE FOR A COFFEE? I have multiple favourite coffee spots, which include, Get Fresh, Qboo, Evergreen and Koffee Projekt. BEST PLACE FOR A DRINK OR COCKTAIL? Again, I have many, but I particularly like New Division, Sarah’s Jazz Club, Brewfellas [2] and Babylon.
FAVOURITE WINERY? I am not a visitor of wineries in general, but I do have my favourite wine bars, to include, Il Bacaro and Silverstar. FAVOURITE SPA? I don’t really do spas!
FAVOURITE WALK?

In Nicosia, I love to go for a walk in the Athalassa National Forest Park or through Akadimias Park.
Enjoying a music festival, camping in the Polis or Pomos areas, or staying up in the mountains, like at my favourite Tries Elies Village.

EKFRASEIS WINERY CHANDRIA, LIMASSOL REGION
Situated on the southern slopes of Madari Peak, at an altitude of 1,275 metres, is the village of Chandria. It is here where Christos Vassiliades chose to express himself, as a winemaker. As a child, Vassiliades visited his grandfather during weekends, to help take care of their family vineyards in Chandria. His fascination for cultivating and harvesting the grapes started from a very young age with his grandfather, who played a huge role in shaping his love and passion for wine. Vassiliades now holds a strong reputation for being a young, dynamic and very promising winemaker here in Cyprus. He is considered a bold investor in the Troodos terroir and commemorates his grandfather’s memory, by advancing steps further on the art of viticulture and winemaking. His early passion, for viticulture and vinification, led Vassiliades to pursue his studies in this field. His love for winemaking grew stronger and he later returned to Chandria, almost permanently, to replant most of his vineyards (10ha) with new varieties. He went on to acquire new vineyards, and continues to plant and grow. In 2013, Vassiliades officially launched his very own winery, called “Ekfraseies Winery”, or translated, “Winery Expressions”. Following the opening of Ekfraseis Winery, the planting continued, the productive dynamics grew and his personal philosophy and vision began to develop. His aim is to create wines based on classical practices and traditions, in order to inspire others, but also to use the modern elements of vinification art to produce outstanding quality. Cyprus has an excellent microclimate with a tremendous diversity from side to side, huge momentum and sophistication. It can do wonders and defeat several of its competitors. The production of the winery is small and produces around 40,000 bottles per year. Vassiliades cultivates indigenous and international varieties alongside each other, and considers this to be an important parameter for the diversification of Cypriot viticulture, in relation to that of other countries. Always at the back of his mind, is the average consumer and the needs of modern gastronomy. The main pillar in every effort is to capitalise on the potential of his privatelyowned vineyards, especially, to a large extent, when they are based in favorable locations. Chandria is the second highest village in the whole of Cyprus. He works to get the most out of Cypriot grape varieties, mainly Mavro and Xynisteri, but also on the qualitative performance of certain imported grape varieties, such as, Pinot Noir, Cabernet Franc, Shiraz and Sauvignon Blanc. “It is fascinating to observe the growth performance of these imported grape varieties on Cyprus soil at over 1,200 meters”, he said. Vassiliades believes that Cyprus is a sleeping giant and, along with various other prominent winemakers on the island, the alarm is set to change this in the near future.

There’s only 1 Year to go before ‘ASI Best Sommelier of Europe & Africa 2020’
Candidates from three African and thirty-seven European countries will soon be competing in Cyprus, for the title of, “ASI Best Sommelier of Europe & Africa 2020.” The competition is to be held in the city of Limassol, from 16th – 20th November 2020, and will offer a colourful and pressfriendly presentation by world-class wine professionals. Our wine-loving nation is proud to be hosting such a highcalibre event. “We are excited that in one year, the finest talents in wine service, from all over Europe and Africa, will gather on our Island, to determine a winner of the continental contest,” says Georgios Kassianos, President of the Cyprus Sommeliers Association. The Association is expecting many distinguished guests, from all over the world to arrive on the Island. Each competing country will send a delegation, including their candidate, their own President of their National Sommelier Association and a journalist, who will report on all the activities. All Association Presidents are invited to this prestigious event. The venue of Limassol was selected, as the host city, at the ASI’s General Assembly, which took place in 2017, in Bordeaux.

The preparations for this event started over two years ago. “The planning committee, along with the ASI Technical Committee, is promising a well-organised competition, and a spectacular final. Journalists and presidents will tour the Cypriot vineyards and taste Cypriot wines,” Kassianos says. “The ASI’s international sponsors will have a chance, throughout the five-day event, to promote their products, through organised workshops and participating at Bar Des Sommeliers,” he added. ASI President, Andrés Rosberg, expressed confidence in the event and its organisers: “Cyprus is a land of fantastic beauty, exquisite food and fascinating wines, domestic and imported. It is the perfect Island meeting spot for a competition, expected to draw the savviest wine professionals, from across two continents. It is going to be a fantastic event.” The winner of the competition will be invited to compete in the next ASI’s Best Sommelier of the World Contest. The site for that event, scheduled for 2022, will be determined by a vote among ASI members, in late 2019. A dedicated website, as well as Instagram and Twitter, will be announced soon.
BEST YOUNG SOMMELIER OF THE YEAR 2019 Huge Congratulations goes to Adrian Andronache, who has been awarded ‘Best Young Sommelier of the Year 2019’ at Kyperounda Winery! Well done to Jessica Thoma for coming second, and Konstantinos Grigoriou, who came third. The competition was open to candidates under 34 years of age and is an annual event, considered to be very important for the development of professional sommeliers on the Island. The judging committee included oenologists and members of the Cyprus Sommelier’s Association. Adrian is an active member of the Cyprus Sommelier’s Association and takes part in many of their tastings. He works at a new restaurant, ROUS in Nicosia, as a Sommelier.

‘SECLUDED HIDEAWAY IN THE CENTRE OF LIMASSOL, SERVING FINE FOOD’ ALASIA BOUTIQUE HOTEL - LIMASSOL
During the winter months, it is always a great idea to escape, for a day trip, to a new city destination. In Cyprus, all our cities are close together, and it is nice to have a change of scenery. Limassol is a “Shopping Mecca” for Christmas gifts, and, combined with a nice lunch, makes a great day out. Alasia Boutique Hotel, whilst not near the shopping area, makes a great place for lunch or dinner, once the buying spree is complete. Do not let first impressions of the area put you off! On following the sat nav, we were a little perplexed to find ourselves in a busy, slightly commercial, area of Limassol. There, in the middle of high-rise buildings is, the very stylish, Alasia Hotel.
Sandwiches, Salads and Pasta dishes. For our lunch, after hitting the shops in the city, we decided on Chicken Souvlaki and a Club sandwich. Portions are very generous and, could easily be shared. The chicken was tender and served with some of the best French fries we have ever tasted! The Club sandwich was different to the norm, and had the influence of a French Croque Monsieur running through it. The hotel has been owned by the Thrasyvoulou family since it opened in 1963. The original site the hotel was built on, was, actually, where the first Cyprus Horse Racing Track operated. Today, it is a haven away from the hustle and bustle of city life.
One of the highlights of this hotel, together with a luxury spa, is most definitely its restaurant. As a reviewer of restaurants, I eat out a lot, and I was very impressed with the level of food here. Think London standards! Testament to this, was a high number of local Cypriots, who were also eating in the hotel. There is an all-day menu, and a comprehensive à la carte menu for the evenings. The prices are not the cheapest, but this will be a meal that you will enjoy and remember, so our advice is go for it! The new, Head Chef, is Theofanous Christodoulos. The inside of the restaurant is of a trendy design and there is a shaded terrace outside, for the warmer months. The all-day menu has a selection of starters, including an incredible Beef Carpaccio and a very special Zucchini Fritter, which is “Kolokythokeftes”, served with mint yoghurt and salad. For main courses, there is a vast selection of Burgers,

MEET PETER VAN RIJN THE LODGE RESTAURANT
This month’s ‘From the Chef’s Table’, is courtesy of leading Chef, Peter van Rijn, who owns The Lodge Restaurant in Paphos, with his Cypriot wife, Anastasia. Recently, The Lodge was awarded the incredible accolade of a ‘Top Notch’ award at Cyprus’ first Toques d’Or ceremony - see Island Knowledge [pg 8+9] for further details and photos.
Peter’s love of food, started at a very young age, in his homeland of South Africa. From the early “Family Braais”, he loved the way everyone got involved in the preparation and cooking of the meal. It was at this time, he developed a “quiet obsession” with “cooking the perfect steak”. At the age of 18, he moved to San Francisco, to work in a very busy steakhouse, in order to perfect his skills in a professional kitchen. After this, he relocated to the UK and worked in a variety of kitchens, including French Bistros and Steak Houses, and eventually, settling at Browns, one of the UK’s leading restaurant brands. Peter and Anastasia, went on to open the very successful, first Cypriot restaurant in Dubai, called Yia Yia, which was positioned in a 5-star resort. After seven years in Dubai, they decided to relocate to Cyprus, where Anastasia was originally born. They opened The Lodge in 2011, and, since then, the restaurant has gone from strength to strength, culminating
in their illustrious award this month. Their mission at The Lodge, is to represent the myriad of cultures, which have influenced South African culinary history, whilst, at the same time, continually striving for that “perfect steak” on the Braai. The foundation of their menu, is a wonderful collection of sauces on offer, called, L’Afrique du Sauce. They have a variety of ten, and each one is made from scratch, using the finest local ingredients. Fine quality meats are very important to Peter, and he is always looking for the very best he can find. To give the beef a distinctive flavour and texture, he uses a process of dry and wet ageing, developed at The Lodge. The recipe he shares with us, is ‘Christmas Terrine with an African Twist’. As Peter says, “With the Festive season

‘CHRISTMAS TERRINE WITH AN AFRICAN TWIST’ INGREDIENTS:
THE METHOD:
250g Pork mince
Step 1 Pan fry the bacon and duck skin until crispy and chop into bits. Pan fry the duck breast in the bacon fat, just to get a crisp on the outside. Pan fry the onions until brown. Keep the bacon fat in the pan.
250g Beef mince 250g Chicken livers, finely chopped 100g Streaky bacon 2x Duck breasts – remove & keep skin, slice into finger-sized strips, lengthways 250g Prosciutto – around 15 long slices 1x Egg ½ Head of Parsley, finely chopped 1x Red onion, diced 2x Cloves of garlic, finely chopped 50ml Brandy 100ml White wine ½ Teaspoon Smoked Paprika 5g Rock salt 5g Ground black pepper 100g Toasted breadcrumbs Optional: Cornichons, crostini, The Lodge Monkey Gland Sauce
Step 2 – The Mix Combine pork mince, beef mince, chicken livers, bacon & duck skin bits, parsley, egg, breadcrumbs, brandy, wine, paprika, salt & pepper in a large mixing bowl. Mix gently. Step 3 Line a 10 x 22cm bread loaf baking tray with tin foil. Cut it, so that it just folds over the outer edge. Gently place the prosciutto slices from the centre of the tin, leading outwards on all sides, so that the prosciutto is hanging over the edges of the tin. This will be used to “seal” the terrine. Now pour the remaining bacon fat into the tin, to cover the bottom layer of prosciutto. Divide the mix into 3 equal portions and the duck strips into 2 portions. Press the first portion of the mix into the bottom of the tin. Place one portion of duck on top of the mix, lengthways. Press in the second portion of mix, then
the duck again. Finally, add the last portion of mix and press firmly until it is level with the top of the tin. You may have some leftover mix… Now fold over the overhanging prosciutto and seal, on the top, with 2 layers of tin foil. Step 4 Preheat your oven to 170 degrees Celsius. Place the terrine tin in a baking dish. Fill with hot water until at least half way up the side of the terrine dish. Bake for 90 minutes. Place the terrine on a cloth, on a counter, and place something heavy on top of the terrine. This could be an identical loaf tin, filled with water, or just a heavy skillet. Let the terrine cool for an hour. Place in the fridge overnight, with the weight still on it. Step 5 – Enjoy Remove the terrine from the foil, baking paper and tin. Place on a wooden board and slice, with a very sharp knife, into finger-thick slices Serve with cornichons, pickled shallots, crostini and The Lodge Monkey Gland Sauce, or, of course, a chutney of your choice, if you’ve run out of Monkey Gland Sauce!

This month, ‘The Place to Be’ is awarded to the Colors Café at the Four Seasons Hotel in Limassol. The Christmas season is all about treating yourself and your loved ones, and there is no better place to go for gastronomic sweet treats, over the holidays. Visiting the Four seasons Hotel in Limassol, you could actually miss Colors Café, as it is on the ground floor of an adjacent building. The space is beautifully designed, with a large indoor area with counters, showing off their cakes, pastries and ice creams. Outside, there is a lovely terrace next to one of the hotel swimming pools, and a sea view. It is a combination of a Café, Patisserie and Gelateria. There is a mix of hotel guests, locals and business people, all enjoying the ambiance and excellent service, which you would expect, from this level of hotel. Sweet cakes are the first item on the menu and what a selection! There is a choice of 12, including Red Velvet Cheese Cake, Apple Tart, Éclair, Tiramisu and Black Pearl. Even the fussiest of eaters would be hard-pressed not to find a cake they desired. There is also a selection of items from their Bake Shop, including Croissants, Muffins, Carrot Cake and one of the best fruit Danish pastries I have ever tried. The savoury side of the menu includes salads, platters, sushi and gourmet sandwiches.
CHRISTMAS SEASON SWEET TREATS AT COLORS CAFÉ! For the gelato lover, this place is heaven! Double scoops are available from the menu but also wonderful, speciality ice cream concoctions. Their “Profiterole” creation sounds divine, with biscotti profiterole ice cream, caramel crunchy bar, chocolate sauce, milk chocolate leaves and fresh cream - remember, it is the Christmas season and treats, such as these, are to be enjoyed! The drinks menu is extensive, with a huge selection of teas and coffees, milkshakes, juices, cocktails, wines and champagnes. This is a place to come and enjoy all the goodies you fancy, in a luxury environment by the sea.

MEET CHRISTOS PAPAMILTIADOUS Christos Papamiltiadous was born and raised in Paphos. After he finished school, he went to Switzerland to study and worked there before starting his career in international hotels. He returned to Cyprus and joined the Stademos Hotel Group in 1999, working at the Mediterranean Beach Hotel in Limassol. In 2002, with the opening of the Elysium Hotel, he relocated and has been there ever since. Today, he is the General Manager of the hotel and leads a team of over 300 staff. He lives in Paphos with his wife and two children.

“THE ARCHITECTURE REFLECTS THE HISTORY OF THE WHOLE ISLAND.” HOW DID YOU DECIDE TO MAKE HOSPITALITY YOUR CAREER? I enjoy meeting people and relish doing new things on a daily basis. As a young man, it was very important to me to always do an interesting job. A typical day for me might be meeting with the head chef to try out a new menu, reading accounting reports, dealing with an engineer regarding maintenance and, of course, interacting with our guests. The hotel has a capacity for 600 guests. It is never boring and often presents challenges, which I enjoy. I have a strong team here, who help and support me in providing the ultimate guest experience. TELL US ABOUT THE MAJOR REFURBISHMENT OF THE ELYSIUM. When we did the refurbishment in 2017, we really tried to keep the original character of the building. The architecture reflects the history of the whole island. Elements from the Roman, Venetian, Greek, Byzantine, French and British cultures are all apparent, showing their influences as they passed through Cyprus, and are demonstrated, for example, in the Venetian arches and French windows, which run throughout the hotel. We have a replica of a Roman Pool and the façade of the hotel reflects medieval times.
We do not want our guests to just stay in a concrete block but to truly experience the history of Cyprus during their visit. We want them to learn about Cyprus and what we have to offer. The hotel is built of traditional local materials, including stone, iron, wood and marble. As a building and hotel, it is unique in Cyprus. Our refurbishment included changing the de-luxe bedrooms, and all the floors, ceilings, soft furnishings and bathrooms were replaced. In the public areas, we selected new lobby furniture, so that it feels lighter, but kept the same concept of ‘traditional’ style. The buffet restaurants were altered, so that we could have more live cooking stations in front of guests, and we also added 7 junior suites, which can be transformed into 1 or 2 bed suites. WHAT ARE THE CHRISTMAS PLANS AT THE ELYSIUM THIS YEAR? The Christmas programme runs from Christmas Eve all the way through to Russian Christmas on the 7th January. We have planned a very special Christmas Eve Dinner in the Basilica Ballroom, with entertainment and special food. On Christmas day, we will have a traditional British Christmas Dinner served under the supervision of our English Executive Chef, Michael Lipscombe. Throughout December, with our Christmas decorations on show, we will have special events with music and our famous Afternoon Tea will have a Christmas twist. On Boxing Day, we will have a very extensive Buffet, which will also be available on New Year’s Day. On New Year’s Eve, we will have feature performances by Maria Elena Kyriakou in the Epicurean Restaurant and Michalis Hadjiyiannis in the

Our festivities will finish on 7th January, Russian Christmas Day, which will be a dinner of Russian delicacies for our guests and locals in Paphos.
TELL US ABOUT THE OPIUM SPA AT THE HOTEL?
WHICH IS YOUR FAVOURITE RESTAURANT AT THE HOTEL? I don’t have a favourite one, as it all depends on what I feel like eating at the time. If I want sushi, then I would favour O’Shin Restaurant, if Italian, our flagship, Ristorante Bacco, for a snack, Café Occidental, and for Cypriot food, the Mediterraneo Restaurant. We also have other restaurants, so we can give our guests a great selection. WHAT DO YOU PUT THE INTERNATIONAL SUCCESS OF THE ELYSIUM DOWN TO? Our success is almost entirely down to our staff. The attention to detail and the service they offer, with a smile, is what makes the difference to our guests. We have a very high rate of returning guests, which confirms, to us, that we are getting it right. Our guests say that they cannot get this level

We are very proud of our spa, which offers treatments by the brand Espa. We are the only hotel on the Island which has this brand, and it is used for all our body and facial treatments. The spa itself, has a large indoor swimming pool, gym, sauna and jacuzzi. Our gym was fully refurbished last February with the latest equipment. We have gym memberships available and beautiful gift vouchers for Christmas. The spa is also open for treatments to non-residents. WHAT ARE THE FUTURE PLANS AT THE ELYSIUM? After the 8th January, the hotel will be closing for further refurbishment work. One of the biggest changes will take place in the main kitchen but Michael can tell you more about that. In the Spa, we will add a couple’s treatment suite and a hammam room. The hotel will reopen in March for the 2020 season, with a number of new additions and a complete state-of-the-art kitchen, which will take our cuisine to another level, with Michael at the helm.
“I ALWAYS USE THE SEASONS FOR MY COOKING.” MEET MICHAEL LIPSCOMBE Michael Lipscombe arrived at the Elysium Hotel in January 2019, to take up the position of Executive Chef. He relocated to Cyprus with his Cypriot wife and two children after a very impressive professional career in the UK. Lipscombe knew from a very early age that he wanted to be a chef. He has worked in different kitchens in London and Ascot, including the very famous, The Ivy. He has also worked with some of the top names in the industry, including Raymond Brown, Gary Rhodes, Jason Atherton and Albert Roux. Today, he leads a team of 65 in the kitchens, covering all the restaurants at this 5-star hotel, with their sole aim being to further grow their reputation for excellent fine dining.
HOW ARE YOU SETTLING IN CYPRUS? I am absolutely loving Cyprus and can only see us going back to the UK for family holidays. Although a great deal of my time is spent working, I am so happy that my family are enjoying their new lifestyle. The only thing I miss is the availability of various produce for my work. I love the way that, in Paphos, you can go out anywhere within 15 minutes and be at a great taverna, or in the beautiful mountains, trying great local wineries. People here are more passionate, warm and welcoming. The weather we are enjoying throughout the winter, is amazing. I also admire the traditions of the Cypriot people and the way they are patriotic to their country. WHAT ARE YOUR PLANS FOR CHRISTMAS? Obviously, I will be working, as this is a very busy time of year for us. We are planning a classic British Christmas at the hotel with all the traditional trimmings - brussel sprouts with roasted chestnuts and pancetta, roasted potatoes in goose fat and red cabbage etc, concentrating on all the flavours of Christmas. The turkey will be cooked using a special method, which will keep it moist. At the moment, we are trying to source our turkeys for the big day from Norfolk. We started making our Christmas puddings in August, so that all the fruits and nuts could be truly marinated. Christmas dishes are special for everyone and they should not be played with, or changed. WHAT IS YOUR NORMAL STYLE OF COOKING? First and foremost, I always use the seasons for my cooking. It is very important to use ingredients at their prime.
Seasonality and clean flavours would aptly describe my food. I like to use prime cuts along with cheaper cuts on the plate, such as aged Angus beef with a 24-hour braised shin. I also like to use pickled elements in my dishes to bring balance, such as roasted carrots, then raw, perfectly pickled, shaved carrots, would be an example. I am a great believer in not covering food with too many flavours and hiding behind garnish which doesn’t need to be on the plate. Cooking also depends on the time of year, as during the winter and summer months, different dishes are more appealing. As we enter the winter season, we are using more hearty ingredients and braising our meats. WHAT IS THE DIFFERENCE BETWEEN A UK HOTEL KITCHEN AND ONE IN CYPRUS? I think that the chefs here are more aware of the changing seasons and the foods that are available. The knowledge of produce, from seed to the plate, is far superior here, in comparison to chefs in the UK.

CAN YOU SHARE A TOP COOKING TIP WITH US? My biggest tip would be to always let the fresh ingredients speak for themselves. You can use the same ingredients in a variety of ways. I would also recommend slow cooking and not to rush the process. This way you do not lose the flavours - always be brave and adventuresome - but always remember that planning is the key to a great meal. If you don’t plan, prepare to fail. HAVE YOU NOTICED A DEMAND FOR VEGAN/VEGETARIAN FOOD AT THE HOTEL? We have noticed a high increase in guests with this dietary need at the hotel. I would say approximately 15-20% of our guests are either vegetarian or vegan. We really try to look after them by offering a good selection on the menu. For example, at our breakfast buffet, there is a whole station offering vegan options. These guests are equally important to us, so we cater with variety, which is not always the case when they stay at other establishments. I am not a vegetarian but admire their principles, and believe that in the next twenty years, the increase will be dramatic. WHAT ARE YOUR FUTURE PLANS AT ELYSIUM? We are currently planning a state-of-the-art commercial kitchen at the hotel. The Owners and General Manager are fantastic and are always reinvesting in the hotel. The new kitchens will enable us to produce some of the best food in Cyprus. It also means that my team and I can take our food to the next level. The new kitchen will open in March next year, and will have a lot of new additions, including a chocolate and ice cream room, separate bakery and specialist fridges, which are being imported to grow micro herbs, which I use a lot in cooking.

A major addition to the kitchen will be the introduction of what, we believe to be, the first Chef’s Table in Cyprus. The horseshoe-shaped table will actually be in the kitchen, and the aim is to breakdown the wall between the chef and the diner. Guests will be able to eat a 7 - 8 course tasting menu at the table, which my chefs and I will plate up in front of them and, of course, we can answer any questions they may have. Next year is going to be a very exciting year for us and I cannot wait to share the new kitchen with our guests. For me to be involved in the design from scratch, has been a chef’s dream.

CYPRUS SYMPHONY ORCHESTRA MEET YIORGOS KOUNTOURIS Artistic Director & Conductor Cyprus Youth Symphony Orchestra
YIORGOS KOUNTOURIS is the Artistic Director & Conductor of the Cyprus Youth Symphony Orchestra. He graduated from the St. Petersburg State Conservatory in 2006, where he studied Symphonic and Operatic Conducting with Prof. Alexander Alexeev and Violin with Prof. Antonina Kazarena. In the same year, he was appointed at the University of California, Los Angeles as the Assistant Conductor of the UCLA Philharmonia and UCLA Symphony Orchestras.
He has conducted numerous orchestras in Europe, the U.S.A. and Russia. Some collaborations of the Maestro include the St. Petersburg Philharmonic, the Vienna Chamber Orchestra, the Hermitage State Chamber Orchestra, the Athens Camerata as well as the Lege Artis and Wiener Singakademie choirs. He holds a PhD in Musicology and an Aspirantura Graduate Degree in Symphonic and Operatic Conducting. As Yiorgos explains, “The best part of my job is working with young talent. Their dedication, collaboration and passion to their music is the most creative part. I have to admit that having the chance to see the world through the innocent, fullof-creativity eyes of children makes me full of joy and gives me hope”. One of the Orchestra’s plans for the future is to perform at the Musikverein in Vienna with the whole Orchestra for the first time next year. “It is a great honour as we will represent Cyprus in one of the most important music halls in the world. Of course, we won’t stop there. We have dreams and expectations, and I feel very confident in having such a strong team consisting of these talented children, a selection of the best music teachers and a very supportive board of directors. All these combined, together with the love and support of the friends of the Orchestra, gives us the motivation to achieve the impossible.” Yiorgos states. Yiorgos is also involved in the innovative educational programme of CYSO called “ΣymphoΠedia” or in English, “SymphoPedia”. It is an integrated cycle of performance practice, consisting of three different ensembles that children aged 7-12 years of age can participate in.

TAKE AS LITTLE AS IS NECESSARY MEET HELEN GRANVILLE CENTURY TRAVEL After spending 2 years living and exploring America, unable to settle down on her return to the UK, Helen took off on the high seas and worked on the cruise ships, before finally returning to Cyprus, her Island of birth, where she has lived for the last 20 years. As one of the Travel Consultants, she is able to advise on the many destinations she has visited.
WHAT ARE YOUR EARLIEST HOLIDAY MEMORIES? The Isles of Scilly camping with a trailer tent, which the farmer had to take to the campground with his tractor because we were not permitted to take cars. Also, successfully fishing for mackerel with just a hook off the side of a boat and loving Cornish cream teas. WHAT IS YOUR TOP TIP FOR TRAVELLING BY AIR? Take as little as is necessary for the journey on the plane, thus making the time at security and in the airport less stressful. WHAT AND WHEN WAS THE BEST HOLIDAY YOU EVER HAD? Too difficult to answer! At different stages of my life, I travelled extensively. In fact, some of my best holidays were in Cyprus, but two that do stand out: The first, I was aged 18, I think, in the late 80’s, and my best friend and I took the train system to Pisa in Italy, with our rucksacks on our backs. We experienced Paris en route and a metro system unlike any other, double decker trains which we had never seen before and being woken up by conductors to see our passports at 2am on a sleeper train. It was exciting eating such different foods and seeing high fashion. It really opened our eyes.
The second, would be the river cruise I took my 11-yearold son on, on the Danube, with AMA Waterways. Just the two of us. On the river cruises, they really do all they can to accommodate you and we had many bike ride excursions. And because there are so few children on river cruises, the staff and the fellow passengers really made a fuss of him. WHAT IS YOUR DREAM HOLIDAY THAT YOU ARE SAVING UP FOR? I would love to go scuba diving in the Maldives. WHAT IS YOUR FAVOURITE DESTINATION IN CYPRUS FOR A SHORT BREAK? Kalavasos, between Limassol and Larnaca, where you can drive north and visit Lefkara, and then afterwards head to the sea at Zygi for fresh fish. WHAT IS THE BEST TRAVEL ADVICE FOR OUR READERS? Don’t ever be afraid of visiting somewhere you’ve not discovered before, as you will always find someone local, who will take great pride in helping you and experience new adventures.

The human chakras were discovered in India between 1500 and 500 BC, in the oldest, Vedas text. Translated from Sanskrit, ‘chakra’ means ‘wheel’. The human chakras represent spinning discs of energy that run along the spine. There are seven main chakras along the spine, although, it has been said, there could be as many as 114 chakras all over the body. They allow the free flow of energy into and out of the human body. Chakra Healing is connected to the physical body, the mind and the emotional well-being of a person.

The Root Chakra is located at the base of the spine, between the joints of the hip bone and the tail bone. It honours the earth, our basic survival and physical needs. When the Root Chakra is out of whack, this is when we feel unstable, insecure or disconnected from the earth. TELL US ABOUT YOUR BACKGROUND. TERESA: I am originally from Costiera Amalfitana, which is the Amalfi Coast in Italy. It is a stunning area and I was fortunate enough to be brought up there. My working life before relocating to Cyprus, was mainly as a lawyer. I was also the CEO of my family company. ROBERTO: My birthplace is Milan. After graduation, I initially worked in our family business, which supplied specialist parts for sunglasses across the world. For the last twenty-one years, I have been the Director and CEO of an international company, which produces food supplements and natural cosmetics. These products were distributed across Russia, Eastern Europe and the Far East. For me, it involved working very long hours and extensive travel.

HOW DID YOU RELOCATE TO CYPRUS AND MAKE IT YOUR HOME? ROBERTO: In 1996, our Company Head Quarters were based in London, where I was General Manager and Vice President. In 2004, the decision was made to relocate the company to Cyprus and become a Public Company, listed on the Cypriot Stock Exchange. We first came through my work. At the beginning, I came here on my own, but after many visits to the Island and seeing the many benefits of the lifestyle here, Teresa decided to leave her job and join me. Since we arrived in Cyprus, we have always felt very welcome and love everything about the Island. This made us feel secure enough to move forward with our decision, to build our own home at Aphrodite Hills. We very much enjoy living on the estate, as we travel extensively across the Island, and it is a good position for us. YOU HAVE LAUNCHED A NEW COOKING BRAND IN CYPRUS, CALLED ‘MY COOKING BOX’. HOW DID YOU COME TO BE INVOLVED IN THIS? TERESA: Roberto and I have always been into food and enjoying the finer things in life. While we enjoy Cypriot food very much, we started to miss the delicacies that Italian cuisine offers from home. Being from the Amalfi Coast area, it is the kingdom of unique lemons and mozzarella, so I was brought up on an Italian diet. The longer we lived here, we found that we were missing specific flavours that you could not buy here. It was a few years ago that we decided to set up our company, ‘TERESA & ROBERTO Only Italian Food’, and began to import the foods we were missing from Italy. They are a select line of specialist products and we travel widely in Italy, to source the finest ingredients. When Roberto left the company he had been working for, we decided to establish our latest venture, last year, which is ‘My Cooking Box’.

We went to Italy to meet the founder of the company and to look into the project further. We loved the quality of the products and the concept of the idea. In this day and age, people are so busy and have less time to cook a meal from scratch. We felt that a meal in a box was a brilliant idea to bring to Cyprus. All our customers have to do, is open the box, discover the authentic ingredients, cook it and share it with friends. All the ingredients are long life, so it is ideal to keep in the kitchen cupboard. The recipes include a variety of Italy’s secret dishes, including Cena Siciliana, Pappa al Pomodoro and Sicilian Busiate. One of the favourites in Cyprus at the moment, is our Tuscan Pici Pasta. We have only just launched this range in Cyprus, and it is available at a few select boutiques across the Island. We are planning new strategies and ideas for the Cypriot market. TELL US ABOUT HOW YOU ARE PAIRING NEW WINES WITH YOUR DISHES. ROBERTO: We are collaborating with Wine & More by French Depot and the wine expert, George Kassianos, to try to find the best Italian wines to be paired with our boxes. By doing this, it will enable our customers to buy the two products together, and know that they have been perfectly paired. For example, the combination of Tofiette Liguri and ‘Suade’ Sauvignon Blanc I.G.T. This is a perfect combination of a dish and a wine, which will definitely excite the taste buds. One of the most exceptional sauces in Italy, is the Genoese Pesto. It works miracles with the Ligurian Trofiette artisan pasta, with extra virgin olive oil, pine nuts and grated cheese. It is of the utmost importance to ensure the chosen wine brings out the taste sensations with this pasta dish. The zesty ‘Suade’ Sauvignon Blanc is known for its versatility and foodfriendly nature. It is intense and fruity, with hay and walnut undertones. The pronounced acidity and herbal character go very well with the herbs and oily green pesto, especially when the acidity cuts through the oiliness of the sauce. Quite simply, they are made for each other, as a winning combination. We aim to select wines to pair with all our dishes throughout the range. “CYPRUS IS AN ATTRACTIVE COUNTRY TO START A BUSINESS IN.” WHAT ARE YOUR FAVOURITE PARTS OF CYPRUS? TERESA: We love so many parts of Cyprus, but all for different and unique reasons. The area around Old Nicosia we enjoy for the traditional feeling it reflects. Some of the architecture there reminds us of Italy. It is an excellent area for shops and fabulous restaurants. We enjoy visiting the area under the British Sovereign Base, which runs from Pissouri up to the British Base. This area is fantastic and we love going there for long walks. During the warmer months, we love to visit the Blue Lagoon near Latchi. We also enjoy the Troodos Mountains during the colder months. You can travel to so many landscapes in Cyprus, and feel that you are in a different country. CAN YOU SHARE YOUR BEST ADVICE FOR PEOPLE LOOKING TO START A BUSINESS IN CYPRUS? ROBERTO: Cyprus is an attractive country to start a business in. There are not many bureaucratic steps and the low taxes are an obvious benefit to potential overseas investors. We have found that many of our associates are happy to help in establishing a new business, and want you to succeed. The only negative I can think of, is that, Cyprus as a country is small, so your product is available to a much smaller audience, in comparison to other European countries. But it can be an excellent place to establish a good business model before expanding into other countries, such as Greece, which has a higher population.

We were fortunate to find this restaurant, and enjoy eating there whenever we are on business in Nicosia. They cook the freshest fish in a variety of ways. It is a dining experience we always look forward to. In Limassol, we enjoy Limanaki Fish Restaurant, which is in the Amathus Beach Hotel. It recently received an award at the Cyprus Toque d’Or Awards, for the high standard of food and service. In Paphos, we often visit the restaurant near the Municipal Offices, called Koutorou. It is in a beautiful traditional building and has a unique, trendy selection of artefacts throughout the restaurant. The chef cooks fantastic food, using local ingredients at excellent prices.

I have been a part of the Cyprus National Golf team since then, and have been fortunate to play annually in Malta, Greece and the UK. My highlight was playing at St Andrews in Scotland, last year, where I represented Cyprus in the Junior Open. I have also been privileged to participate in numerous charity events over the years, as golf is often a driving force in fundraising, for charities, such as PASYKAF, Special Olympics and Autism Societies to name a few. Golf is certainly a game for life. It is about life and I plan to play it for the rest of mine.”

BUTCHERBOY ButcherBoy was opened in 1999 by the owner Neofytos Hadjialexandro, a third-generation butcher. He was born in Paphos and has lived his whole life in the city. Following his national service, he went to America to learn their techniques of meat cutting and sausage making. On his return, he opened a butchery, under his own name, and then went on to launch, the now famous, ButcherBoy brand. ButcherBoy moved to their current premises in 2009, where there is a large modern space filled with meats, delicatessen and wines. Neofytos runs the shop with his wife, Niki, and a team of 7, who all contribute to the success of the business.

In the run up to Christmas, it is good to know what is available from this gem of a butchers. One of their most popular items is ham, which they sell a lot of for the Christmas season. Neofytos says, “It is cured the old-fashioned way. This is what makes the difference, as it is a 30-day process. This is now our busiest time of year, as we have to have all seasonal festive foods available for our old and new customers. We use local and imported turkeys. Our turkey crowns are very popular! We will also have goose, duck, sausages and stuffings”. ButcherBoy is very well known for their sausages, so we asked what the secret was to their popularity? “It is all in the high-quality meat ratio and the special herbs we use. In order to get the balance right, we import the best herb mix from the UK, which makes all the difference to the taste of the sausage,” Neofytos told us.

THE VOYAGE DIARY ‘A Sailing Trip across 3 Oceans’ Joanna Urszula Lapuszek Joanna Urszula Lapuszek is an international award-winning artist, with a rich educational background in Fine Art. Her journey into the art world began in 1993 and, although she is originally from Poland, she has lived in Cyprus since 2010. In 2000, Lapuszek won a Socrates/Erasmus scholarship to attend the Academy of Fine Arts in Helsinki, Finland. Later, she attended the Academy of Fine Arts in Kraków and graduated with a Master’s Degree in Fine Arts in 2003. She was awarded her Diploma, with Distinction, in Painting and Drawing. Lapuszek then embarked on a three-year PhD programme across three oceans, where she sailed as a professional Offshore Captain for one and a half years. In 2013, she received an honorary doctoral degree in Fine Arts from the same academy, and has since been involved in countless international exhibitions and projects.
Lapuszek has been a member of the Association of Polish Artists and Designers since 2001. The Association was founded in 1911, in Kraków, during the Partitions of Poland, and now represents more than 8,500 learned artists. She held the position ‘Master of the Artists Club’ within the Association of Polish Artists and Designers from 2003 to 2006. During this time, she also curated numerous exhibitions for the Association. Lapuszek is an open-minded and free-spirited character, who has a very carefree attitude towards her style of painting. She is fully aware that it is not to everyone’s taste, but for those who can appreciate it, it is worth doing. She has worked on art commissions for various high end professionals and venues, including the US Embassy in New Zealand, and,

later, a Private Collection in Chicago. Lapuszek has her work featured in various art collections worldwide, including Cyprus, Holland, Portugal, Sweden and UK. Lapuszek became a holder of the Grazella Foundation scholarship in 2003, won 1st prize in the Small Size Painting Exhibition at Gallery ZPAP Sukiennice in Kraków, in 2004, and 1st prize at the 10th Zillisheim Painting Exhibition, in France, 2005. Lapuszek also worked as the coordinator of ‘Konfrontationen - Konfrontacje Berlin-Kraków’, an international festival that took place in 2005, designed to bring young creative communities of Berlin and Kraków closer to the public, in order to present their achievements to a wide audience.
3-YEAR PhD ‘The Voyage Diary – pursuing every colour of the world.’ Lapuszek’s PhD programme included several personal exhibitions. The first took place in February 2009, at the Royal Cape Yacht Club (Cape Town). Then, further exhibitions included, on the ‘Nashachata’ sailing boat in the Indian Ocean, on the Crozet Islands, on Amsterdam Island (U wrót Amsterdamu), and on Kupang Isand in Indonesia, in order to show a different culture to the local people. Lapuszek’s PhD project was named ‘The Voyage Diary – pursuing every colour of the world.’
How did this Sailing Trip influence her PhD? Lapuszek is also a professional Offshore Captain and embarked on a one and a half year sailing trip across three oceans (Atlantic, Indian and Pacific Oceans) in 2009. She completed a painting, drawing or poem, every day. These art expressions were created as visual notes, witnessing the days spent in harsh living conditions, in a small community, and are witnesses to her everyday aesthetic and emotional experience, which was so different from the regular life on land or in a city. She used dry pastels, watercolours, crayons, pencils, pens and natural materials, such as, coffee, tea, dust and ash! Various liquids were also used, including, sweet or salt water, glue and cleaning lotion, in order to obtain unexpected effects.

“The surroundings were examined in the artistic process, which was very important for my project. By the act of creation, I showed the artistic and emotional conditions which I experienced at this very moment of my life on the sailing boat. I asked questions and tried to find solutions to my problems. What is the influence of the sunlight, the weather conditions and my perception of my surroundings in my creation? Are there any differences between the works of art which were created near the cold, North Greenland, or in the hot land of South Australia? If you see my art project, you will know the answer. The project’s nature forms a colourful diary, which was made on a regular basis. Each page is a consecutive day spent underway,” Lapuszek stated.

The artworks were used to form a much larger project. She emphasised that a piece of art has to reflect the artist’s expressionist vision. Lapuszek went on to describe them in more detail.
“They are not realistic, reporter’s paintings. They are organic abstracts that do not show the sea in a realistic way, but connote the image of the sea, sky and surrounding nature.” In 2011, Lapuszek won 1st prize for the Best Sailing Trip in the Art PhD programme in Kraków, and used the paintings during her involvement as Stage Designer for Kraków’s 750th Anniversary Festival. Soon, an exhibition of the paintings, coupled with photos of the artist experience, will be taking place at Chakra Fine Art Gallery in Paphos. A selection of her work for sale is already on show there.

THE BANK OF CYPRUS CULTURAL FOUNDATION ‘CYPRIOT ARCHAEOLOGY, HISTORY, ART & LITERATURE’ Nicosia
The Bank of Cyprus Cultural Foundation is positioned in, what was once, the administrative building of the Bank of Cyprus. It was built in 1936, in the heart of the historical centre of Nicosia. The foundation was established in 1984, with the main objective being, “to encourage the research and study of Cypriot civilisation, in the fields of archaeology, history, art and literature”. They do this through supporting research, educational programmes, the publication of books and organising exhibitions and events.
COLLECTIONS & MUSEUMS The Foundation has five very important collections, which includes coins, rare books and manuscripts, engravings, old photographs and watercolours, contemporary Cypriot art and an archaeological collection. In addition, the Foundation curates two museums, including the Archaeological Museum of George and Nefeli Giabra Pierides , which was donated by Clio and Solon Triantafyllides, and the Museum of the History of Cypriot Coinage.
KEEPING CYPRUS’ HERITAGE ALIVE Over the years, the Cultural Foundation has been supplemented further, by a number of donations from benefactors, who are keen to keep Cyprus’ heritage alive. These have included maps, watercolours and photographs. In 2013, with the demise of Laiki Bank, the Foundation was further extended, when they absorbed the contents of the Laiki Bank Cultural Centre, and moved the items into their “Collections Hall”, in the Phaneromeni Building. The collections and Foundation’s activities play a vital part in promoting Cypriot Civilisation through the centuries, to the world.
