The 7th Edition of Cyprus International Tattoo Convention is returning this April. Various tattoo and other artists have been invited to participate in this event, which will take place from the 3rd to the 5th of April at Carob Mill Restaurant, Vasillisis Street, 3602, Limassol. The main goal is to unite exceptional artists from Cyprus and abroad and to provide a platform for them to showcase their artworks and share their techniques.

Marios Ioannou (violin), Savva Lagou (violin), Sorin Alexandru Horlea (viola), Robert Grod (cello). The Fusionia story started with Sorin teaching violin to Marios and Savvas in their teenage years, followed by their continuation of studies together in London, experimenting around Fusionia Duo. They then returned to Cyprus as members of the Cyprus Symphony Orchestra beside their teacher and were joined by the principal cellist of the same orchestra, Jakub Otcenasek. Over the past three years the event has raised in excess of a total of â‚Ź8,000 and it is hoped the new venue will offer the charity more opportunities to increase that amount and also give the golfers a truly rewarding golfing experience.

Publicity for the event is just starting. Invitations and entry forms will be sent out in March by golf organiser Barrie Hattam and queries before then will be fielded by John Eldred and Nikki Dake, for the Charity. This includes offers of sponsorship and interest in taking part.

DIRECTOR, RIALTO THEATRE, LIMASSOL

Georgia Doetzer is the Director of the Rialto Theatre in Limassol. She was also the Artistic Programme Director of Pafos European City of Culture 2017 which transformed the cultural scene in Pafos. Georgia was born in Limassol but was brought up in Nicosia. After leaving school, her studies took her to Germany, where she studied for her degree in Social Sciences and Economics. She stayed in Germany for nine years and met her husband there. They both returned to Cyprus in 1984, and she still lives in Limassol today. She has a son who also resides in Limassol.

HOW DID YOUR CAREER IN CULTURE START? Initially, when I came back to Cyprus, I went into teaching. However, my love for the theatre was prevalent, and I started working with a local theatre group, the ‘ETHAL’ which was an excellent opportunity to get involved with the cultural scene in Limassol. The Rialto used to be one of two main cinemas in Limassol, so it was always a landmark building for the people of the city. The Rialto was built in the 1930s on Heroes Square, and as a building, it has always been loved by all. During the mid1980s the building was abandoned. There had been plans to demolish it, but thankfully the Limassol Coop Bank stepped in and bought it. They extended, refurbished and rebuilt the old cinema building and it opened as a modern theatre in 1999. It is operated by a non-profit cultural foundation and it has changed the cultural scene not only in Limassol, but across Cyprus. The theatre’s mission is to present events of the highest standard and make them accessible to everyone, not just a select few. I was appointed as their Artistic Director before it opened and I worked there from 1999 - 2014 when I left to work on Pafos 2017 European Capital of Culture. As soon as the Pafos 2017 project was finished, I was offered the job to return. HOW DOES THE RIALTO THEATRE WORK TODAY? At the Rialto, we organise six of the leading state festivals, which are all aiming to promote not only the arts but culture in general. We have several Cinema Festivals which we do in collaboration with the Ministry of Education and Culture. We

have an annual Film Festival in April, the Cinema Days and a Short Film Festival in October. Again, in collaboration with the Ministry, we also arrange Dance Festivals. We have the Cypriot Choreographers’ Platform and the International Contemporary Dance Festival. This March we are also starting a new festival which will be called the Cyprus Choreography Showcase. This is where we will invite festival directors, curators and programmers, from abroad to come to Limassol and see selected Cypriot dance performances, in the hope, they will be invited to attend worldwide events. Every July we also hold a Jazz and World Music Showcase, which shows the world, the musical scene in Cyprus. Our main aim is to help our artists get the recognition they so richly deserve. We have a lot of talent in Cyprus in all cultural genres, including music, dance and theatre. By participating in these festivals, we are offering the opportunity to these artists to prepare and show their work at a European level. Twenty-five years ago, these opportunities were not available to young artists. After Rialto’s first twenty years, we see this as a priority to support and promote our talent to the international audience. To celebrate our anniversary, we were rethinking ways we can help the young artists coming through, and we have developed a new project called “Associated Artist at Rialto”. We have invited for 2020, the director, Paris Erotocritou to work on a collaboration with us. Together with writers and actors, we aim to develop the project from the beginning to the performance. The emphasis is actually on the development phase of the project. This way, we can invest more in the artists and conditions of developing the artistic work together.

HOW WAS PAFOS 2017 FOR YOU? Obviously, it was a very challenging experience. It was a very intense time during my career, as together with our seventeen staff, we were all under an immense amount of pressure. There was a great deal of preparation, and it was a lot of work even just to complete the design of the programme which had to be approved by the EU. Our primary mission was then to implement the programme. We had over 350 volunteers who worked with us throughout the year in 2017. They were a precious asset and were all passionate about Pafos 2017. It was a lovely atmosphere with everyone working together for the good of culture and the city. Everybody involved in my team worked so hard. We all worked to our maximum potential and saw it through until the end. The extreme pressure resulted from the fact that some of the venues had not been delivered on time. The City has been totally transformed since then, with nearly all the projects completed.

“THIS IS THE LEGACY OF PAFOS 2017, AND I AM SO HAPPY TO SEE THAT THE SPIRIT OF THAT YEAR REMAINS ALIVE TODAY.�

WHAT IS THE LEGACY OF PAFOS 2017? The lasting legacy, in addition to the infrastructure changes, is that it has influenced and changed the mindsets of people and brought the different groups living in Pafos, closer together. It brought the arts to everybody and developed the audience. We had 168 projects with 332 actions throughout the year, and the majority of them were available with free entrance. This made culture accessible to everyone and presented strong networking opportunities to the artists. WHICH EVENT ARE YOU MOST PROUD OF? The most prominent event was the Berlin Philharmonic Orchestra performing in front of the castle. This was important for me as it stood apart from other performances for its artistic excellence. It was a very demanding and challenging event to organise. To bring them here and have it transmitted to a worldwide audience on TV of 30 million was a great success for Pafos. The European capital is not just about culture but to make the title city more well-known across the world. In addition to this, the creation of another concert which took place the day before meant a lot to me as well. It was a musical performance by young Greek Cypriot and Turkish Cypriot musicians, united by music, performing together. The orchestra still exists and holds events today. To be honest, I feel connected to all the projects, and I relished the way that it brought all sectors of society in Pafos together. All the Paphians came together and became a big group. It bridged all different nationalities as well. Another performance which stands out for me was the theatrical production of The Trojan Women. It is a play that deals with the pain after the loss of Troy. It focuses on the side of the women coming out of the war. In the production, we used actors from divided cities across the world, including Nicosia, Jerusalem and Mostar. It was a compelling and emotional performance for Cypriots to watch as we were all reminded of how conflict could cause significant pain. The cast had some amazing actors, and this production has gone on to be performed around the world since 2017. In 2018 it was shown in Delphi, and then in 2019, it went to China. This year it is going to be performed in South Korea. This is the legacy of Pafos 2017, and I am so happy to see that the spirit of that year remains alive today and continues to inspire people.

WHAT DID PAFOS GAIN FROM HOSTING 2017?

CAN MORE BE DONE FOR CULTURE IN CYPRUS?

Pafos, without a doubt, has gained a lot from the Pafos 2017 experience and good practices. Today there are many more people who can produce and implement big projects thanks to the groundwork done in 2017. In Cyprus, our capacity, knowledge, expertise and networking have all grown from the experience. It was a very positive thing to happen to Pafos after a period of darker times with financial problems and scandals. It has revived the city and given it a brighter future.

While there is government funding for culture, there is certainly not enough. If we look at the film industry, we will never attract high level international film directors here without a proper film centre and support infrastructure in the country. We unfortunately underestimate the importance of culture. I firmly believe that culture is a powerful tool for the development of Cyprus, both in economic terms and on a social basis.

IF YOU COULD PLAN YOUR DREAM CULTURAL EVENT, WHAT WOULD IT BE? I am lucky enough to say that I have already done it. It was the Berlin Philharmonic Orchestra in 2017. If I could have one wish for cultural development in Cyprus, it would be to have a separate Ministry for Culture. At the moment it is part of the Ministry of Education, but I think Cyprus would benefit significantly from a new independent Ministry. A new, unique Ministry could work solely on promoting and investing in the arts and artists of Cyprus. While Cyprus is small, we have a significant cultural history and a considerable amount of talent here that should be shown to the world.

The next generation coming through in the Cypriot Arts has a lot of potential, and we need to support the up and coming artists. I believe that Cyprus has the potential for culture to be a real product; up there with tourism and the service sectors. It is a part of our economy which has never been considered or given the importance it so richly deserves. For example, in Pafos, they had 3 million visitors who came to Pafos 2017 of which 500,000 visited the antiquities. While we invest in roads and hotels, it is essential to invest in our culture. It is vital for our future.

DO I HAVE TO PAY VAT ON MY HOUSE PURCHASE OR TRANSFER FEES?

Bearing in mind that VAT can be as high as 19% and is added on top of the purchase price, this is something that any home buyer should look into before buying their dream house. VAT is chargeable on the first sale of new buildings or parts of buildings and the land on which they stand if the application for a planning permit was submitted after 1 May 2004. No VAT is charged on any subsequent sales you make. Thus, if you are buying a resale property, you wouldn’t be liable for payment of VAT, although you would still be liable to pay Transfer Fees.

HOW ARE TRANSFER FEES CALCULATED? Transfer fees are payable by the purchaser at the Department of Lands and Surveys on the date of transfer of the Title Deed into your name. Although the fee is usually calculated on the purchase price, DLS may impose higher transfer fees if the valuation department decides that the market value of the property at the time of purchase exceeds the purchase price. The applicable rates are 1.5% on the first €85,000, 2.5% on the next €85,000 and 4% on any excess above €170,000. SO, IS THE VAT RATE 19% OR 5%? Purchase of new properties is subject to the standard rate of 19%. However, a reduced VAT rate of 5% applies under the following conditions: I. The property must be used as the primary and permanent residence of the applicant. II. The property cannot be used for any other purposes for a period of ten years (i.e. cannot be rented out), and III. The applicant must have not acquired any other residence in Cyprus with a reduced VAT rate in the previous 10 years.

IS THE REDUCED VAT RATE OF 5% PAYABLE ON THE WHOLE PURCHASE PRICE? The reduced VAT rate of 5% applies on the first 200sq m of the property as per the architectural plans. For any square metres in excess of 200sq m, the standard VAT rate of 19% applies. Bear in mind however, that certain areas of the property are deducted from the calculation of the 200sq m area. WHAT IF I SELL THE PROPERTY ON WHICH I PAID 5% VAT? CAN I RE-APPLY FOR A REDUCED RATE ON MY NEXT NEW PROPERTY? Yes you can, irrespective of whether the 10 year prohibition period for using the initial residence has lapsed or not. However, if the 10 year period of using the first residence as the main and permanent place of residence has not lapsed, you must return to the Tax Department the difference in the VAT between the standard and reduced VAT rates applicable at the time you purchased the first property. The Garden of Eden Stores are very well known in Paphos and were established initially by Andreas and Myroulla Tsiakkarias. Today, the company is managed by their four children Eleni, Yiannis, Pambos and Christiana. Andreas was first educated about fruit and vegetables by his father when they lived in their village of Kato Zodeia in occupied Cyprus. SOMETHING FOR EVERYONE Gift Finder

Anyone who has driven along the coast road recently towards Coral bay will have noticed a beautiful shop called Gift Finder at the end of The Sofia Centre (near Arabica). Gift Finder is the “lifelong dream” of Rachael Kalou who relocated to Cyprus 26 years ago. Before opening the gift shop, Rachael spent many years selling jewellery and attending jewellery exhibitions across Cyprus. She had always wanted to open a retail shop, and when the perfect premises became available, she decided to go for it.

In addition to her jewellery selection, Rachael was very keen to work with local artists to help them sell their work. She has handpicked a small collection of local artists to work with and has a large selection of their work on offer in the shop. Rachael states, “It is essential to me that the majority of the products which are sold from the shop are made from scratch and of the highest quality. We have a great selection of products which include glasswork, hand-made soaps and candles with essential oils, hand-made potteries and a large selection of sterling silver jewellery. GIVING CHILDREN A VOICE MEET JOSEPH BORGHESE

Cyprus Young Entrepreneur of the Year Awardee 2019

Joseph Borghese is the Founder and CEO of “Hope for Children” CRC Policy Center and of Borghese Ventures Ltd. Throughout his childhood, he lived in many countries due to his parent’s professions but always had a base in Singapore. Joseph did his first degree in Philosophy in Singapore followed by a Masters in Social Work and another Masters in International Relations at the University of Nicosia. He came to live permanently in Cyprus in 2006. While studying in Nicosia, he was struck by the plight of children and the lack of organisations to protect them. In 2007, he started the registration process to establish Hope for Children which began in 2008. Today it is an international organisation with offices in eight countries. Soon to be nine with the opening of another office in New York this year. He lives in Nicosia with his fiancée Andria.

WHAT PROMPTED YOU TO FOUND HOPE FOR CHILDREN? When I was studying in Nicosia, I was involved in a European Human Rights project, and I was struck by how few rights children had on the Island and in other countries. Effective child protection mechanisms were not there, and that is when we decided it was the right time to establish our organisation. One of the most important structures established is a similar model from Iceland named “Children’s House” that we started to replicate in Cyprus. Before we began in Cyprus, child victims of sexual abuse were dealt with by various departments which meant there was a lot of repeating in the system. Our main aim was to put all the child services in one place. Bringing the social workers, psychologists, police, Ministry of Health representatives and medical examiners all together means it is a less traumatic experience for the child. For example, now, if we interview a child, they are interviewed by just one person, but all other professionals are unseen in the next room. This means that the child can get the therapeutic support they need. In the court now in Nicosia, a child can give testimony through a video conferencing system from the Children’s House rather than the child having to appear physically in court. We are aiming to expand this to all cities in Cyprus for child victims of sexual abuse who need to give evidence. In 2019 in Cyprus, there were over 360 child sexual abuse cases reported, so we want to make the children’s court appearances to be as easy as possible for the child. WHY DID YOU START HOPE FOR CHILDREN? I founded Hope for Children not to create a philanthropic organisation or charity but because I consider it to be the

responsibility of every human being to support other human beings. This especially applies to the children of our future who sometimes do not have a voice. I do it because I believe you should just do it. For me, the most satisfying part of my job is to see a child who is broken, through the circumstances they have endured, smiling again after our support. Once a child has been abused, I consider it to be worse than cancer. We need a whole support system to help them recover. Help for Children is for all nationalities. As a child, I always wanted to do something special. My mother showed me this by her example of helping others, and she is the one who inspired me. Our main aim today is to respond to any child in need. We work hard to raise funds so that when we get the call for help, we are in a position to react. If we see a problem, we will go right in and respond. Our offices across Cyprus in Nicosia, Limassol, Paphos and Larnaca are there to support the children of Cyprus.

EXCLUSIVE INTERVIEW TELL US MORE ABOUT HOPE FOR CHILDREN AND THE AIMS OF THE ORGANISATION. The vision of Hope for Children is to contribute to the protection and promotion of the rights of the child and to support the active participation of children and youths within our society. Our main aims are to advocate and protect children’s rights based on the standards and principles of the UN Convention on the Rights of the Child and European Union Law, regardless of their background. WHAT PROGRAMMES DO YOU HAVE IN PLACE? The Children’s House is one of the structures we operate. This is a rehabilitation centre for sexually abused children. Under the same roof, our staff support the children together with representatives from the Cyprus Police, Social Welfare Services, Ministry of Health and Ministry of Education and Culture which provide rehabilitation services to victims of child sexual abuse. Our Homes for Hope are private shelters for unaccompanied children. The Homes for Hope offer rehabilitation, integration and long-term solution services for the children. It has been established with the approval of the Social Welfare Services. We also operate a Foster Care Programme which aims to identify, train and assess potential foster parents to undertake the care of children who are under the legal guardianship of the Social Welfare Services. Another part of Hope for Children is to arrange seminars on human rights through non-formal activities, using the manuals of the Council for Europe which we have translated

We also cooperate with the Council of Europe for the implementation of the ONE in FIVE Campaign to stop sexual violence against children in Europe. We are also involved in the European Hotline for Missing Children, social, psychological and legal support services, the eradication of child poverty in Cyprus, a child law clinic and child abduction alert system. We also participate in many European projects as a coordinator or a partner. TELL US ABOUT YOUR ‘BEAT BULLYING’ PROGRAMME. This aim is to raise awareness within the educational community through the developments of methods of identification, prevention and the handling of bullying incidents. We arrange workshops in the schools and have children as Ambassadors for our campaign. We always believe in the participation of children in our work. We have developed a mobile application “HFCBeatBullying” which is a tool that can be used to prevent and tackle bullying and can be used in 23 EU countries. Our work also involves the European Helpline for Children and Adolescents, which is 116111.


HOW HAS HOPE FOR CHILDREN EXPANDED? We have offices today in eight countries which all work with the same aim and guidelines. They are all lobbying for the rights of children and researching into ways to make their lives better. We have offices in Cyprus, the UK, the USA, Nigeria, Denmark, Hungary, Portugal and Italy. While it started in Cyprus, we are delighted to see our expansion and this year, and we are establishing a physical office in New York. This office will focus on fundraising and lobbying. HOW IS THE CHARITY FINANCED? In the beginning, we were a self-funding organisation. Still, as we have grown, we are working with many government agencies, the European Union, private sponsors and celebrities who support the work that we do. We also have several people who fundraise for us. A very successful fundraiser for us is the Blue Nose Campaign, whereby we cooperate with shops to sell the noses. We employ over 85 staff in Cyprus, which are a combination of managers, admin staff, communication officers, psychologists, social workers, lawyers and educators. We have teams who can fully support the children. Each programme we coordinate will have its own team of professionals which are relevant to the project. TELL US ABOUT YOUR INTEREST IN WINE. Like many, I enjoy wine and love the wineries in Cyprus. However, together with a business partner, we have a winery in Hungary to produce wine, the ‘Borghese 365’. We have five different kinds of wines, including red, white and rosé. They are premium wines from the first pressing of select grapes. Our primary market is Southern Asia, where the wine is top-rated and available in hotels and bars. It is a niche market, and we produce about 200,000 bottles a year.

Pundi X 365 is founded in Cyprus and has the mandate to function as a business development entity for blockchain solutions. It works closely together with Pundi X who have offices globally but specifically in Jakarta, São Paulo, Seoul, Tokyo, Shenzhen, Singapore and Taipei. The company has over 100 full-time staff; half of them are research and development focused. Pundi X provides new blockchain technology solutions for shipping, healthcare and insurance, the tourism industry and land management. It offers a blockchain payment solution and a digital identity. We have just opened a new office in Cyprus as last year The Council of Ministers approved the national strategy on blockchain technology. The government is now drafting a bill on regulating the blockchain industry in Cyprus. WHAT DO YOU DO TO RELAX? My work involves long days and a lot of international travel, so I am most relaxed when spending time with my fiancée at home. I love walking my dog and regularly complete a circuit which goes around Nicosia of 12 km. It is a trail that goes through green areas, and there are some beautiful areas of nature to see. Cyprus is my home, and I love spending time here. Together with Andria, we enjoy spending time in the mountains. We love walking and seeing the birds, rivers and enjoying the Cypriot wineries together.

WHAT ARE YOUR FUTURE PLANS? This year Andria and I are planning our wedding, which will take place this summer. With Hope for Children, I am looking forward to continuing working with all stakeholders to achieve more developments in the field of child protection. We hope to work on law and practice changes in the future. I am also planning the establishment of an eco-friendly luxury resort in the mountains called 365 Living, which will be built carefully to have minimal impact on the delicate natural environment. The houses will not have concrete foundations so that they will not destroy the landscape. They will be solar powered with the primary aim being that the occupants can live in and enjoy nature. There will be villas with a spa and a restaurant which will serve only organic produce. We aim to encourage the local villages to be involved in this experience as it evolves. MY SECRET PAPHOS KYRIACOS KOLOKASIDES Partner & Director, La Bodega Premium Cava & Time Out Kiosk Kyriacos Kolokasides runs both his family businesses with his brothers. He was born and brought up in Paphos. He has a great passion for fine wines and established La Bodega with his brothers over eleven years ago. Their main aim is to source artisan wines and spirits from around the world, and make them available to the people of Cyprus. Kyriacos lives in Paphos with his wife and two children.

FAVOURITE PLACE FOR A COCKTAIL?

WHAT IS YOUR ‌ FAVOURITE BEACH? During the summer, my favourite beach is Ttakkas Beach near Latchi. It is very clean and quiet. It is the perfect location for family days out with my children. The water is fantastic. FAVOURITE RESTAURANT? I love visiting Duomo Italian Restaurant [1]. Every aspect of this place is excellent, and it improves year on year. The food and hospitality get better and better. There is also an excellent selection on the menu. FAVOURITE PLACE FOR A COFFEE? Cultivos Coffee is a new favourite of mine. I enjoy my coffee and relish the premium brands they serve here. FAVOURITE PLACE FOR A WALK? I love the seafront that goes along from the harbour to the little white church. It offers incredible views of the sea, and peace. I usually go there at 5am for a walk and also enjoy swimming throughout the year.

I enjoy wine, but if I had to recommend somewhere for a cocktail, it would be Mr Tippler [2]. They offer fantastic quality cocktails in the Old Town. FAVOURITE DAY OFF? It would most certainly be with my family, either walking or biking in nature. During the summer months we enjoy the beaches together but in the winter, we enjoy the mountains. We also enjoy picnics together in the Kouklia area. FAVOURITE CHARITY? As a family and business, we try to support those in need directly. If we hear of a worthy cause, we are here to help them in different ways. FAVOURITE SPA? When I have the time, I enjoy a massage at the Thai Baan Herbal Spa in Paphos. FAVOURITE WEEKEND AWAY? When we have the chance, we enjoy staying the weekend in Mazotos, in Larnaca. It is an excellent place with a beautiful beach, and my children love it there.

WHAT IS YOUR … FAVOURITE BEACH? I love Dasoudi Beach. I go there practically every day for a walk and in the summer for Stand-Up Paddling. It’s much more than a beach; it’s a little community! FAVOURITE RESTAURANT? I really like Do Wine and Dine; [1] the food is excellent and the service very friendly. They have a good brunch menu and they change their main menu regularly. FAVOURITE PLACE FOR A COFFEE? There are so many coffee places in Limassol, but I would say my favourite is Colors Café [2] at the Four Seasons Hotel. It is an excellent place for me to hold meetings. FAVOURITE PLACE FOR A WALK? All along the seafront path and on top of the hill of Ancient Amathus. It’s my favourite spot to watch the sunrise. FAVOURITE PLACE FOR A COCKTAIL? The terrace of the Londa Beach Hotel is a great place for a

drink as the view there is very special. I also like to try other places, and there are many new places in the Old Town of Limassol, which I still have to explore. FAVOURITE DAY OFF? A hike with my friends, either in the mountains near Kyperounda with a picnic stop, or the Aphrodite Trail in Latchi with a coffee on the way home. FAVOURITE CHARITY? Definitely, Alkionides Charity because I know all the ladies who organise it and I know that it is authentic. They genuinely help people who are in desperate need. FAVOURITE WINERY? My favourite wine is a Merlot from the Tsiakkas Winery in Pelendri. FAVOURITE SPA? I don’t spend much time in Spas but I would love to try the Amara Spa one day soon. FAVOURITE WEEKEND AWAY? I travel so much that I like to spend the weekends at my home when I am here, but once in a while we go and spend a night away in Platres with friends.

MY SECRET NICOSIA IRINA TRYFON Founder & Director, 1010 Hall, Nicosia Irina Tryfon was born in Ukraine but moved to Cyprus over twenty-five years ago. In Russia, she studied Accounting and has worked in the banking sector for over ten years. She has three degrees and is a mother of three. She has also regularly modelled in the fashion industry. Six years ago, she established a new Art House in Nicosia called 1010 Hall. It is an art platform to host all events and is accessible to all ages. The mission of 1010 is to encourage artistic development. It is a centre for personal and corporate development. Irina lives in Nicosia with her family.

WHAT IS YOUR ‌ FAVOURITE BEACH? In Protaras, where the blue sea meets the green sea. There is no name for the beach, but it is right in front of my apartment. It is quiet and peaceful. You can recharge with all the positive energy. FAVOURITE RESTAURANT? I like small restaurants or local tavernas. Somewhere you can find say, just five signature dishes on the menu, which will always be freshly cooked. My favourite is Matthaios Greek Tavern. FAVOURITE PLACE FOR A COFFEE? I always prefer small coffee shops with aromatic, freshly brewed coffee. My favourite area for these is in the Old Town of Nicosia. I particularly like CITO gourmet express [1] for a treat. FAVOURITE PLACE FOR A WALK? I often go running in the parks of Nicosia. We are lucky enough to live in an area which is surrounded by the three largest parks. FAVOURITE PLACE FOR A COCKTAIL? Definitely, 1010’s Botanic Roof Garden. It is an open-air rooftop garden. We have a signature list of Tanqueray Gin Cocktails which are served with gourmet street food bites.

It is the perfect setting for a cocktail and listening to lounge jazz music. FAVOURITE DAY OFF? When I have time, I like to attend cultural events. I love going to the theatre. I also like going to galleries and attending master classes, such as a wine tasting with my girlfriends. FAVOURITE CHARITY? At 1010 Hall, we have supported a wide variety of charities including, Hope for Children and Pasykaf. FAVOURITE WINERY? In Cyprus, I like Zambartas wines. I went on one of their wine courses and really enjoyed it. I learnt a lot. FAVOURITE SPA? I have two that I like in Nicosia. Dessange Day Spa and Hamam Omerye [2]. The hammam reminds me of the Russian saunas. The only thing missing is the snow to jump into when you come out. FAVOURITE WEEKEND AWAY? I enjoy visiting Paphos and feel that it has changed a lot over the last five years. The infrastructure has really improved, and there is an arty vibe now. The sea down there is different as well, and I feel that I am going abroad when I go there.

STONE, ROSES & VINES Omodos Village, Limassol

OENOU YI WINERY Omodos Village is situated 36km northwest of Limassol and is part of the ‘Krasochoria’ wine region. It is built near the western bank of ‘Ha Potami’ at an average altitude of 850 metres and is famous for its wine culture. It is perhaps the first village in Cyprus that many wineries use as a base. For the last couple of years, the Oenou Yi, Domaine Vassiliades Winery was the latest to be added to this extensive list. This winery is owned by Christodoulos G. Vassiliades, a successful lawyer born in Omodos and one of the successors of the long-standing winemaking tradition of the village. Reflecting on winemaking as an art, and on the vision of the Vassiliades family, the winery’s main aim is to produce fine wines and make them available to wine lovers across Cyprus and abroad. The Oenou Yi Domaine Vassiliades Winery combines high-tech equipment with practices suitable for quality winemaking. It is a modern winery with well-designed vinification practices, designed tasting areas, excellent restaurant facilities and well-trained staff who are ready to offer experiences that every faithful friend of the wine culture desires. The specially designed reception and hospitality desk aims to initiate their visitors on a unique trip covering the long winemaking traditions of the land of Omodos, and there is a shop offering the chance for visitors to purchase their favourite wines. Vassiliades started with his father’s vineyards, and now, fifteen years later, the Oenou Yi, Domaine Vassiliades Winery dominates around 100 hectares of privately grown vineyards, with growth prospects over the next three years. The vineyards are planted in linear ‘shapes’ that facilitate cultivation. For the stone wall terraces, the traditional Omodos stone is used and prevents the erosion of the soil. Aromatic roses are also planted around the vineyards for protection and prevent diseases spreading to the vines. “Stone, roses and vines” describe and define the vines of the estate. In the vineyards of the Domaine, exploiting the special and unique terroir of Omodos, thrive both Cypriot and international varieties. The local white varieties of Xynisteri and Morokanella, as well as the traditional red varieties of Maratheftiko, Yiannoudi, Lefkada and Mavro, show their identities. In addition, the white international varieties of Assyrtiko, Malaga, Sauvignon Blanc, Chardonnay and Semillon, as well as the international red varieties of Syrah, Cabernet Sauvignon, Merlot and Grenache, find new ways to show off their cosmopolitan character. Already, their annual production in bottles amounts to 200,000, which is an impressive number for a winery that was only recently launched. Oenou Yi also produces Commandaria and Zivania.

DO WINE & DINE MODERN MEDITERRANEAN DINING IN LIMASSOL

Do Wine and Dine, which opened five years ago, is located on the coast road in the Limassol Pearl Building. The restaurant occupies the ground floor with a beautiful basement/wine cellar level for private parties and conferences. There is plentiful outdoor seating with a combination of eating areas and settees for enjoying a drink. The good news is, that in this busy area of the city there is a large car park at the back!

The restaurant is open all day. Their breakfast menu is one of the most extensive we have ever seen with a choice of seven “eggceptional” dishes, not including their signature, Eggs Benedict. There is also a large selection of pancakes and the healthy options of fruit, granola and yoghurt. All teas and coffees are both organic and fair-trade.

Ricotta Ravioli and a Pistachio Crusted Salmon with Sautéed Edamame Beans and Limoncello sauce. The salmon was a great combination of flavours. Both meals were beautifully presented and generous portions. The menu changes regularly according to the season and under the supervision of their Head Chef, Konstantina Ioannou.

For the lunchtime menu, they serve burgers, salads, pasta and risotto with main courses of fillet steak and seabass fillet to mention just two of the options.

For those who wish to share their food, they have a good selection of sharing plates, including exquisite charcuterie platters. Service throughout the evening was excellent with a friendly team under the watchful eye of the Manager, Athos Hadjimichael.

On the evening we visited, the dinner menu also included some of the lunchtime options and a large selection of Sushi with a special menu. As we were celebrating, we decided to select from the main menu. We started with a beautiful unusual take on Grilled Halloumi. It was served with tomato marmalade, grilled vegetables, pine nuts and basil pesto. The intense flavours all worked well together. The other starter of Truffle Asparagus was outstanding. The truffle came through perfectly in the cream sauce covering the fresh asparagus. For the main course, we enjoyed a Spinach and

This month’s ‘From the Chef’s Table’ is courtesy of leading Chef, Craig Tweedie, of Tweedie’s Restaurant in Paphos. Craig Tweedie was born in Cyprus when his parents were stationed at RAF Akrotiri. He has had a lifelong passion for cooking and prepared his first meal at the age of seven — quite an accolade for one so young. Following his career as a Head Chef at a leading hotel in Shropshire he went on to work in a fine restaurant in Majorca called ‘Dions’. After this, he returned to Shropshire as he had the opportunity to own and run a gastropub. It was a large operation, and this is where he met his partner, Hilary Mossop. The two of them still work together and run Tweedie’s Restaurant today, which they opened in 2004 when he returned to his birthplace.

As Craig says, “I like to cook something that people cannot get anywhere else. My food is international, seasonal and aspirational”. Cooking and fishing are Craig’s great joys and even the offer to write a book and become a TV Chef was not enough to distract him from his love for cooking. The proposal which he said no to, happened when both and he and Hilary were working at the BBC Good Food Shows supporting famous chefs, such as, Aldo Zilli, James Martin and Ross Burden. However, the British gastronomic scene’s loss is Cyprus’ gain. Craig adds, “I like to cook food to make people happy. My main aim is to present fresh seasonal food at the highest level”. This piquant rib recipe has been handed down through Craig’s family over the years, and he has added his own twist. The combination of sweet flavoursome sticky ribs and the crunch of the fresh Asian slaw is a real winner.


TWEEDIE’S PIQUANT SPARE RIBS THE METHOD:

YOU’LL NEED… • 2 Full racks of baby ribs (can be

• 2 Tbsp fresh chopped garlic

purchased fresh or frozen)

• 2 Tbsp Worcestershire sauce

• 3 Tbsp of light soy sauce

• 1 Tsp mixed, fresh or dry herbs

• 6 Tbsp honey

• 1 Tsp star anise seeds (take them out

• 5 Tbsp red wine vinegar

• 2 Tbsp fresh chopped ginger

• 2 Small cartons of tomato purée

1. Mix all ingredients in a food processor until smooth. 2. Coat both sides of ribs and refrigerate for one hour. 3. Place ribs in a roasting tray with the marinade and cover with foil. 4. Cook at 170 for 1 ¾ hrs until meat is tender. 5. Remove tin foil and baste ribs with the tray juices. 6. Return to oven for a further 15 mins. 7. Repeat the basting process until all the juices have been absorbed and the ribs dry slightly. 8. Serve warm with the Asian Slaw.

How to Make the Asian Slaw: • 1 Small carrot, ¼ Chinese lettuce, ¼ red cabbage, ¼ white cabbage, sliced finely with a mandolin or food processor • 3 Spring onions • A handful of baby spinach • 1 Finely chopped red chilli • 1 Tbsp sesame oil • 1 Tbsp soy sauce • 1 Tbsp red wine vinegar • 1 Tbsp sugar • 2 Tbsp mayonnaise • 1 Fresh lime zested & squeezed

Alexander Marescu has loved cooking for many years and is well known for sharing his own, unique and delicious recipes on the Internet. This month we enjoy Alex’s recipe for ‘CRISPY CHICKEN’, which comes highly recommended to anyone on a high protein or keto diet plan.

CRISPY CHICKEN WHAT YOU’LL NEED FOR THE CRISPY CHICKEN: • 6 Deboned Chicken Thighs (serves 2) • Smoked Paprika • Hot Paprika • Dried Ginger • Dried Sage • Dried Ground Garlic • Dried Chili Flakes

• Dried Onion Powder • Salt • Black Pepper • 150g Almond Flour • 2 Eggs • Fresh Chopped Parsley • Greaseproof Paper

PREPARATION: Place the chicken thighs in a bowl and add all the spices except the fresh parsley. With the spices you can use to your taste, but I find a pinch is enough. In another bowl, pour your almond flour and in a third bowl, break your eggs. A good idea is to marinate your chicken overnight, in the fridge for a stronger flavour. Beat the eggs, dip the marinated chicken in the egg and roll in the almond flour. Place them on greaseproof paper. COOKING: Preheat the oven to 180 degrees Celsius on the fan assisted setting. When the oven is hot, put the chicken in and cook for 45 min.

Dressing the Plate:

Dress the chicken with fresh parsley and serve. You can also add salad, sweet potato wedges, courgette chips, or whatever you fancy.

Strawberries are in season at the moment, and Paphos is one of the leading suppliers on the Island. Other seasonal fruits, include, oranges, lemons, tangerines, grapefruit, Pomelo, and bananas. Also, seasonal vegetables, include, wild asparagus, capers, artichoke, dill, parsley, broccoli, beetroot, radishes, cabbage, celery, spinach, Swiss chard, fennel, avocado, cauliflower, lettuce, carrots, mallow, wild mushrooms, lapsanes (wild greens) and purslane.

Positioned in a fabulous location, just set back from the sea, at the crossroads of Poseidonos and Dionysou Avenues in Kato Paphos, is the very popular Pingouino Café. This is the place to go, to people watch and enjoy a leisurely coffee, cocktail or meal. The interior is well designed with plenty of private seating areas offering a variety of seating options. Right at the back there are some lovely private areas which are perfect for larger groups. They have kept the nautical theme going throughout with a cool vibe design, using stripes and neutral colours. At the front of the café is an outside seating area which has a lovely view across the central fountain to the sea. If you can get a table and with the weather warming up, this is where you should sit.

THE PINGOUINO STANDARD: CONSISTENTLY HIGH The staff here are always friendly and very on the ball going backwards and forwards with order after order. The food is most deserving of a mention as they maintain their standards time and time again. The menu has both local and international dishes with burgers, salads, pasta dishes, and offers everything you can think of from breakfast to dinner. The Mediterranean Sharing Platter is highly recommended, as is their very generous Greek Breakfast. They also have a fantastic gluten-free menu. The coffee served here is excellent, and we especially love their cappuccinos with the correct frothy top. Pingouino is also well known for serving a vast range of cocktails. The prices are very reasonable for both food and drinks. Pingouino is owned by Nikos Simillides who has established it as a firm meeting place for the citizens and visitors of Paphos. It is a real family affair with his brother Simos managing the café. Visiting Pingouino can actually make you feel that you are on holiday and for those of us who work here, it is the perfect place to grab a coffee or meal and relax for half an hour.

PEACE OF MIND FOR YOUR RETIREMENT IN CYPRUS

Many residents of Cyprus, both locals and expatriates, share a common concern for their future during their senior years. While across the world, especially in the USA and UK, retirement villages are built in large numbers, this is a phenomenon that, until now, has not been available in Cyprus. This month sees the official launch of a new retirement project in Tsada called Lazaris Mill Retirement Village. The builders of the project are Cyprevico Ltd, who are based in Paphos.

Lazaris Mill will be the first purpose-built project for retirement in Cyprus and has been a long time in the making. Lazaros Papadopoulos had the initial idea as he was concerned about how to look after his mother in her later years. The team at Lazaris Mill are offering apartments in a complex that will include everything you might need in your retirement, including, if necessary, 24-hour nursing supervised by one of Paphos’ leading hospitals. Property buyers need to be a minimum of 55 years of age.

The management team at Cyprevico Ltd includes Lazaros Papadopoulos, Founder and Chairman, Yiannis Farmakis, CEO and Managing Director and Nick Salatas, Sales and Planning Director. The three of them together, have over one hundred years’ experience in the property industry. Lazaros Papadopoulos was born in Tsada, and Lazaris Mill had initially been his grandparents’ property. He played on the land as a young boy and spent his childhood there. His family have developed many projects in the area and have helped Tsada both historically and financially. He studied Economics at the University of Athens before returning to Cyprus in 1980. Initially, he ran a furniture factory where high volumes of furniture were designed and produced. In the 1990s his interest in property increased as he could see a positive future for Cyprus with joining the EU. He has built many significant developments in Paphos and the surrounding area. These include both commercial and residential projects. One of his residential developments was a villa which was built for a private client with an internal covered area of 2500 square metres! He lives between Paphos and Tsada with his wife of 45 years.

Yiannis Farmakis was born in Greece but went to the UK at the age of 17. He studied Business Administration before returning to Greece to do his national service. He relocated to Cyprus in 1992 when he was offered a position with a leading property developer on the Island. He progressed to senior management and took on real estate positions which included international travel all over the world. His whole career has been focused on estate agency and satisfying the needs of his clients. He lives in Paphos with his wife and is a father of two. Nick Salatas was born in London with a Cypriot father and British mother. His father had left Cyprus in 1949 as he wanted to leave Morphou and live in London. It was when his father came back 40 years later that Nick really appreciated the lifestyle in Cyprus and decided to relocate to the Island. He moved in 1991 and worked for a leading developer for over 16 years as their Sales and Marketing Manager. During this period Nick travelled extensively to Hong Kong, South Africa, Egypt and Jordan. When he left the developer, he set up a property company with Yiannis, which sold property in Cyprus and Greece. Nick has sold in excess of 1000 properties over the years and can see the need of Lazaris Mill Retirement Village for his clients who he is still in contact with. He lives in Tala with his wife. He is a father of two and grandfather of one.

HOW DID YOU BECOME INVOLVED IN THIS PROJECT? Lazaros: I have been involved in the property market in Paphos for a long time, and it seems logical that the wave of buyers who bought so many years ago are now increasing in age and needing the back up of a retirement project like ours. It was initially a retirement expert who came to me with the idea and straight away I could see the benefits. My mother is increasing in age, and it is the perfect place for her. Somewhere she can enjoy the benefits of luxury living, but with a backup team to look after her in the event she should need it. Lazaris Mill is all about offering our clients, and in turn their family, peace of mind. While the idea had been formed, I would like to say that the project really came to life when I met Yiannis and Nick. Yiannis: I had heard about retirement projects through my travels, but when Lazaros explained the full benefits for all the residents, I knew this was a project that I wanted to work on. The three of us firmly believe in it. While the project is for all nationalities, it will undoubtedly appeal to residents of foreign countries who may not have family living on a full-time basis in Cyprus. By buying an apartment at The Mill, they will be able to extend their time in the sun as they will feel safe knowing that they have the full back up of our team. Nick: I was familiar with retirement villages from my time in the UK as there are many of them there. Having worked in the property market for such a long time in Cyprus, I also realised that there would be huge demand from my clients who have bought from me over the years. I always try to keep in touch with my clients and a lot of them have expressed interest in the Lazaris Mill as their next move. For the more senior residents and for individuals who are on their own, this is the perfect residential setting for them.

WHAT RESEARCH DID YOU DO BEFORE DESIGNING THE DEVELOPMENT? Lazaros: We have all visited many locations to see what best suits our own development. We have also had experts visit our proposed site to access the suitability of the project. Personally, I have visited retirement villages in Germany, Austria, UK and the Netherlands. Yiannis: I have seen the developments in the States, UK and Ireland, some of which are like 5-star hotels. We have recreated certain aspects at Lazaris Mill. Nick: We have made three research trips to the UK and Ireland to look at other projects and also to speak to the experts there. We have also attended conferences on creating retirement projects.

WHO IS DESIGNING THE PROJECT? Lazaros: The whole project has been designed by Vangelis Mavronicolas, who is a very well-known architect. Many of his projects are multi-award-winning. He was born in Paphos but studied Architecture in Greece and has designed several small and large-scale projects in Cyprus, Greece, Lebanon and France. He has been working on the designs for Lazaris Mill for many years.

WHY DID YOU DECIDE TO BUILD A HOTEL AND CLUBHOUSE? Yiannis: For us, this is central to the whole project. It gives a focus and a meeting point for all the residents. It will also offer many facilities that the residents will want to use, such as, outdoor and indoor swimming pools, bar, restaurant, gym, spa, movie and large function room. These are all things that we feel will benefit the residents on a day-to-day basis. Obviously, the benefit of the 24-luxury suite boutique hotel is that family can stay when they visit. This will enable residents to spend valuable time together. The restaurant and coffee shop in the Club House will be a huge benefit for the community and visitors.

WHY DID YOU SELECT TSADA AS THE LOCATION FOR YOUR FIRST RETIREMENT DEVELOPMENT? Lazaros: I have lived in Tsada all my life and know the climatic benefits of living 600 metres above sea level. We believe that it offers the perfect climate to live in, especially during the hot summer months. We will have a minibus which will take residents on a daily basis to Paphos and will also be available for other trips.

TELL US ABOUT THE MEDICAL CENTRE ON THE DEVELOPMENT. Nick: We are working with one of Paphos’ leading private hospitals who will provide the staff so we can offer this medical assistance 24/7. We will have doctors regularly visiting so that it is easier for our residents if they need this specialist help. To give people peace of mind, all the apartments will be linked to the onsite medical centre via our touch panic button.

TELL US ABOUT THE SELECTION OF PROPERTIES FOR SALE. Yiannis: These range in price from 133,000 euros and we have a selection of apartments with studio, one, two and three-bedroom apartments available. They will all have a high-tech security system installed. In each apartment, there will be a tablet which connects to a centralised system. This will keep our residents up to date with all activities and allow them to communicate directly with each other. It will also be linked to the reception and medical centre. Nick: All properties have been designed to be energy-efficient as well and will have solar panels. All walls are fully insulated. We estimate that the running costs of the homes will be low. The selection of internal finishes will be of the highest level, and there is a selection of finishes for clients to select from if they buy off-plan. The whole area around the hotel and apartments will be professionally landscaped to create a beautiful environment which our residents can relax in.

Yiannis: We are conscious that we do not want our clients to be living on a building site. Therefore, it has been decided that the project will be built in one phase and completed in 27 months.

Lazaros: We invite anyone who may be interested to attend our launch event on Friday 20th March. This will be the first time that the apartments have been available for sale. We are offering our buyers the chance to reserve an apartment by paying a deposit. Obviously, the early buyers will have the pick of the development. Most importantly, the launch day is for us to tell people all about the project so that they are in the position to make an informed decision.

Lazaros: We are looking forward to launching the event on Friday 20th March at Alexander the Great Beach Hotel in Paphos. We will be doing presentations between 12 - 3 to show any interested parties the project and answer any question they may have.

WILL THERE BE HIGH SERVICE CHARGES? Nick: Service charges will be charged according to the size of a property. We do not want the costs to be prohibitive to any potential buyers, so we are trying to keep this to a reasonable figure. The service charge will include: building insurance, external upkeep of the property, professional communal gardening, servicing of lifts, 24/7-night porter/concierge, emergency response system, health club membership, onsite village manager, window cleaner and the minibus service. Additional services which will not be included, will be house cleaning, laundry and ironing, shopping, meals, hotel services for visitors, restaurant and coffee shop facilities.

Initially, Tracy worked as an Overseas Rep in the summers whilst studying Tourism at University, and latterly, in the UK in Sales and Marketing Management positions for Tour Operators and Cruise Lines. WHAT IS YOUR EARLIEST HOLIDAY MEMORY? As a child, our family summer holidays were mainly to Swanage in Dorset. Being brought up in the 70’s, an annual overseas holiday was not the norm then, and I have fond memories of sandy beaches, fish and chips, candy floss and amusement arcades, plus the sun always seemed to shine; was the UK weather better then? My first overseas trip was a school Ski trip to Switzerland which was stunning. WHAT IS YOUR BEST TIP FOR TRAVELLING VIA AIR? Relax! Air Travel seems to make people irate, whether its queues at the airport, delays, or having to be first off the aircraft on arrival. Remember, most procedures are in place primarily for our safety, which is far more important than inconvenience. As soon as you leave home your holiday has begun, so give yourself plenty of time, go with the flow and don’t get stressed. WHAT AND WHEN WAS THE BEST HOLIDAY YOU EVER HAD?

Living in Pissouri I am lucky enough to reside in a traditional village and have the opportunity to embrace local traditions and experience the true culture of Cyprus daily. Therefore, I head to Protaras for a holiday atmosphere, varied entertainment options and indulge in the fantastic beaches. WHAT IS THE BEST TRAVEL ADVICE FOR OUR READERS? Live your dreams! There’s a big world out there waiting to be explored! One of my favourite quotes is by Mark Twain, “Years from now you will be more disappointed by the things you didn’t do than by the ones you did do. So, throw off the bowlines, sail away from the safe harbour. Catch the trade winds in your sails. Explore. Dream. Discover.”

I like to chill out on holiday and have fun, so white powder beaches and chilled out beach bars tick the boxes. My favourite holiday was a Caribbean cruise from Miami with a pre cruise stay in this vibrant and culturally diverse city, followed by a post cruise 3 night stopover in New York on the way home. WHAT IS YOUR DREAM HOLIDAY? It has always been the Maldives, and it would have to be in a water villa. The diversity and accessibility of marine life

FORAGING FOR EDIBLES IN MARCH Make Use of Edible Plants & Weeds in Cyprus Are you aware of how many edible plants and weeds grow naturally here in Cyprus? If you are one for being out and about in nature, you may be surprised to hear that many of the plants you come across carry many health and medicinal benefits for all types of conditions and illnesses. This month we spoke to Linda Bee, a plant specialist and beekeeper from The Netherlands, now living in Cyprus. “I have always been interested in medicinal plants, and edible plants have had my interest since I first saw my mother add fresh nettles to my soup, to help me get rid of anaemia as a child. Later in life, I studied herbs and became a beekeeper offering lectures on ‘the flowers and the bees’. Upon arriving in Cyprus, I signed up for the P3A Foraging Group lead by Steve Catchpole in Polemi. Being outside and foraging in nature is not only good fun but also very healing and restorative for the body and mind. March is an excellent time for foraging because of the process of blooming changing the chemistry of the entire plant.” Linda Bee

EDIBLE PLANTS & WEEDS IN CYPRUS IN MARCH Wild Marigolds (Kitrini Margarita) Wild Marigolds have a pleasant aroma, and the crushed flowers are used in ointments to heal wounds. The flowers are much smaller than the cultivated ones and open only when the sun shines. Harvesting is best on bright and sunny mornings.

Milk Thistle (Gaidourangatho) Milk thistle has striking white veins on its broad leaves. Legend has it that the Virgin Mary spilt milk from her glass onto the leaves of the Milk Thistle plant. It is used to stimulate lactation in women, heal liver damage and aid depression. Make sure you cut off the prickly edges before using it!

Fennel (Marathos) Fennel is one of my favourites because of its rich and distinctive anise taste. Fennel offers excellent benefits for the digestive system and helps against baby cramps when the breastfeeding mother eats/drinks it. It is primarely used by Cypriots in the traditional Pumpkin Pie and to give an aromatic flavour to the preparation of dried figs.

Nettles (Tsouknitha) Nettles in Cyprus have thicker leaves and are much hairier than the ones in Northern Europe. The sting may be harsher, but it does not last as long. Wear gloves! Don’t be afraid to use Nettles in your food or tea because the hot water takes away the sting immediately. Nettles are excellent for help in purifying the blood and are full of Iron, Vitamin A and C. They are also considered beneficial for blood circulation and detoxing the liver.

Wild Asparagus (Agrelli, Sparangi)

Don’t mistake a dandelion for a weed! It is highly nutritious, for humanity and bees, and has strong detoxifying qualities, especially the bitter-tasting roots. The flowers can be used to make a joyful syrup. The leaves are great in salads, work as a digestive and also work to reduce excessive body fat.

Always bring a stick when foraging, especially when you go for Wild Asparagus. Asparagus protect themselves from being eaten by hiding really well in stone walls and shrubs. With a stick, you can trace back the stems to the soil where you find the sprouts, while at the same time keeping away snakes that wake up from hibernation in March. Other edible plants and weeds include Luvana, Shepherd’s Purse, Henbit Deadnettle and Black Mustard Spice.

Fennel POINTS TO REMEMBER: • All edible plants can be used to create healthy salads, herbal teas, pasta sauces, omelettes and pancakes. • Always use young leaves and clean the plants before usage. • When using raw, let them soak in water for 3 minutes with a pinch of salt (in case of soil) or a dash of vinegar. • You can find all these plants along the roadside, in uncultivated areas and wasteland. • Never consume a plant unless you are very sure what it is. • If you are a beginner, always take the advice of an expert.

The fun of foraging is the search, like finding a piece for a jigsaw amid all the greens. When you forage in agricultural land and meadows, make sure not to harvest from fields sprayed with pesticides. AWARD-WINNING HAIR WITH HELEN CHARLES Helen Charles is originally from North London. She has enjoyed an international career in the hair industry and is a much respected figure in her field. Helen relocated to Cyprus in 2016 to enjoy semiretirement but due to her passion and love for hair, opened another luxury salon in Paphos. Initially, she did her hairdressing training at Vidal Sassoon, Knightsbridge and owned four salons in London, together with her husband Costas, who is also a hairdresser. They won the Wella ‘Prestige Colour Award’ in the year 1996 and a finalist place in the ‘Loreal Colour Trophy Awards’ in 2001. During this time, they were also honoured to receive the “Investors in People” award. They moved to Weston, South Florida in 2004 and opened a salon with 29 staff. Soon the salon was starting to win awards, and it even won the award for being in the top 10 South Florida salons. She continues her career in hair education and stays at the forefront of fashion by visiting and attending courses regularly in London.

Here, Helen shares her top tips for fabulous hair and gives some insider secrets.

NEW SEASON, NEW INSPIRATION WITH TIPS FOR GOOD HAIR: As the hotter season approaches, attention to hair care must be increased to avoid dull, lifeless and unruly hair. The following tips will help you to achieve the main trilogy of great hair - GOOD CONDITION, GOOD CUT, GOOD COLOUR!

1. DO NOT WASH YOUR HAIR EVERY DAY. This is not a myth! Although living in a hot country often means a lifestyle that requires taking showers more often, washing hair every day should be avoided. Removing natural oils can over some time result in oily roots, excessive shedding of hair and even hair loss. Switch to every other day for short hair and every 3rd day for long, ideally once a week. Using dry shampoo every day instead is a fabulous way to keep your tresses freshly styled.

2. ALWAYS BRUSH YOUR HAIR, EVERY MORNING AND NIGHT. I often hear clients claiming they cannot do much with their hair first thing in the morning and think their only option is to wash it. This could not be further from the truth. If the hair is washed and blow-dried into the usual style, the following morning the style can quickly be revived by rubbing the roots with a scalp serum for a few minutes and brushing back into style. This will give you the previous day’s look with no help from added water. A fabulous new product in the Genesis range by Kérastase is perfect for this purpose, as well as helping to strengthen the hair and eliminate hair thinning.


3. HAVE A DEEP SALON TREATMENT ONCE A MONTH. Although there are many home remedies one can do, it is beneficial to have an intensive professional treatment prescribed by a professional stylist once a month. A treatment, as the word suggests, needs to treat the main problems one has for the integrity of their hair. For example, if the hair is dry, is this dryness due to heat damage, chemical damage, hormone deficiency or over-washing? The cause needs to be determined before a product can be prescribed. Is the damage due to protein or lipid deficiency? Once this is analysed, buying incorrect products and having unsatisfactory results will be avoided.

4. DO NOT USE EXCESSIVE HEAT DURING STYLING YOUR HAIR. Overuse of straightening irons and old tools that overheat can cause tremendous damage to the hair. If the hair is curly and a straight result is required, a keratin treatment carried out by an expert will be the best solution. In some cases, the problem may be the frizz, which will only get worse by the usage of hot irons. Especially before a hot season when humidity is high, I firmly believe a keratin treatment, carried out by an expert, for easy styling and control of frizz is a

must. I would highly recommend the Discipline range of products by Kérastase as a “go-to” spray for this purpose.

5. HOW OFTEN SHOULD THE HAIR BE TRIMMED? To keep your existing style, every 6 weeks’ pay a visit to your stylist. After this period, you will have to blow dry with some change and be prepared to look different. If you are growing your hair, every 8-10 week intervals will be fine, providing no more than half a centimetre is removed. If a trim is not carried out within these periods, most people will experience breakage and difficulty in styling.

6. ARE EXTENSIONS BAD FOR YOU? If one would like to have long hair, but never managed to grow their hair longer than a certain length, this is because the length a person can grow their hair depends on their own anatomy. Each strand of hair will only grow to a certain length and start the shedding cycle. Although certain products will help to extend the length a little further, in some cases, the dream of long hair can only become a reality with extensions. However, attention to detail in the placement, method of fixing, quality and styling of extension is of utmost importance and requires expert help for perfect results.

BONUS TIP!

During the sunny and hot months, use heat protecting products when exposed to the sun, even for 5 minutes, as well as investing in a few hats or even trendy scarves for the coming season.

Head of the International School of Paphos

“TO SEE THE TRANSFORMATION OF A PUPIL THROUGHOUT THEIR SCHOOL CAREER IS VERY REWARDING.”

Dr Litsa Olympiou was born in Larnaca and lived there for the first fifteen years of her life. She then left for the UK to attend boarding school on a scholarship. Following her A levels, she went to University College in London to study languages and spent the third year of her degree attending the prestigious Sorbonne University in Paris. After her B.A., she went on to do her PhD at UCL. Litsa later went on to complete her Postgraduate Certificate in Education at Durham University before starting her teaching career at a comprehensive school in Washington, County Durham. She then went on to work in Dubai, where she stayed for five years. In 1994, she joined The International School of Paphos as a French teacher. Today she is the Head of School, a position she has held since 1996. She lives in Tremithousa with her husband and has one daughter studying in the UK.

TELL US ABOUT YOUR PREVIOUS TEACHING EXPERIENCE. My whole career has been dedicated to teaching. I have had the opportunity to teach in multiple countries and in different types of schools which has given me a significant oversight of the academic world. My first experience of teaching was within the English school system at a comprehensive school in Washington in the UK. I reflect on that time as a wonderful experience. After three years, I was looking for a new challenge and took the opportunity to relocate to Dubai. I taught French at the Latifa School for Girls in Dubai, which was founded in 1982 by Sheikh Maktoum.

It was primarily for the daughters of the Royal Family and government officials. I stayed there for five years and met some super people. It was during the period of the Kuwait War, which was a little bit scary. Due to family pressure to return to Cyprus, I applied for a job at The International School in 1994, and I have been here ever since. HOW DID YOU ENJOY BEING BACK IN PAPHOS? The first year that I was back was challenging. Paphos 26 years ago was a very different place. I had been living in London and Dubai before my return. The best part of coming to Paphos is that it is where I met my husband who worked at the school for one term. We were married in 1995 and have been together ever since. In 1996 I was offered the position as Head of School. Again, back then the school was very different, with only 120 pupils and located on a different site. A lot of the children then were boarders whose parents were overseas.

HOW DID THE INTERNATIONAL SCHOOL OF PAPHOS DEVELOP? In 1999, our current Managing Director Aristi Andriotis joined the school. We both shared the same vision and aspirations for education. During that time the school bought some new land for the purpose of the development of an entirely new school building. I worked with Aristi on the new school plans. It was a unique experience to be involved in the project right from the beginning and to be able to input my wisdom. All our then teachers advised on how the new school design would work. In most school buildings the layout has already been decided for them, as they are often in old buildings. It was an exciting time for us. In 2006 The International School of Paphos moved into our new home.

WHAT FURTHER DEVELOPMENTS HAVE TAKEN PLACE? We are continually working on the buildings and through this, improving our students’ experience at school. The addition of the new Sports Hall was a significant contribution to our students’ lives, as was the opening of our new Boarding House last year. In addition to the actual building of the school, we have increased pupil and staff numbers. When I first started, we had 25 staff, but today we have over 140 staff members who form our team. The number of students has increased to 800. Our students come from different populations in Paphos who are all looking for an English education. In the 60s and 70s, the people of Paphos had to go to Limassol or even Larnaca to get an international education. Back then, a foreign school was a big unknown to the Paphians, but today we have many Cypriot students. WHAT HAVE BEEN YOUR PROUDEST MOMENTS THROUGHOUT YOUR LIFE? As a mother, it was when my daughter graduated from university in the UK. As a teaching professional within the teaching industry, you see things all the time that make you proud. Every class has students who show unexpected potential or something different. There is nothing more satisfying than seeing a child achieve their best potential. To see a child exceed our expectations makes us all very proud. I recall a child saying to me, “thank you for being so hard on us and having such high expectations. It made me want to be better”. We touch a child’s life in tangible ways. To see the transformation of a pupil throughout their school career is very rewarding.

HOW DO YOU THINK TECHNOLOGY WILL AFFECT EDUCATION IN THE FUTURE? Without a doubt, technology is crucial for all. Today, it is a natural progression for children, whereas when I was studying, we had real books, now its eBooks. Some areas of technology are very positive but I do worry when children find technology more interesting than people talking to each other. There is a danger that everything, including education, could become very impersonal and there will be no human interaction. I believe that we need to find the right balance in the future for the teaching of our younger generation. We should always want to know what the face behind a name looks like. I sincerely hope that education never becomes just a screen.

There is always the need for the human environment, and children need to blossom and find their talents through social interaction and encouragement. If we don’t have human interaction, then children won’t have the emotional intelligence that they need in order to grow. We need to teach children to grow holistically so that they develop their personality and get along in life. A machine cannot convey the beauty of the multi-cultural society life we have here. WHAT IS THE BIGGEST CHALLENGE YOU FACE AT THE SCHOOL?

“THE PAST COMES TO LIFE THROUGH CULTURE.”

Our biggest challenge is to overcome the linguistic barrier that some of our pupils face. They need to do this to access the curriculum on offer and also to develop as people. If a child starts at a younger age, it is easier for them to learn a new language. We have a real multi-cultural classroom with all nationalities. Sometimes communication can be difficult. Also, other cultures have different expectations and experiences of the educational system which we need to understand. TELL US ABOUT A TYPICAL DAY. No day is ever the same, but they always start with a variety of meetings. I still teach French to the students as I see this as very important to still be involved in the classroom. It is also why I originally came into this profession and I enjoy it tremendously. It is also essential for me to establish a rapport with my students. This also means I can give advice to other teaching staff and understand, at first hand, any issue they encounter. I hope that my team see me more as a colleague rather than the Headmistress. Meetings form a big part of my day with staff, pupils and parents. I often find myself staying after the school closes to get the rest of my work done. HOW DO YOU RELAX YOURSELF? I switch off from work when I finish and return to my home. I enjoy reading. I also enjoy watching comedies as it takes you away from reality. With my close friends, I enjoy spending time and attending exhibitions. I love speaking and catching up with my daughter in the UK, and I am fortunate to have a very supportive husband who listens to me.

HOW IMPORTANT IS A GOOD EDUCATION? A good education is not just about learning and exams. It is also about learning to be able to function in our society. Passing exams is not the primary objective. I firmly believe that if you cannot function in a social setting, then you will not go far in life. Emotional intelligence will always help you get along. We like to give our pupils opportunities to find their true talents and gifts. Education is about having empathy for others and trying to put yourself in the shoes of others. If we build the right foundation for our students, they will develop strong relationships in the future. Working with a student is a partnership with the family. We start with our hands wrapped fully around the child and slowly open them over the years, to release them to find their future path. ARE THERE ANY FUTURE PLANS AT THE INTERNATIONAL SCHOOL? The new theatre is the next big project. It is in the pipeline and we are hoping to start building soon. We want to establish it as a centre for the arts. It is an excellent opportunity for the children of Paphos as the facility will be open to all. Drama is a vital subject for children as it helps develop aspects of their personality. The combination of Theatre, Art and Music together, gives you civilisation. The past comes to life through culture.

PORTRAITS, ABSTRACTS & LANDSCAPES MEET KATJA TONJA Katja Tonja is originally from Croatia but came to live in Cyprus over ten years ago. Like many, she came to Cyprus and wanted to stay. Travel is nothing new to Katja as she has travelled and lived extensively all over the world. After graduating from Zagreb University in modern languages, she moved to London where she met her husband Siggi, and stayed for over two decades. She then lived in Singapore and Bahrain and spent nearly 14 years in Dubai before settling here in Cyprus. At an early age, she was encouraged by enthusiastic art teachers and subsequently showed great interest and promise in art. Katja recalls her first important art event, “I painted the boy who sat next to me at elementary school, and the painting won first prize at a competition. Not surprisingly, this was the beginning of my undying love of art.”. Over the years she has pursued art and attended many courses: drawing, watercolour, oil and acrylic painting, interior decoration, and even framing. In Cyprus, however, her most significant influence has been the artist/ teacher Nic Costa of Tekni Art School, who teaches in Paphos Old Town but is based in the beautiful village of Lemona. Katja recalls, “I have learnt so much from him. I have learnt to look at objects in an entirely different way. He is passionate about art; he never lets you get away with a poor result. Through his classes he is there to make you master the skill. He wants everything to be learnt the correct way”. Katja firmly believes that art is a learning process. “With every exhibition, every show, every art book and artist I meet, I learn. We can learn from everyone”. In Bahrain and Dubai, she was invited to judge at various painting competitions. During her time in Dubai, whilst working for a bank, she attended art tutorials at the Ductac art centre. She also participated and supported a hugely successful exhibition in aid of Syrian children.

EMOTIONALLY ENGAGED As part of the exhibition “Bozar del’ Abattoir”, curated by Fred Michiels, she was invited to exhibit 3 works in two exhibitions in Belgium in 2015. In 2017 and 2018 Katja’s paintings were exhibited in London at the Salon des Refusés which can be traced back to 1863 in France. The current Salon des Refusés has become more prominent every year and admired for the quality of the artworks exhibited. In 2018, she also showed her work at the Hellenic Centre in London together with seven other artists from Cyprus, in an exhibition entitled, “Myths and Realities”. Her paintings are included in private collections in Cyprus, Belgium, Dubai, UK, Bahrain, Norway, Switzerland and Croatia. Her genre is varied but she particularly enjoys painting portraits. Katja says that she likes the subject of people; she finds portraits “emotionally engaging”. She also relishes the challenge of abstracts and landscapes. To beat the terror of the blank canvas, she will often paint flowers or still life because “as one painting is finished, the agony of finding inspiration for the next looms”. She finds living in Cyprus thoroughly inspirational. She loves the insanely bright colours of Fauve, Expressionist and Impressionist movements in art. In her paintings, Katja uses lots of sunny, warm colours to reflect the colourful nature and abundant light of this beautiful Island. She works from a studio at Artemis Studios in Choloraka which she shares with other artists.

Natalia’s mother worked for the Ministry of Commerce for over thirty years in the Handicrafts department, so she grew up surrounded by Cypriot artefacts. This love of Cypriot crafts promoted her to open her own cultural vision called The Place. When asked why she has dedicated her life to The Place, Natalia says, “I definitely saw a gap in the market to promote Cypriot culture. I wanted to offer a real, authentic visit to give a real hands-on experience to visitors. When people come to The Place, they have the unique opportunity to try a new craft and create something to take home. The Place is for the whole family”. Natalia continues, “We are delighted to receive so many visits from locals, international travellers and from school children across Cyprus. The Ministry of Education has included The Place as part of their learning excursions. It is wonderful for me to see the children come and learn about their heritage through the craft demonstrations”.

The Place has traditional handicrafts, pottery, mosaics, Phytiotiko weaving, handmade jewellery, wood burning, encaustic art and many others available. In 2020, there are plans to expand the number of workshops they have on offer. They also have a wine cellar which offers wines from local wineries. This forms part of their gourmet section under the title of ‘Flavours of Cyprus’ which includes many unique Cypriot food products made by small regional food producers for sale. Furthermore, an e-shop selling selected artisan gifts and jewellery is expected to be launched by the end of this month. In the showroom part of The Place, there is the opportunity to view and buy many of the unique works of the local artists who work there, ranging from small personalised gifts to unique home decorative articles. They also have a gallery space which is available for rent to artists to hold exhibitions. Next month, The Place will be relaunching their Café and Beer Garden, which is located in the beautiful courtyard at the back of the main building. It is an idyllic place to sit, relax and enjoy the Cypriot products on offer. A little piece of heaven in the middle of Pafos to enjoy the real, genuine experience of Cypriot Culture.
