Time for a swim

f

@kimberleyseldon www.facebook.com/KimberleySeldon

Each summer, we wait with anticipation for our first opportunity to go swimming in our pond (you can see my country house on page 36). It feels like a miracle. Wasn't it just 8 weeks ago or that the entire landscape was fully covered by ice and snow? Somehow I allow myself to become convinced that summer will last and last, though history has shown me it's a blessed (and fleeting) moment in time. I long for striped towels and can't wait to hang up our outdoor shower hooks (see page 20). For some, fine weather means gardening. For me, it's time to simplify my decorating. We think you'll love our easy, breezy product pages this month (thanks to contributors Lisa Canning and Christine Da Costa). However you celebrate the season, all of us at Dabble magazine hope you are finding ways to stretch your sunny days.

The cottage's dining room has a refined rustic sensibility thanks to the wood light fixture that perfectly complements the wood table. Linen chairs from Restoration Hardware and silk draperies soften the space. The antiqued mirror adds simple elegance to the space. Darlene selected the white wash finish for the shutters to play off the home's coastal location. Located in Prince Edward county and close to the Bay of Quinte, the cottage is near some of Ontario's most beautiful beaches.

White paper Tape Self healing cutting mat Exacto knife (and extra blades) Metal ruler Poster paper - black Spray adhesive

b we the *On

Check out Nick’s map of Paris!

GOOGLE MAPS

Find and print a map of your favourite city. Enlarge it on a photocopy machine to create a pleasing scale.

PAPER CUT

Place your map on top of a large white sheet of paper and tape together and then tape both pieces securely to cutting mat (so papers don’t shift). Using an Exacto knife and a metal ruler as a guide, carefully cut through both sheets of paper removing only the buildings and landmarks and leaving the streets uncut. The streets will remain intact, attached to the white paper.

CITY CENTER

Once all cuts are complete, remove the tape and carefully separate the photocopy from the white paper. Place the cutout underlay on top of a black or colourful piece of paper and affix in place with a spray adhesive.

INFRASTRUCTURE

Protect your art by framing it behind glass.

"Canada is the most beautiful country in the world," says the designer. When you're designing for a rural setting like this, the key is to let the landscape shine by choosing finishes (like the stone and wood floors) that reflect what nature has already provided. LEFT: The peek a boo wall separates the entrance from the living and dining room. Though it is designed to be pleasing to look at, it's also a practical feature as it blocks some of the coldest blasts of air when the front door is opened during winter months.

DESIGN Set between two stone fireplaces, the openconcept living and dining areas overlook the property's two ponds. The water is a soothing backdrop but also supplies geo-thermal energy to the home. Clean lines and neutral colours keep spaces airy and light and allow Kimberley to change accent colours with the seasons. A similar colour story appears throughout the home and into the master bedroom. Benjamin Moore’s Ballet White (OC-9), one of Kimberley’s signature colours, creates a clean, chalky foundation that layers well with other smoky shades of oyster and grey.

Decadent raspberry pillows add a juicy pop of colour, while a trio of playful spirographs above the bed and an oversized framed image of coral create simple, graphic focal points. Dabble Savvy: The raspberry pillows and dark grey throw are replaced with crisp white during summer months.

Kangaroo Island, Australia

A mere 13 kilometres off the coast of South Australia, Kangaroo Island is one of the most pristine and utopic wildlife destinations in the country. Here it’s possible to encounter countless Australian animals in their native habitat—koala bears, sea lions, fur seals, wallabies and kangaroos thrive in abundance. The best way to get up close and personal with the wildlife is with a four-wheel drive tour, which gives animal lovers exclusive access to all parts of the island. We suggest letting Exceptional Kangaroo Island Tours lead the way. Whether it’s a wilderness tour through remote corners of the island or a kidfriendly expedition, their expert tour guides can make it happen. To top off the extraordinary service, they serve mouthwatering food and wine en route. 56

TRAVEL

Kenya, Africa

When most of us think safari, the first place that comes to mind is more than likely Africa. Images of driving along dusty roads in the hot African sun, on the lookout for lions, elephants, giraffes and gazelles, immediately fill the mind’s eye. If you’ve been thinking of going on an African safari there’s no better place to get your fix than in Kenya, the originator of the modern day safari. Natural Track Safaris offers every level of adventure imaginable—from short jaunts to weeklong camping excursions, ten-day rugged treks to leisurely paced sight-seeing that returns to a chic lodge for the evening. We suggest the 12-day Bush and Beach tour that visits the capital city of Nairobi, Samburu National Park, Mount Kenya, Masai Mara’s famous game reserve, Lake Nakuru and finishes with a trip along the coast.

Galapagos Islands, Ecuador

La Fortuna, Costa Rica

Our pick: the 5-day, 4-night Classic Safari where you’ll explore surrounding islands, cozy up to the tortoises, start the day with a sunrise walk and have a chance to kayak and mountain bike. If you’re certified to scuba dive, you can also explore the islands underwater.

Immerse yourself in nature with a stay at the luxurious Arenal Nayara Hotel & Gardens. Surrounded by lush tropical rainforest with rooms overlooking the Arenal Volcano, each casita has a secluded garden with an outdoor shower and terrace. Enjoy a walking tour along the Arenal Hanging Bridges or trek a bit further to the Caño Negro Wildlife Refuge in Los Chiles, considered to be one of the continent’s best bird watching sites, but also home to monkeys, lizards and bats.

Haven’t thought of a turtle safari? Think again. A safari on the Galapagos Islands might be one the best travelling experiences ever. Imagine camping on the tiny islands made famous by Darwin centuries ago in the middle of the Pacific Ocean. Yes. It’s extreme and exciting, but you won’t have to skimp on luxury. Spacious tents are situated on a small farm located on Santa Cruz Island through the Galapagos Safari Camp. Accommodations are cozy with luxury beds and modern amenities— some feature infinity pools outside the door. Not too shabby. Daytime activities include bird watching, hiking and visits to the nearby tortoise reserve.

One of the most bio-diverse regions in the world, Costa Rica is home to a uniquely varied mix of animals, insects, birds and reptiles—615 species to be exact, including the brightly coloured poison dart frog, the Black iguana, sloths, anteaters and scarlet Macaws. With more than a quarter of the country designated national park, refuge, wetland, forest reserve or other protective habitat, it’s no surprise the wildlife is rich, diverse and abundant.

Focaccia RECIPE BY COREY BURGAN

58

JUL/AUG 2014

FOOD

INGREDIENTS 325ml water (slightly above room temperature) 1½ tbsp dry active yeast 1 tbsp sugar

¾ cup bread flour 1 tbsp salt 1½ cup all-purpose flour 1⅓ cup potatoes, mashed and cooled

1 sprig rosemary, leaves picked and chopped 6 cloves roasted garlic, chopped

4 sprigs thyme, leaves picked and chopped ⅓ cup olive oil

Herb Mixture

Directions In a small bowl, add water, yeast and sugar and set aside. Let the mixture rise 1-2". Tip: Keep mixture in a warm area of the kitchen to speed up the process. In a large mixing bowl, combine dry ingredients and potatoes. Add in the yeast mixture. Stir mixture with hands or using a mixer with a dough hook attachment until combined. Remove from bowl and place on a floured surface. Knead for 8-10 minutes with hands or in mixer on low for 2 minutes and then at medium for an additional 10 minutes. Place in a well-oiled bowl and cover with plastic wrap until the dough doubles in size. Once the dough has risen, preheat oven to 350°F. In a small bowl, mix rosemary, thyme, garlic and oil and set aside. Remove dough from bowl and punch it until it is deflated. Portion the dough into balls that are approximately the size of a fist. Once portioned, roll into long strips. Using 3 strips, pinch one end of each log together and braid strips. Pinch the ends together and then combine the two ends of the dough to create a circle. Repeat with all strips. Spray or oil a medium sized muffin tin. Place each ball into the muffin tin. With a pastry brush, generously brush herb mixture onto balls. Cover and let rise for 10 minutes. Remove plastic and bake for 10-15 minutes, until golden brown. Sprinkle a pinch of sea salt on each bun and a little more oil once they are removed from the oven. Tip: To enhance flavour, cook herbs in olive oil. In a small sauté pan, heat up olive oil, rosemary and thyme on low-medium heat. Remove from heat as soon as you can smell the essence. Let cool and then brush on dough.
