Have you ever considered how many talented friends you have? Think about it. Appreciating those nearest and dearest to us is sometimes overlooked, precisely because of their proximity. I had the opportunity to go see a friend of mine at work last summer. Jason Parsons is a chef at Peller Estates Winery in Niagara. This man has some mad culinary skills and it was a treat to just sit and enjoy the fruits (yes, wine included) of his labour. Sometimes you don't have to look any further than your contacts list or Facebook page to find someone who amazes you. With offices in Chicago and Las Vegas, Alison Victoria designs boutiques, resorts and private residences. As the first female host on Kitchen Crashers, Alison surprises homeowners with extravagant redesigns, completed in a few short days. Dabble sat down with Alison to get her tips on kitchen renos. DAB: Tell us about your experience on Kitchen Crashers. AV: Kitchen Crashers has been the most terrifyingly rewarding experience for me. I love what I do, but doing it in front of millions of people can be pretty intimidating. That’s why I show the good, the bad and the ugly on every episode. I want people to see the DIY projects that I completely butcher so they can feel normal when they do the same. It might be TV, but nothing on this show is perfect. We learn from our mistakes every day and come up with solutions as a team. The camaraderie and friendships I’ve formed with my crew and the homeowners are what I cherish most. DAB: How does it feel to be the only female crasher? AV: Feels like I’m on top of the world! I always want to be the first to do something, so when it came time to pitch the idea to the network it made perfect sense to be the first female crasher and made even more sense to do the kitchen. I’m a tough girl and I know my way around every power tool there is. You usually don’t see a woman taking the lead on breaking down a wall, but that’s exactly what I’m doing. I’m breaking down barriers and showing viewers that women can do anything. DAB: Is there one kitchen reno that you are particularly proud of?

AV: The Chicago Firehouse is by far my favorite project. The kitchen turned out great, but the story leading up to it makes it the most memorable. My husband and I had an electrical fire at our condo and these boys are the ones that came to our rescue. I remember them sledging through our kitchen walls to make sure it didn’t spread and the entire time I was thinking about what their kitchen looked like at the firehouse. When I finally asked them, my husband gave me the dirtiest look and said “Really Alison? This is not the time or place to be thinking that!” But it was the perfect time! Months later we surprised them with their very own kitchen crash. Being able to give back to these amazing people was so gratifying. I check in on them once in a while to make sure they are still keeping it clean and organized. DAB: Would you share three easy tips for people wanting to update their kitchen without using a sledgehammer? AV: Three easy things to do when you want to update your kitchen: 1) Add a backsplash. 2) Add undercabinet lighting. After all, you want to highlight that beautiful backsplash you just installed, right? 3) Add pull out drawers to your existing lower cabinet doors.

It's a tie! BOD winning bedrooms! Business of Design (an online forum for professional designers) partnered with Dabble to find some stunning bedroom projects to publish. These two pros came in at a dead heat in our social media contest. Congrats Lisa McIntee from the Staging Professionals and Andrea Hilts from Designer's Workroom for submitting these winning photos.

From a young age, Lisa knew she wanted to be a designer as she dreamed of making rooms beautiful and finding solutions for her future clients. Today, Lisa is the owner of The Staging Professionals based in Niagara Falls. Lisa designed this elegant bedroom with resale in mind, staging the space to appeal to potential buyers. She chose a restful green colour palette to create a serene and tranquil sleeping space. The art above the bed ties in all the room's colours—from the taupe bedding to the dark hardwood floors. Reflective surfaces, 34

such as the mirrored side tables that flank the bed, bounce light around the room. When designing a space, Lisa takes inspiration from her clients' tastes as well as the surrounding neighbourhood.

“I find inspiration every day and in every way, but ultimately my clients are my true inspiration.” ~Andrea Hilts What was once The Americana Hotel has now become a comfy cottage, thanks to The Designer's Workroom. The designers used the vintage items left with the property as a source of inspiration, including the Hudson Bay blanket with classic primary stripes. In fact, Andrea used the iconic blanket as a jumping off point for the design of the space. Custom-made pinch-pleated panels banded in classic Muskoka red and hung from oil rubbed bronze hardware dress the double window. A custom duvet, bed skirt and Euro shams with covered buttons echo the blanket's colours. Andrea comes from a long line of creativity, having a mother and grandmother who taught her how to sew. Today, The Designer Workroom is a fully outfitted drapery and linens production space with the largest selection of fabrics in Niagara, and a team of designers and seamstresses working to create the beautiful pieces that have become the signature of the company. " I love the feeling a space can instill when you walk through the door and combinations of fabric, colour and texture evoke so many emotions. It is true that, “Home is where the heart is,” says Andrea, "and designing interiors allows me to turn any house into a home. If there was ever a space to invest in, it should be a room in your home that brings your family closer together."

When tasked with the mission to pair a wine with steak, what was my response? “No problem. Cabernet Sauvignon. Done.” I uttered these words while confidently striding toward the exit door at Dabble HQ, propelled by visions of catching the tail end of a nearby Happy Hour. But just as I grasped the door handle, I heard a voice. “Steak tartare.” What? Huh? I headed back to my desk, sulking for just a moment, but steeling myself for the task at hand. Now this was a challenge. One thing that’s interesting about a dish consisting of impeccable raw beef is how radically different the flavour of the meat is from a well-charred steak. There’s actually quite a bit of sweetness which, in this case, is set off by a scattering of fresh herbs and a few curls of hard, salty cheese.

With apologies to my friend Cabernet, who would overpower the delicacy of the chopped, chilled steak, I’d like to suggest a richer white wine. What?!? I know, white wine with steak is a bit, well, unorthodox. But here you have to consider the method of preparation. Digressing from beef for a moment, consider poaching chicken or fish in an aromatic broth versus searing it on a grill. Each technique lends different textures and flavours to a dish even though you’re using the same protein. So with that steak tartare, an opulent Chardonnay really struts its stuff. This is no time for timid unoaked versions. If you want to get geeky with your wine, look for the rich Chenin Blancs from a lesser-known part of France’s Loire Valley, Savennières. And afterwards, regale your friends with the tale of the time you had white wine with steak.

SoBo Ceviche INGREDIENTS ½ lb halibut, diced small ¼ lb spot prawns or large shrimp, peeled and deveined, diced small ¼ lb scallops, diced small 1 ½ cups lime juice (preferably key limes, about 40) (or 16 limes) 2 serrano chilies, seeded, diced small ½ avocado, diced small ½ Roma tomato, seeded, diced small ¼ medium red bell pepper, diced small 1 green onion, thinly sliced ¼ cup chopped fresh cilantro 1 ½ tsp salt 1 tbsp extra virgin olive oil 1 head gem lettuce (or baby romaine or baby Bibb) or 4 cups tortilla chips

DIRECTIONS Combine the halibut, prawns, scallops and lime juice in a medium-sized bowl and marinate for 2 to 3 hours in the refrigerator. The marinating is the cooking—the citric acid in the lime juice changes the texture of the fish to that of cooked while retaining the “raw” taste—no heat is used. Drain off the lime juice and discard. Carefully fold in the chilies, avocado, tomato, peppers, green onions, cilantro and salt. Keep the ceviche well chilled until you are ready to serve. To serve, drizzle the extra virgin olive oil over the ceviche and use the gem lettuce leaves or tortilla chips to scoop it up and enjoy. Serves 6–8

Tip: Ceviche is best eaten within 12 hours of preparation, so keep batches small. Use only the freshest seafood.

Killer Fish Tacos INGREDIENTS Fresh Fruit Salsa (see below) 1 lb wild salmon, boneless and skinless 1 lb halibut, boneless and skinless 1 tbsp salt ½ cup olive oil 1 cup small-diced red onion (about 1 onion) ½ cup puréed canned chipotle chilies in adobo sauce 16 crispy hard taco shells

Fresh Fruit Salsa INGREDIENTS 4 kiwi fruits, diced small ½ pineapple, diced small 1 mango, diced small 1 small papaya, diced small 2 avocados, diced small ½ cup chopped fresh cilantro

Key Lime Pie INGREDIENTS 1 ¼ cups graham cracker crumbs ¼ cup granulated sugar ½ cup butter, melted 6 egg yolks 2 ½ cups sweetened condensed milk (2x 300 ml cans) ¾ cup key lime juice (about 20 key limes) 3 cups whipping cream 2 tbsp icing sugar 1 tsp pure vanilla extract

DIRECTIONS Preheat the oven to 350°F. Lightly butter a 9" pie dish. In a medium-sized bowl, combine the graham cracker crumbs and sugar with the butter until it resembles wet sand. Press the mixture firmly and evenly into the bottom and sides of the prepared pie dish and bake in the centre of the oven for 7 to 9 minutes. Remove and allow to cool for about 20 minutes. Leave the oven on. In a separate bowl whisk the egg yolks lightly. Add the condensed milk and whisk to combine. Using a rubber spatula, stir in the key lime juice, ¼ cup at a time, stirring well after each addition. Pour the filling into the cooled pie crust. Bake for 5 to 7 minutes. Let the pie cool completely, then refrigerate uncovered for at least 4 hours to set. Place the whipping cream, icing sugar and vanilla in a medium-sized bowl and whip until soft peaks form. To serve, slice the pie and top generously with whipped cream. Serves 8–10

I live in PEI where good food abounds from the land and sea so I have a great variety of local, fresh ingredients to work with. My blog, My Island Bistro Kitchen, focuses on local Maritime foods and beverages. In addition to sharing my own recipes, I write stories about local food and beverage producers and feature their products in recipes.

...tablesetting I love home dĂŠcor and decorating and changing it up for the seasons. One of my favourite things to do is to set a beautiful table. An attractive tablesetting is inviting for guests, sets the atmosphere for a great meal and can be a conversation piece.

...painting I have been painting for over twenty years and have experimented with various mediums. While I like each, my preference is watercolour. When I want to really relax, I bring out the paints and brushes.
