Children

Culture and history carry on through time only if coming generations are informed about them. By Naina Grewal

f the future was to be personified, we’d see it in our children. On a familial level, we constantly try to embed within our children positive values that reflect our upbringing. While principles such as sharing and caring are essential to a child’s development, it is of equal

importance to instill the willingness to learn, appreciate and love cultural and historical values as well. Evidently, culture and history carry on through time only if coming generations are informed about them. Although the existence of written text plays a role, oral and practical passage

carries a human element that cannot be replicated through other mediums. Canadian intellectual, Marshall McLuhan, had said, “The medium is the message.” Put simply, if we depend on books to carry culture and history, they will be limited to merely paper. To truly capture and preserve the richness and sanctity of our beliefs and practices – especially when pertaining to children – practice is important. The old adage of ‘monkey see, monkey do’ goes a long way

with the little ones. During festivals and celebrations, parents should take the time to perform rituals and traditions in the presence of children. That said, children can only become attached to culture if they are participants, not observers. Putting aside the worry of children making a mistake, it is important to maintain a level of comfort so that kids are enthusiastic and eager to take part in cultural activities, hands on, without fear of backlash. Actions are only half the victory, however. The most crucial element of instilling culture and history in the hearts of children lies not in the how, but in the why. Rather than keeping an event at its face value of what it offers, family conversations need to divulge into the meaning behind them. For instance, the Vaisakhi parade itself lies beyond just the performances, free food and crowds. Regardless of its contemporary interpretation, there is a historical significance that children must be exposed to. However, history and culture should

very Vaisakhi many Sikhs will celebrate the birth of Khalsa with no knowledge of a community key in establishing the Khalsa: Sikligar Sikhs. Sikligars, hailing from outside of Punjab, were

legendary weapon makers for Sikh armies but today are among the poorest in India. Sadly, for generations they have been abandoned by the mainstream Sikh community and their story forgotten from the Sikh conscious.

The exact origin of Sikligars is unknown. The most commonly held story is that Sikligars first met Sikhism during the time of Guru Hargobind Sahib. In response to Mughal repression, Guru Hargobind Sahib introduced the warrior tradition and the concept of self-defense in Sikhism. In the need for arms Guru Hargobind Sahib recruited ironsmiths or metal workers from Marwar (present day Rajasthan). These ‘low class’ labourers were now given respect and treated as equals. Subsequently Guru Gobind Sahib gave them the title Sikligars which means ‘polisher of weapons’ in Persian. Sikligars served as weapon makers for Sikh

armies up to the reign of Maharajah Ranjit Singh. In fact, after the creation of the Khalsa not only did Sikligars make weapons but many fought in the Khalsa army. However, the situation of Sikligars changed after the British annexed Punjab. The

British concern for a revolt meant the skilled weapon makers were a threat. To avoid an uprising, the British Police forced Sikligars to disperse and leave Punjab. As a result, many Sikligar families became nomads moving from town to town to avoid harassment from the British police. This, coupled with the advancement of

technology, made Sikligars irrelevant and they declined into poverty. Today, Sikligar communities are spread throughout India and most live in unbearable conditions. Many live in remote villages on the edges of cities and towns. These communities have poor housing with no access to electricity, clean water or even a toilet. Sikligars are commonly illiterate and children are often working to support the family. For income, Sikligars mainly work menial and odd jobs, often simple metal work such as making keys and kitchen utensils. Many communities are constantly travelling to wherever they can find work or sell their low value items. Needless to say, many Sikligar parents cannot afford a proper meal for their children leaving them malnourished. Furthermore, being

In recent years, media outlets have raised awareness about the situation of Sikligar Sikhs and NGOs are stepping up to help. Interestingly, despite their isolation and neglect Sikligars have maintained their Sikh identity. They still claim to be followers of the Guru; many keep their hair unshorn; men still wear turbans; and many women wear salwar (loose trousers) and kameez (shirt)Â like women in Punjab. However, despite preserving their Sikh identity Sikligars are not recorded as Sikhs. Instead the Indian government categorizes them as scheduled caste which is a title for the lowest social class. In recent years, media outlets have raised awareness about the situation of Sikligar Sikhs and NGOs are stepping up to help. This includes a young Canadian-based NGO named Sikhi Awareness Foundation commonly known as SAF International. SAF International mostly

supports poverty reduction in Punjab and have also made improving the lives of Sikligars a priority. SAF International has taken an ambitious approach of organizing non-profits to implement community development projects. These projects entail providing comprehensive support to put Sikligars on a path of social mobility. The supports provided include repairing homes and constructing washrooms; providing skills and job training; connecting working-age adults with the local economy; financial support for children’s education; and female specific support. Their most vital service to ensure social mobility is the financial support for child education. Here SAF International enrolls all children into their Bloom Literacy Program which

A profile of each child is posted on the SAF International website where someone can sponsor a child for $35 per month until they complete grade 12. Currently, the Bloom Literacy Program has over 600 children and more than half are girls. Another notable service is the female specific support. This includes female hygiene products and health education workshops for young girls. SAF International is also using its goodwill and positive influence to stop the practice of child marriage. The SAF team also pays special focus to ensure families keep their daughters in school until they complete grade 12.

very important event for the South Asian community in April is Vaisakhi. Not only does this hold immense religious value for multiple communities, but it is also a time to showcase the cultural roots and heritage that Vaisakhi is known for. A prime example of this can be seen through the story of Vijay Yamla, a talented Punjabi folk singer and musician. A treat to the five senses, Vaisakhi fairs are still widely held, featuring energetic Bhangra and Giddha dancers who reflect the rich Punjabi culture through longstanding folk dances. In fact, upon careful observation, one sees that the movements of Bhangra articulate and imitate farming actions such as sowing, harvesting, reaping and gathering. Adorning the

self with beautiful jewellery alongside traditional clothing instills a sense of pride. While Vaisakhi has initially originated in Punjab, the migration of South Asian communities into other parts of the globe has brought many contemporary variations and meanings to the festival. he key to a longlasting and satisfying life is passion. No matter the age, passion for work, an activity or even a prominent goal is what keeps one going. It is this passion for weightlifting that has motivated 65-yearold Raghbir Singh Dhaliwal

to be an active participant of the sport and win recognition and awards over the years. A machine operator at a local sawmill by day and a weightlifter by heart, Dhaliwal has been competing in the sport

for the past 40 years. Though he wanted to learn weightlifting quite early on in his life, there weren’t many opportunities to do so in his hometown of Dhaliwal, in Punjab, India. So, when he immigrated to Canada and settled in Port Alberni, BC, in 1972, his passion found the opportunities it had been waiting for. “When I came to Port Alberni I saw a picture of Rashpal Singh Rai and Jodhi Singh Rai in the local newspaper after a competition that they

ikhs only make up about 1.4 per cent of Canada’s population, but our influence and exposure in Canadian society has drastically increased over the past few years. Politicians such as the New Democratic Party leader Jagmeet Singh and the Canadian Defence Minister Harjit Sajjan, have brought Sikhism to the forefront of Canadian media.

With this increased public coverage has come the need to better showcase the values of Sikhism. It is vital to properly establish our identity and move away from the stereotypes that have come to be associated with our culture. The distorted perception of Sikhism is primarily due to the lack of proper exposure to its set ideals and

As a collective community, it is fundamental to counter this by inducing the spread of the reality behind the largely misunderstood religion. Columbia Community – the Vaisakhi parade. Nearly half of Canada’s population of Sikhs live in British Columbia, but the majority of them have faced some sort of discrimination; this discrimination largely stems from misunderstanding. The Surrey Vaisakhi parade was first held nearly 20 years ago, and since then has exploded as a mass gathering of people from all different backgrounds and faiths, as a show of diversity and universal brotherhood. Since the Vaisakhi Parade has attracted a multicultural audience for many years now, it has made the event a major exposure point for

Today it is one of the oldest and largest Sikh portals, reaching millions of people and spreading the good word. Gurumustuk is working towards rebuilding the very values of the Sikh way of life – kindness, compassion and service. He says practicing these values is simpler when you think of the person in front of you as yourself. “People are often caught up in their egos, opinions, status and politics which makes it difficult for them to see what is required of them. It is important for us

to open our minds to other’s perspectives. The reality is, that when someone from a different religious and cultural background is learning about Sikhi, they do so from a very different frame of reference. With SikhNet, we try to be supportive towards everyone in his or her path. So instead of pointing out rights and wrongs and preaching, I prefer sharing my personal experience,” says MrSikhNet. Among many other projects, Gurumustul introduced SikhiWiki – an online encyclopedia of the Sikhs; a popular Youtube video series discussing the questions and answers about Sikhi; The Gurbani Media Center – the largest collection of Gurbani Kirtan online; SikhNet Radio, with over 40 channels and reaching thousands of listeners each month; Audio Stories for Kids to help them learn about Sikh history and positive values; and the Youth Online Film Festival. For many people, religion is just a set of rules, something they ought to do. Gurumustuk Singh Khalsa continues to work towards changing this. He believes God gave us limited energy on this earth and we can choose to uplift it or destroy it. So he hopes that everyone discovers what lifts their spirits and makes them shine bright.

VAISAKHI FEATURE the water, and the Guru stirred this mixture with a double-edged sword called Khanda whilst reciting the Five Banis. The resultant solution is called as the “Khande Di Pahul” (ceremony of the double-edged sword) or commonly known as “Amrit” (nectar of immortality). Each of the Panj Pyares was given five handfuls of the Amrit to drink, and had Amrit sprinkled in their eyes five times. Each time, they repeated the phrase “Waheguru Ji Ka Khalsa, Waheguru Ji Ki Fateh.”

After this, the Guru then bowed in front of the five beloved ones to ask for the Amrit. This place is now called Takht Shri Keshgarh Sahib. This is the very first incident in religion that a Guru or a Master asks his disciples to initiate into the Order of Khalsa he created himself, indicating

democracy in religion. “Waho Waho Gobind Singh ji, Apey Gur Chela” Guru Gobind Singh gave them the title (analogous to Knight or Sir in English culture) of Singh (meaning lion). Similarly, for females the title of Kaur (meaning princess). It is noted that about 20,000 men and woman took this baptism (Amrit) on the first day. eva, meaning selfless service, is fundamental in Sikhism. “One who performs selfless service without thought of reward shall attain his Lord and Master.” (SGGS Ang 286). A Sikh is a student of Guru Granth Sahib ji who has made a vow to serve those around them no matter the cost. The distinct attire of Bana is like that of a policeman, in which the outside identifies us to be approachable if anyone is in need. We are to see the light of God in all creation and serve selflessly and always protect those in need without any personal benefit.

Seva is like a tree where the outside branches and leaves protect and give to humanity and the bounded roots make us strong and humble. Not only does seva bring one moral uplifting, but it also binds a community together. As a collective community, this year members of Chardi Kala Sikh Sangat (CKSS), a non-profit organization

embarked upon doing seva in the community, volunteered their time at the Surrey Urban Mission and made dinner to serve those in need. We collected donations and made bags to hand out essential items as well. We will continue this service throughout the year. Another seva we strive to continue is community garbage pick-up. We have been working with the City of Surrey, and with the help of a few volunteers we select locations to remove garbage to help the environment and mother earth. CKSS also has been working with a woman’s shelter, both in giving donations and taking out time to help the shelter where needed. As quoted from Guru Granth Sahib, “You shall find peace, doing seva” (SGGS Ang 25). When providing help to those in need, our mind discovers other facets of spiritual, mental and universal awareness. In turn, one can attain serenity and peace of mind. If one find’s peace of mind in doing seva for others, the heart is opened to receive Sri Guru Granth Sahib ji’s message of Naam Japo (meditation on God and reciting and chanting of God’s name), Kirat Karo (to honestly earn, with hard work, by one’s physical and mental

Langar depicts a message of equality and oneness, breaking the shackles of colour, caste, community, gender or status. There is no special treatment and nothing is hidden from the public, instilling values of humble acceptance and gratitude.

The strongest wave surrounding the format of langar came from Mata Khivi ji, wife of the second Guru, Guru Angad Dev ji. Being in charge for serving langar, she has been praised in historical texts for her genuine generosity and passion towards serving others. The third Guru, Guru Amardas ji, implemented a rule at Sri Goindwal Sahib ji, according to which no one could meet the Guru until they had eaten langar. This rule was not even bent for the emperor, which was a revolutionary move in a hierarchical society. This Gurdwara is at the

center of the inception of many religious elements including sports, Gurmukhi and langar. The importance of langar and its unique purpose can be traced back to its beginnings in India. At a time when the caste system was heavily dominant, the poor could not even enter religious temples. Using separate utensils, food was often thrown at devotees rather than served based on discriminatory grounds. The concept of Pangat, or langar, introduced a philosophy where both the king and beggar would eat the same food at the same level. Symbolically, and literally,

one is not higher or lower than the other. Therefore, langar depicts a message of equality and oneness, breaking the shackles of colour, caste, community, gender or status. Moreover, the original term being Guru Ka Langar, implicates that the langar does not belong to a specific country, person or institution. Transcending beyond

discrimination, even the process of preparation, cooking, serving and cleaning is a shared experience. For this reason, it is also important to recognize that langar is not just limited to food; it entails serving people to fulfil their needs in any area – be it of medication, clothing or even education. While langar comes in many forms, the essence of serving others wholeheartedly allows one to find in themselves the heart to give without expecting anything in

return. For both the giver and receiver, the impact is a treasured experience. In the modern age, however, we must be careful in preserving the true meaning of langar, rooted in its simplicity and compassion towards humanity. As the channels through which we serve evolve, we should not compete with others, but recognize service as a catalyst of unity. Playing our role entails simple steps such as being more mindful, taking only what we need, reducing imperishable waste and promoting health. Taking these steps paves the path for one to reap maximum utility from a more wholesome experience and truly embrace the glory of langar!

Mai Desan of the Sukerchakia Misal (approx. 1774) was a widely respected leader and administrator bravely facing the enemy in battle when the need arose. The vast territories that Ranjit Singh inherited as leader of the Sukerchakia Misal

were in part due to her able leadership and fortitude. His conquest of Lahore in 1801 was also aided in major part by his motherin-law Sada Kaur (d. 1832). While nothing is known of any daughters of Maharaja Ranjit Singh, the ladies of his family have left their mark on history. Rani Chand Kaur, Rani Jind Kaur, Sophia Duleep Singh were some of the other notable women from Ranjit Singh’s family, who admirably rose up to lead at the need of the hour. It is not uncommon for historians to be biased to the political masters of the time and malign many of these fearless and spirited

Gurmaan Brar chooses Douglas College to begin his engineering degree. By Melissa Nilan

G

urmaan Brar wants to change our reality – in an iPhone or SpaceX-rocket kind of way. To do that, he needs to become an engineer. He plans to get his bachelor of engineering from the University of Victoria, and he chose Douglas College to get him started. Gurmaan’s future wasn’t always clear. He got expelled from high school and had to work hard to get back on track. He applied to Douglas, and was soon getting his hands dirty in the engineering labs. “Douglas gave me a chance,” says Gurmaan. 2018 VAISAKHI 82so grateful because “I’m

I’ve never been more passionate about engineering.” His parents are grateful, too. “We were excited to send Gurmaan to Douglas,” says Raghbir Brar, Gurmaan’s father. “We knew it was a good college. We are very proud of his accomplishments.” Now in his second year of the Engineering program at Douglas, Gurmaan is getting practical experience in the fabrication lab. That’s another reason he chose Douglas: A university program wouldn’t have offered this type of practical experience so early on.

“You can create anything you want in the labs, there is so much equipment. I’ve made a planetary gear set, an electronic remote to power a Lego train we built, and headphone amplifiers that I reused in my car to boost the stereo bass. All this practical fabrication experience has given me a better understanding of how things work.” Once he completes his bachelor’s degree from UVic, the sky’s the limit. “I want to be involved in creating groundbreaking technology – like the iPhone or SpaceX rocket. I want to be one of the people leading the way.” 18-050

Ingredients

Preparation

• 1½ cups thick yogurt

• Spread two tablespoons of pistachios on a plate.

• 1 tbsp chopped pistachios + as required • 6-8 raisins + for garnishing • 1 tbsp chopped almonds + for garnishing • Honey as required • 3 tbsps powdered sugar • 1 tsp saffron water • ¼ tsp green cardamom powder • 2 tbsps milk

• Apply some honey on the rim of a tall serving glass. Place each glass inverted in the plate to coat the rim. • Combine yogurt, powdered sugar, one tablespoon of pistachios, six to eight raisins, one tablespoon of almonds, saffron water, cardamom powder, milk in a blender jar and blend into smooth mixture using an electric hand blender. • Pour the lassi in the prepared glass, put cream and serve chilled garnished with some almonds, raisins, pistachios and saffron strands.

Maa Choleyan di Ingredients • 2/3 cup split black gram with skin (chilkewali urad dal), soaked for 4 hours • ¼ cup split Bengal gram (chana dal), soaked for 4 hours • Salt to taste • ¼ tsp turmeric powder • 1 large onion • 1 large tomato • 1½ inch ginger piece • 5-6 garlic cloves • 2 tbsps pure ghee • ¼ tsp asafoetida (hing) • 1 tsp red chilli powder • ½ tsp garam masala powder

Preparation • Heat a pressure cooker. Drain and add split black gram, split Bengal gram, salt, turmeric powder and four cups water and mix. Close the cooker with the lid and cook under pressure on low heat till four histles are given out. • Finely chop onion, tomato and ginger. Roughly chop garlic. • Heat ghee in a non-stick pan, add onion, garlic and ginger and sauté for two minutes. Add asafoetida and tomatoes and continue to sauté till fragrant.

• When the pressure is completely reduced, open the lid of the cooker and lightly mash the grams. • Add red chilli powder and garam masala powder to the pan and mix well. • Add a little cooked grams to the pan and mix well. Add this mixture to the grams remaining in the pressure cooker and cook till the grams are completely soft and creamy. • Transfer into a serving bowl and serve hot with paranthe.

Ingredients

• ½ tsp dried fenugreek powder

• 400 gms cottage cheese (paneer)

• 2 tsps sesame oil

• ½ medium bunch fresh mint leaves

• Salt to taste

• ½ medium bunch fresh coriander leaves • 1 tbsp oil + for greasing • 1 tsp cumin seeds (jeera) • 1 tsp caraway seeds (shahi jeera) • 2 green chillies • 8-10 cashew nuts • 1 tbsp gram flour (besan) • 2 tbsps yogurt • 1 tbsp ginger-garlic paste • ¼ tsp turmeric powder • ½ tsp garam masala powder • 1 tsp chaat masala

• 1 tbsp fresh cream • 1½ cups mixed capsicum cubes (red, green and yellow)

Preparation • To prepare marinade, heat oil in a non-stick pan. Add cumin seeds and sauté till it changes colour. Add caraway seeds, broken green chillies and cashewnuts and sauté for one minute. • Add gram flour and sauté for one minute. Add chopped mint leaves and chopped coriander leaves and mix well.

• Mix together ground paste, ginger-garlic paste, turmeric powder, garam masala powder, dried fenugreek powder, chaat masala, sesame oil and cream in a bowl. Add salt and mix well. • Apply some marinade to the cottage cheese cubes. Add mixed capsicum cubes to the remaining marinade and mix till well coated. • Insert one marinated green capsicum cube, one cottage cheese cube, one red capsicum cube, one yellow capsicum cube, one more cottage cheese cube and one green capsicum cube in each skewer.

• Heat a non-stick grill pan and grease with some oil. Place the prepared skewers • Grind the mint leaves mixture and fry from all sides till golden along with two tablespoons of brown. Serve hot. yogurt into a smooth paste.

Preparation • Grind brown rice with three to four tablespoons of water to a coarse mixture.

• Add jaggery and mix well and cook, stirring continuously, till the jaggery melts.

• Heat oil in a non-stick pan, add walnuts and sauté till lightly browned. Add three and half cups of milk, green cardamom powder and mix well. Add ground rice and mix well. Cook, stirring continuously, till the mixture thickens.

Ingredients • 1 kg fresh mustard leaves (sarson ke patte) • 200 gms fresh spinach leaves (palak) • 100 gms bathua

Preparation • Roughly chop mustard leaves, spinach leaves and bathua together. • Heat ¼ cup water in a non-stick pan, add the chopped leaves and a little salt and let them cook.

• Salt to taste • 2 medium onions • 2 inch ginger

• Finely chop onions, ginger, garlic and green chillies.

• 8-10 garlic cloves

• Heat three tablespoons of ghee in another non-stick pan. Add ¼ cup water to the leaves cooking in the other pan and blend with a hand blender.

• 3-4 green chillies • 4 tbsps ghee • 2 tbsps cornmeal (makai ka atta)

Chutney Ingredients • 1 tbsp vegetable oil • 1 cinnamon stick • 2 star anise • 3 cloves • 2 tbsps fennel seeds • 2 tbsps peeled and minced fresh ginger • 1 pound cranberries, fresh • Zest of 5 lemons • Juice of 2 meyer or regular lemons • 2 cups sugar • 6 cups water • Pinch of saffron threads • Salt to taste • 3 tbsps red wine vinegar

Preparation

• Heat the oil in a large saucepan over medium-high heat and cook the cinnamon, star anise, cloves, fennel seeds, ginger stirring, for about 30 seconds. • Add the cranberries, lemon zest, lemon juice, sugar, water, saffron, and salt, and bring to a boil over high heat. Simmer stirring occasionally, until slightly thickened, about 15 to 20 minutes. • Reduce the heat to medium, add the vinegar, and cook until the mixture is thick, for about 10 minutes. • Transfer to a bowl, let it cool, and serve at room temperature, or refrigerate at least two hours and serve chilled. This can be stored in an airtight container in a refrigerator for up to three months.

Vaisakhi Recipes

Mushroom and Spinach

Rice

BY CHEF HARI NAYAK

Ingredients • 315 g uncooked basmati rice

• 2 cloves

• ½ lb (250g) fresh wild mushrooms such as chanterelles, morels, oyster, and shitake

• 1 red onion (about ½ lb/150g), peeled and chopped

• 3 tbsps oil

• 100 g packed fresh spinach leaves, washed and chopped

• 1 tsp cumin seeds

• 100 g slivered almonds

• ½ tsp fennel seeds

• 1 tbsp chopped garlic

• 2 bay leaves

• Salt to taste

• 1 inch (2.5-cm) cinnamon stick

• 500 ml water

• 5 green cardamom pods

• 1 tsp juice of fresh lemon

• 5 black peppercorns

Prep time: 10 minutes + 40 minutes for soaking Cook time: 20 minutes Serves 4

Preparation • Soak the rice for 30 to 40 minutes. Carefully pour out the soaking water and wash the rice in several changes of water, until the water runs clear. Leave it to drain in a fine-meshed strainer for about 15 minutes.

• Wipe and clean the mushrooms with damp paper towels. Cut any large mushrooms into slices. • Heat the oil in a large, wide saucepan. Add the whole spices (cumin, fennel, bay leaves, cinnamon, cardamom, black peppercorns and cloves) and cook for 10 to 15 seconds or until fragrant. Add the diced onions and slivered almonds. • Cook stirring often for about four to five minutes until the onions are soft and browning at the edges. Add the mushrooms, spinach, garlic and salt, and cook over a high heat for another two to three minutes. • Add the drained rice to the pan with the water, bring to a good boil. Then cover with a lid, lower the heat, and cook until the water has evaporated, about 10 minutes. Take off the heat, remove the lid, and allow any excess moisture to evaporate. • Gently stir in the lemon juice, and taste and adjust the seasoning, if necessary.

Cinnamon & Black Tea

Truffle BY CHEF HARI NAYAK

Ingredients • 1 pound semi sweet chocolate, finely chopped • 2 cups heavy cream • 1 cinnamon stick • ½ cup tea leaves • 4 tbsps unsalted butter, softened • Cocoa powder, for dusting

Preparation Place the chopped chocolate in a medium bowl and set aside. Using a small pot, bring the cream and cinnamon to boil. Remove from heat, add the tea and infuse for five minutes. Strain the hot cream through a fine sieve over the chocolate. Using the back of the spoon, press the tea leaves to extract as much flavour as possible. Allow the cream to soften the chocolate for two minutes. Using a whisk, stir the chocolate mixture slowly until smooth. Add the butter, stirring until mixed. Transfer the chocolate cream mixture into a flat pan and cover with plastic wrap, making sure the plastic wrap touches the entire

surface of the mixture. Refrigerate for at least two hours until the chocolate is set. Place the cocoa powder in a shallow plate. Using a teaspoon dipped in hot water, form half inch balls of the chocolate mixture. If the mixture gets too soft while working, refrigerate until set. Roll the truffles in cocoa powder and store in an airtight container in a cool place for up to three weeks.

Tapioca & Rice Pudding with

Peach Compote Ingredients

• 2 l unsweetened mixed coconut cashew milk • 80 g small pearl tapioca • 100 g short grain white rice • 120 g coconut or palm sugar • 30 ml pure vanilla extract • 1 lemon, zested

For the peach compote:

• 1 can diced peaches • 1 tbsp lemon juice • 1 tbsp coconut or palm sugar

Preparation

For the peach compote:

• Place all the compote ingredients in a small mixing bowl. Mix well and place the compote in fridge for at least 45 minutes.

For the Pudding:

• Place all pudding ingredients except tapioca, vanilla and lemon zest in a medium sauce pot. Cover the pot with a lid, and simmer on low heat for 20 minutes.

12 Servings • Next, add tapioca, vanilla and lemon zest to the simmering rice mixture. Keeping on low heat, stir and cook the pudding for another 20 minutes. If the pudding consistency is too thick, feel free to add more coconut cashew milk. • Pour the pudding in individual serving dishes and garnish with the peach compote. Serve warm or cold.

• In a food processor add the crust ingredients, and pulse until all the ingredients come together. If the juice of one lime isn’t enough, add more juice until the ingredients begin to form a crust, and set aside.

For the cheesecake filling:

• Place the macadamia nuts, almonds, maple syrup, avocados, lime juice and zest in the food processor, and pulse until you obtain a silky smooth texture. This will take at least four to five minutes.

GRILLED TOFU & SNAP PEAS IN

COCONUT-PEANUT CURRY BY CHEF LUCKY DHILLON

Ingredients • 2 tbsps canola oil • 1 red Thai chili, chopped • 4 clove garlic, chopped • 1 ½ tbsps ginger, chopped • 1 large onion, chopped • 3 lime leaves • 1 tbsp lemon grass,chopped • 1 tbsp fresh basil leaves, chopped • 600 ml coconut milk • 50 g smooth peanut butter • 1 tbsp palm sugar • 1 lb firm tofu, cut into thick slices • 2 tbsps soy sauce • 2 tbsps vegetable oil • 1 tsp dry garlic • 200 g fresh snap peas • 1 tbsps green onion, chopped • 2 tbsps roasted peanuts for garnish • Salt to taste

Preparation For the coconut peanut curry:

• In a medium sauce pot heat vegetable oil, add onions, Thai red chili, garlic, and ginger. Stir and cook for two to three minutes, or until onions are translucent. • Add lime leaf, lemongrass, coconut milk, and salt. Continue to stir for one minute, then add palm sugar and peanut butter. Reduce heat to low and simmer uncovered for five to seven minutes. • Remove the pot from heat, and puree the sauce mixture using hand kitchen blender until smooth sauce.

Serves 6

For the grilled tofu: • Cut the firm tofu into thick slices and gently toss with oil, soy sauce and dry garlic. Chill for one hour before grilling. • Using BBQ or grilling pan, grill the tofu until you have nice grill marks on each side. Using a sauté pan heat curry sauce, stir in fresh basil, green snap peas and cook for three minutes. • Stir in grilled tofu, and mix gently until all the tofu is nicely coated with the thick curry sauce. • Serve hot over steamed jasmine rice and garnish with roasted peanuts and fresh green onion.

ROASTED CAULIFLOWER &

Crispy Kale Soup BY CHEF LUCKY DHILLON

Ingredients • 2 cauliflower heads • 3 garlic cloves • 2 shallots • 2 tbsps olive oil • 3 cups vegetable broth • 1 cup water • 1 tsp fresh thyme leaves, finely chopped • 1 bay leaf • 2 cups full fat coconut milk • 1 bunch curly green kale • 100 ml vegetable oil • Salt and pepper to taste

Preparation For the crispy kale:

• Preheat oven to 425°F. Toss the kale leaves with half of the vegetable oil. • Spread over a small baking sheet, and roast the kale for 10-15 minutes or until crispy. Sprinkle with salt and pepper and set aside.

For the cauliflower soup: • Preheat oven to 425°F. Cut the cauliflower into one-inch flowerets. • On a large baking sheet, toss chopped cauliflower, garlic, and shallots with the other half of vegetable oil to coat. • Roast on the middle rack in the oven for about 30 minutes, or until golden. Turn frequently, and remove

Serves 10 any of the garlic and shallots if they are done sooner. Set aside few crispy cauliflower flowerets for garnish. • In a medium sauce pot, simmer vegetable broth, water, roasted cauliflower mixture, and herbs for 30 minutes, or until cauliflower is very tender. Remove bay leaf, and using a kitchen blender puree the soup in batches until very smooth. • Return the soup back in the pot and stir in the full fat coconut milk, along with salt and pepper to taste. Heat soup over moderate heat, until just heated through. Add more water if needed. • Serve the soup hot in bowls and garnish with crispy kale and reserved roasted cauliflower flowerets.

Beet Salad

For the beets:

• Bring a medium pot of water to a boil. Salt the water, then add the beets and simmer for 25 to 30 minutes, or until fork-tender.

Ingredients

• Drain the beets and rinse under cold water, using your fingers to rub the skins off. Cut the beets into desired shape and size and set aside.

For the pesto:

• 6 medium mixed beets, tops trimmed

• ¼ cup pumpkin seeds, lightly toasted

• 3 garlic cloves, minced

• ¼ cup olive oil

• 2 cups packed fresh curly parsley

• Juice of 1 lemon

• ¼ cup packed fresh basil leaves

• Salt and pepper to taste

• Using a food processor, combine the garlic, parsley, basil, pumpkin seeds, olive oil, and lemon juice. Pulse until very well combined. Season with salt and pepper to taste. • Place the beets on a serving plate and sprinkle lightly with additional salt. Drizzle with the pesto and the olive oil, and then another sprinkle of salt and pepper. Serve immediately or refrigerate, and serve chilled.

Golden Girls have been successful in fulfilling their commitment of fundraising for the building of a surgical suite in the new tech building of Children’s Hospital. it was a big commitment but with the blessings of Guru Nanak and support from the community, the goal has been met and now we are continuing our efforts to raise money to purchase equipment required to run this surgical suite. Over the years, Golden Girls have also contributed to Red Cross, tsunami victims, 9-11 catastrophe, police widow’s fund, Richmond General Hospital, Mamta Foundation, Cancer research, Burn Unit of BC and many more. imran Walia has grown up practicing and understanding virtues like perseverance, resilience, giving back to the community, hard work, and smart work since a young age. “My childhood has been nothing short of inspiration from my hard working parents, my father being a construction engineer and my mother being a nurse. Growing up in a household of working parents, I learnt to be independent very early on

in my childhood,” says the Ladner resident, who is an IT Business Intelligence Team Lead at Wenco, the software arm of Hitachi. With the backing of these very virtues, Walia hopes to make Delta a growing city that people take pride in calling their home. She has already taken the first step towards this vision by running for City Council in Delta in the upcoming municipal election in October 2018.

Walia’s passion for politics is driven by one principle – “If you want to see the change, you have to roll up your sleeves and get your hands dirty and make it happen.” She hopes to make Delta a place where young generation thrives and grows feeling safe and confident about their future and seniors feel at home and well taken care of. “The governance, the council needs new energy and new

Walia is the director and one of the founding members of Save Canadian Kids, a not-for-profit organization that fights against the drug overdose problem and gang violence. “Serving on the Parks Committee has not only given me an insight into the greatness of the city I live in but also exposed to me areas of improvement and how I could constructively contribute

towards it. Running for Delta City Council is a natural progression towards fulfilling that vision,” she adds. As a Councillor, the young candidate will strive to enhance the lives of Delta residents, through growth and empowerment of youth in sports and technology, growth of the industrial sector and job creation, preservation of nature and farmlands, and other policies. “There is so much room for innovation and improvement. By synergizing and connecting with residents, I intend to take that leap and grow together to make Delta a role model of preserving the core values while growing and excelling

at the same time,” adds Walia, promising a new, young and innovative perspective. Being a mother of two young kids and with experience working in the field of Information Technology and in the community on social issues, Walia brings on board a broad range of skills and ideas and understands the value of connecting with Delta residents at a cultural and intellectual level, that will eventually build trust within the community and lead to positive change. “Delta is home to a lot of cultures and history we should be proud of and I intend to preserve and enrich our culture and heritage and celebrate diversity,” she declares in conclusion.

ondon-based artist, Jatinder Singh Durhailay, was always fond of painting and drawing since childhood. But seeing that Indian culture was hardly depicted through art got him interested in a career as a painter. “During my studies at London College of Communication, and prior to my career as an artist, which started

in 2012, I grew interest for the contemporary art world, and quickly came to acknowledge that there was a lack of representation of the Indian culture, of its diversity. And more particularly of the Sikh Indian culture,” shares the young artist whose paintings have been showcased at various exhibitions in and around United Kingdom. Jatinder’s paintings are inspired by diverse periods within Sikh history and beautifully reflect Indian Sikh culture. “Several of my paintings are also influenced by the times I spent as a curious eighteen year old on his first trip alone in India, these with particular groups of Sikhs. Two of which are the Nihang and Namdhari,” he shares, further adding, “Technique wise, I took a particular interest in the oil paintings of the Renaissance period and later, came back to looking at the miniature paintings of India and in some way following the lineage of the Punjab Hills School.”

“I felt very free as I produced this painting in my first studio in Hackney, London.” On the topic of ragas, Jatinder is also a well-known musician. In the history of Sikhism, Vaisakhi has a prominent value as being the day of Khalsa Foundation by the 10th Sikh Guru, Guru Gobind Singh, when he baptised his first Five Beloved (Panj Pyare) and later got baptised from them. As the Punjabi community began to spread wide across countries, it became all the more important to promote and revive the Punjabi culture, art and folk. Canada-based Surrey

India Arts Club (SIAC) opened its doors around April 1975 with an idea of floating an institution that will promote and preserve Punjabi folk dances, culture and language across North America. Arts, and most importantly through bhangra, SIAC has taken the initiative to protect the culture. In recent years, SIAC was the first team in Canada to dance bhangra at a Vaisakhi event at Parliament Hill, Ottawa. Additionally, SIAC has performed in numerous Nagar Kirtans both in and outside Vancouver. The alumni of SIAC hold important positions in the society – Punjabi singer Sarbjit Cheema; Kulwinder Sanghera, president of South Asian Broadcasting (93.1 Red FM); Sahib

Singh Thind, president of Prof. Mohan Singh Memorial Foundation (Mela Gadri Babian Da); Punjabi singer Gary Hothi; Tejinder Singh, director of Akash Broadcasting (91.5 FM). Since its existence, SIAC has always stepped in to bring up the talents and promote the culture at numerous areas of opportunities. Members of the organization understand that “change is law of nature.” Culture is not a snapshot in time and should never be looked upon as a static picture. Culture is something that is directly related with people. Whenever there is a wave of change among masses, there is a direct impact on culture. Traditions change over time. What matters at Surrey India Arts Club is not the change itself but seeing that the change is for the good and positive growth of community and our traditions. Dedicatedly working hard, every member at SIAC tries to ensure that with change, people do not forget or loose the best part of their excellent traditions – especially in the field of folk dances of Punjab namely bhangra, gidha, malwai giddha, jhumar and dhamal. A Symbol of Unity, Diversity & Acceptance By Jaskirat Sahni Think of Vaisakhi as not just a celebration, but a commitment to displaying culture and religion in a way that is inclusive, accepting and representative of the diversity that makes Canada so special.

nown to be one of the most attended public events in Surrey and Vancouver, the Vaisakhi Nagar Kirtan is a celebration of the birth of Khalsa, or the Sikh community. It is also commonly known as the Vaisakhi Parade, as a large assembly of religious floats are organized to travel on a route around the city. This all-day event includes religious hymns be-

ing sung on nearly every float, martial arts performances, celebration booths and stages, and abundant food being served for free in pop-up tents throughout the route. Over the years, this event has attracted people of all cultures and grown to a record-breaking attendance of nearly 400,000 people. The Vaisakhi celebration is held on a different Saturday for Vancouver than it is for Surrey, and both days many city streets are blocked off so that the public can walk alongside the floats, and have space to watch the parade go by. Many members of the South Asian

community dedicate their day to either serving the public by having a food stall of their own, volunteering their time to traffic control and cleanup, or ensuring the event is a safe place for everyone. A lot of planning and organization goes into the event, and is

‘parade’ where all religious floats pass through the city. In our excitement, it is easy to want to contribute in our own ways, but as a community we need to take a step back to truly appreciate the rich tradition and historic value by giving it its own

significance. As a multicultural nation, I feel that the greatest way to appreciate our diversity is to learn about the importance these culturally specific events hold for their respective communities. If we give importance and respect to their uniqueness, we will be able to understand better the way these traditions create meaning and foster unity among others. This year, I would like to encourage you all to take a moment to think of Vaisakhi as not just a celebration, but a commitment to displaying culture and religion in a way that is inclusive, accepting and representative of the diversity that makes Canada so special.

Sikh Gurus

T

he word ‘Guru’ in Sanskrit means teacher, religious person or saint. However, in Sikhism, ‘Guru’ refers to the descent of divine guidance to humankind provided by the ten enlightened masters. These ten Sikh Gurus founded the religion, starting in 1469 with Guru Nanak and ending with Guru Gobind Singh in 1708. After that, it refers to the Sikh Holy Scriptures as Guru Granth Sahib. The Gurus are widely regarded as the embodiment of one guiding light which passed from one Guru to the next, and which now resides in the Holy Scriptures. The order of the ten enlightened Gurus is as follows: Guru Nanak Dev (1469 to 1539) Founder of Sikh faith; apostle of peace, unity and true infinite; possessed divinity and religious authority; first Guru of modern thinkers in India; created Langar, free kitchen, for all people; teachings are in the Guru Granth Sahib; his philosophies and teachings were enlightened for his time, he criticized the social, political and religious injustices; advocated for equality between men and women; instructed disciples to face and tackle oppression, he knew this couldn’t be accomplished in his lifetime, so he appointed the practice of successors to lead Sikhs in their spiritual mission

Guru Angad Dev (1504 to 1582) Compiled the biography of Guru Nanak Dev; introduced Gurmukhi script, medium of writing the Punjabi language; opened schools to educate children; started Mall Akhara, physical and spiritual exercises

Guru Amar Das (1479 to 1574) Social reformer; removed caste, colour distinction and stigma of untouchables; strengthened Langar on basis of equality; introduced Anand Karaj marriage ceremony; abolished Sati and custom of Paradah

Guru Ram Das (1534 to 1581) Organized the structure of Sikh society; contributed 688 shabads to Granth; planner/creator of Ramdaspur (Amritsar) and designed the Harmandir Sahib (Golden Temple); founder of sacred Sarovar; author of Lavaa, the hymns of marriage rites

Guru Arjan Dev (1563 to 1606) Completed construction of Amritsar, founded Taran Taran and Kartarpur; collected works of first four Gurus, dictated works into verses for Adi Granth compilation, the only script that still exists in the form first published, a hand-written manuscript; organized Masand ‘missionary’ system

Guru Har Rai (1630 to 1661) Known for his compassion of life and living things – instead of killing animals, placed them in his zoo; continued military traditions started by grandfather Guru Har Gobind, maintained cavalry of 2,200 soldiers; established ayurvedic hospital and research center at Kiratpur Sahib

Guru Har Krishan (1656 to 1664) Guru Har Rai named five-year-old Har Krishan to succeed him as the next Guru, rather than his elder son Ram Rai, who was in favour with Aurangzeb and the Mughal Empire; helped heal the sick and in doing so, contracted smallpox and passed away at the age of seven

Guru Tegh Bahadur (1621 to 1675) Youngest son of Guru Har Gobind; created city of Chakk Nanaki, which later became Anandpur Sahib; contributed hymns to Guru Granth Sahib, including Saloks (Mahal 9); responsible for saving Kashmiri Pandits from Mughal persecution; Aurangzeb issued order for Guru’s arrest, was held for three months and tortured until he would accept Islam; he refused and was martyred at Chandni Chowk

Guru Gobind Singh (1666 to 1708) Succeeded father Guru Tegh Bahadur at age nine; was a warrior, poet and philosopher; created the Khalsa Panth in 1699 – the Panj Pyare were the first baptised Sikhs; declared the Guru Granth Sahib as his successor, and living Guru for Sikhs; his writings and poems were compiled in volume called Dasam Granth; recited the line “Waheguru ji ka Khalsa, Waheguru ji Ki Fateh,” which is an important religious verse included in the daily prayer of Sikhs

The Sikhs living in Canada have now created the largest Vaisakhi parade outside of India. This is of immense significance as it shows the unity, peaceful harmony and love all the Sikh people have come to live by. “Vaisakhi is a festival of harvest which has now come to mean much more than just that. It is a time to rejoice the accomplishments of the Sikh religion. In line with this festival the Sikhs living in Canada have now created the largest Vaisakhi parade outside of India.
