WHITE HOT Well thus far the summer of 2015 is turning out to be a long, hot and sunny one and long may it reign I say! However, as I sit here with my fingers crossed for the glorious sunshine to continue, I can’t help but feel a bit sticky (not such a good look). Luckily for us though a steadfast summer classic and a hugely appreciated trend for this summer is the colour WHITE. Phew. In particular on the runways earlier this year we saw the trend of all white. Now I totally agree that the thought of color blocking white can be a bit daunting, but fear not, you really don’t have to look like a TLC throw back trying to pull off the look. If you’re reading this wearing any other color, then be prepared to go get changed as I give you the low down on how to wear white for any occasion.

HOT DESK There has to be nothing worse for me than being sat in the workplace feeling hot an bothered. Work is bad enough when you have the client on the phone, a report to write and your boss looming over you but for some reason I tend to make things worse during the summer by wearing completely inappropriate clothes. Too many times have I found my work friends and myself explaining that, “I’m wearing my tights because it looked cold this morning”. Obviously we still need to look smart at work, so best way to introduce white to the workplace is in the form of a utilitarian look. Think of a breezy chiffon shirt tucked in to a pair of elegant cigarette 6 | WE ARE HERE & NOW

trousers, or basic tee worn under a sharp pair of white dungarees. Remember there are lots of different shades of white so don’t be afraid to mix it up a little bit, but keep it sharp, smart and to the point. Just make sure you don’t spill your morning coffee running for the train.

WHITE WEDDING Ok, so it’s frowned upon to wear white to a wedding if your not the bride, but why? Really? I’m getting married myself in a few weeks and really couldn’t care less if any of my guests wear white. I’ve also worn white myself as a guest in the past and nobody batted an eye lid (or at least I think). Seriously though, there are so many timeless white pieces out there that it would be a shame to miss out on having gorgeous looking guests for what is an out of date tradition. A particular favorite look I’ve seen across a few shop windows in the high street is a full A line skirt teamed with a cropped vest. Coast have really pulled it out of the bag with a huge (and I mean enormous) skirt which I’d pair with a sequined crop vest. There are also so many luxurious textures out there to be had that it would be a crime not to throw some into the mix. Whether it be beautiful victoriana lace or shimmering sequins - don’t be afraid to make a textural statement!

SUMMER SLACKS I’m still not over the oversized look and how better to spend the the hot summer days than wearing something

loose and breathable. Whether it be an oversized dress, boyfriend jeans or even a jumper (for those colder evening), I really don’t think there is any easier look that’s more comfortable and flattering for every figure. The best thing about the look is that it can be dressed up or down so is suitable for nearly every occasion. Zara have always been reliable for giving us gorgeous silky oversize tunic dresses and are a go to for me when I’m looking for something classy but a little looser fitting. On the flip side (and I’m letting you into a secret here) my favorite place to go for something oversize and casual is Topman. Blokes skater style tees are cut slightly longer so make perfect dresses for us girls - get down there or nab your nearest and dearests! So as this gorgeous summer continues to blaze, rest assured you can keep cool whilst still looking white hot. If your wardrobe needs an injection of white then there is no better time to invest as the high street have already begun selling off all their summer lines. There really are no excuses. H & N “What inspired you to start a fashion collection when you are not a designer?”

H & N “How can women be inspired to get back shopping for fashion?”

Shirley “I love clothes, especially expensive, well made designer brands like Chanel but once I lost all my cash I had no choice but to shop on the High Street and to be honest I found it so hard to find anything to fit me and I am only a size 14. I got so frustrated and depressed I was eventually forced to try charity shops, especially in affluent areas.”

Shirley. “Shopping is fun. Women of every age love to dress up but many have difficulty finding things to fit plus styling is hard without a stylist on hand, so a simple black staple collection like Venus Cow gives a block colour canvas to be able to add to with accessories, and colour without making mistakes. I love clothes that cover the tops of my arms, not the best bit these days and staples

H & N “How did you go about doing this with no experience in fashion manufacturing?” Shirley. “I set out to find a local factory in my home town Leicester who work with fashion brands and got really lucky to come across a small family run business who got excited about my vision to create a perfect, made in England black legging. It was not long before the pattern was cut and they had introduced me to a fabric genius based in Nottingham who I contacted and got on board because of their own passion to make it British.” H & N “What drives you to keep going?” Shirley. “I am a life coach and I give free coaching to the homeless and the addicted so in order to fund this important work I needed to make money. By combining my love of fashion and wanting to save the world, I am standing out from the big fashion brands by offering my customer affordable, comfy, well fitting, luxury clothes for real bodies, small through to plus size, all shapes and all sizes.” H & N “Where do you think the fashion business has gone wrong these days?” Shirley. “I hate to see skinny mannequins for a start. Lets face it; how many thin women are there out there right now? So brands in my opinion must cater to all women and we must move away from air brushing and cheap disposable fashion that ends up in landfill. I believe all fashion lovers want to look amazing, feel confident and wear clothes that make them look unique, not like sheep so trends are not the answer, quality fabrics are the key.”

Recently there has been a number of much publicised research reports highlighting the importance of being active and the benefits of having a healthy and balanced diet. Therefore, at Glow we decided to do our own research and asked over 1000 of our members to complete a short survey for us, with some interesting results.

THE WOODLAND SPA, THE BEST DAY SPA IN THE UK? When you think of luxury destinations, Burnley in Lancashire might not immediately spring to mind, but The Woodland Spa, based in 100-acres of woodland on the edge of the town, has been winning award after award; UK Day Spa of the Year 2014, Best Spa in the North 2014/15, Leisure & Tourism Business of the Year 2015, Global Spa of the Year 2015 and Luxury Emerging Spa 2015. I was invited to review the spa and it couldn’t have come at a better time, I was running on empty and needed some peace and quiet and pampering! My expectations were very high. It was very easy to find and I loved the fact that you drive down a long sweeping drive, making it very secluded. There was lots of parking and I immediately noticed more than one building, this was also a private health club and there seemed to be lots of activities going on. Initially I was a little confused as to which building to go to, and typically went into the wrong one(!), so quickly left and went to the correct one. On entering, again I was confused as I was in the gym, however I was immediately acknowledged by a member of the reception team and they offered to take me through to the spa. On a first visit the lack of direction could be a little off putting, but once in the spa I was met by a lovely tranquil atmosphere, completely different to the bustling energetic gym I had walked into. I was greeted and checked in, then shown to a lovely comfy area where I was served complimentary coffee and pastries. I was very early so the spa was pretty quiet and this gave me the opportunity to start to unwind and take in the facilities. It was a beautiful day and I had my eye on one of the sun loungers around the outside infinity pool; my treatment was after lunch so it gave me chance to look around and really relax for a while. After my arrival refreshments, I was taken into the changing area, assigned a locker and taken on a tour of the facilities. We started with the Thermal Experience which comprised of a number of heat and ice experiences through the sauna, saunarium, steam, salt steam, ice fountain, experience showers and Rasul, the thermal mud chamber suite. Then there was the Hydrotherapy Pool with its powerful massage jets, the Serenity Pool in a low 14 | WE ARE HERE & NOW

lit relaxation room and the outdoor Infinity Pool and outdoor hot tubs. The facilities are beautiful but to be honest I just wanted to jump on a sunbed, read a book and do nothing but chill and that’s exactly what I did. I noticed quite a few groups of friends arriving, however there were also people on their own who presumably like me, just wanted to escape and enjoy some ‘me time’. Suddenly I had a tummy rumble and realised it was time for lunch and on the package I was reviewing lunch was also included; three courses from an extensive menu plus a beverage of my choosing. Now this was my first true experience of their excellence, the menu offered lots of choice and I chose a cup of homemade leek and asparagus soup, poached salmon with dill mayo on freshly baked granary bread and then apple sorbet and fresh berries, plus glass of Chardonnay. Absolutely gorgeous! I had chance to do a little bit more relaxing before my treatment and took full advantage. The treatment I was reviewing was the Neom Happiness Treatment which lasted one hour and fifteen minutes. My skin was lightly buffed from head to toe using Neom Body Scrub, this is then showered off and is followed by the therapist applying purposeful techniques of shiatsu, cranio, Thai massage and trigger point touch to the back, shoulder, face and scalp working to decrease stress levels and release endorphins, leaving you feeling relaxed and happier. It was a blissful hour and a quarter, my transformation was well and truly underway. I stayed for a couple more hours just chilling, in fact after my treatment I was shown to a relaxation lounge where I slept for an hour! All too soon it was time to leave, however I felt so much more equipped to hit tomorrow’s deadlines head on. It had been a fabulous experience and one that I will be repeating…often. Its beauty was particularly appreciated by artists who have painted the most beautiful motifs here and exhibited them on Grisia, the street of artists. WHAT TO VISIT (If you fancy a bit of sight seeing) ISLAND - PENINSULA Rovinj’s life started on what used to be the island of Mons Albanus. The first archeological traces of life date back to the Bronze Age, and the old city started developing in the 3rd century. At the beginning of the 18th century, the city started expanding outside the city walls to the mainland. The channel between the island and the mainland was filled with earth in 1763. And so, the old part of the city found itself on a peninsula. The old city bears witness to the times gone by and the diligence of local masters. The limited space conditioned the construction of narrow houses, narrow streets and small squares. The characteristically built chimneys are a special feature of the old city as well. Thanks to the above-mentioned special features, the old city was proclaimed a monument of culture in 1963.


CHURCH OF ST. EUPHEMIA This Venetian Baroque building and the largest monument in the city was restored between 1725 and 1736. At the site where this impressive church stands today, the Chapel of St. George (Sv. Juraj) had been located until the 10th century. St. George remained the co-patron of the parish. His statue decorates the main altar of the parish church. When in 800 the sarcophagus containing the body of the Christian martyr Euphemia was brought into the city, the citizens of the surrounding settlements came to visit the tomb of St. Euphemia. The construction of the bell tower started on December 3, 1651 when the founding stone was placed. It was constructed according to the architectural design by Milanese architect Alessandro Monopola. It should have been just like the one of the Church of St. Mark in Venice. The construction lasted 26 years. The large copper statue of St. Euphemia, by the Vallani brothers from Maniago, was set up at the top of the bell tower in 1758 where a wooden statue destroyed by thunder in 1756 used to be. The statue was fixed so that it turns on its bearings around its axis by the strength of wind. It was restored thoroughly in 1834 after being severely damaged by thunder. NATIVE MUSEUM It is located in a Baroque palace of the counts of Califfi from the 17th/18th century. It was established in 1954 at the initiative of Rovinj fine artists. Their idea was to establish a place where cultural wealth could be stored, as well as a place where numerous exhibition activities could be held. The museum operates in the public interest where more valuable items from the rich museum collection are permanently exhibited: archaeological exhibition, maritime section, collection of works by old masters, contemporary Croatian art and Alexander Kircher’s room. During its 50-year-long existence, rich and valuable collections were created: collection of contemporary art, collection of works by old masters, collection of archaeological findings, etnological items, books, documents and photographs presenting the activities of the Pino Budicin Partisan Battalion, and other. BATANA HOUSE ECO MUSEUM The House of Batana is an interpretation and documentary center of the eco-museum opened to the public in 2004. For centuries, the present-day House of Batana served as

home to families of fishermen, sailors and craftsmen. The permanent exhibition, called Muòstra in the Rovinj dialect, stretches on as little as 100 sq meters encompassing three gallery spaces and an entrance desk with a souvenir shop. The exhibition is multimedial: the short and conscise accompanying texts are complemented by various visual material (museum objects, drawings, archival and contemporary photographs, films, slide projections and interactive exhibits). A unique example of innovative use of new technologies (digital camera and computer) for the purpose of documenting the traditional art of shipbuilding, resulting in a compressed 15 minute slide show presenting, as part of the permanent exhibition, the two month process of building the batana called Oûn rìgno (Kingdom). Apart from a thousand indigenous and naturalized plant species, such as the holm oak and Alpine pine communities, many other species have been brought to this centuriesold shade – cedar trees, stone pine trees and ten types of cypress trees that contribute to the Mediterranean atmosphere of the forest park. BACK TO SCHOOL School open days: choosing the right school for your child There is no substitute for actually visiting an open day when choosing the right school for your child, head teachers agree. For all the league tables, glossy brochures and Ofsted reports available to parents when choosing a school for their children, one thing teachers, parents and experts all agree on is that you can't beat an old-fashioned stroll around the schoolyard. League tables are all part of the picture, but when you visit the school you can talk to teachers, pupils, parents. You can read a lot about a place, but the only way to capture the culture of the place is to visit. You have had word-of-mouth recommendations; you have consulted the schools’ websites; now it’s time to go to the open days. Among the crowds, there will generally be three types of visitor: the shy and uncertain who hope to creep around incognito; the simply curious, like those who go to see houses without any thought of buying; and the very intent, armed with a mass of prepared questions. Take your son or daughter along and encourage them to join you in asking questions, particularly of the pupils. Such questions might concern their experience of the school and what they like best and least about it. Schools often arrange for pupils of all ages to be around, generally demonstrating an activity. At some schools pupil volunteers escort individual families. If so you should take advantage, though you may also want to look around on your own. Don’t hesitate to ask questions of the teachers, either: they will be expecting you to. “Why did you choose to teach here?” often produces interesting replies. Look for enthusiasm for their subject and evidence that they value and respect their pupils, whether academic stars or not.

Try to sense the buildings and the atmosphere they convey. This sort of thing matters because it tells you the pride the school takes in itself and what it’s like to work in. Look to see how the classrooms are arranged, whether the desks are in rows or in a half-circle so that nobody is in the back row. How big or small are the classes? How much is pupils’ work valued by its display on the walls? Go into the library, look at the books — and examine the register to see if anyone reads them. Note the facilities: computers, overhead projectors, theatres, swimming pools, labs and equipment. If you are visiting an independent school, remember the cost of the facilities is likely to be reflected in the fees. So what should parents be looking for in the course of these visits? September and October are traditionally the busiest months for school open days, when parents have the chance to scrutinise everything from the standards of the bathroom facilities to the number of extra-curricular events pinned up on the school noticeboards. Detailed preparation and advance knowledge of the school, once the hallmark of the stereotypical pushy middle-class parent, are also now essential tools. • Don’t base your opinion of the school on the geeky, sullen or charming pupil who shows you round. • Don’t ask the children what they like or dislike about their school in front of teachers or other staff – they will lie. • Don’t focus on last year’s exam results – they could be a blip. Always ask to see the past three years’ exam results and the past three years’ lists of leavers’ destinations. • Don’t let an independent school persuade you to pay a registration fee in order to attend its open day (some will try). • Don’t pass up lunch, tea ... or orange squash and biscuits in the canteen – enjoy the refreshment, listen to the sixth form chamber music ensemble and, above all, take advantage of the opportunity to meet other prospective parents. This is one of the most important decisions you can make for your child, fail to prepare…prepare to fail!

But how many of us go through the long procedure of designing, printing, uploading and paying for our new, amazing brand and then, that’s it... We stop right there. We occasionally hand out business cards to friends and family, leaving them in cafes, hotels – But at the end of it all, how do we make that first client? And how much of our effort has turned into continued revenue? The main reason we want to develop a visual brand to collect new clients and show-off our amazing talents? Right... Here are a few things that are often misunderstood about ‘branding’. A brand is more than just an image and is important for these reasons: 1.Authenticity 2.Recognition 3.Progression We don’t need to go far to see a personal branding technique that works wonderfully and has developed fast – Turning on the TV, Radio or open arespectable newspaper. Celebrities are the gods of personal branding; Richard Branson, Oprah Winfrey, David Hockney! To prove a point, they don’t spend a lot of time in cafes handing out business cards. Our brand is our individuality! And we are our best representatives... Some may wonder how relevant a brand is to a creative business. It may be easier for some to think of a brand as ‘Attraction Marketing’. An effective brand will play a major role with attracting clients and showing them how much we care about who we are and what we do. The more footwork we put in, the more reward we can receive. This lesson goes hand in hand with a lot of work related qualities. Artists have the ability to take work, branding and marketing in their stride due to having an admirable care-free existence. But to make art a career, structure needs to be created to balance the build-and-drive of a brand alongside allowing the time-and-space to be

the care-free creative that comes so naturally. ith news of couples breaking up coming almost every day, our faith in marriage, soul mates, and everlasting love can get a bit shaky at times. Cheating, the pressures of work, and "irreconcilable differences" seem to be the main culprits that are bursting the bubble that is happily-ever-after. Celebrity relationships seem to suffer more than most and just recently Coldplay frontman Chris Martin and actress Gwyneth Paltrow called it quits after 11 years of marriage. Childhood sweethearts Paula Patton and singer Robin Thicke split in February after nearly nine years of marriage, and around a decade of dating. That's an eternity in Hollywood years.But still, even with the media glare, many celebrities are making it work. Dozens of celebrity marriages have lasted decades or more and are still going strong. Here's what these couples are doing to beat the odds in the land of imminent divorce. 1. Always remind yourself how lucky you are to have your spouse. Tom Hanks and Rita Wilson recently celebrated their 25th wedding anniversary and are undeniably Hollywood's most famous long-term couple. “I got lucky," Hanks said last year. "No secrets, it’s about winning the lottery. She could’ve done better, but man oh man, I’m no dope. I’m sticking with her.” In fact, the only problem in their marriage is a pretty good one, according to Hanks. "The only thing we ever argue about is who loves each other more!" 2. Communicate, communicate, communicate. With a couple of wins under her belt, Meryl Streep has somehow avoided the "Oscar curse" that has befallen so many other winners in their love lives. Streep has been married over 35 years to sculptor Don Gummer. "You have to talk about all the issues that arise, even the smallest things," Streep said. "You have to listen to your partner’s problems, suggestions and advice, and accept that you’re not always right. Conversation is the key to a successful marriage." 3. Don't stop getting to know one another. Kyra Sedgwick and Kevin Bacon are a Hollywood anomaly after celebrating 25 years of marriage. It's a long time, but they've made sure not to let complacency set in. "We've been married for so long and there are no secrets. But I never in a million years thought there would be sides to Kevin that I'm still learning, I'm constantly amazed 36 | WE ARE HERE & NOW

that we are still surprised and interested in each other. When I look back at our first four years... by that time we'd had our second kid, and I look back at those pictures and I think, Gosh, I didn't know him at all! They're probably one of Hollywood's happiest un-married couples, but Kurt Russell and Goldie Hawn's relationship has stood the test of time, after 30 years together. Hawn is known to be a free-spirit and their laid back approach seems to be the recipe for success."Relationships are always challenging because you're living with someone and two people are very different but it really is about, 'What are your core values? What are the things that matter to you?'" Hawn says, ''Kurt's quite different in many ways to what I am, and vice versa, but we want the same things out of life and so it's been an incredible ride with him." 5. Be passionate about each other and about what you do. Relationships can be consuming and overwhelming, and you sometimes lose sight of who you were and what you wanted before you met your significant other. But it's that sense of self and independence that can make your marriage stronger. Just ask Ali Hewson, who's married to U2 frontman Bono. Rather than dropping everything to be a rocker's wife, Hewson has been involved with various causes and even launched her own fashion line Edun, in 2005. "Our marriage has worked because we like each other, we talk to each other, and we are passionate about what we do. We allow each other to pursue our goals, I wouldn't want to be married to someone who wasn't happy with what they were doing in life, and Bono wouldn't either. I have learned a lot about what it means to be married, how great it can be if you persevere. We're very close." 6. Learn from each other. It can't be easy being married to the most famous and powerful man in the world. But while President Barack Obama is busy leading the country, he and his wife both lead by example in their marriage. "'Patience and calm I’m borrowing. Or trying to mirror," Michelle said in an interview, “I’ve learned that from my husband, that sort of, you know, ability to not get too high or too low with changes and bumps in the road . . . to do more breathing in and just going with it. I’m learning that every day... So I’ve learned to let go and enjoy it and take it in and not take things too personally.” Barack added, "And what Michelle has done is to remind me every day of the virtues of order... Being on time. Hanging up your clothes. Being intentional about planning time with your kids... I think what we’ve learned from each other is that sense of..." "Balance," Michelle said.

It is a privilege to work with them and assist them in achieving solutions together.” So, what is it that makes mediation different to going to court to resolving family disputes? “The biggest difference I would say is that couples who decide to mediate retain control of the separation process. It is they who decide what they want to talk about in mediation, enabling them to decide what arrangements are made for the children, the family home and their finances. Mediation assists them to achieve an outcome that meets the needs of the family best and takes into account the unique nature of each family.” Can you force your spouse or ex-partner to attend mediation? “No. Mediation is a voluntary process. This means that both parties must be willing to attend and participate in mediation in order for it to work. I can only help couples when both parties are willing to sit down and talk to each other about their disagreements and are willing to work together.”

Is mediation confidential? “Yes. With a few exceptions everything that is discussed in mediation is confidential. This means that participants can put forward to each other suggestions about what happens to the children or offers regarding financial matters without fear that such proposals will be used against them at a later date.” Do you find yourself taking sides when mediating? “No. As a mediator I am impartial. This means I will neither judge nor try and influence either party. It is my role to listen to what is being said and identify common ground between the couple and help them explore that common ground to see if a solution can be found there.” Is family mediation cheaper than going to court? “Usually the mediation process is significantly cheaper than going to court because the couple are sharing the cost of a mediator between them rather than individually paying for a solicitor and barrister and all the associated costs that can arise when going to court. CHEF UNCOVERED With Roger Hickman

L

eeds-born chef Roger Hickman is flying the Yorkshire flag in Norfolk, where his eponymous restaurant, opened in 2010 has rapidly become a foodie fixture, drawing enthusiastic diners from across the country. In the five years since opening, he has received its fair share of plaudits, including three AA Rosettes (the only restaurant in Norwich to hold this award), The Good Food Guide’s Best Restaurant in East Anglia, and the Eastern Daily Press’s Food Award for Best Restaurant, two years on the trot. Roger originally only took a catering course because he was too young to become a fireman, which was his childhood ambition. Fortunately, he discovered a natural talent in the kitchen – as well as a passion for fine dining. Roger is no stranger to the Norfolk food scene. He was head chef at the renowned Adlards, when it held a Michelin star; he also had a spell as head chef at the Victoria Hotel at Holkham in north Norfolk. He has also worked in London, including a spell with top chef Tom Aikens. Roger describes his style as ‘modern British, with a twist’, and his menus always demonstrate an accent on seasonal produce. He describes himself as a perfectionist, with French Laundry supremo Thomas Keller the chef he most admires. Married to Penny, who can be found front of house in the restaurant several evenings a week, and with two sons, Luke and Dylan, life is certainly hectic for Roger, not

least because he is at the stoves pretty much every session the restaurant is open. Although he has made Norfolk his home, part of Roger will always be in Leeds. He remains an enthusiastic Leeds Untied supporter, and enjoys returning to his home city to visit family and his old haunts. The Good Food Guide says of the restaurant: “There’s something about its comforting surrounds that attracts both the Norwich old guard and new-breed foodies. Clean-cut, clearly-defined flavours and incredible attention to detail are the hallmarks of Hickman’s spirited cooking, with high levels of painstaking skill.”

CRISPY HAM HOCK WITH PEA & MINT MOUSSE INGREDIENTS

METHOD

1 ham hock, soaked in water overnight 100g flour 2 eggs vegetable oil for frying 100g breadcrumbs 300g frozen peas About a dozen of mint leaves, finely chopped 150ml double cream 2 leaves gelatin A handful of small wild mushrooms 400ml water 100ml white wine vinegar 100ml olive oil A pinch of sugar 3 sprigs thyme 100g pea shoots 3 tsp olive oil and 1 tsp balsamic Vinegar for dressing salad Salt and pepper

1. Soak the ham hock overnight to reduce its saltiness, then strain the water off and place the hock in a large pan with enough fresh water to cover it completely. Bring the water to the boil, and then simmer until the hock is soft, which should take about three hours, depending on its size.

and fold into the jellied mousse. Set in fridge for 2-3 hours. 4. Put the water, wine vinegar, olive oil, sugar and a pinch of salt into a pan and bring to the boil. Remove from the heat and add the mushrooms, and allow to cool – this will give you gently pickled mushrooms to dress the dish.

2. Leave the ham to cool, then break it into small pieces ready to pané: this means coating them in breadcrumbs. Coat each piece of ham in the flour, then dip into the beaten eggs, and finally roll in the breadcrumbs to coat evenly.

5. Heat the oil in a pan – deep enough to fry the braded ham pieces, but no more than a third up the side of the pan. Once the oil is at 200°C, fry the ham pieces in batches for about a minute until golden, draining on kitchen paper.

3. For the pea mousse, bring a pan of water to the boil. Add 250g of the peas and bring back to boil. Strain, and blend well with the mint and a little water to make a soup. Add 2 leaves of gelatine, season to taste then leave in fridge to cool and set. Once set, whisk the cream to soft peaks

6. Boil the remaining peas for a minute or two, then drain and refresh in cold water. Dress them with pickled mushrooms and place on the plate. Spoon the pea mousse onto the plate, then add the deepfried ham hock pieces and garnish with dressed pea shoots.

It's early evening and time to relax with a glass of wine and enjoy some native cuisine - tapas, the country's beloved collection of small plates and delicious bits that accompany wine and great laughs all night long. Tapas bars are the quintessential place to sample Spain's tapas fare, which includes stuffed piquillo peppers, roasted almonds, salt cod, olives, Serrano ham, Manchego cheese and slices of salty, rich chorizo. The assertive salty flavors of most tapas make them ideal paired with almost any wine, beer, sherry, or cider for sipping. Go into any bar and observe the clientele, whether standing at the bar or at small shelf-like bars along the walls, each is likely to have a small plate with a few bites of something to eat - a “tapa”. Tapa? Yes it comes from the Spanish verb "tapar", which means “to cover”. It’s said that tapas were invented a hundred years ago between Jerez and Sevilla to “keep the dust off a glass of wine” - a rather humorous explanation. Need a bit of trivia for your next party? Ask folks what the word "tapas" really means. It's actually derived from the word "tapar", which means "to cover." Why? Because tapas were originally small pieces of bread topped with a slice of cured ham that bartenders used to cover your glass of wine, reportedly to keep the swarms of fruit flies away. As clever bartenders discovered that salty ham spurred beverage sales, the delicious tradition of tapas was born. Today, the concept has evolved to include little dishes of hot, cold and marinated foods. But whatever the origin of the tapa, it is a tradition that is so well tuned to the Andalusian art of living that over the years it has developed into a way of eating all on its own and has spread to most

of Spain. And yet tapas are more related to custom and practise than to table arts. Have you noticed how people drink in Spain, even today? Usually drink is accompanied by food. Following any drink order, it’s not uncommon for a waiter to ask, "Le pongo algo para picar?” (Would you like anything to nibble?). In Andalucia it's fun to move from bar to bar sampling Tapas On the other hand, it is very rare to see anybody drinking on his or her own. Drinking while enjoying small portions of food, is a deeply social habit and “el tapeo” could be defined as a way of meeting friends in different places to have drinks and conversation, a very Spanish way of relating to people. But tapear is not just that, it also includes pasear - to stroll. A very important part of the ritual consists in moving from one place to another looking for a particular atmosphere or speciality. The true aficionados follow routes they have specifically designed according to the time of the year, the order of the dishes or the tastes of the friends who accompany them. But what are tapas made of? Well, anything which is easy to eat, so that the natural flow of conversation is not interrupted. Any dish can become a tapa and the recipes follow traditional Spanish cooking. The most frequent among hot tapas are snails in a hot sauce, tripe, prawns fried with garlic, meat balls or cod in a tomato sauce. Any kind of fired fish is a very popular delicacy. The choice among cold tapas is huge, ranging from pickled or stuffed olives, pickled fresh anchovies, all kinds of shellfish, Manchego cheese, salt and wind-cured ham, all types of paprika and blood-sausages, fish and vegetables salads and, of course, the famous thick potato omelette - Spanish tortilla. So now it is up to you to try. Start by selecting the right group of friends. Four is a good number. Meet in a bar best known to everyone, start by asking for as many different tapas as there are people in the group and then share what appears. Then move on to another place. Order one dish in each bar or “media ración” with various forks if several want to try the same thing. And above all stick to the same drink. Eating tapas with a glass of wine is surely the ultimate food lover's ritual for unwinding at the end of the day.

This stylish yet unpretentious canal-side restaurant offers a relaxed setting, perfect for any occasion. Shipley is teaming with restaurants and they are all very much of a muchness, however there is nothing remotely similar about The Waterside Restaurant & Bar. There’s so much that is special and unique about The Waterside; this stylish yet unpretentious canal-side restaurant offers a relaxed setting for a get together with friends or work colleagues or an intimate dinner with that special someone. We dined one lovely sunny summer evening and every table outside on the canal side al fresco dining area had been taken, and rightly so it was idyllic. However there is a lovely large leather sofa out there too where we sat for a while looking through the impressive menu with a tall, cool Langton’s Gin and Tonic, as recommended by James Potter the restaurant manager. His recommendation on this Lakeland gin was spot on and so we were happy to listen to his food recommendations too. We moved inside to a table next to the full glass doors leading to the al fresco dining area, we really liked this position as it kind of felt like we were still sat outside, yet when the temperature dropped outside we were warm and cosy. Inside The Waterside is small and intimate so quickly fills with diners and creates an atmosphere of a much larger establishment. The service is very friendly yet professional and James’ knowledge of the dishes on the menu, his wine selection and drinks menu are astounding. For my starter I chose Pan Seared King Scallops, served with peas, tarragon and smoky bacon (£7.95), which was absolutely lush, scallops can so easily be under or overcooked and if they are on the menu I always choose them to test the skill of the chef…these were perfect! Dave, my husband chose a delightful cream cheese starter (£6.95), which was an absolute picture on the plate and so light and tasty. For our mains Dave took James’ recommendation of Cannon of Spring Lamb, roast aubergine, baby spinach and rosemary jersey royals (£18.95). I decided to stay on

a fish theme with Pan Fried Sea Bream, sweetcorn risotto, chilli, and coriander and squid ink (£15.95). We tasted each other’s dishes (as you must), and we were torn to choose a favourite, it’s always a bonus when both dishes are a success! This really is fine dining at affordable prices. To accompany our meal James recommended a mid-range white and it suited both of our choices perfectly. And so to pudding… We were really quite full so took an extended break before deciding to share the Coconut Pannacotta with rum soaked raisins, this was definitely one of those ‘acquired taste’ desserts, very different and the only dish we were unsure about. However, a great reason to go back again…should we have chosen the Valrhona Dark Chocolate Torte with raspberry textures and popping candy, Cold Summer Peach Crumble with vanilla, prosecco, almond and Tonka, Summer Cherry Bakewell with white chocolate or Eton Tidy with blueberries, lemon and basil! There’s also a new menu since our visit and I would really like to try the Slow Braised Local Rabbit Rillette starter and the Roast Haunch of Venison main and Dave has his eye on one of the steaks from the Grill section. Or we might even go that bit earlier and try their Early Bird menu at 2 courses for £13.95, which is served Wednesday to Friday if ordered before 7pm. Decisions, decisions. Which will you choose? The Waterside is independently owned and run by executive head chef, James Downey together with head chef, Joe Crowe and restaurant manager, James Potter; they appear to have the ‘dream team’ in place. Latest news…hot footing on the success of The Waterside, James Downey has also taken on The Woolpack in Esholt village where they are quickly growing a suitable reputation for their home cooked grub and apparently their Sunday Lunch is amazing. summer tastes better at the new conservatory bar & kitchen Here you’ll find an eclectic mix of dishes to suit all tastes and appetites. It may have been kicking around for years but as the old saying goes, it's an oldy but goody! Now we have re discovered it, we'll be regulars for sure...

We were delighted to be invited to an evening at The New Conservatory Bar & Kitchen in Leeds recently to sample their new Summer Menu. If you have never been then you must! Located opposite The Leeds Club on Albion Place, this establishment has a long and distinguished history as one of Leeds oldest and favourite bars and as we found out, with good reason... We went on a Thursday which is ‘open mic night’, so we not only enjoyed great food and drink, we were also entertained by live bands throughout the evening. On to the food in a minute…those open mic bands were amazing, what a wealth of musical talent we have in the region. You can check a couple of them out at www.thenewconservatory-cafebar.co.uk/events. Ok on to the food! After a couple of pink prosecco’s we were shown to our table in the elevated restaurant area and ‘To Kick Things Off ’ we were given a starter plate each with a tasting portion of each new starter. We really liked this concept, very clever to give a tasting selection and our starters were Duck Spring Roll with hoi sin dip, Deep Fried Brie with beetroot chutney and Panko King Prawns with lime and chilli dressing. Salivating yet? Now good food has to be accompanied by a good wine, obviously. So we chose a bottle of Sereno Pinot Grigiot from Italy which went perfectly with our starters but would it match up to the main course selection? Of course it did. For ‘The Main Event’ we were each presented with a plate of Belly Pork with mash and jus (for a few minutes I died and went to heaven, this is one of my all-time favourites if it’s done well and this was done very well). The pork fell apart and the crackling was crisp and crunchy, just

perfect. There was also a Wild Mushroom Risotto with parmesan crisp and basil dressing and Cajun Chicken Skewer with garlic and herb dip. Risotto is not a dish we usually choose given a choice but this was lovely and definitely one I would consider on our next visit, in fact as the portions were only taster sampling size I found myself wanting more of this dish and tried unsuccessfully to steal my husband’s but he was having none of it! After the starters and mains we were ready for ‘Something Sweet’. Now those of you who consider the dessert section to be the highlight of any meal would have been delirious at the plates we were presented with; Salted Caramel Cheesecake with Chantilly cream, The New Conservatory Chocolate Box with berry compote and Eaton Mess Sundae with summer berries, Chantilly cream, meringue and vanilla ice cream. There was just one problem…in what order to eat them! Life does throw up unfair challenges from time to time. So, started with the Eton Mess Sundae and immediately thought I should have saved this one till last, it was scrummy…until I tasted the Chocolate Box…wow! This was the one I should have saved, it was melt in the mouth loveliness. No, no hang on; the Salted Caramel Cheesecake was unbelievable this trio of desserts should be a dish in itself, I don’t want to choose just one, I shouldn’t have to choose just one, and you have created a pudding monster! Take note The New Conservatory Bar & Kitchen, I might make a diva demand on my next visit. The New Conservatory is open from 12 noon until late every day and the kitchen serves food until 9pm Monday to Saturday and until 6pm on Sundays. The success story of My Thai continues. On the strength of their reputation for superb service and outstanding Thai food in their established Bradford restaurant, last year saw them open a street food Thai shack in Leeds city centre, very close to the arena in the up and coming Merrion Quarter. Roast & conch restaurant at hotel chocolat - exquisite A little piece of the Caribbean in the heart of Leeds, The Roast & Conch Restaurant at Hotel Chocolat is an ultra stylish venue with the character of a Caribbean plantation house, offering a completely unique dining experience in the city centre. There are not many places I visit and vow that I will definitely return, and definitely soon. There are so many places to choose from that I always try to book somewhere different each time I dine out, however if somebody asked me to eat regularly at one restaurant - it would be this one. Apart from it being a simply stunning place to be, my exacting standards of service were met and surpassed by a long, long way. So what about the food? Well I won't sugar coat it.... If you have read any of my previous reviews, you will know, I really don't like bad service, I'd rather stay at home, so my expectations are high when I dine out. I knew we were on to a winner with this place as soon as walked through the door. We were welcomed knowingly and shown to our table upstairs in the restaurant, I felt slightly excited as we ordered our drinks, especially as we guided so professionally (and with bags of enthusiasm) through the umpteen special rums they serve. I stuck with my white wine but others chose a wonderfully fragrant run called Old Grogg (smells like banana milk shake!) and cocktails. All were beautifully presented and were the perfect accompaniment for persuing the very unique menu. Yes! Most of the menu items contain Cacao, but alas no, the food doesn't all taste of chocolate - thank god, that would actually not do for me at all, I love chocolate, but it has it's place and it certainly isn't in my fish stew....So after much deliberation we managed to order, there were four of us dining which I was really pleased about as it gave me chance to check out more dishes than normal and kept my rubber necking at other diners food to a minimum! I chose the Smoked Haddock Nib Cake with Muligatawny Sauce & Cacao Chilli Oil, and I loved it! The flavours were so well matched and the presentation beautiful - I couldn't fault this starter. Others had Gin Cured Salmon, The Not So Scotch Egg (this starter was raved about with gusto so I will be trying it on my next visit) and Pot Fish, which was a tremendous portion and also went down a treat! By this time I was really enjoying myself as were my fellow diners, it was such a relaxed place to be, laid back vibes perfectly complimenting the wonderful service we had been enjoying. Also, from where we were sitting we could enjoy a perfect view of the kitchen, no stressing chefs on view here though, the easy going atmosphere seemed to encapsulate everybody in the whole restaurant and I love that! I don't want angry folk cooking for me, surely that is bad karma! 60 | WE ARE HERE & NOW

After a perfectly acceptable break our main courses arrived. I almost high fived myself as mine was set before me, girl chose good! Caribbean ‘fish run down’: market fish and seafood in a light curry stew, seasonal vegetables and succulent mussels! The story behind "Fish Run Down", well I love this bit - at the Boucan Hotel and Restaurant in St Lucia, all of the chefs have taken the very best bits from each of their family's recipes that have been handed down for generations and combined them to produce a wonderfully fragant and truly exquisite dish - for me, in Leeds! If you love to try new things and enjoy fish, this is for you and I wouldn't hesitate to recommend it. My husband had ordered the chopped rump steak burger with aged cheddar, cacao beer braised onions, potato chips, creole chutney and crispy smoked bacon, and unbelievably, he let me try it. Oh I can't even tell you how juicy and full of flavour this perfectly presented patty was! He was over the moon with his choice too and I cant blame him. There are hints of cacao in most of the dishes and I could certainly taste it here, however the chefs clearly know their stuff and nothing was overwhelmed, flavour combinations are the name of the game here and they are bang on. Our fellow diners ordered the steak and cacao beer steamed pudding and the 9 hour braised lamb shoulder, with cacao balsamic glaze. Both were beautifully presented and the relative silence that fell over our party whilst we devoured our mains spoke volumes. Desserts followed a slightly longer break as we really were quite full, I probably wouldn't have bothered as I don't really have much of a sweet tooth, but who on earth would go there without sampling the chocolate? Certainly not me. And as expected, they were sublime. The melt in your mouth lava pudding, passionfruit and rum bavarois and the official BAFTA dessert (salted caramel cremeux, 72% chocolate mousse, Brittany shortbread) were to absolutely die for, the latter being my choice. Another silent high five to me. I am perfecting the art of ordering well! The food, the venue, the ambience and the RUM are amazing. Oh - and the service, well Lana, you won't be facing the guillotine anytime soon..... My advice, just go. Simple as that. Reviewed by Joanne Brook-Smith, June 2015

ROSE

IT’S SUMMER TIME, THE TEMPERATURE STARTS TO SOAR, AND IN SHOPS RESTAURANTS AND BARS SALES OF ONE WINE IN PARTICULAR GO THROUGH THE ROOF. MANY PEOPLE WHO WOULDN’T ORDINARILY DRINK ROSE WINE WILL FEEL INSPIRED TO PICK UP A BOTTLE FOR PICNICS, BBQS OR PUB GARDEN QUAFFING. I HAVE CERTAINLY BEEN DRINKING A LOT MORE ROSE RECENTLY AND IT GOT ME THINKING, MANY WINE DRINKERS DON’T FEEL CONFIDENT ABOUT PICKING A ROSE; OFTEN THE PROBLEM IS NOT BEING SURE HOW SWEET THE WINE WILL BE, SOMETIMES IT’S SIMPLY THAT PEOPLE AREN’T AS FAMILIAR WITH THE BRANDS/ GRAPES/REGIONS WHICH ARE ASSOCIATED WITH MAKING PINK WINE. SO IF YOU ARE KEEN TO DABBLE IN A LITTLE ROSE DRINKING, HERE IS MY GUIDE AS TO WHAT TO PICK. SWEET, DRY OR FRUITY? Because rose when can be produced in a wide range of styles, people are often not sure whether their wine will be sweet or dry. A couple of distinctions for you- the sweetness of a wine is determined by how much sugar the winemaker elects to leave in the final wine. They do this by preventing all the sugar from the grape juice being converted in to alcohol during a process called fermentation. So, sweeter wines usually have lower levels of alcohol than dry wines (and this works for all wine, not just rose). It varies a little from region to region, but as a decent rule of thumb, you’ll probably find that anything under 11% abv is noticeably sweet, around 11%-11.5% is likely to be ‘off-dry’ whilst anything at 12% and above will be dry. Many rose wines are ‘technically’ dry, but taste strongly of fruity flavours. These dry but fruity wines are very popular in this country (an example of a white wine which would fit this description would be a New Zealand Sauvignon Blanc), so if this is a style you’re interested in you have to look at the country where the wine was made. Hotter countries like Argentina, Australia and Central Spain have hot summers which help to ripen grapes which will give you fruity, juicy soft flavours. Cooler parts of the world like France or England will give you fresher, sharper wines which aren’t as juicy and fruity. WITH FOOD OR WITHOUT? Those fruity roses are perfect for glugging in the garden before dinner; they don’t need food in order to bring out their flavours. The sharper style of rose can work really well with delicate food like seafood or simple grilled salmon or chicken. Slightly sweet styles can be really refreshing

with spicy food, helping to offset the heat from chilli; they can work really well with Asian food. HOW MUCH SHOULD I SPEND? There’s a real temptation to think of rose as somehow not very grownup, not drunk by serious wine connoisseurs, and therefore as a cheap wine. Make no mistake, for a lot of people who have previously only been drinkers of fruit cider or ‘alcopops’, cheaper slightly sweet rose can be a great introduction to wine. This isn’t a new trend, my own parents weren’t wine drinkers at all when I was growing up, but they were partial to a bottle of Mateus Rose at the weekend! The truth is rose wine is like any other in that if you’re prepared to spend a little more than bottom price you should find the wine gets more complex and intense in flavour. Spain is a great source of good value for money rose, made predominantly from the Garnacha (or Grenache) grapes which give you juicy strawberry-scented rose wines: expect to pay £8-£10, unless you go for something from the famous Rioja region which will command a higher price. If you want to experience something more ‘serious’ then Provence in the south of France is home to the world’s most sought after roses, including Miraval which is owned by Brad Pitt and Angelina Jolie! These are dry, light, crisp and delicately flavoured with fresh raspberry tones. These wines command premium prices, from £12£18. Look out for regions right next to Provence, like the Luberon, which can offer a similar style wine at a more reasonable price, or the wider geographical area, which will say Pays d’Oc IGP on the label, where there are some real bargains to be had. I'm pleased to say I wasn't disappointed! Sometimes even the most beautiful places can be a let down if the service or food is lacking but I'm happy to report that Gusto certainly isn't all fur coat and no knickers! There is certainly a lot of substance to compliment the style that oozes out of every pore of this beautiful place!

aturday afternoon in Leeds and I'm excited about my first 'culinary' visit to the sparkly new Gusto restaurant on Greek Street. I have visited before this occasion but only for drinks and I left knowing I definitely wanted a return visit.

There were five of us dining and we enjoyed a variety of the offerings from my own fillet steak, superbly cooked and served with tasty sides and a pepper sauce to die for, to the flattened steak also perfectly cooked, pasta dishes, olives and fresh foccaccia breads. We all devoured every morcel, and my courgette fries were literally fought over! I loved this restaurant, the service was immaculate, as I said, and will say again - with GUSTO, the place is beautiful. I am already planning my next visit as I know from past experience the pizzas are to die for. If you love Italian, you'll love Gusto.
