s we settle into a new year there’s lots to look forward to and lots of opportunities to grab with both hands. A new year is all about new beginnings, setting your goals and planning how to achieve them. If handbags and glad rags and all aspects of beauty are your inspiration, we have two great features on the winners of this year’s Fashion Fiesta competition; Darecca Stainforth, winner of the fashion designer section and Kiren Virdi, makeup artist winner. Each tell us about their career paths and inspirations, giving us an intriguing insight into their world. Next on the list no doubt is getting yourself match fit and ready for your holiday, especially after the excesses of the party season and possibly the way the bathroom scales groaned making reality kick in. Well there are so many ways to achieve better health and fitness nowadays and it’s all about choosing the right one for you and your lifestyle. his year’s Fashion Fiesta competition saw not only recognition for Best Designer but also Best Make Up Artist, a category which was won by the outstanding work of Kiren Virdi. Kiren trained at the Lubna Rafiq Academy in London, is multi-talented and specialises in hair, make up and henna art. Having been in the industry for five years, it’s something she really enjoys and is completely passionate about.

Kiren believes beauty gives people confidence and making people look and feel beautiful gives her a sense of joy and great job satisfaction, because the results are immediate. She tailors each look to every client’s individual needs and has a diverse portfolio showcasing different makeup styles, be it bold, glamorous, creative or natural, even special effects and body art which is becoming more and more popular.

“I’ve been passionate about art from a young age, and I believe makeup is an art form. One of the best things about makeup is that you can create a multitude of looks, using different products and media, to either enhance a person’s natural beauty or to make someone look totally different. Being a henna artist allows me to create temporary body art for clients. I’ve been doing henna for over 10 years. It’s something I enjoy immensely. Being able to get creative using henna, jewels, glitter, and makeup on the body is something you can never get bored with.”

Working as a freelance artist across all areas of the industry, Kiren can

do work for film, television, fashion shoots, catwalk modelling, editorial,

Appealing to a younger demographic, who like to experiment with style and are not afraid to stand out from the crowd. Using reasonably priced fabrics, trims and construction methods Darecca will ensure her line is kept affordable.

T

his year’s Fashion Fiesta Design Winner, Darecca Stainforth, blew all of the judges away with her innovative use of fabrics, colour and of course her design skills.Twenty seven years old, Darecca studied fashion for five years at Leeds College of Art after leaving school, to study a diploma in fashion and design, graduating with distinctions. She stayed at Leeds College for a further three years to complete her degree in Fashion and Clothing, ultimately graduating in 2010 with a high 2:1. Darecca was lucky enough to then get a full time job as a pattern cutter just before graduating and she has worked there now for 6 years. In her spare time, she founded her own brand, ‘Dazarockz’ and over the years has slowly built up a strong brand awareness in the local area, mainly focussing on creating a large portfolio whilst collaberating with other local creatives including photographers, makeup artists, hair stylists and models so she has a good body of work online. Darecca has also sold her designs in several local businesses and boutiques including fashionpony.co.uk, Birds Yard and Bo Carter Boutique, to name a few. Her main focus now however is to develop her own brand via her online store dazarockz.co.uk. “People often wonder how to get started in the design world. I started by showcasing in ‘Leeds Fashion Show’ where I showed my graduate collection from university. I have since competed in lots of local fashion shows, one of my favourites on Briggate High Street in Leeds city centre for ‘Leeds Fashion Week’, which also included Harvey

Nichols. My aim over the next few weeks is to get my online shop up and running as I have been working on this for the past year, having garments photographed and making up stock in preparation.” We wondered where does this budding young designer see her clothes and who is her target market? There was no hesitation in the answer, she knows exactly where she’s going and she’s setting her sights firmly on the British high street. Appealing to a younger demographic, who like to experiment with style and are not afraid to stand out from the crowd. Using reasonably priced fabrics, trims and construction methods Darecca will ensure her line is kept affordable. “In the future, after I have established my high street presence, I would also like to offer more luxe higher end garments to keep the range looking desirable. I have made a few show stopping pieces in the past which do attract a lot of attention, but due to make-time and embellishments these would in a higher price bracket. I feel pieces like this are important to keep people interested in what you are doing, and the more outrageous looks can also be filtered down for the lower margin as well to keep them cohesive.” It’s clear that Darecca has a clear vision for her brand how she wants to develop it within an industry that is notoriously cut throat. It seems that with her skill and grit, success is sure to be hers. Long live British design and all of its emerging talent.

CHANCES For many of us, the New Year brings with it an opportunity for a fresh start. Making a list of New Year’s resolutions can be cathartic and empowering, but sticking with them past January is easier said than done.

N

ew Year’s resolutions often start off well, but their effect is woefully short-lived – in fact most are doomed to failure within the first two weeks! The problem is, the moment we feel a bit stressed, tired or down, our willpower flies straight out of the window. What’s more, breaking our resolutions makes us feel even worse about ourselves, which saps our motivation to try again. With this in mind, Dr Sally Norton, weight loss consultant & surgeon & founder of www.vavistalife.com, has put together top tips for helping you to create resolutions that really last. Keep it realistic - Being ambitious is great, but try to pick resolutions that you’re actually likely to stick with. Deciding to run a half marathon if you’ve not gone for a run in years is unrealistic – instead, set yourself a gentler goal. It doesn’t mean you couldn’t build up to do a marathon eventually, but a smaller goal will be easier for you to achieve. Plus, the positivity you’ll get from achieving any goal will help you to stick with your resolution long-term. Be specific - Vague resolutions like ‘get fit’, or ‘be more healthy’ can be difficult to keep on top of, and can feel unattainable, leading to you feeling disappointed when you don’t fully achieve them. Instead, give yourself specific, attainable goals, that

will be easier for you to keep track of and manage. For example, you could resolve to exercise for 30 minutes, three times a week, or to cut out caffeine, or sugar. Plan ahead - With all resolutions, there will be moments when your willpower will be tested, but if you’re prepared, then you’ll be better equipped to stay on track. Identify the problems that might occur – perhaps you have a certain friend who tempts you to overeat, or you might have an occasion or holiday that could wreak havoc with your healthy eating or fitness plans? Once you’ve determined the problems that might come up, you can focus on working out ways to cope with them and keep your resolutions in check. Don’t be hard on yourself - None of us are perfect, and there may well be times when you slip up. Don’t punish yourself for it. Instead, keep a note of what has triggered you to fail this time, and see it as a lesson you can learn from. If staying up late makes you more likely to cancel a training session the next day, then try your best to get to sleep at a reasonable time. Or if you find that stress leaves you reaching for the sugary snacks, then try removing those sugary items from your kitchen and stocking up instead on healthier alternatives that you can reach for, guilt-free.

Maintaining communication: It is vitally important that separating couples maintain a dialogue. Aggressive and unpleasant communication between couples only serves to close down the opportunity to resolve matters between themselves sensibly and sensitively. Couples who maintain a constructive dialogue and resist the temptation to become personal and embittered, undoubtedly resolve their issues more quickly and sensitively than those who adopt a confrontational approach. Equally, the way a separating couple communicate with each other will have a long term impact on their ability to provide joint support for their children. 2. Telling the children: The way separating couples break the news to their children, that they are going to live apart, is very

important in helping a child come to terms with the new family structure. Ideally, both parents should tell their children that the relationship has broken down and emphasise to the children that they are not to blame. Many children perceive that their parents have separated because they have been naughty or not worked hard at school and these misunderstandings can cause tremendous distress to children needlessly. 3. Dealing with Financial matters: Maintaining financial stability during the breakdown of a relationship is vital. Such stability emotionally assists both parties in reaching agreement regarding finances and equally helps to ensure that both parties’ credit histories remain unaffected and bad debts do not accrue needlessly. If accounts and mortgages are in joint names, both parties will need to work together if mortgage providers and banks are to action their wishes. 4. Seeking specialist family law advice: Seeking sound, sensible legal advice is a must. Choose your solicitor carefully. Ensure that your solicitor is a family law specialist and therefore able to advise you on all aspects of your relationship

breakdown. Resolution (formerly the Solicitors Family Law Association) is an organisation made up of family lawyers who undertake to deal with family matters in a constructive and sensible way. Taking specialist family law advice should not be interpreted as an aggressive move but instead a sensible step towards resolving matters practically and constructively. 5. Taking time to heal: It is often said that bereavement, divorce and moving home can be the three most stressful events in a person’s life. A relationship breakdown can embody all three. For the majority of people, divorce and separation in itself is a grieving process for the breakdown of a relationship and can indeed involve the sale of a property or the purchase of a new one. Give yourself time to adapt to your new circumstances and allow yourself to grieve. Decisions taken when you are not ready can have a detrimental effect on your long term future. You need to be confident and sure of your own wishes before taking any major decisions.

hat exactly is a detox? Simply put, a detox is a process in which a person makes lifestyle changes to clear their body of toxins. These lifestyle changes typically involve abstaining from certain harmful things and optimizing body processes. Some changes are temporary, such as following a cleansing diet, others are permanent. Toxins are any substance that can be poisonous or cause negative health effects. “Toxin” refers to all the metals, chemicals, pollutants, artificial food ingredients, pesticides, and poisons that cause the body harm. We are in constant contact with harmful organisms and pollutants. They’re in our water, in our food, in the air we breathe, it’s very difficult to get away from them. The source of many health issues is the toxins that have built up in our bodies over the years. There is no practical way to protect yourself from all the toxins in the environment. Fortunately, there are ways to counteract some toxins and pollutants. Your body’s natural detoxification processes exist to deal with the ones we can’t avoid. You can help your body perform these processes with the help of regular cleansing. The body has several systems in place for removing waste. The excretory system plays the largest role in detoxification. The most

obvious job of this system is defecation and urination. The main organs that compose the excretory system are the skin, liver, lungs, large intestine, and kidneys. The skin aids in elimination through the sweat glands. The main job of sweat is to regulate the body’s temperature, but it’s a multifunctional system. When sweat passes through your sweat glands, it takes toxins with it. The roles of the other organs are just as important. It’s the liver’s job to filter and excrete waste, hormones, drugs, and other foreign substances. The lungs help remove carbon dioxide (the waste gas resulting from breathing), the large intestine has several important jobs; it absorbs water and remaining nutrients from food. It also converts waste into stool to be expelled from the body through defecation. The kidneys filter the blood and help remove waste from the body through urination. We chose to have the hour long Elemis Freestyle Deep Tissue Massage and the Elemis Visible Brilliance Superfood Pro-Radiance Facial. Our treatments started together in our private VIP suite, our beds side by side. For the massage, the therapist selected an aromatic oil to correspond with any concerns, aches and pains which can be caused through muscle strain, stress or body imbalance. There is also an oil appropriate if you just want to be relaxed, however there were definite muscles that needed sorting out on that day! The flowing massage works deeper into the tension, encouraging optimum circulation and tension relief. It certainly did its job. The facial is a nutritional boost rich in superfoods and essential minerals, designed to pack stressed, dull skin with energising, detoxifying actives. Clinically proven to leave skin plumper, radiant and lit up with good health. Have to say we both felt completely pampered and looked after and the VIP Suite is such a good offering. We enjoyed a bottle of prosecco, strawberries and chocolates throughout our stay and next time we will stay over and make a proper break of it. aving lived in Apperley Bridge for the last 25 years, I know the neighbouring areas of Idle and Thackley very well and it’s absolutely brilliant to see the recent developments taking place in both villages. The new railway station at Apperley Bridge seems to be responsible for a lot of good things happening throughout the district and it’s exciting. There are many new home developments underway and this will of course increase the local population, which in turn requires more facilities and amenities. So to see so many new independent and diverse businesses opening up and contributing to the local community and economy is a great thing. This area of BD10, on the Leeds/Bradford border has always been a popular place to live and raise a family, with its good stock of high performing schools, abundance of top level performing arts schools and lovely country areas, including the Leeds/ Liverpool Canal for walks, cycling and days out, its popularity has soared this past 2 years. Access to Leeds by bus and car from this area has always been good and now there is direct rail access it has brought this major city even closer. Add into the mix the recent development of the Broadway Shopping Centre in Bradford and all of a sudden people are really pleased to live in this beautiful rural part of the county, yet be so close to two

major cities and all that they have to offer. But the pace of life in and around Idle and Thackley is much more sedate than the city and the new businesses are making it more self-sufficient and self-contained. This in turn breeds a real community spirit and a very desirable place to live. Amongst the new businesses that have opened in the area are The Idle Draper, Idle’s first micro pub stocking a range of craft ales, beers and ciders plus bottles and wines from around the world. There’s also Idle Coffee Lounge, both are situated on Idle Green at the heart of the hub of shops in the village. In Thackley there’s the now famous Black Rat micro pub, serving cask ales, craft ciders, premier lagers, bottles and wines and next door is McCallan’s Deli and Coffee Shop, each adding value in so many ways to the area and helping to forge that great community spirit. For two neighbouring villages, you might be surprised at how many famous people they have produced; English actor Michael Rennie and Trades Union Leader Vic Feather where born in Idle and Emmerdale actress Hannah Midgley lived most of her life in Idle and comic actor Adrian Edmondson was born in nearby Wrose but grew up in Idle. MIDDLETHORPE HALL Middlethorpe Hall is an exceptionally elegant 300 hundred year old manor house with traditions that suit houses of the past. The beautifully appointed entrance with vast wooden and glass door was opened by an exquisitely dressed doorman who welcomed us in from the outside chill. We checked in at the quaint reception desk and were handed our room keys to the ‘Sir Henry Thompson Suite’, which was a short walk from the main hall and into a uniquely presented courtyard, just seconds from the house itself. su ch a s a l a r g e b u re a u w r i t i n g d e sk w i t h w r i t i n g paper, envelopes and postcards in the living room, traditional mahogany dressing table in the bedroom, and the kingsize bed was draped with cosy and comforting blankets rather than new style duvets, all a classic nod to the way that old luxury was taken many years ago. After taking time to enjoy the suite, which had a mini kitchenette complete with traditional pottery set, an array of fresh tea leaves and strainer, selection of coffees, an unexpected treat in a Nespresso machine, plus fridge with fresh milk, we decided to have a stroll around the grounds where we stumbled upon a beautiful lake and some very pretty gardens filled with fruit trees and flowers.

ack in our suite we took showers in the large bathroom which had double sinks, large power shower, and gloriously old fashioned style Floris bathroom essentials such as shower gel, mending kit, and shampoo. Then it was time to dress for dinner. This is where things got very exciting. We were informed that Middlethorpe Hall had a ‘no technology’ rule in place across all public spaces, meaning we could enjoy our food without interference of any kind, and we really did have a wonderful experience without our mobile phones. We enjoyed a pre-dinner Prosecco with canapés in the grand drawing room prior to taking our table in the restaurant, and placed our food order with one of the many French waiters. The restaurant in the hall is split into a number of rooms, each with quintessentially English décor including panelled walls and antiques dating back centuries. Each table was dressed with crisp white table linen, sparkling cut-glass wine glasses, polished silver cutlery and candlelight. The service was excellent, so much so that when our meals arrived they were placed in front of us at the exact same time, dishes were explained in full if we raised any questions, and the waiters were instantly there if needed; yet always far enough in the background to not feel pressed upon. Dinner was served. We opted for French Onion Soup, served with onion marmalade and Gruyere croutons, this was presented in a large open bowl where the hot onion consommé was poured at the table around the marmalade and croutons. Divine. Our other first course was Yorkshire Partridge; roast breast of partridge, confit leg and black pudding croustillant, and a spiced pear puree. Rich, flavoursome, and presented beautifully.

A single glass arrived with the sorbet course, Champagne, lavender and blackberry. Very refreshing, and gave both pallets a much needed cleanse before embarking on the main dishes. Main courses we chose included the vegetarian option of Yellison Goats’ Cheese Ravioli, again served in a large open bowl with butternut squash, roast chestnuts, and kale. A further consommé was poured around the single large ravioli, and it brought the flavours together. This was a delicious main course, wholesome and rich.The second main course, Aged Fillet of Waterford Farm Beef was presented on a large plate with oxtail, bone marrow and parsley crumbs, potato rosti and autumn truffle. The beef was exquisite, it melted in the mouth, and the richness of flavours each matched perfectly against everything on the plate. A truly outstanding piece of meat, cooked to perfection by a chef who obviously knows what he is doing with fine dining cuisine. Puddings beckoned, and we chose the Middlethorpe Honey plus the Middlethorpe Hall Cheeseboard option. Firstly the sweet Middlethorpe Honey was a light honey parfait, with port and fig puree and large figs oozing in honey, served alongside a quenelle of almond ice cream, all presented together immaculately, a wonderful light and super-sweet dessert. Secondly, the Middlethorpe Cheeseboard could have easily been for 2 people, the plate was bursting with grapes, celery and homemade tomato chutney alongside our choice of cheeses, which included; Wigmore, a delicate soft ewes’ milk brie-style cheese; Black Bomber, a strong powerful yet surprisingly mellow cheddar; Celtic Promise, a Teifi cheese washed in cider as it ripens and a supple, smooth spicy aromatic cheese, and finally; Lanark Blue, Scotland’s creamy salty Roquefort. A great end, to a great meal. The kingsized bed was calling back in our suite, where we fell into the sheets and slept comfortably for hours on end until the morning alarm woke us and we prepared to dine once again.Breakfast was served in the restaurant

overlooking the gardens, a more laid back feel in the morning, and the slight hustle and bustle of the hotel staff and guests was wonderful to see. The choice of continental breakfast and Yorkshire breakfast was very good, which was of course to be expected. We simply decided upon one Yorkshire breakfast with sausage, bacon, mushrooms, sauté potatoes, tomato and eggs, and one choice of smoked salmon with scrambled eggs on brioche. It was hard to appreciate how good the breakfast was, as we were both still rather full from the prior evening’s dinner! After breakfast a short lay down was a must, and then it was time to experience Middlethorpe Spa. Just one of us headed to the quaint spa opposite the hall for an hour of relaxation. The beautician gave a cleansing and purifying back treatment, which incorporated a skinbrightening exfoliation to target spots, blemishes and dull skin. A facial for the back if you like! Post-massage, the beautician explained what had taken place during the treatment, which gave an excellent insight to the products used and the expected results. Middlethorpe Spa is located in an unassuming cottage a short walk from the hall itself, under an avenue of tall rustling trees. It has a small and perfectly formed swimming pool, Jacuzzi hot tub, and heat rooms for all visitors to use. A beautiful spa. It was time to pack our bags and vacate our room, and with a 12-noon checkout this was pure refined ‘old school’ luxury. Thanks must go to Head Chef Ashley Binder for his extraordinary cooking skills, the flavours in each and every dish were the stuff that dreams are made of. Thanks also to Damian who took care of our every need, from opening doors, to carrying luggage and showing us around our suite. Plus the waiting team, Max and David for their superb French service, and of course Helen the Spa beautician that made sure the feeling of being rested and relaxed remained until we drove off into the York countryside.

Near the end of 2016, the dictionary publisher Collins declared ‘hygge’ one of the words of the year. Chances are, you’ve heard about it (or even tried to pronounce it) at some point since the clocks went back. But why is this Scandinavian concept so popular now?

F

ollowing the publication of several books on the subject in the run-up to Christmas, ‘hygge’ is the latest Danish import, hot on the heels of ‘Nordic noir’, to be embraced by the UK. With no direct translation into English, ‘hygge’ (pronounced ‘hoogah’ but with a really good Danish accent!) is a concept that, in a broad sense, means “to create cosy and convivial atmospheres that promote well-being”. It can be a verb, noun and adjective – things can be described as ‘very hygge’ or you can ‘hygge’ in the evening – and describes a Danish sensibility that celebrates family, friends and good times, in a cosy environment. This is the Danes way of putting a positive spin on their long, dark, relentless winters! As we enter a new year with plenty of our own cold, dark months still to endure before spring, it seems that the Danes are on to something – we could all do with some ‘hygge’ in our lives. In a changing and uncertain world, it is no surprise that people are turning to the simple, comforting pleasures of life. ‘Hygge’ has no room for Facebook updates, reality TV shows or politics. It has plenty of room for personal relationships, laughter and sharing; it is full of encouragement for indulging in good food and a welcoming, cosy home. So take a look around your own home and see if you have room for a bit more ‘hygge’. How to get some ‘hygge’ into your life Light candles – Did you know that the average Dane burns through 6kg of wax a year, compared to a measly 0.6kg in Britain. It’s possibly one of the easiest, and most atmospheric, ways to embrace ‘hygge’. Candles not only create a calming and cosy glow but scented varieties can add a whole new dimension to your home. Always plump for natural wax or soy candles instead of paraffin-based

varieties for a cleaner, more eco-friendly burn. Shutters designed with a divider rail or in the double hung fashion are a popular choice in bathrooms. Café style shutters are ideal for ground level windows and town houses, cafe style shutters only cover the bottom part of the window. They are mainly used on tall windows that stretch to the majority of the walls length. A great advantage of this style is that it maximises light whilst providing privacy. They also give the room a European look and feel. Track shutters are typically used in doorways or in front of patio doors. The shutters can either be pushed all to one side or can be split in the middle and opened up both ways. The track shutters can also be put in front of an internal doorway i.e to the kitchen and the one piece shutter would glide along the track in either direction depending on preference. Solid panel shutters can be made the same as any of the above however instead of louvres a solid wood panel can be used instead.

Another year over, a new one just begun, so the song goes. And with the new year, as ever, lots of us feel like ringing the changes and freshening up everything not just our wardrobes, fitness or weight goals etc, but also to our own environments, notably our homes. Whether making small changes or planning a full refurb, take a look at some of the trends coming through for 2017. ESCAPE YOUR ISLAND - If open floor plans (literally) tore down walls, the latest trend takes things one step further: Bringing elements of the living and dining rooms right into the kitchen. Many people are skipping kitchen islands entirely, opting for a rustic wood table instead. The separation of the kitchen and dining room is becoming obsolete, it only seems right that the kitchen’s becoming a very liveable space where people hang out, beyond just cooking. GET WHITE-ON-WHITE JUST RIGHT - All-white kitchens aren’t going anywhere. There’s a key to keeping the room from looking doctor’s-office sterile by using different kinds of textures, whether it’s subway tile or a wood grain, linen or cotton, different kinds of textures add warmth and make the room feel cosy. GO FOR THE BRONZE - Bronze accents are getting even more attention these days, going from minor detail to a starring role in many kitchens. You should be starting to see the color pop up on appliances, though as gorgeous as it is, an oven that’s bronzed better than Kim Kardashian’s face can set you back five figures. They’ll come down in price, eventually, though you can get the same feeling with a few strategically placed pops of bronze or rose gold. Think vases, trays, drawer pulls and light fixtures.

GET A CONCRETE IDEA - If marble’s too fussy (or pricey!) for your tastes, try going the other extreme, with concrete. SINK INTO EXTRA SPACE - Everybody complains about not having enough counter space, but really, imagine what you could do with an extra sink. he hormones testosterone, dopamine, oxytocin and serotonin play an important role in mood and desire and what you eat can do more than you might imagine to heighten both for a memorable Valentines Day! Here are some quick, easy and delicious suggestions, most of which can be eaten with your fingers - the last thing you need on the 14th Feb is a load of washing up! Fresh king prawns painted generously with garlic butter and grilled (what could possibly be the problem with garlic if you are both eating it and it has long been associated with promoting love and arousing desire!). Slice up some creamy buffalo mozzarella, scatter some basil leaves around (full of libido-lifting nutrients) and lots of sliced, sweet tomatoes (the first tomatoes grown in Europe were called love apples because they were related botanically to the mandrake or love plant which was noted in the Bible for its reputed aphrodisiac qualities). Add a few sea salt flakes, a generous grinding of black pepper and drizzle with olive oil and balsamic vinegar. Eggs are hard to beat for a quick, easy and delicious snack for two! They are a great source of protein, rich in iron which helps circulate oxygen around your body, creating the kind of energy that you are looking for on Valentines Day and there’s so much you can do with them! Scrambled with smoked salmon (or even more indulgent, with shavings of fresh truffles), Eggs Benedict or Florentine or just soft boiled eggs with toast ‘sol-diers’ or steamed asparagus tips to dip in. And it’s not only hen’s eggs - try boiling a few quails eggs, peel them (that’s a job for 2) and hoover them down with a cocktail and a bowl

of salted almonds while you are putting other delicacies together in the kitchen! And while we’re talking eggs, let’s not forget caviar (fish eggs). Caviar packs a real nutri-tional punch containing almost all the proteins, essential fats, vitamins and minerals re-quired to get those hormones singing! Beluga is expensive but we’re talking one night of the year here and a little goes a long way. A few slices of brown toast, a spoonful or two of caviar, a couple of glasses of champagne and you might find you’ve lost your appetite for food and moved on! If you both like getting into the kitchen, why not experiment with fish baked in a parcel. If you’ve never tried it you are in for a treat and keep in mind that studies indicate that his-torically, those who lived by the sea and feasted regularly on fresh fish and shellfish had impressively-boosted levels of testosterone throughout most of their lives! Place your fish fillet of choice on a large square of foil, top with very finely-sliced onions, crushed garlic, spinach (bursting with zinc, an essential mineral involved in the production of sex hor-mones), asparagus tips, finely-sliced tomatoes and diced, fresh chilli, season with sea salt crystals and lots of freshly ground black pepper, scrunch the foil to create a loose parcel and bake in a medium oven until the fish is cooked through and the juices are running clear. And for dessert, well it has to involve chocolate (which has the added bonus of being rich in a chemical called phenylethylamine which plays a vital role when we fall in love and feel passion and levels are believed to peak during orgasm!) How about ‘fingers’ of mango and papaya or whole strawberries dipped in melted dark chocolate or a small, dark, rich chocolate mousse topped with silky smooth double cream – absolutely unbeatable!

HOMEGROWN THE MOVERS AND SHAKERS OF YORKSHIRE

H&N Yorkshire chat to David Lishman, owner of the famous Lishmans Butchers of Ilkley - a traditional butcher in Ilkley and a very popular destination for food fanatics. David has twice been awarded the national title of Champion Sausage Maker and is passionate about the good, honest sausage.

How did it all start? I left school at 16 and went to work in a butchers shop in Harrogate where the owner, Mr Newbould concentrated on traditional locally farmed meat and lots of game during the season. It was a very good grounding and trained me in the quality end of the butchery world. I grew up on a farm, and it was just a continuation of this, seeing the product right through to the dinner table. I was very keen to get my own shop, and at the age of 21, with some money I’d saved and help from my parents, I bought the shop I am still in today, 30 years later. Albeit much bigger, as we have expanded into the premises on either side of the original shop, and now have a car park at the back with production facilities.

What was your mission? I knew what I wanted to do, and that was to produce and sell a very good product that I could be proud of. I suppose in the corporate world that would be written down and made into a mission statement nowadays, but it was all just in my head back then. The fact that we’ve always sourced local, more because there’s better control of the product, and one builds up a relationship with the farmers, has helped us. It’s something that supermarkets pay lip service to, but the man behind the butchers counter there, would not have the faintest idea where the meat comes from and probably wouldn’t understand the nuances that create the different eating experiences associated with various farming practices.

So what is your next step? Whilst retail is still the most important area of the business, I see us producing more specialist products to supply to cafes and restaurants. We have been making salami and dried cured meats for around 5 years, and these are very popular in bars and restaurants as sharing platters. We also produce more pies now for the trade sales. Over the next 6 months, we are investing in a new smoke house which will allow us to increase production of high quality bacon, hams, and other smoked goods and charcuterie. We are also rebuilding an old workshop we bought a few years ago at the back of our shop, which will become our new pie bakery. I feel there is a market for really good butter pastry pies with luxurious fillings, such as Beef in red wine, which can be served in pubs or café, without the need for them to have the expense of employing trained chefs. My eldest daughter Emma, has now come to work in the business, and she is becoming more of a driving force with the ‘new product development’ and the day to day running. The youth have a lot of energy and very little fear. It’s working very nicely, although she’s pushing me harder than ever.

To what do you attribute your success? I would say that having an interest in food and farming is probably the reason why we have seen success over the last few years. I enjoy cooking very much, and this translates into offering a wide range of products in our shop. Winning the Yorkshire sausage competition 5 times, the national sausage competition twice, and captaining the British Butchery

How do you see the future of the high street? The high street is changing very quickly. Food is consumed out of the home much more, and people tend to cook less at home. With internet shopping growing, I expect the town centres to be more of a social destination with cafes, restaurants and eateries taking over from retail. We see it now in most urban areas across the country.

I used to be there nearly every day when I lived in Far Headingley. It’s chilled out with great food! Best Brew - I’m pretty standard with Yorkshire Tea. However, The Kettle Shed do some awesome flavoured tea, but give me a double espresso every day. Best Sunday Lunch - I know it’s not the standard pub Sunday lunch, but I love Trio Bar and Grill’s Sunday lunch. Never lets you down… Quick Pint - Lately, I’ve liked venturing out to Belgrave. It’s great when there is good weather to sit on the rooftop and even better for a people watch. But most of the times it’s hard to do just a ‘quick pint’! Hidden Gem - Ira B’s Roundhay. It’s just off Street Lane. The best chicken schnitzel around. Great to go for a big feed with

the boys straight after training. I usually get the salted beef AND the schnitzel! One To Watch - The Lean Kitchen. It’s just been opened by my England teammate Kevin Brown in Wigan. The name gives it away for what it services but the meals around working out are top class. It’s kicked off massively over in Wigan, I think there could be a surge for one in the Leeds area. Cheeky Cocktail - Banyan in Roundhay. It’s just had a complete refurb from the old style Napa. That was already awesome, but I think it could go to another level for food and socialising. You can go on a date, or just chill with mates! Impress a client - I usually just make sure it’s a good coffee. I know for sure that there is good coffee at House of Koko in Chapel Allerton. And the lemon, avocado and feta cheese on sourdough is awesome. So if clients are happy with that, then I’m sweet! Comfort Food - Ha, Nandos will get a plug here. I think comfort food is just the

quickest and easiest option usually. But I love Indian and there is a great Indian restaurant in my hometown of Morley called Spice Lounge! Weird But Wonderful - May’s Café just off Hyde Park. The Thai food is great and it’s cheap because it is slap bang in the middle of a student area. It’s no frills and nothing special but be prepared for a good feed for little money! Best Atmosphere - Nostalgia tells me that you can’t beat a good beer garden when the sun is out. The Original Oak in Headingley is a good one for this with some chilled out people. Then of course if you want a really good time, come and watch the Rhinos at Headingley Stadium on a Friday night… mental! With Fam - This is a curve ball, but absolutely anywhere, a lot of my family are based over in Manchester. My dad loves Indian food more than me, so you could see us over in Rusholme, but then you could see us having a chilled out pub lunch in The Woodstock Arms in Didsbury near Stockport!

What makes dining at Carlisle Bay unique? I think it is because we do try and cover a lot of different cuisines in the restaurants, from Asian in East, to the wood burning pizza oven in Ottimo, where we try and cook more than just pizza in there, like a slow roasted plantain and spinach stuffed Cornish hen. Then Indigo is a mixture of European flavours with a Caribbean twist where we do daily specials and a rotation of A la Carte menus, and Jetty is a kind of kick you shoes of grab a rum and coke and enjoy the Caribbean flavours of the grills, with Chef Hennis special hot, hot sauce! So you can go from a shorts and t-shirt feel… to a dress up and dine feel. What is your favourite thing about Caribbean food? I think that each island has its own special flavours, and bringing those together to create something new really excites me as a chef, take Caribbean curries apart Jerk which can be hot, the local curries are more about level of flavours than heat, the lemongrass, the local seasoning peppers, the fresh herbs…. thyme, parsley, basil, the ginger and papaya, mangos blended together to add something different If you were a guest at Carlisle Bay, in which of its restaurants would you most like to eat? As the executive chef at Carlisle Bay that is a tough one to answer, each restaurant is special. Now as Europe is getting cold, I know that

the jetty restaurant has a special feel on a Wednesday night, the steel band playing on the beach, the fresh local lobster and catch being flamed on the grills, locally grown produce from our farmers and the our own garden turn into amazing salads, all open restaurant, and if it is full moon then watching the moonlight play on the sea, I think that is what our guests remember about Carlisle Bay. What most inspires you when you start a day’s work in the kitchen? Whilst most people have an alarm clock, my clock is the local fisherman calling with what they have caught and are bringing in, then I can start thinking what we can do with the fish coming in, my favourite at the moment is lion fish, a fish that is destroying the local fish in the Caribbean, but once filleted, has the look of snapper but can take on any marinate or seasoning, so we’re giving the guests something new to try we are also helping the local fish survive. Once at work I walk through our garden, to see what is ready to pick, from herbs to Kale, seasoning peppers, cherry tomatoes, lemongrass. What authentic Caribbean dish or ingredient would you recommend to someone who has never visited Antigua before? Tough one! A Caribbean breakfast, Saltfish, float, plantain, avocado. A roti this is a lunch staple, goat, stewed or curried. Normally on a Friday night, there are some cook outs

going on, stop and try something, Saturday morning normally local breakfast being cooked… blood pudding if you want to try. What is the best meal you have ever eaten and why? Waterside Inn, the Roux brothers have always inspired me I was a poor culinary student and saved for 3 months to be able to have dinner there…..it was and still is an amazing restaurant. At 17 the art and flavour of the food amazed me. Do you have a foodie guilty pleasure? I adore cheese any type, chefs are normally terrible eaters, at 10/11pm when I get home I am normally sitting on my deck with a glass of wine and some cheese probably the worse thing to eat but it tastes great after a long day!

Black Mouse Cheese & Wine Emporium in Pudsey is an absolute delight, the way it has been designed takes you on a wonderfully tantalising culinary adventure which you will most certainly want to repeat! The evening we attended was a cold night in late November and we were pleasantly surprised to see 20 or more people in attendance and Allan, the owner, face of the business and absolute cheese enthusiast was there to take us through our cheese journey and wine expert Andy, who challenged us with some unexpected wine pairings. We were given a list to work through, ticking off those we like and making notes on our thoughts. There were eight pairings that evening and we kicked off with Bolney Bubbly from the Bolney Estate in West Sussex, a light and refreshing English sparkling wine, very easy to drink. This was paired with the most delicate goat’s cheese I have ever tasted; Yellisons Goats Cheese made on a goat farm located between Keighley and Skipton. This cheese is so light it seemed whipped and the flavour so delicate it needed something equally delicate and light to drink and the Bolney Bubbly worked brilliantly. This one had ticks on everyone’s sheet! Next was a Vouvray Sec ‘Renaisance’ 2013 – Domain Sebastien Brunet from Loire, France. A white wine which with Allan’s Cornish Yarg was perfection. I love Cornish Yarg, a nutty hard cheese wrapped in edible nettle leaves which adds to the flavour and presentation. Lincolnshire Rustic Red was the next cheese to be presented, accompanied by Lychgate White Wine, the second of the evening from the Bolney Estate in West Sussex. Speaking personally, this was the first one that didn’t really float our boat, but that’s what’s great about these events, you’re never going to like everything, it’s about experimenting and finding those undiscovered flavours and pairing you do like. The next offering was a completely different story. Lincolnshire Vintage Poacher,

a strong, mature and full flavoured cheese, with a sweet fruit and nutty aftertaste. Paired with the Laforet Bourgogne Pinot Noir – Joseph Drouhin, Burgundy, France, this was pure delight. These two went very well together. Tick. Finally we reached the one I had been waiting for, award winning Mrs Kirkham’s Tasty Lancashire a buttery, yoghurty flavour with a fluffy and light texture that melts in the mouth. Accompanied by Chateau de Cabriac – Corbieres, France, an intense dark red, this was yummy. Paired with this award winning cheese, divine. There was more to come however and as each cheese intensified in flavour, so did the wine and you started to understand how important it is to get it right. There’s so much more to this than the usual glass of port! On to the Double Barrel Vintage, selected for its rich, strong, savoury taste and perfect for people who love their cheese to have a really big flavour. This cheese needed an intense peppery red and it got what it deserved with the Cabernet Franc – Serbal. Made from the oldest French grape in the world, this promises to be the next Malbec! We had got to the big boys. Then Mrs Kirkham’s Mature was served up with Shiraz – Cranswick, Barossa Valley, Australia. Loved by many in the room, we were not keen on the intense heaviness and dryness of the Shiraz. The cheese however was lovely and with a different pairing for me, would have been much better. The final selection was one I had been wary of, a sweet dessert wine with a Stilton, a combination I would never have put together. Yet this was the absolute winner for me. Colston Bassett Stilton is stilton at its absolute best. Intense, creamy and so moreish it was embarrassing and I couldn’t get enough. And the wine? Winkelder Muskadel – Nuy Winery, South Africa, who would have thought it? This pairing was pure genius. What a night. My Christmas cheese and wine shopping list complete, it had been a really enjoyable couple of hours and we had met some likeminded people too. This is a fun and educational tasting experience and the perfect gift for cheese and wine lovers.

The tasting is £30 per person for a two hour session and a great way to learn the art of matching great cheeses with the perfect wines, carried out by expert tutors in a fun and informal environment.

From the folks behind the hugely popular Stansfield Arms, Brownlee Arms and Chevin Inn, comes the latest addition to Greencliffe Taverns family. The Old White Horse Brasserie in Bingley, is one of the oldest buildings still in use in the town. We headed down to check out Sunday Lunch!

The Old White Horse Inn was originally constructed as a coaching inn in the mid-seventeenth century, strategically positioned with Ireland Bridge on the one side and the Parish Church on the other. The building is an English Grade II listed building and has a significant amount of coaching inn infrastructure still surviving, including a stable, barn and two coach entrances which are located around an inner courtyard. It is also famous for its location on the original part of the street. Low ceilings with exposed beams, feature fireplaces and stone floors run throughout, in keeping with the age and history of the property. The Old White Horse is pavement fronted on a quaint cobbled street with adequate parking close by. This site has a fantastic courtyard and beer garden that overlook the bubbling River Ayre and is a haven for drinkers and diners during the summer months. Large gates open up to the excellent beer garden that has the ability to cater for a wide variety of events. Recently taken over by the successful local Green brothers of Greencliffe Taverns, the inside has been completely refurbished, giving the pub a fresh look whilst retaining the original character with low ceilings, exposed beams and beautiful stone floors. They bring with them their winning restaurant formula and now offer Bingley a suberb new restaurant serving beautifully cooked food at very reasonable prices. Knowing the brothers very well we were invited along with their family and friends to be their guests one Sunday before opening to the public. We were excited by the prospect as their head chef, Bradley has come from Michelin star restaurant, Northcote Manor, owned by celebrity chef, Nigel Haworth. We also know Nigel and if his food is anything to go by, Bingley is in for an absolute treat.

We were not to be disappointed, the dishes on the menu are top notch and expertly executed by Bradley and his team. We were delighted by not only the presentation of the dishes but also the taste sensation of these wonderful dishes. For our starters we chose Tartar of Yorkshire Beef with bone marrow wafer, onion puree and local watercress and Trio of Pickles Beetroots with curd cheese cigar, smoked nuts and honey dressing, wow! Our mains were Braised Pigs Cheek (a favourite of ours), potato puree, roasted baby parsnips, bacon crisp and red wine sauce and Braised Beef Short Rib Bourguignon served with caramalised shallot, scorched grelot and baby carrots. The cheek and the rib both fell apart they were so tender and for those who have never tried cheek, it’s a must you will never look back. Chris and Nick Green also run The Stansfield Arms at Apperley Bridge, The Brownlee Arms in Horsforth, Chevin Inn at Ilkley and The Askwith Arms in Otley. They have won many awards for their food and The Old White Horse in Bingley is sure to win many more. They are offering a completely different menu to their other establishments, one that is sure to take Bingley and surrounding areas by storm. When word gets round about the food on offer at The White Horse there’s sure to be a wait list to get a reservation and once you have visited it will definitely become your favourite place to dine. Lovely seasonal food and wines using local Yorkshire ingredients where possible. Real fires, real ale. Dog friendly. Large outside south facing Riverside cobbled area. A team of four passionate Greek foodies decided to open an authentic Greek Café, Bistro and Deli in Adel, Leeds, run by an independent family and 4 passionate food lovers. Their reputation reached us very quickly, not only for the authentic, delicious food they serve but also their wonderful hospitality and the deli packed full of real Greek delicacies. Certainly a visit to Amalthea was in order and the week we chose to dine there was a bit different as unbeknownst to us before we got there, they were also offering a special guest menu full of dishes from The Cyclades Islands, called From Mykonos to Santorini, a delicious selection of Meze Platters which all sounded so mouth-watering, we were spoilt for choice. However, a decision was made and we chose the Mykonos Meze Platter for 2 people. The great thing about a meze platter is that in comprises of starter and main dishes, so all you need to think about is your dessert! The platter we chose consisted of moussaka (this was the best moussaka in the world and if you only like this from the whole selection, then it’s been a worthwhile visit, a stunning dish), soutzoukakia (beef and lamb meatballs) with sweet 12 spice sauce, stuffed pepper with rice, hummus with chilli olive oil, Greek gigantes (oven roasted butter beans) with chilli sauce, pitta bread, maintanosalata (parsley salad), and olives! How good does that sound? We were practically salivating in anticipation of our meal arriving as the smells from the kitchen were something else and the food being served up to our fellow diners that evening looked so good. We were not to be disappointed. When our meal arrived we couldn’t wait to ‘get stuck in’ and we made sure we ate the same thing at the same time as each other to get a genuine reaction. There was nothing we didn’t like or could even say was our least favourite, even the butter beans which was the only component in the platter we were both a little nervous about was delicious. This chef knows how to cook and as we worked our way through, we started with the pittas, dips and olives, unintentionally leaving the moussaka until last. There was a generous slice each to devour and it was so good we agreed that although full, if presented with another slice we would force it down. This should be award winning moussaka!

Now if you have ever been to Greece or eaten Greek food, you will know that their desserts are very sweet, if you have a sweet tooth you will be in dessert heaven with your choice of Baklava, Portokalopita (orange pie), Carrot Cake, Black Cherry Cake, Ice-creams and various yogurt dishes with traditional fruits such as fig and honey of course. Neither of us have a particularly sweet tooth, but after polishing off a meze you do find yourself wanting one of these traditional desserts ‘just to finish off’. We chose to share Carrot Cake with ice cream, it was just enough and the perfect ending to what had been a superb and authentic dining experience for us both. I should at this point let you know that Amalthea is a dry restaurant and you take your own alcohol, which we quite like as you can take whatever you want to drink and it helps to keep the cost down when dining out on a budget. Amalthea is open in the morning when they serve speciality Greek coffees, gourmet sweets, sandwiches, pies and snacks. From the afternoon until night the menu changes to authentic Greek dishes, blending modern with tradition, revealing hidden and unknown aspects of Greek cuisine. There are both popular traditional dishes as well as modern and experimental ones. The Deli offers a wide variety of artisan ingredients, foods, sweets and drinks so that you can take a taste of Greece home or even prepare your own Greek dishes and they are also more than happy to host your party, wedding, corporate or any other event. We loved Amalthea so much that we immediately booked to return with 8 of our friends and they loved it too. We decided to try Veri Peri, a Portuguese grill family restaurant, on our way to the cinema one Saturday evening and booked a table for 5pm so we could get an early showing. It was great to see how busy it was for so early in the evening and not only that, there was a constant flow of diners the whole time we were there which showed this place has already built a good reputation in the area. Most seemed to have been shopping at Broadway as they had lots of bags with them and this place is perfectly positioned to eat at the end of some retail therapy when you have built up a good appetite!

This was an absolutely divine dish, with medium spice and a hint of the garlic sauce, the chicken just fell apart and I absolutely loved it.

Veri Peri is known for the legendary fan favorite, Espetada and other grilled chicken, meat and vegetable dishes. You can choose from a wide range of Veri Peri sauces to go with your dishes, from mildly spicy to flaming hot and with everything cooked to order at an open kitchen, the aromas were mouthwatering. There’s a great choice of starters but we chose to go straight for the main courses as seeing the portion sizes coming out, we wanted to be able to do them justice; each looked so good and all eyes in the restaurant followed every dish leaving the kitchen to its destination with envy. We both chose the chicken. I opted for one of the ethnic specialties, Chicken Espetada (£11.95), described on the menu as – “Our royalty dish! Skewered chicken thighs grilled and basted with your choice of sauce. Un-missable!” Served with 2 side dishes of your choice. This dish came presented on a hanging skewer, dripping in succulence and the smell made my mouth water. The two side dishes I had were boiled vegetables and rice and the sauce I chose to have my chicken basted with

My husband Dave misread the menu and ordered what he thought was a single platter serving of Hot Veri Peri Chicken Wings (£13.95)…how wrong could he be? First of all there were fifteen wings! Yes that’s fifteen wings and they were huge, plus this also included a choice of two sides and he had coleslaw and wedges. Well they were so good that he ploughed through six of the monster wings, plus half the coleslaw and wedges but when I say these wings were big the chickens must be giants! The staff were absolutely brilliant and offered to parcel up what he couldn’t get through for us to take home. That was Monday and Tuesday nights tea taken care of! Veri Peri is not a licenced restaurant but you hardly notice as their Quenchers Menu is full of fabulously named drinks such as Bumblebee, Lemon Mint and Sunshine Mocktail. Or you can opt for Bottomless Soft Drinks which you help yourself to and fill your glass as many times as you want with any of the soft drink options for only £2.45, brilliant value. We really enjoyed our food at Veri Peri and were made to feel very welcome. We will definitely be back, it’s too good not to. Recommended by Angela Riches, November 2016

THEY DON’T DO OVER-COMPLICATED RECIPES OR SCRIMPY PORTION SIZES. THEY ARE ALL ABOUT WELL-CHOSEN INGREDIENTS, SIMPLY PUT TOGETHER TO MAKE EXCEPTIONAL ITALIAN FOOD. A meal in a shopping centre restaurant is not what we would consider for an evening meal out, after dining at Zizzi in the new Broadway Centre in Bradford city centre, we just might reconsider... We booked a table for 7.30 but unfortunately were running late due to traffic. This did not affect the wonderful welcome we received from Ram, the manager. He showed us to a great table in a booth and as his shift was finishing, he introduced us to both his assistant manager and to our waitress who was fantastic. We ordered drinks whilst we contemplated the menu, although it took us a while to choose drinks as there was a good range of cocktails, wine and soft drinks, not to mention the prosecco options! House Prosecco, Skinny Prosecco or you can even pimp up your Prosecco by adding passion fruit such as raspberry and mint, Sicilian lemon or mixed berry. Once drinks were ordered we concentrated on choosing food. Firstly, the starter; there were lots of bread based options plus soup, arancini, fondue and antipasti and sharing plates but we decided on the Butterflied King Prawns with garlic butter, pepper pesto and white wine accompanied by the most gorgeous little bread rolls and one of the specials, Pumpkin and Mozzarella Croquettes. Both were absolutely gorgeous, really tasty and just the right amount. For main course there was a great choice of the usual Italian dishes like pizzas, pasta and risotto but also some great meat and fish dishes such as duck arrosto, ribs and spiedini, a hanging skewer of oven roasted chicken or prawns and salmon. As a vegetarian I chose Porcini Giganti Tortelloni, huge pockets of ricotta and mushroom in a sauce and my husband had Pollo Prosciutto, chicken breast wrapped in ham with a white wine sauce, Tuscan potatoes and green beans. The pasta was excellent and very tasty and the only criticism about the chicken was that we would have loved more of the 96 | WE ARE HERE & NOW

fabulous sauce. Although very full from these two excellent courses, we could not resist the dessert menu. Lured by cheesecakes, tiramisu, chocolate melt and ice-creams, we had a hard decision to make. But eventually we managed to decide. Steve opted for the Lemon Meringue Sundae which he enjoyed although the lemon sorbet was a little tart and more meringue would have been nice but this did not detract from its wonderful flavour. I had the Vanilla Pannacotta with passion fruit coulis and prosecco which was sublime. What a fantastic end to a lovely meal. I wanted to lick the plate! Even though I was full to brimming if someone had put another serving of the pannacotta in front of me, I would have had to eat it – it was just too good to refuse! Throughout the meal our wonderful waitress regularly checked that everything was ok, that we were happy with our food, that we were ok for drinks and didn’t need anything else. The service was some of the best we have received anywhere, really friendly yet professional and unintrusive . In summary, Zizi is definitely a brilliant venue to meet friends for a night out with great food and a fabulous choice of drinks or to have a good meal after a busy shopping trip. The atmosphere is buzzing, the decor modern, the food really good and the service great. Plus, to make it even easier, the car park, which is very bright and feels safe, is right on site for stress free parking which may sound like a silly thing to mention but have you tried city centre parking recently? The Screwdriver hardly needs any introduction at all, as a combination of vodka and orange juice, it’s as simple as cocktails get. However, its origins are not. The most popular story goes that the Screwdriver came to be when miners or other blue-collar workers started mixing vodka and orange juice using their screwdrivers. However, it is hard to be certain whether there is much truth to this legend. Another story says that the Screwdriver, along with other vodkabased beverages, was first invented and pushed by one John Martin, who was trying to make Smirnoff Vodka a big brand in the United States. Not only is he credited by some with inventing the Screwdriver, but legend says he once filled a tanker with his Screwdrivers and handed them out on Hollywood Boulevard. The Bloody Mary is an extremely famous cocktail and needs little introduction. It is often the go-to hangover “cure”, and is generally consumed early in the morning for that purpose. The Bloody Mary has many variations, but they all include vodka, tomato juice, and a selection of spices for flavor. While most people attribute the creation of the drink to a restaurateur in the early 1900s, some people have come up with a much more fanciful explanation. Apparently some people attribute at least the name of the drink to Queen Mary, often known by her much more sanguinary nickname due to her brutal attempts to return Catholicism to England—some suggest that the tomato juice is supposed to represent blood. However, there isn’t any real evidence to support this theory.

The Manhattan, for those of you who aren’t familiar with it, is basically a Martini for those who really like their whiskey over vodka. A Martini usually consists of vodka or gin, vermouth, and is served with an olive. A Manhattan consists of whiskey, vermouth, bitters, and is often served with a maraschino cherry as a garnish. Long before the Second World War, Winston Churchill’s mother lived in the United States and, according to the stories, was celebrating in New York. Supposedly she had quite the sweet tooth and the drink was invented to fit her palate. While the story fits with our love of Winston Churchill and his wacky antics, it unfortunately has no basis in truth. Historical evidence points to his mother being in England at that point, actually pregnant with the future wise-cracking guy we all came to know and love. The Mojito is a rum-based cocktail that has long been popular with sailors. The drink makes use of mint leaves by first using a muddler to release their flavor. These mint leaves are then mixed with lime juice, sugar, and soda water. As with many famous cocktails, its origin is shrouded in mystery, but its birthplace was definitely Cuba. One feature the various stories seem to have in common and that makes perfect sense is the Mojito’s ability to help to fight off scurvy, which would explain its popularity among sailors. Long before modern medical science had figured out all that jazz, sailors often had to deal with a scurvy problem, and citrus was one of the best preventatives

YES CHEF National Award-winning Leeds chef gives top tips for Valentine’s Day

If you’re looking to impress a loved one this Valentine’s, there is no better way to show you care than donning your apron and whipping up a spectacular Valentine’s feast. Greg Lewis, Head Chef at our favourite Basque restaurant Pintura Kitchen and Bar exclusively gives H&N Magazine his fool-proof tips for foodie love.

In terms of cooking on Valentine’s day, you don’t want to attempt anything too heavy or overly fussy. A nice piece of steak with a really sharp dressed salad and chips is a great choice (no onions or garlic of course!) To cook the perfect steak, bring the meat to room temperature first before cooking, to give the fat a chance to melt and permeate the meat. The steak you pick shouldn’t be super red and should be well marbled. Redness generally means a lack of aging which results in a tough steak! Don’t forget to season liberally with salt and pepper and crucially– rest your steak for 3-5 minutes after cooking. This allows the meat to relax, leek out any unnecessary water and tenderise itself. Spanish food and pinxtos are great for romance – shellfish and prawns in particular. Oysters are a sophisticated and obvious choice thanks to their

aphrodisiac qualities! Funnily enough, I’ve eaten oysters in Bilbao a number of times and the way the locals like to eat them is with good old British Lea and Perrins! Oysters done three ways is so simple but will look impressive. Serve one with Henderson’s Relish (Yorkshire-style Worcester sauce), one with shallots and sherry vinegar and one in a shot glass with Spanish Cava. Dessert! Nothing says romance more than a chocolate fondue and it’s also really fun! My Toblerone fondue with homemade honeycomb and marshmallows is a sure-fire winner. And don’t stress! There is nothing worse that will affect the mood and the food than a panicked chef. If something doesn’t go according to plan then just laugh it off and soldier on. By keeping it simple you should be able to avoid stress and focus on enjoying the company and the evening!

WITH GUSTO In the leafy Leeds suburb of Cookridge sits a 200-year old Olive tree, providing the perfect backdrop to the timeless elegance of Gusto. A real flavour of Italy combined with proper Yorkshire class. H&N dropped by to road test the A/W menu and boy were we in for a treat...

I

t was a dark, cold evening and Gust Cookridge is always so inviting, a restaurant that in our opinion is one of the best, so this was a real treat. On arrival we were offered a cocktail, a cracking way to get everyone relaxed and socialising and then we were shown to our table. We all sat around the one large table and the format for the evening was that we would be served full sized portions of dishes from the new menu, put some on our plate and pass it on to the next person to do the same. So, the starter dishes arrived; The Cheese Board - served with three cheeses: goat’s cheese, dolcelatte and smoked provola, with 2 slices of rosemary focaccia and 1 ramekin of houmous. Olives, sundried tomatoes and rocket to garnish. All of my favourites along with The Meat Board - served with three slices each of- prosciutto, salami sopressa and coppa (traditional Italian dried pork neck), with 2 slices of rosemary focaccia and 1 ramekin of houmous. Olives, sundried tomatoes and rocket to garnish. Both of these ticked all of my boxes and the quality of ingredients and the presentation were superb. Cold Smoked Salmon - old smoked salmon on a bed of celeriac and apple remoulade (coleslaw) with mustard seeds, drizzled with a tomato, caper and lemon dressing. Served with a lemon quarter. Ok, so I wouldn’t have chosen this under normal circumstances but oh my! Absolutely delicious, delicate and I wanted more! Finally, Roasted Butternut Squash and Chickpea Salad - chickpeas, butternut squash, fennel, pomegranate, carrot, spiced pumpkin seeds, rocket, lollo bionde, little gem, cucumber, radish, julienne red chilli, spring onions, crispy shallots and soya beans. Dressed with lemon. Definitely this would not have been on my radar but I loved it. What was going on with my taste buds? Pasta’s and pizzas came next. Seafood Tagliatelle - tagliatelle pasta in a mouclade sauce (white wine, curry, cream, garlic) with mussels, squid and prawns. Totally on my wave length and I watched everyone before me putting far too much on their plates! Also

Spaghetti Pesto - spaghetti served with rocket, green beans, sundried tomatoes, black pepper and pesto. Perfecto! Plus, Funghi - mozzarella, smoked provola, chestnut, oyster and button mushrooms. Topped with rocket, fried oregano and porcini mushroom salt. I know it sounds excessive but there honestly were a lot of us round that table! Finally, Fiorentina - mozzarella, dolcelatte, red onions, spinach and mushrooms (chestnut, button and oyster) with an egg cooked into the middle. Spinach dressed in olive oil garnish. There was honestly nothing to test me in that little lot, each cooked and seasoned perfectly, I was very happy. And so to the main courses. Lamb Cacciatore - lamb shoulder, pancetta, red wine, carrots, celery and onions slow cooked in a tomato sauce with bay leaves. Served with 2 slices of toasted artisan loaf, cold bruschetta mix and pesto. Cacciatore means ‘Hunter’ and it used to describe this style of stew. Succulent, full of flavour and completely moreish. Fillet of Pork ‘Saltimbocca’ - a fillet of pork wrapped in prosciutto and sage, served on a bed of mashed potato with a red wine sauce that has been mixed with tomato bruschetta mix and Marsala wine. Another taste sensation, with flavours that jumped around the mouth. Oven Baked Fillet of Cod - cod tail wrapped in Tuscan ham, served on a bed of pepperoni spiced puy lentils. Garnished with pea shoots, a lemon quarter and lemon dressing. This one just blew me away. Initially put off by the puy lentils but the whole dish was just magical and delicate. Desserts were Basil and Mint Panna Cotta - basil and mint panna cotta server with a plum compote (plum, sugar, cinnamon and nutmeg) and basil garnish and Vanilla Cheesecake - a slice of vanilla cheesecake served with 5 Amara cherries and cherry syrup. Thank goodness we were all sharing and both of these delicious desserts were just enough to cut through and finish off an excellent tasting menu. My dilemma? How on earth do I choose what to eat next time I dine there as having tasted the whole menu I am now spoilt for choice. I’ll give it a good go though!

THE FOOD AT COMPTOIR IS FRESH, HEALTHY, HONEST AND AFFORDABLE. VISIT FOR LUNCH OR DINNER THEY SERVE ALL TYPES OF INTERESTING AND COLOURFUL DISHES. Shopping in Leeds and need a bite to eat? Going to the Everyman Cinema and fancy a pre-film cocktail and nibbles? Or just want a night out with family or friends? If you’re looking for something a bit different then Comptoir Libanais is the place for you. This Lebanese restaurant on the top floor of Trinity Centre in Leeds, right next to the Everyman Cinema, is fun, quirky and different. Decorated in a cross between Middle Eastern style and pop art, it hits the senses straight away with its fun feel. The walls, the menu, the seating all follow the theme and there are even traditional artefacts available to buy, such as silver teapots and embroidered bags. I visited on a Monday night with my friend, Sue, and we were warmly welcomed by the manager who asked where we would prefer to sit. There was a choice of a few tables but, for a Monday night it was very busy with parties in as well as small groups. We chose a corner table and settled down to work our way through the menu for food, drink and cocktail choices. There was a good choice and we were tempted with several items, if there was anything we were unsure of the staff were very helpful and informative and guided us through our options, recommending different dishes to try. To start we opted to try the cocktails. What a good move! The list was a bit different from your usual Pina Colada and Sex on the Beach so Sue had a Dahia, gin with rose water and grapefruit and I decided on a Simple Delight, which was an alcoholic, liquid chocolate Turkish Delight and absolutely delicious. Next time I go I will order one of these straight away whilst I peruse the menu! So that we could sample as much as possible we chose to share the Mezze Platter for one as a starter, which I’m glad we were sharing as it was huge. It gave us a taste of hummus, tabbouleh, falafel, a rice dish, halloumi and a smoked aubergine dip with pomegranate seeds, Baba Ghanuj, (which was my favourite), all accompanied by pitta triangles. We couldn’t finish it otherwise we would have had no room left for our main course but it was all lovely.

For our mains, Sue had the Chicken Sirine Salad which the manager recommended and I had Salmon and Avocado Couscous Salad, with the salmon warmed although normally it comes cold. I had enquired about the Halloumi Manoucha as a main course but was advised to have it as a side dish as it was more of a pitta bread. We also added a side dish of Batata Harra, which were fried potato cubes with spices. Again it was all lovely and tasty and very filling and I loved the pomegranate seeds in many of the dishes. We both thoroughly enjoyed what we had and loved experiencing these new flavours. I particularly liked the Halloumi Manoucha which had seeds on giving it a lavender flavour which was unusual but lovely. Unfortunately we left half of it as it was so big so perhaps a smaller size would have been better. There were still plenty of other choices left for next time such as tagines, wraps and grill items as well as other salads. With our meal we had a glass of white Lebanese wine each called St Alphonse which was gorgeous. Even though we were very full we managed to squeeze in a light dessert of frozen yogurt, mine with Halva and Pistachio and Sue’s with Dates and Sesame, both lovely and refreshing and again different tastes to usual western desserts. Had we had more room there were several cake style desserts we could have chosen, which reminded me of Greek desserts like Baklava. All in all it was a great experience.
