Yes, we have been busy bees haven't we! And that is just the food section. Just on that foody note, our EAT (Everything About Taste) Awards 2016 are just around the corner. The nominations will be announced in the next edition of H&N and we can't wait to see who our finalists are! Last year's awards went down a storm and read like a red carpet of restaurants. Lets face it, the benchmark in our region has been set pretty high so we expect the competition to be fierce this year and if your favourite spot is shortlisted you must vote vote vote! You will find all the details in the next H&N. So what else have we been up to? McQUEEN THE MAN BEHIND THE LABEL

It may be a cliche tale of rags to riches, but this is one journey that certainly didn’t lack originality. Lee Alexander McQueen; son of a taxi driver and raised on a council estate was propelled to superstardom through the success of his self titled label launched in 1992. Renowned for his bad boy reputation and controversial collections he stole the hearts of the fashion world. A tormented soul whose anguish and woes provided dark inspiration for his most successful designs also ultimately brought about his tragic death. H&N take a look back at some of the designers defining collections and those that were to shape the McQueen legacy. 6 | WE ARE HERE & NOW

Leaving school at 16, McQueen headed to Saville Row as an apprentice. It was his work at Anderson and Shephard and Gieves and Hawkes which ignited his passion for beautiful tailoring. (He later affirmed his reputation as the ‘hooligan of British fashion’ claiming he’d sewn ‘I am a c***’ into the lining of a suit made for Prince Charles during his time spent there.) He went on to study at Central Saint Martin’s College and received an M.A in fashion design. Inspired by Jack the Ripper, his attention grabbing degree show collection was famously bought by Isabella Blow. It was to be the start of a longtime friendship with the London Stylist who also became Lee’s close mentor. It was Blow who suggested he dropped his first name and the brand as we know it today was born. Highland Rape AW95 was the first McQueen show to receive a sensational reaction. The controversially charged collection featured ripped tartans, tattered lace and his infamous provocative leather ‘bumsters’ (so named for their low- slung, revealing nature). Models staggered down a foliage strewn catwalk in barely there outfits to the gasps of a shocked audience. The immense media

backlash saw Lee labelled as misogynistic and titled ‘L’enfant Terrible’ by the French press. However, the designer fought back explaining the show was intended to be a commentary on the oppression of the Scots and the rape of a culture. Opinions were divided, but what could be agreed upon was that the show was a spectacle and the first in a string of theatrics which McQueen became celebrated for. Possibly one of the most famous fashion shows of all time was No.13 SS99. Again it was Lee’s showmanship which thrust this collection into the limelight. The designs were inspired by the struggle between the highly detailed hand- crafted features seen in the arts and crafts movement of the late 19thC versus technology and its advances. The climax of the show came when Shalom Harlow wearing a beautiful white broderie anglaise dress was veritably assaulted by two mechanical robots. The robots customarily used for painting cars defaced the dress with yellow and black paint as the model spun uncontrollably centre stage. The chaotic and


apparently impromptu finale had been carefully choreographed by Mcqueen and the dress went down in fashion history. Voss SS01 was a monumental show for McQueen. He showcased his exquisite trademark tailoring, strong silhouettes and painstakingly detailed workmanship through a line up of cocktail dresses, suits and outright artistic pieces. The catwalk featured models turned inmates strutting manically within McQueen’s asylum; a clinical glass cube. Striking designs included dresses adorned with feathers and shells, a revealing jigsaw-piece creation and a headpiece made up of taxidermied hawks. Almost unsurprisingly, the finale came in the form of a signature McQueen showstopper. The walls of a box within the cube smashed to reveal the nightmarish scene of a voluptuous, reclining nude wearing an iron mask attached to a breathing tube and surrounded by fluttering moths. The dark nature of the collection was typical of the the tormented designer who became obsessed with finding beauty in the marcarbe.

Plato’s Atlantis SS10 was truly one of his finest collections. Trademark couture cut silhouettes were created from fantastical digital prints (a relatively new technology at the time). The inspiration behind the show had been nature, or rather the breakdown of it as as the world entered a post apocalyptic era. Models appeared has half animal half human hybrids with bleached eyebrows, sculpted, horn-like hair and constructed gill- like cheekbones. Moulded ‘Armadillo’ shoes (made famous in Lady Gaga’s ‘Bad Romance’ video) and beautifully intricate computer generated reptilian and aquatic prints wowed the audience. McQueen once again turned the idea of the traditional exclusive fashion show on it’s head as he live streamed the entire thing; something which is now commonplace. Tragically, Plato’s Atlantis was to be Lee’s final collection as he sadly took his own life in February 2011. He left a legacy of beautiful craftsmanship, outstanding showmanship and innovative, forward thinking design.

What are you actually wearing? BRITONS are sharing unintentional messages and sporting ancient and religious symbols with meanings they are unaware of, according to new research.

More than three quarters of British adults are unaware of the meaning behind the ancient symbols they wear on their clothes and jewellery. The survey of 1,000 UK adults, carried out by ChloBo, a British boho-luxe jewellery brand found that 76% were unaware of the meaning and significance of popular ancient symbols. 81% of Brits were unable to identify the Hamsa sign, an ancient middle eastern symbol often worn by on jewellery by Jennifer Anniston and Heidi Klum. Whilst 88% could not identify the Om/ Pranava symbol, commonly used in Buddhist and Hindu beliefs, and often worn by Miley Cyrus. 77% of Britons failed to identify the Ankh symbol, recently sported by Beyonce in her most recent music video. Whilst the Jewish symbol, Chai faired no better with 94% of respondents being unable to identify the symbol of life. Respondents were better at identifying ancient figures more than three-quarters (79%) were able to identify Buddah. Brits also fared better at identifying zodiac symbols, with 52% able to identify at least six of the 12 signs of the zodiac. Jo Sass, brand communications director at ChloBo said, “It is interesting to see just how many people are unaware of the significance of symbols they are walking around wearing. Whilst we continue to explore a wider variety of fashions and cultures, people are simply adopting symbols, patterns and designs for aesthetic reasons, and are failing to understand their deeper meaning.” The symbols adopted and worn by many for fashion reasons actually hold a lot of significance and meaning, and are based on positive philosophies of life found in the worldís many cultures. If Britons researched the symbols and their meanings first they may feel an even stronger affiliation to their meanings beyond the celebrity trend. Women were better than men at identifying cultural symbols, however men (26%) performed better at recalling the meaning of the symbols commonly used in fashion and jewellery. 8 | WE ARE HERE & NOW

A guide to the cultural significance of some jewellery symbols: Hamsa - The ancient Middle Eastern talisman symbolises the†hand of god, and is a protective amulet that is believed to bring its owner good luck, happiness, and good health. Om/ Pranava - The symbol, commonly found in yoga is derived from Buddhist and Hindu beliefs, and is called Pranava, which translates to it infiltrates life and runs through our breathí. It is a primordial sound and represents god, creation and oneness. Buddha - The Buddhist way of life is based on the teachings of Buddha, the term means ëone who is wiseí, who holds a state of intellectual and ethical perfection. The term†literally means enlightened one, or knower. Ankh - There are multiple interpretations of this symbol, however the Egyptianís believe the ankh represents the Nile. Other interpretations claim the looped cross symbol represents eternal life. It is also referred to as the crux ansata, which translates to the key of life. Star of David - This Jewish symbol, also referred to as the shield of Davidí has six sides which reflect the belief that god rules over the universe and protects it from six directions, north, south, east, west, up and down. Dove - The dove appears in Judaism and Christian culture, and signifies love and peace. The dove is a messenger and is often depicted with an olive branch in its beak.

FIELDS OF FASHION Recently we have collaborated with an Independent film maker on a short piece for YouTube entitled Fields of Fashion. The photo shoot was great fun and provided us with some fabulous shots which have been well received by all our facebook friends, here is a sample of some of them. The shots really brought the clothes alive and the models did a great job on the day. It got us thinking here at H&L about fashion and what it means to us. To some clothes are a functional necessity but we believe they can help build confidence, create a good self-image and can represent you and your personality in many ways. We want to encourage you to try things you wouldn’t normally, experiment with colours and looks. Maybe get a friend to pick an outfit for you to try on - often people see us totally different to how we see ourselves so friends can help you push your boundaries with clothes. DRESS TO IMPRESS When your choosing an outfit, whether it’s just for work, for a walk, a meet up with friends or a special occasion or night out remember to think of the whole look. The way you wear your hair, make-up, accessories and shoes can all change an outfit. Dress to impress, not anyone else but yourself. Wear your clothes with confidence and it will show. DON'T SHOUT. JUST TALK. Juliette Kinsey of Just Talk Mediation and Kinsey & Co Solicitors talks to H&N about her new family mediation service in Baildon and how it is helping separating couples increase their communication without increasing the volume. Juliette is a solicitor and family mediator with Kinsey & Co Solicitors. She has recently founded a new mediation practice in Baildon called Just Talk Mediation which is a dedicated family mediation service designed to help separating couples resolve their issues together and away from the courts. She is passionate about helping separating couples find a way forward beyond the breakdown of their relationship. Juliette has found over the years that whilst in emergencies the law courts can provide clients the personal protection and financial security they desperately need, in many cases the issues that need to be resolved between a separating couple can be resolved best by both parties being willing to sit down and talk to each other and explore their options in a safe and controlled environment. “Separating from a partner or spouse is often painful and upsetting. Separating couples who are prepared to sit in a room with me in order to try and resolve their disagreements are courageous. It is a privilege to work with them and assist them in achieving solutions together.”

So, what is it that makes mediation different to going to court to resolving family disputes?“The biggest difference I would say is that couples who decide to mediate retain control of the separation process. It is they who decide what they want to talk about in mediation, enabling them to decide what arrangements are made for the children, the family home and their finances. Mediation assists them to achieve an outcome that meets the needs of the family best and takes into account the unique nature of each family.” Can you force your spouse or ex-partner to attend mediation? “No. Mediation is a voluntary process. This means that both parties must be willing to attend and participate in mediation in order for it to work. I can only help couples when both parties are willing to sit down and talk to each other about their disagreements and are willing to work together.” Is mediation confidential? “Yes. With a few exceptions everything that is discussed in mediation is confidential. This means that participants can put forward to each other suggestions about what happens to the

children or offers regarding financial matters without fear that such proposals will be used against them at a later date.” Do you find yourself taking sides when mediating? “No. As a mediator I am impartial. This means I will neither judge nor try and influence either party. Step into Harrogate’s Turkish Baths and be transported back in time for a relaxation experience of a lifetime.

For centuries stylish visitors have flocked to the spa town of Harrogate to ‘take the waters’ and enjoy a regime of relaxation and rejuvenation. Their importance lies in their decoration, elaboration and rarity. Harrogate’s Turkish Baths and Health Spa remains as popular today as it was a century ago, with over 55,000 people enjoying treatments each year. I think Dream Spa has become my favourite place to switch off, relax and completely recharge my batteries; they not only offer this superb luxury range of treatments, this beautiful brand new spa has all of the facilities, setting, atmosphere and expert therapists that you would travel miles to find, and they are right on the doorstep! Let me tell you why I love this spa and the Germaine de Capuccini treatments so much, as I am steadily working my way through them. Each massage challenges and pleases every one of your senses, the massage I have tried most recently is The Exotic Ceylon Shells. The experience started as I was led to a dimly lit room full of candles, they were everywhere, creating a candle walkway, filling the air with rich aromas and relaxing music played softly in the background. Once on the massage bed, I had an eye pillow placed over my eyes which not only blacks everything out, it heightens the rest of your senses. The treatment began with my therapist, Dora placing different oils under my nose for me to smell and I chose the one that appealed the most, this apparently is a way of testing which essential oil your body needs most and that is the one used for the massage.

The room was then sprayed with essence of teak wood which I breathed in and relaxed further as my welcome ritual moved on to my feet being gently massaged with hot flannels, followed by ostrich feathers being stroked up and down my body. With my eyes covered by a scented lavender pillow, it was unbelievable how much my other senses kicked in to overdrive, this was a massage like no other. The massage then began with sweeping motions up and down my body, Dora placed her hands inside huge Ceylon Shells, alternating with much smaller shells for deeper penetration in to the muscles, in all 8 different shells were used and I was informed that this particular massage would boost circulation and lymphatic drainage to detoxify and relax the muscles and that the oils would condition and nourish the skin. I became so relaxed that I am ashamed to say I woke myself up with a bit of a snort! How unladylike, but Dora never commented, professional to the end she completely ignored my piggy moment and carried on. Thank goodness I was face down at this point as I was slightly embarrassed, not too embarrassed though as I found myself drifting back into a deep sleep. The hour passed far too quickly and I felt so relaxed all that I could think about was hitting the sofa for the rest of the evening and chilling. Which I did, and proceeded to sleep like a baby that night! I have already booked my next visit, watch this space for my breakdown of the Dream Spa Journey

to the East, which is a whole 90 minutes where I will experience another very different Germaine de Capuccini massage. In the meantime, why not visit this wonderful spa yourself. Why contour, you say? Well, if you want cheekbones a supermodel would be proud of, contouring is the neat beauty trick you need in your life. Many women in the UK use makeup every day, whether just a dash of lippy, a swish of mascara, a brief blush, or the full works, but contouring is something that most of us (aside from the YouTube generation) have no clue about whatsoever! For makeup artists contouring is old hat, but for the rest of us that have no idea how to contour, or even what contouring actually means, we’ve put together a helpful hints and tips guide to help you through the minefield. Is it foundation, is it concealer, it is bronzer, is it powder, do we need a stick, a brush or fingers to apply? We have so many questions about how to contour effectively.

Our TV’s are full of celebrities who contour with ease, there’s Kim Kardashian West and her little sister Kylie Kardashian that both seem to be expert contourers (if there’s such a word), and then you’ve got the reality TV stars of today who have endless cheekbones, perfect necklines, chiseled chins, and noses that are perfectly dainty, and we’re lead to believe that contouring is the answer. We thought we’d better investigate to see if contouring to perfection is something that we, the everyday fabulous (slightly normal, non celebrity status) amazingly beautiful women can achieve. And, after speaking with the team at Maybelline New York, it seems that we can!

‘‘Treat your make up like jewellery for the face. Play with colours, shapes and structure - it can transform you’ Maybelline suggests that by using two of their key contouring products we can achieve this lasting look for day or night. Using Maybelline New York’s Master Sculpt Contouring Pallet, which is a 2-in-1, contouring hero, and Master Contour V-Shaped Duo, which is an enhancer, and highlighter both give instant contour perfection. Plus it has also been suggested that by using a concealer to assist with highlighting is a bonus for contouring. Start with the Maybelline Master Contour V-Shaped Duo (there are 2 shades to choose from that suit your skin tone): Sweep the darker side under your cheekbones, into the hollows of your cheeks and along the underside of your jawline. Flip your duo stick and run your highlight shade in a ‘c’ shape from your temple and onto the tops of your cheekbones. Blend into your contour with your fingertips for a seamless transition between the two. To take it to the next level, you need to: • Blend your contour down either side of your nose and underneath the tip to lift and slim its shape.

• Pat a touch of the highlight shade onto your cupids bow to make your lips appear fuller. Sketch and blend the darker shade through your eyelid socket for extra definition. • A hint of highlighter under your brow bones will make your eyes appear brighter and more awake. Moving on to the Maybelline Master Sculpt Contouring Pallet (again there are 2 shade to choose from), we’ve taken advice from Sharon Dowsett, Maybelline UK Make-up Director who suggests that there are two steps to applying the Master Sculpt Pallet: • Apply the contour powder with the brush provided – flick it up against the underside of your cheekbones, starting near your ear. Brow bones, jaw bone and temples can also be enhanced as well as the nose but remember this is about shaping your facial structure with subtle definition, so build up slowly – perfect sculpting can be a lesson in self-restraint! • Stand back from the mirror to see the effect as dark has more depth from a distance, and then add more if necessary.

• Compliment the contour – bring light to your face to accentuate your highpoints, especially your cheekbones. You may also like to add a touch of highlighter to brow bones, bridge of the nose, bow of the lips and even the centre of your chin. There should be no hard lines – wipe excess powder off the brush and gently blend between the highlighter and contour shade.Nothing defines and accentuates our features better than a slick of contour and highlight. But, you’ve got to remember that this may take practice, and the process can be tricky to get right! We have tried and tested both the Maybelline New York products along with a Maybelline concealer as an added extra highlighting boost, however we still require time to get it right, but we’re well on our way to success and can honestly say that our cheekbones are definitely looking better. We hope that this little hints and tips guide has helped towards your future contouring issues. A thriving town with plenty to shout about...

Our discovery of Yorkshire is becoming a true education for us; this time we decided to uncover all that Farsley has to offer and there were more than a couple of fantastic surprises along the way. This historic town falls fair and square between the two cities of Leeds and Bradford and is considered a commuter town with easy access to both, and being just off the Leeds outer ring road and very close to Pudsey railway station makes Farsley a popular place to live. There’s a variety of housing from older terraces and cottages around the main Town Street area, to many large detached houses to tempt everyone from singles to professional couples, families and retired people. One of the first things you notice when visiting Farsley is that most of the towns’ amenities are situated centrally on or around Town Street and Town Street is very well cared for with beautiful flower baskets, tubs and bunting the full length of the road, and not one bit of litter to be seen. There is a Co-operative Group convenience store, a post office, bookmakers, many independent retailers as well as a handful of good pubs and a wine bar, this is a busy street, with all businesses actively supporting each other and being very well supported by local residents. 28 | WE ARE HERE & NOW

Something we didn’t know is that the Sunny Bank Mills complex, which now houses many independent businesses and has been transformed by a high-quality regeneration programme to create inspirational working and living space for the 21st century, is that the mills were once home to Emmerdale and Heartbeat as popular filming locations and sets. This in itself is a point of interest but there are also some really interesting historical buildings on Town Street too, Farsley Institutional Club dates back to 1898 and was given to the residents of Farsley to ensure locals could always benefit from a community social club. Deeva Indian Restaurant used to be a church and later a dance hall and many couples who met there now dine on a regular basis at Deeva, reminiscing about the day they met. Although very close to two city centres, Farsley is a lovely place to live and bring up a family and reminds us of Yorkshire tourist towns such as Haworth, full of old world character and charm, an eclectic range of shops and businesses and very friendly people. There are several schools in the town as well as further schools in neighbouring Pudsey and of course The Owlcotes Centre is on the doorstep should you feel the need to venture out for some major retail therapy at the Asda and Marks & Spencers

superstores. Farsley has a non-league football team, Farsley Celtic and Farsley Cricket Club, whose most notable player was former England cricket captain, Raymond Illingworth! Westroyd Park is also close by and they run regular events throughout summer so makes another great place to spend some time with the family through the school holidays. Then there’s Farsley Community Weekend in June, the cost of which is supported through fund raising events throughout the year. All in all, another wonderful Yorkshire town that we feel needs putting on the map. It makes for a great day out with so much to see and do. ANNUAL DETOX

H&N Travel expert Sue Heady discovers a special place to be cocooned in wellness and step off the daily treadmill to detox and reassess...

I

used to visit Shrubland Hall, a beautiful 18th century mansion in Suffolk and one of the UK’s first health clinics, religiously every year for a week-long detox of raw vegetables and daily massages that left me feeling totally renewed. Sadly, Shrubland Hall closed its doors in 2006 and I’ve spent the decade since seeking somewhere that can replace it. It has not been easy. I’ve visited several health retreats in different countries but never found anything that quite echoed Shrubland’s feeling of being cocooned in wellness. At least that was the case until earlier this year when I visited the Adler Balance (www.adler-balance.com), a medical competence centre that opened in 2009 in the idyllic mountain setting of the Italian Dolomites. The daily stresses of modern life – work issues, family problems & all the other well-documented 21st century afflictions – had left me feeling in need of a complete overhaul, so I signed myself up for a week-long Intensive FX Mayr Detox package. A week prior to departure, instructions arrived telling me how to prepare for my healthy break. I knew then that this was a place that took itself seriously, a sentiment that was endorsed when I arrived to find a hotel of just 31 rooms made of

natural materials such as wood and slate according to the principles of organic architecture, giving guests every opportunity to completely detox. My first appointment after check-in was with Dr Laura Santini, one of the resident doctors at the Adler Balance. Following a medical and physical examination, I was subjected to a full set of blood tests, a bio-impedance analysis and a bio-electric check-up (for assessing body composition). All the results pointed to extreme levels of stress and before Dr Santini even started to analyse them in detail, she made me promise not to turn on my phone, iPad or laptop for the duration of my stay. So began my seven days of physical and digital detox. The first few days were tough – not digitally, I was more than happy not to look at an electronic screen – but physically. My body really was in need of rest and I found myself constantly nodding off – during the algae wrap, the hydro massage and the full body massage that were included in the package on a daily basis – as well as going to bed early and rising late. The food offering, which follows the FX Mayr principles of light, alkaline meals lovingly prepared in a healthy way, using the produce of local farmers, did not provide the sugar-rush I’d got

used to back home to help me through the troughs. But on the fourth morning that I awoke in the Adler, I knew something had changed. I started to feel alive again. They say detoxification is a great way to assist your body’s natural self-cleaning system, helping to revitalize the body by eliminating the toxins that we accumulate through simply going about our daily lives – through the air we breathe, the food we eat, the stresses we carry with us. As my body started to clear these toxins, I could feel all my organs starting to function more efficiently. My senses were heightened, my body felt lighter, colours seemed more intense, the mountain air seemed even crisper and I had energy to do things again. I signed up for an afternoon walk and headed into the foothills with Karin, the nurse at the Adler Balance, to learn all about the healing power of herbs and plants that we pass every day in the countryside. Who knew dandelions, when used to make “tea”, are great for blood cleansing and can aid kidney problems? Or that daisy “tea” can ease a cough? The following day, in between more appointments (a personal training session and my daily body massage), I explored the pretty mountain town of Ortisei, in which the Adler Balance is located. An old trading centre with a rich history, explained in detail by the Museum de

Gherdëina, it has a pedestrianised main street, full of shops selling wood carvings (a local artisan craft of which they are very proud) and outdoor adventure gear, as well as cafes, perfect for a spot of people watching – but no coffee, you understand, I stuck to water! I treated myself to a pair of Nordic walking sticks, which I put to good use the next day when I took the lift up to the Alpe di Siusi (the largest high altitude Alpine meadow in Europe, with panoramic views of the craggy peaks of Sassolungo), which is part of the UNESCO World Heritage Site of the Dolomites, recognised for its outstanding natural beauty and culture. Well sign-posted hiking routes gave me the chance to put my new purchase to the test as I marched along for a good three hours – something that just a few days previously would have seemed unthinkable, such was my exhaustion. When I wasn’t busy with appointments outlined in my detox package and exploring my environs, I immersed myself in the largest wellness facility in the Dolomites at the Adler Balance’s sister property Adler Dolomiti to which it is linked via an underground pedestrian walkway (meaning you can get there in your dressing gown!). Early morning, I often had the Aguana zone, with its indoor and outdoor pools, including thermals, and the 9000 square metres of private parkland to myself, providing the perfect opportunity to start the day with peace, calm and personal reflection. In addition to Aguana, Adler Dolomiti has Dolasilla for beauty & vitality and AdlerFit for sport & fitness, where a full programme of leisure activities (such as yoga, meditation, aerobic classes and two guided walks daily) is provided complimentary to every guest. However, I mainly

opted to exercise alone, at my own pace; this felt like a week for me, to do what I wanted when I wanted how I wanted. As my visit came to an end, I was delighted to discover I had lost 3 kilos. More importantly, however, I felt completely refreshed and I returned home with a booklet produced by Adler Balance titled “Precious Suggestions for Every Day”, as well as a personalised nutrition programme from Dr Santini (based on my lifestyle and food preferences) that – to this day – keeps me powered up during the day (no more post-lunch slumps) and helps me unwind in the evenings. The results are that my weight has continued to drop off and I’m managing to keep my stress levels under control. It was a tough week but would I do it again? Absolutely! The innovative Adler Balance health care concept, based on five pillars of health (diagnostics, nutrition, inner balance, exercise and treatments), provided me with great insight into my personal health – and the way I should be eating, working and relaxing on a day to day basis. So I left

feeling that not only had I had a holiday in a stunning hotel in a beautiful location, but I felt better for it and had really learned something from it. The Adler’s Intensive FX Mayr Detox package included a medical consultation on arrival, a bioimpedance analysis (for assessing body composition), a personalised nutritional profile (that will determine what you eat during their stay), a bioelectric check-up, a consultation with the doctor at the end of your stay, two manual abdominal treatments, three aqua detox foot baths, three algae wraps and five Adler Balance massages. A full week’s programme costs Euros 1319 per person, plus the accommodation cost (from Euros 1072 per person sharing a double room). It’s certainly not cheap, but I felt it was a worthwhile investment and, as with all the Adler Spa Resorts, there is a real generosity of spirit, from the fresh fruit and juices available in the pool areas to the going home present of herbal mountain tea, that makes you feel like a cherished guest. Finally, I feel I have found a substitute for Shrublands, a special place where I can return once a year to be cocooned in wellness and step off the daily treadmill to detox and reassess my life. hnmagazine.co.uk | 37


ESSAOUIRA H&N travel expert, Sue Heady, steps back in time in Morocco

Flying into Essaouira is like stepping back in time. The easyjet plane, direct from London Luton, casually taxis right up to the terminal building, not another jet in sight, and the passengers walk the short distance to the arrivals hall. For now, this a one-flight per day kind of place – and therein lies its charm. It’s not exactly off the beaten track – Essaouira first became popular in the 1960s and 1970s, when it was on the hippy trail visited by musicians such as Jimmy Hendrix and Cat Stevens – but the lack of direct flights is certainly keeping the hordes at bay for now. As a result, it’s a very different place to visit compared with other Moroccan destinations, like the ever-popular – but often overwhelming –Marrakesh. From the airport, we were whisked straight to the Sofitel Essaouira Mogador Golf & Spa resort – Mogador being the city’s historic name – which lies a few miles outside the city walls. And no, it’s not a riad, but sometimes when you go on holiday, especially when it’s hot and sunny, the need for creature comforts (spacious comfortable rooms with balconies, two swimming pools, gym, tennis courts, golf course, extensive grounds leading right down to the beach) win over authenticity. Especially when the hotel has a regular shuttle service to ferry you into the heart of Essaouira, every hour, daily, meaning you can have your cake and eat it. And so we did. Taking the minibus into town most days, sometimes just for lunch, sometimes to 38 | WE ARE HERE & NOW

spend the day sightseeing, other times to browse the shops or to stay on for dinner. The first thing that hits you when you visit Essaouira is the smell and sound of the sea – this is an important fishing port and the omnipresent smell of fish hangs in the air, while seagulls soar and scream overhead. The second thing you notice are the varying degrees of blue – blue skies, deep blue sea, blue trawlers and sardine boats, faded blue shutters and pale blue doors, blue taxis and blue carossas (the carts they use to deliver goods in the medina) – an historic throw-back to the dye first created from Murex shells in Essaouria some 3000 years ago. A walled city dating to Phoenician times, Essaouira means “well designed” in Berber, the language spoken by the vast majority of the residents. Pass through the ramparts and you find yourself in the only medina in Morocco that was built to a plan! It’s not quite New York’s grid system, but – despite narrow alleyways – it is easy enough to find your way around, helped by the fact that Essaouira is fairly small with a population of around 70,000. A protected UNESCO World Heritage Site since 2001, its unique character has been retained and some of it, such as the city walls that front the sea, has already been beautifully restored. Wandering alongside the honey-coloured fortifications and through the warren of shops, restaurants and riads, we stopped often for a freshlysqueezed juice, to bargain with a pottery seller or a silversmith and to admire the intricate work of a Moroccan lantern. But in the end, the only thing we took home was some organic argan body oil – after all Essaouira is one of the few places in the world where the argan tree grows, so it seemed right to buy it at source!

In complete contrast to Marrakesh where a stroll around the medina becomes an obstacle course of bargaining shopkeepers and horse-drawn caleche drivers that needs to be overcome, wandering around Essaouira is a breeze. The people here are far more laid-back and leave you to your own devices. Perhaps it has something to do with the fact that the city has long been welcoming of other peoples and religions (at one point 40% of the population was Jewish and there remains a Jewish quarter with several synagogues). Make sure you find time to visit the busy port, the beating heart of the city, where you’ll find weather-beaten men mending nets, buckets of writhing live fish being sold to the highest bidder, and seagulls and cats competing to steal every morsel going. Every way you look, there’s a photo opportunity waiting to be snapped, with the blue-hulled boats taking centre stage. You can even eat at the port – a line of al fresco stalls serves up the simplest of menus including, of course, fresh fish and seafood cooked to order. For lunch, we headed from the port through Square Orson Welles – Orson Welles filmed the classic Othello here in the 1950s – to Riad Dar l’Oussia, just outside the city walls. There are better known riads in town, such as Villa Maroc and the L’Heure Bleue Palais (which features in Douglas Kennedy’s book The Heat of Betrayal – and well worth a read while you’re in Morocco), but the panoramic vistas from its

roof-top restaurant over Essaouira beach and towards the port are unbeatable – and the food’s pretty good too! Up on the rooftops of any riad, you really start to understand why Essaouira is known as the “Wind City of Africa”. Here, you often feel the full force of the trade winds, which come in off the Atlantic. While some people might complain about the winds whipping up the sand on the beach so that it gets everywhere, I like to think of it as a natural cooling system ensuring a temperate climate all year round. It also makes Essaouira a great place to learn how to windsurf or kite-surf, if the mood takes you! It’s not the only sport that is embraced in the city – late afternoon and into early evening sees Avenue Oqba Ibn Nafiaa converted into a make-shift football pitch for a friendly five-a-side (or more) match. All our exercise, however, took place back at the Sofitel, where we enjoyed a free introductory golf lesson on the Gary Player designed course, as well as making full use of the tennis courts and the gym. We were seriously tempted to try some quad biking along the beach (horse riding and camel riding were other options), but somehow we never found the time… Instead, we made the most of the hotel’s sun loungers, as well as the spa, where we indulged in a hammam or two – when in Rome and all that… It meant we returned home, thoroughly relaxed and not too poor, either. Booked through Secret Escapes, the flight, airport transfers and half-board accommodation at the Sofitel cost just under £500 per person for the week. Suffice to say, we will return! And soon, before Essaouira starts accepting more direct flights and becomes over-run with tourists.

Luxury travel coaching holidays are possibly something many of us haven’t considered, so here’s a personal day by day account of the best in luxury coach tours as experienced by Tanya Haigh with Insight Vacations. Tanya Haigh, the MD has just returned from a luxury tour which was one of her prizes for winning that award, this gave Tanya first-hand knowledge, enabling her to convey to her customers the kind of experience and service they will receive. 40 | WE ARE HERE & NOW

Day 1 - London Welcome Meeting I checked into the Milestone Hotel in Kensington, a Red Carnation property, commonly used by Insight Vacations. Their hotels are perfectly located in every destination, the décor is beautiful, and the service is outstanding. I mentioned that I needed an ATM and a post box. Within 5 minutes of my cases being delivered to the room, my butler had taken care of mailing my letters, and concierge walked me to the nearest ATM. All tour guests met in the library for a champagne reception, followed by a welcome presentation and gourmet dinner. We learned about the concept of Red Carnation Hotels, “to create something extraordinary with their heart and soul”. They

have created a uniquely warm and indulgent guest experience that is unsurpassed in the hospitality industry. Our evening dinner was delicious, and the setting was perfect and despite being in the centre of London, it felt like we were in an English Country Manor. Day 2 - London to Dorset After a sumptuous breakfast, we boarded the Insight Vacations Luxury Coach. For those of you who don’t like Coach Travel (usually me) this was different, with fewer seats, allowing for lots of leg room, a clean toilet and wifi on board. We passed through The New Forest, with stunning countryside and wild ponies, then stopped at Beaulieu, an award winning family visitor attraction. After lunch, we continued our journey to Evershot, where our accommodation was the award-winning Grade II Listed Summer Lodge Country House Hotel - the epitome of


luxurious five star country house charm. This was also a Red Carnation property set within glorious countryside in a picturesque village. The perfect romantic escape with exemplary service and elegant bedrooms. The group gathered for pre-dinner cocktails, followed by another fine dining meal.

to St Malo, again in the premium lounge. Our evening consisted of welcome champagne in Le Nouveau Monde Hotel, followed by a local dining experience where we visited a nearby restaurant. It was set in the centre of the bustling medieval town, with a great French atmosphere.

Day 3 - Dorset to Guernsey We rose early for breakfast, then departed on the coach to the Port of Poole for the ferry to Guernsey, where we were seated in the premium lounge. Our next hotel was the magnificent Old Government House and Spa, where we were to stay for 2 nights. Again the Red Carnation Hospitality shone through, and we were treated to a masterclass of making Gache Melee (a local apple pudding) and sampled the famous ‘Potato Peel Pie’. After our culinary lesson, we enjoyed a ‘Guernsey Presentation’ followed by a fantastic dinner and entertainment provided by a local band.

Day 6 - St Malo to Paris An early start to do a guided walk through the medieval streets before our journey to Paris. En-route, we stopped in Cancale to visit an oyster farm and sample them, fresh from the sea. When we arrived at Le Renaissance Parc Trocadero Hotel, Paris, we enjoyed a sunset drink in the garden. The evening was spent dining on a Michelin Star meal at The Westminster Hotel, followed by a trip along the Champs Elysee to view the famous Arc De Triomphe lit up for the evening.

Day 4 - Guernsey Full Day After breakfast, served in the conservatory, we had a private tour of the whole island of Guernsey – highlights included St Peters Port, war history, churches, shops, beaches and cafes. The afternoon was spent at leisure before our evening out at the Duke of Richmond Hotel. Here we had a very pleasant cocktail party on the terrace overlooking the port, followed by a BBQ dinner. Day 5 - Guernsey to St Malo The next morning was at our leisure, allowing for shopping in town before boarding the ferry

Day 7 - Paris All morning we embraced Parisian lifestyle by joining a French Food Connoisseur for a gourmet culinary walk through Montmarte chocolates, macaroons, meats, fromages and fresh baguettes were sampled throughout. We also visited major sights such as the Moulin Rouge, Eiffel Tower and the Louvre. Our final evening was enjoyed at Nouvelle Eve Cabaret, this included a private reception with the choreographer, and the best seats for dinner and a show.

RINSE & REPEAT Thinking of re vamping your bathroom? We take a look at some of the trends on the horizon this Autumn with Bagnodesign

ith the autumn and winter days and nights just around the corner, now is the perfect time to head indoors and turn your focus to sprucing up the bathroom. After all, there are few things better on a chilly evening than soaking in a hot bath by candlelight or taking a long, hot shower. And with christmas entertaining on the cards too, it is important that this small room is big on impact. AUTUMN SHOWERS If a complete redesign is what you have in mind then opting for a walk-in style showering area is a popular option and works particularly well at making small bathrooms look and feel much bigger. This wet room look is a good long-term investment too, as it makes the shower easy to access by all the family. One word of caution though, it is vital that the space is adequately waterproofed to avoid damage to fixtures and fittings and suitable drainage will need to be installed. While this can make this type of project a costly one, a budgetsaving alternative to a full-on wet room is often to combine a low level shower tray with a frameless

glass screen, creating a walk-in shower area which leaves the rest of the room dry. Another important consideration with this look is your choice of shower brassware, simply because it is always on show, so needs to be chosen as something of a focal point as well as based on its performance. A large, overhead deluge shower takes its inspiration from the hotel bathroom and offers both style and function, while a multi-function shower column offers the best of both worlds too. BATHING BEAUTIES If you are more of a bath person, or want to include a shower and a bath there a wide variety of options to choose from, depending on how much floor space there is available. While a freestanding bath may be appealing, make sure there is enough room around it for climbing in and out. If so, then prepare to choose between a classic or modern style, while there are also baths available in different materials, such as stone and acrylic, each of which has its benefits. Where space is limited opt for a more compact option that can be installed along one wall and even combined with a shower screen for an all-in-one shower and bath solution. STYLE ON TAP Alongside shower and bath brassware, the taps chosen for the bathroom can make a real impact both visually and practically. If the budget is tight then consider changing the existing basin and bath

taps as a quick, cost effective yet extremely effective way of freshening up the bathroom. However, don’t expect any decisions over exactly which taps to choose to be quick ones, as the variety available in terms of style and function is huge. While a chrome finish may seem like an obvious option as it will fit in with the rest of the room, finishes such as brushed nickel, matt black, white, copper and even gold are all becoming increasingly popular among homeowners looking for something a little different to the norm. Practical points to consider when choosing brassware include the type of washbasin you have – a countertop basin with a high rim will need to be paired with a tall mixer tap, for example, while a wall-mounted mixer is a good option for smaller basins and those that are supplied without tap holes. Water-saving features are also worth looking out for; taps with built-in water-saving functions can help to significantly reduce the amount of water a household uses. While this won’t affect the tap’s performance at all, it will be noticeable in the savings made to utility bills in the long term. Just as diverse in terms of styles available, washbasins can also have a big impact on the look of the bathroom as a whole. While there are a whole host of ceramic washbasins to choose from, in all sorts of shapes and sizes, consider also basins in materials such as metal, glass or stone to add real visual interest in bathrooms large and small.


WELL STORED One of the biggest considerations when revamping the bathroom is storage space. Whether the room itself is large or small, the demands placed on it terms of storage are likely to be big as bathrooms generally come with a lot of clutter. The ultimate aim of any bathroom refurbishment is likely to be making the space relaxing and calm, so too much clutter will really spoil the effect. However, regardless of how minimal you would like your bathroom to be, all of those bottles, lotions and potions need to go somewhere. The most effective solution to this age-old problem is good planning – if you are ripping out your existing bathroom and starting over then make sure you consider what kind of storage, and how much of it, you will need at the beginning of the project. This will ensure it can be incorporated seamlessly into the design and you won’t be left wondering where to keep towels and

toiletries. Meanwhile, for those simply updating their bathroom there are a variety of storage solutions that can be added to help clear the clutter, which in itself will have a dramatic impact on the look and feel of the space. From vanity units to tall cupboards and open shelving, the options are diverse and there are a host of clever internal storage solutions available too, making sure everything is just as neat and orderly behind the scenes as it appears on the surface. The key is to think about which areas of the bathroom are most prone to clutter and to focus on these to ensure these are kept tidy with everything close to hand as it is needed. This may mean adding storage to the shower or basin area of the bathroom, for example, as the need

arises. Modular furniture is therefore a good option here, as it is possible to add extra pieces over time, in a way that isn’t possible with a full-fitted alternative. As well as storage, furniture offers a great opportunity to add a splash of colour to the bathroom in a stylish way, and to tap into design trends like combining finishes and materials, such as high gloss with timber. Finally, no bathroom revamp is ever quite complete without some well thought out accessories and these can be updated with the changing of the seasons to give the bathroom that all-important freshen up. Whether chosen to co-ordinate with your brassware or as a statement piece, accessories put the final touch to your new-look bathroom.

H&N talk to designer Timothy Oulton about his 2016 collection featuring daring hand finishes and distinctly original pieces...

Timothy Oulton, Founder and Creative Director of his eponymous brand, is a master at blending traditional craftsmanship and pioneering design. Tim’s story dates back to his childhood days in Manchester, where he grew up surrounded by antiques from his father’s business, Halo Antiques. After leaving school at 18 with no clear plan, Tim embarked on a career in the furniture industry at Halo antiques with his father. He had no intention of remaining in the business and assumed he would eventually go on to work in the city. However, Tim soon found himself captivated by the exquisite quality of the antiques that came from meticulous, time-honoured handcraftsmanship and it is this inspiration that would characterize Timothy Oulton’s collections, as he explains; “exposure to the antiques industry at an early age introduced me to beautiful design. Being surrounded by great handcrafted products most of my life has definitely impacted how I produce my furniture.” Following five successful years of selling restored homeware items in the US, Tim, along with his brother, expanded the business into the UK, where they achieved sales of over £1 million in the first year. That same year, Tim, who realized there was no long term future in the antiques business, officially took the helm at Halo, repositioning the company to focus on blending traditional handcraftsmanship with a modern view point, thus ensuring their relevance in the market and beyond. Timothy Oulton’s pieces combine the best of traditional, authenticity with daring amounts of innovation in design, resulting in a product that is authentic and totally unique. “We have a point of view. Everybodys now for just three months. Currently Assistant General Manager.

What’s the best thing about working here?

The opportunity to work for something still very new, the team is the strongest I have seen and are all willing to learn new things. Weekly we have new training modules to ensure we are all on the same board and moving ahead with the times.

What’s the most challenging part of your job? So far I haven’t found any part challenging, in previous places the work life balance gets overlooked but Everybodys main ethos is to make sure we all have a great work life balance, which really helps to keep the team refreshed and ready to give great service.

What skills have been put to the test since joining the Everybodys team?

As a manager for this company, there is a lot to learn. Each of our managers goes through an all-round training programme which covers kitchen work, on the line, managing the pass, cellar management training, wine, spirits and draught training and many shifts shadowing experienced members of the team on the floor. I came from a restaurant background before working for Everybodys so I have always been competent on menu knowledge but I have never had the total in-depth knowledge of all products that has been provided to me by Everybodys.

What are your best-selling dishes?

Our burgers are certainly very popular; we do a secret recipe beef burger. I’d say we really have created a great recipe and both guests and the team love it. If I was a customer I would definitely throw in some salt and vinegar onion rings as a side order too!

What drinks are going down well?

With the sunshine finally coming out to play, our gin selection is certainly getting utilized. I’d say our 60 | WE ARE HERE & NOW

Tell us: What makes this restaurant so special? Everybodys - It’s one of those sayings ‘it does exactly what it say’s on the tin’ the fact that we’re open for breakfast, brunch, lunch and dinner with a great selection of beverages we are literally for everybody. We really want to be that place that the whole community of Guiseley talks about, which in turn will spread like wildfire to surrounding areas that wouldn’t automatically think of coming to Guiseley to have an amazing experience. We currently have a unique togetherness both within the team and the local community, and we are currently assisting with fundraising for Guiseley Christmas lights.

If you were a customer today, what would you order from the menu? I would have to spend the

Where would you eat out on your day off?

I’m a huge steak lover; my favourite place would be Gaucho as the steaks are cooked to perfection. You even get a board full of fresh beef shown to you at your table on every visit which can steer you away from your regular choice of steak.

What do you cook at home? Being an avid steak lover, I like to venture out to find locally sourced beef and I make a mean steak and chips. Mediumrare of course.

We have a variety of experienced staff so if you fancied an ale but you’re still quite a beginner, we would have the guys behind the bar doing tasting with you. If you always have the same glass of wine, we can guide you through our grape varieties, have a few tastings and maybe change that same glass of wine that you always have. The guest experience is one of our major focuses and if we can provide that little bit of magic on top of our great service then that makes our day.

Where have you visited locally recently, where the service was excellent? I have only been

back home (Leeds) a few months since my stint in London so I’ve absolutely loved venturing out

ill Crawshaw is the General Manager and the Head Cocktail Bartender at The 7 Steps Bar & Eatery in Pudsey, Leeds. Moulded from his vast experience working amongst some of Leeds. busiest and reputable cocktail bars & restaurants, Will has evolved his craft a long way since he first stepped foot in the world of hospitality and bartending. Having competed in various competitions and coming a close second in a previous ‘Cocktails In The City’ event for his creation, we’re happy to have him and to find out what makes him tick.

MEET THE MIXOLOGIST... WHAT BARS HAVE YOU WORKED AT? The more notable mentions are when I started working in Leeds City Centre from around 19/20 years old after becoming bored of working in the constricts of smaller, local pubs and restaurants. I went on to work at The Alchemist in Trinity Centre. I learnt a lot there, the way they do things all have good reason and contribute to the reason that place is so successful! From there I went on to bartend at Malmaison Hotel, whipping through learning the menu specs and solidifying myself as their head bartender, I went on to craft many of my own recipes there. My final stop in my run of City Centre bars was Be At One on Millennium Square, now this bar was special, such a great vibe and ethos surrounding their concept. With a daunting menu of just under 200 cocktails, I was given 8 weeks to learn the lot, along with advanced free pouring and the heavy emphasis on providing a unique guest experience. This was my favourite bar to work in, smashing out hundreds of cocktails each night, it was very tiring, but nevertheless a fantastic experience which has helped shaped my knowledge in such a way I am thankful for them giving me the opportunity. HOW DOES RUNNING YOUR OWN BAR COMPARE TO WORKING FOR OTHERS? Running my own place is the best journey and opportunity I’ve had in my career thus far, the creative freedom I have in creating my own menu and picking the products that go on my bar is a new lease of independence which I absolutely LOVE! It doesn’t compare to working in other bars, being told what to do, or what not to do, sticking to specs and all the rest of it. I wouldn’t change it for the 62 | WE ARE HERE & NOW

world and our concept works, all the guests that come through the door leave with a positive experience regardless of whether they’re dining or just joining us for a drink. I couldn’t do it without the help of my Executive Chef Joe, who I work very closely with, and the owner Neil, who’s happy to leave us to it, with faith we know what we’re doing! WHAT`S YOUR FAVORITE COCKTAIL: TO MIX / TO DRINK? I’m an absolute sucker for a Martinez, often dubbed father of the classic Martini, this is an old, old drink with beautiful burnt honey colour and complicated, but well balanced taste. Comprised of gin, sweet vermouth, bitters (I like orange) and maraschino liqueur this is a perfectly elegant post-dinner cocktail but carries enough spirit to see you through a night of debauchery. WHAT`S YOUR FAVORITE INGREDIENT? Gin. Hands down. There’s that many different gins nowadays with such complex botanical profiles, some of which are extremely distinct and an absolute joy to work with!

Why not try our Salted Caramel and Hazelnut Espressotini cocktail.... Now I get many people asking me for the recipe of a cocktail we had on at The 7 Steps, my Salted Caramel & Hazelnut Espresso-tini (yes the name is a mouthful..!) This drink is obviously a twist on a classic Espresso Martini, but with a combo of flavours that works so well! Perfect after dinner drink, or even just to get the evening off to a flying start! 1oz Vanilla Vodka 1/2oz Hazelnut Liqueur (Frangelico) 1/2oz Coffee Liqueur (I like Kahlua) 3/4oz Salted Caramel Syrup 1 shot of good quality Espresso Shake vigorously, strain into a chilled martini glass and enjoy!

“Forget the calories; it’s all about less sugar and more fun...” Six years ago on a cold, winter evening in Paris where I was living with my young family and studying wine full-time, the idea of bringing no or low added sugar Champagne and Prosecco to the British public seemed like a crazy dream. After all - who cared about sugar five years ago? We were all too busy counting calories and cutting fats. The Times has just today announced that I’ve ‘upgraded’ Prosecco with Thomson & Scott Skinny Prosecco. And an exclusive private members club in Monaco wants to stock Thomson & Scott Skinny Champagne - isn’t that’s selling ice to Eskimos? We sold out in Selfridges – twice and now I’m being courted by a number of major distributors looking to help everyone change their drinking habits. Am I disrupting the wine industry?

Well, I think I’m certainly making waves in the media unaccustomed to discussing wine. Why? Because I’m asking the awkward question that no inside of the industry seems to want to ask – “What’s really in the bottle?” I grew up with a single mother instilling the evils of sugar and in my adult life constantly strived to avoid sugar-packed food. As a broadcast journalist in the arts sector for many years, I was constantly out at events, sipping cheap, sugary Champagne with little understanding of what I was drinking. But my love of wine grew and grew. I wanted to know exactly what I was drinking, not just where it had been made. When the Eurostar moved from Waterloo to Kings Cross, the journey time to Paris was cut by two hours. I put my career on hold and moved to France on a wing and a prayer, enrolled at Le Cordon Bleu on a Wine Diploma and spent the next year learning every single aspect of the winemaking process. But whilst all of my classmates were glugging great mouthfuls of Meursault and Montrachet, was I really the only one asking what on earth was in my bottle of wine? Was it that no one else cared? Maybe they didn’t realize, or care, that most of the wine they were drinking may not be vegetarian, let alone vegan as well as having sugar added. One evening I was invited to a private Champagne tasting in Paris where I met celebrated Champagne maker Alexandre Penet. His Champagne was probably the most delicious Champagne I’d ever tasted. I discovered, to my amazement, that he did not add any sugar to it - it was effectively sugar-free Champagne. Was the alcohol content affected? No. Was the quality? On the contrary, he explained, it was a much purer product, developed using reserve wines and the best terroir (that’s posh for good land and vines). Jumping ahead and two rounds of investment later that I single-handedly pulled together, I have brought no and low sugar Champagne and Prosecco to delighted drinkers across the country with deals moving ahead in the U.S., Canada, Ireland and South Africa. The exposure of sugar in wine remains my priority. If we can crack the sugar problem, many of the other dietary issues people battle with might also become less relevant to their daily lives. Clean food and drink is most definitely the future. Make no mistake - Champagne and Prosecco are still alcohol and there’s a big responsibility to make sure people drink more carefully than they have over the last few decades. In 2015, the hotel was entered into the Trip Advisor ‘Hall of Fame’, indicating “Excellence” ratings for the past 5 consecutive years, and marking this hotel as one of the most consistently highly recommended. So now we have set the scene and hopefully whetted your appetite and interest to hear about our own visit to this lovely part of the country. Arriving at Washingborough Hall, it’s a delight to be welcomed by the sight of this 250 year old, Grade II listed Georgian Manor House, set in three acres of beautifully cared for mature gardens, you can see why it is such a popular wedding venue, there are so many great photo opportunities. After checking in we were shown to our room, one of fourteen boutique bedrooms with all of the creature comforts you would expect, plus some little touches of indulgence like the home made shortbread and complimentary L’Occitane toiletries. The hotel restaurant has secured two AA Rosettes so we were looking forward to dinner, the menu looked wonderful and if you have a taste for the traditional then Washingborough Hall and its formal restaurant will be right up your street. Have to admit, we are partial to a bit of the traditional, getting dressed for dinner is really exciting when you don’t often get the chance. We started dinner

with a glass each of pink champagne, it seemed only fitting while we had another look over the menu and chose our dishes carefully as this menu demanded respect. Starters; Spinach, Pea and Mint Veloute with Crispy Ham Hock…delicious! Pressed Terrine of Chicken and Chorizo, Borlotti Beans, Seeded Ciabatta Crisps and Piccalilli… beautiful. The flavour combinations of these dishes and the presentation of the plates was really lovely on both counts. Our main courses comprised of Sweet and Sour Molasses and Cider Glazed Pork Fillet, Puy Lentils, Smokey Shallots and Pickled Granny Smith Apple and Fillet of Beef, Pan Juices, Summer Vegetable Rosti, Baby Broad Beans and Pancetta. Are you salivating yet? The slow pace of this restaurant meant we ate at a much more sedate pace, appreciating first the presentation of each plate, then the smells coming from them and only then savouring the flavours of such fine food. What I love about dining like this is taking time, enjoying not only the food but the surroundings and of course the company. We imagined what it must have been like to live in this magnificent house all those years ago, dining like kings every night. Back to reality and desserts! Well, we both wanted the same thing but realised we couldn’t possibly do

justice to one each, so we decided to share the Assiette of Chocolate and we were so pleased we did. Sharing this wonderfully rich plate of chocolate delights was just enough to complete our dining experience. Polished off nicely with a couple of gin and tonics in the bar before bed. Following a hearty breakfast the next morning, we felt compelled to burn off some of the calories we had consumed so headed off to Lincoln Castle, home to the Magna Carta vault and much more (opened last year following a £22m renovation project making it a world-class heritage site). This summer (28 May –4 Sept) the Castle is hosting WAVE, a ceramic poppy installation created by artist, Paul Cummins and designer, Tom Piper to commemorate the fallen soldiers of the First World War and which was first displayed at the Tower of London in 2014. It was breathtakingly beautiful and poignant. Other sights to explore include The Collection Museum and Usher Art Gallery; The famous Steep Hill and Bailgate area with lovely boutique-style shops and eateries; The Brayford Marina and a whole host of unique shopping opportunities, markets, events and festivals which add charm to this vibrant city, not least the famous Christmas markets. There are so many reasons to pay a return visit to Lincoln, our favourite being Washingborough Hall.

ome Farm at Newby Wiske, Northallerton spans 450 acres where more than 30 varieties of veg are grown throughout the year. There’s everything you can think of – from all the staple root veg to sprouts, cabbage, black and curly kale, lettuce, broad beans, squash, courgettes and kohlrabi. At the helm is farmer Peter Richardson whose family has farmed at Home Farm for three generations. The farm employs 20 staff and is supported by other local organic farmers in the North to offer a wide range and variety of produce to Riverford’s customers.

During the summer months, Home Farm is particularly busy, harvesting its in-season vegetables. Ready to go out in its veg boxes in August and September are savoy cabbages, calabrese and romanesco varieties of broccoli, carrots, white potatoes, spinach and leeks. These are all being harvested alongside crops being grown specifically for the autumn and winter seasons – veg such as sprouts and parsnips. It’s a busy operation and one that contributes to Riverford’s weekly delivery of veg boxes to 47,000 homes across the UK. Spinach is a summer favourite with Riverford customers. Guy Watson, who founded the Riverford business almost 30 years ago, says those looking for a steady source of greens, should look no further than spinach beet and chard. Spinach beet, otherwise known as perpetual spinach, is more hardy and has a longer season than true spinach. Chard has large, succulent green leaves with thicker, fleshy stems which Riverford sends out in loose-leaf bags in its summer veg boxes. Guy says: “Both chard and spinach lend themselves to repeat ‘cut and come again cropping’. Early sowings might run to seed but from June you can be picking right through the summer, autumn and, with care, patience and a bit of sorting, even into the following spring.” As well as being very tasty, spinach and chard are high in vitamins. Guy says spinach is an excellent source of iron and contains a “treasure-trove of other nutritional wonders” including vitamins K, A and C and folic acid. A Little Background... Riverford was founded by farmer Guy Watson in Devon in 1987, where he starting delivering organic vegetables to 30 local homes via what was one of the first veg box schemes. Word spread, and with it came the challenge of how to meet demand without compromising a commitment to local growing and employment, supporting local farmers and keeping a close link between grower and consumer. The solution was to team up with sister farms who share the same ethos, growing and delivering to their local areas. There are now four Riverford sister farms in the UK: the original Wash Farm in Devon, growing and delivering to homes in the South West and South East; Sacrewell Farm in Cambridgeshire covering East Anglia and the Midlands; Home Farm in North Yorkshire covering the North and Upper Norton Farm in Hampshire covering central Southern England. Together, the four sister farms deliver to around 47,000 homes in the UK each week. Riverford also has a farm in France where they grow crops to plus the ‘hungry gap’ around May and June, when the UK winter crops have reached the end and the summer crops are not yet ready. 70 | WE ARE HERE & NOW

Why not try our Pasta with spinach, walnut and basil pesto? This recipe serves 4 people.

Method Stir the walnut pieces in a dry frying pan on a low heat for a minute or so, to lightly toast them. Repeat with the pine nuts, keeping a good eye on them as they catch and burn easily.

Make sure when using any nuts that they are fresh – they turn stale quickly, even within their best before date, particularly once the pack is opened so buy small amounts, as and when you need them. If you aren’t that tolerant to wheat, try a spelt pasta, which can be easier to digest even though still a grain, or for a glutenfree option (rice pastas are available). If you have any leftover pesto, it will keep in the fridge for a few days, covered with a layer of oil, or freeze it.

Add the pasta to a large pan of boiling, salted water and cook according to the packet instructions. While the pasta cooks, put the walnuts, pine nuts, garlic, nutmeg, lemon zest and juice, spinach, half the Parmesan and all but a few leaves of the basil in a food processor. Blitz, gradually pouring in oil until the mixture forms a rough paste. Season with salt and pepper to taste.

Ingredients 30g walnut pieces 20g pine nuts 400g dried pasta 2 garlic cloves ¼ tsp freshly grated nutmeg zest of ½ and juice of 1 lemon 200g spinach, washed well 100g Parmesan or vegetarian alternative, grated 50g basil 100ml olive oil, more if needed salt and pepper

Drain the pasta, reserving a ladle of the cooking water, then toss with enough pesto to coat, adding a little of the reserved water to thin the sauce if needed. Stir in the remaining parmesan, check the seasoning and serve, garnished with the reserved basil leaves.

TIME TO UNTAME THE SENSES AT WILD IN HARROGATE. DINING AS NATURE INTENDED... Not often do we get the chance to review a restaurant owned and run by a celebrity chef, so our visit to Wild in Harrogate had us excited for days beforehand.Wild is the brainchild of widely respected and critically acclaimed chef, Jim Key. Bramhope boy Jim is no stranger to creative dining, he was a finalist on ‘The Great British Dish’ TV series, coming in the top 5 overall for his pistachio, cherry and goats cheese dessert. Jim has worked in some of the best restaurants in the country, The Devonshire Arms in Bolton Abbey was where he was first appointed as Head Chef at the tender age of 21! He has received a great many accolades over the years for his culinary creations and now firmly ensconced at the pass of his own restaurant, he has set his standards higher than ever, with the focus on using local innovative ingredients, unusual flavours that are simple yet inspiring. This we needed to check out. Wild is located at 28a Swan Road, a beautiful and interestingly designed restaurant, stylish and elegant with a ‘living wall’ of moss as a feature which our table was situated in front of and we couldn’t stop touching it, it was definitely a talking point. Immediate noticeable differences to other restaurants we have dined at? Wild is a smaller more intimate restaurant than most, with a chefs table situated directly in front of the open kitchen where Jim can share his creativity through the theatre of his cooking and explain each dish as it is served, it’s as if he were cooking in your own home for your own private dinner party; loved this idea. Jim came out to greet every table personally and had a chat with every diner, many were obviously regulars he clearly knew well, however his personal form of hospitality was unique and endearing, bringing an intimacy to each table. You definitely felt that you were getting an almost personal chef experience; we were given the option of choosing something from the menu, which by the way had us salivating at first sight, or we could leave it up to him to create a menu of dishes just for us! We knew that we absolutely had to give a chef of Jim’s status and calibre the respect he deserved and leave him to it. He had only three questions for us; did we have any food allergies, anything we absolutely did not like and were we ok for time as this was to be an experience and not a quick meal. No allergies here, just one food we both don’t get along with, snails and we were happy to stay until he threw us out, we were intrigued by this concept. So armed with this information Jim disappeared into his kitchen, after speaking with a few more diners along the way.

We enjoyed a glass of pink champagne each, sat back in very comfy chairs and awaited our first dish to be presented. While we waiting, we noticed that there were only two members of staff looking after the tables but they worked so efficiently it was a pleasure to watch. Not one diner had to wait for their water or wine glasses to be topped up; food was delivered hot and served with expert explanation. This was slick. Jim even made regular appearances from his kitchen to wander through and make sure everyone was happy and enjoying their meals. I can’t believe I have written so much and not yet touched on our food! Amuse Bouche arrived; Fried Bread, basil gel anchovies garlic purée and saffron pickled cauliflower; what an explosion of flavours and yet so light… We wanted more. More arrived; Chilled Cocoa Bean Soup, black olive oil, viola flowers cocoa beans emerged in truffle oil and diced apple. This is why you should put your trust in a great chef! We would never have chosen this dish from the menu and how much we would have been missing out; clean, pure beautiful ingredients providing a stunning dish. What would come next? Hand Dived Scallops with an avocado purée and finished with lime beetroot purée, fennel smoked applewood sausage and a beetroot crisp. We have not had such a fine dining experience like this in years, Wild redefines our understanding of fine dining, using innovative ingredients, creating unusual flavours and dishes that excite the diner. Texan Lamb Rack with Sarladaise Potato, Berlotti Beans and Anchovies was the next delicious plate. Pink and melt in the mouth lamb, one of our favourite meats. Simple, seasonal ingredients, genius. Dessert; Strawberry Sorbet, half frozen panna cotta and palma violets with strawberries infused in ginger and homemade fudge. This was a master at work and we have joined his band of devoted followers. Bring on the Michelin Stars and get your table booked quickly before the secret is out! WITH GREAT FOOD AND HAND PULLED ALES, THERE IS ALWAYS A WARM WELCOME AT THE WOOLPACK This lovely traditional country pub has to be the most famous ‘working’ pub in the country, as it is the original Emmerdale Woolpack and the only ‘soap’ pub where you can actually get a drink. It has a well-stocked bar and fine cask ales, and a tasty menu with plenty of choices for all appetites and budgets. Sometimes, great places are right on the doorstep and we don’t take notice of them or give them the respect and support they deserve, because they are so familiar they often become unfairly ignored or taken for granted. This, we realised was exactly the case when we recently paid a visit to The Woolpack in the famous village of Esholt, original home to Emmerdale. Guilty as charged! I would like to bet many who live locally are just as guilty and don’t realise what a great little pub this is. Esholt is a mere 2 miles from where we live and we found ourselves asking the question, “Why don’t we come here more often?” The village itself is tiny, but well worth a visit to reminisce and look over the places that were used for filming Emmerdale for so many years, the church, the houses, the post office and of course most famous of all, The Woolpack Pub! This lovely traditional country pub has to be the most famous ‘working’ pub in the country, and the only ‘soap’ pub where you can actually get a drink. It has a well-stocked bar and fine cask ales, and a tasty menu with plenty of choices for all appetites and budgets and the staff are really good, we were looked after by Sophie and she was excellent at looking after every diner, giving each table a smile, her time and attention. Taken over recently by James Downey, previously of The Waterside in Shipley, James has transformed the menu and is putting The Woolpack well and truly back on the map with his great food and hand pulled ales. Popular throughout the summer season with visitors from all over the world, once the visitors have gone the village springs back to life with proper locals and as we discovered, a great atmosphere, some good Yorkshire banter and a great classic pub menu which runs alongside a carefully crafted A La Carte menu to satisfy the heartiest of appetites. James has worked hard to win back the locals and people from around the area, as well as building relationships with the coach companies which bring Emmerdale fans daily to Esholt village, 74 | WE ARE HERE & NOW

boosting the economy for all of the local businesses. So what did we have to eat on our visit? For our starters we chose Smoked Haddock, King Prawn and Crab Fishcake served with fresh cucumber, dill and crème fraiche (£6.00), and Beef Carpaccio with rocket and paramasan salad, a balsamic dressing and grated horseradish (£6.50). Both very good, really tasty and excellent value. Our main choices were Sausage and Mash, butchers choice homemade sausages with creamy mashed potato and red onion gravy (8.50), and the Woolpack Burger; your choice of chicken or beef with crispy leaf lettuce and chunky pickle in a toasted brioche bun with the most enormous homemade chips we have ever seen! (9.95). Be warned these plates of food are not for the faint hearted so make sure you are very hungry! After polishing off our starters, we struggled with our main courses, well more to the point I did. Mine was the Woolpack Burger and as delicious as it was, I only made it half way through, which broke my heart as I love a good burger and the chips were amazing and possibly the biggest chips in the whole of Yorkshire! With no room left for dessert, we decided that we need to make a return with the dog, go for a long walk around the village and local area and build up the kind of appetite James’ menu deserves. The great thing is The Woolpack is also a dog friendly pub with a dedicated doggy room and lots of space outside to sit on a sunny day, just chill, enjoy your favourite tipple and soak up the atmosphere. There’s also a very popular Sunday lunch menu offering traditional roasts, some great pub classics and a wide selection of sandwiches. It took a leisurely two and half hour drive from the outskirts of York to reach Hipping Hall in the South Lake District, driving across the North Yorkshire Moors, through the vast and beautiful Yorkshire Dales and into the green and welcoming Lake District. THE BLACKLIST Steve Rowbottom, Co-Founder and Director, Westrow, talks to H&N about his favourite places to chow down in and around Leeds & Harrogate... BREAKFAST? Filmore & Union (various locations). They serve great food all day, but when it comes to healthy breakfasts, it’s the best in Leeds. I’ll usually go for the egg-white omelette with asparagus, feta and spinach, or the pancakes made with coconut milk, if I fancy something sweet. There is also a Filmore & Union in the vicinity of each of our eight Westrow salons, so we offer our clients a bespoke menu, allowing them to order Filmore & Union dishes and snacks, straight to the salon chair. BEST BREW? House of Koko, Chapel Allerton. This suburban gem is an authority on a good brew; they offer an unrivalled selection of loose teas and if you’re peckish, the avocado on sourdough toast is a must-try. It’s taken to another level with the addition of pickled radishes, pine nut and chilli oil. SUNDAY LUNCH? The Timble Inn, Timble. This cosy country pub is always worth the drive: the Sunday Roast is the best in Yorkshire. Visiting on an empty stomach is essential: starting with the seafood sharing platter and finishing with the sticky toffee pudding is non-negotiable. QUICK PINT? Mr Nobody. This new bar and restaurant is right next to the Westrow Academy, on Lower Briggate, so I’ll often pop in here. The bar is small but has a great atmosphere and they serve a really quirky menu of small tapas-style dishes. CHEEKY COCKTAIL? The bar upstairs at Stockdales is great for a low-key cocktail. It’s a smart bar, very similar to the ones you find in top London hotels, and the drinks menu is sophisticated, full of classic cocktails.

POSH NOSH? Polpo in Harvey Nichols. Just like the original Polpo in London, this is a cosy, smart and intimate spot, with a great bustling vibe. The Italian dishes, which are ideal for sharing, taste so authentic you can forget where you are. Perfect for a mid-shop refuel (with an Aperol Spritz). HIDDEN GEM? Wild Plum, Harrogate. This really is a hidden gem –it’s tucked away, above a ladies’ dress shop, on a residential road in Harrogate! The food here is great, and they put a lot of thought and effort in to the presentation: American pancakes with Greek yoghurt and berries are served with Instagram-friendly edible hand-picked flowers. It’s a great pit-stop for coffee, but once you arrive you’re always tempted in to ordering something to eat. ONE TO WATCH? Sheaf Street Cafeteria. It isn’t new, but due to its tucked-away location, not everyone knows about it yet. This place is reminiscent of the independent coffee shops in London. They offer the most delicious brunch – the menu changes frequently but the eggs with sourdough toast is a favourite staple. They also serve what is undisputedly the best coffee in Leeds. IMPRESS A CLIENT? Iberica serves really impressive food and traditional Spanish tapas executed in a way that is very special. The décor is beautiful – very elegant and stylish, but also very light and bright, which is unusual for such a smart restaurant.

The deli is a great place to stock up on freshly baked bread, olive oil and homemade meringues, too. BEST ATMOSPHERE? San Carlo Flying Pizza, Roundhay. This place never fails to serve up the perfect mix of ingredients for a fantastic restaurant: a buzzing atmosphere, consistently great food and a warm, friendly service. It’s relaxed, family-friendly and a great spot for people-watching. The tomato and garlic pizza bread starter deserves a mention – no visit is complete without this. WEIRD BUT WONDERFUL? The Man Behind The Curtain. This is a very different take on fine dining; it has a very minimalist menu, no fancy décor, but the food is very theatrical and memorable. icci’s Tapas and Cicche/, Halifax was founded in 2013 by acclaimed Chef, Michael Ricci and his partner Olivia McGorlick, following on from the success of their first restaurant, Ricci’s Place. Ricci’s Tapas and Cicche/ is all about bringing together a devotion to seasonality, freshness and creativity by offering small, divine plates of food in an all-day dining experience. Following the success of Halifax, Ricci’s is now up and running in Leeds City Centre. H&N find out a bit more... Why Leeds?... Praised as the ‘Knightsbridge of the North’, Leeds has a vibrant social scene that is constantly evolving, and the bars and eateries play a vital role in making Leeds the thriving city that it has become. And we want to be a part of that. But we want to bring something fresh and new to the table, something that will surprise and excite the people of Leeds and add to the already incredible hospitality scene. What are some menu highlights? The food at RTC focuses around the concept of small plates, tapas if you like. But perhaps not as you know it. We like to have some fun, celebrate fresh ingredients and then slip in the unexpected. A particular favourite of ours is the Tempura of Soe Shell Crab with Harissa, tomato and ginger alioli! What’s going to be on the menu? There are the old favourites like Mini Chorizo cooked in El Gaitero Cider,

Where do you source your ingredients? Is it all local? We source the best local ingredients that we can, the key is freshness. Every dish is made to order using produce delivered that morning. We also source ingredients from further afield carefully select trusted suppliers from around the world send us their speciality, ar`san products for your enjoyment.

Is there a signature dish? The Slow Roasted Iberico Suckling Pig, cooked with fresh herbs and lemon… you can’t leave un`l you’ve tried it!

What is the average price range/head? The average spend can vary, dishes start at a few pounds, you can just pop in for a snack and a coffee, or, a delicious meal for two with a tasty bottle of wine from our extensive list would be around £60 -£80 on average.

Why Tapas? What is the inspiraCon behind having a Tapas restaurant? We just think that it’s a great way to eat. We love the social and informal experience; the idea of gathering around the table with your family and friends and enjoying a real sharing experience as the dishes flow to the table while you enjoy good conversation and good wine. However, if you’re flying solo or just don’t fancy the formality of table dining, you can always call in and find a seat at our chefs table to enjoy a couple of tapas along with a lovely cold half of Estrella Galicia. That’s the beauty of tapas, alone or in a group, the vibrant and warming atmosphere draws you in to feel relaxed and comfortable…we’re your home from home!

What’s been the biggest success so far? Our greatest success so far has been creating a concept and brand that is scalable but still has a very personal and homely feel for our customers. Establishing a great team is also up there, we have a great bunch of staff who have all worked so hard and been a big part of what has been achieved. Everybody who is involved in the project is passionate, and that’s what really makes us proud. Where do you see the company in 5 years time? Manchester, London, Ibiza…who knows, but we’ll have some fun along the way!

EVERYTHING THEY DO IS INSPIRED BY ITALY, FROM THE FOOD, TO THE ATMOSPHERE & SERVICE There is so much about Italy to love and ASK want to infuse all their team members with a passion for Italy. So they give everyone an ‘Italian Education’. It’s all sorts of things... Master classes. Wine tasting. Even trips to Italy. But not everyone on the team is Italian, just warm, natural, real and totally passionate about the food and service they provide. We were recently invited to the launch event of ASK Italian Restaurant in Harrogate and the following promise had us accepting straight away: ‘Think fresh bread made to tear and share. A glass of Prosecco deserving of your time. Delicious main dishes prepared the traditional way. Everything you know and love about Italian food is served straight to your table.’ ASK is part of a chain, so the challenge to impress us and produce amazing food and service with all of the passion of an independent restaurant is a difficult thing, however we were promised that we would be impressed by the whole experience, how we could say no they had thrown down the gauntlet! The evening we visited was lovely and warm and once parked, we enjoyed a short walk to the restaurant in Albert Street, a location where they compete with other big names such as Prezzo and Pizza Express. That said there was a distinct difference between them; ASK was buzzing with a real party atmosphere, attracting diners away from the other restaurants without even trying. Good start. The party looked like it was in full swing and we were greeted at the door with a welcome glass of prosecco and a big smile. We soon realised that this was not an exclusive press launch event when we were given the VIP Menu and noticed lots of other people in there dining from the large main menu. I liked this as it was easy to watch if the service differed by the staff between invited guests and members of the public who had not been invited, did we get special attention just because we were going to write about our experience? I am pleased to report that the answer is absolutely not! The staff at ASK were amazing, attention to detail, menu knowledge, checked every time for allergies, made sure no one waited for drinks and had a genuine passion for making sure everyone in the restaurant had an amazing experience, engaging expertly in conversation as they worked. Apparently they are trained for weeks before being allowed to work on the restaurant floor, and it showed! The content of the VIP menu suited us perfectly, starting with the freshest antipasti sharing board we have ever had, comprising of Buffalo mozzarella, smoked 80 | WE ARE HERE & NOW

prosciutto, Milano and finocchiona salami, rocket salad and their homemade rosemary and sea salt bread with olive tapenade. If this was the standard of things to come, bring on the starters! We were also given the option to choose from the main menu if preferred, there was no need as both myself and my dining buddy loved their selection of dishes and we both chose Ravioli Marittimi from the VIP menu; Ravioli stuffed with crayfish, crab, salmon and ricotta in a creamy tomato sauce and topped with a king prawn in its shell. Not only did this dish look as pretty as a picture, it was a taste sensation! For our main courses we chose different dishes; Pork Belly Porchetta, a classic slow roasted pork belly in herbed red wine sauce, served with new potatoes and Sea Bass Al Forno, sea bass fillet baked in a white wine sauce with new potatoes, tomatoes, mushrooms and spinach. Everything was cooked to order and with the freshest of ingredients, not only super fresh but also superb quality of ingredients, we struggled to find anything that could be done better. Dessert time! We usually share a dessert but on this occasion I loved the sound of the Warm Pear Tart, poached pear on a base of almond frangipane and short crust pastry served warm with fresh raspberries and cream…delicious! However my dining buddy doesn’t like anything with almonds so he chose a brand new dessert to the ASK menu; Chocolate Lava Mountain, hot toffee sauce is poured over the dark chocolate cup at your table revealing a hidden scoop of vanilla gelato on top of a heavenly hot chocolate fondant! This sounded like a great theatre piece as well as utterly scrumptious and we watched with saucer eyes as our waitress poured over the hot chocolate sauce, and we waited …nothing happened! The sauce was not hot enough to melt the chocolate so it all fell a bit flat. This was the only disappointment of the evening, and one that was instantly forgotten once tasted because this dish was a chocoholics dream. At the end of the evening we were in complete agreement that ASK in Harrogate is well worth a return trip and is a restaurant we can highly recommend to everyone. Their gin and tonic ‘Copas’ are a must! Have one of the best gin and tonics in the city, it will certainly be the biggest but don’t overlook the fact that the tapas here will rank up there with the best you have ever had. The Trinity Centre in Leeds is home to some of the city’s most prominent restaurants and Pintura is one of their best, also one of the trendiest. Often trendy means compromised on quality of service and food, it’s just the current in place to go and be seen which usually means it has a short shelf life and is more of a pop up venue. Not so Pintura we love how they have taken inspiration from the vibrant, food crazed culture of the Basque region. After spending much time enjoying and researching the Pintox bars and restaurants in the Basque region of Spain, head chef Greg Lewis now serves his own fresh take on some of his favourite Basque and Spanish dishes, using only the finest imported Spanish produce, married with the best seasonal ingredients, producing a modern British twist on traditional Basque recipes. This he does exceptionally well, in our opinion creating clean, creative and delicious food that you are only too happy to keep returning for. But it’s not just the food, Pintura has so much more going for it. To pay homage to Spain’s favourite spirit, gin, Pintura’s basement gin bar has over 100 types of mother’s ruin from around the globe and they have a menu of simple, flavourful cocktails, again with a Basque twist, using traditional ingredients, flavours and methods from the region. The menu also has twelve signature Gin and Tonic ‘Copas’, served in 21oz goblets, each perfectly paired with its own garnish, chosen to complement and enhance its botanicals. It is these amazing 21oz creations that you will see in everyone’s hand, they are not only impressive, they are stunningly good!

This time we visited we of course started with a signature gin and tonic each; Portobello Road171 with 1724 Tonic, juniper berries and a twist of pink grapefruit and a Colombo with Fever Tree Mediterranean Tonic, orange twist, black pepper and ginger…yum! We started our meal with House Breads, olive oil, salted butter and Xipster vinegar and with all breads made fresh each day, you can be tempted to eat a bit too much but resist as the dishes here are worth holding back for. Next we were served with a sharing platter of a selection of delicious cured hams and Spanish sausage, just up our street, we are complete carnivors but don’t be put off there are some delicious dishes on offer for vegetarians too. For our tapas we chose Beef Cheek, summer truffle with whipped new potato, Spanish Black Pudding with crunchy hens’ egg, Crispy Belly Bacon and green apple and Marinated Tiger Prawns, espelette and pepper alioli and to cut through a beautiful fresh mixed tomato salad. The flavours of the dishes at Pintura are pure and clean, hardly an alioli in sight but available if you want it on certain dishes, rather than being part of every dish on the menu. Once again we were far too full to appreciate a pudding but felt we needed something just to finish off with and they have the perfect dish on the menu; Vermut Sorbete, a perfect palate cleanser, and we were done! It doesn’t matter what day you go to Pintura Leeds, they are always buzzing and busy with a vibrant atmosphere, which we love, yet it ticks the boxes on all levels, food, drink, atmosphere and service… Olé! I NTE RVIEW WI TH TH E C H E F Luke Downing opened Vice and Virtue’s first floor cocktail lounge just before Christmas 2015. In September, the long awaited restaurant will be opening on the second floor, with views overlooking the Northern Quarter. Foodies in the city will be salivating at Downing’s latest venture, who established his reputation as one of Yorkshire’s finest chefs, at the award winning Dough Bistro, which he’s owned for nine years.

Fine Dining and Best Suburban Restaurant, national awards for his food, creativity and five star reviews from many restaurant critics. Although still playing a major part in developing the menus and training at Dough, Downing has been missing from Dough’s kitchen for the last two years, after he took on Nineteen restaurant at Leeds Golf Centre, which he still runs, and is looking forward to bringing his take on modern British, informal fine dining to the Northern Quarter.

Downing, born in Leeds, took Dough Bistro from a small bakery in little know West Park, to one of Leeds’ culinary destinations for those in the know. A hidden gem, specialising in Yorkshire inspired French cuisine, Downing’s creativity lead to a formidable CV of awards for the restaurant and himself, winning regional recognition such as Yorkshire Evening Post Oliver Awards for Best Chef, British,

Vice and Virtue will specialise in seasonal, local ingredients. Tasting menus will be the focus, with complementing wines, ales, infusions and cocktails. With Art Deco styled surroundings and even a chef’s table, where no menus are given, Downing’s latest venture is sure to be a big Leeds hit!

What is your most essential item in the kitchen?

What do you consider to be your best dish to date?

Apart from the obvious, cookers, knives, chefs (!) etc, it’s probably my note book. I have so many ideas and creations scribbled in on stained pages from the last 10 years, I’d be gutted to lose it. However, with one of my chefs being accident prone, at Nineteen, I should probably say a first aid kit!

When I was working as head chef at Dough, we’d change the dishes almost daily, depending on what looked good and in season. I couldn’t possibly choose a best dish, but we’re lucky enough to get some unbelievable beef in at Dough throughout the year from a farm where only one cow goes to slaughter a week, we age it for 35 days, and it goes down an absolute treat with steak lovers.

What do you cook at home, that you never cook in the restaurant? When I’m working in the kitchen, it essentially becomes my home! It’s easy to becomes obsessed. I don’t cook at home that often, eating out is an absolute passion, so generally, if I’m not at one of the restaurants, I’m eating in somebody else’s! I generally make protein based meals when I am at home, in an attempt to convince myself I’m hench and healthy. A chef always wants to buy the best ingredients, how do you choose your suppliers? I’ve built up a good relationship with some fantastic suppliers, farmers, small holders and independents. I buy local, support local, buy the best possible produce, even hand picking the specific items I want, as opposed to having everything delivered. The provenance and environment our produce come from are vitally important, as are the people I deal with. I love niche passions and I rarely think about the GP of what I’m creating until after the purchase.

Where do you go, when you want to eat at a restaurant? I probably eat out 4-6 times a week. I eat absolutely anything. I’m even perfectly happy, dining as a ‘table for one’ playing Clash Royale. However, I love getting dressed up and hitting the movers and shapers in the industry. Last year I was lucky enough to hit a rosetted restaurant every other week, and i find inspiration from others cooking. I went to the Black Swan in Oldstead the other week, and was sensational, the day after I went to noodle house, downstairs from Vice, and it was immense! In your restaurant, who would be your ideal diner? A happy, unpretentious diner, who is out to have some great food, in good company, is courteous and polite and respectful of the team, surroundings and the food. Simple really. Who has been your greatest inspiration?

supporting me, especially my parents, also my long serving team members past and present, have really inspired the direction I’ve taken as a person, not just in the kitchen, I’m very fortunate to have the support network I have. Do you have a secret obsession? Sherry! I can bang down a good 70cl bottle of Fino during Game of Thrones. Your all time favourite meal in a restaurant, and where it is? A good few years ago now, but I had an exceptional meal at The Burlington, 10 courses, all quite simple, but absolutely top notch Yorkshire cooking. I’ve been to a couple of Three star restaurants that haven’t even come close to this meal. What is your favourite comfort food? Sushi and sashimi. I had 16 plates at Yo! Sushi yesterday. Which celebrity chef would you like to cook with and why? I’ve cooked with a few in my time, at demos and events, but from those I’ve not had the pleasure of working with, René Redzepi would be up there, Joel Rebuchon, and in another life, the legendary Keith Floyd.

“ A beautiful traditional Cumbrian Inn bursting with rural charm. A truly convivial place to spend the evening - shall return.” I love a weekend away, especially in the Lake District! A beautiful part of the country and somewhere I don’t visit often enough, although I do have to confess, it has always been rubbish weather on previous visits so as we set off on a quintessentially British July day - it’s raining, I was feeling fairly skeptical about spending two nights in the Lakes as so much of the activity is based around the great outdoors. Failing that, I suppose there is always the pub..... The Brown Horse it is then. As we approached this rather lovely pub come restaurant come hotel, nestled in greenery I felt a little more perky. Anywhere that looks this pretty even when it’s raining is probably going to be ok? Having checked in, a lovely room I might add, not overly luxurious but perfectly adequate and with belting views across the valley, we decided on the bar. Well, what is one to do at 4pm on a wet Friday in the Lakes? A large Sauvignon and a pint of locally brewed ale sat before us as we contemplated the rest of the weekend, and soaked in our surroundings. The bar is traditional, which is actually quite refreshing, in an ironic kind of way. All dark woods, horse shoes and ‘pub style’ trinkets - I did rather like the minature

model of the pub displayed in a glass case though, the detail was impressive to say the least. The Brown Horse is obviously a firm favourite with locals as well as visiting tourists as there was plenty of lively chatter and friendly banter in the bar, making for a most convivial atmosphere which we rather enjoyed. The bar staff were cracking to be honest, really friendly, knowledgeable and keen to intereact with everybody. It actually felt like a friendly local, I was right at home. However we had dinner reservations and the familiar rumble of a hungry husband was enough to coax me away from the bar - for once! Seated right by the window, with stunning views again, we perused the menu. Muncaster crab, prawn & tomato cocktail with avocado creme fraiche and for myself Chicken liver and pancetta pate with Cumberland sauce, melba toast, rocket and orange salad. Wunderbar. Both starters were well presented, tasty and plentiful. Rather too plentiful I might add, there was enough for greedy husband to snaffle half of my rather delicous pate without me being too upset. There are plenty of tempting offerings on the menu. I quite fancied the Garstang blue cheese

pannacotta with pickled young vegetables & caramelized walnut dressing or the pan fried terrine of Gressingham duck & confit potato, with damson chutney. Tastebuds nicely acclimatised I’m ready for my main course. I have fairly ecelctic taste when it comes to food so I am very unpredictable in my choices. I cannot however say the same for my dining partner, he is actually perfectly predictable. As soon as I saw the Steak & kidney pudding with creamed potato and crushed peas, I knew. He said it was blinding and I believed him, however I wouldn’t know what it tasted like, it was gone too quick. This dish is clearly popular as stipulated on the menu - Freshly made every day, once they’ve gone they’re gone. I chose the beef bourguignon, oooph, good choice, pat on the back for me. Rich and meaty, a full bodied dish served with stupidly tasty mashed potato. I couldn’t fault the food I really couldn’t, or the service. The Brown Horse is traditional pub food, but it’s delivery is superb. They have the right staff, the right building, a blinding location and a varied clientele making for a superb atmosphere. A beautiful yet traditional Cumbrian Inn bursting with rural charm. A truly convivial place to spend the evening, or as it happens, the weekend. Tell them I sent you. SERVING UP SIGNATURE SMALL PLATES IN WHAT IS POSSIBLY LEEDS’ BEST LOOKING BUILDING... Providing quality Spanish cuisine in a former antique house rich in character and features, Ibérica Leeds offers the finest produce served up in a unique and ever evolving menu which combines traditional classics with a contemporary edge, created by Executive Chef Nacho Manzano. Ever walked in to a building and been completely blown away by its beauty? It doesn’t happen very often, except for a few historical landmark buildings I can think of and almost never in a restaurant.However, that all changed the evening we set foot inside Ibérica Leeds. Inside this listed Hepper House, (a purpose built auction house), you are immediately awe struck by its grandeur. Some buildings deserve your attention but Ibérica demands it, with its rich, inspiring interior befitting of the building’s history. Set over two floors, with La Bodega, a beautiful deli and wine bar in the basement offering food and drink sourced from the best Spanish suppliers, and a restaurant set beneath an incredible light well on the ground floor, Ibérica’s menu ranges from classic tapas dishes, to traditional paella, full a la carte and a sumptuous drinks menu. We visited on a busy Thursday at the end of July and decided to soak up the atmosphere and drink in all that this unique restaurant had to offer over a couple of cocktails; a Black Suspender for me (sloe gin, peach liqueur and cava) and for my dining partner, a Strawberry and Basil Gin Smash (gin, strawberries, basil, lime and soda). Both really lovely and moreish with each offering completely different flavours, one sweet and one sour, good choices to try. Once seated in the huge dining area of the restaurant, with its open kitchen in pride of place where the auctioneer used to reside, we were served a steady stream of chefs suggested tapas. Starting with toasted bread with tomato, just one piece each but a really tasty way to start the meal. This was followed by Trio of Ibéricos, a journey through their three Ibérico hams, we were 88 | WE ARE HERE & NOW

instructed to start with the mildest and work through them to the strongest. A bit of theatre and they were simply delicious. Salmorejo puree with apple granite was a lovely fresh, fruity type of gazpacho and a good palate cleanser for what was to come. Now the next few dishes came in a steady stream and within a few minutes filled our table with delicious tapas dishes of spring onion tempura (lovely but piping hot and should be served with a warning to let them cool a while), Ibérica’s ham croquettes, (one of my favourite dishes, very rich and so moreish), fried chorizo lollipops served with a pear alioli sauce, (so tasty but we could only manage one each from the six served), fresh hake with hollandaise sauce (my other favourite and a welcome change to the meat), and finally two desserts to cut through all of the protein and sauces. Caramelised Spanish rice pudding and Gloria cheesecake with parmesan and dried strawberries. The puddings again in the spirit of the tapas meal, we shared, and the wine accompanying the dishes was a white Vina Riquelas. Gual. D.O. Tacoronte – Acentejo; which gave a rich, flavourful and balanced taste to the whole meal.Ibérica are fully committed to bringing only the very best in Spanish gastronomy, wine and culture to their restaurants, however it doesn’t matter how good the food and drink are, to us, customer service is key and this must be top notch every time to make a restaurant meal more memorable and I am pleased to say that the service at Ibérica was everything we hoped it would be. This is the perfect backdrop for a lunch with colleagues, night out with friends or a romantic meal for two. Make your visit sooner rather than later. Reviewed by Angela Riches, July 2016
