a Word From The Publisher The Season of Rebirth and Renewal Springtime is a wonderful time of year. It’s a season of new life: flowers beginning to bloom, farmers are preparing to plant their crops and people are planting their gardens of all kinds for their spring truck patches to be ready for harvest in May or June. I myself am working on my spring garden; of course, I’ll be late! Nurseries all over are reopening and there is simply a wonderfully renewing feeling in the air that makes you smile! Crawfish prices are dropping and are easier to find now and will be abundant through the beginning of July. Good Friday and Easter are right around the corner. Easter always makes me think of rebirth and little baby chicks. I love little baby chicks and so do my children. I plan on getting some little chicks from my local feed store each year and raising them up to be egg-laying hens. Well, if some are roosters, it is a must that they go in the pot. We only need to have one rooster, right? Of course, if you’re a Christian, you will also think of the rebirth of Christ and that He died to cleanse us of all of our sins. Easter Sunday will be spent in church and we will be dressed for the occasion. I know getting the family ready for Easter Sunday can be quite trying and can take some time to coordinate if you have anything over a four-member family! Over the years, it’s been quite the feat for me to match the entire family in coordinating outfits. Most of the time I fail, but hey, at least I tried!

maybe go all out for the first barbecue since Mardi Gras! Everything is all fun and games until someone over-boils the crawfish or burns the barbecue! Don’t forget about St. Patrick’s Day, where we could drink ourselves into a drunken stupor if we weren’t on our Lenten abstinence to fast and abstain from our liquor-drinking ways, especially if we have Irish running thru our veins as I do! I for one have given up beer for Lent and it’s been quite trying when it comes to dining out where there is draft beer. I love draft and local crafted beer! I’ve also given up all meat until the Lenten season is over! So, it’s been double real for me when I’m grilling and making food for the family, yet not even tasting it. It’s been tempting at times to take a bite, but I have forbidden myself to break from my fast. When I make a commitment, I stick to it and I am going to see this commitment through. On the bright side, I’ve lost about 15 pounds so far, but the best part is that I did it for biblical reasons and I’m feeling better and thinking clearer. So, I will sit back in my rocking chair and watch my corn and kids grow this spring and save it to the memory banks of my mind as I enjoy this season. I hope you will do the same! A Place to Treasure — Reflections from ZAM’s Director Celia Joe Black

What an honor it is for the Zigler Art Museum to be featured on a full page of the Bayou Living Magazine! At the same time, it is a challenge to sum up in a few short words all that the museum has provided to the people of our area and how much it means to so many. I will attempt to do so in a manner and style befitting the founder, Mrs. Ruth Zigler. In describing the Zigler Art Museum and its mission going into the 21st Century we must first understand its inception and the woman responsible for its creation. I am writing this article as the current Executive Director, but may be less than objective as I have a personal history with the museum of my own. My love for the museum and its mission was an important part of my younger years and remains to this day. It began with a phone call from Mrs. Zigler to my father, Joe Black, back in the late 1960’s. Miss Ruth (as I called her) told my father that she wanted to develop and open a museum in Jennings. She had ideas and wanted to meet with him and Judge Walter Peters to have a meeting to develop these plans. From that moment on, I began my history with the Zigler Art Museum. Bayou Living Magazine

The dream was to establish a cultural center for exhibits and programs in our community. Funded by Mr. and Mrs. Fred Zigler, it became manifest and continues to rise to the needs of the people and has even surpassed its original goals. Because of the commitment and hard work of so many individuals and an outstanding Board of Directors, the museum is moving into the 21st Century with renewed enthusiasm and energy. ZAM’s membership is at an all-time high and we are enjoying welcoming new members and visitors daily. Who would have imagined that 48 years later I would be carrying on the work and mission that “Miss Ruth” had for our area of southwest Louisiana. With the help and vision of so many leaders in our community, the founder’s ideas soon became a reality and the doors were opened in 1970. Since then, it has been an integral part of the community and a cultural center for all the state. The museum has continually nurtured the artist, whether a “professional in the trade” or a bright-eyed preschooler, aspiring to become an artist. Educational classes, rotating exhibits, and an extensive collection of Louisiana art are all made available to the public. The original home of the museum was the Zigler residence in the historical area of Jennings. In 2015, in a fortunate series of events, the museum relocated into the newly remodeled City Hall. This move has enabled us to preserve the safety of the collection environmentally and enable the center to survive financially. The Permanent Collection chronicles the development of visual art in Louisiana, while also representing various national and international art movements. The museum’s collection thus embodies Louisiana’s history and culture, while placing this local art within the global scene. Our mission today is “to be an art museum and cultural center with an emphasis on art education and on the promotion and development of Louisiana arts and artists”. As the Director, I am committed to this mission and hope to focus on programs for school age children in the coming years. While we are grateful for the assistance we receive from the Zigler Foundation and the City of Jennings, the museum depends heavily on fundraising events. These, along with our membership dues, provide us with the ability to accomplish our mission and present interesting programs and exhibits throughout the year. From that phone call I remember as a girl until 10

today, I have been honored to be a part of the success of this museum. I thank all the many people who are responsible for its growth and look forward to future generations enjoying and preserving this treasure.

A Sportsman's Paradise It’s that time of year that again, the bare branches of winter’s trees start becoming green with new leaves sprouting from the bareness and green becomes the color of a new spring season. We will reminisce on our hunting season past, as we put away our rifles, shotguns and bows safely for this year’s hunting season come fall. We thank God for our freezers being filled with wild game to get us thru until we can pull our guns back out and prepare to fill our freezers once again. Come to think of it we are like squirrels, putting nuts away for winter, yet we are putting meat away for our spring and summer down time! But, until then we will be pulling out our rod and reels and stocking up on our tackle as we plan an eventful fishing season ahead of us.

Oh, the delights of spring fishing! Boats being tuned up for a busy and full season of fishing each weekend. The fish are abundant and eager to start moving around as the waters warm and the bugs become more actively available on the top water! Switching our focus from guns and ammo to boats, rods, reels and tackle is something we do religiously each year as the seasons change. Fishing tournaments or on your calendar and planned in advance to alternate your every weekend fishing trips to as many tournaments you can get involved in! Hey who doesn’t like fishing for money? What If You Don’t Quit? You only have one life to live. You might as well do ALL you can with what you are given. At some point in your life you desired success in some form. Whether it was to lose a couple of pounds or to achieve great financial success, you wanted something so badly that you talked about it. You may have even taken the time to write it down and to start an achievement plan. That desire consumed you for days! You knew nothing could stop you. Then, something did. One day, while you were working your plan, something didn't go as you anticipated. At that moment, you were faced with a choice. You could either push forward or stop to process your pain and disappointment. So often, we all stop. We get lost in our momentary despair. We allow it to push us into an emotional whirlwind. Then, we give into our thoughts. We start to believe that it is just not the right time. We decide we will try again later. Your plan A did not work, so you give up, with the hope of starting again one day. A week turns into a year and you still have not started back on to your journey to success. You look back and wonder what it would have been like if you would not have stopped. Bayou Living Magazine

What we do not realize is that we do not have to give up! Being overwhelmed is not a health condition. The stress from it surely can be. But it is truly all about perspective. What you cannot handle one day seems to be easy as can be the next. Nothing changed at all, except for the fact that you may have gotten a little more rest and ate a little better. Essentially, your life was exactly the same as it was when you felt as if you had to give up. For example, I work a couple of jobs. I raise two young children. My days are planned and scheduled so that I can juggle all of my responsibilities. Some days, I wake up, spend time with God, effortlessly dress myself, fix breakfast for the kids and have a lovely morning at home. With ease, I drop them to school and execute my job duties as planned. Things go wrong, and I brush them off easily. We end the day happy and in peace. The next day, I can start the exact same way. I can have the exact same circumstances, but for some reason, I get emotional. I start to feel sorry for myself and become consumed with anxiety. These days, just like the good ones, come and go. You just have to realize that it will pass and the bad feelings you experience are not permanent. When those bad moments hit, I can take the easy route and abandon my vision, or I can accept that every day will not be perfect and keep pushing. Yes, I have been on the verge of giving up. I have wept for hours. There are nights I spend begging God for a breakthrough, but I won't give up. I won't stop. I won't abandon the progress that I have made. If it is too hard, I look for another way to keep moving. If that means I just need to scale back a bit, then so be it. I just never stop moving. I do not have it all. I have not reached the end. What I have is the hope that God will take me there and the habits to support that. I allow God to use me anyway He can. Each day brings different troubles, but God is always there to make a way. I just refuse to stop. When you work on how you look at life, life really starts looking different. Being overwhelmed is not a health condition! Develop good habits and constantly work on improving your heart. What If You Don’t Quit? In the same way, you have to keep moving. Keep inching forward. and to others. When you work on how you look at life, life really starts looking different. It just takes a determination and a drive that cannot be stolen from you. You have to know that what you do today affects your tomorrow. All the effort you invest may not be paying off in the short term, but it will pay off in the long run. When everyone is telling you that you can’t, you have to KNOW that you can. When people are saying you're not achieving anything, you have to KNOW that you are. When your world is closing in around you, you have to push back with force. Do not grow weak when the battle gets tough. Determine that you will be a soldier who will give it your all until the very end. No retreat! Push forward in any circumstance. Rest when you need to. Recover your stamina, but never stop. Envision yourself so focused that you cannot see to the right or to the left. You are on a beautiful road lined with large trees, providing shade for the journey. You are going somewhere. The goal is so far off in the distance you can barely see it. In order to stay balanced, you have to focus on the next step. You have to focus on the small goals that are easily accomplished. You have to

take it day by day. If the wind blows you far from that beautiful path into the jungle of life, you have to KNOW that you can still make it! How can you keep going if you cannot see the way? That’s when you close your eyes and trust God. When He opens them for you, you will see the exciting jungle adventure that awaits you. Your perspective will be transformed. You will see the beauty that surrounds you and will be renewed with strength. Then you push on. You keep moving. You make this journey better than the last! It does not matter if that journey changes a thousand times. Each time, you make it your life mission to press on. What is the worst that could happen? SUCCESS!

Spring Flea Fest Returns As faithful as April showers and May flowers, few events mark the dawn of spring like the return of Flea Fest. This April will mark the 11th kitschy family-friendly shopping extravaganza that has become one of the most beloved and anticipated semiannual events in the South. The sprawling country fair-type festival, which has amassed an enormous following on social media, welcomes an estimated 15-20,000 through its landscaped gates for one weekend of fun each spring and fall. Flea Fest’s success is based on a simple concept: provide a fun-filled shopping experience like no other. It’s a concept distilled in the festival’s cheery tag-line: “One Big, Happy Flea Market Event!” Throughout the weekend, thousands of shoppers fill the cavernous venue, winding wide-eyed through seemingly endless rows of booths displaying a vast array of unique merchandise. In another area, parents snap away with cellphone cameras as smiling kids with sno-ball stained lips pet fat bunnies and sit atop cowboy-hatted ponies. All the while, the distinct aroma of freshly-fried funnel cakes envelops the crowd, luring weary shoppers to the “Flea Fest Diner,” an area stocked with food trailers and booths featuring delicious savories and sweets of all sorts. It all happens against a backdrop of catchy classic rock songs -- it’s enough to make even the most ardent wallflower bop a head or tap a toe. The cumulative effect is an atmosphere that seems positively charged with fun and excitement, a one-of-a-kind event better to be

experienced than told. While spring is traditionally the domain of bow-tied bunnies and pastel chicks, Flea Fest partners with and plays host to a multitude of fantastic organizations that work to provide homes and support to some slightly larger (but no less cute) animal friends, such as LAPAW Rescue, an all-volunteer organization working to provide a second chance for homeless, abused or neglected companion animals; Everything Grey Greyhound Haven, a group that places stunningly beautiful retired greyhounds with welcoming families; and Safe From Slaughter Equine Rescue, which works to save abandoned or neglected horses, mules, and donkeys from a tragic end. The Calcasieu Parish Animal Shelter will also be on hand with abandoned pets seeking their forever homes. So, while winding your way through the seemingly endless myriad of vendor booths, you just may encounter something you didn’t expect: your new four-legged best friend. Boasting vendors of all types, the upcoming spring show is expected to be the biggest yet, featuring nearly four acres of vendors and a virtual drove of shoppers. Flea Fest’s offerings include antiques, retro and vintage goods, handcrafted items, toys, collectibles, clothes, art work, comic books, upcycled furniture and décor, gifts, plants, handmade jewelry, crafts, a farmer’s market, adoptable pets, and so much more. There’s also face-painting, pony rides, and a petting zoo for the kiddos. There will also be a number of vintage campers and vehicles for sale. Additionally, Flea Fest features many locals holding their garage sales at the festival, so you truly never know what you might find! Flea Fest is set for April 21-22 in the Burton Complex Event Barn, located on the South side of Burton Coliseum. Regular show hours are 9 a.m.- 5 p.m. both Saturday and Sunday. Adult tickets for regular hours are $5, with the exception of Saturday from 8-9 a.m. (The Early Bird Hour), when ticket prices are $10. Kids 12 and under are admitted free at all times. The Things You Can Do If You Just Dream: The Evolution of Fashion Week Lake Charles By Deveney Marshall

Like every great visionary, she saw past what Lake Charles lacked when it came to fashion and decided to turn the city into what it could be. When I interviewed Julie in 2016, she told me “I

want to introduce Lake Charles to the fashion world I know,” and that’s just what she did. In 2016 Fashion Week Lake Charles opened with a bang. The launch party was hosted at the Golden Nugget Casino Resort’s alluring Blue Martini Room. It was almost as if Julie had brought the boldness and sexiness of Las Vegas to Lake Charles. Painted models, a live band, and of course blue martinis created the perfect ambiance. I can remember the attendees being in awe at how fabulous the launch party was. It was clear the people of Lake Charles had never seen anything as grand as this before. By the time the weekend was over, and the fashion showcases had come to an end, it was very apparent Julie succeeded in doing what she envisioned for FWLC. For over 20 plus years, Julie Branden has ran Vivid Image Consulting, an image consulting firm that

When Julie Branden founded Fashion Week Lake Charles (FWLC) she only had one vision: bring awareness to and help end juvenile diabetes. A disease that unfortunately had taken over her granddaughter Gaby’s life. Her mission was to “Turn Type 1 Into Type None.” However, since beginning FWLC, Julie has done more than just assist in funding the Juvenile Diabetes Research Fund (JDRF). She has made Fashion Week Lake Charles, one of the go-to fashion events in the southeast and has helped propel the careers of emerging designers and models. I will never forget the day Julie Branden announced that she was bringing fashion to Cajun Bayou Living Magazine

has shaped the brands of several companies throughout the southeast region. So, it came as no surprise that an event launched by her would do the exact same thing. As a well-connected lady, Julie had the option of only showcasing seasoned labels like Negris Lebrum Clothing Co. and Fred Boyd Knits at FWLC, but she didn’t choose that. Instead, she felt it was more important to give up-and -coming designers a once in a lifetime opportunity. For the very first year of Fashion Week Lake Charles Julie hosted an open call for all designers, with only one requirement...they had to be from the southeast. She told me “I’m tired of the fashion

On top of Julie giving major opportunities to emerging designers, she gave the same break to Lake Charles-based modeling and acting talent as well. To find the models for FWLC she didn’t put a call into some of the talent agencies she’s worked with in LA or NYC, alternatively she hosted an open call at the Prien Lake Mall in Lake Charles, LA. Models from all over Louisiana, and even Texas came to Lake Charles to prove they had what it takes to be a big time model. Through the call she was able to discover great talents like Noah Bryce, who since being in FWLC has been spotted in nationwide commercials, films, and billboards and Cloee Semien, who since her debut at FWLC has gone on to grace the runways of NYFW and was even the face of Fashion Week Lake Charles two years in a row. Soul Matters I Received a Letter Today I received a letter today from a reader who seemed concerned for my spiritual well being. To that reader, if you are reading this, I appreciate your anonymous letter and thank you for caring and reaching out to me. I seek the face of God and study His word because I desire a deeper relationship with Him. It is not my intent to mislead anyone, but in fact, to help others have a more personal relationship with God and His Son. I rely on the Holy Spirit to guide and teach me. Jesus asked us to love God with all our heart, soul, strength, and mind and to love our neighbor as ourselves (Luke 10:27). Was Jesus not asking us to honor God’s commandment first to love, and to express this love to others? Jesus so perfectly demonstrated His Father’s love. “Whoever does not love does not know God, because God is love.” (1 John 4:8, NIV) This scripture explains that God is love. There are endless ways to love God. We should be instruments of God and try to heal all the hate, fear, and envy that seem to oppose our natural outpouring of love. God awakens in us the perception and acceptance of love as our very life, free of the fear, pain, and threats of this world that are aimed in our direction. Earlier today I received this daily devotional: Listen and learn; watch and see what I am doing. Direct your attention to Me, for I will show you what you need to know. Come and walk with Me so that I can lead you and guide you into this new season. The season that is before you is designed for your benefit. This will be a season of multiplied blessings IF you stay connected to Me. So, come walk and talk with Me. Pay attention to that which I am going to show you, says the Lord. “I will walk before the LORD In the land of the living.” (Psalm 116:9)

I’ve learned that there is such a love. That love is God’s love. God’s love for all of us is infinite, and unfailing. When we turn to God in prayer it brings His love to our lives and to all those lives we touch throughout our day.

God’s love, if allowed by us, will take root in our thoughts and in our hearts, showing us who we are. By praying to understand the beautiful relationship each of us has to God, our lives can only be enriched with our purpose, that honors and gives evidence of God’s love. Do what God is at work in you to do. Become who you are being called to be. Do not ignore the commands that God has ordained for you to produce the work you are being called to do. We are all being called to love. What truly matters is a love that can only be explained by the supernatural work of God. I continue to experience the love of God so deeply that it spills out and into my life. “You have heard that it was said, ‘You shall love your neighbor and hate your enemy.’ But I say to you, love your enemies, bless those who curse you, do good to those who hate you, and pray for those who spitefully use you and persecute you, that you may be sons of your Father in heaven; for He makes His sun rise on the evil and on the good, and sends rain on the just and on the unjust. When Sarah and Sophie Medwick showed up for a Second Sunday Tipitana's Youth Workshop on the Luna Live stage September 14, 2014, they found themselves paired with Mikayla Smith, someone they had never met or practiced with. The three girls, a clarinetist and two guitarists, hit it off, and began collaborating together on their music. All three have received instruments from MusicMakers2U, an organization devoted to providing middle, high school and McNeese State Music Majors with access to musical instruments. The trio eventually formed the musical group "Foot in the Door" and have represented MusicMakers2U by playing at CSE Federal Credit Union, the Shrimp and Jazz Festival, and Sax in the City. They have also played at Stellar Beans, Christmas at the Grove, the Southwest Louisiana Arts Council’s Holiday Art Market and they were even selected to perform at this year's Mardi Gras Festival. The girls say they would never have met had it not been for MusicMakers2U. Musicmakers2U is in need of instruments and asks you to Dust off and Donate your musical instruments for area students! Instruments may be dropped off at any CSE Federal Credit Union location between Friday, March 16 through Thursday, March 29 and donors can be assured that their musical instrument will be given new life with a deserving music student in Southwest Louisiana. The 501-(c)-3 non-profit group collects used musical instruments, has them refurbished and cleaned, and with the help of area school band directors and music teachers, pairs them with deserving students Bayou Living Magazine

who otherwise might not be able to realize their dreams. In the words of President Mickey Smith, Jr., "I believe there is a song inside every child that is just waiting to be heard. MM2U helps children across SWLA discover their sound." Although CSE locations are collection points year -round, March is the perfect time to start refurbishing instruments to have them ready for the next school year. Donors will fill out a brief information form, which the receiving student can use to send a note of thanks or to invite the donor to a future recital or concert. The student and parents sign a contract agreeing to care for the instrument and if the instrument is no longer needed, to return it to the group for re-pairing to another student. The Foot in the Door story is just one example of the 400 students MusicMakers2U has benefitted and represents the success that MM2U hopes for all recipients of the instruments. They are learning to manage their goals of eventually writing their own music and getting more gigs locally. They write their goals down and find the steps needed to achieve them. StepCrew to Perform Irish Stepdance The StepCrew, a dance production that brings together Ottawa Valley stepdance, Irish stepdance and modern tap, will perform at 7 p.m. Saturday, March 24, in the F.G. Bulber Auditorium as part of the 2018 Banners at McNeese State University season. The show features some of the world’s top talents in their respective dance forms. These dynamic performers use the traditions of their dance forms to create new, modern fusions of all three styles. I moved recently, and with being in a crunch to get so many things done at once, I was stressed over not having a truck to move my furniture and heavy things. After some anxiety, I decided to call a mover. This is a new thing for me. Moving has always been a back -breaking deal every time for myself and my family and friends. Crawfish Fettuccine Delta Style The Cajun classic of Crawfish Fettuccine is a sinfully delightful dish where we mix those Cajun mud bugs with what else but pasta? Yes, pasta and crawfish can make for a bit of a diet mishap, but who can turn it down? I’ve come up with this recipe until further developments happen in my kitchen. This one is pretty darn good when you have leftover mudbugs! Ingredients ½ cup of margarine 2 medium to large onions finely chopped 2 celery ribs finely chopped 1 bell pepper finely chopped ½ cup green onions finely chopped 3 tablespoons all-purpose flour ½ cup fresh parsley roughly chopped 2 lbs. peeled crawfish tails 3 tablespoons Jalapeno relish 16 oz. Velveeta Original Cheese cubed 4 oz. cream cheese 3 cloves garlic minced 1 pint of half and half RCA Cajun Seasoning (by Jamie Bergeron) to taste 1 lb. fettuccine pasta cooked as directed ½ cup Parmesan cheese In a Dutch oven, sauté bell pepper, celery, onions and green onions in margarine on medium heat until tender. Add flour, parsley, and crawfish and cook for about 15 minutes. Add relish, Velveeta cheese, cream cheese, half and half and garlic. Reduce heat and simmer for about 10 minutes, stirring often to prevent sticking to the bottom of the pot. Season with RCA Cajun Seasoning to taste. During the last 10 minutes of cooking the crawfish, begin boiling the pasta according to instructions on package so that it will be ready when the crawfish is done. When the pasta is cooked, drain and rinse with cold water in a colander. Add to the crawfish sauce when done, folding in so you don’t break the pasta until fully coated. In a casserole dish (or two, if needed) coated with cooking spray, pour in the pasta and crawfish mix. If using two separate dishes, be sure that equal amounts are in each dish of pasta and sauce. Sprinkle top with Parmesan cheese. Bake at 350 degrees for about 15 minutes or until bubbling on sides. Bayou Living Magazine

Yields over eight servings depending on portion sizes. Also, you can freeze it in a freezer bag and reheat later and it tastes as good or better than it did before. 32

Crawfish In A Red Gravy

We’re all enjoying the sweet aroma of crawfish in the air. But what to do with all that leftover crawfish that you peel and stick in the freezer? There’s always a good Cajun crawfish recipe to go along with those tails you spent all your time peeling! If you’re like me, you will have a least an extra sack of crawfish after the last guest has left! The following recipe that I have perfected isn’t really heard of when it comes to crawfish. But it’s very good and is a healthier choice than the other popular Cajun crawfish recipes that I myself am guilty of indulging in once in a while.

3 garlic cloves minced 28 oz. can of Hunt’s crushed tomatoes 2 14.5 oz. cans of Hunt’s fire roasted tomatoes 1 33.5 oz. Box of Hunt’s tomato sauce or canned equivalent 3 teaspoons RCA Cajun Seasoning (or other Cajun seasoning) 2 teaspoons McCormick black pepper Salt to taste 2 lbs. of crawfish tails In a Dutch oven, sauté bell pepper, celery, onions, green onions and mushrooms in avocado oil and margarine over a medium heat until tender. It will become translucent to the eye after about 15 minutes. Add garlic, all the tomatoes products, RCA Cajun Seasoning, black pepper and salt. Let simmer on low for about 30 minutes, then add your crawfish tails and let simmer on low for about 15 minutes.

Ingredients 3 tablespoons avocado oil (other oils are fine as well) 4 tablespoons margarine (this is optional if watching your diet) 1 bell pepper chopped 2 medium to large onions chopped (I prefer to use sweet yellow onions) 2 finely chopped celery ribs, about a half of a cup ½ cup green onions chopped 1 cup of Portobello mushrooms chopped March 2018 www.dmhughesmedia.com

Serve with rice. This will feed about eight people or more depending on the size of the portions. Left over can be vacuum sealed to a portioned serving and stored in freezer for future use, It surly beats a frozen entrée from your grocers freezer. 33

How about a bowl of Oyster Spaghetti to remedy those lingering winter blues? This is such a simple dish. Made with rich cream, oyster liquor, Parmigiano-Reggiano cheese, plump Louisiana oysters, pasta and garden-fresh herbs -- this is a dish your whole family is sure to love. (Crawfish or shrimp may be substituted.) Ingredients 5 tablespoons salted butter ½ cup diced yellow onion ¼ cup finely chopped green onions 2 tablespoons of chopped bell pepper 1 large clove chopped garlic 1 cup vermouth (or white wine) 1 ½ cups oyster liquor 3 cups heavy cream 1 bay leaf 1 tablespoon chopped fresh thyme 4 doz. Louisiana oysters, shucked; liquor reserved 1-pound cooked spaghetti (or pasta of your choice) ½ cup grated Parmigiano-Reggiano cheese salt, freshly ground white pepper, cayenne to taste

Preparation Melt the salted butter in a large pan over high heat. Sauté the yellow onions, garlic and bell pepper until translucent. Reduce the heat to mediumhigh. Add the vermouth (or white wine) to deglaze the pan and allow the mixture to simmer for two or three minutes. Add the oyster liquor and heavy cream; simmer ingredients on low to medium heat until the cream starts to bubble, and the sauce begins to reduce. Stir in the Parmigiano-Reggiano cheese. Add the oysters and cook until the edges just begin to curl, about two or three minutes (do not overcook). Season with salt and white pepper. Add the cooked spaghetti and cook until pasta is heated through. Adjust seasoning if needed. Finish with shaved Parmigiano-Reggiano and chopped flat leaf parsley.

T h e S e c re t i s i n t h e S a u c e With every crawfish season comes the dip. Without a good dip, you would be missing the total crawfish experience. I know I like to dip my crawfish as well as potatoes in that awesome dip. If you don’t have time to make one, I have found Dat-Dip, Louisiana Dipping Sauce in the supermarkets. It’s made by Dat Cajun Boy’s Company, LLC out of Lafayette and it’s pretty good. But if you are like me, you prefer that homemade special dip and you’ve got to have it, right? Here’s what I enjoy along with every one of my crawfish boils or drive thru crawfish nights.

Mix everything together a small bowl and transfer into a separate storage container or into individual dipping bowls. Serves about four people depending on how much sauce they use, or how much crawfish they eat, if you know what I mean! Enjoy!

Fat Boyz Boiled Shrimp Chef Red Head loves all different kinds of shrimp dishes. With Lent upon many people choose to change their eating habits in order to honor the 40 days that Jesus spent in the dessert. Ever since I was a child we did not eat meat during that time. We would eat many things and the one I found most delectable was Shrimp. The abundance of Shrimp in Southwest Louisiana is truly mouthwatering. I have a friend that owns a restaurant in Westlake called FatBoyz. Many of you have probably visited Richard a few times. Well, Richard uses Cajun Red Head seasoning on just about everything and when I saw a huge spike in his order I stopped by to investigate. Wow what an honor to find out that Richard is boiling and seasoning his boil Shrimp and Crawfish daily with Cajun Red Head. In all the years we have had the seasoning I never used strictly Cajun Red Head on my crawfish so I was very anxious to try it. I called my family and told them and they said please bring us some crawfish home. I couldn’t wait to get home. I picked up 15 lbs. of Crawfish and Richard said you better take some boiled Shrimp as well. When I got home the first thing I did was jump right into the Shrimp and oh my goodness. This was the most juicy and well-seasoned boiled Shrimp I have ever tasted from east coast to west coast. I immediately called him and told him from one Chef to another that I needed that recipe for my collection. He agreed and told me I could share it as well. This is truly a flavorful Louisiana Treat! Bon Appetit.

Fat Boyz Boiled Shrimp ½ Cup Zatarains Liquid Crab Boil 2 Whole Lemons with Rind ½ Cup of Cajun Red Head Seasoning ¼ Cup Old Bay seasoning ¼ Cup of Louisiana Hot Sauce 5 Lbs. of Shrimp 3 Gallons of Water Add first 5 Ingredients to pot of water. Bring to a boil with all the seasoning in the pot. Let boil for 5 minutes to all season to blend. Then add the shrimp and allow to boil NO longer than 4 minutes. Remove Shrimp from Pot immediately and sprinkle with Cajun Red Head and Old Bay Seasoning. Mix well. Served with boiled corn and red potatoes.

A Bloody Mary Anyone? Breakfast, Brunch or Dinner? A Bloody Mary in the morning is not unheard of in Louisiana. It’s another of those Louisiana staples that we are known for, drinking one after a weekend of partying or for breakfast, especially in New Orleans! Last time I was in New Orleans, I ordered some breakfast for the family back in our apartment. I wasn’t the only early morning customer ordering a Bloody Mary at the Café Mondo! In my defense I was on a little vacation, but the guy next to me ordering one was on his way to work! It seems to be the norm in New Orleans. I guess the saying should be “I should have had a Bloody Mary!” not, “I should have had a V8!” If life were only that simple! Wish I could have a Bloody Mary every morning (no, not really!). But I will take a V8! Bloody Marys should be the state drink! It is positively a Cajun specialty with so many versions that you could practically make a breakfast, lunch or dinner out of what they put in those things! My best Bloody Mary was one I perfected when helping work my family’s pub in Welsh. Many people have told me it was one of the best they’ve ever had, and I feel the same way. I’ll get that recipe to y’all in another issue when I get a chance. I’ve put a poll out on Facebook and have gotten a lot of feedback on everyone’s favorite places for this great drink. there), Darrell’s and the LA Bar serve great Bloody Marys. In and around Lafayette has many outstanding places serving up a fantastic first class Bloody Mary too. I’ve heard about The Silver Slipper Cajun Hibachi Grill in Arnaudville, Legends, Brick and Spoon, The Tap Room and Caffe Cottage to mention a few. I won’t even try listing them all because, there are just too many places there to get a good Bloody Mary for brunch or whatever time of day!! Of course, Austin, Texas made the Facebook list as well! All in all, it is all about how you enjoy your Bloody Mary. Some people like horseradish in theirs…I don’t! But to each his own and however you like it is your taste and your opinion. Some like it for breakfast or brunch some use it to cure a hangover and some just like them in the evening. Whatever you choose, I hope you enjoy your veggies with your vodka, whatever time of day you indulge. For me, I’m up in the air about that. If I’m on vacation I’ll have one for breakfast, if not and I partied hard all weekend, I’ll have one for breakfast as well, but on regular days, I’ll just have one for a nightcap! Crawfish is a Louisiana staple that we crave all year round. So, when crawfish season is upon us, we are eager to get out there and get us some whenever we get a chance! Whether we enjoy dining in, going to a drive-thru and taking them home or just buying some live crawfish and boil theming ourselves, it’s good to know that the crawfish farmers are keeping us supplied while the season lasts! I spoke with some of our local farmers about the season this year and some of crawfish chefs in the dine in and drive thru locations as well to get a few tips for y’all. I happened to be over in Welsh and for a small town, the crawfish options are very good. Richard’s Hot-To-Trot offers dine-in and drive-thru services. I got my first crawfish of 2018 with them when the season first started, and they were perfectly cooked and scrumptious; even after the 15-minute drive to my house they were still piping hot! Next, Chris’ Corner has been around for a number of years. I spoke with Chris Mouton about some of his techniques and he gave me some informative advice on purging. I know most people choose to purge their crawfish prior to boiling with salt. I know I did. After speaking with Mouton, I don’t think I’ll be doing the salt purging any longer! He informed me that after you’ve added salt for the purging, the crawfish will start dying if you don’t boil them right away. I found this to be true. When I got back home. I’d let my crawfish sit in salted water for over an hour and they were kicking the bucket like flies!! No more salt for me; I’ll just purge them in plain old-fashioned water! me in on the fact that he starts serving crawfish every year around mid-November. I didn’t know that, but now, when I get some early cravings this year, I’ll be headed on over to get some there! After stopping by Chris’ Corner, I headed on over to the new place in town, Crawfish to Geaux and spoke with Eric Krielow, owner and crawfish chef. Their operation is pretty cool! First, they have an outside location where they work the boiling magic. The setup is a massive, top-of-the-line system. Two humongous boiling pots are double insulated to keep the water hotter in between boils. The system is a proven method and he has a top-secret method that he shared with me when it comes to making the crawfish easier to peel. After the crawfish are pulled out of the boiling pot and dropped into the ice chest, he sprays them down with lemon juice, so it is evenly covering all of the crawfish and not just pouring through to the bottom of the chests. That was a pretty neat tip! Then, they pass the chests full of crawfish through a shoot to the kitchen where they are served. When dining in, they have the perfectly set up crawfish

tables with holes in the middle to drop in the heads and peels! I tasted a few while I snapped some photos and they were great. I plan on a trip to dine there soon! I asked Kirk Dupont, one of our local crawfish farmers, if the fact that the season had a late start meant a longer season. “No,” he replied, to my dismay. “Just because the season starts late doesn’t mean it will last any longer. We usually run thru the 4th of July and so do most other farmers.” Well one could hope that the season would be longer, but I guess no matter what, the weather gets really hot in July and that is the end of the mud bug season. So, for all of you looking for crawfish tips, I hope this helped. The Zigler Art Museum in Jennings, Louisiana, was the place to be on February 22nd when the public was invited to attend a wonderful reception in the gallery. The exhibition being celebrated included paintings by two esteemed artists, William Kalwick, Jr. of Houston, Texas and Lajos Markos, a portrait artist trained at the Royal Academy in Budapest. Mr. Kalwick was in attendance with his lovely wife, Claudia – who is also the daughter of Mr. Markos. Having her there to represent her father was very special for the museum because of a unique connection. After a lifetime of painting and teaching, commissioned to paint portraits of many famous people, and completing over 2,000 portraits in his lifetime – his works hang in prominent museums and private collections. Two reside in the gallery of the Zigler Art Museum – portraits of Ruth and Fred Zigler, founders of ZAM and local philanthropists. William Kalwick, Jr. found himself surrounded by admirers of his work on that Thursday in February. Art lovers who attended were able to meet and enjoy the evening with Mr. Kalwick and his wife – learning more about this artist whose work can be found in galleries from California to South Carolina, and many others in between. This artist who began his studies in New York and then Texas, where he was the protégé of Lajos Markos. This artist whose paintings hang in collections in North America and in Europe! We hope he visits again!

CHRISTUS Southwestern Louisiana Launches Healthy Senior Program CHRISTUS Healthy Seniors is a new program sponsored by both CHRISTUS Lake Area Hospital and CHRISTUS St. Patrick Health System and is designed to provide SWLA seniors the educational resources and access to quality health care they desire. Members receive a quarterly calendar of events which highlight upcoming wellness screenings, physician programs, weekly exercise and fitness classes, social activities and opportunities to fellowship with other seniors. City to Cut Ribbon on Veterans Memorial Park at Vietnam War Veterans Day Event The City of Lake Charles will celebrate the reopening of Veterans Memorial Park on Saturday, March 24 at 6:30 p.m. with a ribbon cutting at the Vietnam War Veterans Day event, which honors United States Armed Forces Vietnam War veterans. The twilight event will showcase park improvements, the most visual change will be ten steel panel silhouettes with different figures representing the five different branches of the service. A gift of $50,000 was provided for the purpose of purchasing equipment to promote college activities and $10,000 established the Coca-Cola Bottling Company Endowed Scholarship through the SOWELA Foundation.

The CITGO Lake Charles Refinery hosted the event with the City of Lake Charles, McNeese State University, Team Green of Southwest Louisiana, Keep Calcasieu Beautiful and Waste Management to provide residents with the opportunity to recycle their “ewaste,” completely free of charge. The event interchanges between Sulphur and Lake Charles every year to give residents equal opportunity to recycle in the region. This year, it took place at the McNeese State University stadium parking lot. During the event, 786 vehicles lined up to dropoff e-waste. Collection totals included 10 rolloff boxes of e-waste, as well as approximately 990 light bulbs, one ounce of mercury and 50 pounds of batteries. Bayou Living Magazine

8th Annual Lafayette Holi Festival—March 31 Lafayette Holi Festival, started in 2011, brings Holi to Acadiana, the heart of the Cajun country. Lafayette is not only one of the best nearby places to explore for its culinary excellence, it has also been voted one of the happiest cities in the United States! And I’m more than happy to be back in the Lafayette area on a regular basis these days. As we get out and distribute our great magazine, Bayou Living formerly know as The Jambalaya News and our new historical paper, The Acadiana Backstory, I’m finding more and more how much I love so many things about Lafayette! Recently, I’ve had bit of a sushi obsession (well, I lie--I’ve always had a sushi obsession). So, when I was in Lafayette’s historic downtown arts and entertainment district, I decided to check out Tsunami. It opened in 2000, and I hear it fancies itself as the hippest eatery in the 337-area code with LA flare and Southern charm. I’d have to agree! I almost make it a point to stop here last on my Lafayette days, so I’ll have time to take in some hot sake and try at least one (okay, I usually get more) of their scrumptious sushi rolls. What better to wrap up a Lafayette outing than some Tsunami Sushi? Not only are their rolls and entrees some of the best I’ve ever had, their staff is very friendly and welcoming. The atmosphere is perfect for an end-of-the-day meeting with some of my salespeople where we can relax and unwind as we discuss our daily adventures in the area. So, next time you are on a Lafayette outing, I encourage you to stop by and check out Tsunami. Trust me, you won’t be let down and you’ll be back again and again to satisfy your sushi cravings!
