a Word From ...

Delta Dawn The New Orleans Experience … To say the least it’s been an eventful month. So much has happened and made me think of many things along the way! So much lose and devastation in Texas and Florida, it leaves me devastated for all involved and suffering from the loss of life, dwellings, belongings and memories. How could any of use (unless we’ve been there feel their pain?). It’s not easy to see others, even though you don’t know them go thru so much loss. It’s good to see our people, The Cajun Navy and others help those in need! I guess sometimes it takes devastation to bring out the good in others … it’s sad but true! My heart goes out to all involved in any way, shape or form. I spent some time in New Orleans this past month. New Orleans is the city that makes Louisiana stand out for many reasons! My baby, William Levi, had an appointment with a specialist there (for minor reasons) right around the same time that hurricane Harvey was bound to hit somewhere between Louisiana and Texas … a good time to stay away from any hurricane’s path! The appointment was lengthy but went well (we’ll be back at least 3 more times) and all is good. I ended up spending a week in New Orleans, aka ‘The Big Easy’ and learned a lot about the secrets of the city that I’d like to share with you. For starters, I’d like to tell you about this fabulous 2-bedroom apartment (available for private stays for less than any other one room hotels in the French Quarter), with a view of the Mississippi River and within a 10minute walk from the Audubon Aquarium! Within blocks of the apartment are these wonderful restaurants that we tried, such as the New Orleans Hamburger & Seafood CO, New Orleans Creole Cookery, Cafe Beignet, Café Du Monde, Johnny’s Po-Boy Restaurant, Vieux Carre Pizza, and Laura’s Candie’s. The children loved Laura’s Candie’s and stopped by at least twice a day for Ices, Ice Cream and candy! I personally indulged on their peanut butter fudge! It melted in your mouth and it was beyond amazing! I had the best charbroiled oysters and fried catfish at some of these places … and don’t forget to try a Bloody Mary with breakfast at Café Beignet or Café Du Monde for breakfast! I’d like to give a shout out to these wonderful places, their food and service was wonderful! They are all within blocks of this private rental! The apartment that I stayed in is a private rental on Deaton Street, a two-bedroom apartment with a great view of the Mississippi river! It was surely priced better than any one room hotel, and located in the famous New Orleans French Quarter. I felt right at home after 3 days! The owner is a gracious host and everything is there to make you feel comfortable and right at home! Ed Ezemas’ place (for those interested in staying at this apartment … see ad for his information in this issue on page 33) is a perfect place to spend your New Orleans vacation get away or for Mardi Gras! You couldn’t 6

ask for better accommodations and Ed has what we call that ‘Southern Hospitality’! Parking … you want to take advantage of free parking on the street if you don’t mind getting up at 7am to go pay the meter! So always pay attention … parking meter areas are free from 7pm to 7 am! So always consider parking across the street at a paid parking place being greatly more expensive if you divide the full 24 hours! It took me 3 days to learn the trick of parking! Always choose the parking meter over the paid parking lots, they cost less if you pay for 24 hours at time but you are still almost paying $4.00 an hour on weekends (the only time I’d used it was if the street was due to be swept that day). Parking meters end up being $1.50 an hour for parking when you consider that you get 12 hours free each day! I would also always suggest walking so you don’t lose your parking spot they can be hard to find except early in the morning! Besides there is something to see around every corner while walking! I think that exploring New Orleans could take a long time! But we did get a chance to bring the children to the Audubon Zoo and Aquarium. They weren’t so enthusiastic about the zoo due to the heat but the Aquarium they loved! The insectarium was closed the week we were there so we didn’t get to go to it! Mostly the children enjoyed staying in the apartment and looking out over the fire escape towards the river and watching the ships and lights. But their all-time favorite thing to do was to go downstairs to the Laura’s Candie to get a treat of some sort daily, multiple times! I guess you could say they felt right at home and we enjoyed our stay there! Well until next time folks I hope you all can get away now and then and enjoy small trips! A NOTE FROM LAUREN I’ve Got Pods, They’re Multiplyin’… I’ve been sharing my life with Elke the Chihuahua since December 15. That was the day an angry, scared little rescue came into my life. She snarled and snapped at me. She wouldn’t let me near her. She sat on a chair in the front parlor, shaking. So, I brought my comforter and pillow downstairs and slept on the couch next to her. When I woke up the next morning, she was curled at my feet. The rest is history. She’s the craziest, funniest little creature I have ever met. She keeps me laughing, constantly. I cannot imagine living without the joy that she brings to me on a daily basis. I say that I live “alone,” but that just means there isn’t another human in the house. I am never alone with Elke and my cat family. As much as I love my solitude, to live without these furry companions would be no life at all. Elke has a lot of quirks but the strangest one is her magnolia pod obsession. There are no magnolias on my property. None at all. But there is a tree around the corner and across the street. She loves that tree because its alive to her. Every time we walk by it, it’s dropping pods. Big ones, little ones. A lot of squirrels live in that tree and they are probably responsible for the most of the pod drops. So, the highlight of every walk is going by that tree, looking up at the squirrels, yelling at them, and then, when her business is done, selecting the appropriate pod to take home with her. It can’t be just any pod. She noses through them, picking the occasional one up to try it on for size, then discarding it if it’s not quite right. She eventually makes her choice, and proudly walks home with it. Sometimes, the pod is a bit too large for her mouth and she has to breathe through her nose, noisily. The pod pickup is a good thing. If there’s something in her mouth, then she can’t bark at joggers, cyclists, and UPS trucks. The sanitation workers can collect their trash in peace. The mailman can deliver his mail without fearing for his life. Mom doesn’t have to be embarrassed by her unruly child. Once we get to the porch, she walks up to the front door and stands in front of it. I say, “Drop it!” and she does, usually on the mat in front of the door. Then she goes inside. Mission accomplished…until the next walk. So, this basically means that there is a vast collection of pods at my front door. She never bothers with them again once she completes her walk, so every few days I sweep them away. At this moment, there are around 16 pods on and around the mat. We just finished our early morning walk, so she just added another one to the latest collection. I will probably be sweeping them all away by the end of the day. The Porch Cats have no interest in her pods, although poor Crabcake, who loves to hang out on the mat, has to share his space with them. He doesn’t seem to mind. I have no idea why Elke does this pod thing. But it makes her happy, makes me laugh, and reminds me every day that all of us, human and animal, are full of little quirks that make each of us unique. How eerie is it that his name was Harvey after the recent disaster in Texas after hurricane Harvey? drama does. Pull yourself out of messy situations. If it does not involve you, do not get involved. A common phrase I have adopted when someone is bad-mouthing a friend is, “Isn’t that your friend?” Easy way to shut down the conversation. Do not post your problems on social media. Do not vent to the world about what others have done to you. Just grow from it. That is the absolute best form of revenge. When the wolf howls at the moon, does the moon respond? It’s too busy illuminating the night sky. Save your energy. Don't respond.

What is “Normal” to You?

What is “normal” to you? Is it late nights of studying, Mom duties and endless piles of laundry? Is it mostly working and family time whenever you get a chance? Is it days full of chaos and stress? Is it full of dissent and depression? Is it normal for you to be riddled with anxiety? Is your normal lonely? I realized after being raised in a less than perfect family unit, enduring a painful depression, getting out of an abusive relationship and working a career that I was absolutely miserable in, that my normal really sucked. I say this to explain that whatever your “normal” is, you do not have to settle for it for the rest of your life. I made a conscious decision years ago to not allow my “normal,” along with the thought processes and mindsets created by it, to dictate the outcome of my life. So, if you are looking to change your “normal” to be more joyful, pleasant and productive and to create something better for your children in the long run like I was, here is what you can do: Find a Mentor: A mentor is simply someone who has walked the path you wish to walk and will give you clear direction for your journey. A therapist can be a great practical mentor to help you figure out exactly what you desire. From there, you can download audiobooks and watch YouTube videos regarding the path you have chosen. There is a ton of great content and encouraging insight out there. You just have to search for it. Also, since we live in a very connected world now, you can easily search hashtags on social media to find people who are doing what you wish to do. Reach out to them. I have found that even people with hundreds of thousands of followers are usually still down to earth and willing to help those who are in the position they were once in. Ditch the Drama: Imagine a bucket of crabs. As one tries to climb out, the others are holding on for dear life to that crab, pulling it back into the bucket. This is what involving yourself in 18

Tame Your Tongue: I heard once that whatever you say about someone will eventually get back to them. I have found this to be true, but the problem is that it usually gets back to them completely out of context and not nearly in the same form that it left your mouth. Just keep your mouth closed. It’s the best way to keep your hands clean and to allow your energy to be used on something productive in creating a “normal” that is full of joy. It will take practice, but if you can control your tongue, you can control the direction of your life. There is power of life and death in that tongue of yours. Be wise in the way you use that power. Let Go: Let it all go. I am talking bad relationships, unnecessary material items, mindsets that hold you back, everything stunting your growth. Dump it quickly! You may need to move. You may be lonely at first. Letting go isn't easy, so do not expect it to be. If you want lasting change, you will have to make drastic changes to create a “normal” that you're truly happy with. It’ll feel really messy and unusual at first. You will think, “This isn't me.” Just remember your new normal will not feel comfortable to you, because you are used to the negativity. It will take time for you to really push through that discomfort to create a life worth living. So, don’t give up when it doesn't look or feel great at first. Create a Vision: Do not skip over this step thinking it’s a meaningless page filler! Visualizing your new “normal” is essential in creating it. Close your eyes and envision your happy marriage full of enduring love. Visualize traveling the world, creating a successful business, living a fulfilling life. Figure out what you want and what that looks like in the future. Consult your mentor, change your behavior and do what’s necessary to achieve your goals. Think big. Don't hold back. Whatever it is, go for it in thought. See yourself there, then work backwards from that goal. Ask yourself, what will it take to truly have that. Then do it. Know your WHY! Perhaps the greatest piece of advice that I have received is to know why you're doing what you're doing. If you do not have a strong why, then you will never develop the perseverance needed to change anything. I was raised by the hardest working individuals. I watched for months as my grandmother’s health deteriorated. I lost my brother, my only real sibling, tragically. I endured abuse and came out stronger. I lived through a suicidal depression. I have two amazing kids. All of these things come together to create a powerful why for me to chase my dreams, help people change their lives, love and serve others selflessly and to do whatever it takes to realize success in my own right. Creating a new “normal” may not be easy. From experience, I will tell you that you’ll feel like giving up and running back to the screwed-up circumstance you're used to. “Don’t take yourself too seriously” and “Be yourself” are things I heard from people who wanted me to stay exactly where I was… where they were. Regardless, I pushed through all of the discouragement because my mentors warned me, taught me and led me. I ditched the drama in my life to create more peace for myself. I stopped responding to people who would hurt me, and I used my words to change the course of my life. I let go of what I thought I needed in material things so I could save money. I let go of friendships with people who did not have my best interest at heart. I let go of the belief systems that plagued my family and the mindsets I was taught that would keep me from doing what I knew was right for me. I created a grand vision for myself and developed a way that was big enough to create a solid foundation for my new life. I am not who I used to be. I am not my struggles. I am not my past. I am who I have chosen to be. In the same way, if you’re sick of your circumstances and you’re tired of the way you feel, do whatever it takes to create a “normal” that you dream of. If you put in the effort now, you’ll look back one day and be surprised at how far you've come.

Women’s Healthcare — A Lifetime Journey

Throughout the course of our lives, women go through many different changes, and so does your healthcare. The concerns and needs for an 18 year old are obviously very different than those of an 80 year old.

Finding the Right OB/GYN

Most women begin seeing a gynecologist regularly during their teens or early 20s. It’s important to select a doctor you feel comfortable with. Things like whether a doctor is male or female, the doctor’s age, the doctor’s philosophies on birth control, whether the doctor comes recommended by any family or friends, and insurances the doctor accepts can all play a role in the selection process. Once the choice is made, and as long as there are no health concerns, these first visits establish a relationship between the you and your doctor, ensure your general wellness, and provide a chance to ask any questions you may have. “These first gynecological exams begin to develop the doctor/ patient relationship and trust that will hopefully last for many years,” said Dr. Bradley Forsyth, a board certified obstetrician and gynecologist with Memorial Medical Group. “Generally, pap smears and pelvic exams begin around age 21 if there are no issues that require them sooner. So during those first visits, we treat any existing problems, offer advice for any concerns she may have, and make sure her questions are answered.”

Screenings and Treatments

From the early 20s on, OB/GYN visits include preventative screenings – pap smears, pelvic exams and physician breast exams (different from mammograms, which, for most women, begin at age 40). “It’s during this phase of life that we take a more proactive approach to a woman’s healthcare,” said Dr. Norman Stewart, a board certified obstetrician and gynecologist with Memorial Medical Group. “The best way to prevent major health issues like cancer is to screen for them, heed the warning signs, and treat any issue we encounter. The earlier a problem is detected, the easier it is to treat,” he said. In women of this age group, conditions like ovarian cysts, human papillomavirus (HPV), endometriosis, and irregularities with their menstrual cycles are common – all of which can be treated or better managed with the help of regular visits with an OB/GYN.

During pregnancy, a woman sees her OB/Gyn much more often than usual and develops a special bond with her doctor. “We are on that pregnancy journey with women, and we do everything we can – from kick counts to nutrition education to ultrasounds and other testing – to make sure that it’s the healthiest experience possible for you and your baby-on-the-way,” Dr. McKinney said. Menopause, More Screenings, and Beyond

For most women, menopause occurs sometime between the mid -40s and mid-50s. Even though fertility and childbirth are no longer as much of a concern during this stage, it is still extremely important to see an OB/GYN regularly. “During the menopause years and the years that follow, women’s health care needs can change dramatically,” said Dr. David McAlpine, a board certified obstetrician and gynecologist with Memorial Medical Group. “It is during these years that a woman may need hormone replacement and other treatments for severe menopause symptoms; a hysterectomy to treat heavy bleeding, fibroids or endometriosis; bone density testing and ways to combat bone loss if osteoporosis is present; and the continuation of screenings for various types of cancers, which increase in risk for women as they age. The early 20s through early 40s are the ages most women have children. Clearly, she has set out on a dedicated journey to help patients across the lifespan with the latest and most advanced technology, equipment and methods in physical, occupational and speech therapy offered today! Her new location on Imperial Boulevard provides just this for all her patients. JAM: Why did you decide to move Hope Therapy to its new location on Imperial Blvd? Brooks: We’ve been an established practice in the Lake Charles community since 2008 offering comprehensive outpatient therapy; however, our goal was to expand our services for both our pediatric and adult patients. When the opportunity came to build a state of the art facility on Imperial Blvd, we grabbed it and began designing. Our goal was to design each space to be efficient for the therapist so that they can focus on treating their patients with everything they might need accessible and within reach. While we hit the mark on most spaces, we are continuing to develop other areas as we see the need. JAM: How does your new building improve the service that Hope Therapy offers? Brooks: Our new facility was designed to offer unique services that patients cannot find in this area. Specifically, Aquatics programs for pediatric and adults, dry needling for orthopedic recovery, dyslexia testing and intervention, in28

fant and pediatric feeding assessment and intervention, intervention for sensory-motor disorders, and so much more! We offer physical, occupational and speech therapy for patients across their lifespan…in one place! The intervention and approaches you find at Hope Therapy are not your “run of the mill” programs. As a team, we all focus on the aspects of preparing to walk, communicating verbally or nonverbally or moving in ways that allow us to take care of ourselves independently. As a speech pathologist, I am trained to look specifically at how a person speaks, swallows, and sounds but if I don’t address a person’s ability to hold themselves upright, I miss major components that contribute to overall recovery. And this applies across the lifespan…whether you are a child gaining skills for the first time or an adult regaining these skills after injury or illness, WALK TALK MOVE is a path to recovery. As a team, we offer the most advanced treatments available to help you accomplish your goals. JAM: What was the main purpose or should I say goal in moving to your new clinic? Brooks: Our new clinic was built with our patients at the center of the design. We wanted to offer aquatic therapy or “pool therapy” but did not have the proper facility to provide it at our old location. During our yearlong design phase, we traveled to Montana to research a company called Hydroworx. Now, our new clinic houses a State of the art heated indoor pool that has an integrated treadmill in the floor of the pool with underwater video cameras to provide immediate feedback to the patient. It is also equipped with massage hoses to provide relief to injured areas. The pool has been equipped with a technology package that collects data from each patient’s session. This objective data can be combined with video recordings and sent to the patient’s physician to show how the patient is progressing. This has been an amazing addition to our practice and our patients, from pediatric to adults, have benefitted from this low impact approach to rehabilitation.

JAM: Tell me why aquatic therapy? Brooks: Water helps to reduce body weight and joint impact and promote early movement. The water temperature aids in reducing stress and promoting relaxation. Aquatics also helps to increase aerobic capacity with resistance training in water. Joint mobilization, soft tissue elongation and massage become less like therapy and more like dance. JAM: What would you say makes Hope Therapy stand out among others? Brooks: Our multi-disciplinary approach. If you are a patient recovering from an illness or injury, we don’t waste your time on techniques that don’t deliver real benefits. JAM: Who can benefit from aquatic therapy? The biggest benefit if aquatic therapy is that people who are injured, disabled or otherwise not capable

The Magic of New Orleans By Dawn Daley

Most ghost tours make a stop at her house. I wonder if it is just as creepy and atmospheric as you would expect? Of course, Bourbon Street is Party Central. If you visit there any time after six, it is packed with people. There are A LOT of seedy places and people on Bourbon Street, but it's something everyone needs to experience at least once. New Orleans follows a little thing called the Napoleonic Code, which means, among other things, that it is legal to walk around with your drinks, which is fine by me! It makes for interesting night life. You'd be hard pressed to find a more interesting group of people. Almost New Orleans natives are very nice and helpful. They love to party and have a good time. And those accents!

New Orleans holds a fascination in my mind for many different reasons. It’s definitely one of the most unique cities I’ve ever visited. Let’s just clarify that I don’t visit big cities often; hell, I consider Lake Charles a “big city!” I prefer small mountain towns and camping trips, but, I don’t mind staying in New Orleans and exploring its uniqueness. I think being in New Orleans during Mardi Gras may be something I’d love to do and it is definitely on my bucket list. Everyone should experience a New Orleans Mardi Gras at least once in their lifetime. I love a good Mardi Gras, as I am from Louisiana, you know! I also love the night life in New Orleans! So, I will never tire of the Crescent City. It has this kind of magic that is hard to really put into words. I just got back from there, and that magic is still fresh in my mind. I have never eaten anything I haven't liked in New Orleans. Whether it’s at a diner or a steak house, the food is always out of this world. If you like seafood, you'll be in heaven! I ate some of the most delicious charbroiled oysters this last visit at the New Orleans Creole Cookery, I can’t stop thinking about them! I don’t eat seafood that often (I just don’t prefer to eat fried things), but when in New Orleans, I’ve always got to have some! I recently had a seafood platter from the New Orleans Hamburger & Seafood Co. that was something I will get again! Their thinly fileted fried catfish are nothing short of amazing!

I'm not going to lie. One of the main reasons I became infatuated with NOLA in the first place is because of the legendary Marie Laveau. I love her story and I plan on visiting her gravesite next time. I hear you can also visit her home. And of course, I will need to get a few voodoo dolls, right? You may recognize the bayous from the Disney movie "The Princess and the Frog," but they are real places and they're just as beautiful as the film portrays. Plus, there is so much wildlife there. If you want to see real live alligators, go on a swamp tour and you are guaranteed to see plenty of them. Imagine going to the city to go on a swamp tour to see swamp life!

The architecture is just plain breathtaking, particularly in the French Quarter. It really is just like stepping back in time. If you want to view beautiful mansions, visit the Garden District. The homes and building are just as beautiful there. Of course, New Orleans is famous for their jazz; it's where the genre originated. While you're walking along the French Quarter, there is a good chance you will hear jazz flowing out over most of places you walk by, along with different types of music. It is never silent there. Very soon I will check “New Orleans Mardi Gras” off my bucket list. It's weeks of celebrating—parties, floats, catching beads and everyone passing a good time and celebrating life. What's not to love? That’s what I like about New Orleans: Everyone there lives life to the fullest!

The bread pudding deserves its own category. They serve it almost everywhere in New Orleans, and although the recipe is never exactly the same, it is always a little slice of heaven. I don’t eat dessert often but when in New Orleans, I like to splurge on some of the city’s best bread pudding and I like mine with a little liquor in it. One of the things on my to-do list is go on one of NOLA’s famous ghost tours, as I’ve heard most of the stories at this point. The Marie Delphine LaLaurie tale is, believe it or not, a true story, and the truth is even more gruesome that we can imagine. 32

7 Mistakes You May be Making in Your Spin Class BY JACKIE TABOR PHOTOGRAPHY BY MALISE GARDINER GARY

Everyone knows The Roll Team is all about getting the biggest bang for your fitness buck so we put together a little list of things you may be doing that reduce the effectiveness of your ride. If you find yourself doing any of these or ALL of them (we hope not) be sure to clean up your form to make the most of your Roll sweat seshes! 1. The Death Grip: At times, it may seem like it but we promise your bike isn't going to take off and shoot across the room. Relax those hands and let go of the death grip. It's a waste of energy and leads to a bigger problem of supporting your weight on your hands & wrists. If your hands are sore post-ride, that's your sign to lighten up! For better results, be intentional about balancing your weight over your abs, glutes, & quads! 2. Slacking on Resistance: We know we know...."add another turn" or "let's take this to the top" can make you feel like your legs might just spin off but it's actually dangerous to ride with little to no resistance. Bouncing on the bike with 0 resistance can lead to hip & knee problems and the instructors can spot this big cheat a mile away. Any time you feel tired, by all means take a break but always make sure to "add a few turns" on the resistance when you stand or climb to ensure the safest rides and a beast mode sweat sesh. 3. Pushing without Pulling: Spin shoes guarantee as much pulling as pushing on each pedal stroke as well as making your ride super smooth and more effective. Toe cages have a bit of a gap between your shoe and the top of the cage creating less efficiency in the strokes. If you focus on eliminating the pause on the bottom of your pedal stroke and really drive your knee up & out to complete the rotation, you'll find greater power and a better burn for your ham strings. Our bikes have an SPD clip and can be found at the Bicycle Superstore or Capitol Cyclery, both on Prien Lake Road. 34

4. Attacking a Climb from the Get-Go: Just as with a sprint, it's super important to pace yourself on a hill. When you're about to take on a hill on a regular bike your body shifts forward and backward a bit. You should approach a climbing indoor-cycling the same way. Begin with your hands on the lower outside of the handlebars (position 2) with a bend at the hips. When it really starts to feel thick + sticky, move your hands to the straight part of the handle bar right in front of you (position 1). This raises your torso and increases your hip angle giving you a noticeable energy boost.... now’s the time to dig deep. 5. Copping out on Your Core: Just because your abs don't touch the pedals doesn't mean they aren't involved in every stroke. Your core plays a major role in indoor cycling which means that intentionally engaging it will make your ride even more effective. To do so, lengthen your spine, roll your shoulders back, and picture your ribs lifting off your hips. Form = everything. 6. Overdoing the Hand Weights: Because the weight series usually involves lots of reps, we typically recommend 13 lb. weights. Of course, muscle fatigue is the goal but within reason. You will get a bigger benefit by doing the exercises correctly with lighter weights than doing them incorrectly with heavier ones. 7. Skipping Your Stretch: There aren't a lot of facts to prove stretching will prevent injury however, you earned 2-5 minutes of elongating all those muscles we've just been contracting so intensely. Even 2 minutes of stretching is immensely better than none at all. We top off every sweat sesh with a few stretches because sealing your ride with a moment of peace is priceless.

What is Your Will for Me? Recently, I watched a video about two men and their unlikely calling to their vocations as priests. As I watched, I felt a question rising up within me. Before I fell asleep, I prayed and asked God what His will was for me. I received this message: “You are to write a book to tell about heartbreak and your journey of making it go away.” I need to tell my story of loving myself to wholeness. About the heartbreak. About the brokenness. About letting the tears fall down. About how the eyes of my heart began to see the beauty in the brokenness. This is what I am to leave here. This is my mark. I'm tired and worn out from this brokenness. I just want to be done with it all, but I know that will not happen. That's why I know that telling my story is my purpose. I'm not here to leave these messages unspoken, for this beauty to not be shared and be seen. When I close my eyes, I don't see darkness like others; I see light. I am to love this love, not hide it away. We have to let God always be part of our lives. We must thank Him for not giving up on us. For always holding our hand. So, I thank Him for calling me out, for lifting me up, for keeping me grounded. He anchored me back down this morning when all I wanted was to just float away for awhile. To escape the brokenness I was feeling. Running away from the waves is how I lived before now. Trading minutes of my life for things not worth precious time. But I know better now. I feel so much. We must not let true love fade away. We are to fall in love with God’s amazing love and to let it flow through us. It is meant to be. We must take God's hand and love as we travel across the land of heartbreak. Lay your heart next to His. Say that there is nowhere else you would rather be. You are found next to Him. He might seem miles away, but know that He is always there with you, to make you feel His love as He dries your tears. God knows what you 36

are going through. You just have to hold on. Stop trying to figure it out. Everything will be alright by His side. I am where I belong, and so are you. I will not lose any more pieces of me. I will erase the memory pictures that have done that and color myself free. God is relentlessly not giving up on me. When we move, His love is chasing every part of us. So, don't live your life as a pretender. Nothing is picture perfect. The real pictures are the light that is of love. We just have to open our hearts and we will receive it. If it’s true, there is no need to chase it. It will come. I saw the light of God’s heart and it forever changed me. His Amazing Grace called me out to walk into a new world unknown to me. A place where my faith had to learn to stand up to keep me above all of the waves crashing around me. I discovered who I was to You and I found the love You had waiting for me. I will be light for others as they walk their own paths. And I will share my story.

LAKE CHARLES SYMPHONY CELEBRATES DIAMOND JUBILEE – 60TH SEASON

The Lake Charles Symphony has been bringing the finest music to the community for decades, and now marks its 60th season in 2017–2018 with new and exciting concert programs, along with favorite events like Champagne Bingo, Wild Beast Feast and Summer Pops. The Lake Charles Symphony is happy to celebrate its 60th season with the Lake Charles/Southwest Louisiana Convention and Visitors Bureau’s 45th anniversary and the City of Lake Charles’s Sesquicentennial’s celebration. The motto for the 60th year is “6 at 60!” That’s right – six great concerts that include something for all ages and all tastes in music! The season kicks off on September 30 at 7:30 PM in the Rosa Hart Theatre with a concert that will entice both the hearing and visual senses. Last year, Donna and Rick Richard of Empire of the Seed Historic Properties commissioned a special arrangement of Evangeline, an opera by the late Keith Gates, Lake Charles composer. Evangeline Suite will be accompanied by video footage of the beautiful landscape of Southwest Louisiana and will be projected above the orchestra. The video footage was filmed by Cody Porche as part of a commissioned body of work. The concert will also feature local pianist, Lina Morita, in Beethoven's Piano Concerto and conclude with Brahms’ Symphony No. 4. The opening concert is sponsored by The Lake Charles/Southwest LA Convention & Visitors Bureau, Empire of the Seed and Citgo and is a sanctioned event in celebration of the City’s Sesquicentennial event. There is plenty of time to attend the concert in between the parade and other activities of the evening along the Promenade. New this year: Fall Pops! Healing After Loved Ones Suicide

The Way A Person Leaves This Earth Does Not Define Who They Were

The American Foundation for Suicide Preventions coordinates the “Out of the Darkness Community Walks” that are held nationwide to raise funds and awareness. The Lake Charles Out of the Darkness Walk will be held Saturday, October 7 at the Civic Center Amphitheater. Registration begins at 9 a.m. and the walk is at 10 a.m. You can register online at asfp.donordrive.com. HALOS---Healing After a Loved Ones Suicide—is the chair for the Lake Area walk. This support group meets in Sulphur every first Tuesday of the month at 6 p.m. in the cafeteria of the West Calcasieu Cameron Hospital on Cypress St. "It is amazing the suicide survivors that have come and shared their raw hearts with those of us who understand the feeling of losing someone very close, when they die by suicide," says group facilitator Amy Johnson. Johnson tragically lost her only child, Cole, at the age of 13 on September 16, 2010. She does not want anyone to go through what she experienced after her son’s death by suicide. She joined SPICY soon after his passing to fulfill a need to help area youth realize how much life matters, and that there is no “do over” like in video games. Johnson has spoken at various youth gatherings to relay her message. Working in the healthcare field, she understands how support groups can have such a positive impact on those suffering from tragedies. Johnson reaches out to others by facilitating neutral, confidential and frank discussions. She offers her experiences to help others on their bumpy grief rollercoaster to bring some hope and positive solutions to those who are suffering. "We find that the biggest help is folks knowing they are not alone in this journey. We are all like-minded people sharing likeminded hurt," says Jody Barrilleaux, co-facilitator of HALOS. Barrilleaux lost her Dad, Kenneth Tyler, Sr. on April 3, 2015 at the age of 73. “I hit the ground running looking for other people that had lost a loved one in this way, as I never had known anyone who had died by suicide," she says. Once Johnson met Barrilleaux, she knew she had the right person to help her reach out to suicide survivors. And HALOS has expanded. "I always realized that there was a great need to have a group meeting in Lake Charles and last month, we held our first one,” Barrilleaux says. “To have a new person walk through those doors is such a blessing to us because we know that is the first step in their journey of healing. And helping others helps us.” The Lake Charles HALOS support group meets the third Tuesday of the month at 6 p.m. in the Ben Mount board room of the Christus Lake Area Hospital on Nelson Rd. “We are a compassionate support to those who are experiencing the painful journey of dealing with a loved one’s suicide,” Barrilleaux says. “WE give some hope for those who have newly and unexpectedly become part of our group.” 40

The positive energy encourages those who are feeling anger, abandonment, devastation, fear, guilt, loneliness, sadness, and shame express their feelings confidentially with others who have felt the same way. “We listen, cry, laugh, encourage and heal--all together,” she adds. “A grief support group provides a place to heal within a circle of hope and compassion.” For more information on HALOS, find them on Facebook.

All Aboard! This enthusiastic cry heralded from a train conductor can seemingly be heard as you stroll past the 1904 Mary Jane Train Engine located in Le Vieux Village Historical Park in Opelousas, Louisiana. This was a point of interest that I visited during my backroad travels on a Saturday afternoon in September. It is located along US-Hwy 190 West from I-49. Boarding this magnificent piece of historical steel seemed like the perfect place to begin my excursion through the third oldest city in Louisiana. Trains of this sort and railroads were instrumental in linking Louisiana to the rest of the United States. The coming of the railroad changed Opelousas and the face of Louisiana forever. The Mary Jane was built by the Davenport Iowa Ironworks Company. She was a woodburner and her best speed was approximately 25 miles per hour. She was retired after being used for at least 50 years and sat in the St. Landry Parish Courthouse Square since 1959. The Kiwanis Club of Opelousas funded her restoration and eventually moved the train to its current location in Le Vieux Village. I must admit, climbing aboard this train was like taking a step back in time. Thoughts of early settlers coming to Louisiana from all parts of the United States flooded my mind. It certainly gives you a different perspective of pioneer travelers seeking new beginnings. Special thanks to my assistants, Katy and Fred Brunt, for capturing the photos of me as I pretended to “travel the backroads” via the Mary Jane. 42

As you walk past the train your eye is drawn to a stately building that is one of the only buildings of its kind left in the state. The Union Pacific Freight Depot was located on Court Street and was in use until the late 1980’s. An appeal by the Opelousas Tourism and Activities Committee prompted Union Pacific to donate the building to the city. A year later, in 1991, it was moved to the village. The train depot is currently home to the Louisiana Orphan Museum. This museum is by far one of the most interesting attractions at the Village. Upon entering, we were greeted by curator Warren Lafleur from Belaire Cove, LA. Mr. Lafleur is a wealth of information concerning the Orphan Museum. He related numerous accounts of orphans arriving at the depot in Opelousas and farmers greeting their new adoptees. Most train riders arrived from New York following a plea that was sent by the Sisters of Charity to Catholic priests asking for their assistance with the orphans. Whether for the love of a child or the thought of free labor, many families agreed to have a child placed in their homes and raised in the Catholic faith. I can only imagine what the children must have felt arriving in this rural community from New York. They were children of New York parents who could not provide care or needs. Each one arrived with a tag and identification number and each prospective parent held a corresponding number to their assigned child. They rode the rails for a better life becoming outstanding citizens and contributing many good things for their communiBayou Living Magazine, LLC

ties. The walls of the museum are covered with photos and memorabilia from their families. There is also a captivating near life-size painting by Louisiana artist Robert Dafford that depicts a moment in history unfolding as the children from New York Foundling Hospital arrive in Opelousas in 1907 to meet their new families and begin the adventure of a new life. Before departing from the museum, Mr. Lafleur informed us of another tour that he thought would interest us. It is the Cemetery Tour and Historical Reenactment hosted by St. Landry Catholic Church on N. Main Street. Tours are conducted on the second and third weekends in October. More info on this tour can be found at: stlandrycatholicchurch.org. Spend some time with the voices from the past and listen to their stories. Le Vieux Village (The Old Village) is the perfect place to learn about the colorful history of Opelousas. As you walk along the brick path, you will encounter some of the oldest buildings in the parish, some dating back to the mid-1700’s. Melanie Lee LeBouef, Director of Opelousas Tourism, and her assistant, Amisha Thibeaux, were instrumental in assisting us by providing info on a variety of historical sites to visit. When I set out from Lafayette, my intention was to attend the 35th Southwest Louisiana Zydeco Music Festival at the Yambilee Grounds in Opelousas. Little did I know that it would

take me about 6 hours to travel from Lafayette because there is so much to explore between both cities. As I traveled north on I-49, I was sidetracked at the Sunset/Grand Coteau exit. It had been quite some time since I had driven into Grand Coteau and today was just as good a time as any to revisit. The town hosts the annual Sweet Dough Pie Festival that draws thousands on the 4th Saturday in October. The quaintness of this community is so alluring. As you drive into town you’re greeted by inviting antique & gift shops that are housed in renovated historic buildings. I drove past them to reacquaint myself with the town and was happy I did. As I glanced to my left, I was taken aback by the sight of the most unique old barn I’ve ever seen. Because of my passion for photographing old barns, I knew I wanted a closer look. The buttercream yellow dairy barn sits away from the road on the grounds of Saint Charles College Jesuit Novitiate and Spirituality Center. It is considered a Grand Coteau landmark. It was built in 1925 and has withstood the test of time. It’s quite spectacular! I decided to drive a little farther down Church Street and even went by the Church of St. Charles Borromea. The church is well known in the area for its empire style and mansard roof. If you go, be sure to drive around to the back of the church be-

cause I think it’s just as appealing. A little farther down the road is the Academy of the Sacred Heart that was founded in 1821. This was another great opportunity to enjoy viewing the lush foliage, stately oaks, rolling hills and capture some great photos. As I was traveling back into town I was amused by the name on a gift shop and just had to stop in. Kristi Bihm, owner of Yada Yada Gifts located at 123 Church Street, gave me a tour of her unique shop. She was in the process of decorating for Fall so I can’t wait to visit again and see what she’s done. As I was making my way to the Zydeco Festival via Hwy. 190, I was fascinated by all the creatively painted fiddles on display near the St. Landry Parish Courthouse. There are literally dozens of these artistic, one-of-a-kind fiddles throughout the city. Be sure to go by and see them if you’re in the area. While you’re in the Historic District, visit the 300-year-old Jim Bowie Live Oak located in the Jim Bowie Courtyard across the street from the courthouse and next door to the Palace Café. It’s massive girth and moss & fern covered limbs are quite a sight to behold. I am thinking it’s really time to get to the festival but as I stopped at a stoplight I noticed a guy with the tailgate of his truck down and a large cardboard sign that said, ‘Sweet Potatoes for Sale’. Well, you can’t come to Opelousas and not buy some. This young man was quite the entrepreneur by parking in front of the church and patiently waiting for the parishioners to exit the church and purchase some of his sweet potatoes. His business plan works because it sure got my attention and I had curb service to load my potatoes. Now it’s finally time to take in some Zydeco music. Lena Charles, festival director, is to be commended for her and her committee’s efforts in organizing such a fun-filled festival and continuing to keep the Zydeco heritage alive in Southwest 44

Louisiana. Nathan Williams and Zydeco Cha Cha were onstage when I arrived. There was a dance contest going on and let me tell you, these dancers know how to have a good time. I happened to meet two adorable sisters that were keeping the dance floor Bayou Living Magazine, LLC

hoppin’! Kim White and Cindy Johnson are the creators of Bulldog Pepper Jelly. They hail from Lone Pine, LA (near Forest Hill, LA) and love Zydeco music. The festival paid tribute to Zydeco musician and Grammy award winner Chubby Carrier & Bayou Swamp Band by honoring him with a plaque of recognition as September 2017

an Ambassador for Zydeco music. This was a wellearned and well-deserved honor! The festival was a huge success in spite of the havoc that Hurricane Harvey was causing in Texas and Southwest Louisiana. I hope our LA & Texas neighbors recover quickly from the devastating flooding and can join us next year for the festival. As I exited the Yambilee building, a group from Holy Ghost Church enticed me to try one of their homemade sweet potato sweet dough pies that they were selling to raise money for Divine Word Missionary. I’m such a sucker for these delicacies and bought several, after all it’s for a good cause, right?! It was the perfect “ending” to a great adventure in Opelousas, or so I thought! A few days later I headed back to Opelousas to get a few more photos. It was lunchtime and I remembered about the Palace Café near the courthouse. This restaurant has plenty of history behind it. They will be hosting a 90-year celebration on October 7, 2017. That’s right, 45


they’ve been in business since 1927. The current owner, Michael Munro, has owned the café since 2013. Their catch phrase is, “If Walls Could Talk…What they would say? They would tell a story of this place, and the people it served for so many years.” The employees that work here are like family and the food is just like your momma cooked. Evidence of this is the dedication of some of their employees. Sheryl LeBlanc has worked there for 42 years, Lucinda Rideaux for 30 years and Kristi Hebert has been there for 17 years. Do the math, that’s a total of 89 years of experience and 90 years of serving patrons. That is proof that they’re doing something right! Opelousas is a wealth of good cooks. Chef Paul Prudhomme (1940-2015) called it home and so did Chef Tony Chachere (1905-1995). Both men became world famous chefs and suc-

cessful businessmen because of their culinary skills honed right here in Opelousas. Other residents that have made their mark in the culinary field are Patricia Hertzock, owner of Yam Country Pies and her daughter Lucretia Hertzock, manager. Their pie shop is located on Grolee Street in the historic district. I was fascinated to see so many people lined up waiting to get their hands on the decadent sweet dough pies that are baked fresh daily. Sweet Potato, Coconut, Custard, Lemon and other flavors were flying off the shelves. I had the opportunity to meet Patricia and Lucretia and we discussed how they are enjoying sweet success by continually receiving awards for their pies. They make everything from scratch and serve them warm from the oven. Like they say, “They’re So Yam Good!” If you decide to attend the Sweet Dough Pie Festival in Grand Coteau, be sure to look for them. They’ll be there and will have plenty of pies. I could go on about my excursion to Opelousas and Grand Coteau but I’ll leave some things for you to discover for yourself. I’ll leave you with a quote that I try to live by:

Chicken Piccata One of my favorite things to cook for all my girls is Pasta. There is something about the smell of fresh garlic, wine sauce simmering on the stove and French Bread in the oven that makes everyone run into our kitchen. We designed our kitchen as a family gathering space where the kids can do homework, watch us cook and dine together. It’s because of my love for my girls that this Chef feels right at home. Ingredients

2 skinless and boneless chicken breasts, butterflied and then cut in half Sea salt, freshly ground black pepper and pinch of Cajun Red Head Season All All-purpose flour, for dredging 6 tablespoons unsalted butter 5 tablespoons extra-virgin olive oil 3/4 cup white cooking wine 1/3 cup fresh lemon juice 1/2 cup chicken stock 1/4 cup brined capers, rinsed 1/3 cup fresh parsley, chopped

stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley. We typically use Angel Hair pasta with this dish.

Directions Season chicken with salt and pepper. Dredge chicken in flour and shake off excess. In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate. Into the pan add the fresh minced garlic in the remaining oil/ butter combination. Let cook only for 2 minutes until slight brown. Deglaze pan with white wine and add lemon juice, September 2017

Open Sesame: A Brief History of the Benne By Tiffany B. Casey There Once Was A Kitchen Table

Although I am not a culinary historian, I do have a passion for learning about and tracking down evidence that brings to light the realities of our Louisiana history, including the history of the south as a whole. Earlier this week, while researching a particular 'Cajun' recipe, I learned a whole lot about an often overlooked and underutilized ingredient. You see them often but likely do not give them much thought. They decorate your hamburger buns. They accent your chicken on the Chinese buffet. They are found sprinkled on those fancy bagels at the local bakery and I am willing to bet that some of you may even remember a time when they were the main ingredient in one of South Louisiana’s most coveted confections – benne pralines. If you guessed sesame seeds a.k.a. benne seeds, then you are correct. The history of the benne (BEHN-nee) seed is as complex as trying to figure out which West African spelling used by eighteenth century Europeans should be used today. Bennés, benny, beni, benni, beny, and benney are all words used historically to refer to the sesame seed. Sesamum indicum – a tall, flowering annual, is thought to have originated in sub-Saharan Africa, the portion of Africa which is located south of the Saharan Desert; was domesticated in India before reaching Europe where it spread gradually due to its medicinal and cooking properties. Some were even convinced of its mystical powers, a credence which would follow it for centuries. It is most commonly believed that benne reached the New World by way of the enslaved West African people brought over by European colonists to South Carolina, Georgia, and New Orleans in the early 1700s. However, due to such horrendous conditions on board slave ships, there are those who think it more likely that the seeds were transported by Portuguese ships which carried free blacks as crew. These ships carried African foods like okra, dasheen, sesame, pigeon peas, white yams, varieties of rice, calabash gourds, and fluted pumpkins, as experimental food crops in the New World. The benne plant played an intricate part in the history of the South, particularly South Carolina and Georgia, where descendants of these enslaved would go on to develop a distinct Creole ethnicity and language known as Gullah. There are many records which reaffirm the importance of benne in the slave and Gullah 48

diets due to its protein and fat content along with its ability to supplement the diet especially when meat was scarce. It is because of these characteristics that the enslaved, in particularly, continued growing benne in personal gardens for use as thickeners in stews and sauces; nut meats in candies, wafers and cakes; even using the greens in soups to add more sustenance. Today, one of the most sought after treats in South Carolina and Georgia Lowcountry is the benne wafer - a crispy, nutty, sweet wafer specific to this region and culture. Over time, these seeds were adopted as supplemental cash crops by plantation owners who had witnessed their many uses by the enslaved. Of particular intrest to the plantation owners was the extraction of a very flavorful oil which had become an inexpensive replacement for lard. Benne remained a significant source of vegetable oil for some time. One problem, however, with farming benne seed was that when the pods would reach maturity they would open so suddenly, they would spill 50-80 seeds onto the ground which is what has led some to believe that this is where the password "open sesame" came from. It is thought that following the end of the Civil War in 1865, long established agricultural traditions along South Carolina began to crumble and disperse. When the struggle to create a new economy no longer based on slavery began, many actually left agriculture behind and with that the benne seed was all but forgotten...or so they thought. Fortunately, it continued to be cultivated, although on a much smaller scale, by those primarily of the lower economic brackets or the poor. At some point during its long and vast history, the benne seed made its way to Cajun country. It has been documented that St. Landry Parish cultivated benne seeds on a small scale many years ago and that Acadian farmers would plant them so as to have pralines during the winter. They would boil them in cane syrup to make confections or steep the leaves in a pot of water to make a refreshing medicinal beverage. South Louisiana is one of only three known places in the U.S. which still refers to sesame as benne. I don't know about y'all but I will never look at a sesame (benne) seed the same way again. the next ingredients in a mixing bowl, add flour mixture and beat until smooth. Stir in milk, then seeds. Drop by level tablespoons on a greased baking sheet. Press out ¼ inch thick with the bottom of glass covered with a damp cloth. Bake in moderately hot oven at 375 F. 10 to 12 minutes.

Benne Seed Wafers By Tiffany B. Casey While researching the history of benne seeds, I encountered many recipes, both in books and online, all of which seem to be very closely related. This is my recipe with only a few slight adjustments. Notice the similarities to the one from my great aunt who was born and raised in Ardoin Cove.

Benne Praline (Old Acadian Recipe) from Quelque Chose Douce avec une Demi-Tasse 4 cups sesame seed (parched) 4 cups sugar ¾ stick butter or Oleo margarine 1 cup milk Pinch of salt 1 large tablespoon white syrup Parch sesame seed in heavy skillet on medium heat, stirring constantly until brown. Set aside to cool. Combine the sugar, milk, shortening, salt and syrup in heavy sauce pan and cook to the soft ball stage. (test in cold water). Stir in parched seed and continue to stir until it holds its shape. Pour into a well-oiled cake pan. When cold break into pieces. Mrs. Henry Miller

1 cup sesame seeds, parched 1/8 teaspoon of baking powder ¾ cup dark brown sugar ½ teaspoon vanilla ½ cup soft butter 1 teaspoon lemon, grated 1 egg ½ cup flour ¼ teaspoon salt Sift together the flour, salt, and baking powder. In a separate bowl, cream together your butter and brown sugar until light and fluffy. Add your egg. Beat to incorporate. Add lemon zest and vanilla. Mix to combine. Add flour mixture to the butter and beat on low just long enough to combine. Fold in the sesame seeds. Cover and cool in refrigerator for 30 minutes. Preheat your oven to 375 F. Scoop 1 teaspoon of mixture onto a cookie tray lined with parchment paper. Space them a couple inches apart as they will spread in the oven. Bake 10 minutes or until evenly golden brown. Let them cool a bit before transferring them to a cooling rack to crisp. Store in an airtight containers.

Sesame Star Cookies by Vena Derouen 2 cups flour 1 teaspoon vanilla 1 teaspoon baking powder ½ teaspoon grated lemon rind ½ teaspoon baking soda ½ cup soft butter 2 eggs unbeaten 2 tablespoons milk ½ cup brown sugar ½ cup sesame, toasted ½ cup white sugar ¼ teaspoon salt Sift flour, baking soda, and baking powder together. Come Have A Seat Sloppy Downtown Shakin’ up the Food Scene …

Lake Charles is booming at an unprecedented rate. Every year, people from all walks of life end up calling the Lake Area home. With that, they bring their traditions and recipes to share with us. The food scene in Lake Charles has expanded to include many different cuisines, continually embracing other cultures. One huge reason for this is the introduction of the food truck scene that now dominates our area. I recently sat down with Amanda Stutes, who is one of the brilliant minds behind the Sloppy Taco food truck. She, along with her husband Brett and his brother Derek, came together a couple of years ago with a shared passion for globally inspired cuisine and the art of the food experience that would unknowingly change the Lake Area food scene forever. “With the Sloppy Taco truck, or with food trucks in general, it is a fun idea... That ever-evolving menu… being able to get really creative with the food,” she says. Stutes finds that more people are willing to try new foods and experience different cultures through taste when it’s coming from a food truck. There is something entertaining and unique about the experience of dining from a food truck. You can let your guard down, and that “foodie” inside of you is more likely to come out. “I think that there is some growth in Lake Charles and I believe that they were ready for that globally inspired [cuisine],” she says. She recognizes that SWLA has a lot of foodies--and not just for traditional Cajun food. Stutes noticed that as time went on, people slowly started to progress and go for the items that might sound a little “crazy, ” but they were still ready and eager to try it. ducing us not only to The Sloppy Taco’s unique menu, but to many other food trucks as well. After gaining a reputation for out-of-this-world food, The Sloppy Taco opened its more permanent, brick and mortar location on Kirkman Street. This past January, the Stutes family took the trust they built with the city and its food truck scene, to the location of their new restaurant, Sloppy’s Downtown. Inspired by their obvious love for globally inspired cuisine and the adventurous art of food truck dining, this sit-down restaurant is the workings of the same family with the same great passion, but it’s an entirely different concept. Located at 329 Broad Street, Sloppy’s Downtown has become quite the hang out since its grand opening in January. It also makes a great addition to the lineup of unique businesses in downtown Lake Charles. Their menu is unique and creative. For example, the “Sloppy Poor-Boy” is braised pork, rib eye, shrimp, Monterey Jack cheese, jalapeño and purple onion drizzled with Remoulade and served with house fries. Try their Chilaquiles--oven-roasted chicken on house corn chips, sautéed in salsa verde with sour cream, queso fresco, avocado and an over-easy egg. The Sloppy Fries make your mouth water just thinking about them. It’s a bed of fries and poblano peppers covered with queso fresco, Nueske's bacon, gravy, pepper sauces and green onion. Would you expect to see Cajun Cornbread on a menu that offers poor boys, pizza and nachos? I wouldn’t, but it sounds delicious. Seafood cornbread topped with Cajun gravy and served with vegetables is all I need to keep me happy! The food will keep you coming back, but so does the incredible spirit and ambiance of the restaurant. “A lot of people love the atmosphere. I know we do; we poured our heart and soul into it for over six months,” Stutes says. Many people on social media appreciate their efforts, calling the location “hip,” “comfortable” and “casual.” “We have two different sides,” she explains. “One side is really for family dining.” Where we sat would be considered the bar, especially after 10 p.m. when the kitchen officially closes for the evening, keeping the Bayou Living Magazine, LLC

bar and live music going. From Zydeco to Reggae, there are live bands to enjoy every Friday and Saturday. With such a vast space, there is plenty of room for everyone. Behind the bar, they pride themselves on their huge selection of craft and local beer. Their love for good food and music brought them on an incredible journey: the Saturday morning Zydeco Brunch. Stutes loves the story behind it. “My husband Brett and I have been together for over eight years. But when we first started dating… we’d going out for about six months, it was the Saturday before my birthday, and he wakes me up at 6 in the morning.” As the story goes, she was running on only about four hours of sleep and her husband drags her out of bed and to his house where a slew of people waited to celebrate her arrival. “We went to Breaux Bridge and Cafe Des Amis…” she recalls. “I remember walking up to the front door at 7:30 a.m. They were hosting a Zydeco breakfast, the place was packed, and the floor was vibrating from all the dancing… It was so much fun! So, for the next seven years, every year for my birthday, we would go to Cafe Des Amis. Unfortunately, they closed.” That, however, was right around the time Sloppy’s Downtown, was about to open. Amanda was excited to put their twist on a Zydeco Brunch. “We settled on making it a brunch... and we do have some of the best Zydeco musicians in the area,” she says. She already has her favorite dish on the exclusive

menu, “The Crawfish Pot Pie is ridiculous. Just ridiculous.” They plan to add different brunch items as time progresses, such as a breakfast pizza. Speaking of pizza, another special is the half-priced pizza and pitchers of beer on Tuesdays. Of course, it’s no ordinary pizza. “The thing we are most proud of is the love we put into everything,” Stutes says. “I’ve always said that. We all get here at 7 o’clock in the morning because we start everything from scratch. We make our pizza sauce and our dough. There is a lot of prep that goes on... and there’s a lot of love. That pizza oven has been here since before Rikenjaks and I’m not sure how long before that. So, it’s really ‘worn’ as they say.” I’m excited to take advantage of the dinner pairings that Sloppy’s Downtown also offers. The first event was the pairing of five different wines with a fivecourse meal. The next few pairings in the works are going to be tequila-based drinks, beers, then whiskey. Each type of liquor will be particular to that event. “Although you’ll know what kind of alcohol is being served, that is about all the details you get until you sit down at the table,” Stutes says. “People come in and have no idea what they are eating. There are five courses, but they don’t know what they are.” Adults aren’t the only ones who get to enjoy what Sloppy’s has to offer. Every Wednesday, children eat free from 4-8 p.m. from the kid's menu. From great music, to food and fun, there is so much that Sloppy’s Downtown has to offer. I truly thank the entire team of the Sloppy’s family for everything they have done for Southwest Louisiana.

EVENT GUIDE Run with The Nuns Sept. 23 CHRISTUS St. Patrick Foundation is gearing up for the seventh annual Run with the Nuns Charity and Cook-off, which will take place on Saturday, September 23, at the Lake Charles Civic Center Amphitheatre. The newly added 5K Run begins at 7:30 a.m., Rice and Gravy Cook-Off begins at 8 a.m. and the Motorcycle & Jeep Ride begins at 9 a.m. Registration for the 5K Run is $30 and includes lunch and door prize ticket. Runners may race in tasteful nun’s garb. The Ride is open to both motorcycle and jeep riders. Registration is $30 for each driver and $20 for the first passenger, and includes lunch, medal and door prize ticket. WHAT: 67th Delcambre Shrimp Festival WHEN: August 16-20, 2017 WHERE: Shrimp Festival Building & Grounds Since 1951 Delcambre, Louisiana residents have gathered at the docks along Bayou Carlin to witness the ‘Blessing of the Shrimp Fleet’ prior to opening season. This year was no different, in spite of impending rain. Festival President Tracey Trimm, along with his committees, did an excellent job of organizing this event! After a Fisherman’s Mass, several Knights of Columbus members walked a plank to escort the priest aboard the shrimp boat ‘God’s Great’ for the blessing! Locals, tourists, fishermen and this ‘Spice Girl’ all gathered to witness the parade of colorfully decorated boats as they were blessed by Rev. Buddy Breaux, pastor of Our Lady of the Lake Catholic Church in Delcambre, for good luck and an abundance of seafood. The town of Delcambre is located about 20 miles southwest of Lafayette, LA and is home to one of the area’s most productive shrimp fleets. This 5-day festival is one of the most notable in Louisiana. It has gained popularity by providing a variety of delicious dishes and popular entertainers. This year’s musical line-up included National Recording Artists Daryle Singletary and Clay Walker. Other entertainers were Jeff Dugan, Kip Sonnier, Sal Melancon & Friends, Beau Young Band, Leroy Thomas & the Zydeco Roadrunners, Dustin Sonnier & the Wanted, T.K. Hulin & Smoke, Willie T., Warren Storm & GG Shin. Events included a shrimp cook-off, queen’s pageants, fais-do-do’s, food booths, carnival rides and of course, the blessing of the shrimp boat fleet. This years reigning King is Marty LeBlanc (owner of the ‘Beach Master’ shrimp boat) and the 67th Shrimp Festival Queen is Sarah Saunier. This is a festival that the entire community of Delcambre looks forward to every year. You’re gonna want to mark your calendar for next year’s event which will be held on the third weekend in August. I hope to see you there!

SOWELA Instructor Receives President’s Faculty Fellowship Patricia “P.A.” Guillory, assistant professor in the School of Business and Applied Technology at SOWELA Technical Community College, has been selected to receive the President’s Faculty Fellowship from the Louisiana Community and Technical College System. The award, sponsored by the Yale Office of Undergraduate Admissions, is solely student-led. Benoit was nominated by former student Simarpreet Chadha, who now attends Yale. WCCH Foundation Receives Grant from Cameron LNG Cameron LNG awarded the Foundation of West Calcasieu Cameron Hospital with a $6,500 grant for the provision of numerous health programs and services for the residents of northern Cameron Parish and west Calcasieu Parish. Lake Charles Pit Bull Rescue …. Renee Smith, the founder of the Lake Charles Pit Bull Rescue, has rescued, rehabbed, and adopted over a thousand dogs in the past eight years. In the wake of Hurricane Harvey, one of the worst disasters in US history, Renee and her team of approximately 30 volunteers have kicked it into overdrive. Prior to the storm, LCPBR already had 58 dogs in need of foster or forever homes. Just this week, 20 more dogs have been added to that list, along with a pig and a bunny. This is just the beginning. “The number of dogs who are lost and displaced is vast,” Renee says. One of the most important things Renee would like people to know is that all of the dogs coming in must have a place to go. If no one fosters or adopts the dogs who are already at LCPBR, then there is no room for more. Each dog that comes in must be assessed, as many of them come from loving homes and have owners who are looking for them. Each adoptable dog at LCPBR is fully vetted, micro-chipped and fixed. The organization also has a trainer who is CPDT certified. The adoption fee is $250 and well worth it, as the money

covers all the vet costs and training. LCPBR spends roughly $58,000 a year in vet bills. With the help of donations and volunteers, Renee was able to deliver 3,000 pounds of dog food to Texas as well as donate to Heck Haven, which takes in injured wildlife. Donations for other animals are also important and are being distributed. Many horses are also in need of food, supplies, and vetting. Ed Chavanne from our local Petco gave Renee and LCPBR full access to freely shop his store for supplies needed during this trying time, but there is still a need (and will be for months to come) for supplies such as collars/leashes, food/water bowls, bedding, food and kennels, as well as bleach and detergent to keep everything clean and sanitary for the dogs. It is important that we remember to donate local so we can make sure we know where our money is going. Renee has a heart of gold. She is going above and beyond to ensure as many dogs as possible are saved and properly adopted out. She and her husband, Joel, her children and each member of LCPBR are working so hard to do great things for dogs ,not only in Lake Charles and Louisiana, but everywhere. Let's help them help these beautiful creatures by becoming a foster or by adopting!
