A Letter From The President While many of you may not have visited the Club recently, it has been very busy behind the scenes with construction and hiring going on.

The search for the new Head Golf Pro has continued to make progress, beginning with approximately 20 resumes. After reviewing resumes, about 10 candidates were screened. Out of those 10, 4 qualified candidates were invited to tour the facilities and be interviewed by our selection committee, which is made up of a diverse group of members, General Manager

Richard Mogensen, Jimmy Germana, and Sean Cracraft. We hope to announce the hiring of a new Head Golf Pro in the near future. The search for a new Executive Chef is also in process, and we hope to announce a candidate in the near future. The club's financial results are good, especially considering the challenges created by the Clubhouse renovation project. Golf rounds, golf shop merchandise sales, and tennis lessons are all exceeding budget. Although we needed to close the Clubhouse for an extended period of time to install new chillers, paint, and perform other maintenance, we are not anticipating the closure to have a significant impact on the Club's finances. The growth in Membership continues to be very positive for the Club and we see a continued stream of new Membership interest each month. We are ahead of budget for the year. On the Clubhouse renovation project, we are continuing to work with the City of Coral Gables to obtain permits for the new roof and for the construction of the 19th Hole. Our Clubhouse project is progressing well and we are seeking to get a more specific timeline for completion. The storms and rain in July delayed the exterior painting and construction for a few days but we are getting caught up now. The biggest challenge this month has been the replacement of the Club’s chillers that supply air conditioning to the building. The chillers alone are a 4 to 5 week project but installation should be completed by the second week of August. We are still targeting to get the new restaurant-bar, the Junior center, and the Fitness Center completed by November 1st, subject to final inspections and an approved Certificate of Occupancy. We also are scheduling shortly the 19th Hole addition and work that is needed on the pool complex. Certainly everyone is excited and working hard to get this project completed as soon as possible. The budget for this project has been stretched a little as we have encountered several items that needed to be addressed due to the age of the building and equipment, and due to existing conditions in the field that were not anticipated. We are managing these changes, monitoring the budget, and value engineering all costs as possible. The Board of Directors is dedicated to keeping you all informed as we make progress. We are planning to schedule two member forums in which members will have the opportunity to ask the Board questions and give their perspective on Club matters. The first of these will be scheduled for the end of September or beginning of October, and the second will be scheduled at the end of November or beginning of December.

A Letter From The General Manager

As you can imagine, July has been actionpacked for the staff. As Mr. Chomiak mentioned in his letter, the projects are progressing well and the staff is coordinating all the changes that will take place over the next few months. I have included a chart in the newsletter of potential opening dates for club facilities that are subject to move as we complete the projects.

Currently, we are close to hiring a new Director of Golf for Deering Bay. We had some outstanding candidates and we are trying to finalize filling this position shortly. We are also searching for a new Executive Chef and we are engaged with food tastings with many candidates to see who best fits Deering Bay and the membership.

While the dining rooms have been closed, the Food Truck has been a great success and we have had many nice comments from all of you. Julio Canales and our Sous Chef Ahren have been changing the menu weekly to keep it interesting for you. If you have not been to the Food Truck yet, give it a try. The Main Kitchen will begin undergoing a renovation to replace the ceilings, walls and flooring and adding a few new pieces of equipment starting next week. We look forward to these enhancement to support our new restaurant facilities. Now that the new chillers are almost complete, we will be able to re-open the pool in the next two weeks. A note will come out shortly announcing the opening date once the new transformer and some mechanicals are completed. Once the air conditioning is back, we will be able to re-open the Clubhouse for member use. We have a few new staff members to highlight. We are so happy to welcome Kylie Bringola as our new Communications Manager, who will be responsible for all of our member communications and media. She has just moved to the area from up north and is getting used to the Florida heat. Tiffany Feliciano is our new On-Course Food & Beverage Golf Cart staff member. She brings a bright personality and great member services to the club. Please welcome her to the team. We are in the process of getting an upgraded F&B cart to provide more on-course menu choices soon. We welcome our many new members this month in July and August. Our continuing growth of membership has been terrific. The Deering Bay family continues to grow and we are all excited to introduce everyone to the new facilities as we get this project finished in the next few months. We are here to assist all of you. We thank you for your patience and understanding during this construction period. I can assure you that it will be worth the short inconvenience to all of you. Have a great August!

News From Membership First of all, I would like to apologize to all of the new members that started in July without a Clubhouse, but soon it will all be back to normal and with a brand new A/C unit!

I also want to welcome the many members and their families who have joined Deering Bay Yacht & Country Club over the past few months. The compliments I hear from most new members is that Deering Bay is a warm and welcoming community to experience fun and friendship, and they all LOVE the staff!

We are almost at the end of the summer and already have a record of 37 Previews sold since January with a 97% conversion rate to either Full Golf or Young Executive memberships. So far we have grown our membership to a total of 435 at the end of June, and this includes a large number of young families moving to the area. With so many friends and neighbors here at the club, we will be looking to do more to get everyone introduced, between formalizing our new member orientation and collecting and sharing photos of new members so you can greet them around the club. Please extend a warm welcome to all of our newest members and friends! You will find a list on the next page and as always, if you ever need assistance with your membership, have any questions, or are interested in sponsoring a new member, please feel free to contact me at any time. Last but not least, I would like to introduce our new Communications Manager, Kylie Bringola from Massachusetts! COVID INFORMATION TO CONSIDER As you have all seen on the recent news, the COVID Delta variant is aggressively appearing in Florida and in many other states. The Club has had some reported cases of COVID recently reported to the management. Any member contact has been minimal, but we suggest you stay 6 ft away from everyone as possible and wear a mask when requesting services at the club. We are following the Troon protocols in dealing with this issue to maximize safety of all. Our staff continues to be required to wear masks while at work, at meetings and in the presence of members at all times. We will continue to manage this process into the fall as this variant continues. The MPOA has issued a rule to all residents, contractors and guests, that within the Deering Bay Community masks are required indoors and outdoors in public events. As the Clubhouse is currently closed, the risk of spreading the COVID virus is minimized, but not eliminated. So, if you are golfing, playing tennis or in fitness classes, please wear your masks as recommended by the CDC and as appropriate. Here are the latest CDC updates for vaccinated people for your information: The CDC has updated information for fully vaccinated people given new evidence on the B.1.617.2 (Delta) variant currently circulating in the United States. See their website for more information https://www.cdc.gov/coronavirus Added a recommendation for fully vaccinated people to wear a mask in public indoor settings in areas of substantial or high transmission. Added information that fully vaccinated people might choose to wear a mask regardless of the level of transmission, particularly if they are immunocompromised or at increased risk for severe disease from COVID-19, or if they have someone in their household who is immunocompromised, at increased risk of severe disease or not fully vaccinated. Added a recommendation for fully vaccinated people who have a known exposure to someone with suspected or confirmed COVID-19 to be tested 3-5 days after exposure, and to wear a mask in public indoor settings for 14 days or until they receive a negative test result. CDC recommends universal indoor masking for all teachers, staff, students, and visitors to schools, regardless of vaccination status. For those that are not vaccinated, certainly each person’s medical situation is different, but for the health your family and friends and the community you may want to consider getting vaccinated given the direction of this again rising pandemic. I wanted to take a moment to thank you for welcoming me to the Club, even for my abbreviated stay! I have really enjoyed my time as part of this special place and I am excited for the long term future of Deering Bay. This facility is so special and with the planned improvements, the future looks really bright.

As we are now in the 'Dog Days' of summer 2021, we are very much looking forward to the Clubhouse improvements and getting our operations back to normal this fall. Jimmy and the grounds crew continue to do a fantastic job with the course, it is looking absolutely beautiful! One more round of aerification is on the horizon for mid-August and then we will be full steam ahead into the fall! I hope all of you stay safe and healthy through the remainder of the summer, and we are looking forward to seeing you soon here at the Club!

Aerification Notice I sincerely hope that everyone has enjoyed their summer thus far, and that August is a great ending to it. The grounds crew has been hard at work maintaining and improving the course this summer, even having to work through over 7 inches of rain in the month of July. Over the past few weeks, our crew has been hard at work removing barriers, softening mounds, and laying sod.

Our final closing of the summer will be Monday, August 16th through Thursday, August 19th, and we will reopen on Friday, August 20th. During this closing, we will complete aerification on the remaining 4 fairways. JUNIOR GOLF PROGRAM: SUMMER 2021

The Deering Bay Junior Golf Program has been designed for our junior members to instill an overall appreciation for the game of golf while developing golf etiquette and a foundation for playing. Our summer junior golf program has been adjusted based on social distancing and renovation constraints with an student/instructor ratio of 4:1. Safety and health is our #1 priority and this is necessary to run a safe summer program for everyone.

Little Putters: Ages 5-8

Jr. Development: Ages 9-17

On Tuesdays, Thursdays, and Saturdays from 10:00-11:00 am, juniors aged 5 to 8 are introduced to the game of golf through professional instruction and a variety of fun activities. The Little Putter curriculum will cover the basic fundamentals of golf along with lasting life skills.

On Tuesdays, Thursdays, and Saturdays from 11:30 am -1:00 pm, juniors aged 9 to 17 will learn and practice the following areas: full swing, putting, chipping, pitching, etiquette, rules of golf, and sportsmanship. Each player will be evaluated and advanced according to ability.

August 3, 5, 7. Fee: $25 per session

Parent/Junior Tournament Saturday, August 28: 3 pm shotgun A nine-hole tournament designed to allow the junior golfer to pair up with mom, dad or grandparents to "show off” what they are learning in the golf clinics and camps. We ask that you register early for this event as space is limited. Fee: $25 per person Cart fee waived for junior participants. Award reception to follow.

As we move closer to the re-opening of the Clubhouse, the Food and Beverage department has been hard at work building a team and establishing a collaborative culture among all of us. We understand that in order to achieve the level of excellence that you expect from us, we need to work together and believe in each other.

The team has continued to create and j.canales@dbycc.com deliver quality products in a casual setting. For the first week in August, we are offering an Asian-inspired menu. In the second week, our team will be offering a Mexican menu. We also have some signature items available from our typical Club menu each week. I wanted to extend my gratitude for each and every one of you that supports our wonderful Food and Beverage team. About Ahren A Miami native, Ahren practically grew up working in a kitchen at his family's Cuban Bakery, Three Little Cakes, which was a staple in Kendall for 52 years Ahren is a 2008 graduate of Johnson & Wales in Miami, and has been a chef in a variety of settings around South Florida since. From Mom-and-Pop restaurants to five-star hotels, Ahren has always loved the challenge of creating and discovering new recipes and dishes. While Ahren has crafted his fair share of specialty cuisines, he says his go-to meal is always a grilled cheese with tomato soup! Ahren has been a part of the Deering Bay family for almost a year and a half, and is excited to help take dining at the club to a new level in the coming months!

"This is a dish that is a favorite among healthy eaters. It's a dish that has so much potential and versatility when it comes to how you want to build it. Being in South Florida, what better to use than shrimp? However, this can be customized to anyone's preference. Whether you want grilled vegetables, a nice piece of chicken, or Mahi, you can't go wrong." -Chef Beers Ingredients: 4 oz. Jumbo Shrimp 4 oz. Quinoa 4 oz. Spinach 0.5 oz Yellow Onion 1 cup Preferred Stock

0.5 oz. Garlic 0.5 oz. Blended Oil 0.5 oz. Lemon Juice 1 oz. Parsley 2 sprig Rosemary

Procedure: 1. First, measure out your quinoa and stock that you will be cooking it in (typically vegetable). You should have a 2:1 ratio of liquid to quinoa. Bring the liquid to a boil and add your quinoa. Stir and lower the heat to medium-low and stir occasionally. Once the quinoa is cooked, remove from the pot and set aside in another bowl. 2. Chop your onion, garlic and herbs. Keep them all separate. In a separate bowl, place your shrimp and season as desired. I like to use Chef Prudhomme's blacken seasoning for my shrimp to give it a nice pop of flavor. 3. You will want to heat up a sauté pan to mediumhigh heat and add some olive oil. Add your shrimp to the pan once it is nice and hot. After a few minutes of cooking, add the garlic and a splash of lemon juice to deglaze the pan and extract the flavor. Remove shrimp from the pan and set aside. 4. In the same pan, add some more olive oil and add onions. Sweat them for 2-3 minutes while stirring to cook them through. Add your spinach and sauté for another minute. Follow with the quinoa some more lemon juice, rosemary, and parsley. Fold the quinoa and spinach together until it’s heated through. Season with salt and pepper as desired. 5. In a bowl, place 1 cup of quinoa in the center. Pour your blackened shrimp over the quinoa. Garnish with some parsley or a rosemary sprig and enjoy!


News From The Courts As the summer begins to wind down, we wanted to thank all of our tennis members for the support over the past few months. We have been fortunate to have enjoyed some great playing weather during the month of July, and are hoping that continues to be true as we turn the corner into August.

With many of our Junior members getting ready to head back to school, it is the perfect time for us tennis players to go "back to the basics" of the game of tennis.

Whether you have been a tennis player all your life or have just discovered your passion for the sport, it is important to always remember the fundamentals of the game, beginning with grip. While most players have no trouble switching between forehand and backhand grips, volley and serve grips are often overlooked. Volley and serve grips can be relatively easy to understand, but it takes a fair amount of practice to become comfortable enough to use them on a regular basis. As always, the Tennis Department would love to help you work towards any of your tennis goals. We are very much looking forward to having many of our members return from vacation in the coming weeks, and are working towards planning a Fall season that will benefit Junior players, newcomers, and experts alike. Ways to Prevent Heat Exhaustion During Fitness Training at Deering Bay While there are plenty of benefits when it comes to exercising in the summer heat, we must always be mindful of our internal body temperature. As you prepare for your next fitness class or training session here at Deering Bay, keep these tips in mind to prevent heat exhaustion! Drink plenty of water before, during, and after exercise This step is important to remember during water aerobics classes as well, since the lower water temperature may trick your brain Replenish electrolytes with an energy gel, stick, powder, or sport drink Reduce caffeine intake as caffeine can dehydrate the body further and speed up the heart rate Wear loose-fitting clothing to allow the skin to breathe and to stay protected from the sun Slow down pace to reduce effort levels

Merrick House Travel back in time to the roaring 1920s when you visit the Historic Merrick House Museum. Settled on a 1.3 acre lot filled with gardens, a fish-filled grotto, and a lily pond, you can tour the 14 rooms of the Merrick House that have been nearly untouched since the impressive Merrick family made it their home. George Merrick, founder of Coral Gables, called 907 Coral Way home as he rose to riches while continuing his poetry and farming hobbies. Old Cutler Trail If Mother Nature blesses us with any dry days this month, explore the area by foot or by bicycle on Old Cutler Trail. Dating back to the 1800s, Old Cutler Road was once used as a wagon trail before being declared a public road in 1895. Old Cutler Trail follows alongside Old Cutler Road and leads to some of the area's greatest attractions like Matheson Park, Pinecrest Gardens, and The Deering Estate.
