Liebe Leserinnen, liebe Leser, Endlich ist es wieder soweit, Weihnachtsmärkte soweit das Auge reicht, glühweinselige Gesichter, die noch schnell die letzten Weihnachtsge­ schenke shoppen und glänzende Kinderaugen, die auf den Weihnachtsmann warten. Bis zum Jahreswechsel lässt sich diese rührselige Stimmung ganz gut aushalten und was kommt dann? Die tiefe Winterdepression? Keines­ falls! Nicht nur die ersten Konzerte in der nigelnagelneuen Elb­­philharmonie starten – oh, was freuen wir uns darauf –, sondern auch der Ausblick auf einen knackig kalten Winter, in dem wir vielleicht mal wieder die riesigen Eisschollen auf der Elbe bewundern oder gar beim Alster­vergnügen über die Alster spazieren können, macht doch gute Laune.

Für die ungemütlichen Tage haben wir in dieser Ausgabe ein großes Kaschmir-Special, sodass Sie sich in feinstes Garn kuscheln können oder Sie träumen sich mit unseren Reisetipps ganz einfach in wärmere Gefilde. Wir wünschen Ihnen jedenfalls eine fröhliche Adventszeit, bedanken uns für ein tolles Jahr 2016 und freuen uns auf ein grandioses Jahr 2017 mit Ihnen!

Dear reader, It’s that time of year again: Christmas markets as far as the eye can see, people with faces warmed by the glow of mulled wine snapping up last minute Christmas presents and children‘s eyes bright with excitement in anticipation of a visit from Father Christmas. This starry-eyed outlook usually lasts until the turn of the year – but what then? A deep winter depression?

No way! Not only will concerts be starting at the brand new Elbphilharmonie – and oh, are we looking forward to those – but the thought of a brisk cold winter in which we might be able to marvel at huge ice floes on the Elbe again or walk across the Alster during the Alster festival is enough to inspire good cheer.

For the less pleasant days, we‘ve included a big cashmere special in this issue so you can find out how to cuddle up in the finest yarn or simply dream that you‘re in warmer climes thanks to our travel tips. We wish you a lovely Advent, would like to express our gratitude for an amazing 2016 and are looking forward to a fabulous 2017 with you!

A CHRISTMAS MARKET UNLIKE ANY OTHER. Wie kam die Musik in Ihr Leben? Und wann war die Musik Ihr Leben?

Ich habe in jungen Jahren schon Klavier gespielt und eigene, kleine Instrumentale komponiert und das relativ autodidaktisch. Für mich war das von jeher Teil meines Lebens. Da gab es keinen Übergang oder Zeitpunkt. Für etwas, was für mich ganz natürlich von Anfang an immer da war, gibt es keinen genauen Startpunkt, da es einfach schon von Grund auf zu mir gehört.

Als Sängerin und Songwriterin ist man ständig auf der Suche nach Inspiration – wo finden Sie Ihre?

Es ist tatsächlich so, dass ich zu jedem neuen Album umziehe, also in eine völlig neue Gegend in Berlin, um komplett neue Inspiration für meine Songs zu bekommen. Das ist allerdings nicht immer einfach, weil so ein Umzug auch eine Menge Stress bedeutet. Aber genau das ist es, was für einen Künstler auch wichtig ist. Aus dem Komfort raus, in Bewegung bleiben, sonst wird man zu faul.

Zurzeit wohne ich am Alexanderplatz, dort habe ich mein kommendes Album „Zwischen den Sekunden“ geschrieben. Ein Platz mit Menschen, die so vielseitig, trist, zerrissen und zugleich schön sind, dass es einen in den Bann zieht. Linie 7 ist z.B. ein Song auf dem kommenden Album, in dem ich über die Menschen erzähle, die ich beim Warten auf die Bahn kennengelernt habe. Sie haben alle ihre sehr eigenen, unglaublichen und sehr emotionalen Geschichten. So wie jeder einzelne Mensch, nur dass man an diesem Ort gebündelt ganz viele verschiedene Schicksale kennenlernt. Unfassbar spannend als Songschreiberin.

Ihre Songs bestechen durch sehr originelle, fast schon poetische Texte, die von einer Frau zu sein scheinen, die fest im Leben steht. Würden Sie das über sich selbst auch so sagen?

Das fände ich zu eindimensional. Wer steht schon fest im Leben. Das Leben ist keine feste Plattform, in oder auf der man steht. Vielmehr ein sich schnell drehender und farblich wechselnder Kreisel …

Man muss die Bewegungen mitnehmen,alle,unten und oben. Eigentlich schön, dass sich immer alles im Leben ändert, vor allem man selbst … wer da fest steht, lebt nicht.

Ihre aktuelle Single „Medizin“ wurde in der Hamburger HafenCity gedreht? Wie kam es dazu?

Mein Lyrik-Video wurde in der Hamburger HafenCity gedreht. Mein offizielles Video in Berlin mit einer Marching Band. Wir wollten für mein Lyrik-Video kein klassisches Video mit Text und schönen Mustern, sondern ein Video, in dem ich selbst im Hintergrund agiere. Ich laufe auf einer Brücke in der Hafencity entlang, performe zwischendrin, laufe schneller, drehe mich und setzte mich irgendwann am Ende auf die Straße, die Kamera konstant vor mir, ein One-Shot-Video ohne Schnitt. Die Brücke hat etwas Besonderes, wie ein Korridor. Wir fanden sie so schön, dass wir danach direkt mein Albumcover dort aufgenommen haben.

Wenn Sie Hamburg in einem Satz beschreiben müssten, wie würde er lauten?

Man hat immer das Gefühl hier ist das Tor zur Welt, ist ja irgendwie auch so.

Ihr neues Album „Zwischen den Sekunden“ wird Anfang des Jahres erscheinen. Was macht dieses Album für Sie aus?

Jedes Album ist speziell und auch immer das Beste, was man wahrscheinlich bisher gemacht hat … in dem Jetzt denkt man sich … bis das nächste Album kommt. Ich denke, das, was man gerade macht, ist der Spiegel des Lebens in der Zeit, in der man das gerade tut, und somit komplettiert jedes Album die eigene Geschichte, wie eine Art Tagebuch. „Zwischen den Sekunden“ ist zum jetzigen Zeitpunkt für mich gerade das Spannendste, was ich gemacht habe, weil es mich und die Zeit, in diesem Moment gerade widerspiegelt.

Wie sehen Ihre Wünsche für die Zukunft aus?

Ich wünsche mir das Jetzt.

How did music come into your life? And when did music become your life?

I played the piano when I was young and composed a few short instrumental pieces and largely taught myself. For me, it was always a part of my life.

There was no transition or point in time. It was something that was naturally always there for me right from the start, there was no precise starting point as it simply was part of me right from the beginning.

As a singer and songwriter, you’re constantly looking for new inspiration – where do you find yours?

For each new album, I actually move house to a completely new area in Berlin in order to garner completely new inspiration for my songs. It’s not always easy because moving means a lot of stress. But that is exactly the kind of thing that is important for an artist. Getting out of your comfort zone, keeping moving, otherwise you get lazy. At the moment I live on Alexanderplatz and I wrote my upcoming album “Between the Seconds“ there. A square with people who are so varied, sad, broken but at the same time beautiful that it captivates you. “Line 7“ is for example a song on the upcoming album in which I talk about people that I’ve got to know while waiting for the train. They all have their own incredible and very emotional stories. Just like every single person has, but it’s just that you get lots of people who’ve experienced various different fates bundled together in this place. Incredibly exciting as a songwriter.

Your songs appeal with their very original, almost poetic texts that seem to be written by a woman very sure of her position in life. Would you describe yourself that way?

I think that’s too one-dimensional. Who stays still in life? Life isn’t a fixed platform in or on which you stay still. It’s much more like a quickly turning wheel that is constantly changing colour ... you need to take the movements as they come, all of them, up and down. Everything in life is always changing, particularly you yourself ... if you stay fixed, you can’t live life.

You current single “Medicine“ was filmed in Hamburg’s Hafencity. How did that come about?

My lyric video was filmed in Hamburg’s Hafencity. My official video in Berlin with a marching band. We didn’t want a classic video with text and pretty patterns for my lyric video, but a video with me in the background. I run over a bridge in Hamburg, perform in between, run faster, turn around and at some point at the end, I sit down on the street, the camera constantly in front of me, a one-shot video without any cuts. The bridge has something special about it, like a corridor. We thought it was so beautiful that we took the shots there for my album cover straight afterwards.

If you were to describe Hamburg in one sentence, what would it be?

You always have the feeling that this place is the gateway to the world, and in many ways it is.

Your new album “Between the Seconds“ will be released at the start of the year. What characterises this album for you?

Each album is special and always the best work you have done so far ... that you think you’ll ever do ... until the next album comes along. I think what you do right now is a reflection of your life at the time at which you do it and so each album has its own story, like a kind of diary. “Between the Seconds“ is the most exciting thing I have made so far because it reflects me at this particular moment in time.

What are your wishes for the future?

I wish for the present.

Located on the banks of the Lütjensee lake in the heart of the Switzerland-like Stormarn region, this little jewel at the gateway to Hamburg is a treat for all fish fans. Guide Michelin, Gault Millau and Feinschmecker have already been here and loved it, and the Falstaff res­ taurant guide called it the “best inn on the northern German mainland”.

If you’d like to see whether or not that’s true, just take a look at the New Year’s menu. With imaginative courses such as “Flash fried tuna tartare with yuzu cream, Asian-style marinated cucumber and sesame” or “Raviolo with house smoked eel, red cabbage, elderberry jus and black walnuts“, you’ll soon realise that the real fireworks here are not to be found exploding over the lake, but on the plates themselves.

The restaurant has been family-owned for over 90 years and in addition to pike, eel, trout and carp from Lütjensee lake, it also serves game hunted by the restaurant itself and beef from Schleswig-Holstein that is matured in house. ONO BY STEFFEN HENSSLER Er gilt mit Formaten wie „Hensslers Küchenrallye“ und „Grill den Henssler“ als einer der jungen Wilden unter den Fernsehköchen und ist auch mal im VW-Bus als „Botschafter der japanischen Esskultur“ unterwegs. Seine Kochbücher sind vor allem deshalb Bestseller, da sie köstliche Kreationen in wenigen Schritten ermöglichen. „Einfach Henssler“ beispielsweise punktet mit schnellen Rezepten mit jeweils maximal sechs Zutaten.

Sein Restaurant Ono in Hoheluft-Ost hat sich genau dieser Reduktion verschrieben. Denn Ono ist Hawaiianisch und heißt „Frischer Fisch auf den Tisch“. Asiatische Sushikreationen und andere internationale Köstlich­ keiten setzt Hensslers Team hier abwechslungsreich und modern um. „Sashimi on the Rocks“ kommen hier ebenso auf den Teller wie „Special Rolls“ mit klangvollen Namen wie „Sexy Girl Roll“, eine verführerische Kombination aus Panko-Zander, Gurke, Avocado, LLachstatar und Trüffel-Ponzu. So geschmacksexplosiv seine Kreationen sind, so pur, reduziert und doch stylish ist das Interieur des Ono. Gourmet-Glück unterm Reetdach:

STOCK’S IM ALSTERTAL „Der hat alles richtig gemacht“, freute sich Heiko Stocks ehemaliger Lehrmeister Eckart Witzigmann beim 20. Jubiläum des Hauses im September dieses Jahres. Und wer sich in dem reetgedeckten Fachwerkhaus von 1751 umsieht, wird dem zustimmen. Hier hat jemand Räume eingerichtet, in denen er selbst gern essen möchte: Dunkle Holztische, behagliches Gold an den Wänden, frische Blumen und Kerzen sorgen für ein stilvolles und behagliches Ambiente. Und selbst, wer etwas Tiroler Alpenfeeling in Hamburg sucht, wird hier fündig: 2012 ließ der begeisterte Skifahrer Heiko Stock seinen Betrieb um eine Almhütte mit viel Holz, Kuhfellen und loderndem Kamin erweitern.

Aber zurück zum Fisch, weshalb wir ja eigentlich hier sind. Heiko Stock hat viele Leidenschaften. Eine davon ist Sushi, weshalb sich der damals jüngste selbstständige Sternekoch vor zehn Jahren an der California Sushi Academy in Los Angeles zum „Professional Sushi Chef“ ausbilden ließ.

Und so findet sich auf der Karte eine außergewöhnliche Mischung aus Sushi, hausgemachter Pasta, exzellenten Fischgerichten sowie einer feinen Auswahl Fleisch vom Grill und heißen Stein. Der krosse Norweger Lachs mit Spinat, Erdnuss und Koriander mischt dem Norden einen feinen Hauch Asien bei. Und das Hamburger Seemanns-Labskaus kommt zwar auf den ersten Blick mit Spiegelei gutbürgerlich daher, überrascht aber mit Lachstatar und dem gewissen Etwas. Alles richtig gemacht eben.

But back to the fish, because that’s why we’re actually here. Heiko Stock has many passions. One of these is sushi, which is why the then youngest independent Michelin-starred chef trained to become a „Professional Sushi Chef“ at the California Sushi Academy in Los Angeles ten years ago. And so this place has an unusual mix of sushi, homemade pasta, excellent fish dishes and a fine selection of meat from the grill and stone oven on its menu. The crispy Norwegian salmon with spinach, peanuts and coriander mixes northern elements with a subtle touch of Asia. Although the Hamburg seaman’s labskaus dish looks very plain when you first look at it with its fried egg, it surprises with salmon tartare and a certain special something. Everything here is just perfectly done.

GOURMET HAPPINESS UNDER A THATCHED ROOF: STOCK’S IM ALSTERTAL. “He’s done everything right”, enthused Heiko Stocks’ former teacher Eckart Witzigmann at the restaurant’s 20th anniversary celebrations in September this year. And if you take a look around the thatched timbered house from 1751, you’ll agree with him. Here, someone has created rooms where he himself would love to eat: dark wooden tables, cosy gold on the walls, fresh flowers and candles ensure a stylish and cosy atmosphere. And if you’re looking for a bit of Tyrolean alpine feeling in Hamburg, this is the perfect place: in 2012, enthusiastic skier Heiko Stock expanded his business with the addition of an alpine hut with lots of wood, cow hides and a blazing fire.

Schlemmen wie bei Vaddern:

Es ist ein Familienbetrieb, den Vater Rüdiger Kowalke 1981 zu einer Top­ adresse für Fischliebhaber aus Hamburg und aller Welt machte. Heute führt Sohn Dirk die Geschäfte und setzt auf die Verbindung von Tradition und Moderne. Doch nicht nur Vater und Sohn kümmern sich um das Wohl der Gäste, auch Gründergattin Susanne Kowalke, gern auch als „charmanteste Gastgeberin der Stadt“ bezeichnet, sowie ihr Sohn Benny. Starke Familienbande also, seit Anfang der Neunzigerjahre ergänzt durch Küchenchef Michael Scherer, vormals an hochkarätigen Häusern wie dem Hotel Adlon in Berlin und dem Süllberg in Hamburg.

Alles, was aus den Meeren kommt und Schuppen, Krusten oder Schalen hat, kommt im Hamburger Hafen direkt auf den Tisch. Neben feinen Klassi­ kern wie Austern, Hummer und Kaviar oder klassisch-regionalen Gerichten wie dem legendären Räucheraalfilet auf Kräuterrührei hat auch hier ein Hauch Asia Einzug gehalten: beispielsweise die Knuspergambas auf pikantem Glasnudelsalat oder das Pfeffersteak vom Thunfisch auf asiatischem Wokgemüse mit Honig-Soja-Sauce. Der asiatische Touch steht dem Meeresgetier eben außerordentlich gut. Es lohnt sich übrigens, im Fischereihafen Restaurant etwas zu früh zu sein und einen Apéritif in der Oyster Bar zu nehmen. Dort werden die Gäste charmant von Richard Chaniewski mit vorzüglichen Drinks versorgt. Dazu der Blick auf die Schiffe und Kräne, am besten wenn es draußen langsam dunkel wird – mehr Hamburg geht nicht.

after the well-being of the guests, but also the wife of the founder, Susanne Kowalke, who is regarded as “the most charming hostess in the city” and her son Benny. A strong family bond, then, and one that was extended to include chef Michael Scherer at the beginning of the 1990s. Scherer used to work at high-quality establishments such as the Hotel Adlon in Berlin and the Süllberg in Hamburg.

Everything that comes from the sea and has scales, a crust or shell comes straight to the plate from Hamburg harbour. In addition to fine classics such as oysters, lobster and caviar or classic regional dishes such as the legendary smoked eel fillet on a bed of herbal scrambled eggs, a hint of Asia has also penetrated here, the crispy prawns on spicy glass noodle salad or tuna pepper steak on a bed of Asian wok-fried vegetables with honey and soya sauce being but two examples. The Asian touch goes exceptionally well with the seafood. By the way, it is worth arriving at the Fischereihafen Restaurant early and enjoying an aperitif in the Oyster Bar. Here, guests are supplied exquisite drinks by the charming Richard Chaniewski. And with the view of the ships and cranes, particularly when it’s slowly getting dark outside – you simply can’t get more Hamburg than this.

HUMMER PEDERSEN 1879 von Frederik Carl Christian Pedersen als „Pedersen Schiffsproviant“ gegründet, wurde der Betrieb bereits zehn Jahre später an den neu angelegten Markt- und Landungsplatz der St.-Pauli-Fischhalle verlegt. Hier wurden damals die noch üppigen Hummervorkommen aus der Nordsee vertrieben, und Pedersen legte mit seinen mit Seewasser gefüllten Hummerbassins den Grundstein für sein „Spezialhaus für lebende Hummer“.

Noch heute führt Inhaber Joachim Niehusen die Geschäfte in der Großen Elbstraße. Sein Handel für Meeresfrüchte und Frischfisch steht für höchste Qualität und beliefert vor allem Kunden aus der gehobenen Gastronomie.

Seit 2003 führt Daniela Niehusen zudem das Bistro Hummer Pedersen, in dem die fangfrischen Köstlichkeiten vor den Augen der Gäste zubereitet werden. Auf der feinen Speisekarte steht neben gekochtem halbem Hummer aus der hauseigenen Hälteranlage, Ossetra Kaviar mit Blini oder großen Sylter Wildaustern auch die beliebte Hummer-Pedersen-Vorspeisen-Etagere für zwei: Graved Lachs, Rauchlachs, Krabbenfleisch, Jakobsmuscheln, Garnelen, Polpo und Algensalat gehen hier eine köstliche Liaison ein. FROM SHIPS PROVISIONS TO FINE BISTRO DINING: HUMMER PEDERSEN. Founded by Frederik Carl Christian Pedersen as “Pedersen Schiffsproviant” in 1879, the business here was relocated ten years later to the newly constructed market and landing place at St. Pauli-Fischhalle.

Pedersen sold what was then a still plentiful lobster supply from the North Sea and with his lobster tanks filled with seawater, he laid the foundation stone for his “Special house for living lobsters”. Owner Joachim Niehusen still runs the business on the Große Elbstraße. His seafood and fresh fish business is of the highest quality and he mainly supplies customers from the upmarket gastronomy industry.

Since 2003, Daniela Niehusen has managed the Bistro Hummer Pedersen where freshly caught delicacies are prepared in front of the guests. Lobsters are caught traditionally using traps off the coast of Nova Scotia in Canada and only fully-grown animals with hard shells are fished. Wie ist die Beziehung zwischen Ihnen und Ihrem Vater?

Die Beziehung zwischen meinem Vater und mir ist geprägt von gegenseitiger Bewunderung und gegenseitigem Respekt, mein Vater ist für mich ein Vorbild. Er war ein Vorreiter und hat das Konzept von Wellness- und Gesundheitstourismus in Spanien etabliert. Außerdem war er eine Schlüsselfigur bei dem Thema gesunder Lebensstil; er hat darüber informiert und kommuniziert, wie wichtig das ist. Ich bin ein Teil der SHA-Wellnessklinik, seit sie vor acht Jahren gegründet wurde, und es gab seither nicht einen Tag, an dem ich nicht noch etwas von meinem Vater gelernt habe und an dem ich nicht stolz auf ihn war und darauf, Teil eines solch herausfordernden Projekts wie SHA zu sein.

Ihr Vater entwickelte das einzigartige Konzept der SHA-Klinik auf Grundlage persönlicher Erfahrungen im Gesundheitsbereich und hat das Klinik-Hotel 2008 eröffnet. Was hat ihn dazu gebracht, seine Erfahrungen mit anderen Menschen zu teilen?

Mein Vater litt lange Zeit an vielen gesundheitlichen Problemen, die seine Lebensqualität beeinträchtigt haben. Dann hatte er Glück und traf einen Arzt, Michio Kushi, der führend auf dem Gebiet der Ernährung und Naturtherapie war. Dank der heilenden Kräfte einer gesunden Ernährung und eines gesunden Lebensstils gelang es ihm, seine Gesundheit wiederzuerlangen. Es wurde ihm klar, dass Gesundheit nicht

die Abwesenheit von Krankheit ist, sondern ein optimaler Zustand von physischem, mentalem und spirituellem Wohlbefinden, zusammen mit dem Idealgewicht und toller Vitalität. Er spürte, dass er seine persönlichen Erfahrungen und sein Wissen mit so vielen Menschen wie möglich auf der ganzen Welt teilen musste, um eine Art Vermächtnis von Gesundheit und Wohlbefinden zu schaffen. Daher hat er SHA gegründet mit dem Ziel, Tausenden von Menschen zu helfen, damit diese ihr Leben ändern und die beste Version von sich selbst werden konnten. Es ist sehr wichtig sich gesund zu ernähren, um einen idealen Gesundheitszustand zu erlangen, aber das heißt nicht, dass es nicht schmecken darf. Ihr Konzept einer modernen Wellnessklinik ist ein toller Trend und Ihre Gäste mögen es – es scheint, Sie haben eine Nische entdeckt. Planen Sie ein weiteres Hotel oder eine Erweiterung der Geschäftsidee? Vielleicht sogar eine Expansion in andere Länder?

Wir haben ein Projekt in der Pipeline und prüfen gerade die Möglichkeiten. In der Zwischenzeit entwickeln wir eine SHA-Klinik-App für unsere Gäste.

We spoke to vice president and son of the founder, Alejandro Bataller, and asked him about his vision of this completely new wellness hotel concept.

As the son of the founder Alfredo Bataller Parietti, you are actively involved in the company.

How is the relationship between you and your father?

The relationship between my father and me is of mutual admiration and respect, my father is a role model for me. He has been a pioneer in establishing the concept of Wellness and Health tourism in Spain, as well as a key figure in informing and communicating how important it is to follow a healthy lifestyle. I have been a part of SHA Wellness Clinic since it was created eight years ago, and there hasn’t been one day in which I haven’t learned something from my father and I haven’t felt proud of him and of being a part of such a challenging project like SHA. Your father launched the unique concept of the SHA Wellness Clinic on the basis of personal, health experiences and opened the Clinic-hotel in 2008. What made him want to share his experiences with other people?

After many years of suffering from many health problems that affected his quality of life, my father was lucky enough to meet a doctor who was a leading expert in nutrition and natural therapies, Mr. Michio Kushi. Thanks to the healing powers of a healthy diet and lifestyle, he managed to recover his health. Since then, he reached the con-

clusion that health is not the absence of illness, but an optimum state of complete physical, mental and spiritual well-being, maintaining an ideal weight and great vitality. He felt that he needed to share his personal experience and knowledge to as many people as possible all over the world, so that he could establish a legacy of health and wellbeing. Therefore, he founded SHA with the objective of helping thousands of people to change their lives for better and to become the best version of themselves, which so far he has greatly achieved.

Why did you choose this location for SHA? It is important to be in harmony with the environment in order for our health to be optimal and to experience our real potential, which is why we chose where SHA should be built very thoughtfully. SHA’s location is considered to be one of the most favourable places for our health in the world, according to the World Health Organisation.

The mild temperature of the region, which is 25º average during the whole year, the closeness of the Mediterranean Sea, the Sierra Helada natural park and the mountains that surround SHA make it the perfect place for our guests to experience the purest form of nature. Although SHA is a destination itself, there is a wealth of nature, dream-like beaches, 330 sunny days per year and

The architect who designed SHA is Carlos Giraldi, who is an expert in his field with more than 40 years of experience. We work with the award-winning interior designers Elvira Blanco and Francisco Palacios, who have given SHA a very particular modern style thanks to the natural stone, the water, the whiteness, the greenery, the glass, the Corian lattice-work and the perfect combination of lights and shadows that represent equilibrium. Moreover, we also work with the design-furniture brand Gandía Blasco, whose products are all made to be in harmony with the environment and to create a relaxing and peaceful atmosphere. In SHA, everything has been though of for our guests’ comfort right down to the tiniest detail. Open spaces, exclusive designs, textures, aromas, comfort and refinement in every detail.

In the hotel restaurant SHAMADI, the overall concept is, of course, reflected in the menu as well as the selection and origin of the products.

How would you describe the orientation of the kitchen?

SHA Nutrition is oriented to therapeutic objectives. It is healthy, natural, energising, and balan-

ced; it is inspired by ancient principles, adapted to modern life with a flexible, practical, and appealing approach respecting nature’s offerings at the given time of year and in the given place. It is personalised based on individual’s needs. This nutrition fully coincides with the dietary recommendations of the World Health Organization and with the most recent studies from leading universities in the field, such as the Harvard Medical School and the Division of Nutritional Sciences at Cornell.

How do you tackle the trend of macrobiotic nutrition?

I don’t like talking about trends in nutrition because I understand it as a tool to be healthy, not as something trendy. It is very important to follow a healthy diet in order to achieve an optimum state of health, but that doesn’t mean that it should not be delicious. In SHA Wellness Clinic we stand up for learning eating habits that allow our guests to enjoy delicious food that is also beneficial for their health. Following SHA’s strong focus on nutrition and desire to leave a legacy of health and wellness, last September we published a SHA Recipes book, called “The Recipes to live longer and better”, that includes more than 35 delicious and healthy recipes that are appealing for everyone.

The goal at the SHA Wellness Clinic is that your guests feel more vital, healthier and younger after a stay, and can integrate this new way of life into their daily lives. What is the recommended duration for a stay in order to achieve this goal?

Is a weekend trip as well a base to feel the first detox success?

The minimum stay at SHA for the guests to appreciate some results and to feel more vital, healthier and younger is of seven days, and the recommended one is of fourteen days because it’s how much it takes for our blood to renovate. However, the optimum length-stay depends on the goals.

SHA has a Life-Reset program for guests who suffer from burn-out and need a radical change in their lives that lasts for 28 days.

Your concept of a modern wellness clinic is a great trend and guests like it – you seem to have discovered a niche. Is another hotel or expansion of the business idea planned? Perhaps even an expansion into other countries?

This is a project in the pipeline, we are evaluating opportunities. In the meantime, we are launching a SHA Wellness Clinic app for our guests.
