“Love yourself instead of worrying about the idea of other people loving you”
F
-Author Unknown
ebruary is the month of love for those of us who still believe in fairytales (you
can take that however you want). Love has so many definitions, we love our
children, we love our significant other, but the most important love that we typically
let ourselves embrace later in life is the love we have for ourselves. As I look back through the rabbit trails of my life, my biggest regrets, as well as the women friends with whom I share my secrets, is that I didn’t fall in love with myself first. At my young age of 30, okay 40 . . . okay 40 something, life lessons as well as maturity have helped me grow into the world of self-love. I now have the mind set that I no longer associate with those who drain me and suck the life out of me. Whatever your age, whatever your gender, I encourage you to fall in love with yourself. It’s the best love you will ever find. Buy yourself presents, wrap them beautifully and open them with a bottle of wine, send yourself flowers with a note attached, “I’ll love you always” and gift yourself a trip alone. Allow yourself a small vacation; write a part of that book you’ve always wanted to write. Send notes to those you’ve always intended to, saying the things you’ve always wanted to; just because. The old clichés that time waits for no one, and that today is all we really have, should be a part of our everyday mantra. 2015 allows us time to review regrets and recommit to our future. This month, The City Magazine pays homage to love in all shapes and forms. Whether it’s from loving the simple features our great city has to offer, in particular our amazing culture and the food it brings with it, to the art and wide range of people living within our city limits. This month, I am really excited about our editorial highlighting our very own Mexican Food Trail where our writer Valentin Sandoval tracked down a few of the oldest and most distinguished El Paso Mexican restaurants our borderland has to offer. This issue also pays homage to Chef Bobby Griffing, a culinary icon for El Pasoans since he has cooked all over the world, from El Paso to Mexico City, to New York City and his current international project in Dubai. The interview conducted with him marks a first for me; thanks to technology Skype allowed us a face-to-face interaction as his culinary masterpieces are being created for royalty in Dubai. So this month in the spirit of love do something special. Whether it’s getting a big group together and dining with friends, or simply taking a walk on the slow side and doing something special for yourself – wherever your path takes you, choose love and the rest will take care of itself.

“It’s always a chef’s dream to open a place in their hometown,” says Griffing wistfully with a slight sense of nostalgia and pride. “I really miss that food truck.” The food truck Griffing mentions was one of my favorite downtown attractions on the weekends while in college. Friends and I would join flocks of other nightlife-lovers after last call to the Square Cow food truck that was usually situated near Union Plaza for late night burgers. There’s something about eating a juicy -- not greasy -- burger at 2 a.m. in a party dress that’ll always be satisfying. “Yes!” says Griffing, “That’s exactly what we wanted.” In 2012, Griffing decided to take his talents global once more. Working again with English, Griffing has opened 34 restaurants around the globe that include locations in Mexico City, the Bahamas and Tokyo. Griffing says he’s enjoyed and learned from every city he’s been in, but has a particular attachment to Tokyo. “The way of living, and the pride in presentation in everything that’s done over there …” Griffing says it inspires him. Take a look at Chef Griffing’s Instagram (chefbobbyg), and you’ll notice that Griffing’s dedication to artfully presenting his culinary masterpieces translates regardless of what city he happens to be in. Delicate seared scallops bathed in white chocolate and cauliflower, hamachi tartare, and lobster cantonese are among some of the delicious photos Griffing posts upon mastering the recipes. Griffing has been in Dubai preparing to open yet another restaurant for English, and says that the architecture and overall environment have affected him in a positive way.

As Griffing’s star has risen, he’s been featured on popular news shows such as “The Today Show,” “Top Chef,” “Iron Chef,” and “Regis and Kelly.” But part of him really wants to return to Texas. Griffing says he’ll always have a soft spot for El Paso, and that some of the best restaurants are still around. Among his hometown favorites are L & J Cafe and Cafe Italia.“That pizza is some of the best in the world,” he says, which is high praise from someone who knows his food. But what about Griffing? Surely he has a dream place that he’d like to open -- possibly in his hometown (nudge, nudge). To this he smiles. Yes, he has thought about it. “Yeah, something small. Thirty seats, no sign, reservations only. A speak-easy kind of place.” A place like that seems like it could (and would) do well in El Paso’s ever-evolving market. “El Paso is really on its way,” says Griffing, noting how proud he is of the

Did you know that studies have proven that holding a warm beverage in your hands during these cold months is actually proven to increase your mood? Why not make it tea? With more and more research showing various health benefits and more and more companies putting out innovative and unique tastes to drink, there’s no reason not to give tea a try! So whether your morning beverage is strictly coffee or religiously water, there are undisputed benefits associated with incorporating a simple cup of tea into your diet – and with more blends, accessories, and ways to sip, giving your system a boost, your fingers some warmth and your taste buds a treat has never been more trendy or more fun!
Bags or Loose Leaf If you are a common American, you probably have a box of tea in your pantry. But if it’s been awhile since you’ve visited a tea store or even been on the tea aisle of the grocery store, you may find there are more options than ever on which type of tea to buy. First off, you need to ask yourself what type you should buy: loose leaf or bags. Teavana says, “High quality loose teas are made from the Camellia sinensis plant’s finest hand-picked buds, whole tea leaves, large pieces of leaves or a combination of these parts. The time of year and growing conditions greatly affect the quality of tea. When all of these factors are taken into account, much like a fine wine, the tea retains its distinctive flavors and characteristics. In contrast, the tea found in tea bags usually consist of smaller pieces of tea leaves or tea fannings (also referred to as dusts) which may give a quicker brew, but lack the subtlety and full flavor of the larger loose leaf teas.” So depending on your lifestyle, if you are in a hurry or if you have an on-the-go tea steeper, you may choose one style of tea over the other. The choice is completely personal and something to consider before you hit the store. Once you decide this, choosing where to get your tea is another question entirely . . .

Where to Shop Where to buy your tea is another completely personal decision. While there are hundreds of national and international companies online who sell tea, remember El Paso has some great local spots where you can support local brewers. Tippi Teas has two locations on El Paso’s west side and are known for their delicious homemade blends as well as their pleasant ambiance. Another new location is The Tea Spout near UTEP on El Paso’s west side. “At The Tea Spout we have 40 high-quality loose leaf teas from all over the world,” explained certified tea sommelier and expert April Benson, owner of The Tea Spout. “We serve hot tea, iced tea, power shakes, Matcha energy shots, Matcha pastries, and tea-infused smoothies. We will also be introducing a small, healthy food menu within the next few months. Loose tea and steeping accessories are also available.”
For Socialites Now that you have your tea, it’s time to drink up! If you love having your friends over, what could be more fun (think Downton Abbey) than investing in a new kettle or delicate tea set to better help you entertain them? Or if you already

For the Sick The great thing about tea is that if you are feeling down, it’s a little something that can make you feel better! By doing a little research, you can customize your tea to fit your current need. For example, if you are suffering from a cold or the flu, drinking something with honey and lemon may relieve some of your congestion – or at least calm your throat. If you want something from an expert, going to The Green Ingredient in downtown El Paso is the perfect spot – the restaurant’s talented nutritionists can make a special blend of tea just for you and the symptom that ails you.

For the Health Nut Even if you aren’t sick, studies show that drinking tea can help your health in other ways. Green Tea has been ingested for years for its antioxidants. It is also believed that this tea can help prevent the clogging of arteries, reduce the risk of neurological disorders like Parkinson’s disease and Alzheimer’s, and can also reduce the risk of stroke. Black Tea can help protect lungs from exposure to cigarette smoke, can also reduce the risk of stroke, and not only increase circulation and blood flow, but can also make breathing easier for asthmatics. If you are looking to steer clear of getting sick, Chaga Teas may be just the tea for you. With properties shown to increase

the immune system, and prevent the growth of some cancers, it’s insane not to at least give it a try. Or if you’re simply looking to lower your blood pressure, Hibiscus Tea has been linked to reduced blood pressure and can also help lower cholesterol. So even if you’ve never tried tea in your life, there is no reason for you to stay away. If the benefits don’t entice you, the myriad of flavors and tastes are sure to draw you in. Whether you replace your regular second cup of coffee after lunch or tote a cup with you to work, incorporating tea into your routine is sure to bring you peace, better

FOOD trends
Last year brought about trends that focused on locally sourced food products, wholesome veggies, and gluten free goodies. This year those habits continue, but with a unique twist that will have you running to get more. Fermented foodstuffs will be on the rise for 2015, because they fit the public’s need for healthy, burstingwith-flavor options that now are more accessible than ever. Products that are more adventurous than the sauerkraut that occasionally accompanies your hotdog will be obtainable at restaurants and grocery stores nationwide.

ne of the frontrunners of the movement, Sandor Katz, writer of The Art of Fermentation, believes food has potential beyond what we currently understand.
“There is this creative space between fresh food and rotten food where most of human culture’s most prized delicacies and culinary achievements exist,” says Katz. As its popularity rises, the idea of feasting on fermented foodstuffs shouldn’t bring about despair or nausea; there are reasons that both your palate will rejoice with each spoonful of kimchi. For gusto, supporters of fermentation argue that the process intensifies flavors and develops textures. Acids and alcohols mature as the mixture is set away and produce tastes that are unique to fermentation. The method is beneficial for preserving food long past a regular shelf life while keeping it safe for consumption. Fermentation’s history dates back thousands of years to the Neolithic period, and involved different cultures such as the Egyptians and Babylonians. The process is still prevalent today with wine, cheese, and beer being popular and well received contenders. The scientific practice itself happens when bacteria and yeasts consume sugars and starches and then release acids, gases, and other bacteria. The ‘live culture’ that results is chock full of good bacteria. Studies suggest that these good bacteria can help by resetting the bacteria balance in your gut, aiding digestion and possibly playing a role in immunity. Even a festival in honor of the bacterial concoctions will be held early February in San Diego, California as Americans fall in love with fermented foods and the benefits they offer. Kombucha, the bubbly and fermented green tea drink, will be accompanied by kefir, kimchi, a variety of yogurts, and even beer and cheese on the

For years El Paso has been known for it’s exceptional and unique style of authentic Mexican food. Being on the border, our proximity to Mexico’s delicious repertoire of recipes is one reason, another is the interesting fusion of cultures only available in our borderland. Renowned traveller Chet Garner from “The Day Tripper” described El Paso as “ . . . a well-seasoned cast-iron skillet. It is crusted with history, rugged outdoors, seasoned personalities, and delectable food.” And he couldn’t be more right. With a history all it’s own, El Paso has maintained it’s own rich food culture from a myriad of flavors from our area’s unique spin on true frontera style, to homemade tortillas, as well as other characteristic staples like spicy salsas and dishes like menudo. In the spirit of celebrating the tastes of El Paso, The City has mapped the ultimate guide to true, authentic El Paso Mexican. We wish we could have included more, but these tasty places are sure to give a great start to discovering the heart and taste of our great city.

Fortis Mexican Elder Restaurant 38 years ago in 1976, David and Consuelo Forti decided to open up a tiny restaurant that would act as a ‘taqueria.’ Initially the land and building he bought was going to be used as a body shop, but he decided to convert it into a small dining room with a waiting area, a small kitchen, and a middle dining room that was then a back porch. He figured he’d live out his dream by making a name for himself in the region and have people fall in love with his tacos. The greater El Paso community did more than fall in love with their tacos, they fell for their unique combination of Chihuahua style Mexico food. Throughout the coming generations they grew rapidly. After four years of being in business they went from a 15 to a 245 person seating capacity. They added a bar and then a piano to feature live music, which became a draw for many from Fort Bliss.

Casita Linda Mexican Restaurant Casita Linda Mexican Restaurant is a part of the Leo’s Mexican family tree. Casita Linda opened up in 1998. It’s the Northeast’s Mexican gem that connects our expansive El Paso layout. They pride themselves on their spicy Flautas, in some ways like Chicos Tacos. Another crowd favorite is their baby back ribs, their steaming fajitas and their spicy combination plates that keep the people coming in for more.

Etiquette
Remembering Names
| By: JOANN WARDY |
Remembering names is a wonderful quality that few possess. When being introduced, repeat the person’s name following the introduction. For example: Hello Tom, it’s a pleasure meeting you. Then in conversation repeat the name again. “Tom, I do hope you’ll be joining us for dinner,” or “What brings you to El Paso, Tom?” When meeting someone who obviously does not remember your name, never say “you don’t remember me, do you?” Instead, start right out with: “Hello, I’m Jane Smith; I met you at Carol Jones’ party. It’s a pleasure to see you again.” If everyone would do this automatically, I assure you everyone would feel more at ease and, oh what a joy it would be! February, 2015 Q: What’s ahead for Dragon Fly? A: Right now we are focusing all of our attention to this location. As for what’s ahead, we like to focus on seasons and our menu actually changes according to the season. In the eight-month period that we have been open, we have changed the menu three times already. Our customers’ taste palates change every season; therefore, we need to accommodate those changes. In order to do that, you need to lead the trend and you need to predict how the taste palate is going to change. We like to play on seasonal fruits, veggies, and fish. For the holiday season we added chocolate stout to the menu because customers crave sweeter foods and drinks during the holidays, but as we are getting into the spring season, we are going to accent citrus. Q: What would you like to let our readers know about Dragon Fly? A: This restaurant was born out of two different chef’s perspectives so to me, it’s a playground. Barry Cromer walked into the bar where I was having a beer and started busing my table. I looked up and knew I would marry this bus boy. As it turned out, the bus boy was the owner of the bar and also the local surgeon in Ruidoso, New Mexico. We got married, but I never got an engagement ring. Barry left his orthopedic practice in Ruidoso to move to El Paso, because I was a shareholder at my advertising agency and couldn’t move. Barry couldn’t afford both a wedding band and an engagement ring since he was starting over. So he gave me the choice. I asked for a pave Tiffany wedding band that I have never taken off. Never. The history of the engagement ring goes all the way back to when cavemen tied cords made of braided grass around their chosen mate’s wrist, ankles, and waist, to bring her spirit under his control. Circa 2800 BC Egyptians were buried wearing rings made of a single silver or gold wire on the third finger of their left hands, believed to be connected directly to the heart by the

It is a wonderful feeling to be recognized in our great community, but it is even more special to be appreciated for working in a career you are passionate about. I love my profession and I have gotten as much back from the community as I have contributed. For the past 26 years I have had the pleasure of working with so many great customers, talented artists, skilled tradespeople, and quality vendors. All of these combined have made me truly appreciate the opportunities afforded to those of us fortunate enough to work with people in the communities of El Paso, Las Cruces, Santa Teresa, and Juรกrez. Thank you very much.

February, 2015 Since Nick Cave has only recently become an influence, Hilton can make connections to more lasting influences, “My parents were collectors, and I grew up in an environment of art, unusual furnishings and antiques. We traveled extensively going to auctions, flea markets and various antique sources, so this had a huge influence on my artistic aesthetic. Also, traveling to Mexico, and falling in love with the vast cultural depth of Mexico in general, has influenced my work.” Like any soul brave enough to offer society value through creative endeavors, Hilton does face certain struggles, some are personal. “My process is very tedious and time consuming. My pieces are very detailed, and can take months to complete. In building a collection of work, this is maybe not an obstacle, but a challenge,” while others are more expected and culturally related, “As an emerging artist, finding funding to produce my work is an obstacle. My pieces are somewhat non-traditional. Though my work has a very broad appeal, the consumers for my pieces are as unique as the work itself. There are more art consumers that would be inclined to purchase a painting, versus a freestanding, larger scale mixed-media sculpture.” The personal and commercial challenges have not slowed the growth and enthusiasm of this young talent. “An artist’s credibility is relative to showings and exhibitions. Emerging artists face the challenge of establishing credibility as they build their history of showings. The Mulvane premier of my work was a milestone and significant step in establishing my credibility as a working, contemporary artist.” This strength of character, like his aesthetic taste, was forged due to his youth, “Growing up in the El Paso border community, and now living and working here, is a huge motivator behind not only my work, but my identity as an artist. Because I am a non-Latino artist who embraces strong Latino themes in my work, there is already somewhat of a ‘border’ element in what I create.” This affection for his home not only influences him but inspires him to contribute back, “I not only draw from this cultural influence, I want to be part of the energy behind elevating the recognition of how rich our local art community is. I want to show that there can be amazing, credible art that originates from a community that might not necessarily be considered an art center.” With brave souls such as Wayne Hilton creating works based on the border and sharing it with the nation at large, perhaps the Paso del Norte region will truly become an “art center” and that would be his greatest creation yet. 102

Ponchos
in
The best part about winter clothes is that they are comfortable, loose, and warm. They allow you to hide all of the Christmas cookies that you probably shouldn’t have eaten ... but you did. Because let’s be honest, diets don’t exist during the holidays. Well, the best part about ponchos is that you can be comfortable, warm, AND fashionable. If you’re hesitant about looking like you’re wearing a blanket over you, don’t be. A bold or classic print poncho can be worn over your basic clothing items giving you a romantic and elegant look.
out
Cowl Neck sweaters The ever-so-comfy feel and warmth of these winter
fashion statements do little to make up for the chickenlike wattle under your neck. Largely made popular by outof-sync suburban moms, the fashionably questionable garment has been abused for years by women attempting to look like Jennifer Love Hewitt. Not to say the look can’t be pulled off, but the overwhelming sea of awkward, illfitting abominations vastly outnumbers the amount of decent looking designs.

Picnic Plaid Gingham is making a huge comeback in 2015, as trendsetters are calling it the print of 2015. Oscar de la Renta, Michael Kors, Diane Von Furstenberg, and Altazura

Grunge plaid Unless you are Luke from Stars Hollow, you should’ve
stopped wearing the plaid flannel shirt by now. The plaid flannel shirt became the unofficial symbol of the grunge movement in the early 1990s but it’s time to stop wearing dark red, brown, and green plaid with beanies, with black tights, t-shirts, and worn out pants. I’m not saying that plaid will ever go out of style but there are so many other better ways to wear plaid. In order to avoid looking like a lumberjack, don’t wear grunge plaid. 2015 is not mad for grunge plaid.

Fashion Joggers
If one day in the near future you are having a fashion crisis and
cannot decide between jeans and sweat pants, well grab some joggers, as they are the happy middle. Fashion joggers are incredibly comfortable as they are loose in the crotch area, but are fitted down for a structured look. When it comes to fashion, most men want clothes that are simple to wear and comfortable - well fashion joggers take the gold! They are basically like wearing sweat pants, but classier. Fashion joggers are now available at a variety of stores and are offered in different colors and materials to satisfy your fashion needs.

Desert Boots Desert boots are multifunctional shoes that you can wear
all year long. Seriously, the outfit possibilities are endless! Rock your desert boots with jeans and a blazer for a pulled together casual look, or for a much more casual look wear them with chinos and a t-shirt. Honestly, you can even wear desert boots with a full suit to work. An advantage is that they are comfortable since most of them are made out of lightweight material on a spongy rubber. You’ll be able to wear the desert boot all year long. So go on and rock your desert boots! Well, except when it’s raining.

Sandals I have never met a girl who likes her man to expose
their feet to the world. Let’s be real, men’s feet were never made to be exposed in the light of day, unless you are at a beach or a swimming pool. And thinking that just hiding your feet under socks will solve your entire sandal wearing problems? Well think again! Girls see sandals as a huge turn off and its

SPORTS nce summer starts to close in, it becomes evident why El Paso, Texas is known as the Sun City. Things just got a whole lot brighter with the El Paso Sun Devils Semi Pro Football Team charging into packed stadiums full force all across the southwest. The Rio Grande Football League, formerly known as the New Mexico Premier League, includes teams from Texas, Arizona, Colorado, New Mexico and other states along the Rio Grande. Our hometown stars, the Sun Devils, are a non-profit and charitable organization that are ready to set the tone for the region this year. Under the leadership of an impregnable and dynamic coaching staff, it is safe to say that the team’s future is bright like a fire one has never seen, and it’s highly unlikely that any team will be able to put out the flames.
HEAT! The overseer coaching the team to success is a man with a track record of leadership. The reins go to the honorable and well-known Manny Frias who has

40 years of coaching experience and a dream board of commendable community
service to bring to the table. Frias presides over the West Side Sun Devils football,
basketball and baseball programs and has been doing so for a whopping 20 years. When it comes to superior coaching style, Frias is nothing short of an expert and
has proven this by making a name for himself in the Borderland. The Sun Devils are also privileged to have the support and backing of Defensive Coordinator Ernest L. Troutman III along with founders David and Darrell Parker. These individuals are ready to do anything in their power to ensure that the players make it to the top. The journey across the Rio Grande stretch begins on February 28th; the team will play their first game well-prepared mentally and physically. Strategically, the Sun Devils are completely restructured which will give them the upper hand against former competitors. Players are also being introduced to a different coaching style, still the same “in your face defense” but a completely revamped agenda is in store for the offensive game. One player to look out for this season is Mitchell Johnson who was named West Texas Defensive Player of the Year. The rock solid M.V.P. linebacker from Louisiana is ready to dominate with his team and as he calls them “family.” Aside from the team’s main focus on victory they find it equally important to also give back to the community. On January 5th the Sun Devils hosted a Polar Plunge event

the chance to help those in need and also find out more about themselves in doing so. “They begin to see that many young ones look up to them which gives them a stronger drive to work hard to claim their position as role models.” The Sun Devils host events and drives all around town and have made appearances and speaking engagements

is taught to any who have the desire to learn. With this in mind the doors are open to everybody and the coaches of the junior teams bring a smile to parents’ faces by allowing siblings to play together if they so choose. The Sun Devils have happily mentored youth in sports around town and are making these little ones the leaders of tomorrow. The team has also recently adopted a stretch of 2-mile highway. “On Zaragoza extending from Vista Del Sol to North Loop the streets can be found immaculate and ready for a celebration as the Sun Devils make sure to keep it clean in honor of the beautiful city of lights,” says Director of Public Relations, Sammy Carrejo. If you drive through at the right time you may just see players making appearances on their turf. For El Pasoans interested in attending games make sure to wear sunscreen and shades but most of all be ready for the Sun Devils to bring the heat!
