SOME THINGS NEVER SEEM TO CHANGE, even after decades and centuries. Seeing the Sangre de Cristos glisten with fresh snow the morning after a big storm is a good example. Other things have changed rapidly, like the growth of the film industry in New Mexico, and it’s inspiring to see organizations like George R.R. Martin’s Stagecoach Foundation address the challenges that come about from those changes. Some things seem unchanging but have evolved significantly, like the way we celebrate Valentine’s Day. You can learn the history of the holiday as well as brainstorm gift ideas in our Valentine’s Day feature. Finally, some things should always be changing. We want our doctors to be at the cutting edge of innovation and stay up to date on the newest techniques, like AlluraDerm’s Dr. Nicholas Lam, whose training and expertise make him the top aesthetic physician in New Mexico. For the past five years, it’s been my honor and pleasure to sit down and reflect on what makes each issue of Fine Lifestyles Magazine noteworthy. As editor, I have so enjoyed learning about our community and reporting on the many things that make us great. However, I’m moving on to new opportunities after this issue. VALENTINE’S DAY How it all began By Anya Sebastian

IT IS ONLY APPROPRIATE THAT A FRENCHMAN SHOULD BE CREDITED with composing the first known Valentine. Charles, Duke of Orleans, who was captured by the British during the battle of Agincourt in 1415, was imprisoned in the Tower of London and, in these least romantic of circumstances, wrote a rhyming love letter to his wife on February 14th. (That poem is now part of the manuscript collection in the British Library in London.) But the origins of Valentine’s Day, though shrouded in the mists of time, go back even further than that, seemingly all the way back to Roman times. In ancient Rome, February 14th was a day to honor Juno, Queen of the Gods, who was also the goddess of women and marriage. The following day was a feast day, when the names of Roman girls were written on slips of paper and placed in jars. Young men would draw out a girl’s name and the two would then be partners for the duration of the festivities. Early Christians deeply disapproved of such goings-on and decided to try and shift the focus from rollicking to romance by substituting a saint in place of the pagan goddess, Juno. They came up with Saint Valentine, who, although little known at the time, had conveniently been martyred on February 14th. According to popular legend, Valentine, a priest, refused to obey a decree put out by Emperor Claudius II, banning all marriages and betrothals. Claudius wanted to swell the ranks of his fighting men and considered marriage and family unwelcome distractions. What happened next is an inextricable blur of fact and fiction, but makes a very satisfactory tale, nevertheless. Valentine, who continued to perform wedding ceremonies in secret, was uncovered, thrown into prison and sentenced to death. While in prison, the future saint performed a miracle by restoring the sight of the jailer’s blind daughter. The two fell in love, but even she was unable to save his life. On the eve of his execution, he wrote her a parting note and signed it, ‘From Your Valentine.’ However it evolved, the celebration of Valentine’s Day is now a major industry, crossing all boundaries of race, religion, age and nationality. According to the National Retail Federation, total spending last year on Valentine’s Day topped 18.2 billion dollars. FLOWERS SPEAK A UNIVERSAL LANGUAGE that requires no translation. They can effectively speak for us, sometimes better than we can for ourselves, conveying messages that cover everything from congratulations to condolences. Amanda Schutz, the floral designer and owner of All The Pretty Flowers, believes that flowers offer an exceptional opportunity for artistic creativity. “I fell in love with the aesthetics, the colors, the scents, the richness, the energy they put out. Flowers have so much potential and they really do change the environment,” she says. Born and raised in Santa Fe, with an artist mother and an architectural designer/builder father, she was heavily influenced by both parents growing up. “When I went to UNM, it was to study interior design and art history, and I took architecture classes as well,” she recalls.

she finally went ahead and opened her own boutique-style studio. Everything she does is personally created to order, after talking to the client and understanding the significance of the occasion and what role they want the floral arrangements to play. “I can then design something specifically for them,” she explains. “Nothing I do is generic—far from it. It’s all very personal.” Amanda is happy to provide floral arrangements for any occasion, but loves doing weddings and events in particular. Voted ‘Best Floral Designer’ in New Mexico by readers of Perfect Wedding Guide magazine in 2018, her work is clearly in a class of its own. Her natural talent for aesthetic design and broad knowledge of both unique and traditional flowers have made her my go-to flower gal on a number of occasions, including my wedding last year. FAUX FUR

FRIEND OR FOE?

N

othing connotes glamour quite like fur. It’s been keeping humans warm since the dawn of time, and keeping coats beautiful for millennia. However, the well-trod ‘real versus fake’ debate continues to rage, with animal advocates pointing out that tens of millions of mammals are either trapped or raised for their fur each year, while fur lovers point to the superior look and feel of real fur over synthetic fabrics. Today, thanks to advancements in technology, fashionistas can wear stunning fur while resting easy knowing no cuddly critter paid for it. Designers are increasingly using faux fur because of their ability to control manufacturing considerations, such as color and volume. Then there’s the ease of working with synthetic fur when sewing a garment; a simple sewing machine can handle fake fur, while special equipment is needed to sew the real deal. Many a designer on both sides of the Atlantic has embraced faux fur for reasons ranging from ethical to practical. Other bonuses include it doesn’t mold or attract moths. Acrylic fibers such as kanecaron or tissavel tend to make for the highest quality fur fabrics. A good way to assess caliber is to test the feel – the softer, the better. Poor quality synthetic fur can be itchy and uncomfortable. Also, top-notch faux fur retains its shape, meaning, if you touch it, the fibers should quickly fall back into place. While it’s a personal choice to don real or faux fur, either stance should be aware that many coats and

accessories that claim to be fake ironically have real fur in them. Check the base of the fabric: Leather is a giveaway that the fur is indeed real. Fake fur should have a mesh or threaded backing. Also, natural fur often tapers at the ends while synthetic bristles have a blunt, straight edge. Labeling (whether you’re looking for natural or synthetic fur) can often be misleading, so it’s best to check the backing of the fabric if possible. Another test, though not possible when shopping, is to burn a few hairs. Cut off a couple bristles and hold them with tweezers over a sink while lighting them. If the bristles curl, the fabric is fake, but, if they put off a foul odor, it’s probably natural hairs. If you’re pro-faux, it’s worth considering that many synthetic furs are created in sweatshops using petroleum products, and thus often take between 500 to 1,000 years to fully break down and decompose. For those who prefer 100 percent organic materials, faux fur can also be made of cotton or hemp, though these are much rarer than the polymerbased fabrics. Also, if you’re wearing fur for extended outdoor expeditions instead of just as fashion statements, fake furs are not able to keep snow from melting and re-freezing on the fiber filaments. No doubt about it; fur is in fashion – the timeless look is increasingly showing up on runways. While the decision to go real or faux is a personal choice, it’s good to stay informed and know your options!

TRAVELING LIGHT TAPPING INTO THE SANTA FE-MEXICO CONNECTION Oh, how lovely it is to return to the 90s, when Santa Feans flew back and forth to Oaxaca with just a duffle, when we dealt Tarot cards and talked New Age at the Zia Diner. Traveling Light traces the fluctuating relationships between half a dozen friends in the 90s as they move back and forth between Santa Fe and southern Mexico. It’s the first novel from Santa Fe-based culture journalist Candelora Versace, and it lays a promising groundwork for more. Colorful settings dominate, with cobalt-blue ceramic bowls of hot chocolate as Camelia and her friends snuggle into equipale chairs in spare casitas decorated with painted tiles portraying soaring birds. But all is not idyllic, because these characters struggle with doubts and dilemmas as they sort out their futures. “I always liked the way Santa Fe smelled,” reminisces an expatriate dropout as he drinks mezcal at a deserted Mexican beach bar. “Any season,

there was always something in the air that smelled good.” Philosophical thoughts also come into play, as Camelia strolls the nearby coastline telling herself, “Don’t spend your whole life doing what you don’t want to do.” It’s the introspection that’s most appealing in Traveling Light: the tug between escapism and reality, and the shifts in friendships. As the candles flicker at a bar where moist night air wafts off the ocean, there is the realization that our lives probably amount to what we make of them. “Just trying to be honest about your feelings to yourself and to someone else is terrifying, but what else are you going to do?” decides Camelia as she prepares to fly back to Santa Fe, where unexpected events challenge them all, leading to the novel’s resolution. Versace has conjured up characters we care about and a plotline that careens into a passionate conclusion.

STAGECOACH FOUNDATION Puts New Mexicans On Set By Emmaly Wiederholt

NEW MEXICO’S FILM INDUSTRY IS GROWING IN LEAPS AND BOUNDS, and it’s no wonder. Our stunning vistas and economic incentives continue to attract major productions. But are individual New Mexicans benefitting from this flurry of activity? Stagecoach Foundation was founded to ensure the answer is yes. Stagecoach Foundation is the legacy of two great Santa Feans: David Weininger and George R.R. Martin. Weininger was a celebrated chemist and entrepreneur who followed Martin’s career closely. Upon being diagnosed with terminal cancer in 2016, he looked for ways to give back to the community. He saw the impact that Martin’s “Game of Thrones” had on Northern Ireland as well as Martin’s investment in Meow Wolf had on Santa Fe. He reached out to Martin and left him his facility, Daylight Chemical Information Systems, with the caveat that Martin use

the facility to give back to New Mexicans, as well as that his cognition enhancer sculpture always stand on the property. Stagecoach Foundation officially began in March 2017. The building attracts television and feature production companies for production offices, and the industry experts who come with those productions teach classes, mentorships, and access to production assistant positions to local New Mexicans. Those classes are the heart of Stagecoach Foundation’s mission. The classes generally consist of two full days taught by professionals who are visiting to work on a production, though some are also taught by the robust local community of union filmmakers. “We frequently work with ICG 600 camera operator Erick Castillo, as well as a handful of IATSE 480 union members,” describes Dr. Elizabeth Kianu Stahmer, who serves

as Stagecoach’s executive director. “I seek instructors who are at the top of their game working in their field. We’ve had a number of people take our classes and then get picked up by local productions, such as the recent Universal Tom Hanks film and by Meow Wolf Entertainment.”

as ten years old. Stagecoach Foundation has relationships with many of the local high schools, as well as with the Institute of American Indian Arts, Santa Fe Community College, CNM, UNM and Nambe Pueblo. Though most workshop participants are college-age, adults of all ages regularly participate.

“Stagecoach Foundation provides a level of hands-on learning and exposure to industry culture that is limited in the formal education environments,” Stahmer explains. “Our trainings are completely hands-on.” In the workshops, students train on both sides of the camera, learning the ins and outs of acting-for-film and camera operation as well as sound and editing. Acting students from the Assistant Camera/Acting for the Camera hybrid training receive edited reels to showcase their new skills. “Students are immersed in the environment in a way that allows them to ask questions and make mistakes in a safe learning environment,” says Stahmer.

One Stagecoach Foundation student candidate was recently hired onto a Tom Hanks feature film as a production assistant and was then invited into the camera department where he completed his over-flow hours and joined the International Cinematographers Guild (ICG) 600. “That’s the perfect example of what can happen,” says Stahmer. She continues: “I love helping people find their pathway in an industry that’s really growing. People who are happy about their work and able to provide for themselves and their family have exponential impact.”

All classes are free for students and catered as well. Since the equipment is donated by Panavision and MBS, the technical side of the workshops is targeted at people with at least two years’ experience in film. The acting side accepts participants as young

2020 WINE TRENDS WHAT TO LOOK OUT FOR IN 2020 FROM A LONGTIME WINE ENTHUSIAST: Always known as an inexpensive wine to be consumed on a warm summer’s day, roses have become more of a fashion item over the past five years or so. Any number of rock stars or athletes have put their name to a rose. However, most are rather poor excuses for a rose and are very expensive for what they are. Expect the popularity of roses to decline as the market has become saturated with very average wines at inflated prices. Replacing roses are sparkling wines from different countries. Cava from Spain and particularly prosecco from Italy have grown immensely in popularity and this trend should continue, as there are any number of good quality wines at reasonable prices. About 25 years ago, the wines from Chile and Argentina became popular; in particular the malbec varietal from Argentina and the sauvignon blanc varietal from Chile. Admittedly these were wonderful wines and priced to sell to everyday consumers. Regrettably, the scenario has changed dramatically, particularly in Argentina. Good quality malbecs are now comparatively pricey. And the Bordeaux style wines they now produce are on a price par with good Bordeaux from France and Bordeaux style wines from Napa. There are, however, regions where not only can you find great quality wines, but you can find them at attractive pricing. Look no further than the Valle de Guadalupe in Baja. Last month’s Wine Spectator ran a two-page article on the wines from the region, praising them for their quality and value. Two winemakers previously discussed in Fine Lifestyles, Tru Miller of Adobe Guadalupe and Lourdes “Lulu” Martinez Ojeda of Bodegas Henri Lurton and Bruma, were featured as serious winemakers to keep an eye on. Two other regions to grow in popularity are the wines from Ribera del Duero and Toro in Spain and the wines from Mount Etna in Sicily. The wines from Toro are dark and sultry, and the wines from Ribera del Duero are much more nuanced and refined than their cousins to the North in Rioja. The wines from Mount Etna are magnificent. The carricante varietal for whites and the nerello mascalese varietal for reds are superb and easily compete with their more expensive counterparts from Burgundy and Piedmont. But don’t let their prices fool you; these are world class wines.

When it comes to the porkchop, leave the knife at home because all you need is a spoon as it melts in your mouth. In between, there was an amazing salad, ravioli appetizer and lamb shank – all served in beautiful, artistic tableware. Perfection!” Another tourist shares: “We recently let Chef Cristian do a tasting menu for us and it was transformative. The octopus was exceptional, every pasta was perfect, and the fish was delicate and refined without being fussy. Kudos on something unique that raises the bar for Santa Fe.”

Chef Cristian changes his menu depending on availability of produce and time of year. However, guests already have favorites. The Caesar a Modo Mio, Chef’s take on the Caesar salad, combines parmesan seared romaine, focaccia crostini, white anchovies, capers and tonnato dressing. Another favorite is the Pesto Risotto, made with Carnaroli rice, house-made pesto, rattlesnake sausage and mushrooms. Most popular among his desserts is the Dark Chocolate Dome, made with tiramisu gelato, pretzel, bruléed marshmallow, amarena cherries and chocolate ganache.

The restaurant is known for its bar menu featuring 62 different gins. But did you know Sassella also has the premier selection of Sicilian wines in the City Different? The menu includes four whites, all from Mt. Edna, and nine reds, all but two from Mt. Edna, a region known for producing some of the finest wines in the world. Sassella’s seasonal cocktails combine the best of winter’s flavors to warm your spirit. The Gina Lollobrigida, for example, is made with Oxley gin, lemon juice, raspberry syrup and egg white. The Margerita Contrafatto is made with Empress gin, Cocchi Americano Aperitivo, St. Germaine and fresh lemon juice with a salt rim. Don’t forget the Margerita Nonino, which combines Casamigos tequila, Amaro Nonino, fresh lime juice, gomme syrup, egg white and Angostura bitters. Of special note on the bar menu is an aged negroni, a recipe from Chef Cristian’s father who is a mixologist from Lombardy. Sassella has aged Tumbleroot Navy Gin from a local distillery for two months in an American oak barrel and then three months in a bottle for a total aging process of five months. From there, it is combined with Cocchi vermouth and Campari to create the Regalo di Papa, or “father’s gift.” “It’s delicious, with notes of herbs, peppers and vanilla,” says coowner Lawrence Becerra. “We’re excited about offering something so unique.” Whether you head to Sassella for the food, drinks or ambiance, the experience is sure to be superb. AFTER A FEW FALSE STARTS, SAZÓN IS FINALLY OPEN! Diners can now experience the same award-winning cuisine, unparalleled wine, tequila and mezcal menus, detail-oriented service, and stunning décor as before, but with a few improvements. The establishment, which closed temporarily in May due to an electrical fire upstairs, was unable to open quickly due to holdups with insurance companies and the city. “Frankly, it took a lot longer than anticipated,” says co-owner Lawrence Becerra. “What we’re most proud of is that every staff member was fully paid for the entire seven months we were closed. Every staff member came back, and when we opened in early December, it was like we hadn’t missed a beat.” Of course, acclaimed chef and co-owner Fernando Olea is best known for his extraordinary culinary talent and his innovative development of what he terms “New World Cuisine”– dishes based in his Mexican roots, into which he incorporates the flavors of the world. Halibut is in season and is featured on the menu this winter. Otherwise, the offerings are the popular variety of dishes paired with mole that patrons have come to love. Sazón’s award-winning wine menu is best known for its comprehensive collection of wines from Baja’s Valle de Guadalupe; in fact, it boasts the largest Baja wine menu in the US. However, new garnachas from Spain were recently added to the menu, particularly from the Priorat region. Also new to the menu are a couple signature wines from Napa.

Equal to the wine menu are the tequila and mezcal offerings. If you’re looking for a warming drink, Sazón’s winter seasonal cocktails include La Palabra, made with equal parts Agave de Cortez Mezcal Joven, Luxardo Maraschino Liqueur, Green Chartreuse, lime juice and garnished with a maraschino cherry. “It’s a take on ‘The Last Word,’ which is usually made with gin,” says head bartender Amanda Morris. “We often like to take an older recipe and do a new take.” Other seasonal cocktails include El Caballero, which combines La Fogata Anejo Mezcal, Giffard Vanille de Madagascar, chipotle bitters, muddled luxardo cherry and orange peel. Then there’s the Zapata, which blends Maestro Dobel Anejo Tequila, Pechaud’s bitters, agave syrup and Absinthe Rinse with a lemon twist. And don’t forget El Proscrito, made with Ilegal Blanco Mezcal, apple brandy, agave syrup, chocolate bitters and cinnamon sugar apple crisp. Sazón’s interior décor is as much of the experience as the food and drinks, all thanks to co-owner Suzanna Becerra’s sophisticated touch. Due to the renovations after the fire, the beautiful walkway into the restaurant is reconfigured and repainted, but still as artful as ever. The colors from the main mural in the dining room have been tastefully incorporated into the entryway. Speaking of art, the Becerras recently acquired new art by Mexican artist Julio de Rita, who is most known for his bold use of color. De Rita’s newest paintings feature Pancho Villa and Geronimo in the same bright style. There’s also a stunning new Frida Khalo painting by Fragoso Maiz, who has become known for his sensual depictions of the celebrated Mexicana. “All of us—Fernando, Debbie, Suzanna and I—are very happy Sazon is reopened,” reflects Lawrence. “We’re happy our staff are back, and we’re delighted to see people we haven’t seen in a while. We’re thankful for all the calls and letters of concern and their best wishes. We really appreciate it. As a communitybased restaurant, we want to include everyone.” For example, the grilled ratatouille with eggplant, zucchini and tomatoes is a must-try. Or enjoy the vegan meatballs made of yuzu, soy, sesame seeds and green onion. Or maybe you’re like Bowdon’s wife, Michelle, who loves the paleo diet that includes a 10 oz. Wagu flank steak. His daughter, Skye, relishes the cast iron seared salmon served with Romero Farms vegetables. Many customers appreciate that the pizzas and pastas can be made gluten-free.

“I utilize the freshest ingredients I can to make healthy and flavorful dishes,” says Chef Randy Tapia. “I love using organic vegetables and flown-in fish.” For example, his harvest bowl features butternut squash, sweet potatoes, kale, mushrooms and goji berries over whole-grain brown rice. Or savor his yellow tail tuna served sashimi style with olive oil, smoked sea salt, lime caviar and thinly sliced serrano peppers. “I try not to freeze anything; everything I use is fresh,” he describes. Jeff Koscomb at Above Sea Level has been selling fish for 28 years and is happy to count El Nido among his clients. “We take a lot of pride in supporting the local restaurant community,” he says. His fish take about 24 hours to get to New Mexico, whether it’s scallops from Cape Cod, salmon from Scotland or Canada, halibut from Alaska, tuna from Hawai’i, or seabass from the Baja. “We bring them in whole and then filet them when we get the orders, which is the best way to get the highest level of freshness when

Matt Romero at Romero Farms lives and works on the same land his grandfather farmed before him in the Embudo and Española valleys. He provides El Nido with several pounds of produce each week depending on the season. Right now, he’s bringing in potatoes, watermelon radishes, celery root, rosemary and dried chile, but come summer he’ll start bringing in tomatoes and leafy greens. “We’ve been providing fresh vegetables to the area for almost 20 years,” says Romero. “I like to be in partnership with top-end restaurants like El Nido. A chef’s job is far easier when the food comes in the door tasting great.” All these fresh ingredients stay fresh; El Nido doesn’t store food in its small freezer long-term. “When we purchased El Nido, it had a large walk-in freezer. The previous owners would purchase frozen seafood to save,” recalls Bowdon. “We took that exact walk-in freezer and turned it into a large walk-in refrigerator, and we get daily and weekly deliveries.” The fresher the ingredients, the healthier the meal. WHEN ONE ENVISIONS THE PERFECT DINNER OUT, the ambiance is often as important as the food. One envisions a quiet and elegant setting to relish a delectable meal with great tableside service. But too often, the opposite is the case; large crowded dining rooms make it difficult to hear your company. At Dinner for Two, the intimate experience is just as important as the unparalleled cuisine. Dinner for Two has served Santa Fe diners for going on 19 years, and chef/co-owner Andy Barnes has been involved the whole time, first as chef under his family’s ownership and more recently as co-owner with his wife, Crystal. He is a City Different native who got his chops at the Culinary Institute of America in New York before returning home to serve his creative talent in his home city. His menu prides itself on its tableside presentations of chateaubriand, Caesar salad and bananas foster. “I’m trying to preserve the history of the food,” Barnes says. “These are great dishes that are the foundation of a lot of cuisine today.” The current chef at Dinner for Two is Ronny Gutierrez, who was sous chef under Barnes for six years until Barnes transitioned into ownership. “He’s worked for all the big names in Santa Fe, and his contributions to the menu have been New Mexican fare like the enchiladas, fajitas, and stuffed sopaipillas,” Barnes shares. Other stand-out dishes include the filet mignon which is crusted in cocoa, coffee and garlic with a balsamic and pomegranate reduction. The steak is then charred on a whitehot grill, which cooks the spices but leaves the meat sweet and tender. Barnes favorite on the menu is the filet Oscar, which is the filet mignon with green chile queso and blue crab added on top. The chateaubriand is another dish not to be missed, served with wild mushroom, marsala and brandy. Since Barnes and his wife took over the restaurant, they’ve acquired a liquor license, allowing them to serve culinarydriven cocktails. “They’re food-friendly, and they’re an experience,” he describes. “There are multiple facets to each drink.” The Love Bubble—Dinner for Two’s signature cocktail—mixes Patron Blanco tequila and fresh passion fruit juice (which, Barnes notes, is more sour than sweet) with cherry bitters and topped with a rosemary smoke bubble. Other delicious drinks include Crystal’s Pear Martini (named after Barnes’ wife), made of Grey Goose pear vodka, St. Germaine and lime juice. Or enjoy the Lavender Pamplemousses, which combines lavender infused maraschino liquor, Pamplemousses liquor and New Amsterdam gin. “Pamplemousse” is French for grapefruit, and pairs the gin’s botanicals with local lavender. The restaurant’s wine menu is comprehensive and is, in Barnes’ words, “food friendly wine that goes with what we serve.” With Valentine’s Day around the corner, Dinner for Two is the perfect place to have an intimate dinner, whether with family, friends or someone special. “Dinner for Two isn’t literally just for two people dining together,” explains Barnes. “The name evokes an intimate setting, even if it’s a group of four or six. “WINTERTIME IN SANTA FE IS TRADITIONALLY the time for restaurants to chill out and cut back,” says Joseph Wrede, the chef/owner of Joseph’s Culinary Pub, “but I prefer to engage and up the energy.” As Wrede points out, New Mexico food is not delicate, like French cuisine, but strong and robust, and these are precisely the qualities he employs to bring flavor to the austerity of the season and the natural surroundings. “Winter in New Mexico is austere,” he explains, “and that includes the landscape, the climate, the environment, even the people. Just look around... everything is cold, unadorned, lacking in warmth and color. A great antidote to that austerity is green and red chile, which bring flavor and warmth to whatever they interact with. Chile never fails to deliver. In other words, this is the best time of year to eat New Mexican food.” Never having been one to follow traditional norms, Wrede instinctively imparts his own personal style to his New Mexican

dishes. While almost half of the restaurant’s menu is influenced by the flavors and ideas of New Mexico, the artistry is uniquely his own. Where else would you find acorn or spaghetti squash mixed with roasted poblano peppers, resulting in creamy, buttery, warming dishes with rich, winter flavors? Red chile is often incorporated into traditional sauces and a vegetable enchilada goes even further, partnering an East Indian purée with red chile sauce. “I wasn’t going to mention it,” says Wrede, with some hesitation, “because I don’t like to brag, but I’m told we also have the best posole in New Mexico. We have one client who makes a point of coming in twice a week, just to eat our posole.” Less familiar, but much favored by Wrede for their sour/bitter taste, are tomatillos. “They’re great for sauce-making,” he says. “The bitterness cuts the fat and their very distinctive, clean flavor awakens the taste buds and allows the other elements in the dish to come through. I don’t think tomatillos get nearly the culinary recognition they deserve.”

Wrede’s inspired artistry really shines on St. Valentine’s Day when the menu takes on a whole new look. Dishes appear that are nowhere to be seen at other times of the year, such as oysters, caviar and rabbit. There are also shareable dishes, with an emphasis on decadent, creamy textures and, of course, irresistible chocolate-inspired desserts. Valentine’s day is followed at the end of February by Santa Fe Restaurant Week and here, again, Wrede’s originality is on full display. Although, like other restaurants, Joseph’s Culinary Pub offers a three-course meal for a prix fixe, he does not have a menu fixe. “Diners can choose any three dishes – appetizer, entrée and dessert – from our regular menu,” he explains. “We want people to experience our restaurant as it really is and to realize that food prepared with intensity and focus does not have to be presented in a formal environment. What Makes Something

Artisanal?

“ARTISANAL” IS A TERM THAT GETS THROWN AROUND A LOT THESE DAYS. The word technically describes high-quality goods produced in small batches, usually made by hand or via traditional methods, and pertains to everything from food and drink to furniture, decorative arts, clothing and jewelry. However, consumers might be surprised to learn that “artisanal” is not a label. Rather, it is a buzzword attempting to denote a premium product, much like “natural,” “gourmet” or “heirloom.” Many store items that have not been made in small batches nor made by hand prominently use the “artisanal” moniker on packaging. The meaning of the term has been diluted beyond recognition. While once referring to the crafts made by skilled artisans in less technological eras, the term today has been co-opted in marketing by big companies and corporations. So, what can you do to ensure what you’re buying is actually artisanal? Do you patron locally owned businesses? That’s already a good start. However, don’t assume that just because the label says “artisanal” means the item was handmade by a craftsperson. Ask the business owner about how the item was created (many small business owners make some of the goods they sell), what materials were used, and in what size batches they were created. Unfortunately, because there’s no oversight of what “artisanal” means, you’ll have to decide for yourself whether the item you’re considering is sufficiently “artisanal” enough. However, you’ll come away with a much more honest idea of how your possible purchase was created, and whether you want to spend your money supporting that particular way of producing goods. Here in New Mexico, we have an abundance of artisans making food and goods by hand and in small batches. The cheaper item next to it on the store shelf labeled “artisanal” might be misleading, but with a little extra effort, you can deduce and support what is truly artisanal.

WHEN PEOPLE ASK GABRIEL RIPPEL, “What do you do?” his answer is likely to be, “What do you want?” His company can design and make pretty much anything out of steel, from staircases, portals, gates and fireplace surrounds, to counter tops, coffee tables, desks and even doorknobs. Everything is custom made to order. “The client must have an idea of what it is they want,” says Rippel. “We don’t have a brochure, because we hardly ever make the same thing twice.” A native Santa Fean, Rippel started out in construction and one day found himself working on a job that included having custom steel railings installed. The process appealed to him and he began asking questions of the welder, a man called Lex Lucius, to find out more. He was 20 years old at the time and, when the job was finished, since he had clearly shown more than a passing interest, Lucius said that, if he was serious, he was welcome to join him and learn the trade. “I worked with him for six years,” says Rippel. “He turned out to be a great mentor, more of an artist than your typical welder. We even made steel sculptures together.” After six years, Rippel felt he was ready to go out on his own. He opened a shop on Lena Street specializing in architectural details, and a couple of years ago moved to the Baca

railyard. That building now houses a furniture showroom and a large space that includes Rippel’s office and a variety of items that demonstrate the range, quality and clear, sophisticated lines of the company’s custom-made products. As a final touch, to complete the impression of a home environment, there are also pictures hanging on the walls, which are available for visitors to purchase. “The entire space is a showroom for art,” comments Rippel. “Everything we do is a form of art—the building, the designs, the steel tiles, the furniture, the different patinas—it’s all art.” As for the steel itself, Rippel says it’s like an addiction. “People start out with an

idea and then other things get added, both inside and outside the house. You can create an entire environment based on steel, and we have worked with people who have done just that.” Working with steel, however, is extremely challenging. As Rippel points out, “In the summer it gets hot and can burn you; in the winter it’s freezing cold, and it’s also really heavy. Cutting metal is hard, bending it, moving it around...It’s a tough job, but it’s also very satisfying.” Rippel currently has a crew of seven, all of them experts. “The trade could definitely use more, “ he says, “but it takes a certain kind of person and it’s definitely not

for everyone. I like to hire young people with minimal experience so that I can train them myself to be part of our team. There’s a big learning curve involved in getting things done the way I want.”

PACK RATS, ALSO REFERRED TO as woodrats or trade rats, are typically gray rat-sized mammals with large ears, large dark eyes and a relatively long tail. These rodents have poor eyesight and are nearly blind. They are usually found entering homes in New Mexico in the winter to have their offspring, which means this is the exact time of year to be mindful. In houses, pack rats are active at night, searching for food and nest material. Pack rats are known for their characteristic searching of materials to bring back to their nests creating an ever-expanding collection. Pack rats can cause extensive damage to your property. Not only do pack rats damage and destroy landscaping,

contaminate attics and crawl spaces, they can also chew through electrical wiring, damage AC units, pool heaters, spas, and spoil food. They leave behind body oils, pheromones, fecal pellets, and urine because they habitually follow these scents back to these trails. They may also shred upholstered furniture and mattresses for lining their nests. In terms of getting rid of pack rats, there are several things people can do. The most effective rat control begins with prevention by disposing of trash and wood piles properly. Another thing homeowners can do is to maintain sanitary conditions in their home. Finally, when pack rats become a problem in and around structures, make sure any openings in the structure foundation and pipes should be sealed as well as check for openings in attic vents that could lead to a pack rat entry. The most successful and permanent form of pack rat control is to limit shelter

THERE’S NOWHERE QUITE LIKE CAPE TOWN, the jewel of South Africa. This fascinating city is a meld of cultures, history and landscape, crowned by the magnificent Table Mountain. Named a New Seven Wonders of Nature, the mountain is distinguished by its level plateau and impressive cliffs. To experience the mountain’s panoramic 360-degree views, you can hike to the summit along one of its trails or, if you don’t want to break a sweat, opt to ride the rotating Table Mountain Aerial Cableway. Unbridled vistas of the city and sea await. For another idyllic setting, check out Kirstenbosch Botanical Garden on the eastern foot of the mountain. It’s the first botanical garden in the world to be included with a natural World Heritage Site. This acclaimed living museum celebrates the floral riches of southern Africa and is a veritable feast for the senses.

When you’re ready to trade serenity for some hustle and bustle, head to the Victoria & Alfred Waterfront, a hive of shops, restaurants, live music venues and notable attractions. It’s also the jumping off point for whale-watching tours and excursions to Robben Island. For visitors interested in immersing themselves in South Africa’s complex history, Robben Island is an essential destination. The island once served as the notorious penal colony used by the South African government to incarcerate political prisoners. Former President of South Africa Nelson Mandela was imprisoned on Robben Island for 18 years. Today, Robben Island is a museum, as well as a UNESCO World Heritage Site, that serves to remind people of the price of freedom. Tours are guided by former political prisoners. More apartheid history is on view at the District Six Museum, a memorial to the displaced citizens of District Six with exhibits that recount their stories and inform visitors about social justice.

History also takes center stage in Bo-Kaap, the cultural home of the Cape Muslim community. This neighborhood, the oldest residential area in the city, is known for its photogenic candycolored houses and steep cobblestone streets. When you’re ready for some fun in the sun, head to the beach. Cape Town’s beaches have been voted among the best in the world. The famous four beaches at Clifton, located on “millionaire’s mile,” are very popular, as is Camps Bay. Further south of Cape Town is renowned Boulders Beach, where the real attraction is the locals, a colony of African Penguins. These tuxedoed residents teeter about, wandering freely in the protected natural environment.

Continue south to the Cape of Good Hope and to Cape Point, the terminus of the Cape Peninsula. The route’s breathtaking scenery is mesmerizing, but the reward when you reach your destination is even greater – picture-perfect bays, beaches, rolling green hills and stretches of endemic fynbos (“fine bush”). When your stomach starts rumbling at the bottom of Africa, you’ll be happy to know that the city’s culinary scene is very eclectic and international. It’s a melting pot with Dutch, American, Spanish, Indian and African influences, where seafood and game reign supreme.
