WE ARE LIVING IN UNPRECEDENTED TIMES and we hope everyone is following the guidelines for keeping themselves, their families, and others, safe. This will eventually pass and in the meantime we are fortunate to live in a community with a tradition of coming together to support each other in a crisis, and this is definitely one of those times. Independent businesses are the backbone of our economy, our culture and our community, and it is imperative for us to do whatever we can to ensure their survival. We should, therefore, do our utmost to support local businesses, especially restaurants who are offering delivery and/or curbside pickup. Buying a gift certificate, to be used when things finally return to normal, is another way to help out. Even if businesses are closed, they often have products that can be purchased online and delivered, so you don’t even have to leave home. The character of the City Different, in particular, is defined by its local, independent businesses and now, more than ever, they need our help to survive. Taking care of our health by boosting the immune system, cleansing and detoxing, is clearly something which is of particular value at this time as well. In this issue, we take a look at some of the different approaches to physical renewal, both internal (supplements, nutrition, CBD, mushrooms, herbs) and external (massage, exercise, acupuncture.) AT THE TIME OF WRITING, large gatherings have been banned because of the coronavirus pandemic, so weddings have inevitably been postponed. However, this will pass and the Land of Enchantment, with its stunning scenery and natural beauty, will again be a popular place to tie the knot. Couples come here from other states and even from other countries, specifically for that purpose, resulting in the number of marriages performed in New Mexico being significantly above the national average. So even if the current circumstances have caused your special day to be rescheduled, the information found here and in the following pages, will still be valuable. While many weddings are conducted in a place of worship and remain fairly traditional, non-traditional ceremonies are becoming increasingly popular as well. The opportunities are pretty open-ended, since, in addition to ordained ministers, those legally entitled to perform marriages in New Mexico include judges, justices and magistrates, authorized representatives of federally recognized Indian tribes, and literally anyone who becomes ‘ordained’ by obtaining a basic license online. That means you can be married by a family member, best friend, co-worker, or a complete stranger, the choice is yours. The ceremony itself can take place literally anywhere, outside or inside, and can be casual or formal. Couples can choose to say, ‘I do,’ on a ranch, a boat, a farm; by a lake, in a park, mountain retreat, or even in their own backyard…fill in the blank. There are some things, however, that never change and still need to be taken care of by those planning to get married. Before you even get started, the first thing to decide is how much you are willing to spend, because weddings can be costly. According to a 2016 survey by The Knot, the average cost of a wedding in New Mexico is around $20,000 and that does not include the cost of a wedding or engagement ring. So first decide on a budget and then choose how you want to spend it. Assuming that you want your ceremony to be followed by a reception, you need to choose a venue. Popular places may need to be booked months in advance and will likely request a deposit. If the cost does not include food, then you need to find a caterer, preferably one who is familiar with the location you have in mind and flexible enough to accommodate any special needs. Eduardo Ramirez, of Casa Nova Catering, is one of the very best. These fundamental considerations will be the biggest share of your budget and will consequently determine how many guests you can invite. Other basic things to consider include a photographer, a floral designer, maybe a hair and make-up artist and, of course, a wedding cake. Zara Southard of Maggie’s Cakes is a cake maven and a real artist. And if all that is just too overwhelming, you may want to consider hiring a wedding planner. BUYING AN ENGAGEMENT RING CAN BE A DAUNTING as well as a joyful prospect, so it’s a good idea to know what to look out for before you begin your search. Since diamonds are by far the most popular choice, here are some pointers to get you started. Think of them as the four Cs: Color, Cut, Clarity and Carat weight. COLOR Most diamonds have traces of yellow, brown, green or grey and it’s rare to find one without any color at all. Consequently, the more colorless the diamond, the greater its value. CUT Diamond cutting is a highly skilled and precise art, which determines how the stone’s many facets interact with light and consequently how brightly it sparkles. Look for a diamond with the most brilliant sparkle for its size. CLARITY This is defined by how many small imperfections there are on the surface or within the diamond itself. In most cases, since they cannot be seen with the naked eye, they do not detract from the beauty of the gem, but those with fewer flaws will attract a higher price tag.

CARAT WEIGHT This is the unit of measurement used to describe the weight of a diamond, not its size. The average carat weight of an engagement ring diamond in the United States is between 1.00 and 1.2 carats, 1 carat being the equivalent of a fifth of a gram. Diamonds come in a variety of shapes, the most popular being round. They can also be oval, square, rectangle, marquise or pear-shaped, it is entirely a matter of personal preference. Once you’ve decided on the kind of stone you’re looking for, the next thing to consider is the band. Does white gold or platinum appeal to you, or would you rather have rose or yellow gold? Here are a few things to bear in mind when choosing a band: platinum does not corrode and is the hardest and most durable; white gold is an alloy of gold and at least one white metal, usually silver, nickel or palladium. Pure gold is too soft to make into jewelry, so it has to be mixed with other metals for added strength. 18kt gold is 75% pure gold, mixed with silver, copper or zinc.; 14kt. gold is 58% pure gold, with the same added metals. It is slower to tarnish and more resistant to scratching or corrosion, because the other metals make it harder and more durable. The most important thing to remember when purchasing an engagement ring is that it will be a part of your life for a very long time, so choose carefully. Once you have decided and the purchase has been completed, it would be advisable to get the ring insured. That way, you will have one less thing to worry about as you move on to making plans for the next chapter of your life together.

CASA NOVA CUSTOM CATERING Creating unique dishes that look too good to eat. By Anya Sebastian

CASA NOVA CUSTOM CATERING, A BUSINESS LESS THAN SIX YEARS OLD, has already gained a reputation as one of the best caterers in Santa Fe, specializing in weddings and corporate events. The founders, Eduardo Ramirez and Joaquin Alvarado, believe that the success of this small, family-owned business is largely due to its unconventional character. Originally trained as an architect, the crash of 2008 forced Ramirez to abandon a successful career and look elsewhere. Having always been a foodie and having grown up with a mother who was an expert cook, he was naturally drawn to that world, bringing his architectural eye, experience and training, along with him. “Aesthetics are really important to me,” he explains, “so color, texture and the artful placement and presentation of food, were all second nature.” Quality is, of course, also important and whenever possible, food is locally sourced and organic. The Sous Chef is his mother-in-law, Dolores Ortiz, and both of them focus on manifesting positive outcomes when engaged in the creative process. “We firmly believe that good intentions affect food on a molecular level,” says Ramirez, “ and it shows in the final result.” Apparently so, since guests frequently comment on the ‘exceptional’, ‘spectacular’, and ‘elevated’ food.’ Sample menus are sent out to prospective clients, with varying prices to fit any budget, and special requests are always welcome. The most popular menus are southwestern, Latin-based, with a local flair, but some dishes are unique, like the hugely popular Bride’s Bouquet Salad, adorned with edible flowers. Any number of guests, large or small, can be accommodated, anywhere statewide. State and pueblo-certified staff work the events, all wearing the same, professional dress, but with one exception. Everyone is allowed to wear fun socks, as a reminder that they are there, not only to do a good job, but to have fun at the same time. The evening ends with a warm, group hug. “We recently purchased The Village at Rancho Viejo, and our expansion there for Spring 2021 will double our catering capability and add an event venue and restaurant to the growing south side of Santa Fe,” says Ramirez. Cafe Nova Santa Fe will offer a mix of traditional Mexican flavors and American comfort food, with occasional themed pop-up dinners. “A good opportunity to test out new ideas,” he says. It will also be a good opportunity to sample Casa Nova’s creative dishes on an informal, ongoing basis. Now that is definitely something to look forward to. WHEN ZARA SOUTHARD WENT TO UNM, she had every intention of becoming a painter, but then she discovered the world of ceramics. Having worked since early childhood with Maggie Faralla, her stepmother and the founder of Maggie’s Cakes, Zara quickly realized that clay and fondant have much in common; fondant just happens to be made out of sugar. Fast forward to 2014, when Maggie, now firmly established as Santa Fe’s wedding cake maven, sadly died from cancer. It just so happened that Zara, who had spent the previous decade teaching, was ready for a change. “Everything I knew about baking and decorating I had learned from Maggie and I really wanted to preserve her legacy,” she says, “so I took over the business and embraced being a cake artist “ Being a talented and experienced artist in her own right, Zara has inevitably added her own artistic style to the vision launched by Maggie over 20 years ago. Born and raised in Santa Fe (her father, Charles Southard, created the famous steel donkey in Burro Alley, downtown) she is particularly inspired by her home environment. Adobe houses, southwestern textiles, folk art, Mexican tiles, chile ristras and desert cacti, have all been prominently featured in her cake creations. Clients typically bring her a theme to work with; a southwestern vibe, floral choices, lace accents on a wedding dress, a color scheme.... or ideas that inspire them. Since many of her clients are from out of state, these can be sent via text or email, in the form of a ‘mood board’. “I love working with those,” says Zara. “It really gives me an insight into what people are looking for.” She is then set to come up with a design that reflects the clients’ desire and vibe. Zara has now expanded her repertoire to include cupcakes and hand-painted cookies, and she is also available for corporate events and private parties. “I make one of a kind, edible art,” she says. “People always tell me that it looks too good to eat…and then they eat it anyway.”

HEALTH &WELLNESS SPRING IS TRADITIONALLY CLEAN-UP TIME, when thoughts typically turn to cleaning and clearing out our homes. SPRING CLEANING FROM THE INSIDE OUT WITH

SPRING IS A TIME OF RENEWAL, A TIME TO EMERGE from the sluggish days of winter and become proactive, rather than reactive, in our health choices. As Gyana Basse, the owner of Hemp Apotheke, explains, “What’s important at this time of year is cleansing, detoxing and boosting the immune system. There is no magic formula, since everyone is different, but CBD, herbs, essential oils and mushrooms, all have an important part to play.” If you’re not sure how or where to begin - and if these things are new to you, it may all seem a bit overwhelming at first - Hemp Apotheke is only too happy to help. Many people don’t realize that we’re mostly fluid and most of that fluid is lymph and blood. Disease grows in the lymphatic system, so removing toxins is an essential part of healing.” Another effective detoxing aid comes in the form of magnesium flakes, which can be used like epsom salts, at bath time, or added to your foot bath. IT NEVER OCCURRED TO DR. KRISTINA TRUJILLO AND KATIE UILK that they would one day work together. Kristina was a scientific researcher at UNM and Katie, her sister-in law, had spent years researching carrier oils, blending different combinations and documenting the results. “I had suffered badly with eczema since I was a teenager,” says Katie, “and nothing I was prescribed had really worked. I was still having flare-ups in my mid-30s, which was distressing, to say the least, so I started experimenting with natural oils, to see if I could come up with something better.” After more than a decade of trial and error, testing hundreds of different formulations, her perseverance eventually paid off and Katie was finally eczema free. “That was the turning point,” she says. “ I became an oil artisan, blending different oils to get different results.” Kristina, in the meantime, had become a professor at UNM, specializing in biochemistry and molecular biology. She had

published several research papers during her time there and the university had invited her to apply for tenure, but what she really wanted to do was bring the discoveries out into the real world. “I wanted them to be of practical use, make them available to help people,” she explains, “but universities aren’t set up for that, so I was trying to figure out how I could make that happen.” The main focus of her attention was a molecule that had been discovered during her time as a researcher at UNM. The molecule was similar to resveratrol, an ingredient derived from red grapes and often found in high end, anti-aging products. But it had 6x more anti-oxidant and 10x more anti-inflammatory properties than resveratrol, and Kristina was wondering how she could put that molecule to good use. It just so happened that Katie invited her to come over one day, to help with the products she was making. That was when Kristina began to look up all the studies that had been carried out on the different oils that Katie was using. She was able to confirm that they had all been scientifically tested and found to have

WE ARE LIVING IN TRYING TIMES. There is a global pandemic that is ravaging the world. The illness is called Coronavirus Disease 2019 or COVID-19 for short. This virus causes an upper respiratory illness but can attack the lungs. It can cause fever as well as cough or shortness of breath, among other symptoms. The last time the world experienced a pandemic of this scale was probably the 1918 flu pandemic also know as the Spanish flu, so likely no one alive today remembers a time like the one we are living in now. It is a reminder that life is fragile and we are all connected. When this virus first appeared in Wuhan, China in December 2019, no one on earth was immune to it as far as we know. It can infect anyone. Some people have mild symptoms or possibly no symptoms at all, but a significant number of people are becoming critically ill and many people are dying from this virus. It is likely many more will die before this pandemic is over. Hospitals in places like northern Italy have become overwhelmed by this pandemic and it is likely to continue to spread to other regions and get worse around the world before it gets better.

CORONAVIRUS BLOG At Aspen Medical Center, we care about your health and safety. We are doing everything in our power to try to prevent the spread of the virus and yet still provide essential medical services. We are cooperating with our state and local authorities and following recommended protocols and guidelines. Secure video chat technology is used and we can conduct medical interviews, do counseling, perform a limited physical evaluation, and if necessary order labs, make referrals, or prescribe medications electronically to the pharmacy of your choice. This allows us to continue to provide needed medical services but prevent the spread of the virus by providing care remotely. We can provide these services for people who have chronic ongoing medical needs, people who have acute medical needs, and even people who think they might be infected with this virus. Also, we have temporarily closed Aspen Wellness. So Rachel Ropp, DOM, is not currently doing acupuncture but she still has Chinese herbs available for her patients who wish to purchase them. During this time of a global infectious pandemic, it is important for all of us to do our part in protecting ourselves and everyone else. What are some of the things you can do?

FOLK ART IS AN ART FORM that reflects culture and community and provides a window into the hearts and minds of its artists. It’s usually created by hand rather than mass produced and most often utilizes skills and techniques that have been passed down from generation to generation. While contemporary New Mexico folk artists buy some of their supplies from stores, they frequently hunt for materials, such as wood and pieces of metal, right outside their door. The children, grandchildren and great-grandchildren of Ben Ortega (1923-1998), a Santa Fe area wood carver who was wellknown for his images of saints and angels, still use wood from old northern New Mexico cottonwood trees in their work. Ortega’s descendants also carve religious figures, including Saint Francis (the patron saint of animals) and San Pasqual (the patron saint of cooks and kitchens). Their figures can be seen at El Nicho (227 Don Gaspar Ave.) in Santa Fe.

Animals have been and continue to be a favorite subject of New Mexico folk artists. Paul Lutonsky, a New Mexico folk artist who lives in a rural area north of Albuquerque, has been fascinated by the animals living around him for many years. Lutonsky prefers to use pine when making his colorful owls and snakes that are displayed at Good Folk Gallery (141 Lincoln Ave.) in Santa Fe. Ron Archuleta Rodriguez, the grandson of master wood carver Felipe Archuleta (1910-1991), also focuses his work on animals. Rodriguez’s delightfully whimsical wood critters reflect his 21st century life. Incorporated into his pieces are everything from computer parts to sports equipment. Check out his armadillo made with a motorcycle gas tank and his turkey with golf club feathers at The Rainbow Man (107 E. Palace Ave.) in Santa Fe. “Folk art is a universal art that everybody interprets in their own way,” says Debbie Cox-Collins, whose family has owned The Rainbow Man for 37 years. One of the best places in the world to experience the incredible diversity of folk art is in Santa Fe at the annual three-day-long International Folk Art Market (IFAM). During the past 16 years, IFAM has hosted more than 1,000 master folk artists from 100 countries. This summer’s event has been cancelled, but IFAM will take place in July 2021. The International Folk Art Market takes place on Santa Fe’s Museum Hill, which is home to the Museum of International Folk Art (706 Camino Lejo). Founded in 1953, this internationally-known museum boasts a collection of more than 130,000 examples of folk and traditional arts from around the world. Museum Hill is also where the Museum of Spanish Colonial Art (750 Camino Lejo) is located. Opened to the public in 2002, the museum has more than 3,700 unique folk art objects. Santa Fe has become an important hub for folk art. Its engaging folk art shops and museums are well-worth exploring!

LAS CAMPANAS COMPADRES’ FUNDRAISER A SUCCESS Photos by Caitlin Elizabeth

FOR PEOPLE WITH SPECIAL NEEDS, it can be costly and difficult to access valuable physiotherapies like equestrian and swimming therapy. This is why Las Campanas Compadres (LCC) puts to good use The Club at Las Campanas’ world-class equestrian facility and pool—as well as the generosity of many Las Campanas residents—to offer free riding and swimming lessons to people with special needs. Founded by Lawrence and Suzanna Becerra in 2007, the program underwrites approximately 1,500 lessons per year. “It’s not just about kids learning to ride a horse or swim,” says Lawrence, “it’s about building self-esteem.” Most participants live in Española, Santa Fe, Albuquerque and Las Vegas. The only qualification for participation is that the state recognize the participant as having physical, cognitive or emotional special needs. Riding happens on Mondays for 30-minute sessions with up to 12 students per day. The swimming program runs twice per week, normally on weekends. These 30-minute lessons facilitate up to 16 students over two days. The riding program is run by Karen Evans, a rated instructor through the Professional Association of Therapeutic Horsemanship International. The swimming program is run by Dave Caldwell, an accredited swim instructor who has worked as a coach for several university programs. Additionally, LCC has a pool of 40 volunteers who fill up time slots according to which students have signed up for lessons each week. Volunteers quickly become attached to participants, and though the Becerra’s report no trouble matching volunteers to lessons, LCC is always open to new volunteers. Many are Las Campanas residents, as well as folks from Santa Fe and Los Alamos.

Last summer, 200 supporters of LCC gathered for the non-profit’s 11th anniversary Wild West Show fundraiser. Local cowboy and saddle/buckle maker Clint Mortenson, organized a Wild West Show. Clint performed mountain shooting off the back of his horse. Other activities included trick riding and trick shooting and roping by world renowned Loop Rawlins. The band Half Broke Horses played a blend of Honky Tonk and Americana. Las Campanas’ chef provided a barbeque, while Santa Fe fine ding establishments Sazon and Sassella provided passed around canapes. All in all, $60,000 was raised to benefit the good work of LCC. “We will use all moneys raised to carry on paying for equipment and paying our instructors for the swimming and riding programs,” describes Suzanna. “We also hope to carry on helping families as much as we can. We have a fund called Helping Hands that I chair where we help if a family needs a little extra aid buying a piece of equipment or a wheelchair upgrade.”

LCC will celebrate its 12th anniversary this year but given current events have had to cancel this year’s Wild West Show fundraiser at The Club at Las Campanas’ equestrian facilities. “ We may hold a wine auction later in the year. And we will rely on the generous support of our donors to carry us through. But most of all, we hope to have an even bigger and better event next year. After all, it’s not our first rodeo!” quips Suzanna. She continues: “I love seeing the laughter and light that shines on the faces of our students and their parents, caregivers, brothers, sisters and grandparents. But this is not a temporary emotion for a Las Campanas Compadres volunteer; it stays with each of us like a ray of sunshine warming our hearts. Every one of us experiences this rush of gratitude. I use the word ‘gratitude’ because we have our students and their families to thank.”

LOMBARDY LOMBARDY IS A MAJOR GOURMET EPICENTER with the highest concentration of Michelin starred restaurants in Italy. What many wine lovers have yet to recognize is that the region also boasts some of the best wines in all of Italy. There are three major DOCGs (Denomination of Controlled and Guaranteed Origin) in Lombardy: Franciacorta, Valtellina Superiore, and Sforzato di Valtellina. The Franciacorta wine zone received DOCG status in 1995. It is widely accepted in Italy as the finest sparkling wine of them all considering its DOCG title. Franciacorta is special due to its stoney, rich-in-mineral soil from the Alps. The wine is often described as fruity, elegant and fresh. Try the Ferghettina, Franciacorta Brut Rose made from 100% pinot nero grape. This attractive rosé sparkler offers a food-friendly personality that pairs well with seafood, grilled tuna or sushi. Without a doubt, Lombardy’s best and most powerful red wines come from Valtellina, in the far north. The main grape cultivated here is the Chiavennasca, the local name for Nebbiolo (which makes Barolo and Barbaresco in Piedmont). The vineyards are completely unique in that they are located on extremely steep hillsides and terraced. Winemaking here is done on a small artisan scale and is quite highend and high quality.

The Valtellina DOC (Denomination of Controlled Origin) includes the basic level wines while the Valtellina Superiore DOCG include wines from the more premium locations and must be aged a minimum of two years. The Valtellina Superiore Riserva are reserve-style wines that must be aged for at least four years. Valtellina also produces an Amarone-style DOCG wine known as Sforzato made from dried grapes with a minimum alcohol content of 14.5%. Two wine makers you may want to check out are Nino Negri and Tenuta Scersce. Nin Negri’s ‘Quadrio’ is a Valtellina Superiore and an outstanding wine, particularly at the price point. Their Sfursat ‘Cinque Stelle’ is a world class wine and can stand toe to toe with some of the best amarones and barolos. Tenuta Scersce, while less well known, produces two exceptional wines. Their ‘Infinito’ and ‘Essenza’ are valtellina superiore wines that will make believers out of you. This author fully expects that in a short amount of time the success that the extraordinary wines of Sicily’s Mt. Etna region have recently enjoyed will be followed by the wines of Lombardy. My recommendation is that you get in while the getting is good. Low production with increasing recognition and demand will only serve to move prices of these wines higher.

SAZÓN’S ACCOMPLISHMENTS SHINE

FERNANDO OLEA, CHEF AND CO-OWNER OF SAZÓN, one of Santa Fe’s premier fine dining establishments, is the true embodiment of the American dream. Chef Olea immigrated to the United States in 1982. His decades of hard work, dedication and perseverance in the restaurant industry are now being recognized around the country, not just here at home. In March, the National Restaurant Association Foundation named him one of their Faces of Diversity. The award pays tribute to restaurant operators and employees of diverse backgrounds who have accomplished extraordinary feats in the restaurant industry. This honor came fast on the heels of Olea being recognized as the 2019 Restaurateur of the Year by the New Mexico Restaurant Association. As if these accolades weren’t enough for the chef to hang his trademark Western hat upon, Olea was the only one from Santa Fe recognized as a semi-finalist for best chef in the Southwest in this year’s James Beard Awards. By the time you read this, he may well have moved into the finals and/or been named winner. “It is a big responsibility to showcase New Mexico in the James Beard Awards,” Olea said. “And a big honor. But it also belongs to my staff, who work hard every day and every evening to make sure our guests are taken care of.” Sazón is the pinnacle of Olea’s journey. When the sophisticated Mexican restaurant opened in 2015 on

SASSELLA’S REFRESHED, PLEIN AIR PATIO is ready for both lunch and dinner service as Santa Fe’s spring and summer dining season is about to begin. The landscaping at the upscale Italian restaurant has been refreshed, the trees trimmed to shade the dog friendly courtyard, and lighting installed for a serene outdoor ambience along its quiet side street location. “The building is so full of history. It’s an icon in itself,” says co-owner Lawrence Becerra. “At one time it housed officers for nearby Fort Marcy and it’s been an art gallery. We’re now neighbor to the Georgia O’Keeffe Museum. We discover something new every day from our customers.” Interior designer and co-owner Suzanna Becerra’s expert touches are everywhere, preserving the beauty of the structure while transporting diners out of the Southwest and into the European café scene. The contemporary décor features curated food-forward photography and artwork and a wall of mirrors reminiscent of Venice. All this puts the spotlight on award-winning Executive Chef and co-owner Cristian Pontiggia’s pan-Italian cuisine. Chef Cristian hails from Sassella, the small town in Italy’s Lombardy region that gives the restaurant its name. His

impressive culinary pedigree includes cooking in kitchens in Bellagio, Italy, and the Four Seasons in London. Here in Santa Fe he helmed Osteria D’Assisi and El Nido. What never wavered is his love of Italian cuisine. “Some restaurants like to make the distinction between this region or that region. I don’t. I love to cook from every region.” Chef Cristian’s late spring/summer menu features a 7–9 course tasting menu—in a veritable tour of Italy for the taste buds, as well as dishes that combine traditional ingredients and flavors with new techniques like sous vide. “We’ve got a veal chop that is amazing!” he says. Sassella is known as a destination for artisanal cocktails and wine, too, with Lawrence’s curated libation list spotlighting Italian wines, as well as spirits like gin and Amaro. “Many people don’t realize that gin has Italian roots and a gin and tonic is a typical summer drink in Italy. Amaro is an herbal digestif made by monks for more than 500 years with each village making its own kind. Now people are starting to appreciate the liqueur, and our mixologists are making interesting cocktails with it,” he says. Sassella’s 55 gins and 24 Amaros are so special that every Saturday afternoon is reserved for alternating gin and amaro tastings. Chef Crisitian hand cuts a selection of salumi on the 1960s salum they had restored and brought over from Italy, too. Sassella also sells its own privately labelled, first press Italian extra virgin olive oil from their friends at Sogno Toscano. The oil is raw, unfiltered and features handpicked, locally sourced olives, carrying the prestigious 1923 Qualita Superiore classification. An extraordinary experience awaits at Sassella. JOSEPH’S CULINARY PUB Adapting to Changing Times By Anya Sebastian

IT TOOK A WHILE FOR JOSEPH WREDE, the chef/owner of Joseph’s Culinary Pub and a celebrated food artist, to come to terms with the idea of venturing into the world of curbside pickup. “What’s important to me is the whole dining experience,” he explains, “the ambience, the company, the service, the overall aesthetics and the presentation of the food. Picking up a package to go, on the sidewalk, is about as far removed from that as you can get.” But these are unprecedented times and after shutting down the restaurant for a few weeks, Wrede really had no choice but to go curbside. “It’s been quite a challenge,” he admits. “My dishes tend to be unconventional and many don’t adapt well to take-out. Instead of focusing on preparing meals for people to enjoy on special occasions, I had to think more in terms of the pub menu and then expand on that.” The to-go menu changes frequently, because in the current circumstances certain items are not always available. It does, however, make a point of offering a good selection of vegetarian dishes, in addition to some basics, with a typical Joseph’s twist, such as lamb burger with arugula salad, chile cheese relleno with traditional egg batter, and buffalo meatloaf with caramelized onions. All kitchen staff are vetted when they arrive, to ensure they are in good health, and everyone wears a mask and gloves during their shift. Anyone not feeling well is instructed to stay home and the work environment is thoroughly and regularly sanitized. “Everyone’s consciousness has been raised by this epidemic,” says Wrede, “and I think it’s going to affect social interactions for a while. We are currently considering some possible future changes, such as bringing people warm towels, like they do in Japan, leaving more space between tables... that kind of thing.” Having always been a supportive member of the local community, Joseph’s is now one of the restaurants providing meals for the city’s first responders. Anyone wishing to show their appreciation for the dedication of those in the front line, can purchase a meal to be delivered directly to their workplace. “We hope this crisis will bring people together to support one another,” says Wrede. “That’s how we will get through this.” Since restaurants are such an integral part of the culture and lifestyle of this city—Santa Fe is a well-known foodie town after all—the good news is that there is likely to be a huge influx of diners when restrictions are finally lifted. As Wrede points out, “If you’re not used to cooking at home, or don’t even want to, it can get old pretty fast. Cooking is a skill, which, like playing the piano, takes years to perfect. Some people take to it and enjoy it, and others don’t. AFTER A NUMBER OF YEARS SPENT working in the insurance industry, Devon Day knew it was time for a new challenge. “I needed a change,” she says, “and I wanted something that would make people happy.” So Day started looking for a business to buy. Selling foods imported from Poland was the last thing on her mind, but when she saw the small, independent business for sale, something about it sparked her interest. The business was doing fine, but the owners were retiring and could no longer handle the amount of work involved. As it turned out, the owners became both friends and mentors, teaching her everything she needed to know in order to run a successful business. That was over five years ago and Eurozone is now firmly established as the only store in Albuquerque offering foods not found anywhere else.

Tastings are held on Fridays and Saturdays, all day long, to give people a chance to try things they’ve never tasted before and Day is also willing to try and satisfy special requests. She has also succeeded in her desire to be involved in a business that spreads happiness. “People tell me every day that they really appreciate me being here,” she says with a smile. “Many customers have moved here from the east and west coasts and really miss their local delis. Apart from anything else, it’s good to have different food options.”

So much so that earlier this year, Raaga-Go opened a brightly painted space for customers to sit and enjoy their take out. Paddy recently bested Food Network’s Beat Bobby Flay, during an episode in which he thanked Santa Fe for its long support. “I’m continually grateful to this community, without which I couldn’t do what I do,” he says, hinting at further expansion in the future. SERVICE CALLS AT OUR SANTA FE SERVICE OFFICE HAVE BEGUN TO PICK UP for sugar ants, also known as odorous house ants. If you accidentally crush one, you will quickly learn why they have such an unusual name, as they will emit a smell similar to the odor of rotten coconuts. These ants are highly-tolerant of other ants and occasionally live in compound colonies with other species.

Completely black in color, they tend to be no more than 1/16 inch long. Found throughout the world, sugar ants are one of the more common household ants. In addition, unfortunately for homeowners, this species is known for being one of the most difficult household ants to control because it has the innate ability for “getting into things.� Our service office knows sugar ants will appear each spring because they always take advantage of artificial heating in buildings to survive the winter. They will infest almost all areas of a building where food is available and infests many areas where food is not commonly found. Infestations commonly occur in food service areas. Hospitals are of heightened concern with this species, as these ants can spread disease and contaminate sterile equipment and rooms. Sugar ants have a wide preference in the types of food consumed. In infested areas, if sweet, fatty, or oily foods are left uncovered for only a short period of time, one can likely find a trail of sugar ants to the food. They will also eat other insects. They have multiple queens and are able to move their colonies from place to place when disturbed. They begin new colonies when a small group of workers and a single queen migrate from their colony to start a new colony. In addition, sugar ants are crafty because they can build nests in walls, cabinet voids, behind baseboards, refrigerator insulation, the

hollows of curtain rods, the folds of clothes, sheets and paper and other undisturbed dark spaces. In short, this ability to find places to build nests makes them extremely difficult to control. Do-it-yourself control of sugar ants is difficult, due to their nesting in inaccessible areas. Treatment must be thorough and complete at all nesting sites, as well as the foraging area. Thus, treatment must include walls, ceilings, floor voids, and electrical wall outlets. Baits are the preferred method of control for sugar ants and several baits (insecticides) are labeled for indoor ant control. Ants nesting on the outside may be controlled by also using a perimeter barrier treatment. However, as mentioned earlier, their ability to migrate quickly when disturbed gives this species the ability to survive most conventional household pest control treatments. It is best to contact a pest control professional when sugar ants are causing problems. A colony of these ants will scatter if a toxic substance disturbs it, creating multiple problems where there had been only one. In controlling them, it is often advisable to seek professional help.
