When a client comes in looking for custom jewelry, Kallas generally begins by sketching designs on paper. For instance, with an engagement ring, he starts with the shape of the stone. It could be a family stone, or it could be a stone that Kallas has sourced from a host of dealers around the country. Sometimes clients bring in a photo of something they like, or they might model it off another piece of jewelry they admire, like their mother’s ring. Customers also get ideas from finished pieces on display in the store. After discerning what styles his client gravitates towards, Kallas puts the ideas to computer aided design, which can then be rendered for preview by the client. This way, variances in metals

and stones can easily be modified until the client is fully satisfied with the design. When embarking on the process of creating a custom design piece of jewelry, clients often are not able to envision the final product. “By rendering a picture and making a wax model, we try to remove the unknown and give the client a more precise idea of what the final piece will look like,” explains Kallas. Once the wax model is milled and approved by the client, the piece is cast in Kallas’ on-site shop, which extends beyond the showroom. In these times, there is an understandable reluctance on the part of many people to venture out into the world. Independent businesses are well aware of this and they are going out of their way to make safety a priority. WHEN DR. ANDREW ROPP, co-founder and Medical Director of Aspen Medical Center, tells his patients that they can get acupuncture and massage at a little clinic next door, some are still surprised. Aspen Wellness opened a year after Aspen Medical Center and is one of Santa Fe’s most affordable places for these complementary and alternative medical treatments. Offering both Eastern and Western approaches to health care had been a goal of Dr. Ropp’s since his early days of training in New York over 20 years ago. As a student, he founded the Complementary and Alternative Medicine Club at his medical school. He organized speakers on a whole host of topics such as Nutrition, Homeopathy, and his personal favorite, the topic of Acupuncture and Oriental Medicine. After graduation and his medical residency in Family Medicine, he worked at the Hopi Health Care Center(HHCC) in Arizona. SPOTLIGHT on the Santa Fe Art Scene By Emily Van Cleve
The Santa Fe art scene is among the most exciting in the U.S., featuring some of the finest traditional and cutting-edge work by artists from around the world. Santa Fe’s art districts are located in different parts of the city. Historic Canyon Road, home to many talented artists since the early 20th century, has dozens of galleries and shops in renovated adobe structures. One of the leading galleries on Canyon Road is The Longworth Gallery, which prominently displays works by 20 world-class visionary artists including internationally-acclaimed painter and sculptor Vladimir Kush and Michael Parkes, whose sculptures and hand-pulled stone lithographs combine metaphysical and spiritual elements. “At The Longworth Gallery you are surrounded by storytellers using metaphors, allegories and symbolism as their voice,” says gallery owner and director Lisa Rodgers. “This cerebral dimension complements the visual aesthetic and invites you to expand your consciousness.” The Downtown district in the heart of Santa Fe is home to art businesses within walking distance of major hotels and fine restaurants. Also in the downtown area are some of Santa Fe’s most prominent museums, including the Georgia O’Keefe Museum and the New Mexico Museum of Art.

When in the downtown area, be sure to stop by True West, which has a wide selection of Native American and Southwestern jewelry as well as 2D and 3D art works. “We take proper representation of the work very seriously,” says owner Craig Allen, who promises that all pieces labeled as Native American-made are authentic. “At True West we carry the work of master jewelers who are able to customize pieces for our clients. We have something for everyone’s taste, from $20 to $80,000.” Within walking distance of downtown is the Railyard Arts District, which was named for the Santa Fe Railyard that has been an operating train depot since 1880. This area includes galleries in warehouse-style buildings as well as shops on nearby Baca Street, which was once a coal and fuel storage yard for the railways. The Siler Rufina Nexus, a former industrial center south of downtown, is Santa Fe’s newest art district. It’s the home of Meow Wolf’s House of Eternal Return, a world-renowned immersive art experience, as well as several galleries and theater companies.

Indian Market Goes Virtual and Embraces a New Business Model
“We’ve been planning major changes, to adapt to these new circumstances, since the beginning of May,” she says, “because going virtual involves many different things, from developing an IT structure, to designing a new, innovative and permanent business model for SWAIA.”

TO SAY THAT KIM PEONE, THE NEWLY APPOINTED EXECUTIVE DIRECTOR OF SWAIA (the Southwestern Association for Indian Arts) was thrown in at the deep end, is a grand understatement. Her arrival earlier this year coincided with that of the Covid-19 pandemic, and as a result SWAIA’s most prestigious, internationally acclaimed event—Santa Fe Indian Market—was cancelled for the first time in its almost 100-year history. Not only is that a catastrophe for the city of Santa Fe, since the event draws in visitors from all over the globe, but it also deals a devastating blow to the Native American artists, for whom this is a unique, once-a-year opportunity to display their work. Furthermore, Indian Market is the event that enables most of them to survive for the rest of the year. The good news is that Peone’s background makes her exceptionally well qualified to deal with this major challenge. Born and raised in Santa Fe (her parents both graduated from the Institute of American Indian Arts) she holds degrees in both marketing and accounting and has an extensive background in travel and tourism, with a particular focus on arts and culture. She has worked with Native communities around the country for over 35 years, helping them to build and expand their economies and also has IT experience, having worked with IBM for a number of years.

The plan is twofold: Firstly, to launch a virtual market, to run through the month of August, with as many of the participating artists as possible taking part, and then to expand that vision into something more permanent. For the initial launch, each artist will have his/her own website, on which to display their work, artistic background and contact information. Following the August event, in exchange for an annual fee, artists will have the opportunity to learn from experts about website maintenance, marketing, search engine optimization and economic development. With this in mind, SWAIA has partnered with the Clark Hulings Fund, a non-profit organization that provides visual artists with the tools they need to become selfsustaining entrepreneurs. The 2020 online Indian Market will be hosted by Artspan, an established organization specializing in providing artists with a global reach. “They get over 225,000 clicks a month and we’re thrilled to be working with them,” says Peone, “especially as they are really excited about being involved and creating a whole new Native American component, so the connection should benefit everyone.” As a celebratory gift to the artists, Artspan will be taking zero commission for this special event. All these new developments inevitably cost money and fundraising is another essential part of the mix. Anyone interested in taking part in this exciting new venture is invited to either make a donation online, or to become a member, which includes access to this month’s virtual market. I fell in love with the town too, its ocher mud buildings sitting squat and hunched under the sky, fragrant with the wood smoke that began to be burned as autumn rolled in, overseen every day by sunsets that were apocalyptic, with pillars of cloud smoking over the city, and late sunlight flooding the streets.”
Growing up in Oxford with academic parents who divorced, the angsty Shukman suffered from eczema and depression. Everything improved when he went to work at an estancia in Argentina, experiencing a spiritual awakening there. For years afterward, Shukman wandered the globe as a travel writer, poet, and author. He first came to New Mexico to write about the vestiges of D.H. Lawrence’s time here. Shukman got his start in Zen here too, while also being struck by the landscape. He writes, “I fell in love with the hills around Santa Fe, hills of chunky

THE WINES OF SPAIN DOLLAR FOR DOLLAR THERE IS NO BETTER PLACE TO LOOK FOR QUALITY WINES THAN SPAIN. Whether you are trying white wines like Albarino and Godello, or the noble wines of Rioja and Ribera del Duero that feature the ubiquitous tempranillo grape, or the Garnacha grape of the Priorat region, you will not be disappointed. Let’s start in the beautiful Northern part of the country, Galicia, where the best food comes from and also some of Spain’s great wines. Veronica Ortega “Cal” Godello 2015 and the Veronica Ortega “Quite” Mencia 2015 are two delicious wines. The Godello has more body and is slightly creamier that it’s cousin, the Albarino grape, but is still fresh, fruity, and has great salinity and a bouquet that reminds you of the ocean. The Mencia is a dark, spicy, sultry wine that pairs unbelievbaly well with food. If you like the Gamay grape of Beaujolais, France, then you will love the Mencia grape. For a great Albarino, try the Vo Cal, Albarino, 2015. Light and fresh with great salinity and just what you want on a hot summers day. Moving south to more central Spain you will find the noble Tempranillo grape in its various stylistic iterations. After 30 years as technical director and world– renown winemaker for Vega Sicilia, one of Spain’s most revered bottegas, Mariano Garcia Fernández founded Aalto Bodegas y Viñedos in 1999. His Aalto 2016 Ribera del Duero is 100% Tempranillo, and like all wines from the Ribera del Duero region, is much more elegant and refined than the more well know wines of Rioja. This ripe, sexy wine delivers loads of crème de cassis, vanilla, dried flowers, and spice box notes. If you enjoy the Tempranillo grape, and who doesn’t?, then you should give this wine a try. For a great Rioja, try the Izadi Reserva 2014 Rioja. This is an impressive modern wine with rich aromatic intensity and well balanced red fruit, liquorice and spices. And now on to the southeast corner of Spain where you will find the Garnacha grape. The creators of Mas Alta, is located in the heart of Priorat and grows oldvine Garnacha and Carinyena that are up to 100 years old in age. Try their Black Slate La Vilella Alta, 2016 which is a blend of Garnatxa, Carinyena, Cabernet Sauvignon and Syrah. This generous red features a round, soft texture that carries ripe black fruit flavors, laced with licorice, toast and loamy earth notes. Or their La Basseta, 2015, a blend of Garnatxa Negra and Syrah. This beautiful black cherry color wine has an intense aroma with mineral, mint, fresh spices, and black fruit. Elegant acidity with powerful, fresh and unctuous tannins. There are so many great wines from Spain that it is impossible to cover the entire range in a short article. Given the quality and consistency of Spain’s wines at all price levels, this author believes that their wines of are the best bargains in the world today. Head to your local wine merchant and ask to see what they have. Experiment to see which region, grape and style you like most. And then stock up because as sure as God made little red apples, prices are guaranteed to go higher in the coming years.

A CULINARY ADVENTURE AWAITS AT DINNER FOR TWO Anya Sebastian
IF YOU HAD TO CONVEY, IN ONE WORD, what makes Dinner for Two different from other restaurants, that word would be ‘original.’ Their signature dish is filet mignon, crusted in cocoa, coffee and garlic, and covered in a green chile queso with blue crab. Their signature cocktail is The Love Bubble, a margarita made with Patron Blanco tequila, cointreau and passion fruit juice. You get the idea. “We aim to provide unique drinks and interesting dishes in a fun, relaxing environment - upscale but not stuffy,” says chef/owner Andy Barnes, who took over the place from his parents a couple of years ago. “The name isn’t meant to be taken literally; it’s intended to convey a place where you can relax, enjoy fine food and private conversation, no matter how many people are in your party.” Born and raised in Santa Fe, Barnes has been involved with the restaurant since it was first established almost 20 years ago. After spending time at the Community College, he honed his skills at the Culinary Institute of America in upstate New York, before coming back to his home town. He now has his own orchard, with 30 trees, plus a planted acre, which together provide most of what he needs for the restaurant. The rest he buys directly from a farmer in Espanola, who also grows the edible flowers that are a frequent feature of his culinary creations.
the couple of years since ownership changed hands, the place has been remodeled; it now has a liquor license, and a patio was recently added as well. “The coronavirus was obviously the reason for that,” explains Barnes, “and it’s been a really great success.” Dinner is from 4:00 to 10:00pm (curbside pick-up is also available) and happy hour is from 4:00 to 6:30pm. Due to state restrictions, patio seating is currently 45 instead of 90, so booking is advisable.
Dinner for Two is very much a family affair. Barnes and his wife, Crystal, are now co-owners and Chef Ronny Gutierrez has been there for over a decade. His brother, Tony, is the pastry chef. In

SUMMERTIME IN SANTA FE means perfect weather for outdoor dining. The large patio at Sassella, with its leafy trees, rustic brick, exceptional pan-Italian cuisine and extensive wine list, is ideal for summer dining al fresco. “We’re very happy to see our loyal guests again, and overjoyed to have our gorgeous patio open to safely accommodate our friends,” says Executive Chef and co-owner Cristian Pontiggia. The restaurant added a covered pergola seating six to the outdoor terrace, too. Eventually, that area will become an oyster and champagne bar with sparkle and salty savor. “We expect new guests from all over will be excited to try our new menu offerings, too, as well as enjoying the serene outdoor ambience,” he adds. Always focused on seasonal ingredients, Chef Cristian has introduced the perfect summertime libations: floats featuring three different gelatos paired with herbal Amaro liqueurs. Also new, a Lombardy-inspired cannoli, a mouth-watering grilled Piedmontese flatiron steak and a smokey burrata appetizer. New pasta entrées and a grilled seabass, and regular menu favorite the elegant bone-in veal chop, earn raves. When you think of fine dining, you also think fine libations. Sassella recently received the coveted Wine Spectator Award of Excellence for its artisanal cocktail and wine list that features an impressive array of Italian wines.

“Two new wines are really exciting, too. One is a Nebbiolo grape clone from Lombardy. The other is from the Mt. Etna region of Sicily. Both are delicious and pair well with Chef’s innovative cuisine,” says Lawrence Becerra, co-owner. Chef Christian boasts accolade, as if several awards from international gastronomic society La Confrérie de la Chaîne des Rôtisseurs and working at two Michelin Star restaurants in Europe weren’t enough. As American Culinary Federation New Mexico Chapter Vice President, he’s continuing his advocacy for the state’s many eating establishments. One of their initiatives is the extensive cleaning protocols followed by Sassella to ensure guest and staff safety, part of the New Mexico Safe Certified program. These include physically distanced dining tables disinfected between use, sanitized menus, and face shields and regular temperature checks for staff. These, among other procedures, can be found on the restaurant’s website. “We appreciate that our guests join with us in wanting to ensure everyone’s safety. It’s our duty to provide both delicious dining and keep everyone safe,” adds Becerra. These measures have no doubt contributed to the restaurant’s Trip Advisor Five Star rating, making Sassella the third highest rated fine dining restaurant in Santa Fe. One Trip Advisor review from Kenneth B. notes: Certainly, the very best restaurant in Santa Fe and arguably one of the best in the West. My veal chop was the best I have ever had and my wife’s trout special was amazing. He’s added new choices from Spain, as well as one fantastic wine from Baja California’s Bruma Valle de Guadalupe near Ensenada. Winemaker Lourdes “Lulu” Martinez Ojeda, likened to pioneering California vintner Merry Edwards, leads Bruma’s efforts, having spent a decade working with France’s top winemakers. In addition to its innovative menu of traditional and new Mexican favorites, Sazón has focused on client safety and comfort as part of the New Mexico Safe Certified program. Participation in this program ensures guests that extensive cleaning protocols are followed: These include physically distanced dining tables disinfected between use, using UV lights to sanitize menus and spaces, and clear face shields and regular temperature checks for staff. That’s how we’ve been around for so long.” While many think of The Compound, first opened in 1966 with its signature Alexander Girard designed, Instagram-worthy interior (hashtag #compound202020), as a special occasion restaurant, others know that their relaxed lunch service, informal bar and affordable bar menu, attracts young, lively local crowds as well as older, sophisticated foodies. Heading into spring, diners can expect new peas, asparagus, green garlic, rhubarb and strawberries, locally sourced lamb, and fresh-picked morel and chanterelle mushrooms from the Pacific Northwest. This keeps The Compound experience new and exciting for repeat diners, too. Kiffin’s long-cultivated relationships with farmers, growers and artisanal purveyors means The Compound was farm to table before that term became buzzy. “We go to specific people for specific items and always have,” he says. “We head to the farmers directly because we are locally oriented and want our guests to come back again and again.” Kiffin’s community focus includes serving on the boards of the Santa Fe Wine & Chile Fiesta, the Santa Fe Opera Business Council and the New York Grand Fondo summer cycling events. His charitable endeavors support local non-profit organizations through benefit dinners, appearances and demonstrations. He also makes guest chef appearances at numerous national and international food events. Ultimately, Kiffin calls himself the caretaker of the Compound more than its owner. “The Compound will be around a long time. I see my role as a bigger responsibility with higher expectations. I want it to be around not just now, but for my children and the children of the staff. El Nido Lights the Fire Under Summer Dining By Kelly Koepke
SUMMER DINING CALLS FOR SMOKE AND FIRE. What’s better on a gorgeous New Mexico evening than a wood-grilled rotisserie chicken, smoky flatbreads topped with market fresh ingredients, and a handcrafted cocktail or glass of wine? Even more enjoyable is experiencing those delights on a beautiful patio in a tranquil, leafy setting.
That includes infusing smoke from lavender and cornhusks into some signature libations: the Sage Smoked Paloma, and the aptly named Smoke & Mirrors. Diners can take half off bottles on a carefully curated wine list to pair with Chef Ka’ai’s cuisine on Wine Down Wednesdays. The El Nido staff can also advise the perfect bottle or cocktail based on guests’ food choices, tastes and the season.
El Nido has all of those and more. Chef Ka’ainoa Ravey’s fireforward menu takes the rustic, old-world cooking techniques of grilling, smoking and using the heat of coals to prepare just about everything at the Tesuque restaurant. Sage-smoked rainbow trout and ribeye grilled over pecan wood highlight the entrée menu. Desserts – wood-oven baked carrot cake and cobbler – get the seductively smoky treatment, too.
The restaurant’s Italian wood-fired oven and live-fire Argentinian grill sets it apart from other Santa Fe restaurants. It also demands that the kitchen be led by someone who understands these cooking techniques. Chef Ka’ai’s pedigree fit the bill perfectly. He buries vegetables in coals for a slow, roasted flavor, and Japanese hibachi techniques to sear meats to perfection. Rotisserie is a favorite, too, reflected in customer favorite huli chicken.

Born in Hawaii, Chef Ka’ai has earned raves for his food all over the world and New Mexico. He was the opening chef at Albuquerque’s Farm & Table, and spent time at restaurants in New York City. He now brings his love of local, fresh and seasonal to El Nido and reimagined the restaurant’s menu to reflect his passion for live-fire cooking techniques. “His core belief, that great food need not be elaborate or fussy, but rather fresh, uncomplicated and well executed, directs his choices,” says El Nido co-owner Rob Bowdon. “What could be fresher than produce from local purveyors like Romero Farms and Growing Opportunities?” When the Odai and Bowdon families reopened El Nido in 2017, they embraced the rural setting less than 10 minutes from the Santa Fe plaza. They’ve recently opened
a second large patio to double their outdoor space and take advantage of the lush greenery of majestic Cottonwood trees. They are dynamic, intimate spaces, covered and lighted to ensure that New Mexico’s late summer monsoons don’t spoil the ambience. Those who want to enjoy their meals at home can order the entire menu through El Nido’s curbside pickup via the Toast app, or use a delivery service like Fetch. Some lunch favorites include beer batter Alaskan cod fish and chips with jalapeno tartar sauce, Melissa’s 5 oz. burger with bacon, mozzarella cheese and green chile, or, for the lighter appetite, the grilled bistro steak salad with watercress, bok choy, tomatoes and soysesame vinaigrette. For dinner, try the grilled sterling silver rib eye with green beans and green chile mashed potatoes, the grilled New Zealand rack of lamb, or the Pacific blue crab cakes. All are cooked to perfection and a delight to the palate! For dessert, their carrot cake is a local favorite as well as the chocolate mousse with Chantilly. The wine list is extensive and well thought out with regards to the entrees. In Chinese, ‘feng’ means wind and ‘shui’ means water, two natural elements that are essential for human survival, and the purpose of Feng Shui is to connect and go with the flow of the natural world outside, while at the same time promoting harmony within the internal space itself. Originally held as a closely guarded secret of the Chinese Imperial Court, Feng Shui masters were under strict orders never to reveal what they knew to anyone, so powerful was this knowledge
considered to be. Consequently, for many years it was only passed down directly from father to son. The practice obviously evolved and spread, over the centuries, eventually making its way to the West, where it is widely practiced today. Companies like Nike, Coca Cola and Disney use it to boost productivity, and Feng Shui has also been used by wellknown personalities, including Madonna, Oprah Winfrey, Steven Spielberg and Tommy Hilfiger. Working with the floor plan of your home, Feng Shui practitioners use an energy map, called a bagua, to define eight areas around a center, the center representing overall health and wellness. The eight spaces correspond to different life circumstances, including family, career, reputation, abundance, etc. and each has its own colors, shapes and elements, for energizing and maximizing its potential. It is recommended to identify up to three areas in your life that are in need of the most attention and to focus on activating and working with the energy of those areas. There is obviously no guarantee of results, but it’s not uncommon to hear of houses that have languished on the market for months, before finally attracting a buyer after undergoing a Feng Shui transformation. Homes and offices that have been reorganized in this way definitely feel different; there is a noticeable energy shift and the places just look more pleasing and welcoming. Just one word of caution: Do ask around and get referrals, if possible, before deciding on a Feng Shui practitioner to work on your home. This ancient practice is not a magic fix, or a quick makeover, but a complex mix of both art and science, and experience definitely has an impact on the final outcome.

uring the Shelter-In-Place order we saw the largest impact on showings as expected, which would be reflected in the number of sales in the following months of April and May. Once orders began to be lifted there was a wave of demand that helped accelerate prices and plunge available inventory. Where we thought we had record low inventory in 2019, we are lower now with sales lagging around 30% behind. Demand, on the other hand, has never seemed higher.

LOCATED ON THE SANTA FE PLAZA FOR 11 YEARS, this shoppers’ paradise is the to-go place for dining room sets, coffee tables, sofas and chairs. Inside the spacious, three-floor store are one-of-a-kind furniture pieces made by master craftsmen.
“We can fill most inlay requests,” Amini says. “We’ve had clients give us their favorite semi-precious rock stones, like azurite and malachite, to put into a table.”
“Because we stock and are able to get such a large variety of soft and hard woods in light and dark shades, clients always find what they’re looking for,” explains co-owner Freddie Amini.
Cowboys and Indians has taken the basic coffee table and elevated it to a work of art. “Coffee tables are wonderful centerpieces for any home,” says Amini. “Our artisans select the best quality mesquite, acacia, teak root and walnut woods. Although turquoise is the inlay of choice for most of our customers, we also inlay coffee tables with silver or copper. A glass top is another option.”
Amini is an expert when it comes to knowing how to prepare wood before it is transformed into a beautiful piece of furniture. Some species of wood have to be air-dried, he says, while other kinds can be carefully kiln-dried at the store’s warehouse south of downtown.
While the store’s table tops are spectacular, so are the legs. Cowboys and Indians offers a choice of wood or iron legs for most tables. Hand-forged iron legs are quite popular, Amini says, especially with modern and Southwestern designs.
Nine years ago, Cowboys and Indians began inlaying turquoise and other semi-precious stones into their exquisite tables. Today, the store’s inlay offerings also include silver, bronze and copper.
The majority of Cowboys and Indians’ clients order custom chairs, either in fabric or leather, to perfectly complement their new table.
Fifteen different species of wood are used in the store’s furniture. While most of them are from the U.S., teak, rosewood and acacia are imported woods.

“I enjoy sitting down with my clients and helping them design the table, chairs, wine racks and beds of their dreams,” Amini adds. “Although I want them to determine the vast majority of the design elements, I always like a small portion of the design to be something original and special that we do just for that client.” Cowboys and Indians creates custom table lamps out of iron, barbed wire, hand carved wood, hide and suede and sells unusual, one-of-a-kind handmade wood bowls by Santa Fe artist Eric Hester. Also available are gorgeous leather handtooled bags by Juan Antonio and unique fabric bags by Wooley Kiwi. Amini is delighted that the store’s international business has greatly increased during the past five years. Cowboys and Indians regularly ships furniture to customers throughout the U.S. and abroad. First, the estimator arrived at their home off Bishop’s Lodge Road, tape measure ready. He asked key questions to determine the best way to meet their goals. What was their purpose for the space?
