The Holidays are a magical time in Santa Fe. Two of my favorite events held during the coming months are the Plaza Lighting Ceremony and the Canyon Road Farolito Walk. The lighting of the historic Santa Fe Plaza takes place the day after Thanksgiving. This celebration is for the entire family and includes caroling, hot beverages and plenty of entertainment. As the sun sets and the beautiful New Mexican night falls, a switch is flipped and the entire plaza is filled with thousands of colorful, beautiful bulbs that will fill the night sky for many weeks to come. The other event I enjoy each holiday season is the Farolito Walk on Canyon Road. This is a holiday tradition with plenty of food and beverages for both the little ones and adults as well. Local artists always fill the air with bright, cheery holiday songs with many stores open to catch up on your last minute shopping! Featured on the cover is a new home furniture and accessory store called “The Collective”. The Collective is owned by Lisa Barker of Barker Realty. Her latest creation is filled with beautiful antiques, contemporary pieces, Native American weavings and many other unique treasures! JAMES KALLAS MADE HIS FIRST PIECE OF JEWELRY and sold it to a local store in Ohio when he was just 12 years old. It has been his passion ever since, and his profession for his whole adult life. His first store was in Florida, but after taking a trip to Santa Fe to visit a relative, Kallas decided to relocate. “I saw a need for jewelry repair at that time and decided to take advantage of the opportunity,” he says. “I admit that the climate also played a part in my decision to move here.” James Kallas Jewelers has been a fixture in Santa Fe since 1991 and is now a one-stop shop for just about everything jewelry related. HOW IT ALL BEGAN By Anya Sebastian

THE PRACTICE OF GIFTING IS APPARENTLY EVEN OLDER THAN HUMAN CIVILIZATION ITSELF. It seems to have been part of our DNA from the start, since researchers believe that even cavemen gave primitive presents like an animal tooth or an unusual rock, as a show of appreciation. With the invention of tools and as society evolved, gifts obviously became more sophisticated and gift giving is now an established part of life around the world. It would be tough to imagine birthdays without presents, and for that we apparently have to thank the civilization of ancient Greece, which is where the custom is thought to have originated. The Greeks at that time believed that evil spirits were in the habit of appearing on birthdays, so people would bring gifts to counteract their evil intent. They would also light candles and make a wish before blowing them out, thus sending their wishes to the gods for protection. Little did they know what a popular custom that would turn out to be in the future. The middle ages expanded the practice still further by giving valuable presents, like books or manuscripts, to those in charge, in the hope of receiving favors in return. On a more romantic note, suitors would compose love songs and try to win hearts and minds by serenading the object of their affections. Sewing strands of hair into the clothes of a loved one was another form of gifting at the time, but fortunately that one did not survive for very long. For Chinese New Year, the biggest celebration in China, lasting for about two weeks, presents are traditionally wrapped in red paper and money is put in red envelopes, because red is a symbol of wealth and prosperity. It is also important for any money to be given in even numbers, because those are the ones associated with good fortune for the coming year. The occasions and the reasons for giving gifts nowadays have become too numerous to mention: Christmas, Hanukkah, birthdays, engagements, weddings, graduations, Valentine’s Day, bar mitzvahs, baby showers, house warming, anniversaries, congratulations, thanks…the list goes on. Since the holidays are now approaching, thinking about what presents to buy is a challenge that will soon be demanding our full attention. In order to make that task both easier and more enjoyable, the following pages contain a selection of special gift items that are certain to bring pleasure to anyone lucky enough to receive them. THINGS FINER IS MORE OF AN EXPERIENCE than a retail store. Occupying two modest spaces inside La Fonda hotel on the Plaza in Santa Fe, this locally owned business offers an extraordinary selection of eclectically curated items from all over the world. Its appeal is irresistible, first drawing you in, and then making it almost impossible for you to leave. The formula clearly works, because the business has been in the same location for over 40 years with the same owners, Robert and Elizabeth Pettus. Robert, a Texan, spent his early years working on both coasts, representing estates and private clients. “He got tired of traveling all the time, and wanted a place to hang his hat,” says Elizabeth. “ He had fallen in love with the beauty and climate of Santa Fe, so he decided to move here and opened the first store in the late 1970s.” A New England native, Elizabeth was living and working in Denver at the time, but as it happened, her parents lived in Santa Fe and they and Robert ultimately connected and became friends. “So that’s how we met,” she says, “and after we were married I joined him in the store. Before that I was working in the world of investments and municipal bonds. To me, this is infinitely more fun.” The original store specialized in jewelry, estate silver, and fine arts which are still a main focus. Styles vary from antique to contemporary, with a wide range of prices reflecting their materials, rarity, and design. ‘We buy every day, with the help of our graduate gemologist, decades of expertise, and a practiced eye,” explains Elizabeth “People bring us items they have inherited and don’t need, or sometimes their tastes have just changed, but good design always works and a quality piece will appeal to someone else instead. We have many repeat customers so we get to know what they like and let them know when something comes in that might suit them. We frequently sell to several generations of the same family.” Other pieces come from international exhibitions, or from associates on both coasts who keep an eye out for items of interest.

Things Finer also carries a varied collection of gift items, such as beautiful feather bow ties from South Carolina, stunning bags from Italy that transform into different shapes, adorable limited edition stuffed animals made in the UK for adults and children, and fine Native American and Mexican pieces. There is always a sale section in each store and Things Finer also does appraisals. The second store is a treasure trove of eclectic and unusual gifts of all types, prices, and tastes. Here you will find fountain pens from Italy, Rigaud scented candles from Paris, Coreterno candles from Rome, Steampunk artistry and niche perfumes from all over the world. Add to that Italian luxury scarves, artisanal soaps, fine stationery, cards, hand painted Santos, European design elements, antiques and more, for a thoroughly bewitching selection. In a word, there is something for everyone, whatever their inclination, budget or taste. The display windows change to reflect local events, or to celebrate the seasons, and the eye-catching accessories and ornaments that form the displays are always popular. “We love our locations,” says Elizabeth. “It’s like a family and La Fonda is where everything happens. It couldn’t be better.”

DON’T LET FREEZING TEMPERATURES GET YOU DOWN! Anya Sebastian

IT WON’T BE LONG BEFORE WINTER WINDS and freezing temperatures become part of our everyday lives once again. The instinct to hunker down in front of a warm fire, eat comfort foods and take hot baths might feel good, but we tend to forget that winter weather can wreak havoc with our skin. The good news is there are things we can do, not only to avoid the worst, but to keep our skin looking its best all winter long. Here are some tried-and-true suggestions for keeping skin healthy and happy throughout the harsh winter months ahead.

HYDRATE Your skin is 64% water, so it’s important to stay hydrated from the inside out. People tend to stop carrying water bottles around with them in the winter, because lattes and hot cocoa are now more appealing. Try adding hot lemon and honey, or herbal teas to your daily routine instead. It really will make a difference.

INVEST IN A HUMIDIFIER Cranking up the heat is drying, so adding a humidifier to the rooms you spend most time in, including the bedroom, will help to moisten the air and keep your skin hydrated.

DON’T FORGET THE SUNSCREEN! Sunburn is not restricted to summertime, because UV rays can penetrate winter clouds as well. Skiers and snowboarders are especially vulnerable, because they are exposed to the sun’s rays directly from above and indirectly from below, because the rays rebound off the snow. And of course, UV exposure increases with higher altitudes, so a good sunscreen is essential, even if you don’t hit the slopes.

AVOID LONG, HOT SHOWERS AND BATHS When it’s cold outside, relaxing in a hot, steamy bath or hot shower may be hard to resist. Sadly, even if it feels good, it is not a good idea, because not only does hot water dehydrate you, it also strips your body of essential oils. Your skin will thank you for keeping those showers and bubble baths cooler and shorter.

PAMPER YOUR COMPLEXION WITH NATURAL OILS AND CBD Natural, oil-based cosmetics, with no artificial preservatives, are readily absorbed, keeping skin healthy and moist. GOOD NEWS TRAVELS FAST and the innovative skin care line created by Dr. Kristina Trujillo and her sister-in-law, Katie Uilk, has plenty of it to go around. These are not your typical cosmetic products by any means and the company’s rapid growth is proof of how much consumers appreciate their quality, uniqueness and effectiveness. There are currently five items in the K&K collection and none of them contain any artificial additives or preservatives. “Our products are oil-based, not water-based, like most products out there,” explains Katie, “and water has a limited shelf life, so it requires an artificial preservative. While those preservatives can

extend the life of the product they can also cause the skin to age faster, which defeats the entire purpose to begin with!” K&K uses Vitamin E instead, which not only keeps things stable, but is also very beneficial for the skin. CUT Diamond cutting is a highly skilled and precise art, which determines how the stone’s many facets interact with light and consequently how brightly it sparkles. Look for a diamond with the most brilliant sparkle for its size. CLARITY This is defined by how many small imperfections there are on the surface or within the diamond itself. In most cases, since they cannot be seen with the naked eye, they do not detract from the beauty of the gem, but those with fewer flaws will attract a higher price tag.

It is slower to tarnish and more resistant to scratching or corrosion, because the other metals make it harder and more durable. The most important thing to remember when purchasing an engagement ring is that it will be a part of your life for a very long time, so choose carefully. Once you have decided and the purchase has been completed, it would be advisable to get the ring insured. That way, you will have one less thing to worry about as you move on to making plans for the next chapter of your life together.

ARASELY RIOS, OWNER OF SERAPHYM INC., started making rosaries when she was 8 years old and has been making them ever since. She would give them out to family and friends and even make them during long flights, giving them to the airline attendants on arrival at her destination. Over the years, what began as a hobby turned into a passion; her designs became increasingly more elaborate, word spread and her popularity grew, until one day someone bought nine of her rosaries. That was the motivation she needed to start her own business. “I was reading a book about saints and angels at the time,” she recalls, “and I was on the chapter about the Seraphim, the highest-ranking order of angels in heaven. The idea, together with the name, really resonated with me. It almost

felt like a calling.” So Arasely transitioned out of the corporate world she had been a part of for over 20 years and left California to start a new life. “I had visited Santa Fe on several occasions and really loved it,” she says, “and since it means Holy Faith, what better place to open a gallery devoted to the sacred arts?” That love was clearly returned, because within two months of arriving here, Seraphym opened on Canyon Road. Business was brisk, but seasonal, and when she heard about a space becoming available at the Inn at Loretto, she leapt at the opportunity. “This location is great, because the hotel is busy year-round,” she says, “and I get to meet people from all over the world. I also have a following from my time on Canyon Road and I’m always making new connections” This unique store now offers much more than beautiful, signature, hand-crafted rosaries and sacred jewelry. Here you will discover a collection of things you will not find anywhere else: icons, paintings, jewelry, nichos, fonts, retablos, sacred artefacts, prayer candles and, of course, angels... lots of them. There are also works by local artists, which is something Arasely is anxious to build on. “There are so many talented artists here and I really want to support them in every way I can,” she says. “I am looking forward

to hosting art openings with featured artists and holding special events before too long.” The response has been very gratifying. “There is so much sacred history here and the store seems to attract all kinds of faiths, as well as people with no faith at all, who are just attracted to beautiful things and the peaceful surroundings,” says Arasely. “And people frequently feel inspired to share stories and tell me about their spiritual journey. It feels good to draw that kind of energy.” Rosaries are still one of her best-sellers, but the boutique clearly appeals to everyone who appreciates beauty and sacredness. “ Seraphym represents more than just another piece of jewelry or painting,” she says. “These are sacred items that will offer a lifetime of blessings. I pray over all my designs before they hit the selling floor, because I truly want these blessings to enrich and enhance the lives of my customers. It’s almost as though they bring heaven a little closer to earth.”

HANNAH’S WAR RIVETING SPY THRILLER IS SET IN WWII LOS ALAMOS PARIS HAS BEEN LIBERATED. In Los Alamos, NM, scientists overseen by Dr. Robert Oppenheimer are secretly building the gadget, among them the self-determined Austrian Jewish physicist Dr. Hannah Weiss. It’s 1945. The Germans are also developing atomic weapons. Somebody seems to be sending them data from Los Alamos. Major Jack Delaney has three days to catch the possible spy. Espionage thriller Hannah’s War, a novel written by director-screenwriter Jan Eliasberg, was inspired by the real-life Dr. Lise Meitner, a female Austrian Jewish physicist who experimented with fission for the Germans, then later had to flee for her life to the Netherlands when the Nazis annexed Austria. In Los Alamos, Jack zeroes in on Hannah as his potential suspect. While telling each other a combustible mix of truths and lies, the two plunge into a seductive relationship, revealing more about themselves than either intends. Jack recalls, “There was this girl...” and Hannah responds, “I knew there’d be a girl,” adding, “Every good story begins with a girl.” On a trip to Santa Fe, she observes, “You never answer a question just because it’s asked. Neither of us do.” He offers, “I don’t want every man who says he loves you to be a liar.” Love. Lies. Chain reactions. Betrayal. The laws of physics. Inscrutable messages on postcards. References to Goethe’s Faust. A jeweled hair ornament from the past that Hannah prizes inordinately. Eliasberg has written a haunting, Casablanca-ish novel spotlighting two highly developed characters caught in a gripping web involving the lasting effects of loyalty, treason, escape, and pursuit during a time when nobody knows who to trust. The stakes couldn’t be higher here during the waning days of World War II, as the cat-and-mouse rapport between Jack and Hannah intensifies.

Rediscovering Gin ENJOYING AN ENTHUSIASTIC RESURGENCE IN MODERN COCKTAIL CULTURE, gin finds its origins in the Netherlands and was touted as a 16th century cure for cowardice and stomach ailments. English soldiers, who provided support in Antwerp against the Spanish in 1585 during the Eighty Years’ War, were already drinking ‘genever’ for its calming effects before battle from which the term ´Dutch Courage´ is believed to have originated. The Spanish brought the distilling method back to their home country and gin became the spirit of choice in both Spain and Italy. Today, in the bars of Madrid, Barcelona, Milan and Florence, one typically begins a meal with a “Gin Tonico”. Arguably the broadest and most dynamic category of spirits in terms of flavor profiles and production styles, gin is a distilled grain spirit that derives its primary flavor from juniper berries and secondary flavors from a dazzling array of spices, herbs, fruits and botanicals. It is both produced and enjoyed all over the world. While most people think of gin as a quintessentially English drink, the libation has moved on from there. Some of this author’s favorite gins hail from Spain (The Alkkemist, Vanagandar); Scotland (Hendricks, The Botanist); Ireland (Drumshanbo); Germany (Monkey 47); Italy ( Bacur, Malfy); and Japan ( Ki No

Bi, Roku, Komasa). All of these gins have distinctive flavor profiles and utilize local botanicals. There are many ways to enjoy gin, but the two primary drinks are a Gin & Tonic or a Martini. When making a gin and tonic make sure you use a lighter tonic water. Fever Tree Tonic is in this author’s opinion the best and comes in a multitude of flavors. But, of course, the Martini is the ultimate libation when it comes to gin. Everyone has their favorite. Here’s mine. 2 oz. Monkey 47 gin

The Vespa 1 oz. Kettle One Vodka

Splash of Cocchi Americano Vermouth

Chill a martini glass. Once chilled add Cocchi Americano Vermouth and swirl around in glass to coat it. Pour out excess. Add gin and vodka in a shaker with ice and give it a vigorous hard shake. Pour into martini glass straight up and add a very thin peel of lemon. The gin and vodka should be so cold that there is a thin film of ice on top. Do yourself a favor and start experimenting with gins. They have come a long way from the days of bathtub gin!

A Different Way to Celebrate the Holidays By Anya Sebastian

THE HOLIDAY SEASON IS CELEBRATED ALL OVER THE WORLD for a variety of different reasons and in a number of different ways. One thing they all have in common, however— whether it’s Thanksgiving, Christmas, Hanukkah, Kwanzaa, New Year…fill in the blank, is food. Traditional dishes play a central role in all festivities, and can vary enormously from country to country, even among those celebrating the same holiday. A turkey dinner, with stuffing, mashed potatoes and gravy, followed by pumpkin or apple pie, is one way to do it, but there are many others, far too numerous to mention here. These are just a few examples to broaden your festive culinary horizons. No British Christmas is complete without Christmas pudding. A tradition dating back to the 16th century, it is a dark, dense sponge, filled with a mixture of dried fruit, candied peel and spices, which is steamed, then doused in brandy and set alight before serving. A silver coin is often baked into it, a token of good luck for the coming year for whoever finds it. The Bûche de Noël is the French version of a Yule log. It commemorates a custom dating back to the middle ages, when a log, typically from a fruit tree, was added to the fireplace to ensure a successful harvest. A rolled-up sponge filled with

butter cream and decorated to look like a log, it is now a standard holiday dessert. Christmas dinner in Germany typically consists of roast goose or duck, with dumplings and red cabbage. Glühwein (mulled wine) is also popular, with lebkuchen or stollen for dessert. Lebkuchen is a gingerbread style, spiced cookie, and stollen is a festive, sweet bread with dried fruits, sprinkled with powdered sugar. Potato cakes, or latkes, fried until brown and crispy, are traditionally eaten in Israel during Hanukkah. This is the Jewish festival that commemorates a time when enough oil to last for one day in the temple miraculously lasted for eight. Traditional hallacas, similar to Mexican tamales, are served around the holidays in Venezuela. Families gather together to prepare large batches of savory meat stews, stuffed inside cornmeal dough steamed in plantain leaves. A salad of diced carrots, potatoes and mayonnaise is a typical accompaniment. These are, of course, just a fraction of what’s out there, and variations on standard fare, whether cultural, personal, or family traditions, are always an option as well. So if you feel inspired to stray from the conventional—a dash of green and red chile somewhere in the mix perhaps?—then go for it. And happy holidays!


Chef ’sHoliday Traditions Originally from Mexico City, chef Fernando Olea still celebrates the holidays with a dish that he grew up with, called bacalao. “It’s a well-known tradition in Mexico, typically eaten between Christmas and New Year,” he says. “It basically consists of dry, salted cod, which is left to soak in water overnight to rehydrate it. Then it’s boiled, shredded and left to cook for hours, even days, with plenty of olive oil, garlic, onions, tomatoes, olives, capers and lots of spice. I think it gets better every day, but it does have a very different flavor from fresh cod. I guess you could say it’s an acquired taste. I love it, but no-one else in my family does. They’re all American and they want fish to taste like fish, so I basically just make it for myself.”

CHEF'S HOLIDAY TRADITIONS “I work most of the time during the holidays,” says chef Joseph Wrede. ”We’re open for Thanksgiving and Christmas eve, so I’m not able to join the walk down Canyon Road, light farolitos, or even light a fire and wrap presents. But we’re closed on Christmas day, because I think it’s really important to let the staff be with their kids and families that day. It’s important to me, too, and I guess you could say that being able to open presents on Christmas Day is definitely something I value and look forward to. It’s also a day when I don’t cook. I do get consulted, but having food brought to the table and being able to enjoy a meal I didn’t actually prepare is another welcome feature of the holidays for me.”

CHEF'S HOLIDAY TRADITIONS My favorite family holiday is around Christmas time. I remember to be 10 years old and see everybody in my family be together and start cooking for Christmas day. A crazy amount of dishes had been prepared. So many appetizers. Between fish, meat, marinated vegetables, different bruschetta, and one of my favorite, the vitello tonnato. And after all that appetizer, we have four different primi. Always the tortellini in brodo, the salmon ravioli, the risotto with shrimp, and elk pappardelle. All the smells and amazing aroma in the kitchen influence me to decide to become a chef. And its not over. Now its time for secondi. The roasted veal, stuffed with Italian sauce and herbs, the porchetta, cacciucco, and the cotechino served with green lentils. For the grand finale, walnuts cake, pandoro, panettone, served with a zabaglione sauce. Coffee, amaro, and my family’s homemade wine. I have so many great memories and I remember so many smiles and red cheeks with the outside snowing and the fireplace going. Chef's Holiday Traditions Eduardo Rodriguez, the chef/owner of Zacatlán, had never eaten turkey before he came to the United States. "I made tamales with the leftovers," he says with a smile. He goes on to explain that Christmas in Mexico focuses mainly on the nativity, with neighbors gathering around colorful Christmas trees to sing songs and exchange presents. "There isn't a traditional Christmas dinner, like we have here in the US," he says. "We eat posole, menudo, tamales with different fillings... Bûnuelos (sweet, crispy tortillas) are a popular dessert." Zacatlán is open for Thanksgiving, Christmas and New Year, but only the Thanksgiving menu includes turkey. "That's a pretty traditional dish," says Rodriguez. "It even includes sweet potatoes with marshmallows. I used to make the stuffing with chorizo, but Eric de Stefano liked to use Italian sausage, so now that's what I use, too."

SANTA FE’S TOP-RATED SAZÓN HAS BEEN RACKING UP THE ACCOLADES since it opened in 2015. It’s the number one restaurant in the city, as ranked by TripAdvisor. And now, it’s earned the number four spot in the country on TripAdvisor’s 2021 Travelers Choice Awards for fine dining. “It’s a real honor,” says Lawrence Becerra, who together with his wife Suzanna and Executive Chef Fernando Olea, own the restaurant. “We were pretty surprised, but thrilled, when we heard the news,” he adds. At Sazón, it’s all about the dining experience. “The holy trinity of fine dining is great food, great service and great ambiance,” explains Becerra. “People go to Sazón to be entertained, not just to eat.” Patrons agree. One wrote: “Sazón is over the top from the minute you walk in the door and are greeted with smiling friendly faces, to the personal visit from the chef to your table. Then the food… Wow! Truly unique and interesting choices, super fresh and very tasty. A must-go.”

Another raved: “The Degustación menu at Sazón is one of the best tasting menus we’ve ever experienced, compared to other restaurants in San Francisco to Boston and even abroad. Chef Olea perfectly balances tradition and innovation in every dish, the waiter serving our table was thoroughly knowledgeable about what we were eating and drinking, while the restaurant décor was classically hip yet neither fussy nor pretentious.” At centerstage is Sazón’s menu, which emphasizes traditional Mexican cuisine with that special pizzaz that Chef Olea brings to each of his dishes. The word “sazón” means “seasoning” and according to Becerra, the Chef is incredibly adept at using chili. He says, “Chili is supposed to have a warming sensation when appropriately used; it’s not meant to destroy your mouth.” The restaurant’s offerings include such creative appetizers as foie gras over creamy coconut raspberry sauce with caramelized blackberries. Becerra comments, “If you like foie gras, you’ll love this preparation.” Entrees feature dishes like salmon in filo dough, shrimp enchiladas in a creamy sauce of zucchini blossoms and pan seared crusted

pepper black angus beef with spinach sauce, cooked to perfection with a hint of chili. The latter is a beloved staple at Sazón. Desserts also shine. New to the menu is the Princesa, a light and delicious meld of fresh berries served in Natilla sauce over layers of crispy pastry. Then there’s the widely popular Degustación tasting menu, a feast of nine courses, serving as a showcase for the chef’s extraordinary culinary talent. At Sazón, you can be assured of polished service and gracious hospitality. Chef Olea makes the rounds in the evening, chatting to patrons and hearing their thoughts about the food. And you’ll dine in a beautiful adobe style building, surrounded by Mexican artwork from part of the Becerra’s private collection.

YOU’LL FEEL LIKE YOU’VE BEEN TRANSPORTED TO ITALY upon entering Sassella. The highly-rated Santa Fe restaurant is located in an historic building next door to the Georgia O’Keeffe Museum. It’s clear that efforts were made to maintain the integrity of the structure with the original bricks and rustic beams preserved to reflect its roots. But, make no mistake, the restaurant’s ambiance de Italia takes centerstage, Venetian masks and all. Sassella, which opened in 2019, is a partnership between Lawrence Becerra, his wife Suzanna, and Executive Chef Cristian Pontiggia. The place has received glowing accolades and is currently ranked number two in Santa Fe by TripAdvisor, and recently made it in the top ten percent of restaurants in the world. “We’re very proud of the success of Sassella,” says Becerra, “and we’re blown away by all the great reviews.” Chef Pontiggia was named 2021 Chef of the Year by the New Mexico chapter of the Culinary Federation. It’s a distinguished achievement, but comes as no surprise to Becerra. “He’s an extraordinarily accomplished chef,” says Becerra. “And he’s the real deal. Becerra explains that Sassella is named for a tiny hamlet in northern Italy, on the border of Switzerland, near where Chef Pontiggia grew up. The place is known for its vineyards and its wines made from Nebbiola grapes. The Chef takes recipes from all over Italy and puts his own spin on traditional dishes. The menu is a foodie’s delight, with such entrees as Cannolicchi Pasta with Wild Colossal shrimp; Veal Chop Milanese; White Seabass over Lemon Butter Fregola Pasta; and Waygu Tenderloin with Foie Gras. Then there’s the widely popular Lobster Risotto, a Chef specialty. Come fall/winter, a ravioli with buckwheat pasta will be added to the seasonal offerings. Becerra describes it as akin to an Italian style peasant dish. You’ll need to save room for dessert, as the offerings are swoon worthy, like Expresso Crème Brulé, Cannoli with Lemon Mousse, or one of the special Italian liqueur floats with house made gelato. Wine is an equal partner to the sumptuous food at Sassella, and as you might expect, the selection from Italy is extensive. Becerra comments, “We love to introduce diners to wines they’ve likely never tasted before. The Rainoldo wines from Valtellina, for example, have been very well received. People are wowed by them. And they’re surprisingly more modestly priced, too.” Becerra notes a few standouts, including the elegant Rainoldi Brut Rose, a fresh and crisp Vino Spumenate Qualita Metodo and the rich and intense Rainoldi Fruttaio Ca Rizzieri. JOSEPH WREDE, THE CHEF/OWNER OF JOSEPH’S CULINARY PUB, could not be happier when the temperature drops, the days get shorter and frost and snow cover the ground, “I’m really hoping for a full-on winter this year,” he declares, “because the harsher the weather, the more we can embrace the season and the easier it is for the chef. Hearty, comforting dishes like stews, chile, game, cassoulets, remind people of warmth and safety and take them to a place where they forget to be concerned about what’s going on in the world.” The restaurant itself is warm, welcoming and well-lit and the patio will remain open throughout the winter as well. “There will be heat lamps, of course,” says Wrede, “and lots of festive lights. The idea is to create a casual atmosphere where people can relax and enjoy themselves. That’s definitely something that’s been missing for a while now.” The menu reflects the seasons and can change spontaneously. Grilled pizza, with very thin crust, is a popular new addition, together with rabbit lasagne with bolognaise sauce. Seafood dishes, including fresh oysters and caviar, feature prominently from Thanksgiving to the end of the year and Wrede’s pad thai dish, created during the lockdown, has been such a big hit that it is now a regular menu item. As for Thanksgiving dinner itself, preparations begin 72 hours in advance. “I’ve been doing this for 25 years now,” says Wrede. “Our way of doing it involves several different stages and it takes time. It’s not as though you just stuff the bird and put it in the oven.” Turkeys are always organic and locally sourced and on this occasion the dish does not stray from the traditional. “I’m glad we’re closed for Christmas,” he admits, “because preparing that meal just once a year makes it special and it’s something we all look forward to.”

A traditional turkey dinner is just one of the choices on Joseph’s Thanksgiving menu. Included among the regular items are ‘specials’ like venison and lamb shanks and, for those who are not meat-eaters, there are vegetarian specialties as well. Wrede has always been drawn to exploring and expanding the potential of vegetables, which are a regular feature of his menu year-round. “If you think they can only be cooked one way, then you’re very limited in what you can do,” he explains. “There are in fact many variations—vegetables can be roasted, burnt, caramelized— resulting in differences in texture and taste. If you burn the outside, for instance, that draws out the sweetness”

recent changes have made them much more affordable. Being able to add spirits would be a bonus, for sure.” The holiday season is definitely not business as usual for this restaurant. As Wrede explains it, “We take food pretty seriously during that time, and the festive dishes and change of pace make us feel excited and get us into a celebratory mood. A home cook has to behave more like a professional—preparing food for more than a few people—just two or three times a year. Our challenge is to make it an awesome experience for many people all the time.”

Joseph’s Culinary Pub currently offers beer and wine, but Wrede has his sights set on acquiring a liquor license as well. “It’s something that has always been on my mind,” he says, “and

ZACATLÁN Creating New Culinary Frontiers Anya Sebastian

EDUARDO RODRIGUEZ WAS A TEENAGER WHEN HE CAME TO THE UNITED STATES in 1994 to visit his brothers, both of whom were working at the Coyote Cafe in Santa Fe. “Mark Kiffin was the executive chef,” he recalls, “and when I saw him in his chef’s white coat, something in me snapped. I knew I wanted to open my own restaurant one day and wear one of those white coats.” His dream finally came true in 2020, with the opening of Zacatlán in downtown Santa Fe. Growing up on his grandparents’ farm in the small Mexican town of Zacatecas, Rodriguez’ interest in food was inspired by his mother and grandmother. He was always out in the fields, learning the basics of farming and discovering which plants and

herbs to use for cooking and making teas. “I already had a green card and I wanted to learn as much as I could about the restaurant world I wanted to be a part of,” he says, “so I asked my brothers if they could find me a job—any job—at Coyote Cafe.” He started out washing dishes and prepping, and when his brothers moved on to the well-established Geronimo restaurant, he went with them and soon started to make his way up the line. His enthusiasm attracted the attention of award-winning chef Eric de Stefano when he arrived at Geronimo and he took Rodriguez under his wing, effectively becoming his mentor. After years spent teaching him everything he needed to know, including how to make risottos and pasta from scratch. Rodriguez became de Stefano’s sous-chef.

The partnership flourished and when his mentor decided to buy Coyote Cafe, Rodriguez went back there with him. He continued working with de Stefano for the next 13 years, until the celebrated chef tragically died in 2016. The restaurant’s new owner really wanted Rodriguez as his executive chef, but now he was restless. He did, however, agree to stay on for a couple of years, in order to get things up and running, before moving on. Things did not go as planned, however, because the pandemic hit and Rodriguez was suddenly out of a job. “I couldn’t just sit at home,” he says, “I had to do something and when I heard about the space on Aztec Street I decided to take the risk and go out on my own.” Zacatlán opened in July 2020 and not only has it survived, it has also succeeded in becoming a noteworthy addition to the culinary scene. It was recently named by USA Today as one of the top 10 best new restaurants in the country—quite an achievement for a newcomer breaking ground in the middle of a pandemic.

But this is not your typical Mexican restaurant—far from it. Rodriguez learned his craft from masters of fine dining (he also worked with Mark Kiffin at the Compound and David Sellers at Santacafe) and that is clearly apparent from the menu. Most of the dishes are his own, original creations, combining classical fare with a Mexican and/or southwestern twist. Where else would you find pork belly with red jalapeno chutney and mole rosa? Or duck breast with Hatch green chile risotto? The menu changes every couple of months and features local and organic ingredients as much as possible. There is also a comprehensive wine list and a good selection of beers. The restaurant is small, but with the addition of a covered patio, can seat up to 65 people. Zacatlán is very much a family affair, with Rodriguez’ son, Alexis, and daughter, Sabrina, being an active part of the team, together with his sister, Diana. As for Rodriguez himself, he is of course the one wearing the chef’s white coat.

That ’s the Spirit! THE RISE OF SANTA FE’S PREMIER DISTILLERY by Anya Sebastian

WHEN COLIN KEGAN STARTED OUT AS AN ARCHITECT in England, nothing was further from his mind than owning a distillery in Santa Fe. But fate works in mysterious ways and when the economy suddenly collapsed and with it the demand for architects, being young and carefree he decided to head to the Caribbean to chill and spend time as a beach bum. There he met his future wife, Suzette, whose parents just happened to have grown up in Santa Fe and still had a holiday home there. The two of them came to visit and, as so often happens, they decided to stay, moving here permanently in 1992. Fast forward a few years to 1999, when fate handed them the next decisive step in this unexpected wild ride. A homeowner in Tesuque was looking to remodel his house and hired Colin, who was once again working as an architect, to draw up some plans. When the final project turned out to be more than he could handle, he decided to sell the place instead and Colin and Suzette ended up buying it. That is the house they still live in to this day. It just so happened that the house came with a very large apple orchard, one that produced so many apples that they had no idea what to do with them. “We had 500 gallons of apples every year,” recalls Colin. “Making apple juice was a start, and from there it turned into hard cider, but the place was still crammed full of apples. Then

a friend suggested making apple brandy, and that was a gamechanger, because instead of 500 gallons, we ended up with 50.” Then the economy tanked, but this time Colin had a plan. He acquired a distilling license, bought a building and a still, and... well, the rest is history. Santa Fe Spirits has become firmly established as the southwest’s premier artisan distillery, producing a range of products that, in addition to apple brandy, now includes whiskey, gin and vodka, all widely recognized for their superior quality and distinctive New Mexico flavor, being crafted from locally sourced ingredients. They can be found in local restaurants and NM liquor stores and are currently sold in eleven other states as well. Their craft whiskeys, in particular, have won several gold and silver awards from prestigious organizations like the American Craft Spirits Association and the American Distilling Institute and are increasingly in demand in Germany, Australia and Japan. Santa Fe Spirits has a cozy, informal downtown tasting room in addition to the distillery on the south side of town. Currently open from 3-10pm, Tuesday thru’ Saturday, the tasting room on Read Street has become a popular place to gather for a cocktail before dinner, or a movie. Nine individual, ready-to-drink classic cocktails are also available to take home, including Negroni, Manhattan and a special pinon Manhattan, called Nut Job. That one was created by the tasting room manager, Weston Simons, a certified spirits professional, currently working on his certification as a master of mixology. Weston also shares his expertise by offering online and in person mixology classes, which, for a group of at least eight people, can be held in private homes as well. If you are interested in taking a look behind the scenes, tours of the distillery are available on an ongoing basis, on Thursdays, Fridays and Saturdays. Seasonality no more: historically we saw a slow down in inventory and sales through late fall and the winter. In 2020/21 we experienced no appreciable slow down in demand, which squeezed our market even thinner heading into spring, where buyers were hoping for a fresh wave of listings to enter the market. While we’re beginning to see some signs of normalization, the summer continues at a ravenous pace keeping pressure on wonton buyers and providing leverage to potential sellers.

MARKET FORCES AT WORK

T

he past year saw explosive demand in our residential market, unlike anything we have seen before. Inventory continued to be absorbed at a record pace while sales continued to climb, naturally pushing prices upwards. The lack of new homes coming to market also started influencing other areas of the market that we take a look at here.

After a decade of relatively little activity, land sales have jumped. We are seeing a well-balanced market where for sale/sold/under contract numbers are in agreement, while prices have remained healthy. Land sales have only been tempered by the cost of construction driven by competition and bottlenecks on the supply-side of materials. Here we see lumber prices peaked during the catch-up phase and subsequently now settling again. isa Barker does not do anything unless it’s big. When a change of plan left her with a large collection of furniture she was at a loss to know what to do with and her husband, David Barker, suggested half-jokingly that she open a store, she spontaneously ventured into retail by opening a 10,000 square ft. showroom in the Santa Fe Railyard. “If I’m going to do something, it has to be over the top,” she admits.

The fact that Lisa has a compulsion for acquiring things she finds beautiful is something she freely owns up to. “It’s truly an addiction,” she says simply. Having a store gives me a rationale and a purpose for continuing to collect. In retrospect, I wish I had done it years ago.”

TAKE A HIKE THROUGH THE RAINFOREST

OFTEN REFERRED TO AS “THREE PARKS IN ONE,” OLYMPIC NATIONAL PARK BOASTS THREE DIFFERENT ECOSYSTEMS: glacier-capped peaks, old-growth and temperate rain forests and wild Pacific coastline. Much of the park’s interior is accessible only by trail, but there are several scenic drives that lead to key destinations. On the southwest end is the Quinault Valley, known as the “Valley of the Giants.” It’s home to the largest Sitka Spruce tree in the world. Within the valley is the Quinault Rain Forest, which receives an average of twelve feet of rain annually. Hiking is plentiful in this area and dripping, moss-draped maples create a primordial scene. Keep your eye out for the Roosevelt Elk, as hundreds of these creatures make their home here.

RUBY BEACH

If you’re unable to stay at historic Lake Quinault Lodge, stop in for a peek or rent one of their boats to take out on the majestic lake. For a different environment, head along the coast to Kalaloch Lodge. The property is perched on a bluff above the ocean, where you’ll go to sleep at night to the sound of the waves. From Kalaloch, head to the Hoh Rainforest, but first stop at Ruby Beach for the sea stacks. Known as “ghosts of former islands,” these mammoth rocks are remnants of eroded cliffs. At the Hoh, take the Hall of Mosses path into the older part of the forest, where the primeval spirit is strong. Hike the Hoh River Trail for more of this verdant paradise. The Hoh is one of the wettest places in the country, so you’re probably get some liquid sunshine. Even if the rain gods are absent, it’s always misty, which enhances the mysterious quality of the setting.

HISTORIC LAKE QUINAULT LODGE places. This clarity is responsible for its stunning blue-green color. Lake Crescent Lodge makes an ideal base in this section of the park, while experiencing the charm of a turn-of-the-century resort.

Journey to Sol Duc and hike to the Sol Duc Falls overlook, climb to Mink Lake or do Lover’s Lane Loop. Then soak your tired muscles in the soothing mineral pools at Sol Duc Hot Springs Resort.

Continue to mile-high Hurricane Ridge via a winding road. At the top, take in the dramatic views of jagged mountains and wilderness.

Another scenic spot is Lake Crescent. The waters of this glaciallycarved lake are so clear you can see as far down as sixty feet in

There’s much to experience within Olympic National Park. Like fine chocolate, it’s best savored in small pieces.
