ewelry might best be described as personal adornment. Whether it’s a ring, necklace, bracelet or earrings, jewelry is often filled with memories, symbolism and sentiment. James Kallas of James Kallas Jewelers understands this intrinsically and strives to offer clients custom options, one-of-a-kind pieces and in-shop repairs.

When a client comes in looking for custom jewelry, James generally begins by sketching designs on paper. For instance, with an
JAMES KALLASJEWELERS Making Dreams come true
James’ breadth of workmanship underlies his depth of skill. “I started making jewelry when I was 12,” he relates. “Friends of my parents won a raffle on jewelry equipment, so I’d go into their basement and make jewelry. Over the years, I kept building on those first steps. I am mostly self-taught, but everyone along the way meets people who influence them. Even employees have influenced my work, and I am grateful for all my teachers.” James has worked in Santa Fe since 1991, and he opened James Kallas Jewelers in 1996.
At James Kallas Jewelers, there is something for everyone and, if you don’t see it, James can make it. His custom line of stackable rings is made from different colored metals, diamonds and gemstones, allowing wearers to change their style simply by rearranging the order of the rings. engagement ring, he starts with the shape of the stone. It could be a family stone, or it could be a stone that James has sourced from a host of dealers around the country. Sometimes clients bring in a photo of something they like, or they might model it off another piece of jewelry they admire, like their mother’s ring. Customers also get ideas from finished pieces on display in the store.
When embarking on the process of creating a custom design piece of jewelry, clients often are not able to envision the final product.
Stop by to browse the showroom, discuss your jewelry ideas with Kallas, or see him at work.
“By rendering a picture and making a wax model, we try to remove the unknown and give the client a more precise idea of what the final piece will look like,” explains James. Once the wax model is milled and approved by the client, the piece is cast in James’ onsite shop, which extends beyond the showroom. This makes James Kallas Jewelers the locals’ store for custom repairs. James and his team are also experts in restoring your heirloom pieces to their former glory.
I’ve gone to James Kallas Jewelers throughout the years for jewelry repair. Most recently, I went to have my wedding band re-sized. They were able to re-size a somewhat complicated band on short notice. Now, it’s all ready to go for my special day. Professional and friendly. 5 stars.
—Alex E. James Kallas is amazing. He helped me design a one of a kind engagement ring and it turned out beyond beautiful. He answered all my questions, provided me with an education on things I wasn’t thinking about initially, and just made me feel confident about going forward. He and his staff were incredibly patient with all my questions and concerns and every step was efficient. I just can’t think why you’d go anywhere
Fine Lifestyles SANTA FE & ALBUQUERQU E 15STYLE
After discerning what styles his client gravitates towards, James puts the ideas to computer aided design, which can then be rendered for preview by the client. This way, variances in metals and stones can easily be modified until the client is fully satisfied with the design.

Very satisfied with my ring if I could I would give you a 1000 star’s. James was professional and polite on top of that I was amazed with James honesty. when I picked up my ring today not only did he do an amazing job but he also gave me a piece of leftover gold from my ring WOW!!!!! not many jewelers do that now a days. Thank you James for the complimentary polishing of my others rings for free!!! definitely will come back. God bless your business!

The skin is, of course, the largest organ in the human body and there is fierce competition to have glowing, clearer, healthier, younger and fresher-looking skin. This focus can also cause problems with self-esteem and, in the case of visual disfigurement, even mental wellbeing as well. The Santa Fe Skin Institute is well prepared for both, since unlike most medical spas, its team is composed of certified and experienced dermatologists and cosmetic surgeons, as well as specially trained aestheticians. Their cutting-edge treatments, unique to them in New Mexico, can even produce results that rival surgical outcomes, and all treatment programs are specifically designed for each client’s individual needs.
natural ways to Take Care of Your Health
So if you have a health concern, internal or external, and would like to find an alternative to what Big Pharma has to offer, there are some highly effective, natural alternatives out there. Just make sure that you are dealing with genuine products and knowledgeable, well-trained and certified professionals, like the ones featured in these pages. The results could literally change the way you both look and feel.
Skin care is of course a multi-billion-dollar industry, and here, again, there is a growing interest in avoiding the chemicals, additives and preservatives typically found in most products. K&K’s skin care line, featured on the cover and in the following story, is a unique combination of nature and science, and contains none of the above. Normal, healthy skin plays many important roles in our health and should be taken care of on an ongoing basis. K& K’s locally made products are now being taken up by health care professionals and medical spas, as well as an impressive, and growing, number of dedicated individuals, both in New Mexico and beyond.
Hemp Apotheke, in Santa Fe, is now able to sell THC products as well as CBD, and its new ‘Love For Life Dispensary’ is primarily focused on marijuana’s ability to assist with healing. Research is still ongoing, but the list of proven medical benefits is already impressive, and includes reducing pain and inflammation, halting the spread of cancer cells, alleviating arthritis and slowing the spread of Alzheimer’s and glaucoma. There are a number of different ways to ingest it and a wide range of different strengths to work with. The dispensary even has gummies, specially crafted to deal with specific issues,

But this particular molecule had 6x more anti-oxidant and 10x more anti-inflammatory properties than resveratrol. The rest, as they say, is history. After first experimenting with family and friends and then with volunteers, the results left no doubt that they had stumbled upon something truly ground-breaking. “We worked on just one side of the face, in order to see if there was a difference,” explains Katie, “and after a couple of weeks people were insisting that we do the other side, too, because the difference was so noticeable.” Not long after that, in 2018, K&K Skin Products was born.
t had never occurred to sisters-in-law Katie Uilk and Dr. Kristina
Trujillo that they would one day work together. Katie had spent years experimenting with natural oils, blending different combinations and documenting the results; Dr Kristina was a science professor, specializing in biochemistry and molecular biology. But fate works in mysterious ways and it all came together one day when Dr. Kristina had the idea of combining Katie’s oil blends with a molecule discovered during her time as a researcher. The molecule was similar to resveratrol, an ingredient derived from red grapes and often found in high end anti-aging products.

We have been recommending Biover-X™ for every client that we do facial esthetic treatments on. We also started incorporating the cleanser and Biover-X™ with all of our facial procedures, as clients love how smooth their face feels afterwards. They are noticing less dryness, redness, and wrinkles.
THE BIOVER-X™ ANTIOXIDANT RENEWAL SYSTEM consists of the facial cleanser, BioVer-X™ serum, moisturizer and bamboo washcloth. Simply use the cleanser, remove with the washcloth and apply a few drops of BioVer-X™ to selected areas. Use the moisturizer in the morning. Ideal for all skin types, with results comparable to harsh and invasive treatments.
This is a brief summary of what they both contain and how to use them:

Standard wisdom states that it takes five years for a new company to be on a firm footing, in which case K&K is well ahead of the curve. Their products are now being taken up by aestheticians, acupuncturists, dermatologists and dentists, among others, and because of the demonstrably effective combination of nature and science, medical spas are being drawn in, too
These products can help maintain and support procedures such as antiaging laser therapy and chemical peels. They may even augment cosmetic procedures such as dermal filler and Botox treatments. Results can be seen in a visible reduction of fine lines, age spots and various forms of hyperpigmentation.
The company’s success, together with its exposure to a more sophisticated clientele, has resulted in a sleeker look for the products themselves. And in response to customer requests, the BioVer-X™ dropper bottle has now been replaced by a dispenser, in order to avoid the possibility of spillage in case of an accident.
The star item containing the molecule is BioVer-X™ (cosmetic patent pending) a serum that was soon making waves in the world of cosmetics. The other products in the line were unique too, being oil-based and pure, instead of water-based, without any chemicals, additives or preservatives. Word spread rapidly and demand soared.
The full line of products can be seen and ordered online and regular customers can take advantage of loyalty rewards as well. You are invited to come and join the revolution and see the results for yourself. You’ll be glad you did! Skin kkskinproducts.comProducts505.966.6725

“Using the products correctly is important,” says Dr Kristina, “and we have two special systems, to help people to get the best results. One is the Hydrating Repair Skin System, which works on fine lines, wrinkles and firming of skin tone. The other is the BioVer-X™ Antioxidant Renewal System, which reduces inflammation and oxidative stress and helps to heal damaged skin.”
I use Bio-Ver-X™ with every acupuncture facial. It tightens the skin and my clients love how it feels. I use it in conjunction with radiofrequency. I recommend it as a daily “must” for healthy and glowing skin. It rejuvenates the skin and smooths wrinkles.
THE HYDRATING REPAIR SKIN SYSTEM consists of an oil-based facial cleanser, repair wrinkle serum, moisturizer and a bamboo washcloth. The routine is simple, fast and effective, perfect for a busy lifestyle. Use the cleanser, remove with the wash cloth and apply a few drops of night repair serum in the evening; use the moisturizer in the morning. Suitable for all skin types.

Customer service has always been a top priority for Hemp Apotheke, and it will be the same for 'Love of Life Dispensary.'

emp Apotheke has every reason to celebrate right now. The successful, woman-owned, local CBD store, is four years old this year and it was again recognized, for the third time, in the Reporter's 'Best of Santa Fe' readers' choice awards. And now comes the exciting news that a companion company, 'Love for Life Dispensary,' has just been formed, which will add significantly to the range of opportunities available for assisting people with health concerns. The two companies share the same location, but occupy separate areas of the store, since the dispensary deals with marijuana/THC products and is therefore restricted to those 21 and over (18 with a medically approved card.)
"Expanding our CBD business to include THC, is a natural progression for us," explains owner Gyana Basse, "since both are derived from the cannabis plant and the two are often combined very effectively in the same product. It will provide us with even more ways to help people to improve the quality of their lives."

People come in to talk about their concerns, knowing they will get help, advice and guidance from knowledgeable, experienced and compassionate team members. "Our focus is on building relationships," says Gyana. "We want to get to know our customers, follow their progress and help them to reach their goals. Everyone is different, which is why it's important to understand the individual circumstances."
Hemp Apotheke has the biggest selection of top quality CBD products in Santa Fe, from tinctures and lotions, to smokables, edibles and even a skincare line. It also carries the complete range of Aromaland pure, terpene-rich essential oils. So whatever the issue, there is bound to be something that will be able to address it. And for more serious ailments, there is now THC as well.
t is a well-known fact that marijuana gets you high and gives you the 'munchies.' Less well known is the fact that it has been proven to have significant medical benefits as well. "That's why I wanted to open a dispensary," says Gyana Basse. "After working with CBD for several years and seeing how effective it was in helping people with health issues, I really wanted to expand the possibilities by adding THC into the mix."

It is important to note, however, that this is by no means a 'one size fits all' scenario. Marijuana comes in a variety of different strengths, from as little as 5% THC, to as much as 90%, which is why expert guidance is imperative when purchasing it in any form, including edibles. They go out of their way to make patients feel comfortable by answering questions, addressing concerns and explaining, in detail, all stages of the procedure they are about to go through and what they can expect. There is also a very efficient ‘after hours’ service, to handle any follow-up issues or emergencies that might arise. And people are even invited to write in with any suggestions they might have for improving their experience.

In other cases, the effects of cosmetic treatments may be ineffective, have side effects, or produce less than optimal results, because of untreated rosacea (causing excessive facial redness) or atopic dermatitis (leading to irritation and possible side effects.)

At Santa Fe Skin Institute, we routinely offer medical dermatology consultations, in order to ensure the best safety and cosmetic outcomes for our patients. This kind of thing happens all the time with cosmetic skin care, but the surprising thing is that it’s really simple to fix. For example, a medical dermatology consultation can find skin cancer, precancers, rosacea, acne, atopic dermatitis, and many other treatable conditions, that can be outright dangerous to ignore. A patient who recently came to our practice for cosmetic care, was found to have a facial melanoma. Fortunately, she is now doing well, but had this not been taken care of, it could potentially have been deadly.
The Scarlet is best for overall collagen stimulation, in order to slow the aging process.
Imagine investing time and resources into making everything just right, only to find that you have cracks in the foundation!
The result is enhanced skin integrity, replacing paper-thin, sagging, weak skin with healthier, firmer and more vibrant skin. Each Scarlet treatment is customized, not only for the individual patient, but also for each region of the face, or body area, being treated. Scarlet allows for the depth of the needles to be adjusted, together with the amount of energy being put out during the procedure.

Because Scarlet is using the skin’s own wound healing abilities to produce collagen that tightens the skin, results are gradual and take place over three to four months, which is about how often we do these procedures. The first few treatments slow the aging process and further treatments add collagen. With almost no downtime, you can return to your normal activities the very next day...just remember to wear a hat and use sunscreen!

Agnes is also a radiofrequency micro-needling device, but the energy is more intense and goes deeper than Scarlet. Agnes is truly a standout in its field, as there is currently no other device with comparable capabilities. We use Agnes to lift and sculpt the skin... if you can imagine a non-surgical incremental face lift. We use it on targeted areas: eye bags and jowls can be reduced; the lower face can be gently lifted and skin tightened.

Jewelry is, of course, art of a different kind, especially if it is hand-made to an original design, as is the case with LewAllen & LewAllen’s jewelry. This family business, started by Ross LewAllen, is now run by his daughter, Laura, who has both maintained her father’s legacy and expanded it to make it her own. The gallery specializes in jewelry that comes from the heart and many of the designs do, in fact, include hearts as a symbol. These are pieces to incorporate into your life, to feel a connection with, and to wear every day. The idea of family is very prominently on display in the store, with items not only for women, but for men, children and even pets as well.

Laura has brought a different and more lighthearted kind of magic into the mix. Her main focus is family, and her designs, whether whimsical, fanciful, or practical, are clearly heartfelt. aura LewAllen is part of an exceptionally accomplished, artistic family, whose name has become synonymous with contemporary art in Santa Fe. Her mother, Arlene LewAllen, was a teacher, painter and art dealer, who established her own gallery, LewAllen Contemporary, in the early 1990s. The name lives on, to this day.

Her father, Ross LewAllen, a jeweler, artist, world traveler and a shaman, invented the earcuff, right here in Santa Fe. Innovative and original, the idea caught on fast, and before long, earcuffs were being featured in Vogue magazine and sold in department stores around the country. They are now a familiar sight around the world.
Following in their footsteps is their daughter, Laura, who began working with her father in the late 1980s. Ross sadly passed away, several years ago now, but his spirit and his legacy live on, preserved and expanded, in the capable hands of his talented daughter.
LewAllen & LewAllen creates jewelry which is not only memorable, but meaningful as well. From the start, Ross’s work was inspired by his spirituality, his passions and his life lessons. Designed to promote healing and wellness, his designs include moving parts, images, and places to touch or push, in order to remind us of our own power.

The small store manages to display a wide range of jewelry, designed to cover every member of the family, young or old, human or animal. Made of climbing rope, in a variety of different colors, they are embellished with a combination of semi-precious stones and Laura’s unique sterling silver beads. Customers can build their own bracelets, either in the gallery, or online.
There are also necklaces, earrings, rings, pins, pendants, dog tags, key rings, and, of course, earcuffs. “We have many customers that span generations,” says Laura. “Three generations will sometimes come in, wearing ear cuffs or our original bracelets. Everything is made by hand in Laura’s small studio nearby, and her son, Takis, is now making jewelry, too. All pieces are either sterling silver or 14K gold, often including precious stones or gemstones, and if possible, things can be made to order as well. LewAllen & LewAllen really is a wonderful example of the ‘real Santa Fe.’ Owned by an established, local family, making unique pieces by hand, created by Laura and a few skilled craftsmen, this magical place has been drawing people from near and far for going on 50 years now. A best-selling novelist based in Colorado who’s been known to fly his small plane into Santa Fe Regional Airport, Heller is a virtuoso at lyrical wilderness thrillers that explore emotions and character within suspenseful plots. In The Guide it all comes together—nature, courage, corruption, and the struggle to find our true foothold in the world.
t a luxury fishing resort near Crested Butte, Colorado, in the very near future a fishing guide named Jack finds his life changed in a matter of days in this fabulous literary thriller. At first, the secluded natural paradise beckons to Jack, who’s shown to his cabin and notes, “The cabin was on the edge of a steep bank in the shadow of the pines, and a staggered rush rose from the creek below and was carried by the sift of wind in the trees.”

The boutique trout fishing is superb at Kingfisher Lodge, which is sequestered behind a heavy art gate. The virus pandemic that began three years before is still mutating in the outside world, although rarer here where the mega-rich gather. Jack just wants to get into his waders and boots. As a private guide, he’ll make $200 a day plus tips. His first client, Alison, is a famous singer trying to shake off her stardom. Sounds good. The lodge’s neighbor upstream is obsessed about his property boundaries; Jack’s warned about the gunshots. He also hears tell of ferocious mastiffs that mauled a fisherman who ventured where he shouldn’t have. “Fishing around here is high stakes,” surmises Jack on his first night. He has no idea. Soon, shots are ringing out, he’s hearing a closing door then a shriek in the night that’s more humansounding than barn owl, and a housekeeper is warning him about the gate code. As Jack and Alison grow closer, his hunches lead them toward a compound where life and death are negotiated in chilling terms.

THE ANTINORI WINERY
38 Fine Lifestyles SANTA FE & ALBUQUERQUE DINING DINING
While Antinori’s most notable and collectable wines are expensive, they are worth every penny. That being said, the estate produces a number of wines from different vineyards that are delicious and affordable, like his three Chianti Classicos: Peppoli, Marchesi Antinori, and Badia a Passignano.
Headquarters of the winery Antinori, Gualdo al Tasso in Bolgheri, Tuscany Italy.
Antinori’s imprimatur of excellence has expanded into many different regions; among them Bolgheri, that boasts the delicious Guado al Tasso; Montalcino, with its elegant Pian della Vigna Brunello, and even Napa Valley that produces Antica, a delicious Burgundian style Chardonnay.
notes from a local Lover
Three notable Super Tuscan wines come from the Antinori estate: Sassicaia, Tignanello and Solaia. The beginning of this wine revolution came in 1974 with the launch of the 1971 vintage of Tignanello, a barrique-aged wine from a vineyard bearing the same name and containing Cabernet Sauvignon and Cabernet Franc. Technically Tignanello was not the first ‘Super Tuscan’ – that honor belongs to Sassicaia, created by a relative of the Antinoris, the Marquis Mario Incisa della Rocchetta. But it was Tignanello that really shook up the Italian wine industry, leading to far-reaching changes in rules and attitudes. Emboldened by the success of the 20% Bordeaux blend Tignanello, in 1978 Antinori launched Solaia, containing 80% Cabernet Sauvignon, from a neighboring vineyard.
THE ANTINORI WINERY HAS BEEN IN EXISTENCE SINCE 1385. The winery’s current patriarch, Piero Antinori, is a titan in the wine world and is credited with creating the category of ‘Super Tuscan’ wines that distinguish themselves as being the first Italian wines to blend French varietals of Cabernet Sauvignon, Cabernet Franc and Merlot with the quintessentially Italian grape, Sangiovese, from the Chianti region of Tuscany.
You really can’t go wrong with an Antinori wine. With fall on the horizon and the bountiful harvest of food that it brings, you may want to consider complementing your porcini mushroom risotto with one of his delicious reds.

Joseph is a culinary artist, who has always had the ability to apply his creative talents to any kind of dishes and make them his own—classic, vegetarian, Asian, Western, Mexican...fill in the blank. The common denominator is always a heartfelt commitment to excellence. Now that he has added spirits to his artistic palette, a whole new chapter is about to unfold. Watch this space... and let the good times roll!

Regular customers will be relieved to hear that this does not mean an end to Joseph’s famous duck fat fries - without a doubt the best you have ever tasted. But it does mean being creative and putting energy into new ideas. “Our signature items will definitely stay and we will never compromise on the quality of our food,” he states categorically. “So we have to cut back on the number of choices instead, and create innovative dishes based around products currently in season.”
The spirits license could not have come at a better time, because restaurants are still dealing with some serious challenges. As everyone knows only too well, the price of everything has gone up and some products are no longer even available. That obviously has a direct impact on what restaurants are able to put on their menu. “Producers are limiting what they can offer, choosing to specialize in order to cut costs,” explains Joseph, “and imported products, like cheeses from France and Italy, have gone way up in price. Domestic items too. Duck fat, for example, is now about 25 per cent more expensive than it was just a few months ago.”
nutritious and, bottom line, just tastes better. As for local spirits, the fact that they’re made here gives them a distinctive, regional flavor, and that really adds to the creative possibilities.”
Some tempting examples already out there include stuffed squash blossoms; salads with grilled peaches; porcini wild mushroom soup, soft shell crabs and cookies made with local apricots. As summer progresses and fall approaches, corn, squash and tomatoes will be in season, and of course New Mexico’s famous green chile.

HAS YOU COVERED, COME RAIN OR SHINE
While most businesses look back on last summer as pretty much a complete disaster, owner Edmund Catanach’s recollection is somewhat different. “All the standard Santa Fe attractions were either cancelled or severely limited,” he points out, “events like the Folk Art Market, Indian Market, the Opera, performances at the Lensic…So with limited options, all people could do was go out to eat. We turned away more business last year than ever before.”
Guests are drawn there to be nurtured by the surroundings as well as by the food. A delightful spot during the day, it comes alive at night, with fairytale lighting and the soothing sounds of the water fountains in the background. The generous umbrellas that shield diners from the daytime desert sun, also provide protection in case of a sudden downpour, making it possible to enjoy the summer rain without actually getting wet.
idtown Bistro, now celebrating its 10 year anniversary, has firmly established itself as a favorite place for locals to gather and dine out, and at this time of year the spacious, award-winning patio, with its distinctive stone fountains and lush greenery, is an especially popular attraction.

Fortunately, one of the things that Santa Fe is known for is its exceptional cuisine— it IS a foodie town, after all—and local restaurants are fortunate to have an established base of regular customers year-round. This especially applies to those, like Midtown Bistro, that are not situated right downtown, where the tourist trade is more crucial to their welfare. So do make the most of the summer weather and support your local restaurants at the same time. Good food, good friends, good times, good memories...what could be better than that?

The two owners met about 10 years ago at a sweat lodge and struck up a friendship. That might have been the end of the story, had they not discovered a mutual liking for bison. “It tastes quite different from beef,” says Tony. “It’s juicier and has more flavor and we both thought it was a shame that it wasn’t more widely available.”

nce upon a time high streets were lined with specialty shops, often family owned, devoted to selling products about which they had expert knowledge. There were bakers, fishmongers, greengrocers, butchers…dealing directly with fisheries, farms, or ranches, and all of them flourished until corporations and big box stores came along.
O
As the saying goes, there are no random coincidences, and a serendipitous series of events led to the pair taking over a buffalo ranch in New Mexico (buffalo and bison are synonymous.) They began by selling their meat door to door and at farmers’ markets. “The response was beyond anything we could ever have imagined,” recalls JP, “ and we began to think about opening a shop.”
Beck and Bulow obviously sells more than just bison meat from their own ranch—much more—with an emphasis on exotic and high-quality products not commonly available, such as Muscovy
BECK & BULOW Getting to MEATthe of the MATTER
Tony Beck and John-Paul (JP) Bulow are now reviving that tradition with their highend, top quality butcher shop in Santa Fe. True to the spirit of the past, the sales people really know their stuff, and are eager to help, answer customers’ questions, offer advice and even come up with recipes. The response has been overwhelmingly positive and the number of enthusiastic regulars is growing day by day.
Good news travels fast, and Beck and Bulow customers now include over 350 restaurants from coast to coast, as well as private chefs and individuals who make a point of stocking their freezers. So it looks as though that old adage about red meat being bad for your health is now facing a major challenge, because clearly, meat is not all created equal.
Perhaps ironically, animals raised as nature intended are themselves vegetarian, and their meat has a healthier profile. Bison has more protein and less fat than regular beef, which is primarily grain-fed
to make the animals fatter. It also has lower levels of cholesterol and is richer in vitamin B1, B2, iron, copper and selenium. And there is even an environmental benefit, because buffalo produce less methane, a major contributor to global warming.

duck, elk, venison, wagyu beef raised in New Mexico, wild boar, quail, specialty pork from Spain, lamb from New Zealand, pastureraised Angus beef, goose and duck eggs, and even natural organ meats dog treats. A diversity of cuts is prepared in-house by a third-generation butcher, who comes in every day from 4:00am until noon. And there is also a selection of superfine European cheeses from France, Switzerland, Spain, and the UK. Delivery is available both locally and nationwide.
The butcher shop has now expanded to include seafood as well. Just as all the meat is free-range, grass-fed, organic, and comes directly from the source, all the fish is wild caught, never farmed, and comes directly from the fisheries, where it is immediately processed and flash frozen within four hours. “You can really taste the difference between the products we sell and commercially produced meat and fish,” says Tony. “Taste sells and once people try them, they’re going to be back for more.” And apparently not just back for more, because, astonishingly, some are even converted from being committed vegetarians to becoming meat eaters.

ROLLING SINCE 1995
ince 1995, Cooking with Kids has educated and empowered children and their families to make healthy food choices. From a small group of volunteer healthy-eating advocates and Santa Fe chefs organized by Lynn Walters to today’s embedded educator program, Cooking with Kids has become an integral part of the school schedule for over 5,000 kids each year. CWK programs, which are free of cost to families, also bring academic subjects to life, providing opportunities for kids to practice essential literacy and math skills—sometimes without even realizing it!
Working in partnership with public schools, Cooking with Kids provides fun, positive experiences with healthy foods—because research (and years of experience!) show that when kids help prepare healthy foods, they’re more likely to eat and enjoy them. This past year alone, thousands of kids in Española and Santa Fe Public Schools have tasted a variety of local melons, chopped up local vegetables for a New Mexico harvest soup, tied thousands of vegetable tamales, cooked up Cuban beans and rice, and sampled salads made with edible roots, fruits, leaves, and shoots.
54 Fine Lifestyles SANTA FE & ALBUQUERQUE DINING
This research-tested, hands-on approach to healthy cooking and eating helps kids accept new foods, which, in turn supports, encourages, and enriches families’ efforts to build healthy eating habits at home. Many families in Northern New Mexico can’t afford the risk of introducing healthy foods that their kids may refuse to eat, and most children need repeated, positive experiences with new foods in order to accept them. In the words of one 11-year-old participant, “Cooking with Kids helps me not to be that picky and try new things at home.”
S
Cooking with Kids continues to grow, providing programming to more schools in Northern New Mexico each year. There are also plans in the works for a National Curriculum Outreach that will provide CWK resources for free to other communities, so that kids everywhere can benefit from positive experiences with healthy foods. he American Culinary Federation is now the largest professional chefs’ organization in North America. The ACF, a professional organization of chefs and cooks, was founded in 1929 in New York City by three chefs’ organizations: the Societe Culinaire Philanthropique, the Vatel Club and the Chefs de Cuisine Association of America. Since our inception, little has change in our principal goals. We are an organization based on promoting the professional image of American chefs worldwide through education of culinarians at all levels.
In 1976, ACF forever changed the culinary industry by elevating the position of the executive chef from service status to the professional category in the U.S. Department of Labor’s Dictionary of Official Titles. Since this change, the culinary industry and our organization have grown tremendously.

I love our dish called Popocatepetl which is a spicy black pepper crusted aged angus beef tenderloin served with snow peas , red cabbage and jasmine rice. Popocatépetl, which translates to “Smoking Mountain”, is the name of Mexico’s most famous volcano lying on the border of the states of México and Puebla in central Mexico. I thought this would be a good name for my beef tenderloin dish that uses chile and black pepper to make a crust that provides texture and flavor to a delicious prime cut of beef.

In Italy, ragù is a term used to describe a type of meat sauce that has been cooked for many hours over low heat. Each ragù boasts numerous ingredients, which varies from region to region. In fact, “alla bolognese” is only one of the many different ragùs prepared in Italy. The origin of pasta Bolognese does not involve spaghetti at all. Instead, the name comes from an initial recipe in Bologna, involving Tagliatelle and a rich ragù. My version is called Conchiglie Bolognese and it uses shell pasta, red wine, tomato sauce, vegetable mirepoix, garlic, ground buffalo, and parmesan. I could eat this dish every day!

ONE OF THE MOST COMMON PROBLEMS I have come across during my 31 years in the insurance industry is that the replacement value of homes is often seriously undervalued. Home insurance policies renew every year for nearly the same amount, but the cost of building materials has skyrocketed, so it’s important for that amount to be adjusted accordingly. The increase in those costs since the pandemic began, has driven up building costs to sometimes as much as triple pre-pandemic levels. This should be a very big concern for homeowners.
nothing we can do. Don’t let this happen to you and your very valuable home asset.
Something else I’ve noticed is the number of people who don’t have home insurance policies, or who don’t bother to renew them. That’s a big mistake, because policies typically cover everything from theft and vandalism, to wind, hail, weight of ice and snow and fire damage. That last one is especially important, considering the recent wild fires in New Mexico.
I suggest to clients that the replacement cost included in their policies should be at least 150% of the current value of their home. That gives them a safety net, to cover price increases in case of a covered loss. You can get an updated evaluation from your real estate agent, if that’s an option, or from a contractor in your area. The cost per square foot can vary enormously, especially in Santa Fe, where it can range from around $300 a square foot, to as much as $1,000, so it’s important to get a current number. The replacement cost endorsement for this extra protection is minimal compared to coming up short in the event of a claim.

It’s not your imagination; the real estate market is going through a transition. Like our dramatic swing from a hot and smokey June to a cloudy and wet July, we are seeing signs that the market is leveling off and recalibrating to the current economic climate. We are in unprecedented waters, however, and while we admit it is impossible to predict the future we can look at key indicators, historic data, and our brokerage’s shared knowledge to try and make sense of the current market conditions. One could argue this shift is long overdue and will help bring needed balance to our market.
Days on Market & Price Changes
A Shift In the Market
Our market data lags typically 30-45 days (the average duration it takes to close a property that goes under contract) so while the days on market look like it’s still squeezing buyers to make quick decisions, we know from the past two weeks that the number of homes needing a price change to entice buyers has increased. Some sellers are struggling to adjust expectations after two years of substantial appreciation. The last week of June saw twice as many price changes as new listings. We should expect July and August to reveal an increase in both months of supply (market absorption rate) as well as days on market.
FOR SOLDSALEMAY JUN 215229 137 343 Source: Federal Reserve Bank of St. Louis 0 1975 1980 1985 1990 1995 2000 2005 2010 5.48%
The most dramatic change in the last quarter came in June when we saw an impressive increase in supply. The differential between new listings and properties sold is the largest we have seen since the beginning of the pandemic. This influx of inventory arrived at the same time the Federal Reserve raised interest rates by nearly 1.75% over the same period, which both forced buyers to recalibrate while simultaneously tempting buyers with many new properties to choose from.

Inventory & Supply
The continued increase in interest rates week after week has reduced potential homeowners’ buying power. While looking at the last few decades, our current interest rates are far from ‘high’, but given the new price points, we are seeing buyers are still challenged to justify the increased monthly cost. Combined with the drop in the stock market where many buyers were leveraging their 401k or stock portfolio to fund purchases, many buyers are retooling their finances and adjusting their expectations.
The biggest shift, however, may be in what a seller might expect when listing their property. We have seen fewer and fewer bidding wars and the sky-high over-asking offers have declined. With that said, buyers who have been dismayed by the competition and bidding wars have reentered the market after a two-year hiatus and are now pursuing homes. Prices have not gone down from their historic highs, but the immediate frenzy of activity has cooled.

Economic Confidence
Seller’s Expectations
Looking back at the historic data from the last recession, we know that there was a precipitous drop in consumer confidence during the height of the housing crash. There are key differences this round, despite the consumer confidence seeming very similar. First, the change in lending practices has eliminated much of the over-leveraging that created the bubble, while second we continue to see upwards of 38% of purchases being cash. This pervasive demand across the board indicates any major value decline is unlikely.

In general, the warm desert habitat with proper shading is a terrific environment for this centipede to make itself at home. They are also often found underneath things in the open, inside crevices, in the soil, and even in garbage bins and cans. They are most active at night after sundown.
DID YOU KNOW THE GIANT DESERT CENTIPEDE’S LOOK is normally the first thing that makes people in Mexico uncomfortable? Easily identifiable due to a multi-segmented flattened body, one pair of legs for each segment with the exception of the first and last segments, and one pair of antennae on their head, the orange-colored arthropod is pretty easy to Despitespot.being
One reason this particular centipede would look to come inside would be to cool down in the shade. In addition, they may
ominous-looking, this particular centipede
then use for fertilization. The females will then lay eggs in organic material, and when born, the babies become independent pretty quickly.
Although most centipedes would not actively seek out someone to pinch (these arthropods do not actually bite), they will absolutely do so when they feel threatened or may have accidentally come in contact with a person. When that happens, their first pair of legs have forcipules that will hold onto whatever it has grabbed, puncture your skin, and inject venom.
While a Giant Desert Centipede’s pinch is rarely fatal, it has been categorized by people who have been pinched as right up there with the bite of a Bullet Ant! Like any bite, pinch, or sting from a critter, there is always a potential issue for small children, pets, and people who may have allergies to centipede bites. Therefore, if severe swelling, fever, or any other noticeable changes occur, a person should immediately seek medical attention.

For a patio screen, the first thing to decide is whether to go with manual or motorized operation, so Warren will bring samples of both fabrics and hardware, to demonstrate the possibilities and explain the various options available. “Manual operation works well,” he says, “but if you have multiple screens, it can become a bit strenuous and could become a burden, in which case people may just leave them either up or down.” That is not a good idea, either way, because leaving them raised can cause sun damage, and leaving them lowered makes them susceptible to wind damage. Motorization, on the other hand, requires nothing more than simply pushing a button on a remote.

solution may not be what the clients had in mind, because there’s more involved than most people realize.”
“Many homes in Santa Fe are south facing, to take advantage of the wonderful sunsets,” explains Sara Maul, whose father, Jeff, started he company nearly 30 years ago, “so patio screens are the best option, because they block the sun, but not the view.” In other words, it is possible to see from the inside out, but not from the outside in, and people can enjoy the view without being exposed to the risk of skin cancer. Screens also protect carpets, rugs, furniture and works of art from fading and sun damage.
Once that has been decided, Warren will recommend the fabric best suited to their needs and suggest a suitable color. “People usually want to go with beige,” he says, “and they are surprised to discover that light colors don’t work. They do block the sun, but

anta Fe Awning deals mostly with residential customers and the most popular request is for patio screens.
Every project starts out with a complimentary, on-site consultation, and the company’s main specialist, Warren Watson, who has been with the company since it began, describes what happens next. “The first thing to consider is what the home owner’s need is, and how best to solve the problem,” he says. “The next thing is the sun’s direction, because that is an important consideration when deciding what type of products to use. So the
Just wanted to let you know that we LOVE the 3 electric roll-up shades that you installed on our portal. Not only do the shades cut the sun, but they also cut the wind. We started with just one and quickly decided to add 2 more so both the W and the S sides are fully shaded. And we discovered that if we put them down in the winter, they stop the wind and we can sit outside even in storms!

they also block the view, because you can’t see through them.” He went on to explain that light colors reflect rays of light back to the eyes, creating an optical illusion that makes it harder to see through them. Dark colors work best, because although it’s counter intuitive, they do not do that, so you CAN see through them very easily.
We are more than happy for you to use our names and voice our enthusiastic support for you and your work and the terrific shades!

If overhead shade is required, then shade sails might be the best option. These are endlessly adaptable, because they can be made to order in a wide variety of shapes, sizes and colors. Not being susceptible to wind damage, since they are firmly attached to either a strong post, or to the home itself, shade sails can be left up during the summer and simply taken down in the winter. Warren always makes a point of preparing a drawing for any shade sail projects. complete with the clients’ choice of color, or colors, to give them an idea of how it will look, before they finally commit.

Historic Scorpion Ranch
For a good hike, head to Potato Harbor overlook, then return via Bluffs Trail and Cavern Point. Keep your eyes peeled for the island fox!
After docking at Scorpion Beach, you’ll see historic Scorpion Ranch. The ranch dates to the late 1800s and exhibit areas include an orientation kiosk, an array of old farm implements, blacksmith shop and visitor center.
Rocky coastline
I chose to explore Santa Cruz on my recent visit to the park. The ride to the island takes about an hour, and along the way, we spotted sealions chilling around a buoy.
Along the way, ginormous yellow wild flowers evoke a scene from something out of a Dr. Seuss book, while shadowy canyons emit a mystical vibe. And the coastal vistas are droolworthy. Pounding waves crash into mist far below and the views give a glimpse of what California’s landscape used to be.

The islands have always been separate from the mainland and it’s this isolation that’s responsible for their rich biodiversity. Everything from teeny-tiny plankton to blue whales call this special place home, with many endemic species of flora and fauna.
The island has picturesque caves and coves
At 62,000 acres, Santa Cruz is the largest of the islands and the most visited. Here you’ll find secluded coves and beaches, craggy mountains, vast canyons, historic ranches, and stellar hiking opportunities.

outed as the “Galapagos of the North,” Channel Islands National Park is situated in the Pacific Ocean, just off the Ventura coast in California. Comprised of five islands—Anacapa, Santa Barbara, Santa Cruz, San Miguel and Santa Rosa—Channel Islands is one of the wildest National Parks. And it’s accessible only by boat.
Each of the islands is unique. Santa Barbara is the smallest of the five. Its rocky shores give way to a grassy mesa flanked by twin peaks. Anacapa comes in second, and is known for its bevy of seabirds, middens, arches and sea caves. San Miguel is the westernmost island and gets the most severe weather from the open ocean.
The fourth largest island is Santa Rosa. Rolling hills, sand dunes and Torrey pines are some of its noted geological features.
As for human presence, the Chumash were the first settlers to the area. Then came the Spanish explorers, followed by fur traders, missionaries and ranchers, who were attracted to the region’s numerous natural resources.
