ALMOND MILK PANNA COTTA RECIPE Panna cotta belongs to a popular creamy Italian custard dessert. This dessert recipe has similarity with pudding but it is condensed with gelatine in spite of egg yolks. This Italian dessert is prepared from milk & cream with a little sugar & almonds. The dish is perfect for scorching summer to keep you cool.

PREPARATION TIME – 10 MINUTES COOKING TIME - 15 to 20 MINUTES SERVE AS – 4 PERSONS

INGREDIENTS

2 Cups Milk 3 tsp gelatine 250 gm fresh cream 1/2 cup sugar or slightly less Little (1-2) drops almond essence 1/4 cup almonds - blanched and chopped


INGREDIENTS FOR SAUCE 1/4 cup sugar 1/4 cup red wine (water can also be used in place of wine) 1/2 cup deseeded custard apples (sharifa) or chopped strawberries or deseeded cherries or peaches (peeled & chopped) or any soft fruit - blended to a rough puree

1" stick cinnamon

DECORATION

1/4 cup strawberries - sliced halves, a few blanched almond halves.

INSTRUCTIONS Take 1/2 cup milk. Sprinkle gelatine on it and leave aside. Blend rest of the milk, sugar and cream. Heat well stirring all the time unless the sugar melts. Do not boil. After getting properly heated, take out from it.

Heat milk with gelatine. Stir and heat on low flame unless the gelatine is fully melted. Add gelatine to milk-cream mixture. Blend well. Add essence. Put in the fridge. When it is semi set after about 1 hour, add the chopped almonds and blend well. Shift to a serving dish.

Return to the fridge to set well, for about 3-4 hours. To make the sauce, heat wine/water, sugar, fruits and cinnamon simultaneously. Stir and boil to melt the sugar fully.

Simmer till a sauce like consistency is made. Discard cinnamon stick. Chill. Decorate panna cotta with fruits and almond halves and serve chilled with chilled sauce.
