The Story Behind Your Cup of Tea

There is an amazing story behind your cup of Dilmah Tea. It is a tale that unfolds each day on Dilmah Tea gardens around Sri Lanka. It begins with the blessing of nature upon Ceylon Tea – the natural alchemy of climate and soils that produces the world’s finest tea. It develops from there, weaving through the lives of the tea pickers and their families, through the village communities around our island, through the forests and waters around Sri Lanka, and reaching its climax in your cup of tea. Dilmah was born of a simple tea grower’s vision. Merrill J. Fernando’s desire to share the pleasure in tea with the world, and to do so ethically by benefiting workers in the exploited tea industry, was the genesis of Dilmah Tea. Nearly four decades of struggle that Merrill invested in making his dream a reality, were rewarded with an unexpectedly powerful welcome from tea drinkers around the world. Dilmah has grown from the impossible dream of an ordinary Sri Lankan to a brand that is enjoyed in over 100 countries around the world. Dilmah is recognized as one of the top 10 tea brands in the world. These are not the definitions of success that Merrill J. Fernando and his family seek for Dilmah though. Merrill fulfilled his pledge to making his Dilmah a genuinely ethical business with the establishment of his charitable foundation – the MJF Foundation. That commitment to ethics was set at the heart of Merrill’s business in the 1960s, long before Corporate Social Responsibility became the buzzword that it is today. Within that commitment lies a very powerful philosophy – that of making business a matter of human service. In seeing success as something beyond its conventional, commercial definition, Merrill demonstrated a powerful truth. He showed how relevant the often discarded traditional, family values are in present context. By placing integrity – as much in relation to his customers, in the quality of Dilmah Tea as to the workers and environment that help make Dilmah special - at the heart of his business, he offered a potent solution to many of the problems our world faces today.


Spa Tea Mixology Tea Mixology is the art of respectfully combining nature’s most indulgent herbal beverage, with other ingredients to produce tea inspired cocktails, mocktails and shooters. Mixing different ingredients to produce harmony on the palate is an art in itself. In this instance the harmony lends itself to an exquisite experience where a tea mocktail can complement or create a mood. For this reason a spa experience is even more enhanced when matched with a tea based beverage as the natural goodness of the tea and the soothing calm it produces only further heightens the sensorial experience. As a family with a commitment to tea that is defined by Dilmah Founder Merrill J. Fernando’s lifelong dedication to the herb, we present a selection of tea inspired beverages which interpret this traditional herb in a unique form. Spa Tea Mixology features tea based non-alcoholic beverages created to offer a complete spa experience. Tea and the heritage and terroir that real tea shares with one who appreciates tea, are the essence of indulgence in this ancient herbal beverage. Whilst respecting that heritage and terroir, the combination of tea with other drinks and ingredients to produce a pleasurable result is the objective of this book. It has been T’Oolong GLASS Highball INGREDIENTS • 125ml chilled Dilmah Springtime Fragrant Oolong (strong brew, 4.5 minutes) • 25ml cinnamon infused honey • Zest of orange METHOD • Dissolve the honey in the freshly brewed tea, and chill it • Fill the glass with ice cubes and pour the tea over the ice in the glass • Garnish with a cinnamon stick and orange zest

Springtime Fragrant Oolong A deliciously different tea, with a beautiful floral note that is reminiscent of orchids and a unique velvety texture, this tea is known as Tieguanyin. Whilst an oolong tea, it is different to the common oolong. An aristocratic tea with distinctive aroma, taste and personality.

Sereni-tea GLASS Large wine glass INGREDIENTS • 125ml chilled Dilmah Green Tea with Lemongrass & Lemon(strong brew, 2.5 minutes) • 25ml lavender honey • Slices of lemon • Slices of grapefruit METHOD • Dissolve the honey in the fresh brewed tea and chill the tea • Fill the glass with ice cubes and add the slices of grapefruit • Pour the chilled tea gently over the ice cubes • Garnish with a stick of lemongrass and thyme

Green Tea with Lemongrass and Lemon A spritely and aromatic green tea deliciously scented with Lemon. The mellow green tea partners perfectly with a zesty lemon fragrance to produce a graceful tea with an energetic lemon finish.

Oasis GLASS Sling INGREDIENTS • 125ml chilled Dilmah Green Tea Moroccan Mint (strong brew, 2.5 minutes) • 25ml mango juice • 10ml fresh lime juice • 15ml Monin Rose METHOD • Fill the glass with ice cubes • Gently pour the juices and the syrup over the ice cubes in the glass • Fill up the glass with the chilled Dilmah Green Tea Moroccan Mint • Garnish with mango slices and a sprig of mint

Green Tea Moroccan Mint An enlivening and wonderfully refreshing green tea combining natural mint leaves with green tea in a traditional and wholly natural fusion of flavours. The marriage produces a sparkling tea that adds a minty fragrance and taste to a clean, and bright green tea.

Makoto GLASS Highball INGREDIENTS • 125ml chilled Dilmah Sencha Green Tea (strong brew, 2.5 minutes) • 25ml honey • Slice of fresh ginger • Slices of fresh cucumber METHOD • Dissolve the honey in the fresh brewed tea, add a slice of ginger and chill the tea • Fill the glass with ice cubes and slices of cucumber • Pour the chilled Dilmah Sencha Green Tea gently over the ice cubes • Garnish with a slice of ginger and a slice of cucumber

Sencha Green Tea A gentle tea with a refreshing, and pleasingly mild character. A grassy note and hint of sweetness in the finish are typical of green tea steamed in the Sencha style. Elegant and subtle in taste, perfect for enjoyment all day.

Green Wonder GLASS Short INGREDIENTS • 125ml chilled Dilmah Green Tea with Lemongrass & Lemon • Slices of cucumber • 2 barspoons of cardamom sugar (muddle white sugar and cardamom and let it rest for 5 hours) METHOD • Dissolve the cardamom sugar in the fresh brewed tea and chill it • Fill the glass with ice cubes and slices of cucumber and lime • Gently pour the tea over the ice cubes in the glass • Garnish with slices of lime, a slice of cucumber and a sprig of mint

Vitali-tea GLASS Sling INGREDIENTS • 125ml chilled Dilmah Springtime Fragrant Oolong (strong brew, 4 minutes) • 10ml fresh lime juice • 2 barspoons of red peppered sugar (muddle a few thin slices of red pepper, ginger and white sugar and let it rest for 5 hours) • Slices of ginger • Slices of red pepper • Stick of lemongrass METHOD • Dissolve two barspoons of red peppered sugar in the fresh brewed tea and chill it • Fill the glass with ice cubes, slices of ginger, slices of pepper and gently pour the tea in the glass • Garnish with a stick of lemongrass and a slice of ginger

Royal Treatment GLASS Sling INGREDIENTS • 125ml chilled Dilmah Green Tea with Jasmine Petals • 25ml cinnamon infused honey • 40ml raspberry puree METHOD • Dissolve the honey in the fresh brewed tea and chill it • Put the puree in the glass and carefully fill the glass with ice cubes • Gently pour the tea over the ice cubes in the glass • Garnish with fresh raspberries and a sprig of mint

The natural fusion of tea and Jasmine flowers is a tradition practiced over centuries which beautifully combines the softly sweet aroma and flavour of Jasmine petals with a gentle green tea. An aromatic and delightfully refreshing green tea, with bouquet and elegance.

Through the Grapevine GLASS Short INGREDIENTS • 120ml chilled Dilmah Green Tea with Jasmine Petals (strong brew, 2.5 minutes) • 40ml green grape juice • 10ml elderflower syrup • Zest of lemon METHOD • Add the first three ingredients to an ice-filled short glass and stir gently • Garnish with a squeezed lemon zest and some green grapes

Dilmah’s Tea Punch no.4 GLASS Punch bowl INGREDIENTS • 1000ml chilled Dilmah Green Tea with Real Cinnamon • 300ml white grape juice • 100ml elderflower syrup • 100ml citrus honey • Selection of slices of grapefruit, lemon, lime, orange, tangerine and cucumber • 2 Cinnamon sticks • 2 sticks of lemongrass METHOD • Dissolve the honey in the fresh brewed tea and chill until cold. • Add all ingredients to the punch bowl and leave it in the fridge for at least 4 hours • Take the punchbowl out of the fridge 30 minutes before serving • Serve over ice in large wine glasses

Mr. Frank’s Cure GLASS Sling INGREDIENTS • 125ml Dilmah Organic Tropical Lemon (strong brew, 4 minutes) • 25ml Lavender honey • 25ml Orange juice • Coriander seeds METHOD • Dissolve the honey in the fresh brewed tea, add some coriander seeds and chill it • Fill the glass with ice cubes and gently pour the orange juice over the ice cubes in the glass • Pour the tea over the ice cubes in the glass • Garnish with a slice of orange, lemon and a sprig of lavender

Asusa GLASS Martini INGREDIENTS • 80ml chilled Dilmah Organic Emerald Green • 15ml ginger syrup • Sprayed orange zest METHOD • Add the chilled tea and the ginger syrup to an ice-filled mixer glass • Stir for 30 seconds and strain into a chilled martini glass • Spray one orange zest over the top of the drink. • Garnish with phisalys fruit

Organic Sencha Green Tea Refreshing and gentle, a subtle yet well defined, steamed green tea with grassy, green notes in a mild and delightfully serene organic green tea.

Forest Garden GLASS Martini in bowl INGREDIENTS • 150ml chilled Dilmah Organic Noble Earl Grey strong brew (4 minutes) • 20ml orange marmalade • Selection of strawberries, raspberries, blackberries and citrus fruit • Earl Grey honey METHOD • Fill the bottom glass with the fruit selection and some crushed ice • Dissolve 50ml Noble Earl Grey in 50ml honey and pour the syrup over the fruit • Add 100ml chilled Noble Earl Grey and the marmalade to an ice filled cocktail shaker and shake vigorously for 15 seconds. • Strain into the chilled martini top • No garnish, serve with a fork

Berry Explosion GLASS Highball INGREDIENTS • 150ml chilled Dilmah Organic Berry Explosion • Selection of strawberries, blueberries, raspberries and pomegranate • 20ml citrus honey • 10ml fresh lemon juice METHOD • Fill the highball with ice cubes and the fruit selection • Add the honey and the lemon juice to the Berry Explosion herbal infusion • Pour the tea over the ice in the glass • Garnish with a string of red currants • Serve with a straw and a fork

Organic Pomegranate, Strawberry & Raspberry A delicious burst of fruit in an infusion with natural Pomegranate, Strawberry and Raspberry producing a fusion of flavour. The sweet sour notes of Pomegranate are balanced by the fleshy, sweetness of Raspberry and Strawberry.

Springbok GLASS Highball INGREDIENTS • 150ml chilled Dilmah Organic Southern Sunset • 50ml Cranberry juice • 10ml fresh lime juice • 15ml orange syrup METHOD • Fill a highball completely with ice cubes • Gently pour the ingredients in order as mentioned above into the glass • Garnish with some fresh cranberries

Dilmah’s Tea Punch no.3 GLASS Punch bowl INGREDIENTS • 1000ml chilled Dilmah Organic Purely Ceylon • 300ml red grape juice • 150ml cherry juice • 150ml fresh squeezed lemon juice • 200ml honey • Selection of strawberries, raspberries, blackberries, blueberries • 40 mint leaves METHOD • Dissolve the honey in the fresh brewed tea and chill until cold. • Add all ingredients to the punch bowl and leave it in the fridge for at least 4 hours • Take the punch bowl out of the fridge 30 minutes before serving • Serve over ice in large wine glasses

Orange Baby GLASS Martini in short INGREDIENTS • 90ml Dilmah Organic Fruity Minty Delicious • 100ml Dilmah Green Tea with Jasmine Petals • 20ml citrus honey METHOD • Add the jasmine tea to the bottom glass, add dry ice and put the martini glass on top • Dissolve the citrus honey in the Fruity Minty Delicious and gently pour into the martini • No garnish

Sunday Sunrise GLASS Sling INGREDIENTS • 125ml chilled Dilmah Organic Elegant Infusion (strong brew, 5 minutes) • 25ml biological apple juice • 25ml honey METHOD • Dissolve the honey in the freshly made Elegant Infusion, and chill it • Fill the glass with ice cubes, and pour the apple juice slowly over the ice in the glass • Pour the infusion gently over the ice cubes and fill the glass • Garnish with apple slices and chamomile flowers

Mist of Ceylon GLASS Highball INGREDIENTS • 100ml chilled Dilmah Organic Noble Earl Grey • 3 drops of grapefruit bitters • 15ml lavender syrup • 100ml hot Dilmah Green Tea & Jasmine Petals • Dry ice METHOD • Add the first three ingredients to a mixer glass and stir gently for 20 seconds • Fill a highball glass one third with ice cubes and pour the drink into the glass • Brew a small pot of jasmine tea and add the dry ice. • Pour the thick mist of the jasmine tea on top of the drink.

Carpe Diem GLASS Champagne flute INGREDIENTS • 125ml Dilmah Real White Tea • Spring water METHOD • Put 10g of Real White Tea in 1 liter of springwater • Let the White Tea infuse for 11 hours in the fridge • Pour into a chilled champagne flute • No garnish

Real White Tea White Tea is the delicate, tender bud of two leaves & bud, and is a very rare Ceylon tea. Also known as Ceylon Silver Tips, White tea is velvety to the touch and produces a pale liquor tinged with yellow - very delicate and subtle in flavour. A rare, sophisticated indulgence.
