MALCOLM WEBSTER Executive Chef

Recently appointed Executive Chef at The St. Regis Saadiyat Island Resort, Abu Dhabi, Malcolm brings his award-winning cuisine and passion for food to the first St. Regis established in the region. Prior to joining St. Regis, Malcolm was the Executive Chef at the new Sheraton Grand Hotel on Sheikh Zayed Road where he hand-picked a team of over 60 chefs and 20 stewards and was responsible for the entire kitchen operations across the hotel’s food and beverage outlets. Directly before his stint at Sheraton Grand, Malcolm scooped the coveted Hotel Chef of the Year Award and the Gourmet Menu of the Year (over £50) at the 2008 Scottish Chef of the Year Awards, during his time at Sheraton Grand Hotel and Spa in Edinburgh. Malcolm’s numerous accolades include being named one of Caterer & Hotelkeeper’s Acorn award-winners in 2008. An honour only 30 hospitality professionals in the UK under the age of 30 are recognized for each year. His passion for the culinary world also led his team to winning the Best Hotel Breakfast in 2013 by the Scottish Hotel Awards. At The St. Regis Saadiyat Island Resort, Malcolm will be responsible for driving innovation across the hotel’s seven food and beverage outlets, as well as banquet and in-room dining. Malcolm will lead his team of over 120 chefs to provide guests with a refined culinary experience in a bespoke, beachside setting.

What is the difference between your previous role and your current role? Dubai is an extremely competitive market, St Regis Saadiyat Island is very unique. Here we are catering to residence and holidaymakers compared to Dubai where the focus was more corporate, therefore it’s difficult to compare. Our guests here enjoy the selection of diverse offerings. Guests can dine at Turquoiz our beachfront restaurant and lounge and enjoy a selection of succulent seafood, Sontaya our Southeast Asian or tuck into a delicious steak at 55&5th The Grill, the options are endless.

How do you plan to put your mark on the St Regis Saadiyat? I’ve just started to influence the brunch by making some changes to our offerings. 55&5th is now part of our brunch experience and we are using the loft as a cheese room. It now boasts over 40 variations of English and French cheese. We now also offer 3 different types of oysters. The number 3 size oyster is delicious and meatier compared to other oysters. The biggest change is the dessert station. We’ve added an element of childhood fun and embraced a Willy Wonka theme. 55&5th has launched its new menu, which sees a wider selection of cuts on the menu then before. I am also working on changes to the menu in Turquoiz. From November guests will be able to experience a selection of fresh seafood focusing on simplicity and taste. Be sure to try the new crab cakes.

If you had to pick, which one of the dining options is your favourite?

How do you stay up to date with new trends? It’s challenging. Now guests have the same knowledge as chefs do because of the internet and cookery shows on TV. People know more about seasonality now than ever before. I have to know my stuff especially when talking to guests. I spend some of my time researching what other people are doing, not just within the region, I look to Canada, Paris, London, standalone restaurants and hotel restaurants. I enjoy eating out and seeing what other chefs in the area are creating and social media is a great source of inspiration. Personally I constantly evolve, tweaking dishes, creating new dishes whilst staying true to my identity. As a chef you must adhere to your true identity.

Tell us about the changes at 55&5th. We wanted to give the bar an identity, not just a pre drinks bar but highlighting it as a destination bar for our guests. We made 55&5th less formal, we’ve taken away the white table cloths, enlarged the menu and added new and exciting dishes like our gourmet duck burger. We’ve taken the edge off fine dining and made it more fun and affordable.

How did you go about developing the new menus? It was simple menu engineering. We looked at what worked well and what didn’t. We took aspects from our bestselling dishes and used that to create new and exciting dishes on our menus. I worked with all my chefs to develop the new offerings and I can honestly say we’ve managed to create something very special for our guests.

That’s tough, very tough. I’d have to say Sontaya our Southeast Asian restaurant. The food is consistently outstanding and the Thai green curry is superb. November 2015

55&5th, The Grill Chef Kreaton introduces his seasonal new menu The highly acclaimed 55&5th, The Grill, located at the picturesque St Regis Saadiyat Island Resort has introduced its seasonal new menu. The new menu offers guests a wider variety of dishes making dining out in style more affordable. The tantalising new menu now offers dining aficionados a selection of mouth-watering cuts married with the freshest seasonal produce, providing a truly unmatched dining experience. We were fortunate to sample a few dishes from this great new menu and we can assure you, you will not be disappointed. For starters we sampled 55&5th’s signature starter the capelletti priced at AED 80*, small parcels of pasta stuffed with fontina cheese, served with truffle butter sauce and chestnut puree. Fabulous, rich and aromatic, the chestnut puree is divine and adds a variation of texture to the dish. The agnolotti priced at AED 85* also taken from the starter menu is filled with braised short rib, aged goats cheese and chive oil, another spectacular dish.

For the main we are sampling the sterling Angus tenderloin priced at a very reasonable AED 120*, served with a side of spinach Rockefeller and French fries espelette priced at AED 30* per side. Cooked medium well the knife glides through the tenderloin. To taste, the cut is thick and flavoursome. For dessert we indulge ourselves with the valrhona caraibe chocolate vortex, caramelized ganache, milk chocolate Chantilly, topped with a crunchy chocolate disk and drizzled in hot chocolate sauce. The crunchy chocolate disk dissolves under the warm chocolate sauce to unveil a chocolate mountain of temptation. “I like to create dishes using a regional Mediterranean flair, inspired by my Maltese upbringing. My focus is to bring harmonious flavours together using the best modern and traditional cooking techniques to deliver a gastronomic journey for our guests,” said Kreaton Cutajar, Chef de Cuisine, 55&5th, The Grill.

The new menu also features delectable signature starters such as the crudo di wagyu, wagyu striploin, parmesan and marinated sardine paste, savora mustard mayo, picked brown shimiji and crostini. A selection of cuts are also available from black Angus, Wagyu tenderloin to dry aged striploin. The menu also features an impressive gourmet duck burger. Although 55&5th, The Grill is known as a steakhouse the restaurant caters well to guests needs, other delectable dishes include, Cornish yellow chicken, organic lamb, blue lobster and monk fish. The restaurant is beautiful, blue lighting is complimented by bold hanging contemporary chandeliers setting an elegant yet relaxed tone to the evening. “At 55&5th we like to showcase the best seasonal produce available in the UAE market and we have the highest regard for sourcing the freshest produce to create our menus,” added Cutajar. Starters range from AED 60* for 55&5th’s signature salad to AED 100* for diver scallops. Mains range from AED 85* for the carnaroli risotto to AED 280* for the 300 gram dry aged rib eye john stone. EXPLORING MALTA LOCATION Located in the heart of the Mediterranean Sea, Malta lies just south of Sicily and north of Libya. Due to its strategic location Malta was historically a prime naval base for many armies, something that has greatly contributed to Malta’s landscape and history.

Set alongside Malta’s scenic promenade Sliema and St Julians are by far the most popular places for tourists to stay. One main benefits of staying in this area is that getting around the island is extremely easy, with buses and taxis on every corner. The large majority of the excursions also leave from Sliema making a day trip to Comino hassle free.

A World Heritage City Valletta is known for its stunning cathedrals and bustling coffee shops. Not many hotels are located in Valletta as it's mainly the commercial district of Malta however with the recently opened Valletta Waterfront this is a trend that is slowly changing. Valletta is only 15 minutes’ drive from Sliema and St. Julians. The main bus terminal is located in Valletta therefore making exploring the island simple.

If you’re looking for a cheap and cheerful vacation we would recommend Qawra as most of the large and low priced hotels are situated here. This area is very busy with lots to see and do however it is quieter that it's neighbouring Bugibba.

Sliema boasts Malta’s largest shopping district and is also home to Malta’s largest shopping mall, The Point. Mainly a high end residential area, Sliema is a postcode that brings about its own bragging rights with apartments ranging from AED 1,250,00.00 upwards. Next to Sliema is St Julians, a hub of activity and nightlife. Filled with great restaurants and entertainment venues St Julians is within walking distance to Paceville, where all the nightlife is based.

MELLIEHA Situated to the north of the island Mellieha offers the largest beach in Malta and is popular with young families due to its relaxed atmosphere. If you are staying in Mellieha it is worth renting a car as it is a 45 minute journey to Valletta.

TOURISM

CLIMATE

Malta is a popular tourist destination. Its warm climate, friendly islanders, magnificent restaurants and historical monuments welcome almost two million tourist a year. Malta has two official languages Maltese and English, making getting around the island extremely easy. As a member of the EU Malta’s official currency is the Euro.

Malta has a subtropical–Mediterranean climate and therefore has very mild winters and hot summers. Throughout the year you can expect temperatures to average 23 celsius dropping to 17 Celsius at night. Summer starts from mid-April with temperatures averaging 19 celsius in the day and rising steadily throughout the 8 months. The warmest month is August where temperatures rise to 35 celsius. November is the start of the winter season with temperatures dropping to 17 celsius and most of the rainfall happens in this month. The sea temperature averages 20 celsius throughout the year making having a swim a tempting prospect. Malta also boasts the highest sunshine duration in Europe with over 3,000 hours per year, doubling that of northern European cities.

HISTORY Malta boasts three UNESCO World Heritage Sites, Ħal Saflieni Hypogeum, Valletta and seven Megalithic Temples, which are some of the oldest free-standing structures in the world and even outdate Stonehenge and the Egyptian pyramids.

BUGIBBA One of Malta’s largest seaside resorts the coastline promenade stretches from Salina Bay to St Paul's Bay offering some of the best open sea views in Malta. The shore is rocky but the water is deep and clean providing a great location for topping up your tan. Bugibba has a very large selection of bars, cafes and restaurants.

TRANSPORT Don’t be fooled by the size of Malta even through the island is only 122 mi2 there is plenty to see and do. Getting around the island is easy. Tourists can hire a car or take a bus. However if you are staying outside the main tourist areas taxis are few and far between.

CULTURE Malta is one of the friendliest countries you will every visit. Family is very important and you will find that many families still sit around the table every evening to enjoy a meal together.

Valletta Valletta is the capital city of Malta and the administrative and commercial heart of the island. As you enter the city you will instantly be mesmerized by its sheer beauty. Small winding streets lined with boutique coffee shops are in abundance. Valletta boasts a timeless elegance almost untouched by the modern world. The best way to explore Valletta is by foot so make sure you wear comfortable footwear as there is so much to see you will not want to miss one moment. To begin our day in Valletta we first make our way to The Malta Experience. An audio visual show that takes you on a journey through Malta’s 7000 year history. The show is spectacular and for a small island Malta has certainly played its part in history. The Malta Experience is told in 16 languages and is open daily making it very accessible for tourists. Next we visit Fort St Elmo located next door to The Malta Experience. Fort St Elmo recently opened to the public after six years of restoration. The fort is spectacular and again brings to life the history of Malta.

After a rather educational morning we decide to pay a visit to Café Cordina one of Malta’s most acclaimed coffee shops. Founded in 1837 Café Cordina comprising of tea rooms, pasticceria, coffee bar and gelateria. If you are able to find a seat be sure to sit outside and enjoy the old palazzo. Having heard that Café Cordina does the best Maltese Pastizzi we decide to try this local speciality along with a Kinnie, a soft drink only found in Malta. Our cheese pastizzi arrives, golden and warm this puff pastry is filled with a healthy helping of ricotta cheese, absolutely delicious. This is washed down with an ice cold Kinnie a rather bittersweet soft drink. However we cannot leave Café Cordina without trying one of their famous sweets. Wanting to experience a local dessert we opt for the kannol ricotta and a small honey ring. The kannol ricotta is a flaky pastry filled with a sweet ricotta and dusted in icing sugar and mixed nuts, light and fluffy the kannol crumbles in our mouth while the sweet ricotta offers a smooth creamy texture. The small honey ring is equally enjoyable made with black treacle, marmalade, orange peel, spices and honey it offers a variety of flavours and textures.


In much need of a walk we head towards the Upper Barrakka Gardens built in the 1560’s the public gardens offer a panoramic view of the Grand Harbour. A stunning and tranquil garden this is a must visit when in Valletta. Later that evening we return to Valletta for dinner. We decide to visit Valletta Waterfront, originally built in the 18th century the waterfront now plays host to a selection of restaurants, retail outlets and bars. The front of the buildings are wonderfully decorated in a variety of colours. The colour of the door signiďŹ es what the merchants there would have sold, for example those selling iron would have had a red door whilst those selling crops would have had a green door, it enabled them to communicate when language was once a barrier. After a short stroll down the waterfront we decide to visit Browns one of the many dining venues located here. We decide to order one of their mouth-watering pizzas, handcrafted and baked fresh in the pizza oven. Topped with tomato sauce, tuna, black olives and onions the Al Tonno delivered a satisfying experience. Maltese cuisine has evolved over time due to its relationship between islanders and those who occupied Malta. Malta boasts Mediterranean cuisine unlike any other found in its neighbouring countries. Malta offers a wide variety of cuisines to suit all tastes and budgets. The culinary scene in Malta is forever evolving and in recent years more restaurants have started to serve their own modern version of traditional specialities.

Mdina The next evening we decide to visit Mdina also known as “the silent city”. Small narrow lamp lit streets offers visitors a unique and timeless atmosphere, rooted in culture and history Mdina is unlike anything we have ever experienced before. Mdina has been home to Malta’s noble families for centuries, some are descendants of the Norman, Sicilian and Spanish overlords who made Mdina their home from the 12th century onwards and still live in the impressive palaces today. We spend some time wondering the mystical streets of Mdina before stumbling upon Palazzo de Piro a stunning multiuse venue. We decide to stop for a coffee at Palazzo de Piro café, Xpresso Café and Bistro. Gozo Malta's sister island is Gozo and just 25 minutes away by ferry. Gozo is significantly smaller and more tranquil then Malta with large farmhouses being a popular choice with tourists wanting to escape the hustle and bustle of life. When visiting Gozo be sure to visit the Azure Window a natural limestone arch is situated near Dwejra Bay on the Inland Sea. If you have time Gozo is well worth the trip however we do highly recommend hiring a car to make the most of your time in Gozo.

MARSALFORN, GOZO This tiny fishing village is the islands most popular summer resort and offers tourists a selection of restaurants, bars and accommodation. MGARR, GOZO Overlooking Mgarr Harbour this a quaint fishing port has a selection of bars and restaurants with one hotel conveniently located at the top of the hill offering splendid ocean views.

SANNAT, GOZO Famous for its handcrafted stone balconies Sannat is an agricultural village that is also well known for its traditional lace making. Sannat is close to the Ta Cenc cliffs, perfect for a recreational stroll.

XAGHRA, GOZO One of the largest villages on the island Xaghra is situated on top of a hill. Close to Xaghra is Ramla Hamra, a beach famed for its red sand. We would highly recommend visiting Ggantija temples as they are one of the oldest prehistoric temples in the world. XLENDI, GOZO This small fishing port is a great spot for seafood foodies. A small pebble beach allows you to enjoy a splash or snorkel and embrace the marine life. VICTORIA, GOZO As the capital city of Gozo, Victoria offers a selection of boutique shops and is the perfect place to pick up a unique handcrafted gift. Be sure to try one of the many coffee shops and take a walk through the narrow winding streets.

We talk to Michael Caines about his newly launched restaurant, Pearls by Michael Caines. What can guests expect to experience at Pearls by Michael Caines? We have one destination with two experiences. The lounge upstairs offers terrific views with a nice bar menu and downstairs in the restaurant we offer al fresco dining. It’s a beautiful menu that combines local ingredients with a very informal fine dining experience, specifically catered for the UAE market. Signature dishes created by myself.

With such a diverse mix of nationalities in the UAE how have you designed the menu to appeal to all their tastes or do you have a specific audience in mind? We have described the restaurant as a European restaurant but being in the Middle East I wanted to ensure that I incorporated some spices, adding an exotic Middle Eastern approach. We have embraced the Emirati market, modifying the menu to ensure we offer something for everyone, in a creative and energetic way. We have this wonder expressions of flavour that describes what we are doing here, it’s all about expressing the flavours through the dish, ensuring that people leave with a great memory.

What was it about Jumeirah that made you want to launch here? The people, the location and Jumeirah at Etihad Towers. I was here two years ago as part of Gourmet Abu Dhabi and had a very successful time at Brasserie Angélique. I was then invited back to consider the opportunity and cook for the owners. It was after that I was given this great opportunity. It’s a privilege to be here and work with the team.

What are your goals for Pearls by Michael Caines? To become one of the best restaurants in Abu Dhabi and one of the best destination restaurants in the UAE. We want to put the restaurant on the map and keep it on the map by emphasising the quality of the dining experience at Pearls by Michael Caines.

Some celebrity restaurants tend to run out of steam. How will Pearls by Michael Caines overcome this? Well, you haven’t met me yet, I have huge amounts of passion and steam. We are looking to host events, collaborate with the Formula 1, Williams F1 team and work with our partners to develop other events. You don’t get anything out of life unless you’re prepared to put something in. What makes restaurants last is the fact that they are able to deliver. You’re only as good as your last dish. So I have brought over key members from my team in England to ensure we provide guests with a great dining experience.

Why the UAE? The UAE is an incredible market that has seen considerable growth and is still developing. It’s an exciting prospect for any chef or hotel business to develop their brand here. It’s a destination for both business and leisure. Abu Dhabi residence also want to have a choice of high quality restaurants and people are now ready for these restaurants to come into the market.

Sum up your cooking style in three words. Expressions of flavour.

Must try dish from your menu. It’s difficult to narrow it down to one dish. I would suggest the tasting menu as it offers a variety of signature dishes.

Do you prefer to eat in or dine out personally and why? Definitely dine out. I’m a foodie so it’s good to eat out, it’s part of the lifestyle.

What local produce are you using on your menu? We use local fish. I’ve been to the fish market myself to select these. We are also meeting with an organic farmer and a caviar producer. We use what we can, to its best effect. It’s nice to support local businesses and to feature their produce on our menus.

Is it important for you to source local produce? It is important to use local produce. It economically benefits the region and it keeps the local money in the local community.

Favourite kitchen gadget? Hand blender it’s really good. I would be lost without it.

Is there a secret to a successful restaurant? You simply have to make it a destination. Serve great food, offer great service and value for money. It’s paramount to match expectation with what you deliver.

What could you not live without? Food. Why not make sure that the food we live with is inspiring.

Will we be seeing you expand your brand to other Jumeirah locations? We have to walk before we can run but why wouldn’t I want to work with Jumeirah, an expanding group with lots of ambition. Jumeirah is fantastic, after all they gave me the opportunity to come to Abu Dhabi. November 2015

DJ Any other DJs in Abu Dhabi that you feel are upcoming? Check out DJ Rob Forrest. He is the youngest of the bunch and is doing some really good things.

When did you start DJing?

Any advice for upcoming DJs?

I started DJing around 1998. I'm from London originally and I was really into Garage music but the only way to get the music was to go to the record shops and buy the vinyls. After a while I had developed a good collection. A friend of mine who was already working as a DJ suggested I buy some decks. I'd just got a credit card and I went and maxed it out straight away on some decks.

How did you learn to DJ? The same DJ friend of mine showed me the basics. Beats matching etc and I proceeded to lock myself away in my bedroom every night until I had perfected this art. I thought that to get the beats matched and in time was the pinnacle but I know now that’s is just the start. There is so much more to DJing and these are just the basics that are needed.

What nights do you DJ in Rush? I play on Monday which is the award winning Sugar Rush Ladies night, Wednesday alongside the City Vibes Guys, Thursdays POP! Night and Friday I DJ the warm up for our Arabic fusion night.

What type of music do you play? I'm very open. Growing up in South London I grew up listening and playing RnB, Jungle, Drum & Bass, Dancehall, Garage, House and anything else that grabbed me. I love it all and still play a wide variety of music in my sets today.

Just to do it for the right reason. Everyone seems to be a DJ now for the glorified lifestyle. It’s not about that. It has to come from a love of music and if that isn't present it will come across in the set.

Apart from DJing you also manage Rush how did that come about? What do you usually start with when preparing for a set? I make sure I am up to date with any good new tracks that are out and that my laptop, charger and headphones are all working.

What's your favourite track at the moment? I really like the Sam Divine mix of 'Flowers' the old UK Garage track, she has refreshed the track.

What do you enjoy most about DJing? I really enjoy everything about it. I especially like being able to supply the music for people to let loose for a few hours and have a good time. It’s a great feeling when you have a full dance floor of people that are all having a great time.

What track is guaranteed to get the club going? There are so many, it’s very difficult to name one as each night is different.

My brother and I have managed events in the UAE for the past 10 years and we were doing Thursday nights at Rush. It went very well and we came to an agreement with Yas Viceroy to manage Rush with them.

What’s the best part of managing Rush? It's great to have a base to put our events on and to help build the scene in Abu Dhabi. I like meeting people and making sure everyone has a great night.

What makes Rush so special? Having a nightclub above an F1 race track is very cool. It makes Rush very unique plus it’s a huge bonus to be located in the beautiful Yas Viceroy and as a destination Yas Island. Abu Dhabi is continuously developing, so it’s great to play a role in one of the best cities in the world. We also pride ourselves on providing a 5 star nightlife service without the pretentiousness that can come with that.

As a platter of crispy charcoal-grilled lobster, scallops and large tiger prawns are set down in front of us, I hold my napkin tight to keep from tearing off a bite before our server even leaves our table. Just moments from the honking traffic, the waterfront eatery, Finz, hides behind Beach Rotana on a quiet corner of the hotel’s shore. The view across the water is pristine as it overlooks the sparkling Cleveland Clinic and the tree lined promenade of Maryah Island. A long time staple of the city’s seafood scene, Finz had become somewhat overlooked in the midst of the city’s growth. However, having just reopened after a complete revamp, it now better reflects its personality as a peaceful overwater bungalow, entrenched in big-city luxury and elegance.

The white wood and natural colours make it feel authentic, while the upbeat lounge music is young and energized. It is an obvious venue for the romantic seafood lovers’ date night, but it cannot be forgotten as an ideal spot for a bright and airy business or leisure lunch. The service is attentive and happy to cater to the needs of any guest, whether wanting to eat and run, or sit and relax enjoying the view for hours.

The serene blue and grey card stock menu is a perfect reflection of Finz’s recent changes and I was thrilled not to have to handle another stuffy, large, fabric book menu. However, the descriptions do not do the food enough justice, as the dishes are interesting and complex, combining textures to create food that is more than just tasty. It keeps your attention. One of the new appetizers that cannot be missed is the cured salmon with charred avocado. The cured salmon is thinly sliced, sprinkled with a few slivers of fresh onion, chili pepper and charred avocado, sitting on a generous swipe of a bright and zesty Amarillo sauce. The dish is simple enough to taste the perfectly fresh fish, while also enjoying the excitement of heat and tang with every bite. As a main dish, the pan seared toothfish is one of their specialties. It is displayed on a perfectly salty, spicy bed of diced meat and whole smoked chickpeas, with a small dune of fluffy chickpea puree (to add another satisfying taste and texture to the dish). The large chunk of moist flaky fish resting on its earthly base is an excellent balance in savouriness and structure.

The new menu was created by the passionate Head Chef Christian Rosse, a tailored, friendly blond who hails from Southern Germany. His devotion to fresh ingredients, simple preparation and focusing on the details is seen throughout the menu. While other seafood restaurants seem to forget the importance of a side dish, at Finz everything from the grilled broccoli rabe to the golden brown, hot and crispy fries were truthfully some of the best I have had in Abu Dhabi. Chef Christian also incorporates his love for his home by recreating the food from his upbringing in Europe, such as the roasted sea bass on lentils with braised onions and crispy duck confit, topped with a tuft of fresh fennel and arugula. Braising is one of his favourite ways to showcase flavour and by using this method at Finz, it is an ideal counterpart to grilled fish. Everyone has heard of delicious surf and turf (seafood and meat), but Finz really proves the point in a light, fresh and modern way.

With a fairly significant menu, it is really difficult to choose only a few dishes, so my recommendation is to go with friends. Sit on the terrace, lounging, sharing food and drinks and ordering more as the sun sets into the sea. What a fabulous way to spend a weekend afternoon! As a final note, seafood restaurants are hardly, if ever, known for their desserts, but Finz impresses again. The seven dessert options are all worth at least a taste (luckily there is even a dessert tasting option) and all can be paired with the perfect after dinner beverage. The Valencia orange and almond cake topped with anise poached peach and crème fraiche and the fig and 70% Dark chocolate tart, with Turkish coffee ice cream were both my favourite. You can go to Finz just for dessert. It’s that good.

The dish is also well presented which is a nice change from how fatoosh is usually served.

The second dish the tegamino, is served in a large cast iron pan. Two eggs, asparagus, rocket, basil truffle pesto and parmesan work well to deliver a fresh and unique dish. This dish is tasteful and kick starts our palates. The third starter is taken from the mezzeh menu. The roasted eggplant comprises of basil, mint and pine nuts. This proves to be a big hit for the Dining and Nightlife Abu Dhabi team. This dish is flavorsome and gratifying to say the least. We would highly recommend this dish. As we embark onto the main course we decide to order from the seafood section. Catching our eye is the Gulf tuna Agrodolce on a base of capsicums topped with pine nuts and mint. This dish is delectable and very appealing. The presentation of this dish is simple but masterful. The main and most important aspect of each dish is the passion and creativity which is evident throughout the menu. Executive Sous Chef, Michéle Müller’s dishes are carefully created from raw fresh ingredients and the presentation of each dish displays her passion and talent. Our second main course is the venison tenderloin served with juniper berry, wild mushroom and fresh horseradish cream. This dish is my personal favorite. Tantalizing and succulent the venison tenderloin is flavorful, well prepared and cooked to perfection. The wild mushrooms compliment the venison and the horseradish cream is a pleasurable addition to a delightful main course. Gazing at the stunning and breathtaking views of Abu Dhabi I regain focus and snap back into review mode. Last but definitely not least our third and final main course arrives. Salt crusted whole sea bass for 2, served with a side of creamed spinach and baby potatoes. This dish is divine, fresh and delectable. You are in for a treat with this dish. The salt crusted whole sea bass is presented with flair and sophistication. Using simple flavors to enhance the inherent freshness of locally sourced produce, 18° offers specialty dishes inspired by the gastronomic heritage of the Eastern Mediterranean cuisine. Three show kitchens with interactive counters add to the theatrical “mise en scene” of the restaurant, while seasonally changing menus ensure innovative selections are always on offer. Overall our experience at 18° is excellent from the service, ambiance, stunning views to the great tasting new menu. Very impressive 18°, well done.
