The Abu Dhabi EDITION, the first EDITION to open in the Middle East, introduces three new signature restaurants, Alba Terrace, Oak Room and Market at EDITION, created by world renowned Chef Tom Aikens, famed for being the youngest chef to have ever been awarded two Michelin Stars. Alba Terrace offers guests the finest locally sourced coffee, light lunches and sharing plates, all to be enjoyed over good conversation. Located on the Marina side of the hotel, Aikens has created a serene, coastal Mediterranean-style feel Alba Terrace, our brunch destination today. Bathing in the natural sunlight, Alba Terrace boasts floor-to-ceiling glass doors, a large brass clad bar and is host to vibrant, brunches and tasting evenings. The bright ambience of Alba Terrace is a true reflection of the Mediterranean. A crisp, light colour palette and smooth terrazzo surfaces lead to bright lime oak wall panelling, sheer curtains and vibrant plants, bringing the outdoors, in. On the lush outdoor terrace, a series of intimate seating areas under pavilions or next to the pool provide guests with the opportunity to dine al-fresco, reminiscent of elegant Italian summers. A sunken group dining area provides a semi-private space for outdoor gatherings. Moving onto the cuisine, to begin we enjoy, Burrata with Lemon and Black Olive and Mint, the creamy Burrata works perfectly with the zesty lemon. Equally as enjoyable is the Ricotta Filled Heritage Tomatoes, I adore Ricotta and it’s very rarely I find it on the menu, so this is quite the treat. If you don’t like rich creamy cheeses, try the Mozzarella di Bufala with Roast Tomato Fondue and Cherry Vine Tomatoes, its much lighter than the other two dishes. Seafood lovers will relish in the flavours of Prawns Marinated in Grapefruit, Vanilla and Almonds alongside the Red Snapper Carpaccio with preserved Lemon and Black Olive Crumb, if you like your flavours bold the prawns are perfect.

The final starter, the Courgette and Basil Tart with Goat Cheese, don’t be fooled although this dish may not be as extravagant as its counterparts it’s still a phenomenal dish and one not to be missed. For our mains we venture slightly off the set brunch menu as we don’t eat meat, however the team are more than happy to switch items in respect of our dietary requirements. So, if you are vegan, vegetarian or pescatarian you can finally go to a brunch in the city and enjoy yourself, however we would probably advise giving the team some notice especially if you are a large group. We enjoy the Vegetable Tatin, Tray Baked Bream, Tagliatelle and Risotto Verde. The Tray Baked Bream is undoubtedly the star dish, beautifully cooked it flakes off the fork, add a small helping of the confit tomatoes, grilled squid and olives and sit back as your taste buds come to life. 8 | Dining and Nightlife Abu Dhabi

Our advice, leave room for dessert, the Vanilla Mille-Feuille, with Mixed Berries and Confit Lemon is out of this world. I’m salivating just thinking about it, crispy yet creamy, light yet flavourful, this dessert has it all and is currently my favourite in Abu Dhabi. If you are looking for a cosy, sophisticated Friday brunch, with superb cuisine, an excellent live four-piece band at a reasonable price Rose Brunch at Alba Terrace is the brunch for you. A few months ago, we reviewed Market Kitchen and felt that it had slightly lost its way. Last weekend the team invited us back to meet their new team and try out the new menu, and wow has Market Kitchen made the come back of the century. The restaurant is now led by Restaurant Manager Ismael Sielinou and Colombian Head Chef Jhon Faver Martinez whose culinary expertise have been paramount in creating the new menu. Chef Jhon’s experience includes working in global 5-star kitchens from Barcelona, Sao Paulo to Bogota with Michelin Star Chefs such as Albert Adria and Jean Georges. He has worked in renowned restaurants such as 41 Degrees and Tickets and has had the opportunity to cook for celebrities including Messi and Mark Zuckerberg. French born, Restaurant Manager, Ismael Sielinou boasts eleven years of restaurant experience and has worked in the UK, Switzerland, Singapore and the Caribbean. Ismael was most recently the F&B Manager at The Miami EDITION hotel. He is very proud to have served VIPs including Nicolas Sarkozy and superstars like Tom Cruise, Justin Bieber and Rihanna, to name a few. Constantly evolving, the latest menu offers a variety of delicious and flavorsome dishes with influences predominantly from France, Latin America and the Middle East. We place our order, shortly after we are presented with four warm Sweet Potato Buns, glazed in honey, this sets the tone for the rest of our dining experience. To begin we cannot resist trying the highlight of the new menu, the ceviche. We order the Red Snapper Ceviche, with Jalapeno Leche de Tigre and Toasted Quinoa. Leche de Tigre, is the Peruvian term for the citrus-based marinade, it offers a zesty taste, paired with the creamy texture of the avocado and the crunch of the toasted quinoa, this dish is exceptional, dip the plantain chips for an extra mmm moment. Equally as enjoyable is the Burrata presented on a bed of Eggplant-Sesame spread, served with Parmesan Crisps. The synergy of flavours is something we haven’t experienced before, and the subtle hint of wasabi adds depth to an already exciting dish. For our main course I cannot resist Market Kitchens famed Slow Cooked Salmon, topped with Snap Peas served on a bed of Truffle Vinaigrette infused Mashed Potatoes. The salmon is perfectly cooked and melts in the mouth, whilst the truffle mash gives the dish its rich flavour. We try the Housemade Pappardelle (large, very broad, flat pasta noodles) which are nice but not as impressive as my dining companions’ dish, the Ahi Tuna Steak, marinated in a Market spice rub, slow roasted peppers and almond sauce. I’m not one to normally order a tuna dish, as I find tuna can sometimes have a very strong aroma, however this isn’t the case with this dish. For sides we order Steamed Broccolini with Parmesan and Mashed Potatoes, hindsight we didn’t need to order any sides as the portions are more than generous. Ending on a sweet note we share the Sesame and Rosewater Pavlova with Hibiscus Poached Plums and Vanilla-Rosewater Cream. We would highly recommend a visit to Market Kitchen, especially if you visited in the last six months, the transformation of the cuisine is inspiring and some of the best we have tasted in the city. In The Hot Seat Have you always been an entrepreneur? I’ve always had an entrepreneurial mindset, even from a young age. When I was younger, I decided that I wanted to buy this red BMX bike, it was the coolest bike to have at the time. My parents would make me do chores to save enough money to buy it, however I soon realized that it was going to take a while to save. One day I overheard the window cleaners speaking to my mother and I realized that I could make more money window cleaning. That day I got my bucket and went door to door undercutting the window cleaners, I quickly made enough money to buy the red BMX. It was at that point that I felt empowered and confident enough to always pursue my own vision. How did you become the CEO of Dining & Nightlife? My wife was working in hospitality and she was complaining that a publication had placed her restaurant advert next to a vacuum cleaner advert and due to the positioning of the advert it reflected badly on her hotel brand. I remember saying to her just advertise somewhere else, that’s when we realised that there wasn’t a publication that was fully focused on Dining & Nightlife in Abu Dhabi, so we decided, along with our partner to do something about that, and from that Dining & Nightlife was created and I became the CEO. Talk us through a typical day in the life of Michael Hine? I wake up around 6.00am and normally finish work at around 11.00pm. I always start my day by exercising, it’s important to try and stay healthy. I then have a conference call with my business partners and head off to meetings. Most of my time is spent meeting people. I’m a big believer in building a relationship with all my clients. I’m lucky to have some fantastic clients so meeting them doesn’t feel like work. What advice would you give an entrepreneur starting a business? Get ready to work the hardest you have ever worked in your life. When you work for someone you can have the odd day where you procrastinate, as an entrepreneur you can’t do that, if you don’t work you don’t get paid, that’s the harsh reality. Forget holidays, forget sick days and that party on the weekend, cancel it. If you are serious about starting your own business, you have to be ready to make some very big sacrifices.

I know some restaurants that have stopped discounting and the restaurant next to them has then increased their discounts, leaving the other restaurant totally empty. Some people have said why should restaurants offer discounts when so many are closing? I don’t see how the two are related, if a restaurant is closing there are several factors that could be at play, bad food, terrible service, location or lack of marketing. Discounts should be used to drive footfall and revenue. Like anything when used right it’s a great way to highlight your venue for very little cost. What’s your motto in life? For our visit, we will be residing in the ocean one-bedroom suite. The 88 square meter suite offers a large dining and living area which leads into the bedroom. The bedroom overlooks the pristine beach and ocean. The walk-in wardrobe provides ample space, great for those that don’t travel light. The bathroom is spectacular, the large bathtub is the main feature of the bathroom. The rain shower and his and her sinks simply add to the luxurious feel of the suite. The décor is influenced by Jumeirah at Saadiyat Island Resorts natural surroundings, beige, light browns and a splash of gold and teal are a nod to the glistening ocean waves.

That evening we make our way to Mare Mare for dinner, the hotels coastal Italian restaurant. An outdoor venue, the restaurant offers a few tables, creating a warm cozy atmosphere. The menu is diverse and offers a wide variety of delectable Italian dishes. To begin we order the Carpaccio Di Branzino, seabass ceviche, citrus truffle dressing, black olives soil, Calabrian chili and pistachio alongside the Burrata, fresh burrata cheese, heirloom tomatoes, cantabrian anchovies and basil pesto. The ceviche is light, fresh, yet flavorful a perfect dish to enjoy by the sea, the citrus offers zest whilst the black olives soil gives it a crunchy texture. The burrata is equally as enjoyable, the saltiness of the anchovies works well with the creaminess of the cheese.

Travelers will appreciate the optional power points dotted across the room. A working desk is at the bottom of the bedroom ideal for business travelers needing to catch up on emails. For those wanting to relax and watch a movie the ocean one-bedroom suite has two large TVs, one in the bedroom and the other in the living room, both have a wide selection of channels. Spa We take a buggy to the spa, as the spa is in a separate building to the hotel, this works well as it offers guests a quieter and more relaxing experience. The spa boasts 15 spacious treatment rooms, guests can experience a range of unique journeys from Sleep Support Therapy, a tailored signature program based on clinical research and ancient practices, to assist sleep concerns and insomnia to Emirates Hammam. The treatment begins with a foot washing ritual, rose petals are sprinkled into the wash bowl, adding an element of luxury. After this we are led to the massage bed and our treatment begins. The massage is performed perfectly. The deep tissue massage helps relieve tension and the light stretches leave us feeling unwound. Our therapists do well to incorporate the stretches into the massage, so it doesn’t feel disjointed from the rest of the therapy. We conclude our spa experience in the relaxation room where we are offered a selection of teas and dried fruits.

Mare Mare offers a selection of sharing Italian experiences, wanting to try something apart from the pasta we decide to try Grigliata Mista Di Pesce, the selection of seasonal grilled seafood served with saffron polenta and sautéed vegetables. The presentation is beautiful, scallops, lobster, octopus and calamari fill the large wooden board. The seafood has been grilled and offers a slight charcoal taste, delicious. For dessert my absolute favorite Cannoli Siciliani fresh ricotta, candid fruit and chocolate chips, outstanding. My dining companion opts for the Tortino Al Cioccolato, dark chocolate tart, with a sabayon mousse Nutella macaron, also enjoyable. Majlis During the afternoon we stop by Majlis for a bite to eat. We pick a small table by the window and browse through the menu. The menu offers a selection of light bites from Lobster Buns to Free Range Eggs Any Style and pastries from Tarts to Eclairs. Eventually we both opt for the Eggs and Avocado, soft boiled eggs, avocado, pine nuts, on rye bread, a hearty dish. It arrives, piping hot and in no time at all. The eggs are perfectly poached, and the avocado is lightly mashed with a hint of lime. Majlis is a great dining option, I would recommend Majlis if you are in the Saadiyat area and looking for a light, healthy bite to eat. And for AED 55 its very well priced.

Tean The next evening, we visit Tean serving Arabic classics. Arabic restaurants are a plenty in the city but don’t let that be the reason you miss out on dining at Tean. This restaurant excels where other Arabic restaurants fail. Tean offers both indoor and outdoor seating. Inside guests will enjoy the theatre of the open kitchen, watching the team freshly prepare the Saj bread is quite a treat. To begin we select a variety of mezze, from Hummus, Tabbouleh, Stuffed Vine Leaves, Watermelon and Feta, Cheese Sambousek and Falafel, staples of Arabic cuisine. Our favorite dishes are the Watermelon and Feta, light and fresh, the juice of the melon is highlighted by the creaminess of the cheese and the Falafel, perfectly cooked its grainy texture flakes in our mouth. For mains, Tean Fries, in Dukkah Spice served with Tahini Sauce and Samak Seabass Fillet in Olive Oil, Sage, Garlic, Butter Smoked Shallot and Tomato. enough taste to the bite, the Seabass is exceptional, it flakes off the fork and melts in our mouth, the flavor is rich yet not overpowering. We conclude our dining experience with Kunafa Cheese with Pistachio and Honey and the Rose and Pistachio Crème Brulee, both offering a sweet ending to a great dining experience. The Verdict Jumeirah at Saadiyat Island Resort is located just a stone’s throw away from Abu Dhabi city center, but its spanning ocean views, tranquil ambiance and polite staff will make you feel as if you have been transported to a world of relaxation. This evening we are visiting Café Sushi to experience their much talked about Osaka Street Food Night. As we enter Café Sushi we are warmly greeted by the team and shown to our table, which is positioned next to the sushi bar. The sushi bar has a rotating conveyor belt offering a selection of tempting Japanese cuisine. Guests can select freshly prepared dishes whilst watching chef and his team make each and every plate before their eyes. You will feel as if you have left Abu Dhabi and been transported to Tokyo. The décor is bright and clean with light wooden furnishing, high seating tables and chairs surround the sushi bar with optional lower tables on both sides of the restaurant. To start we are presented with Edamame and Miso Soup. The Edamame is served warm, with a hint of sea salt, whilst the Miso Soup offers the perfect consistency, with just the right amount of tofu. We cannot help but try a few dishes from the conveyor belt, each dish looks so tempting we must stop ourselves from trying them all. Our dining experience comes to a halt when we are surprised by the Sashimi. We were expecting a small bowl with a few slices of Sashimi, but that’s not Café Sushi’s style, the team here knows how to wow their guests. The Sashimi is served on a bed of ice decorated with mood lighting and fresh leaves. The Tuna and Salmon Sashimi is incredible. The Salmon Sashimi makes a lasting impression, fresh to the taste the salmon simply melts in our mouth. This is an indication of the excellent quality of the Salmon Sashimi. Continuing our salmon theme, we then enjoy the Blow Torch Salmon. As the name suggests the Blow Torch Salmon consists of beautifully blowtorched salmon which sits on a bed of hand rolled rice. Chef visits our table with his sushi trolley in tow, after some discussion he suggests the Crispy Shrimp Tempura Maki, made fresh, it tastes phenomenal, and we enjoy the interactivity. After enjoying all of this we realise that we still haven’t made our way out to the terrace, this is where the live stations such as the Robata Grill and Ramen Noodle Station are. We try a small portion of the grilled Octopus and the Ramen Noodles, again, both are absolutely delicious. If you are looking for some of the best sushi in Abu Dhabi without breaking the bank, we would highly recommend Café Sushi. Offering a relaxed atmosphere but with the five-star service you would expect from Fairmont Bab Al Bahr, Café Sushi earns its place amongst the best places to enjoy sushi in the city. The high-quality ingredients, well trained culinary team and reasonable price point ensures that we will be back again. The Department of Culture and Tourism - Abu Dhabi has announced that the fourth edition of the Mother of the Nation Festival will return to the UAE capital from 12th to 23rd March 2019, in conjunction with the Special Olympics World Games, which is taking place from 14th to 21st March. More than 7,500 athletes from 192 countries are set to participate in the Games, which are being held in the Middle East and North Africa region for the first time. The festival pays tribute to the living legacy of the original ‘Mother of the Nation’, HH Sheikha Fatima bint Mubarak, Supreme Chairwoman of the Family Development Foundation, Chairwoman of the General Women’s Union and President of the Supreme Council of Motherhood and Childhood. Healthy Coconut Pancakes Prep time: 5 mins

Cook time: 15 mins

Ingredients • 1/4 cup coconut flour • 1/4 teaspoon baking soda • 2 tablespoons of smooth peanut butter • 2 eggs, slightly beaten • ½ tablespoon maple syrup • 1 medium banana, mashed • ¼ cup coconut milk • 5 tablespoons of coconut oil Toppings • 2 cups fresh raspberries • Maple syrup 1. In large bowl mix the coconut flour and baking soda then set aside. 2. In a separate bowl, mix together the peanut butter, eggs, maple syrup, banana and coconut milk until smooth and well combined. Add the coconut flour and baking soda and mix well, mixture should be thick yet wet. You can add a little bit more mix if you need to. The mixture should be like that of a brownie mixture. 3. Heat a pan and add a tablespoon of coconut oil. Then add the mixture and spread, cook until the edges are golden brown. Be sure not to make the pancakes to big or thick as they will take longer to cook. 4. Finally take the maple syrup drizzle over the pancakes, top with fresh raspberries and enjoy!

Initially we were slightly unsure if we should try the exfoliation however, we are left extremely pleased with the results and our skin feels soft for days after. Guests will have the opportunity to customize their massage, after some discussion with the therapist I select the Deep Tissue Massage whilst my partner opts for the classic Swedish Massage. The therapist advises that the Deep Tissue Massage will focus on soothing deeper layers of muscles and is especially helpful for sore shoulders. The Swedish Massage technique aims to relax the entire body. This is accomplished by rubbing the muscles with long gliding strokes in the direction of blood returning to the heart. The treatment is performed to perfection and leaves us feeling relaxed. We then enjoy the sparkling beverages with a few sweet treats, a great ending to our Rare and Refined Experience.
