Art On A Plate
The third edition of Chef’s Table Dining Series – Art On A Plate will take place from the 1st November to 15th December 2020. This edition will challenge Abu Dhabi’s best chefs to create unique dishes inspired by art, encompassing the theme, Art On A Plate. Chef’s Table Dining Series – Art On A Plate will see some of Abu Dhabi’s best restaurants taking part. Each of the listed restaurants will be creating a delicious never seen before 5 course menu featuring vegetarian and non-vegetarian dishes. Restaurants taking part include, Hakkasan Abu Dhabi, Martabaan by Hemant Oberoi, Villa Toscana, The Signature 3, LPM, Li Jiang, Shang Palace and Verso, to name a few.
Talking about the new menu, LPM Chef Patron, Raphael Duntoye commented, “We have chosen a selection of signature dishes and also some of our newly launched creations, which we believe best represent this special project. Guests will experience the true artistic spirit and influences of the South of France - fresh, simple, colourful and inspirational, just like the food at LPM.” Each chef has taken inspiration from art influences such as famous painters, like Leonardo Da Vinci, renowned composers, like Antonio Lucio Vivaldi and so forth. At Martabaan by Hemant Oberoi Chef Gaurav’s inspiration behind the menu is Rangoli. Rangoli is an art form, originating in the Indian subcontinent, in which patterns are created on the floor or the ground using quartz powder materials such as coloured rice, coloured sand or flower petals. The menu depicts

richness, warmth and different colours, which is incredibly unique to the Indian palate. The culinary journey will represent vibrant colours and different tastes which is associated with different regions in India. This is the third edition of the already successful Chef’s Table Dining Series which will run until 2021. Throughout each Chef’s Table edition, the top performing restaurants will be invited to participate in the final campaign ‘The All Stars’ taking place 10th February to 10th March 2021. Here Abu Dhabi’s most talented chefs will battle for the title of ‘Abu Dhabi’s Most Popular Restaurant – Chefs Table Dining Series’. Bethany Kehdy X BOCA For Andalucía From 2nd to 8th November 2020, BOCA will celebrate the famous beverage of Jerez in Andalucía, Spain. To celebrate the famous beverage and all things Andalucía, BOCA will host celebrity chef and cookbook author, Bethany Kehdy for an exclusive evening on the 4th November. Guests will be able to experience a specially curated menu, celebrating the common history and lineage between the food heritage of Andalucía and the Middle East. Bethany, along with BOCA’s Head Chef, Matthijs Stinnissen, will cook four courses, comprising of dishes such as Oyster Esabeche, using locally-sourced Dibba Bay Oysters, a selection of Tapas, including Potato Kebbeh Croquetas stuffed with Basturma, Shanklish and Manchego Cream, Empanada De Conejo Y Ras El Hanout, followed by a Seayadeeya, an Arabian fisherman’s Paella delight, and finishing with a Burnt Apricot Flan with Salted Caramel. These will be served with five glasses of the famous beverage of Jerez or with a juice pairing. Bethany Kehdy is a Lebanese-American chef, best-selling author and presenter. Coined by her peers as ‘a new champion of Middle Eastern food’ and ‘a modern Claudia Roden’, her cooking style has been described as original, thoughtful, sexy, and whimsical. Her two books, The Jewelled Kitchen (2013) and The Jewelled Table (2018), published in the UK, and distributed in over 30 countries, with several translations, have become consistent classics. Homegrown Goodness At The Pangolin
Having recently opened at The Els Club in Dubai Sports City, The Pangolin is the brainchild of a collective of creative minds that include renowned restaurateur Sergio Lopez and Australian cook Troy Payne. The Pangolin has been created with the community in mind, sprawling across two floors on a 60,000sq ft plot. The food and beverage complex is made up of two relaxed and casual restaurants, two bars, a private dining room, a member’s room, and a first-floor terrace that has been designed to be an urban sanctuary, thanks to the cosy dining area encompassed by plants and surrounding greenery. Devised by cook Troy Payne, who passionately believes in championing local farming and using local produce, the menus for the different spaces within The Pangolin complex feature vibrant dishes where tradition, passion and nostalgia are the main ingredients. Inspired by family feasting and traditional cooking methods, the culinary team at The Pangolin prepare a wide range of Cured Meats and Cheeses on site, as well as working with local farmers to serve up sustainable produce and a menu with real heart and soul. On our latest cuisine adventure, we head to The St. Regis Saadiyat Island Resort, Abu Dhabi, where the hotel’s exceptional culinary team have teamed up to bring together the best dishes of their three bespoke restaurants under one venue, The Signature 3. The Signature 3 opens daily from midday to late into the evening and combines modern Greek cuisine inspired by the internationally renowned MAZI restaurant, the South East Asian dishes of the flavoursome Sontaya and creative recipes of the Pacific Rim from the popular Buddha-Bar Beach. Here you will embark on a multi-layered journey around the world, full of stimulating tastes and flavours. Located at the lobby level, The Signature 3 exudes an instant atmosphere of decadence. Whether you choose to dine indoors or outdoors, there is an instant air of indulgence and if you visit during the daytime you will see beautiful, uncompromising views of the beach too. Choosing a starter is not an easy task. Among some of the attractive hot and cold dishes is the Wagyu Maki Rolls, Ceviche, Vietnamese Vegetable Spring Rolls and a wonderful selection of freshly prepared Salads. We opt for the Mazi Jars; comprising of three appetising traditional Greek dips, including Tarama (seafood), Tzatziki (creamy yoghurt, garlic and mint) and Patzarosalata (beetroot), served with a side of Warm Leek Bread for dipping, a true staple in any Greek family home or restaurant. We also tuck into the BBB Crispy Lobster Dumplings. Served with Chili Oil and Tom Yum Cream Sauce and topped with strikingly delicate Green Papaya and Carrot Salad, these melt in the mouth with each bite. Alongside the Crispy Lobster Dumplings comes the Mazi Courgette Cakes, presented beautifully with a light Cucumber and Herb Dip. This particular dish is presented so well we felt guilty cutting into the Courgette Cakes, an emotion that is quickly overridden with pure enjoyment upon our first bite. Calming mood music and the soft Abu Dhabi autumnal breeze set a relaxed atmosphere as our main course is served. We opt for the Chargrilled USDA Beef Tenderloin that has us salivating at first sight, it is served with Chargrilled Spring Onion and a mouth-watering sauce made of Chili Flakes and Sesame Seeds. The Mash Potato is not the simple kind you may be used to, at The Signature 3, Maris Piper Potatoes are mixed with Shiso Butter, Spring Onion and Lime for a smooth and flavoursome punch. We also order the Black Pepper Tofu made up of Crispy Moringa Silken Tofu, Red Sweet Pepper, Sugar Snap Peas and Chinese Cabbage tossed in a Spicy Black Pepper Sauce and served with a generous portion of Jasmine Rice. Beautifully cooked and incredibly crunchy, this dish did not disappoint.
To ease some of the chocolate guilt, we also opted for a somewhat lighter option with a Greek Yoghurt Panna Cotta. Served with Wild Berry Compote, Dehydrated Raspberries and Basil Ice Cream, this dish is clean and fresh but also complex and delicate. The desserts look fantastic and finish the evening on a great high.
After our starters and main course, expectations for dessert is high. The dessert menu is a dream for those who appreciate a good dessert and a nightmare for anyone watching their waistline (unless you opt for the Mint Caipirinha Fruit Salad, that is). Forever being a weakling for a chocolate dessert the Chocolate Sphere seems the obvious choice. It is also a choice I did not regret.
The freshness, quality and portion sizes were all precise. The Signature 3 took high expectations and exceeded them by producing the most dazzling menu in a beautiful setting. The marriage of various global cuisines is sensational and will certainly have us returning for more.
The hand crafted spectacle composes of a flourless Chocolate Cake, Cherry Compote, Vanilla Ice Cream, and Salted Cocoa Crumble, emphasizing just how much care and attention goes into creating this masterpiece. The visual drama is further heightened by a dash of gold foil and a surrounding pool of luxurious Manjari Hot Chocolate Sauce which all comes together to not only create one of the prettiest dishes I have seen, but also one of the best I have ever tasted.

Perhaps one of the most talked about brunches in Dubai at the moment, Waldorf DIFC is pushing the boundaries with their daring ‘The Bull Of Wall Street’ Friday Brunch. The 80’s themed experience takes iconic moments from ‘The Wolf Of Wall St’ the popular Martin Scorsese film. Home to the lively brunch is Bull & Bear, Waldorf DIFC’s stylish New York inspired restaurant, situated on the 18th floor the restaurant offers panoramic views across the city, uber-stylish interiors and the iconic hand-forged, gold bull and bear sculptures - symbolic of the famous bull statue outside the New York Stock Exchange. Having seen the movie, we arrive to the brunch with high expectations, and admittedly somewhat curious to see how the dishes served would amplify the theme. The brunch is in full (social-distanced) swing. Admittedly this is our first brunch in a long time, and we are slightly hesitant, but tables are generously spaced, and staff are taking every measure to ensure guests safety, reassuring for those eager to get back to brunch. We take a seat, order our drinks and our experience begins. The brunch is served to the table and we are told that we are able to reorder any dish we enjoy. We start with the Cold Platters, first to arrive are the Oysters, served on a bed of ice which sits atop a bed of dry ice, this dish makes quite the entrance. Following shortly behind is the Alligator Pear, Wagyu Beef Tartare and Tuna Ceviche. The Alligator Pear is delightful, small bites of pickled Avocado, Cilantro and Pomegranate on a Kalamata Rice Cracker topped with Gazpacho Jelly. I don’t try the Wagyu Beef Tartare myself, but I can see the table is enjoying the dish, instead I turn my attention to the Tuna Ceviche, a Yellow Fin Tuna with a zesty Jalapeno Dressing. Moving onto the Hot Platters the table enjoys the Truffle Mushroom Arancini and Crab Cakes so much so that we order another portion. The Mini Bull & Bear Burgers are a more casual dish than we’d expect at brunch, but its all in keeping with the theme. Our Prawn Cocktail, Beef Rossini, Josper Grilled Striploin, Wild Mushroom and Peas Mac N Cheese alongside Grilled Corn on the Cob make up the mains. The highlight is the Beef Rossini and Josper Grilled Striploin, both superbly presented.

With the band providing most of the live entertainment for the afternoon all attention turns to them as they instigate that heart-thumping theme tune moment (if you’ve watched the film you’ll understand). This is shortly followed by my favourite part of the brunch, the money guns! The team ‘makes it rain’ with Bull & Bear designed dollar bills and brings out the child in every adult in the venue, be sure to look out for the golden tickets, offering a range of prizes. Dessert is designed for sharing and brunch goers have three options, Ring The Bell, Magnum Cheesecake and the Jackpot. Our favourite, and mostly likely the one you’ve seen flooding your Instagram feed is the Jackpot. How would we describe it…risqué… slightly...pushing the boundaries…possibly..just the thing you need to get the whole city talking about your brunch…definitely! This brunch is ideal for those looking for a lively but yet classy brunch with a variety of dishes. We like the fact that we can reorder certain dishes, and this proves helpful for those on the table with certain dietary preferences.

Today we are venturing to InterContinental Dubai Marina to experience Michelin-starred British Chef, Jason Atherton’s Marina Social. Promising a taste of home, with touches of innovation, the British-Mediterranean inspired menu includes favourites such as Beef Wellington, Wagyu Steak Tartare, Roasted Duck Breast and Roasted Cod to name a few. We’ve opted to visit Marina Social at 4.00pm on a Saturday afternoon, strategically missing the crowds and allowing ourselves a more leisurely dining experience. Although offered one of the best tables in the house, outside on the terrace overlooking the buzzing Dubai Marina, we opt for a table inside, close to the open kitchen. A quick browse of the menu and our order is placed. Whilst we wait for our starters to arrive Chef surprises us with the English Breakfast ‘Tea & Toast’, Smoked Bone Marrow and Brown Sauce. Inspired by the traditional English Afternoon Tea, the teapot contains a rustic Wild Mushroom Soup that we carefully pour into a teacup filled with a rich Parmesan foam. This with a side of Toast smothered in homemade HP style sauce almost makes us feel like we’ve fallen down the rabbit hole, and we like. A short while after, our starters arrive, Alaskan King Crab Tart, Goat’s Cheese Churros and the Italian Beef Tomato Burrata. Let’s discuss the Burrata, served within an Italian Beef Tomato, drizzled in a 25 year old Balsamic and presented with a Tomato Salt and a Tomato Juice Palate Cleanser (more on that later). In a city where every menu serves Burrata we must applaud the team at Marina Social for their unique approach. As we cut into the thick and luscious Italian Beef Tomato the Burrata oozes onto our plate. To taste, we like the ratio of Tomato to Burrata. The Alaskan King Crab Tart offers a much zestier taste, with Avocado Puree, Pink Grapefruit, Lemon Gel and Radish, the Tart, made inhouse is light and allows the other flavours to be enjoyed. The Goat’s Cheese Churros cause some debate amongst my dining companion and I, personally I adore them, whilst my dining companion finds the flavour composition to be too sweet. Finished with the Tomato Juice Palate Cleanser, which is made from the juice of the Italian Beef Tomato. Before the main course arrives, Chef treats us to a delicious Poached Halibut, which is served with Charred Broccoli, Shallots, and a delightful Parsley, Coriander and Lemongrass Puree. Elegant and fragrant, the table falls silent, the Halibut melts like butter, elevated further by the puree, the perfect blend of creaminess and tang. November | 27
We are torn between the Social Roast and a few dishes on the main menu. Eventually my dining companion (who has been vegetarian for a whole 24 hours) opts for the Beef Wellington, apparently too tempting. I select the vegetarian option, the Cauliflower Roast. Not wanting to miss out on the much talked about Social Roast experience my dining companion asks the waiter if he would kindly change the 2 sides to that from the roast menu, the team kindly oblige. Arriving swiftly to the table is the perfectly cooked Beef Wellington, my Cauliflower Roast, two types of Roast Potatoes and two types of Gravy (vegetarian and non-vegetarian) Cauliflower Cheese, Yorkshire Puddings, Snow Peas and Red Cabbage. Extra points for the Yorkshire Puddings, at just the right height, these towers of goodness offer a taste of home. We debate ordering dessert as we’ve eaten enough to see us through the winter, but the team insist. Chef offers an assortment of indulgent desserts including, Mango and Yoghurt Cheesecake with ‘Hobnob’ Crumble, Sticky Toffee Pudding with Banana Ice Cream and a Strawberry Soufflé with Madagascan Vanilla Ice Cream and Pistachio. Our advice, order the Sticky Toffee Pudding, you won’t be disappointed.

We would highly recommend visiting Marina Social at the Intercontinental Dubai Marina, book a table outside on the terrace and enjoy the spanning views whilst you dine. Koko Bay On The Palm Heats Up

Timed perfectly to capture the cooler winter months, Koko Bay opens on the Palm Jumeirah, located in the West Bay development, with stunning views of the Marina. While parking may be a bit confusing - this is a new development after all, the frustration is worth it. Finding ourselves on the boardwalk, the entrance to the restaurant is actually on the beach side and takes full advantage of the ‘wow factor’ that is the Marina backdrop. Following all local safety standards, my dining partner and I are shown to one of the best seats in the Bali inspired interior. With floor to ceiling windows, rattan furniture, and lots of natural elements, we’re instantly transported. The outdoor terrace is vast and offers a unique spot for al fresco dining, complete with a semi-private beach, cabanas, and other seating (that allows pets) to enjoy the ideal beach weather. The extensive menu caters towards an international seaside approach, and my dining partner and I sit down to review our options. With a mix of Asian and European dishes, nearly every diner should be able to find something they enjoy (and yes, that means you can order both a Burger and a Sushi Roll). For lunch, rather than Edamame or the Chicken Karaage, we start with crispy Vegetable Chips, which are served with Garlic Aioli. The taste is moreish, but the price seems just a bit high for
dehydrated veggies. We also decide to split the Atlantic Crab, with Poached Prawn. The inclusion of Fennel, Lime, and Chili is excellent, even if perhaps we would like a touch more salt and heat. From the salads we order the Nom Nom Asian Crunch salad and choose to add Prawns to our order for an additional AED 20. The Soy-Sesame Dressing and Lychee keeps things interesting. Also, from the salad section of the menu we decide on the Beet and Burrata salad. We do debate between our favourite starters, and whilst I much prefer the Atlantic Crab, with Poached Prawn my dining partner leans more towards the Beet and Burrata salad. The selection of mains is almost overwhelming, and the menu caters to everyone with dishes like the vegetarian and gluten free Tomato and Burrata Risotto, the vegan Thai Green Curry and the carnivorous Slow Cooked Beef Cheeks. Dishes are clearly labelled making the selection process swift. My dining partner selects the healthy Salmon Teriyaki, which is grilled and served with Organic Black Rice. I choose the Pad Thai with Prawns (for an extra AED 20 for Prawns). Both of our dishes arrive as generous portions, and the Pad Thai could definitely be split between two people. My dining partner seems more than happy with her selected dish and praises the balance of sweet Teriyaki against the texture of the grains. November | 37

I’ll be upfront and admit that this is my first visit to Seven Sisters. However, my dining partner and I have picked an excellent time to visit, as we get to experience the new menu at the restaurant, created by acclaimed UK Chef, Erren Gem. Chef Gem has 11 years of working in globally renowned restaurants, most recently in London. With his arrival to Dubai, he’s made notable changes to the menu, which showcases Mediterranean, Asian, and American flavours.
To start, we receive freshly prepared Guacamole with Plantain Chips, and both agree that while the Plantain Chips are a nice touch, we could definitely use a bit more salt. Sushi lovers will not be disappointed, as we receive one of our favourite dishes of the evening, a massive platter that contains a few favourites such as, California Roll, Prawn Tempura Roll, and the Salmon Sashimi with Spring Onion and Yakitori. For a similar experience, we recommend ordering the Raw Bar Platter, to get a taste of everything. And yes, we’re already looking at the Dessert Platter for our next visit. Obviously, there is plenty to choose from, and while not particularly apparent from our particular visit, vegetarians should be able to find filling options as well. We’re well looked after throughout the meal, with service inquiring how we enjoy our plates and asking if we prefer refills. Today we are visiting Melia Desert Palm Dubai to indulge in their Polo Afternoon Tea and to experience a new massage treatment at Samāna Spa. The drive to the hotel entrance sets a stately ambiance, and further emphasises the feeling of disconnecting from our daily worries. To commence our mini daycation at Melia Desert Palm Dubai we start with the Polo Afternoon Tea which, whilst still paying homage to the traditional British Afternoon Tea, has taken inspiration from the legendry polo associated with the property. The selection of tea varies from the classic Black Tea, Earl Grey and Assam Breakfast to Green Tea, White Tea and to the more exotic Herbal Infusions of Blackcurrant and Hibiscus. It is refreshing to see that there is a separate coffee menu and a range of milk alternatives available. We learn that the coffee is roasted fresh to order by local roasters, ensuring that the beans are a maximum of 14 days from their roast and ground to our cup. I opt for the Coconut Milk Cappuccino, which the waitress executes exceedingly well. Our Afternoon Tea arrives and we are presented with a classic three tier stand, two of the tiers offer a range of Mini Sandwiches consisting of Cream Cheese with Sundried Tomato and Arugula, Salmon Rillette and Cucumber, an open Smoked Salmon and Pickles, a Roast Beef with Mushrooms and Honey Dijon Sauce and an open Goat Cheese with Fresh Figs and Tomato Tapenade. My personal favourite is the Goat Cheese with Fresh Figs and Tomato Tapenade followed closely by the Salmon Rillette and Cucumber, both these sandwiches are light and favourable. My dining companion much prefers the sharp taste of the Roast Beef with Mushrooms and informs me the Honey Dijon Sauce is the perfect accompaniment. The Petit Fours include the indulgent mix of pastries, Mixed Berry Tart, Lemon Pie, Cream Éclair, Pistachio Financier, Chocolate Mousse and divine Macaroons. Served on a separate plate are the traditional Scones with

Marmalade and Clotted Cream. Be sure to ask the team to bring out the Scones once you are ready, as they are baked fresh and best enjoyed warm. Schedule your visit on a Friday or a Saturday at 4.00pm and you can enjoy an Afternoon Tea whilst watching the polo. Next we embark upon a journey of relaxation at Samāna Spa. Treatments promise a ‘focused and tailored experience with organic solutions allowing your body, mind and soul to sense a haven of tranquillity’…yes please! For today’s visit my companion will be trying the Swedish Massage whilst I opt for the latest treatment, the Connoisseurs Massage, this treatment offers a bespoke treatment combining relaxing, rhythmic oil techniques from Bali and stretching techniques from Thailand, to create a blended massage that enhances relaxation and eases tension. A bit apprehensive about the level of stretching required, my therapist quickly puts me at ease by discussing my personal requirements before the treatment begins. After the treatment, my companion and I both agree we are left feeling much more relaxed. Be sure to contact the spa before visiting as they have a
range of treatments and offers available for guest to enjoy. Overall, the Polo Afternoon Tea was delightful, paired with stunning views of the polo field, it added a touch of class. The spa was relaxing, and we felt rejuvenated and recharged after our treatments. Polo matches take place every Friday and Saturday from 4.00pm and last approximately 1.5 hours.
