Slow-smoked tenderness, charry craft burgers, premium cuts and bartender specials await, with a band setting an uplifting tone to close your week on a high. L’ETO Caffé

Born in the bustling streets of Soho, London, L’ETO Caffé is a unique destination for cakes, pastries, breads, mouthwatering meals, healthy salads and hearty breakfasts. The eatery prides itself on welcoming diners from across the globe, with friendly customer service and fresh, homemade cuisine. At first glance, words that come to mind to describe L’ETO are, opulence, elegance and colonial, from the nostalgic upholstery to the open library shelves featuring traditional British novels, a theme which continues throughout the interior. Upon entering, diners will be impressed by the white marble interior, charming Swarovski crystal chandeliers and antiques, as well as the soothing green foliage, and relaxing sofas, ideal to lounge in over a coffee. For those wishing to savor the spectacular views of the Abu Dhabi skyline, there is an inviting outdoor area which will be perfect for al fresco dining in the cooler months. As we arrive we are welcomed by the team and escorted to our reserved seating area. It’s a weekday and the place is bustling with diners, L’ETO seems to have made a big impression with the Emirati and Western crowd, we are eager to delve in and see what it has to offer. Walking past the pastries we are already starting to gather what all the fuss is about. The waiter talks us through the menu and gives us his helpful recommendations. To start we opt for the Pugliese Burrata; sweet tomatoes, basil, olive crumbs and Tuscan olive oil, Artisan Breads and Caramelized Beetroot, Dates and Goats Cheese Salad. When cut, the Burrata oozes with gooey soft velvety cheese, as for the salad, sublime.

The rest of the team order from the a la carte menu. I select the Seafood Spaghetti whilst my colleagues opt for the Spaghetti Al Pomodoro and the Beef Lasagna. The Seafood Spaghetti is mouth-watering, you can really taste the freshness of the pasta in this dish. The Beef Lasagna is scrumptious, we are happy to enjoy a Lasagna that for once doesn’t have a thick layer of cheese. Ending our experience on a sweet note we select the Lemon Meringue, Napoleon and the Ricotta Cheesecake. Made fresh daily, these sweet treats are worth the calories in every way… utterly luscious and yummy. From the drinks menu we order the Latte with Honey and Hazelnut and the Peach and Elderflower tea. From its unique interior to its Instagram worthy beverage menu… yes that’s right L’ETO Caffé have put an Instagram logo next to drinks they feel are worthy of an Instagram pic… to its array of fresh and flavorful culinary options we predict that L’ETO Caffé is not only here to stay but will soon become one of Abu Dhabi residents favorite go to dining venues. However, we would like to request the music change, the hard house didn’t quite seem to go with the classy ambiance. Trader Vic’s It all began in 1934, with a borrowed $500, a tenacious and magnetic personality, and the ingenuity to produce creations and innovations which would one day reach around the world. Victor Jules Bergeron started out by building a small bar and restaurant in Oakland, California named Hinky Dink’s and from the day the doors opened it was a huge success. Its reputation spread rapidly and people from all over the Bay Area came to enjoy its charm. Known for his habit of bartering food and drinks the restaurant name was aptly changed to Trader Vic’s. Today Trader Vic’s, the award-winning restaurant, bar and lounge has several locations across the globe. Abu Dhabi residents will be familiar with its location at Beach Rotana Abu Dhabi. We were invited to try Trader Vic’s revamped menu which has brought back classics from its culinary history and introduced new dishes to its menu. This was the first time we had visited Trader Vic’s for dinner, we had always assumed it was just a place for drinks. However, upon our arrival we were surprised to see a large dining area packed with guests enjoying a bite to eat. The lounge area was also busy as the live Cuban band kept guests entertained but the atmosphere was much more refined than we had anticipated. Trader Vic’s menu now aims to accommodate even more tastes. Guests will get the chance to experience healthier options through a selection of dishes that have been carefully prepared by Chef Jimmy, who uses steaming, grilling and wok-cooking techniques. A few highlights include the Tom Yam Kum, Thai seafood soup, lemongrass and kaffir lime broth, full of flavor this dish was delightful. One of our favorite dishes of the night was the Salmon Lomi Lomi, marinated salmon with diced mango, cucumber, red onion, red chilies, jalapeño chili and toasted sesame seeds. This was one dish we would return for, light, fresh and packed with flavor the chilis and mango offered a kaleidoscope of taste. Next the Duck Pancakes, thick cuts of duck meat, rich hoisin sauce and steaming hot pancakes ensured a ‘mmm’ in every bite. However, our favorite dish of the night was the Beef Skewers, served to the table mediumrare guests are given their own mini BBQ on which they can further cook the meat to their requirements, needless to say this was a great talking point. Guests can now enjoy a range of dishes starting with the Hamachi Ceviche to the Mango Chili Beef Stir-Fry prepared wok-style, the juicy BBQ Miso Chicken hanged and slowcooked in Trader Vic’s signature wood-fired oven, which uses unique French wood or alternatively, the Chateaubriand Steak for 2 to share, either way guests are guaranteed a superb experience. Regulars of Trader Vic’s can still find their favorites from Jalapeno Cheese Balls, Beef Cho Cho and the live cooked Beef Flambé. From the moment you pass through the Inca inspired door way you will be taken back by the vibrant yet comfortable décor, bright colourful pillows, large wooden chairs, hanging plants and dark wooden furnishing, the décor at COYA is as unmistakable as its cuisine. As we exit the private elevator we are greeted by the cheerful team, the restaurant is bustling with guests and the live band adds a buzz to the atmosphere. We take a seat by the window which offers uninterrupted views across the Abu Dhabi skyline. During the cooler months, be sure to take a seat on COYA’s large outdoor terrace. Our culinary journey begins with COYA’s renowned Guacamole, alongside a portion of Edamame, always a great start to any dining experience at COYA. Next the Trio de Maiz; grilled corn, crispy corn, jumbo corn and red chilies, alongside the Kale y Manchego; kale, candied walnuts, goji, manchego and dried cranberry, and the Ensalada de COYA; green vegetables, pepper, Peruvian olives and aji Amarillo. Although COYA’s tableside Guacamole will always hold a special place in our hearts we are equally as impressed by the flavours of the Trio de Maiz. Grilled corn may not sound like the most exciting dish on the menu, but the combination of flavours and textures will be enough to ensure you never look at corn the same way again. The Calamares con Ocopa; baby squid, Peruvian marigold and quinoa with the Serviola a la Trufa; a Peruvian Sashimi consisting of Amberjack, dashi, truffle oil and chives are also enjoyable, however, the Serviola a la Trufa is the better of the two. The Amberjack, which is just coming into season has a beautiful fatty texture paired with the alluring aroma of the truffle oil, how can we resist? Before moving onto the mains, we indulge in a few more small plates consisting of Anticuchos; marinated chicken skewers, fried on a charcoal grill with aji Amarillo and garlic. The chicken tastes sensational, the lingering scent of the charcoal grill is only further infused by the subtle hint of the garlic. The Bao de Ternera; veal, BBQ, cabbage and aji Amarillo are unmistakeable, these small bites are full of flavour.

The mains consist of Pollo a la Parrilla; corn fed baby chicken, aji panca and coriander, the Costillas de Res; beef ribs, miso and aji limo, and two fish dishes, the Salmon a la Brasa; salmon fillet, stir-fry quinoa, soy and green vegetables, alongside the Arroz Nikkei, Chilean sea bass, rice, lime and chili, with a side dish of Arroz Peruano; wok-fried rice, asparagus with sesame. Although all are fabulous, with each guest arguing their dish is the best, my personal favourite would be the Arroz Nikkei, the lime and chili give the fish a fantastic zesty taste which elevates the bulk of the rice. To conclude an exceptional dining experience, we also get to enjoy COYA Abu Dhabi’s latest addition to the menu, its impressive new dessert. Featuring four various types of dessert, an ice sculpture and liquid nitrogen, we suggest you head to COYA Abu Dhabi to try it for yourself. Venice is described by many as a jewel in the Italian touristic landscape. Celebrated throughout the world for its singular beauty, Venice and its lagoon were added to the list of UNESCO World Heritage Sites in 1987. Venice is everything from elegant, romantic, entertaining to historic. Churches, bridges and monuments echo Venice’s historic past, allowing it to become your own open-air museum. Flights and Accommodation Flights from Abu Dhabi International Airport to Venice Marco Polo Airport take approximately 12 hours with one stop, economy prices average around AED 2,000 per person. If you want to travel in style business class, also with one stop, will set you back around AED 9,670. Many of Venice’s top-rated hotels are located in the San Marco neighborhood, near St Mark’s Square, which is one of the most popular tourist areas. Visitors can choose to stay in luxury accommodation such as San Clemente Palace Kempinski, historic accommodation such as the Aman Canal Grande or directly on the Grand Canal at Hotel Palazzo Barocci. Climate Venice has a Mediterranean climate and experiences very high humidity, with hot weather in July and August, the height of summer. Tonight, we are visiting The Foundry located at Southern Sun Hotel to sample their new Wednesday Seafood and Steak Night. The Foundry offers guests quality food in a stylish setting. This popular restaurant has over time gained a good reputation as one of Abu Dhabi’s best steakhouses. Every Wednesday from 7.00pm to 11.00pm guests are invited to indulge in an unlimited array of succulent steaks from around the globe and a myriad of seafood, from fresh lobsters, prawns, salmon, mussels, crab and more. As we arrive we are warmly greeted by our hostess who shows us to our table and informs us to help ourselves to the fresh seafood, salad and oysters on the open buffet. To start we decide to create our own Caesar salad, this adds a bit of fun to the evening. Next, we visit the fresh seafood station, here we enjoy fresh lobster and crab. The large salad bar offers a selection of healthy accompaniments if you’re trying to eat well. We then make our way over to the oyster station where we try a range of French oysters. The hot buffet featured a selection of tempura from calamari, white fish to vegetable, a large cooked white fish, vegetables, mash and pasta, however we do not try these as we were more intrigued by what is happening at the grill. Ready for the main event we ask chef to fire up the open grill as we select our steak and lobster. Not to disappoint, the steak is succulent and cooked as requested. Guests can choose from USDA Wagyu Flank, USDA Angus Rib Eye or Karan South Africa Tenderloin, our favourite being the USDA Wagyu Flank, tender, juicy and flavourful to taste. Seafood lovers will find it hard to choose from the grilled salmon, shrimps or lobster. We would recommend the lobster, glazed in a garlic butter with just the right amount of charcoal essence, this dish gets a big thumbs up. To conclude, a trolley of desserts is presented tableside allowing guests to select their choice of dessert. The pastry chef has clearly outdone themselves as the choice is fantastic. Initially, with Seafood and Steak Night starting with a price tag of AED 299 we had thought it a bit on the pricey side but having experienced it and considering you can enjoy unlimited lobster, crab and oysters the price seems quite worth it. Overall, Seafood and Steak Night offers good quality steak and seafood for guests to enjoy. The highlight for us was the interactive open grill station where you can watch your seafood or steak choices being cooked to perfection by the talented chefs. The chefs here are friendly and engaging and you can really sense the passion that goes into every dish. Our only criticism is the service, which was a bit hit and miss throughout the evening. Joins Prego’s at Beach Rotana Where did you grow up? I grew up in the city of Messina in Sicily with my grandmother, mother and older brother. We were a small family at home but a big extended family in the city.

What inspired you to become a chef? As a kid, I watched my grandmother and mother wake up early every Sunday to prepare our highly celebrated feasts. Sunday for us was all about our big family gathering, we would enjoy each other’s company and the genuine flavors of homemade recipes. I watched as my mother put on her white cooking outfit and covered her hair to start the art of making fresh pasta. She made the dough, stretched and cut it into identical sizes and rolled it to perfection. On the other side of the kitchen, my grandmother was always busy making the traditional three meat sauce with tomatoes. My grandmother chose the meat personally piece by piece and marinated it with fresh tomatoes, basil, oregano and bay leaves, sourced from our little garden at the back of our house. Every ingredient used was chosen with a certain flavor in mind. The meat was cooked on our “Economic Oven” as we called it, which was fired with wood. The meat and sauce were cooked for 5 to 6 hours on a steady fire to ensure that it was tender, and the flavor of the tomato and the herbs were absorbed into the meat. My mother would then add the special sauce to the pasta to make the perfect pasta dish with the best flavor in every bite. This resulted in my curiosity into the art of cooking, it was a Sunday pleasure for me to try and replicate the studied steps of my grandmother and mother. Since then, food has become a creation to me, it is my daily pleasure, and I would not enjoy anything in the world as much as challenging and developing my culinary skills.

Who is your favorite celebrity chef? Antonino Cannavacciuolo, he is the perfect combination of charm and professionalism. He applies himself in every dish he creates and enjoys the combinations he invents. He is always confident when presenting a new dish, for he knows what he cooks belongs to him and no one can perfect it like him.

What changes can we expect to see you making at Prego’s? My strategy is mainly to introduce something new without depriving our regulars of what they always come back for. I start my day by planning a daily special of authentic origin using the ingredients that are available on the day. We pick the best quality ingredients to ensure that the final product is something that will convince foodies to try something new. My other priority is guest interaction and feedback. Every new dish served to a guest is an

opportunity for me to learn if it can be improved or permanently included in the menu. It is very important to get the guest’s feedback on the special dish of the day. For me, a dish that gains popularity is a dish that deserves to be a permanent option on the menu. Once a dish is successfully listed on the menu, it becomes the beginning of the next journey, creating and introducing new flavors. I always try to bring back an authentic Italian dish that is a specialty in my country but never got the chance to be introduced to diners outside of Italy. There are so many options that are not known to foodies, and I am aiming to make Prego’s the place for them to experience something traditionally new. Another key implementation is to train colleges on how to approach guests, to encourage them to try something new. It is difficult to get people out of their comfort zones especially when dining, so I believe that the approach can make a difference and then the dish will hopefully seal the deal! Another major priority in making Prego’s a more ‘Italian’ restaurant is the ambience and flavors. We are working hard to create our own ‘Little Italy’ at Beach Rotana Abu Dhabi.

Tell us a bit about the current trends in Italian cuisine. The up and coming trends in the Italian cuisine is revisiting the classic recipes. Chefs are now looking into ways to re-new or modernize traditional Italian dishes and reintroduce them to the guests in a fresher manner. The basics remain the same, but a couple of new cooking techniques are used. However, no matter how much technology is introduced into the kitchen, there will always be dishes that can’t be cooked except in the oldfashioned way. For me, I think that we can always try more efficient options, but we should not forget our origins.

If you could cook for one celebrity who would it be and why? As a kid, and I’m sure like many others, Al Pacino was an icon to me, the definition of manly-hood, power and success. Luckily enough, I got the chance to make this dream come true, I met Al Pacino in London and cooked him specialty dishes from Sicily, Arancini and Cannoli con Ricotta.

What do you love most about your job? Guest satisfaction! The best part of my day is when I present a new dish to a guest and get the chance to meet them and personally gain their feedback. People are the basis of my job, to succeed I need to hear feedback from them firsthand. Of course, not to mention the daily opportunity to create something new every day. We are then shown a range of oils and eventually select the Renewing Rose body oil and the Hydrating Nourishing face oil, promising to restore energy and balance. The massage is performed well, the therapist uses a selection of massage techniques from gliding strokes to kneading. The combination of these techniques ensures that any muscle tension is relieved. What is unique about this Aromatherapy Massage is that it also includes a mini facial at the end of the treatment, which again embraces the use of nourishing oils. It is the first time we have experienced this as part of an Aromatherapy Massage treatment. Another feature which must be mentioned are the massage beds, state of the art, heated and adopting a range of motion it allows our treatment to be performed with minimal disturbance. All these factors contribute to making this the best massage we have experienced in Abu Dhabi. The following day we feel fully energized and our back and legs feel much looser. We were especially excited for Sense, A Rosewood Spa’s newest range of products, EviDenS De Beauté, an idyllic skin care line dedicated to the most sensitive skin and promising the perfect combination of Japanese excellence and French elegance. The spa manager has also informed us that they will soon be launching a range of treatments featuring EviDenS De Beauté products, something for those with sensitive skin to note. Classic Pumpkin Soup Recipe Serves: 4 People Cook Time: 20 mins

Prep Time: 5 mins Total Time: 25 mins

Ingredients 1.5kg pumpkins, peeled, deseeded and chopped 5 tbsp olive oil 1 large onion finely chopped 3 cups vegetable stock 125ml double cream Package pumpkin seed for garnish

Method • Heat 3 tbsp of olive oil in a large saucepan, then add the large chopped onion, cook until soft. Then add the 1.5kg peeled, deseeded and chopped pumpkin, stir until pumpkin turns golden. Cook for 10 minutes. • Take the 3 cups of vegetable stock and pour into the pan with the onion and pumpkin. Let this boil until the pumpkin becomes soft then add the 125ml double cream and again let boil. • Take the mixture and blend. Once you are happy with the consistency add a pinch of salt and pepper. • As you are blending the soup, heat the remaining 2 tbsp of olive oil and cook the pumpkin seeds until toasted. • Pour the soup into a bowl, sprinkle with warm pumpkin seeds and enjoy!
