1 packet Santa Maria spaghetti,1 tbsp olive oil, 8 slices of bacon from Quality Meat Packers (QMP), diced, 1 onion, chopped, 1 clove garlic, minced, ¼ cup dry white wine, 4 eggs, ½ cup grated cheese, 1 pinch salt, Black pepper to taste and 2 stems chopped dhania INSTRUCTIONS

4. Serve immediately with chopped parsley sprinkled on top Classic Carbonara

A super rich, classic 'bacon and egg' spaghetti dish. Great to serve for company. This recipe also makes an unusual brunch offering.

2. Meanwhile in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels. Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in reused large skillet Add chopped onion, and cook over medium heat until onion is translucent Add minced garlic, and cook 1 minute more Add wine if desired; cook one more minute

1.In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside.

3. Return cooked bacon to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Quickly add 1/2 cup Parmesan cheese, and toss again. Add salt and pepper to taste

1 Put the onion and oil in a large pan and fry over fairly high heat for 3 4 mins Add the garlic and mince and fry until they are both brown. Add the mushrooms and herbs, and cook for another couple of mins.

3 Add red wine Bring to simmer and cook for 1 minute, scraping the bottom of the pot, until the alcohol smell is gone

This traditional Bolognese is full of flavour, a splash of red wine enhances the flavour of the tomatoes in this dish.

350g Santa Maria spaghetti, 2 medium onions, peeled and chopped, 1tbsp olive oil, 1 garlic clove, peeled and crushed, 500g minced beef from Quality Meat Packers, 90g mushrooms, sliced, 1tsp dried oregano or mixed herbs, 2 large chopped tomatoes, 300ml beef stock, 1/2 cup (125 ml) dry red wine, 1tbsp tomato ketchup or purée, salt and ground black pepper and freshly grated Parmesan INSTRUCTIONS

4. Bring to the boil, then reduce the heat, cover, and simmer, stirring occasionally, for 30 mins.

5 Meanwhile, cook the spaghetti in a large pan of boiling, salted water, according to packet instructions Drain well, run hot water through it, put it back in the pan, and add a dash of olive oil, if you like, then stir in the meat sauce. Serve in hot bowls and hand round Parmesan cheese, for sprinkling on top.

2 Season the peeled shrimps with salt and pepper and sauté them in the pan in two portions Once they get colored on both sides, take them out on a plate

500g pasta, 3 tbsp butter, 3 tbsp extra virgin olive oil, 2 Onions, finely diced, 2 cloves garlic, minced, 1 pinch red Mulsons pepper and black pepper, 1 pound shrimp, peeled and deveined, diced tomatoes ,1 tbsp tomato paste, salt to taste, ½ cup dry white wine, 1 lemon, juiced, ¼ cup finely chopped fresh parsley leaves

When the onion softens and gets a little colored, add the tomato paste. Stir to bring to a boil and add the white wine Let the alcohol evaporate for 1 minute Add the chopped tomatoes, the diced tomatoes and half of the parsley Season with salt and pepper

1.Put half of the olive oil in a large pan or saucepan. Sauté the whole shrimps over medium high heat until they turn brown. Transfer them to a plate.

3. Put the rest of the olive oil in the pan and sauté the onions, garlic and chili flakes.

Ways to Open a Bottle of Wine Without a Corkscrew

One is the aging potential of the wine, can it keep for long? And what it needs to keep for long is good acid, beautiful aromas and flavors that are pronounced. If it's red wine, you want to have a good amount of tannin that can preserve it for a long time I prefer wines from smaller producers. These producers tend to maintain the quality in production year after year.

4 What is the oldest wine you have tasted and what was it? I have had a 96 Dom Perignon,which I doubt I'll have again, until I'm very rich soon haha That was very delicious

5. What tips do you have for someone going through their first wine tasting?
