Luddenham Chef Tastes Success! A Luddenham chef has had her cooking skills recognised in Australia’s longest running culinary competition for young chefs. Sarah Musico (aged 18), an apprentice chef at The Star, Sydney went hat to hat at the TAFE NSW (Ryde Campus) in the 2017 Nestlé Golden Chef’s Hat Award and took home a silver medal. One of eleven heats across the country, the NSW cook-off saw 15 teams step up to the plate, going all out to deliver their best dishes on the day (Wednesday 12th July) to be judged against nationally recognised culinary standards. Sarah (and teammate Mahmoud Mustapha) created a herb crusted lamb loin with carrot puree, zucchini curls, braised fennel, potato chips and dill for their main and a three milk cake with strawberry, whipped cream, seasonal fruit and mint leaves for their dessert course. Sarah, who is no stranger to the competitive culinary arena, and entered the Nestlé Golden Chef’s Hat Award to see how she would stack up against other young chefs, said, “I wanted to challenge myself against other young chefs, gain more knowledge and experience working within a team environment.” Executive Chef at Nestlé Professional, Mark Clayton says, “Taking part in the Nestlé Golden Chef’s Hat Award makes you push Mahmoud Mustapha & Sarah Musico | Image Supplied

Local Residents Hike the Kokoda Trail

The infamous Kokoda Trail (aka Kokoda Track) is 96 kilometres of rugged, jungle terrain through the Owen Stanley Range in Papua New Guinea. It passes through a biologically important part of the Asia Pacific with over 4,000 plant species, along with native bird and animal species. It was also the site of a fierce battle during WW2 between the Australians and the Japanese. 625 Australians were killed and 1,600 wounded with more than 10,000 Japanese fatalities. In 2001, the trail started to become popular with hearty walkers who wanted to pay tribute or to challenge themselves with a test of endurance. It is not for the faint of heart and a certain fitness level is required. It can be very dangerous. Many have died on the trail. Silverdale resident Kimberley Cook completed the trek in 10 days, earlier this year, along with her sister Kylie Vella, her 57 year old mother Penelope Burgess, and 69 year old step father Bob Burgess, all from Wallacia. “Kokoda has always been on my bucket list” said Kimberley. “It became a reality when my mum and step dad said that they were going to do it and they would love for my sister and I to go with them as a family trip”. In spite of the extreme physical challenge, her highlights were the incredible scenery and the beautiful people of New Guinea, along with seeing and learning about the history of the trail as they walked. Penelope’s father fought on the track during WW2 and it proved to be a very emotional experience for her. They attended a very moving service at the Isurava War Memorial. “After completing the Kokoda Track, I feel like I could do anything” said Cook. “New Guinea is an amazing, rugged, beautiful place and the track really shows you what you are made of. The Good Life We Australians love “the Good Life.” And why wouldn’t we? Beach. Bush. Spectacular coastline. Space and plenty of peace and quiet in the outback. Sydney Harbour. The Blue Mountains. Even a walk along the Nepean River compares favourably! We love our long weekends. We love our holidays. We love time off. Time with friends. Watching the kids play footy. It’s all good. “The Good Life”; seems we can’t get enough of it! Yet, what do you think Jesus says “the Good Life” looks like? With much of life we are taught to be independent, to grow up standing on our own two feet. Sadly, for many of us this means living independently of God; living a life where God, at best, is kept at arm’s length or, at worst, is not included at all. Jesus says our lives should be the very opposite. God made us. He knows what is best for us. We will find meaning, purpose and fulfilment when we recognise the best way to live is the way God intended for us. No matter who we are, there are times when we wish life could be different – better. Perhaps one of the most striking and encouraging of Jesus’ claims is that people who follow him, listen to him, trust his promises and his direction for life, can actually begin to experience this good life. It has been the experience of Christian people since Jesus, as

well as those of us who belong to Mulgoa Anglican Church, that faith in Jesus, knowledge of God’s love towards us, hope in God’s promises have been a powerful force to build and sustain this good life. Confident hope. A right understanding of relationships. Purpose. Direction. Care for those in need. Freedom from fear. Peace and joy in the face of adversity, even confidence in the face of death. Pastor’s Corner As a young boy growing up, I didn’t believe that God existed, nor was Church interesting. My parents were insistent that I attend ‘Sunday School’, even if they didn’t go to Church much. Sometimes when one of my parents dropped me off for Sunday school I would wander down to the local park, returning in time to be picked up, hoping that my parents would not find out. In all my years at school, I never “waggedâ€? any lesson, but somehow God and Church, just didn’t make any sense to me at all. Aged sixteen, my Father collapsed on the bathroom floor, he had suffered the first of several heart attacks. In the weeks that followed I thought that Dad was going to die, and I was helpless to do anything about it. In desperation I cried out to God to save my Dad, well my Dad survived. From that time on, I questioned myself, Why did I pray to someone I didn’t believe in? Did God answer my prayer? Have you ever had similar thoughts? I spoke to my Science Teacher and his wife, who were active Christians, they told me about a personal relationship with Jesus Christ; it was different to anything I had heard before. One verse they shared with me was this “For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life. (John 3:16). Around the age of nineteen, I made a personal decision to follow Jesus, as the Lord and Saviour of my life. Do you know Jesus personally? The excitement of live wrestling is set to come to the local area this month, with Warragamba Town Hall hosting the Hunter Valley Wrestling Live event on Saturday 19th of August. “Wrestling fans have a fun, family friendly night out of entertainment to look forward to featuring some of the best wrestlers from all around Australia” said Grant Linstrom from Hunter Valley Wrestling. The main matches will feature a HVW Women’s Championship Match with current champion Tarlee, who is from Warragamba, facing her most prominent rival Mortar, who will be travelling from Melbourne to wrestle in the show. Other matches include HVW Champion Slade Mercer, who is originally from New Zealand, facing Mr Mortis for the Championship, a Battle Royal where 10-20 participants will compete in the ring at the same time. “I’m extremely excited to be wrestling in front of my family and friends in the place where I’ve lived my whole life. This is going to be a big night” said Warragamba’s own wrestling sensation Tarlee. Warragamba was chosen to host the event as HVW organisers live in the area and hope that bringing an exciting event like this for all the families and wrestling fans that live locally might also help boost interest in the local Wollondilly community. “The best thing about Australian Wrestling is no doubt the fans. It is equally important for the development of healthy selfesteem that children learn how to deal with disappointment. As a reaction to not getting what they want, such as being chosen for a team, children may sometimes put themselves down, saying things like: “I’m dumb”, “you hate me” or “I’m just stupid”. If this happens, try to avoid being too sympathetic. Instead encourage your child to try again after the set-back and to enjoy the activity or game even if they aren’t the winner. Rather than simply reassuring your child that everything will be okay, you can help your child develop their own sense of worth by letting them know that you understand their feelings of disappointment and that you are there to help them work out a reasonable way of dealing with that disappointment. Remember too, when you’re helping your child with an activity or with homework concentrate on effort not results. Dealing with a Pets Loss Losing a pet is never an easy situation to deal with. For many of us, we consider them as a valued member of the family as they follow our journeys and their passing can leave devastating holes in our lives. Luddenham Counsellor Vicky Nonas has been practicing for just over a year and has a long-standing interest in grief and loss. Her local business, By My Side, specialises in grief counselling and pet loss support. Grieving for a pet is very much the same as when we lose a person, and in some cases is more intense due to the social isolation and stigma attached to pet loss. The connection/ bond we have with our pets is often an uncomplicated one and is based on a fierce loyalty to one another; human relationships are by their nature very different. By My Side offers pet loss and bereavement support. “I provide counselling and support for children through to adults of any age affected by the expected or unexpected loss of a pet or that have a pet that has received a terminal diagnosis” said Vicky Nonas. “I also offer online and telephone appointments for clients unable to travel and I am available to accompany people with pets to vet appointments during terminal diagnosis”. Vicky explains that grieving is hard work and that there are no rules at that time – do what you need. She recommends these tips for people to deal with when losing a pet: 1. Be kind to yourself – you are human. 2. Eat well. 3. Gentle exercise. 4. Take ‘grief breaks’ – choose where you focus your attention; do something you enjoy. 5. Seek support from trusted friends. 6. IMB Bank Community Foundation Mulgoa Public School Helps Kinder Communications Equipment Grant Parents with young children at Warragamba’s Teddy Bear Cottage will be able to keep in touch about what’s going on after a grant from the IMB Bank Community Foundation in its 2017 round of funding. Kinder M8 software allows teachers to keep parents in touch with what their pre-schooler is experiencing that day, with every moment captured quickly and shared securely with parents, from photos and videos to eat/sleep/nappy change charts. A grant from IMB Bank Community Foundation will allow Teddy Bear Cottage to install the software, enabling faster, more efficient communication with parents, and leaving staff more time to provide quality care. IMB Bank Community Foundation announced it will support several projects in the wider Macarthur region in 2017, bringing the total funding to $1,137,581 of 93 projects in the area over the past 18 years. Penrith and its surrounding area have received $52,040 of funding in that time. Member for Mulgoa, Tanya Davies MP presented Mulgoa Public School P&C a grant of $5,000 for the upgrade of the soccer goals and the purchase of sporting equipment. The funding request came from 11 year old Nathan Agius, Vice-Captain of Mulgoa Public School. Nathan took the initiative to write to Tanya Davies asking for assistance. “I was very impressed with Nathan’s initiative and courage to ask for help on behalf of his school”. Council To Make Arrangements For A By-Election Council has received a letter of resignation from Councillor Ray Law which will take effect immediately. Mayor for Wollondilly, Judith Hannan, said “Ray was first elected to Council in 2012 and has been an active Councillor and a tireless advocate for the community. I wish him well in his future endeavours and would like to thank him for the time he has served at Council.” “Whilst it is sad to see him go, Wollondilly’s other Councillors have expressed strong support for the management and direction of the organisation.” General Manager, Luke Johnson, said, “I would like to take this opportunity to thank Ray for his contribution to the community and wish him all the very best for the future.” Arrangements will now be made to conduct a by-election to fill the Councillor vacancy. Luke Johnson has already written a letter to the Office of Local Government and the NSW Electoral Commission to advise them of the vacancy. The NSW Electoral Commission will run the upcoming Byelection. In accordance with the Local Government Act, a By-election must be held within 3 months of the notification to the NSW Electoral Commission. During this time it is business as usual for Council. Potassium - The Hidden & Maybe The Most Important Bone Protector Potassium is one of the most important bone building nutrients we can eat!! We’ve known since the early 1950s that deficiency in potassium results in reduced bone calcification in animals. Yet this nutrient is rarely talked about in relation to osteoporosis! There is a direct relationship between the rate of bone mineralisation & the level of potassium in chick cranial bones. If more mineralisation needs to occur more potassium is needed and visa-versa. Indeed, feeding small amounts of ammonium to rats (yes, the cleaning fluid) which blocks uptake of potassium in the intestines causes rats to lose bone, while feeding potassium (bicarbonate) to the same rats stimulates bone formation and even prevents osteoporosis when these rats are fed low calcium diets. Potassium seems to help control the deposition of phosphate in bone and in this way, promotes bone calcification somewhat independently of calcium intake. In humans supplementing potassium daily: 1. does not change intestinal calcium absorption, but rather 2. decreases bone resorption 3. increases bone formation and 4. significantly reduces calcium loss in urine helping the body retain calcium. Several studies show high potassium diets protect against osteoporosis. Tucker et al. showed that men and women in the highest quartile of potassium intake (about 3494–3999 mg/ day), had significantly greater hip-bone density compared with men and women in lower quartiles. In another study of 266 elderly women, subjects in the highest quartile of urinary potassium excretion (a marker that reflects potassium intake) had significantly higher total hip bone density after 1 year (5%) and 5 years (6%), and significantly higher total body bone density (4%) bone density in distal tibia total (7%) and trabecular (11%) bone densities at 5 years than those in the lowest quartile. Potassium intake levels in the modern world are a real problem. Dietary patterns have changed so much that westerners have seen a 400% decrease in potassium intake (and a 400% increase in sodium intake – see next month). The displacement of vegetables & fruit by grain products, milk & meat is the fundamental problem. In the US, 10% of men and less that 1% of women consume sufficient potassium daily. Australian’s have similar dietary patterns. Australian men eat about 2800-3200 mg, women 2600-2900 mg potassium daily. The Australian NHMRC recommends 4700mg per day to avoid chronic disease.

In paleolithic times people received between 7000-10500mg per day. You can see why we might have a problem. So where do you get it? Yes, that’s right you need to eat a large amount & variety of vegetables (especially green leafy veges), potatoes, nuts, seeds, legumes fish & fruit daily. 10 servings of veges if possible. Aussies tend to have cereal & milk for breaky, a sandwich or wrap for lunch and meat rice or pasta for dinner but not with enough veges! Potassium supplementation is not the answer – and could be dangerous for certain medical conditions. Let’s take a look at the potassium content of some different foods. You can see that the foods we eat most of are generally lower in potassium.

The Warragamba Business Association (WBA) have held our first AGM and appointed our officers fulfilling the requirements of Fair Trading, and are hitting the ground running. RSPCA Cupcake Week in August 2017 A Cupcake Day is a great way to raise awareness and money for the RSPCA. We are hosting a Cupcake Week at Orchard Hills Veterinary Hospital from Monday 21st to Friday 25th August 2017 between 9am-7pm. Pop in to enjoy a cupcake (or two!) and even a ‘pupcake’ for your beloved pet. We have made ‘pupcakes’ which are dog friendly and do not contain any chocolate which is toxic to dogs. The RSPCA is the Royal Society for the Prevention of Cruelty to Animals, a non-profit, community based charity that works to prevent cruelty to animals by actively promoting their care and protection. PupCake Recipe This special treat for your pups are sure to get the tail wagging! Remember to serve up these doggy cupcakes in moderation because we don’t want your poodle addicted to strudel! Makes 12-14 pupcakes. Ingredients 2ž cups water

Âź cup unsweetened apple sauce Âź teaspoon vanilla 4 cups wholemeal flour 1 cup dried apple pieces (you can also use fresh fruit) 1 tablespoon baking powder 1 cage-free egg, beaten slightly 4 tablespoons honey Directions 1. Preheat oven to 175°C. Spray a cupcake tin with cooking spray. 2. Mix all wet ingredients thoroughly and combine dry ingredients in a separate bowl. 3. Slowly add wet ingredients to dry ingredients, scraping well to make sure no dry mixture is left. 4. Pour the mixture into the cupcake tin. 5. Bake for 30 minutes. Insert a toothpick into the centre of a pupcake and if it comes out dry, they are ready to come out of the oven. 6. Wait until cooled to serve. 7. Store in a sealed container. Latest @ Luddenham by Wayne Willmington In recent months the RMS issued another update and the E.I.S on the Northern Road Upgrade between Mersey Road & Glenmore Parkway, they held information sessions as well as hard copies of the changes around. They have also announced a new service entry to the Airport, meaning that there will now be two sets of lights with entry into the Airport. They are also proposing a new incident management facility to be built on the corner of the realigned Elizabeth Drive & Northern Road. August is the month of Annual General Meetings, the Progress Associations meeting is on Wednesday 2nd at 8pm in the Hall, anyone that lives in Luddenham is welcome to attend and become a member (new members welcome). On Wednesday the 9th at 8pm at the Showground, the Show Society will hold its AGM,once again new members are welcome and membership is available to residents of the District (not just Luddenham). The latest news regarding the Western Sydney Airport is that the plan to have the Airport open in the year 2026 is still on target. Last month saw Police, Sheriff, and Security Guards with Locksmiths visiting residents that were still residing in Airport homes and evicting them. It was really strange no one from the Government would talk about the people that were evicted. The Luddenham Science Park is given a green light to start construction. A significant milestone for the team at Celestino which means that they are officially on the way to realizing a truly unique Science City right here in Luddenham. Margaret moved to Luddenham in 1948 when she married John Willmington and lived on Northern Road. Margaret was involved with the Uniting Church, member of the Hall & Church Centenary Committee, part of the Luddenham Show Ladies Auxiliary, taught scripture at Luddenham Public School for many years, the list goes on. Margaret passed away on the 17th July aged 90. Councillor’s Corner by Cr Matt Gould Hi and welcome to the first of what will be monthly updates from me on Wollondilly Council issues and what I’ve been doing for the area as your local Councillor. I also post regular updates on my Councillor Facebook page (https:// www.facebook.com/CrMattGould). Anyone who drives Silverdale Road knows how badly it needs to be fixed, and this is a key focus of mine. I was recently able to get a motion passed at Council so that key roads like Silverdale Road will be given a greater priority in the Council works program, and I’m working towards getting the most heavily trafficked parts properly fixed up in sections over the next few years. Council has finalised a $12.2m capital works program for this year and it includes much needed resurfacing of Silverdale Rd between Marsh & Ridgehaven Roads, which is intended to be done in asphalt. Council will also be doing a lot of geotechnical work on Silverdale Rd so that we are able to do another section next year. In other news the NSW Government has announced its intention to raise Warragamba Dam by 14 metres, and the construction of this could have a significant impact on the area. I’m fighting to minimise any negative impacts we may face, including ensuring access to the dam precinct is maintained for tourists and for our roads to be upgraded to handle the increased heavy vehicle traffic.
