Harrington Park Chefs Tastes Success! A Harrington Park chef has had her cooking skills recognised in Australia’s longest running culinary competition for young chefs. Victoria Black (apprentice chef, Campbelltown Catholic Club, aged 18) went hat to hat at the TAFE NSW (Ryde Campus) in the 2017 Nestlé Golden Chef's Hat Award and took home a bronze medal. One of eleven heats across the country, the NSW cook-off saw 15 teams step up to the plate, going all out to deliver their best dishes on the day (Wednesday 12th July) to be judged against nationally recognised culinary standards. Victoria (and teammate Mikaila Mikulic) created a two-course menu of lamb with butter poached carrots, sautéed zucchini and lamb jus for their main and a citrus tart with caramel apples and chocolate mint ganache for their dessert course. Victoria, who entered the Nestlé Golden Chef’s Hat Award to see how she would stack up against other young chefs, said, “I’ve never done anything like this before and thought it would be a great opportunity to try something different and learn some new skills.” Executive Chef at Nestlé Professional, Mark Clayton says, "Taking part in the Nestlé Golden Chef's Hat Award makes you push yourself to the next level. Attitude Is Everything Do you have kids with a good attitude? Do you see others in the traffic with a bad attitude? Do you find yourself struggling with a wrong attitude towards something (or someone) that matters? How do you fix it? After all, our attitudes are such an intangible thing. They have no physical shape, or colour, or size. They take up no space in the cupboard, or under the sink. What tools would you use on an attitude to adjust it? Where would you spray a bit of WD40 to take a squeak out? The place I look to have my attitudes tuned up is a 2000 year old Eastern spiritual handbook written by 40 authors over 1500 years. The biggest theme that I see running through its pages is humility. Humility is the antidote to pride. Humility is heart of the servant. Humility is often a stranger in today’s world and so even if we know we need it, we often don’t know where to start. The difficulty, it seems, is to find anyone who might serve as an example. Perhaps you know one or two. Fortunately, the Bible (my spiritual handbook) isn’t lacking when it comes to examples of humility. “ Each of you should look not only to your own interests, but also to the interests of others. Your attitude should be the same as that of Christ Jesus.” When I want an attitude check I should look to be more like Jesus. Choosing to put yourself second is the big idea here. Not because you’re worthless - but because you see the worth of others. Jesus didn’t just call people to be humble. In humility Jesus served us by dying on the cross in our place. Perhaps we need a little less of the attitude of the sportsmen and women, singers, and movie stars of our fame-obsessed culture in the traffic and in our workplaces. Perhaps we could turn to the carpenter from Nazareth who thought so much of you that He laid down His life for yours. That’s an attitude I could use a little more of.

Oran Park Hosts Australia’s Biggest Morning Tea The people and community of Oran Park recently came together to support the Cancer Council and raise valuable funds, with the Oran Park Sales and Information Centre playing host to Australia’s Biggest Morning Tea last month. “I had a New Year’s resolution to do something ‘charitable’, said Event Organiser Tiana Reeves. "The event took about two months to plan and prepare. I was absolutely blown away by how generous and willing people were to help and support the cause. Together, we raised $1,760.20”. The successful event included an enjoyable morning attended by many local family and friends, participating in kid’s activities such as face painting, coloured hair spraying and plaster figure painting as well as a sausage sizzle and delicious teas and cakes on offer. Tiana, who was assisted by her Aunty Brooke, knows what it’s like to have a loved one suffer with Cancer. Raising money for the Cancer Council was important to her. “I have lost 3 of my great grandparents to Cancer and my Nan and Great Uncle are both currently fighting their own Cancer battles. I have seen first-hand how this deadly and dark disease rips through people’s lives so effortlessly, leaving a trail of destruction and devastation in its path. We all know or love someone that has been affected by it. The Cancer Council relies on us to participate and support events such as these” she said. Tiana would like to thank the local community, including businesses, who supported the event. HSC Is On Its Way

This month, hundreds of students will be sitting down to one of the most important exams of their lives, the start of the HSC. A time in every student’s life where mixed feelings, anxiety, nervousness and sometimes worry creeps in and takes over. The Higher School Certificate (HSC) is the highest educational award in New South Wales schools. It is awarded to students who successfully complete Years 11 and 12 in New South Wales. The HSC is an internationally recognised credential that provides a foundation for students entering tertiary study, vocational training or employment. Oran Park student Tahlia Gonzalez-Parada is just one of our locals sitting her first exam this month and we asked her how she is preparing for her HSC and the start of the rest of her life. "Right now I’m just taking each day and exam as they come and trying not to worry too much about it. I’m most worried about my Math exams, but I’m confident that I should do ok in my English one" she said. Tahlia is hoping to achieve a score of 80 and above to pursue her dream of studying criminology.

When talking with Tahlia about her current marks, her biggest regret was not taking her Year 11 exams seriously. Most students don’t realise that these exams count towards your final HSC mark and may help with early entry into a university of choice. She couldn’t express enough how important it is for students who are heading into Year 11 next year to take note, be serious and study hard because it could be the turning point to the rest of your life. 3 tips for students sitting their exams: 1. Try not to stress or panic, don’t doubt your ability or knowledge and stay confident. 2. Attempt all questions; come back to harder ones later. 3. Read all questions carefully. They have always been made up of good cooks. They decided, with the growing popularity of “Thai Cuisine” in Sydney, to open their own restaurant in 2005. Due to the success of that restaurant, other family members wanted their own restaurants. Pet Dental Month Four out of five dogs and cats over the age of three years have some sort of dental disease. Dental disease affects a pet’s overall health and quality of life, and is just not pleasant for them. The Australian Veterinary Association’s Pet Dental Month is held each August and aims to share with pet owners the benefits of annual dental health checks and preventative dental care. What is dental disease? Plaque, just like the plaque we humans have, is the build-up of bacteria and saliva. The bacteria gradually produces acid which dissolves calcium from teeth and calcifies into tartar. The hardened tartar is usually close to the gum line. The mix of bacteria, toxin and saliva causes irritation and inflammation of the gum, or gingivitis, identifiable as a red rim on the gum around the tooth. Teeth are held to the gum by the periodontal ligaments. When an inflammation is severe enough, it disrupts the periodontal ligaments and the tooth will become loose, this is called periodontal disease. The only real way to assess whether a tooth needs to be removed is a combination of oral examination and probing each tooth, often with X-rays, just like human dentists do. Owners often worry whether their dog or cat will have issues eating with less teeth but dogs and cats usually cope well with some missing teeth or even no teeth at all. It might just be that their tongue lolls out a bit. They can often swallow food without much chewing, with the digestive tract doing all the work. The number one best way to help prevent dental disease is by brushing your dog or cat’s teeth each day. However, as this is unrealistic for some owners, there are a number of excellent oral health products that your vet can recommend from chews to special diets and supplements.
