OU WON’T FIND ORANGE COUNTY’S NEXT generation of culinary heavyweights in Laguna or Newport or Costa Mesa. You’ll have better luck venturing inland, to a nondescript office park in Santa Ana where since 2003, the Art Institute of California - Orange County’s student-operated bistro, 50 Forks, has churned out gourmet meals—think chimichurri steak and pulled pork sandwiches, although the menu changes quarterly based on seasonality and local produce selections—at incredibly affordable price points. An optional component of the Art Institute’s two- and four-year culinary degree programs, working in 50 Forks provides students with 11 weeks of valuable experience in both the front and back of the house of a restaurant, all under the guidance of two seasoned professional instructors—one of whom, Chef Ian Beach, comes from years of fine dining experience working under Michelin-starred gourmets across the East Coast and Southern United States. In class students are taught the more technical aspects of cooking, like knife skills and plating, but it’s 50 Forks where they’re introduced to the complicated mechanics of working in an actual restaurant kitchen, a system whose success depends entirely on organization and consistency. INING EXPERIENCES AT THE ORANGE County-based grab-and-go chain Bowl of Heaven begin and end with one powerful ingredient: the acai berry. Primarily grown in the Amazon rainforest in Brazil, the popular superfood is high in fiber, rich in heart-healthy fats and contains more antioxidant content than any other commonly consumed berry. In Bowl of Heaven’s kitchens, the sacred berries are transformed into smoothies, pressed juices and the eatery’s most popular offerings, bowls layered with organic hemp seed granola, blended acai berries and combinations of fruits (think bananas, strawberries
and mangoes), vegetables (kale, spinach) and sweet finishing touches like dark chocolate and shredded coconut. The restaurant, a longtime go-to for topquality sushi and other seafood dishes, features a web of clandestine dining rooms that open up to a fire-lit patio; even better than the ambience, though, is the quality of the fish flown in daily to ensure maximum freshness. Opt for lunch at the sushi bar or stop in for dinner, when the chef prepares multicourse kaiseki menus and a la carte dishes as varied as duck-topped udon and egg custard made with sea urchin and snow
crab—all complemented, naturally, by artisanal sakes and shochus.
