Australian singer Conrad Sewell's new album Life – his long-awaited first – is highly confessional. It is fitting then that he was photographed for our magazine at The Espy in St Kilda – a shrine to live music at its stripped-back, visceral best. This venue is where, through the decades, music has been at its most honest and Sewell, 31, is certainly that real deal. Anyone who has heard his powerful vocals live will know this album is the first of many. Sewell met with journalist Jane Rocca for this week’s cover feature. ●

A

RIA award-winning singer/songwriter Conrad Sewell has spent the past four years writing his debut album Life, struggling to find his voice among record company executives who all thought they knew better. Now, the 31-year-old is ready to share his story, the inspiration behind hit singles, such as Healing Hands, and studio trial and errors which provoked his new awakening. “It took me so long to get this album together, working with many producers and writers [and] being pulled in so many directions,” says Sewell, who grew up in Brisbane and now lives in LA. “The result is a really honest body of work; there’s no bells and whistles, nothing sonically lifechanging in its sound, but it’s what felt most authentic to me – to write something timeless and classic.” Sewell says the long and arduous process to make Life taught him some valuable lessons. “At one point I had Timbaland producing the record and it sounded just like Justin Timberlake. It was like we were trying to recreate Justin and I pulled away from that and started again,” he says. “It’s scary to stand up for yourself and speak up, but you have to do what makes you happy.” The new album is full of Sewell’s personal highs, lows, moments of hope and despair. There are piano ballads to tug the heartstrings, falsettos and high-pitched harmonies that would make Freddie Mercury take a peek from the heavens above and plenty of husked grit reminiscent of Joe Cocker himself. Sewell grew up listening to Michael Jackson, Prince and Queen – he was always interested in the classics – and even cited the Bee Gees as part of his formative soundtrack, thanks to his grandparents who toured with the band in their heyday. Long before launching a solo career, Sewell tried his luck with a rock band The Frets, later changing their name to Sons of Midnight. He left Australia for Europe straight after high school, signed to Universal and dreamed of becoming the next Kings of Leon. “I took out a credit card out to fund the band’s demo,” he says. “My guitarist [Matthew Copley] and I went to Sweden to write pop songs and signed to Universal, but it was a constant battle. We had some success but it wasn’t quite up there. “Then around five years ago I wrote Start Again, my first big single. Kylie Minogue even wanted to cut it. I was finally seeing a shift but it was a constant roller coaster.

“I was in LA trying to write, had no money and wondered what the hell was I actually doing. You have to have a certain amount of confidence in your ability and I was losing that feeling. “It was hard staying mentally above water,” he adds, even after co-writing the single Taste the Feeling with the late Avicii in 2016. But every time Sewell thought the doors were closing, another would open. When Jay Brown and Jay Z, founders of Roc Nation (responsible for signing Kanye West), told Sewell they had never heard a voice like his, he felt destined to sing. “It’s just what I needed to hear,” Sewell says. “That’s when I thought I am doing what I should be doing, but seriously moments before that I was ready to get on a plane and go back home.” Sewell signed to Sony Music Australia last year and the rest is ballad history in the making.

Melbourne’s home of music, The Esplanade in St Kilda, he’s on a whirlwind trip back home. Sewell says he is happy to spend time by the sea and practise meditation. “As I get older I am trying to live in the moment and take time to look outwards. I spent so much of my life searching for something and constantly not thinking about anything but my career,” he says. “I feel guilty if I go home to the beach, but it’s crazy to think like that. I knew singers like Avicii who got worked into the ground. You see in the documentary about him, how much an artist needs that space to live a normal life as much as the next person because it can get the better of you. “I don’t want to get to that point. It’s sad because it’s a fine line.” Sewell returned from a meditation retreat in San Francisco a few months ago and is willing to find

Songs such as Healing Hands reference the impact of human compassion and his own battles with drugs and alcohol. “The message behind that song is people change, but if you stick by them it can make them stronger. There’s a positive message even in the darkness I was going through,” he says. Then there’s the title track – in its Joe Cocker throttle – which is about not over-thinking it. He thanks his supportive parents for encouraging him to pursue his dream and a younger sister Grace (who will head on tour with him) for standing by him in times of need. When he takes the call for this interview, after a Domain Review shoot at

ast year, Nick Offerman and his wife, actress/musician Megan Mullally (best known as Karen in Will & Grace Grace), wrote a New York Times best-selling novel The Greatest Love Story Ever Told. It humorously plotted the story of how they met in 2000, why age difference doesn’t matter [she’s 11 years older] and how their 16-year marriage is still going strong. Now, the couple returns to Australia to perform their own shows – Offerman on stage with a political

show All Rise and Mullally touring with her band Nancy & Beth. The super-busy couple refuses to stay apart for more than a few weeks. Recognised for his role as Ron Swanson on NBC’s sitcom Parks and Recreation and 2014 TV series Fargo, Offerman gets political and talks about how humanity got it wrong [and right] while poking fun at the US government along the way. “In a nutshell, All Rise is a way to step back from the divisive rancour that is ruling the English-speaking


myself in this form of humorist iteration, but now, I am crazy about it. It’s addictive. To make an audience roar with laughter is one of the most gratifying feelings I have had outside of the bedroom,� he smiles. “In my mid-30s I was working steadily as an actor, was Mr Megan Mullally – a wonderful gig I still hold – and had my wood shop in LA. I was happy and content. “I thought my life had exceeded my wildest dreams and then I got cast on Parks and Recreation when I was 38. I have gotten wonderful and varied acting jobs because people knew me from other things but it put me in a new spotlight. “Nowadays, I try to organically follow what is the next good writing – be it in theatre, TV or film and taking myself on the road.� �

ow in its 11th season, MasterChef Australia has proven a fruitful formula for contestants who want to become much more than TV stars who slice, dice and smile for the cameras. Khanh Ong, who finished third in last year’s MasterChef on Network 10, is proof that you don’t need to win the series to be successful. In less than a year since leaving the show, the Melbourne-based chef has scored a spot on a new TV cooking show, signed a book deal and is now a business partner at The George on Collins, an established business housed within the iconic Collins Street building. It’s certainly not a bad effort for a 25-year-old former DJ who also dabbled in work as a fashion stylist and spun vinyl at VIP parties attended by celebrities such as Miley Cyrus and Justin Bieber.

“MasterChef was great for me, I would not have “MasterChef had the chance to do what I am without it,” says Ong, who was born in an Indonesian refugee camp to Vietnamese parents and grew up in the southeastern suburbs of Melbourne. “I would have stuck with my vlogging and writing a food blog and hoped it would lead me somewhere, but MasterChef opened doors a lot quicker and if you’re a determined contestant you can get things happening much faster.” The Asian-inspired menu at The George on Collins captures the flavours of his Vietnamese upbringing and reinterprets some dishes he ate as a child. He worked alongside head chef Quim Hernandez to curate the menu. “The flavours in all the dishes are very Vietnamese; with some modern takes on classic recipes,” Ong says.

“Some are peasant home dishes that you wouldn’t necessarily find in any restaurant.” Ong says a popular dish, and one that has many diners curious, is the caramel rockling with crispy pork belly. “People don’t necessarily see the connection between the rockling and pork, but I grew up eating it and it’s delicious,” he says. “Combining a river fish with pork in a sauce that is peppery and sweet is a definite highlight. I was accustomed to the flavours growing up and now I get to show others.” Ong, who also auditioned for Channel Nine’s The Block, was keen to shift gears from DJ work to a role where he could channel his passion for food. “I never thought I would start a restaurant this early in my career but when Greg Kahan [owner of the original venue The Long Room] approached me

to join forces I couldn’t resist,” he says. In another career coup, Ong will also co-host Network 10’s afternoon cooking show My Market Kitchen, alongside 2016 MasterChef Australia winner Elena Duggan. “I am doing exactly what I want to be doing,” he says. “Who knows what the future holds. t’s 7am. The sun is rising over the Bukit Peninsula and the whirring of our coffee machine breaks the silence. I wander out to our private pool garden where I can see the sea shimmering below. It’s another magical day on this serene and spectacular part of Bali’s southern coastline, and my new Happy Place. My aim on this trip is to clear my mind from the grind of Melbourne, so I needed somewhere friendly, warm and private – and to be surrounded by dining opportunities. Overlooking the infinity pool on the edge of the cliff, Cira also is a deeply relaxing place for dinner or lunch. We ordered capsicum chilli dip with amazing just-made warm bread, a grilled and smoked watermelon salad followed by the seafood platter – an array of octopus, barramundi, calamari and prawns. We finished with a lemon tart and a dark chocolate fondant. We did not hold back. The buggy seemed to be straining a little on the way home. The Alila Villas Uluwatu is a long way from the craziness of Seminyak, so this suits if you want to get away from all “urban� action. There’s no nightclubs or loud bars, just serenity and amazing views.

But you’re not remote here. If you can tear yourself away from the resort, nearby there are some amazing places to see. One of the world’s most famous surfing spots Uluwatu - is a short car trip away.

It is an absolute must-see while you’re here. An excellent day trip is a morning watching the surfers tackle the various peaks from one of the cafes, and then an afternoon on the beach, just a few minutes drive away. A similar distance away is Jimbaran Bay where the celebrated fish restaurants are great fun. Do I recommend it? Absolutely. I liked that it was luxurious but still had a low-key style about it. There’s wonderful eating, the Alila’s spa will put you in the deep relax zone, and you can chat to others by the communal infinity pool, or just hang out in your villa. A healthy knock at the door

love cooking, but I’m not going to lie – since my little daughter, Willow, was born nearly two years ago, Uber Eats and Deliveroo have become our friends. According to the following stats, we’re not alone. A recent study by finder.com.au found that there are 68 million online food orders each year and more than 7000 orders placed every hour. That works out to be about $2.6 billion each year that Australians are spending on meal delivery. With this in mind, I thought it might be good to give some tips on the good, the bad and the unhealthy of at-home food delivery. BURGERS \ Sam approved: Grass-fed beef or

organic meat patties/veggie patties, salad and healthy fillings. Skip it: Greasy bacon, brioche buns, heavy sauces/aiolis, too many chips and soft drink. To really step it up health-wise, opt for a lettuce

bun, mushroom bun or bun-free. If that’s not for you, try to get burgers with a traditional bun. Go easy on the sauce and limit the chips. PIZZA \ Sam approved: Wood-fired pizza. Skip

MEXICAN \ Sam approved: Grilled fajitas, softcorn tortillas, salsa, salads and corn. Skip it: Enchiladas, sour cream, bulk cheese and too many corn chips. Mexican salads are delicious as they often use salsas, beans, guacamole and other flavoursome additions. It can be easy to fill up on corn chips when you’re hungry but give these a miss and have grilled corn instead, or just wait until your main meal. Fajitas are a better option than burritos as they come with grilled meat and vegetable and a fresh corn tortilla. Yum.

INDIAN \ Sam approved: Tandoori meats, spinach or tomato based sauces, with a little bit of plain naan. Skip it: Butter chicken and deep-fried snacks.
