An update from Championship City Boxing, who received the $10,000 donation from Project Give Back

“This email is long overdue!

Just a follow up on the donation DTL made to my boxing club last year.

After receiving the $10,000 donation from project give back we put that money away to save for our new boxing ring, about four months later we finally had enough to make the purchase! Such a big thanks to DTL and the team who voted for us and made it possible! We now have a regulated competition sized ring that we can use to host shows to raise more money for the club.

Planning to host our first show sometime in the new year. See pictures below, I included a picture of 2 of our competitive students and a few word from them.

Also a picture I thought you’d get a kick out of, the one and only Darryl Walker and myself at age 11 as he is preparing me to step in the ring for my first fight. Thanks for reading and thanks for being such great amazing people!”

Recipe of the Month

Best Queso Recipe

Ingredients

1 tablespoon butter

1 shallot, diced

2 cloves garlic, minced

1-2 jalapeños, seeded and diced

1 1/2 cups half & half, or evaporated milk

2 chipotle chiles, diced (canned in adobo sauce)

1 tablespoon cornstarch

4 ounces cream cheese, cut into cubes and softened

1 teaspoon yellow mustard

8 ounces smoked cheddar cheese

4 ounces sharp cheddar cheese

Directions

1. Place a medium-sized pot over medium heat. Add the butter, shallots, garlic, and jalapeño. Saute for 3-4 minutes to soften, then add the half & half and chipotle peppers.

2. Whisk in the cornstarch. Allow the mixture to come to a simmer, so the half & half can scald (not necessary with evaporated milk). Then lower the temperature to medium-low. Next stir in the cream cheese and mustard.

3. Slowly start adding the shredded cheese. Stir and add by the handful, until the sauce comes together. If you prefer your cheese sauce a little thinner, add an extra splash of half & half. Serve immediately, or keep warm in a slow cooker or fondue pot.

We are thrilled to see the planning of Project Tiny Hope make great strides in recent months. Project Tiny Hope is a partnership between the YWCA, Doug Tarry Homes and Sanctuary Homes, with the goal to build 40 tiny homes comprising of 1, 2, and 3 bedroom detached, semi-detached and townhome rental houses in St Thomas, Ontario. The homes will be owned by the YWCA and will offer deeply affordable rent to community members, with 50% of the units dedicated to women and women-led families, 25% to youth 16-25 years of age, 10% to Indigenous individuals, as well as seniors, families, and other community groups. On January 16, the public meeting for zoning approval was held and we were thrilled with the warm welcome and great conversation around the questions that were raised. We are actively working on fundraising and will be applying for CMHC’s Rapid Housing Initiative funding next month. Would you like to help turn this Tiny Hope dream into a reality?
