Grilling in the name of

When 17-year-old Binny left Blackall and moved to the city Darwin in northern Australia, one could argue, his fate was sealed. Darwin was then as it is today, a melting pot of European and Asian cultures. Here, as he had the opportunity to trawl through markets and shops selling produce he’d never seen or tasted be fore, a new world of foods opened before his eyes. “I was instantly hooked and wanted to incorporate all the new exciting ingredients into my own cooking”, he recalls. Not long after, young Binny made up his mind to be a chef. “Working in a kitchen is a great outlet for creativity. I was attracted to the idea of working in a tight-knit group who worked as a real team to get a job done. The job as a chef ticked all my boxes.”

and ZeroMission promoting a sustainable development for both planet and people. The efforts are concentrated to a community of small-scale farmers in Cochabamba, Bolivia. In addition to climate benefits, tree planting contributes to an increased income for the farmers and improves biodiversity in the impor tant Amazon region.

His international experience makes him a perfect fit as the creative mastermind in Campfire - the menu is made up of an eclectic mix of familiar and unfamiliar dishes inspired by different food cultures around the world. The offering on the menu this autumn ranges from classic Mediterranean favourites and fastfood from the East, to influences from the American continents. Discover dishes like the King Oyster, the Bao Spicy Pork with turnip kimchi, and purely plant-based alternatives like the gorgeous Grilled Celeriac, and the Jerusalem Artichoke. Al most everything on the menu is prepared on the charcoal grill – a beautiful way to cook food to preserve taste and nutrients. It’s simple and natural, no fuss: food you can understand, that brings a feeling of recognition yet in the way it’s prepared, surprise.

Binny moved to Sweden in 2011 and started as Sous Chef at Campfire in 2017. In 2021, he was assigned the role of Head Chef. He is very well-liked by colleagues and coworkers, and according to his team, he’s an organised, goal-oriented le ader with an extraordinary ability to engage and motivate his colleagues. “Every day I feel extremely lucky to come to work – it’s such a great team. The people who work alongside me are a talented bunch of chefs who show up every day bustling with energy. The rebuilding of a kitchen after the effects of the pande mic are made a lot easier when you are surrounded by people with good energy and great skills - true team players.”

To Binny, this subject is of utmost importance: “The concept of sustainability, and continually striving to reduce our impact on the environment, is a core value we have here at Downtown Camper, and to me personally. It is of high importance to me that we monitor all aspects of food use and waste. We in the kitchen have a focus of minimising food waste by consistently updating and monitoring our purchasing and preparation routines, as well as planning menus accordingly. The vast majority of our food waste is transformed into renewable energies like biofuel.”

Binny Colvin - avid rugby supporter and the new Head Chef in Downtown Camper’s kitchen. Originally from tiny town Blackall in the Australian outback, this fearless Aussie is now commanding the tongs in Campfire, and with equal measures of charisma and “iron fistiness” he is setting the bar high: Campfire’s new menu is packed with exciting dishes – created, cooked and perfected by a talented team working in the hottest room of the hotel. With his laid-back and humble, yet witty “quipster” personality, he has been able to build trust, vision and motivation in a multi-faceted team of chefs. His drive? To create memorable food experiences. Oh, did we fail to mention, this guy is slightly obsessed with food.

Working with the environment has always been imperative at Campfire: The assortment is frequently reviewed according to current reports on overfishing or reduced demand. Hence, suppliers are selected carefully depending on their sustainability policies, and all the fish is MSC labelled. All the meat served at the hotel has been Co2-compensated, meaning the emissions are being balanced out by the planting of trees. It’s a brilliant project in collaboration with Plan Vivo

What was it that inspired you to take on this project?

Why photography?

assistant, and we spent all of our spare time experimenting in the studio where he worked. I started assisting too in the early 90’s and worked for two fantastic photographers for four years. In ‘94 I started my own business and a couple of years later I went off to film school. I’ve been working with both still and motion picture ever since and I love every part of it.

Stockholm-raised photographer and videographer Jörgen Brennicke describes himself as a seeker. Brennicke was born in 1967, and we must say it seems like this multi-talented dare devil has kept himself pretty busy chasing adventures in his life; were it on a skateboard, pursuing a black belt in karate, as the lead singer in a garage band, a dedicated runner, or on one of his many travels around the world. One of his adventures has taken a Downtown Camper direction, resulting in a series of 30 still ima ges that decorate the walls in the hotel’s guest rooms.

The Storyteller

Usually I work in a team. I hook up with an art director, a stylist or a make-up artist and we start to discuss what we want to achieve. In this case, I was the only one in charge of the creative. I don’t mind that at all but the pressure to get it done and make it right is slightly more intense. The goal for the Downtown Camper project was to present 30 images and combine them in different constellations for the hotel rooms. As usual I started by creating mood boards and thought about the scenes that could build this story and the people that could be part of it. The puzzle part was next; ‘what images am I lacking?’, ‘do I believe in the story?’ etc. When I could tick those boxes, I started putting together different combinations for the rooms, making sure that a story was told in each room, and con nected to the overall story that I wanted to tell about the hotel.

That’s a good question. My mother was an eccentric artist, painter, potter and entertainer and always 100% supportive of whatever I chose to do. I think that was a big part of it. When I, as a kid, started taking pictures of my skateboarding friends, using the darkroom equipment of my best friend’s dad, my passion for photography really kicked off. I started working in a camera store to learn more, it enabled me to take more pictures and try different cameras. A friend of mine had just started working as a photographer’s

For me it’s always about finding the story. E.g. why are they wearing this watch, drinking this drink or running in these clothes? I always have to believe in the images I’m creating. That’s where I start; I then think about moments that I would like to catch. It’s crucial for me to know what I’m aiming for and why, to be able to communicate that to everybody involved in the project. As we are starting the project, I improvise wildly around the story and the mood boards that I’ve made as a foundation. I love all parts of the process, but to get started - to take that first exposurethat’s always a mad adrenaline rush for me.

It’s not every day that you get a project like this. ’Please take 30 photos for the decoration of the rooms of our new cool hotel - we would like the images to be Jörgen Brennicke style’. Active people with Stockholm as a backdrop was the idea. I wanted to inspire people to get out there and explore. What great things can you do where you live? It’s usually more accessible than you think; to go surfing, hang out with friends, look at the view, take a deep breath and just indulge in life. When the spectator feels an urge to step in to the photo, to be a part of that specific moment, I feel like I’ve succeeded.

It was in the 90’s that this skateboarding karate kid’s professional photo career took off, followed by film school in ‘96 and thus, he began combining still photography with film. Today Jörgen works both as a photographer and Director of Photography. The search for the next story is his perpetual motivation.

Hi Jörgen! Describe your creative process.

I’m extra happy with the images that I shot on Långholmen with Mikael Trane, the son of a skateboarding friend of mine, whom I’ve been wanting to work with for a long time. Mikael is a skilled gymnast and to be out there and ask him ’could you make a flip from there into the water?’ and have him say ’sure, no problem’ was awesome. Also, to take a picture of my daughter Tindra and her two cool friends on the top of one of my favourite Stockholm spots, our local ski slope Hammarbybacken, in the summer sunset was also a blast.

What was it like working on this project?

For Jörgen, the quest for the story is imperative. His passion for photography started in the southern suburbs of Stockholm, as Jörgen kicked off his skateboarding career in the half-pipe, snapping pictures of his skating friends. His inspiration springs from people - friends and family - who often take center stage in his narratives.

To know the purpose of this initiative, one must first know the problem –which is, for the record, a global one. The Amazon region, often called “the lungs of the Earth”, is the largest forrest area in the world with a capacity to bind an astonishing amount of our man-made emissions. This massive area of lush, unspoiled rain forrest, with magnificent biodiversity and wildlife, is sadly being deforested at an alarming rate, and what’s equally sad is that the main cause of this is poverty. The area that once was bustling with life, beco mes agricultural land after the trees have been felled, and as a result of poor agricultural methods, the land quickly becomes depleted and useless as soil for farming crops.

Five years ago, Downtown Camper decided to partner up with ZeroMis sion and ArBolivia to offset the emissions from all the meat we buy at the hotel. The compensation is executed through tree planting within a com munity of small-scale farmers in Cochabamba, Bolivia. This extraordinary project is designed not only to capture carbon dioxid from the atmosphe re by planting new trees – something that also improves the biodiversity in the important Amazon region - but also, to make the local farmers an active part in shaping their own community and future. Here’s the story about a beautiful project that we hope will inspire more people to take action against climate change.

to be planted on the same area, where the smaller plants can provide inco me in the short term. It can be, for example, coffee, citrus trees, cassava, and cocoa – crops that grow fast and can provide a regular income. This type of ecology works very well as the larger trees provide shade for the small bushes which thus flourish. Experts have hand picked the native hardwood species and plants that work best together, and the locals themselves choose what they want to grow. In the longer term, when the trees have grown to their opti mal size and it’s time for them to be felled, the timber brings an income that is shared equally within the community. As the forrest consists of different types of trees, the felling becomes small-scale and to a certain extent spread over time, which also spreads the families’ income.

The social impacts of this project are both short and long term. The key is the major economic benefit for the farmer families and the sequestration of car bon that helps to counter climate change. The project enables the farmers to better manage their land whilst helping them to grow, harvest, and sell native hardwood trees. Not only does this result in reforestation, but it means the rain forrest is protected from further encroachment as well. In other words, a climate compensation project with great climate benefits at the same time as the local community develops from poverty to an area that thrives in a double sense.

A climate credit in this project corresponds to one tonne of carbon dioxide. Every credit purchased is verified and certified according to Plan Vivo, a standard that oversees all parts of a project, both the climate benefits and how small farmers are compensated and the monitoring of tree growth.

So, you get our point, this is a problem that requires a wider approach, for the people involved and for the planet. That’s where ArBolivia comes into the picture. This project provides the Bolivian farmers with a real alternative by offering a partnership between social investors and the local families. To cre ate benefits and financial incentives for the farmers to take part in the project, a so-called agroforestry is applied: It allows for both trees and smaller shrubs

Would you pay 500 sek for a sweater you will wear only once? You probably have stuff in your closet that you never really use, and you’re not alone. Reclaim control of your wardrobe – tag your clothes and make a note every time you use it. Could it be that it’s a better idea to buy something a bit more expensive / high quality that you will use often, instead of fast fashion that you will only use once or twice?

You don’t need a ticket to have an adventure. The re are over 5000 natural reserves in Sweden, all of which are contributing to the protection of wildlife and nature. If you want to experience Sweden’s most precious natural environments, steer your steps in the direction of a National Park; we’ve got no less than 30 of them in this country! Streamline your closet

Do as you do when you stay in a hotel, and sha re things with other people. Try one of the many peer-to-peer services available today. Pinning up some new shelves on the wall? Rent a screwdriver. Invited to a wedding, nothing to wear? Rent a de signer dress. And honestly, why buy an expensive car if you can rent one across the street when you need it?

As a consumer, you have the ultimate power to im pact brands and retailers. Be curious and well-in formed; ask questions to show that you care about their ethical and environmental policies. Also ask if there are available spare parts for the product you consider purchasing - if the retailer offers spare parts, they probably have a more circular and sustainable attitude. And if your newly-purchased item breaks, send it back immediately and have the vendor repair it for you. Simply put, shop with care for people and planet.

If you can’t skip the beef altogether – choose a local, free-range or eco-labelled meat from ani mals that graze out in the open. Free-range cattle actually contribute to an open cultural landscape, by maintaining important biotopes for other speci es, and this has a positive impact on the biodiver sity. If you can skip the meat, why not have a fresh veggie barbeque? There are thousands of yummy recipes and tips out there, and with a tasty BBQ sauce it’s every bit as delicious as steak - and so much more nutritious.

Buy stuff with a good second-hand value. The big gest environmental impact is at production level, so put your things to good use and make sure they get a long life. Think circular: A basic principle is to make sure the stuff you buy can be sold again once you get tired of them, and shop second hand if you can. Support your local community, make your fa vourites last longer, and use the services of skillful shoemakers and tailors.

Some numbers for you: The consumer-based emissions are on average nine tons Co2 / person and year. Five of which are from consumption. If we are to stop at 1,5 degrees global warming (the target set in the Paris agreement), we have to arri ve at one ton / person and year. You get our point, something has to be done, so why wait? Calculate your emissions in a climate calculator, and see where you as a person / household can make the biggest change. Is the secret to your sustainable lifestyle to take the train instead of the plane, eat more plant-based, or shop second hand?

Thank you Erik. So, what’s your favourite space in the hotel? Game Room. Our vision was to bring back the fun to Stockholm, and during a re cent visit to Downtown Camper, I peeked into Game Room. People were enjoy ing the space just as we had hoped they would. I saw the fun, and it was good.

The Bringer of Fun

I was contacted by Scandic in November some years ago, with a brief that explained how hotel guests are mixing business and pleasure. I thought about it for a while, and one of my first thoughts were: why are there no fun city hotels?

that prefers a fun hotel over a boring one. We wanted to create something new for modern, urban explorers. Located right in the beating heart of the city, yet inspired by nature, Downtown Camper satisfies both our longing for the great outdoors and our love for the pulse of city life. The hotel is designed to be the starting point for curious travellers who want to discover the real Stockholm.

”Why are there no fun hotels in Stockholm?” Erik Nissen Johansen knows which questions to ask and this quality has taken him far in life. His long and productive career kicked off in 1988, when he founded the art collective that was later to be known as the award-winning hospitality design studio Stylt Trampoli. But it wasn’t until a few years ago, that he really saw his chance to create a hotel that stood out from the rest; a truly fun hotel with a laid-back and spontaneous vibe, where luxury is defined by generosity, sociability, inspiration and new experiences: Downtown Camper was taking shape.

First of all, Downtown Camper goes very well together with my own personali ty, it’s something I can relate to and stand for 100%. I’m very happy and proud of the global media attention the Downtown Camper project got; we’ve been nominated in no less than three categories in the prestigious AHEAD Awards, and that speaks for itself. And being named the “The World’s Best Hangout” by National Geographic (my favorite magazine) was more than we ever expected.

Downtown Camper’s success continues as the hotel is elected the “Best Hangout” at National Geographic Traveller’s Big Sleep Awards, and “The Most Innovative Hotel” at White Guide Awards.

In September, Downtown Camper opens its doors for the first time. With an exciting, personal style, ground-breaking design, and a dedicated team of staff members with the focus set on giving the hotel guests a unique experience in Stock holm, the hotel quickly climbs to star levels on review sites and in the press.

Come January, and The Nest opens on floor nine. The modern wellness retreat is shortly ap pointed one of the world’s best rooftop pools by the magazine Forbes.

2017 - 2022

This is also the year that Downtown Camper presents its very first second hand market for adventure gear and outdoor equipment - the Outdoor Loppis - together with friend and partner Adventure Stories.

Downtown Camper teams up with Erik Ahlström and his organisation Plogga to promote an active and sustainable lifestyle. and to clean up the streets of Stockholm. Guests and locals are invited to take part in the activities which involve picking up rubbish as you run through the city.

This year, Downtown Camper also kicks off a new collaboration with A Non Smoking Generation to promote a tobacco-free and healthy community.

2021

Downtown Camper celebrates five years as Stockholm’s basecamp for urban explorers.

2022

2019

Downtown Camper launches the DC Podcast Studio which shortly becomes a popular hub and meeting place for big and small podcasters.

2020

In the spring, a brand new and exciting activity is launched together with adventurer / moun tain climber Renata Chlumska, Husky Podcast, and the app Storyspot: “The Seven Summits of Stockholm” becomes a popular challenge where guests and locals are taken on an urban expedi tion with Renata as their virtual guide.

Downtown Camper is assessed and certified by the Nordic Swan Eco Label - one of the world’s toughest environmental certifications. A few months later, the building receives the presti geous LEED Gold certification, one of the topclass environmental assessment systems for the environmental performance of a building.

In September, Downtown Camper launches Roots, a 1300 sqms large multi-flexible events area that can accommodate up to 650 persons. The adjacent Camper Café offers sustainable food and beverage options to event guests, locals, and bypassers.

You are not allowed to talk on your phone, but if you want to take a picture as a memory to keep from your visit, you are more than welcome. Children are amazing, but up here, they are not our primary focus - we have other spaces in the hotel where kids can be kids. This is a place for adults to socialise and regain energy.
