Binny Colvin - avid rugby supporter and the new Head Chef in Downtown Camper’s kitchen. Originally from tiny town Blackall in the Australian outback, this fearless Aussie is now commanding the tongs in Campfire, and with equal measures of charisma and “iron fistiness” he is setting the bar high: Campfire’s new menu is packed with exciting dishes – created, cooked and perfected by a talented team working in the hottest room of the hotel. With his laid-back and humble, yet witty “quipster” personality, he has been able to build trust, vision and motivation in a multi-faceted team of chefs. His drive? To create memorable food experiences. Oh, did we fail to mention, this guy is slightly obsessed with food. When 17-year-old Binny left Blackall and moved to the city Darwin in northern Australia, one could argue, his fate was sealed. Darwin was then as it is today, a melting pot of European and Asian cultures. Here, as he had the opportunity to trawl through markets and shops selling produce he’d never seen or tasted before, a new world of foods opened before his eyes. “I was instantly hooked and wanted to incorporate all the new exciting ingredients into my own cooking”, he recalls. Not long after, young Binny made up his mind to be a chef. “Working in a kitchen is a great outlet for creativity. I was attracted to the idea of working in a tight-knit group who worked as a real team to get a job done. The job as a chef ticked all my boxes.” Binny moved to Sweden in 2011 and started as Sous Chef at Campfire in 2017. In 2021, he was assigned the role of Head Chef. He is very well-liked by colleagues and coworkers, and according to his team, he’s an organised, goal-oriented leader with an extraordinary ability to engage and motivate his colleagues. “Every day I feel extremely lucky to come to work – it’s such a great team. The people who work alongside me are a talented bunch of chefs who show up every day bustling with energy. The rebuilding of a kitchen after the effects of the pandemic are made a lot easier when you are surrounded by people with good energy and great skills - true team players.”

and ZeroMission promoting a sustainable development for both planet and people. The efforts are concentrated to a community of small-scale farmers in Cochabamba, Bolivia. In addition to climate benefits, tree planting contributes to an increased income for the farmers and improves biodiversity in the important Amazon region. To Binny, this subject is of utmost importance: “The concept of sustainability, and continually striving to reduce our impact on the environment, is a core value we have here at Downtown Camper, and to me personally. It is of high importance to me that we monitor all aspects of food use and waste. We in the kitchen have a focus of minimising food waste by consistently updating and monitoring our purchasing and preparation routines, as well as planning menus accordingly. The vast majority of our food waste is transformed into renewable energies like biofuel.” His international experience makes him a perfect fit as the creative mastermind in Campfire - the menu is made up of an eclectic mix of familiar and unfamiliar dishes inspired by different food cultures around the world. The inspiration for the menu this spring is dominated by the European and the American continents: tuna tacos, ceviche, ribeye steak, and purely plant-based alternatives like the grilled portobello mushrooms and smoky broccolini. Almost everything on the menu is prepared on the charcoal grill – a beautiful way to cook food to preserve taste and nutrients. It’s simple and natural, no fuss: food you can understand, that brings a feeling of recognition yet in the way it’s prepared, surprise.

Working with the environment has always been imperative at Campfire: The assortment is frequently reviewed according to current reports on overfishing or reduced demand. Hence, suppliers are selected carefully depending on their sustainability policies, and all the fish is MSC labelled. All the meat served at the hotel has been Co2-compensated, meaning the emissions are being balanced “Hopefully this menu captures the essence of spring, providing you with some out by the planting of trees. It’s a brilliant project in collaboration with Plan Vivo familiar dishes you know, as well as some things you may not have tried before”.

Generation Plogga RECRUITING THE HEROES OF TOMORROW

Stockholm is world-known for its cleanliness - a stunningly modern city with fresh air and blue waters. But, did you know that littering still increases every year? This spring, Downtown Camper is joining forces with Plogga to clean up the streets! Plogga was founded by Erik Ahlström six years ago, and is now one of the most well-known non-profit organisations of its kind, proactively working to shed light on the growing problem of littering, advocating for changing attitudes and lasting change. And the tireless efforts seem to have had effect. Earlier this year, the Swedish government installed a new law, prohibiting littering of all kinds. Plogga started as a grassroots movement in Sweden to solve a local problem. “During my daily bike rides to and from work, I was shocked by how dirty it was. Seeing the same pieces of rubbish for several weeks without anyone cleaning it up, I finally decided to pick it up myself. And wow, what a feeling - instant satisfaction!” Erik recalls. And so, in 2016, Plogga was created. A growing number of people joined in the efforts, sharing their activity with others on social media. Long story short. Today, Plogga’s concept has spread worldwide: It is immensely popular, in fact, there are groups of “ploggers” in 100 countries around the world - and the media still follows Erik’s story curiously. It would be a profound understatement to say that Erik has a strong ability to engage people. He doesn’t pass an opportunity to share this convictions with any random person on the street. He’s the epitome of an extrovert person, his energy and enthusiasm are contagious - qualities that indeed come in handy when your objective is to shake people in their boots. Perhaps that’s what makes his brainchild, Plogga, such a global success? Starting in March, Downtown Camper will join the movement and gather guests and staff in a weekly Plogga Run every Wednesday afternoon. As a thank you for participating, you will be able to enjoy one full hour in the wellness area, completely free of charge. So, what happens on a Plogga Run then?

Well, the general concept is quite straight-forward: We go for a run through the city and pick up litter as we go. Plogga is a portmanteau of the two Swedish words “plocka” = picking up, and “jogga” = to jog. The focus is to remove plastic from the streets: Plastic, specifically, can create extraordinary devastation when it ends up in our eco system. As you probably know, plastics don’t disintegrate, and as a result, it stays as it is for many, many years. Sadly, most of it ends up in the sea: It has been estimated that 99 percent of all our seabirds have microplastics in their systems. “Predictions show there will be more plastic than fish in the oceans by year 2050 if we fail to do something about this problem. The fish eats the small plastic particles thinking it’s plankton, and as a consequence, microplastics will travel through the food chain and eventually end up in us humans”, Erik explains. To go on a run every now and then may seem like an easy thing to do, and it is. What poses the real challenge is to change attitudes and longterm behaviours – to stop the steady stream of litter, and to make people feel differently about picking up trash. It’s not uncommon that people feel a bit ill at ease about the thought of picking up rubbish in public. Plogga’s mission is to reverse this counter-productive culture and ultimately create a more long-term sustainable society. To make it socially acceptable, Plogging is a concrete, inclusive and positive solution to the problem – an activity that brings people together over a common cause. “The Plogga movement is now growing worldwide as it is a clear solution to how we can influence people on an individual level. Our ultimate vision is for the world to be litter-free - a place we can all be proud of.” Downtown Camper’s battle against littering has begun, and we’d like for you to join! The Plogga Run is held every Wednesday at 4pm and all who join will be able to enjoy a full hour of wellness in The Nest after the run - completely free of charge. When in Stockholm - A Survival Guide

Stockholm, like any other city, has its peculiarities. The Swedish capital is famous for its stunning architecture, its archipelago, shifting weather, as well as a host of modern and historical attractions. What’s less known are the quirky cultural nuances, which make Sweden so wonderfully unique. Here are seven tips that will help you get into the game quicker. Relax, soon you’ll blend in like a proper local.

ping in the open water with your friends and family. However, be forewarned, there are designated spots; you can’t just strip off anywhere. It’s also not uncommon to see men and women, completely naked, having a good old chit chat in the changing rooms at gyms and swimming houses, seemingly unfazed by their nakedness. But don’t fear, Downtown Camper has a strictly ‘bathing suit only’ policy, so you’re safe from embarrassment here.

Sorry, what? It won’t be long before the hilarious named road signs and funny phrases catch your attention. For all non-Swedes, the sight of ’infart’ (a parking lot entrance), ’utfart’ (exit), ’fartkontroll’ (speed control), and ’slutstation’ (end station), Willy’s (supermarket) is enough to send us into a fit of giggles. And the funny words don’t stop there! There are many words, which confused, could lead to some very embarrassing situations. If a Swede asks you “sex hos mig” (sex/six at my place), you might want to check their intentions. However, the chances are they just want you to come over at 6 o’clock, as sex means two things, the number 6 and yes, sex. They probably seem preoccupied with ladies underwear, continually referring to things as ‘bra’, but this simply means ‘good’. Saying they need to ‘kiss’ (pee) when they actually just need a wee. It’s all very confusing but adds a comical element to learning Swedish.

Allemansrätten The freedom to roam, or ”everyman’s right”, is the general public’s right to access certain public or privately-owned land for recreation and exercise. The Swedes exercise this general human right to its maximum; enjoying the freedom to roam in the Swedish mountains, coastlines and archipelago. There are some important dos and don’ts to bear in mind before venturing out into the wilderness. You can camp, walk, cycle, fish, swim on any land except private gardens, near a dwelling or land under cultivation. You must take care of nature and wildlife and show consideration to landowners and others enjoying the countryside. In short, don’t disturb, litter or destroy.

Naked ambition Swedes are way more comfortable with nudity than just about anywhere else in the world (well, them and the other sauna-loving nations). In any other country, if you stripped off naked and entered the sauna, you’d be met with shrieks of surprise and blushing red faces. It’s not uncommon in Sweden, however, to strip off and go skinny dip-

Just keep walking Stockholmers consider themselves early adopters. They quickly absorb the latest, greatest trends and pay no attention to the fact that they live in a cold distant corner of Europe. Instead they act like they live in Manhattan. But they never seem to be able to master all the codes of metropolitan living: Like passing a person on the street without bumping into them. In the big cities like New York and London, you rarely see any collisions between two pedestrians, but in Stockholm they can get caught in an awkward rocking back and forth situation, where as one person moves to the right, the other

moves to the left and so on until one person is able to break the spell and continue walking. Our advice here? Be safe and just keep walking. Learn the importance of ‘mys’ The Danes have their ‘hygge’ and us Swedes we have our ‘mys’. The word roughly translates to the English ‘cosiness’ or ‘snuggle’. Why not cosy up in bed and let yourself be swept away by some Stockholm fiction classics: Jens Lapidus’ hardcore Stockholm Noir trilogy, Bo Widerberg’s film ‘Mannen på Taket’ or ‘Stockholm’, starring Ethan Hawke and Noomi Rapace. The film is about the legendary Norrmalmstorg robbery in 1973, a dramatic event that produced the famous expression ‘Stockholm Syndrome’. Kicking back with a thriller is also known as ‘mysrys’. Sorry, no cash In a couple of years when the hipster scene in Stockholm has evolved even further, cash will probably be cool again. The beard-cladded men that today can be seen brewing IPAs will probably start forging their very own silver coins by then. But until then, your credit card is still king. The easiest method of payment is called Swish, a Swedish payment app. However, you’re gonna need a bank account in Sweden to use it. Go for a swim - all year round No we’re not kidding, apparently the Swedes have rediscovered water. In the dark, boring months during the pandemic, someone thought it would be a great idea to start a new mega trend: Let’s go ice swimming they said. It’ll be fun they said. Oh well, maybe not for everyone but if you’re feeling gutsy, by all means, go for it. Rumour has it that swimming in cold waters can improve your health and extend your life. Not bad, huh.
