DC Paper - Winter 2022/23

Page 1

WINTER 2022/2023

Think about how much we have, yet we long for something diffe rent. We love feeling safe yet yearn for new challenges. We raise our living standards, still we long for the fundamental, the basic. We want to live in the city but every now and then, nature calls us back. We want to be spontaneous; to be able to pack only the most essential, put on our backpacks - and just leave. We want to improvise and create, seize the day, adjust to the wind and weather, discover new paths in the forest and new streets in the city. We are not only professional or private - we are both, all of the time. We are the generation of diverse, curious and exploring ’bon vivants’.

To us, luxury is never about the surface. It’s about encounters, contrasts, experiences and inspiration. It’s having the opportuni ty to gather around the campfire instead of the TV, to hear new stories, get new impressions, or for just one moment find ourselves out of reach, offline, offgrid. Luxury to us is doing something good for other people, and to feel good about ourselves, from the inside. So, put on your backpack and a pair of shoes that works for both an expedition into the unknown and for the party tonight. Let us show you where the adventure begins – right here in the heart of the city.

Grilling in the name of

Camper’s kitchen. Originally from tiny town

Australian outback, this fearless Aussie is now commanding the tongs in Campfire, and with equal measures of charisma and “iron fistiness” he is setting the bar high: Campfire’s new menu is packed with exciting dishes – created, cooked and perfected by a talented team working in the hottest room of the hotel. With his laidback and humble, yet witty “quipster” personality, he has been able to build trust, vision and motivation in a multi-faceted team of chefs. His drive? To create memorable food experiences. Oh, did we fail to mention, this guy is slightly obsessed with food.

When 17-year-old Binny left Blackall and moved to the city Darwin in northern Australia, one could argue, his fate was sealed. Darwin was then as it is today, a melting pot of European and Asian cultures. Here, as he had the opportunity to trawl through markets and shops selling produce he’d never seen or tasted be fore, a new world of foods opened before his eyes. “I was instantly hooked and wanted to incorporate all the new exciting ingredients into my own cooking”, he recalls. Not long after, young Binny made up his mind to be a chef. “Working in a kitchen is a great outlet for creativity. I was attracted to the idea of working in a tight-knit group who worked as a real team to get a job done. The job as a chef ticked all my boxes.”

Binny moved to Sweden in 2011 and started as Sous Chef at Campfire in 2017. In 2021, he was assigned the role of Head Chef. He is very well-liked by colleagues and coworkers, and according to his team, he’s an organised, goal-oriented le ader with an extraordinary ability to engage and motivate his colleagues. “Every day I feel extremely lucky to come to work – it’s such a great team. The people who work alongside me are a talented bunch of chefs who show up every day bustling with energy. The rebuilding of a kitchen after the effects of the pande mic are made a lot easier when you are surrounded by people with good energy and great skills - true team players.”

Working with the environment has always been imperative at Campfire: The assortment is frequently reviewed according to current reports on overfishing or reduced demand. Hence, suppliers are selected carefully depending on their sustainability policies, and all the fish is MSC labelled. All the meat served at the hotel has been Co2-compensated, meaning the emissions are being balanced out by the planting of trees. It’s a brilliant project in collaboration with Plan Vivo

and ZeroMission promoting a sustainable development for both planet and people. The efforts are concentrated to a community of small-scale farmers in Cochabamba, Bolivia. In addition to climate benefits, tree planting contributes to an increased income for the farmers and improves biodiversity in the impor tant Amazon region.

To Binny, this subject is of utmost importance: “The concept of sustainability, and continually striving to reduce our impact on the environment, is a core value we have here at Downtown Camper, and to me personally. It is of high importance to me that we monitor all aspects of food use and waste. We in the kitchen have a focus of minimising food waste by consistently updating and monitoring our purchasing and preparation routines, as well as planning menus accordingly. The vast majority of our food waste is transformed into renewable energies like biofuel.”

His international experience makes him a perfect fit as the creative mastermind in Campfire - the menu is made up of an eclectic mix of familiar and unfamiliar dishes inspired by different food cultures around the world. The offering on the menu this winter is centered around the comfort foods offered on the streets. Discover street food dishes like pakora fritters, bao buns and tacos as well as grilled goodies such as chicken, ribs and tuna. Almost everything on the menu is prepared on the charcoal grill – a beautiful way to cook food to preserve taste and nutrients. It’s simple and natural, no fuss: food you can understand, that brings a feeling of recognition yet in the way it’s prepared, surprise.

The Stockholm Survival Guide

The cold season in Stockholm can be magical, with crisp air and majestic buildings that stretch towards the clear blue sky. But our cold and dark winter also has its challenges. Here are seven tips for a better winter experience in Stockholm. See you in the snow.

Dress warm, from top to toe

Occasionally the Stockholm winter can be mild, but eventually, the capital will be struck by that inevitable freeze with snow, icy winds and slippery streets. What to do? Dress for the occasion! Do as the Stockholmers do, tuck yourself into a big, fluffy jacket. Think layers on layers. Put on some long johns, in Sweden known as ‘långkalsonger’. Under garments made of wool is another must. We appa rently leak a lot of body heat from our heads, so the beanie is essential. Many Stockholmers are spotted wearing knitted beanies. Some girls prefer the kind that points straight up. The cool guys choose the ‘sotarmössa,’ a sort of minimal beanie that the city’s hipsters have taken to heart. Warm shoes are perhaps the most essential, preferable boots with a thick rubber sole. In a pair of these, you can battle both snow and ‘slask’ (that is to say the half-melted slush that you’re left with when the snow starts to melt away).

Winter wonder walks and ice skating romance

There are days when Stockholm shows its most en chanting self. When the ice lies thick on Riddarfjär den, the house roofs are all covered in snow, and the ice crystals glisten in the treetops. This is the time to head outside. Make sure you plan in some pit stops on your walk. A café, a restaurant and perhaps a museum: cosy spots with good food, warm bever ages, and an inspiring culture. Take Strandvägen from Nybroplan towards Djurgårdsbron. Crossing the bridge, on your right-hand side, you’ll find the Nordic Museum. This castle-like building was built between 1889 and 1907 and looks like something out of a fairy tale. The architect was Artur Hazelius (1833–1901), also the man behind Skansen. Are you a hopeless romantic? Then visit the ice skating rink in Kungsträdgården, only a couple of blocks away from Downtown Camper. The city’s best ‘win ter-in-Central-Park-experience’. The rink is open every day, and they have ice skates for rent at a small cost.

Experience winter Stockholm from the bike

You do know that you can rent bikes from the lobby, right? Don’t let the winter stop you. Stockholm has no less than 2110 km of walkways and bike lanes, and the city works hard to keep them clean and secure all year round. They have to. More and more Stockholmers use their bike to go to work, winter or no winter. And when you head out, avoid dressing too warm on your upper body. You’ll find you heat up quite quickly cycling up and down hilly Stock holm. And make sure you’re visible in the dark. Turn on your head and tail lights as soon as the sun starts to set. Don’t forget the reflectors! In Stockholm, the reflector is currently experiencing an upsurge as a fashion accessory. A Swedish insurance company recently let some Swedish fashion designers, e.g. the ‘enfant terrible’ Ann-Sofie Back and the de nim guru Örjan Andersson design cool reflecting creations. When you get off your bike, keep the reflectors on.

The magic of hot chocolate

Being outside in the cold takes energy. If you drink something warm, you’ll regain your strength. And your body temperature. And let’s be honest, what’s better than hot chocolate? This is a beverage with which most Swedes have a special relationship. We associate it with childhood adventures. Those cherished moments when thermoses magically appeared out of your parents’ backpack with this steaming hot beverage. Studies also show that hot chocolate is good for you. It’s said to increase the microcirculation in the skin, which helps us keep warm. The chocolate itself triggers the brain to release endorphins which calm us. So when you get back to the hotel from your next excursion in winter Stockholm, stay calm and warm up with a cup of hot chocolate by the fire.

Find the best (and heated) shortcuts

Experienced Stockholmers go from A to B without freezing more than necessary. A knowledge that you, for survival purposes, have to acquire after having spent a few freezing winters in the city. You’ll soon learn the shortcuts that minimise time spent outside in the cold, and downtown it’s quite easy to navigate through malls and department stores. Are you going from the central station to Stureplan on a cold day? Hurry over Sergels Torg into the built-in shopping centre underneath Hamngatan. Then en

ter the Nordiska Kompaniet department store and make your way to street level. Continue through the PK Huset mall until you reach Norrlandsgatan. Then you’re on your own. You’ll have to walk the last three, four blocks to Stureplan outside. The subway stations also offer heated shortcuts. Find your way crossing the platforms of the underworld, while get ting some culture too: the artwork-adorned walls in the subway are well worth a visit on their own. But if you’ve read tip no 1, you can skip straight to no 6.

Take good care of your skin and lips

The winter in Stockholm offers no mercy to skin and lips. The contrast between the rough outside cold and the heated indoors will affect your skin. In other words, make sure to rehydrate. Fatty creams prevent dehydration and keep your skin in check. The lips are extra sensitive. They don’t contain as many layers of skin cells as the regular skin and lose moisture up to three times quicker. Hence, the lips need some extra loving care. There are conflicting opinions as to what product to use, but make sure it contains a moisturiser and is based on natural oils and waxes. Soft lips make it easier to talk, make funny faces and last but not least, to kiss.

Learn the importance of ‘mys’

The Danes have their ‘hygge’ and us Swedes we have our ‘mys’. The word roughly translates to the English ‘cosiness’ or ‘snuggle’. The winter is the time of year when Stockholmers appreciate mys the most, especially the weeks leading up to Christmas. Here are some great mys tips: light some candles and put on a pot of coffee or hot chocolate. Or even better: glögg. This warm drink goes best with some saffron buns and gingerbread on the side, which together is the very essence of ‘julmys’. Why not cosy up on the sofa and let yourself be swept away by some Stockholm fiction classics: Jens Lapidus’ hardcore Stockholm Noir trilogy, Bo Widerberg’s film ‘Mannen på Taket’ or ‘Stockholm’, starring Ethan Hawke and Noomi Rapace. The film is about the legendary Norrmalmstorg robbery in 1973, a dramatic event that produced the famous expres sion ‘Stockholm Syndrome’. Kicking back with a thriller is also known as ‘mysrys’.

WINTER EDITION

The Boss of Balance

It all began in Söderhamn in the late 70s. Everyone thought it was just yet another sunny day in May, when in fact, one of our time’s best skiers had just been born. Today, 45 years and one Olympic gold medal, one Olympic bronze medal, three World Championship silver medals and 24 (yes, twenty-four) National Championship gold medals later, Anders Södergren is one of our most decorated and popular cross-country skiers of all time. But that is old news by now. What we want to know is what such an elite athlete does when their professional career is over. How does he manage to balance his, now more normal, work life with being active when physical activity has been such a big part of his life? Spoiler alert: balance is his middle name. And we want to know all the secrets.

Hey Anders! Let’s jump right in. What do you work with today?

I did my last championship in 2015 but continued to ski long-distance before I decided that my professional skiing career was a completed chapter in my life. But, not very surprisingly, I stayed in the business. Now, seven years later, I still have the same job - sponsor coach for the Swedish Ski Association. Best job ever.

Rumour has it you’re a pro at juggling the life puzzle. Correct?

I guess so! Although I have a completely normal work today, I still make time for physical activity - at least one hour per day. That may sound a lot to many, and it is, but it’s completely crucial in order for me to function. But yes, it requires puzzle skills. My trick is that I often combine time with my friends and family with being active in different forms. Sometimes it’s biking in the woods and swim ming in the lake with my daughters, and sometimes it’s kayaking and running (our newest activity is swimrun - super challenging and fun!) with friends. When I have time I squeeze in some of my beloved skiing as well. I live just five minutes from the ski trail, a true luxury.

As a person who has tried everything, what is your favourite outdoor activity? By far, it is running in fjällen, the Swedish alps. Without any tech devices, without sense of time, without any must-dos. Preferably long-distance. I can recom mend that to everyone, no matter if you run or walk. To spend time in the moun tains, disconnected from the stress of the daily life, is magical and something I wish everyone could enjoy from time to time. I have the luxury of living in that setting, but I’m still amazed everytime I go hiking.

A ski pro’s guide to a more active lifestyle

out because you want to today, not because you have to in order to be somewhere in a year.

Do it with friends!

are more than you think) or call your mother and see if she’s up for weekly power walks. Be kind to yourself. The important thing is that you do something.

Set up reachable goals for yourself

Not everyone is like me, I know, but it is more fun to work out if you have a goal! It doesn’t have to be a major goal, preferably the opposite. The key is to set up reachable goals. You want to feel like it’s a big win everytime you reach them. And hey - make sure to celebrate. Maybe by running an extra mile or swimming 10 minutes longer? Or with a great dinner. Re-charging is important too.

It might sound like a cliché, but the journey is the destination

The thing most people get wrong is thinking that the end goal is everything, but what happens when you’ve reached that goal? Does it end there? The answer should be no. Find an activity you enjoy so much that you want to practice it each week. Live here and now. Work

All things are better in the company of friends and family, and that goes for workouts as well. It’s a great hack if you, like me, need to make that family puzzle work - do it together! I usually ski with my daughters which is a great activity, but also a fantastic moment spent with my kids. My friends and I often go on trips centered around different activities. This sum mer, we packed our swimming gear and headed to the West Coast to take part in a swimrun race - an amazing activity, but also a great experience shared with dear friends. Combine the two as much as you can. Take a walk with a friend instead of your headphones tonight.

Don’t make it too complicated

You don’t have to make up this big and gigantic plan, and you don’t have to pay an enormous amount of money for a hip gym card if you don’t want to. Make it easy for yourself. Tag along with a friend if they invite you to an activity that sounds fun. Have a look and see if someone is organising outdoor workout sessions near your home (there

Make a plan

Set a plan of your weekly activities. What are you doing when, and with whom? Is there something in particular that you want to try, but have to book? Go book it and put it in your calen dar. Set a time for when you’re planning all your activities for the coming month(s) so you can chill afterwards knowing you’ll get that workout done without ha ving to rush and plan something last-minute.

Remember, being active is free

Who said being ac tive is a luxury only some of us can afford? I have been active my whole life, and most of the things I’ve done have been 100% free of charge. Use the nature and your own body. That’s all the equipment you need. I think the activities that are free usually are the most fun. Take swimming for example. Not many things can beat a morning swim in a lake during sunrisethat’s better than all the crossfit gyms in the world.

Fast three with Anders

Winter or summer?

I have to stay true to skiing and answer winter. Sorry summer, I love you too.

Best ”post workout” food?

I’m a 100% with Downtown Camper on this one and must say a plate of well-made comfort food. Maybe a... taco? Something like that.

A perfect day in the life of Anders is..?

Waking up at home, having a calm breakfast with my family, taking time to go out for a calm run after leaving the kids at school, a well-balanced work day in the middle, and then finish off with some evening skiing (and maybe a hot chocolate).

Idyllic, right?

Wellness on your terms

The ”spa world” can feel a bit inti midating to many of us: “Do this, do that, and keep your voice down”. Basically, very far from how most of us want to retreat, right? The Nest offers a fresh approach to wellness. The guiding thought behind the con cept is to encourage a sustainable lifestyle, one that you can actually keep up with.

Today, we live in a digital world whe re we deal with loads of unnatural stress factors that affect our health and the way we socialise with others. People start to become aware of the importance of taking better care of themselves; to minimise screen time and focus on the meaningful relationships in life. The Nest offers an inclusive, laid-back and utterly stand-alone experience - a new ge neration of wellness.

Do it yourself

There are no traditional spa treat ments in The Nest. Instead, the offe ring has been shaped to encompass sustainability, education and longterm wellbeing. Hence, the focus on DIY treatments, where the idea is to

equip you with the know-how to best take care of yourself and your skina knowledge that can be applied and used long after you leave the hotel. Our products come from holistic body care brand Moonsun Organicsas natural as it gets.

It only gets better with time Another important thing to remem ber is that the tempo in The Nest will increase throughout the day. Visit early if you are looking for some pea ce and quiet. The music plays softer, and there are fewer people in the re treat. As the evening approaches, the music shifts to an ambient pool club vibe as the adjacent cocktail lounge opens. It’s the perfect time and place for an aperitif in the company of good friends.
