Think about how much we have and yet how often we long for something different. Consider how much we love feeling safe yet yearn for new challenges. We raise our standard but long for the fundamental, the basic. We want to live in the city but be able to enjoy nature. To be able to pack only the most essential, put on our backpack and just leave. We want to improvise and create, seize the day, adjust to the wind and weather and discover new paths in the forest and new streets in the city. We are neither professional nor private but everything at the same time, all the time. We are flexible and diverse, exploring ’bon vivants’. To us luxury is never about the surface. To us it’s about connections and encounters, contrasts and inspiration. It’s having the opportunity to gather around the campfire instead of the TV to hear new stories, get new impressions – or suddenly find ourselves out of reach, not being online all the time. Luxury to us is doing something good for other people, and to feel good about ourselves, from the inside. We are curious and hungry but are expected to be creative in standardised, air-conditioned, rooms while we long for encounters and conversations during a hike that might lead us to a completely different place than we expected. So, put on your backpack and a pair of shoes that will work for both an expedition into the unknown part of the big city and for the party tonight. Just a few months in, Campfire is gaining recognition as the heart and social hub of Downtown Camper, serving up an eclectic abundance of comfort food from all corners of the world (by people from all corners of the world). We’ve stepped into the kitchen, where team captains and Head Chefs Claes Benediktsson and Caroline Åkerstam surveil the pace and temperature. With meticulous planning, a lot of passion, seamless cooperation and a good sense of humour, they make sure operations run smooth from early hours to late at night. Although diverse, the kitchen is a close-knit team. Or in Caroline’s own words; ”This is my family”. So Caroline and Claes, what have the early days been like, looking back on the launch of Campfire? Claes: Campfire is a large restaurant and can seat many guests, and with a full bar that can be challenging. It demands perfect focus. We need to level up without compromising on quality. There can be four people working on different elements on the same plate. Maybe that’s why you usually need a more military-like structure in the kitchen than in other industries. Caroline: Of course there is always an adjustment when you start out in an entirely new environment, but there’s great cohesion in the group and everyone has found their place. I like that every single person here contributes in their own way. And I’m proud of how we managed to balance a bit of fine dining and a more rough product. Tell us about the kitchen team! Claes: We have Caroline here who is my co-Head Chef, responsible for the day-to-day operations and whom I depend on for all the necessary preparations. She also participates in writing the menu. We have two Sous Chefs, Binny and Tomas, who run the operations when neither Caroline nor I’m in. Amanda is responsible for starters and desserts. Then we have the chefs in the breakfast team who are doing a super hero’s job, making sure we feed up to 1100 hungry guests in the morning. We currently have all continents of the world represented in the kitchen team, which is cool. Caroline: Campfire is not like a regular restaurant kitchen. We are very busy, but we have a lot of fun together. There’s a common goal and good communication. We all have different strengths and weaknesses, but we all help each other out. Everyone here is highly skilled and professional, but also has a great sense of humour. We have good laughs together every day! Campfire is big. How do you do it? Claes: In a large hotel like this, it’s full throttle in the kitchen from 05.30 till 00.00. I am a football player, and in my opinion, working in a kitchen has many similarities. Someone is the midfielder who struggles in the middle, with very high working capacity. Someone else is the star who scores the goals, often the young and promising. Then there’s that one person everyone turns to for advice, the one who backs it all up and keeps the big overview. But everyone is equally important here; we owe everything to our incredible team. Caroline: Planning, cleaning and routine are crucial in a kitchen. If we have a poor collaboration between the kitchen, service and runners, everything is very likely to fall apart. We have several meetings between the departments every day, so that we can coordinate our efforts and plan ahead.

Where does the food come from? Caroline: We try to work as seasonally as we can, and work WITH the environment. Depending on the season, vegetables come from Sweden, but also as far down as Morocco. The fish is MSC labelled from Norway; the company Lerøy has been around since the late 1800’s. We do our best to stay up-to-date and review our assortment depending on overfishing reports or reduced demand. We have a great relationship with our suppliers. Johan i Hallen, as an example, is an older establishment from the early 1900’s who delivers our meat. They have their production down in Gothenburg with smaller productions throughout the country. We have produced two different types of sausages for the menu in cooperation with them. Both I and Claes worked with this supplier in previous positions and they always provide high quality. Claes: For us, it’s essential that we work with serious suppliers who think about the environment and the future. That’s why we’ve chosen to CO2 compensate for all the meat we buy in Campfire. I know we can always do more, and we will continue to scrutinise our processes to minimise our footprint. We are happy to work with local suppliers, but the environmental issue is more complicated than that. The locally produced is not necessarily the best from an ecological perspective. And the quality is always an important aspect. Campfire has guests from all over the world. How do you meet everyone’s needs? Claes: As we are a very diverse and international kitchen team, we’ve got influences from all over the world in our menu. Something we hope suits both travellers from afar as well as a curious local crowd. Caroline: I agree, and given how our menu is designed and presented, I think that there is something for everyone to enjoy. We have also seen a growing demand for special dietary requests. More people become flexitarians, semi-vegetarians and vegans. We try to make a lot of the dishes completely lactose-free and also have gluten-free options and nutritious vegan meals to make sure we have something for everyone. What is the ’crowd pleaser’ on the menu? Claes: Valencia Grill is one of the most appreciated dishes, and that’s why we’ve kept it on the menu from the start. Caroline: Another favourite is the burger. It’s simple, fills you up, people know it and really, isn’t it everyone’s ”guilty pleasure”? Our Mexican Fiesta is also popular – as with the burger, you can eat it with your hands. It’s been great chatting with you, guys. Just one more question: what do you consider to be the best thing about your job? Caroline: I never feel it’s hard to go to work, it’s always fun and I feel happy when I’m here. The team at Campfire is my family. Claes: There is nothing better than coming off a really tough and hectic service with your team and to get the confirmation that the guests are happy when they leave. That’s better than winning an important football game.

At the pinnacle of her long career as Skin Therapist, Personal Trainer, Dietary Advisor and Spa Manager at several highly regarded establishments, Malin Lemchen decided it was time for a change. “I had grown tired of the traditional spa world and wanted to be part of something creative, modern and new” she says. She was headhunted from one of Sweden’s most prominent spas to join newly-opened The Nest at Downtown Camper, where she has been pivotal in creating the service offer, focusing on “surprising service” in a cutting-edge, cool and laidback wellness environment. Hello there Malin! What is The Nest, essentially? We want to offer something entirely new. A holistic and modern approach where exercise, relaxation and well-being all go together. Creativity is essential: many spas can feel strict and formal, but we want to create a cool and laid-back wellness in an urban environment, and it needs to be accessible and fun. Here, there’s no judgement if you wish to have a cocktail when you come out of a yoga class. Although you are in the midst of central Stockholm, you still feel that connection with nature, and the calm that’s so hard to find in the city. From up here, you have a perfect view of the Royal Palace and the City Hall, and you don’t have to be a first-time visitor to appreciate the beauty and diversity of the city. Tell us about your role here. After many years working within wellness and health, I wanted to be a part of something new and forward-thinking. My ambition has always been to extend the wellness concept in a more holistic view. The inside and the outside are connected, and the holistic wellness discipline recognises that the body and soul are equally important. At Downtown Camper and The Nest, I get to be a proactive driving force to accomplish something ground-breaking and fresh. Our focus is to create a friendly and laid-back ambience.

What would you recommend to someone planning a visit? Once you have made your reservation with us, and especially if you are visiting for the first time, make sure to have a chat with us to find out about the daily offers. For the independent visitor, I’d recommend to pick up a DIY Kit. A few simple steps of lathering, scrubbing, massaging and moisturising let you reconnect with your body and soul. It’s a simple and relaxing experience - and if you’re a couple, you can help each other out, which doubles the fun! On top of this, we have just launched a series of guided treatments and group rituals, e.g. our Sauna Release which combines yoga-like movements and breathing exercises. Our staff member Selim is also a certified Massage Therapist, so if you’re tired after a day in the city, make an appointment with him for a classic massage. If you are already staying at the hotel, I wouldn’t leave without having been up for a drink in the cocktail lounge. The view is the best one I’ve seen in Stockholm, and it takes my breath away every morning when I come to work.

1. Judits Second Hand Hornsgatan 75, Södermalm “Where do all the fashion editors and stylists go to hand in their old clothes and bags? The answer is Judits Second Hand at Södermalm. This town’s best fine vintage. If you are looking for a vintage designer bag or a vintage find from a Swedish brand, this is the place to be. Not only do they have branded clothes, but also custom-made pieces from the past decades. When I was going to a ball in the City Hall, this was where I went to find the dress of my dreams – a long pleated dress from the 50’s in pigeon blue. 2. Hedengrens Bookstore Stureplan 4, Östermalm “At the heart of Östermalm, you’ll find this institution. Established in 1918, it has that look and feel of an old, classic bookstore. The staff are experts, and the selection is large and varied. You can easily end up spending hours here browsing and finding titles you never knew you needed. They offer fiction and non-fiction, magazines, and host a lot of events. If you’re looking for titles in English, French, German, Italian, Spanish, Portuguese, Danish and Norwegian, this is the place.”

3. Borgmästartrappan Slussen, Södermalm “The most famous place for parkour in Stockholm. Borgmästartrappan has been used for many years for climbing, jumping and shooting videos. The staircase has been used in many commercial productions for parkour in Sweden. And I would like to say that it is one of the most recognised spots in Stockholm.”

4. Artipelag Artipelagstigen 1, Gustavsberg

“This place is a real treat and probably one of the most beautiful art galleries and venues I’ve ever been to. Located on the island of Värmdö, approximately an hour’s drive from the hotel, Artipelag was built to fit in with its natural surroundings. Designed by Johan Nyren, the building includes art galleries and 22 acres of natural scenery. It offers spectacular views right across Värmdö archipelago and is in itself an impressive, white architectural building. 5. Kymlinge Metro Station Sundbyberg “The never-opened subway station in Kymlinge is the subject of an endless amount of urban legends. In reality, the idea was to build an enormous centre for tens of thousands of government bureaucrats here. During the mid-1970’s the offices were built in downtown Stockholm instead. The stripped-off subway station is the only remnant of the plans.”

Survival Tips for First Time Stockholmers Text: Rebecca Knutsson, Defining New Wayz

Stockholm is famous for its stunning architecture, the cobblestone streets of Gamla Stan, its Baltic Sea archipelago, freezing temperatures, as well as a host of modern and historical attractions. What’s less known are the quirky cultural nuances, which make Sweden so wonderfully unique. Here are seven cultural insights into Sweden for our newest residents and visitors. 1. Funny words and phrases There are many mesmerising sights to absorb when walking the streets of Stockholm, not least the handsome men and women - everyone is beautiful! But it won’t be long before the hilarious named road signs and funny phrases catch your attention. For all us non-Swedes the sight of ’infart’ (a parking lot entrance), ’utfart’ (exit), ’fartkontroll’ (speed control), and ’slutstation’ (end station), Willy’s (supermarket) is enough to send us into a fit of giggles. And the funny words don’t stop there! There are many words, which confused, could lead to some very embarrassing situations. If a Swede asks you “sex hos mig” (sex/six at my place), you might want to check their intentions. However, the chances are they just want you to come over at 6 o’clock, as sex means two things, the number 6 and yes, sex. They probably seem preoccupied with ladies underwear, continually referring to things as ‘bra’, but this simply means ‘good’. Saying they need to ‘kiss’ (pee) when they actually just need a wee. It’s all very confusing but adds a comical element to learning Swedish. 2. Need-to-know house rules If you’ve walked the streets of Stockholm during the winter months, you’ll know how dirty it gets once the rain and snow starts, especially when the gritters come out. So it’s not surprising then, that as a general rule, all Swedish homes expect you to remove your shoes. If like me, a British expat, you’re used to traipsing your way around houses in your outdoor shoes, then this is a rule to get acquainted with fast. This rule also extends to gyms, where they expect you to walk to the gym wearing your outdoor shoes and then change into your pair of indoor training shoes upon arriving. Yes, you’re going to need that extra muscle to carry your gym bag! You may have also noticed, on

arriving in your hotel room, the single duvet covers. The Swedish aren’t killers of romance, I promise. In the freezing minus temperatures that Sweden gets to, in Stockholm an average low of -4 degrees in the winter, do you want your partner stealing the bed cover? We didn’t think so. Single duvets are all about survival. 3. Naked ambition Swedes are way more comfortable with nudity than just about anywhere else in the world (well, them and the other sauna loving nations). In any other country, if you stripped off naked and entered the sauna, you’d be met with shrieks of surprise and blushing red faces. It’s not uncommon in Sweden, however, to strip off and go skinny dipping in the open water with your friends and family. However, be forewarned, there are designated spots; you can’t just strip off anywhere. It’s also not uncommon to see men and women, completely naked, having a good old chit chat in the changing rooms at gyms and swimming houses, seemingly unfazed by their nakedness. But don’t fear though, Downtown Camper has a strictly ‘bathing suit only’ policy, so you won’t be bathing in your birthday suit on your visit. 4. Get social, join a club Sweden can be a hard place to settle as a newcomer, particularly in the long, dark and cold winter months. As spring’s now approaching, it’s a perfect time to join a club and get meeting other expats and sociable Swedes. Get a taster of run club life with Ssideline City Run Club, who run every Tuesday evening from Downtown Camper. Alternatively, you could try yoga with YesYoga, followed by cocktails at Campfire, every Sunday from the hotel at 3 pm. Or why not join one of the many activities on Meetup? A community made out of sharing experiences and making new friends. With over 260 meetups located in Stockholm, there are a large variety of get-togethers to choose from; you can even start your own. 5. Swedish godis Sweet tooth? In most countries pick n’ mix is intended mainly for children. Not in Sweden. No, the Swedes are mad for their candy with usually two

or more aisles in the supermarket entirely dedicated to every type of candy you could possibly dream of. However, this is usually limited to Saturday’s ‘Lördagsgodis’ (Saturday candy), when the majority of candy is purchased. Swedes consume approximately 16 kilograms of candy per person per year. That’s a whole lot of candy! Unlike other nations, at Easter, the Swedes do not celebrate with branded chocolate eggs but beautifully decorated paper shell eggs, crammed full of sweets. It’s surprising then that Swedes are some of the healthiest people on the planet. 6. Systembolaget If you’ve ever been invited to an inexperienced expat’s housewarming party, you’re probably familiar with that last-minute panicked message. This is when the host realises they haven’t gone to the only store in Sweden you can purchase alcohol from, Systembolaget, and lo and behold now need you to bring your own drinks. Happens all the time! One friend of mine invited her friends for a ’prosecco and pancakes evening’, which was a great idea until she forgot to purchase the prosecco in time. Sweden is highly regulated when it comes to the sale of alcoholic drinks stronger than 3.5%. Systembolaget is government-owned and has the monopoly of sales in Sweden. The minimum purchase age at Systembolaget is 20, but 18 in licensed restaurants and bars. So take your ID and be sure to check the opening and closing times. 7. Queue like a Swede Like the British, Swedes are no strangers to queuing. However, Sweden has turned this into an Olympic sport. The Swedish are sticklers for rationality and order, and the queuing system is no exception; there are seemingly queues for everything. While most Swedes won’t confront you, you will feel the sting of their angry stares should you make the ultimate mistake of pushing in line. Or just simply forgetting to take one of the many numbered tickets you find in any number of shops. Our advice - always check upon entering a supermarket, electrical shop, doctor’s surgery, vets, Migrationsverket (migration office), post office, you get my point, if there is a ticket machine.

A Word From a Guest... ”Travelling the whole family is a completely different thing than travelling with just my husband. When we travel alone, we can live almost anywhere - as we are almost never in the hotel room anyway. However, when travelling as a whole family, the social areas become very important, so that we can socialise even after the kids have gone off to bed. Therefore, nowadays, we usually rent an apartment while on the move. Normally operating from their Åsögatan location in Södermalm, they have now temporarily moved in at Downtown Camper, to assemble our rental bikes on site in the hotel lobby. The range of bikes that is on offer in the hotel is typical for what a Stockholmer would choose: built on lightweight aluminum frames, some with gears and some without, but always with a clean and uncompromised look and feel. Pop by the workshop at the entrance, pick a bike, pump up your tyres, and head out for a tour around the city!
