It keeps my work fresh and rewarding. Also, it's my passion to work out and change people's lives by transforming their bodies.” On most days, he enjoys working out at the Marriott Hotel Gym in the DQ because of its serene

would start by adding whole body training two to three times a week. When asked about her personal training strategy, Hannah notes, “It's best to make smaller lifestyle changes that will result in long lasting behavioral change. Your health and fitness need to continue long-term and not for an intense 6-week challenge. So taking your time to make these changes will favor your future self and make it more likely for you to keep your results.” Her training in nutritional strategy allows her to teach clients how to create a flexible diet with the calorie budget she gives them. Her clients have reported that it has been quite liberating knowing how many calories they should eat so they can have the healthy foods and treats and still lose weight. As Hannah believes consistency is key, having a training and nutritional approach that doesn't limit her clients is the goal, as she has found that clients are more likely to stick to the plan and therefore get and keep results.

HANNAH MERAKI

Health and Fitness Coach

"If you don't use it, you lose it.” Hannah is a health and fitness coach from London who loves to move. With a BA (Hons) in Contemporary Dance and years of experience training as a professional dancer and working as a performer and choreographer, Hannah experienced first hand the pressure to be a smaller size and the subsequent unhealthy relationship with food and her body. This finally inspired her to take action and start a Personal Training course. Since then, she has professionally trained for Prenatal and Postnatal training, Hatha and Anti-gravity Yoga, STOTT Pilates Mat and Reformer, Performance Nutrition, and Stress, Sleep and Lifestyle coaching. With such a broad range of training, Hannah’s specialty is movement and healthy living. When asked more about how she helps clients practice this, she shares, “I know the benefit of lifting weights and training with high energy and intensity, but also know that the body needs something calmer and softer sometimes. The result of training with diversity such as weights, yoga, and Pilates is that you are able to do something everyday, and that's what your body needs - movement everyday.” With clients, Hannah focuses on the bigger picture of their lifestyle and their needs and she empowers them with knowledge on how to look after themselves; these sessions are often done privately at their homes. For someone ‘very de-conditioned’, she would start by incorporating Non-Exercise Activity Thermogenesis (NEAT) which is an activity that is not considered an “exercise” in their everyday lives, such as walking, playing with kids, taking the stairs, etc. Then she

For herself, Hannah has a set plan for lifting weights, and practices yoga and Pilates around this depending on her feeling each day. Personally, she has found a structured training plan and tracking calories with a flexible dieting approach to be most impactful. In the DQ, she enjoys using the gym facilities at Al Manahil. Hannah also enjoys Sands Fitness Studio due to their vibrant energy. For those struggling with motivation, Hannah recommends having a set schedule, training with friends and having someone to hold you accountable for completing your sessions. MADALINA POPESCU

NERMEEN WALEED QATANANI

"Try things until you find something you enjoy doing and stick with it.”

"Get out of your comfort zone or stay watching your dream hiding between the clouds."

Pilates Instructor and Physiotherapist

Madalina Popescu specializes in teaching mat Pilates classes for all levels using small equipment such as elastic bands, magic rings, foam rollers, swiss balls, and more. She also works with people recovering from injuries with medical conditions such as low back pain, frozen shoulder, scoliosis, etc or after surgeries such as ACL repair, meniscus repair, knee or hip replacement, and more. Madalina has a home studio where she holds regular scheduled sessions and also private classes. Personally, Madalina starts with spine mobilization exercises to prepare her back for the day ahead and she enjoys jogging outdoors with her dogs. When asked about how to get started on a fitness journey, Madalina said, “It’s always worth it to hire a qualified personal trainer or fitness coach or Pilates/Yoga instructor for at least 10 sessions to put you on the right track, teach you the basics of training, and keep you accountable until a new routine and good habits are formed. This includes exercise, lifestyle & eating healthy. It may be a bit pricey in the beginning but it saves you a lot of time, effort, injuries, and mistakes which may delay you from reaching your goals.” After recovering 3 times from meniscus injuries, Madalina still stays healthy by following a plant-based diet with small quantities of fish & chicken. She recommends taking plenty of greens such as kale, coriander, beets, and cabbage. Besides working out in her home studio where she has a lot of equipment, Madalina loves going out for a run on the wadi tracks. When asked about how to stay motivated to work out, Madalina shares, “I love being in the sun, so I go to different compounds to swim at their outdoor pools. Try more things until you find something that you enjoy doing and after that, stick with it. One should find that pleasure of a certain movement and chances are you will be hooked! Working out should be fun and not a chore!" Email: madipopescu@gmail.com Whatsapp: 0506490921 Social Media: @madalina.pilates

Over the past 5 years, Qatanani has trained more than 800 Saudi women to become licensed instructors and she says witnessing her students’ growth has been an inexplicably rewarding experience. When asked about her training strategy, Qatanani said, “I encourage my clients to make a plan for a healthy lifestyle that isn’t boring or strict, starting from what they eat to the activities they plan to do. I tell them that you have to start walking to increase your happiness hormones and this is going to lead you to new fitness choices such as jogging, swimming, dancing, or gym workouts. And then as I watch them grow and turn their lives for the best, I am always happy.” Personally, Qatanani loves jogging in the DQ as she enjoys the atmosphere. For exercise, she loves the places she works at as she finds them comfortable and she is looking forward to an upcoming gym in Takhassusi Street named Unity. For nutrition, Qatanani recommends balancing proteins, carbohydrates, and fats to maintain appropriate energy levels. She never skips breakfast, always has healthy snacks with her to nibble on in between meals, and she never eats late at night. When asked about how to stay motivated for workouts, Qatanani says an instructor who pushes you to your limits and motivates you is the key. TALES OF TAIF BY JANELLE VALES-YASAY

Taif is a city located in Saudi Arabia overshadowed by its more well-known neighboring cities of Jeddah and Makkah. But Taif has its own ancient-modern charms that beguile tourists, especially seen during the first ever Taif Season. Traveling to Taif is not just a simple trip; it’s a soulful experience that one has to embark on once or twice in his lifetime.

O

VISIT

ne can find Taif, a city in Saudi Arabia’s Mecca Province, on the slopes of the Sarawat Mountains. At this elevation, the city enjoys a nice weather becoming one of the best summer destinations in the Kingdom. It is also known as the “City of Roses” with its abundance of roses and other harvests like grapes, pomegranates and honey. Apart from its agricultural importance, Taif is also known for its historical significance. It lies in the crossroads of the incense trade route that served as a channel for goods like the Arabian frankincense and myrrh, spices, and textiles, and the pilgrimage road to Makkah. Taif’s history, culture, heritage, art and nature were highlighted in Taif Season, one of the 11 seasons of Saudi Arabia aimed at transforming the Kingdom into one of the most important tourist destinations in the world. The Saudi Commission for Tourism and National Heritage prepared a lot of events and activities for all to enjoy. It was an honor seeing the astonishing beauty of Taif, uncomplicated yet unforgettable, and basking in the warmth of some of the most hospitable people in the Kingdom. The Taif Season featured four major attractions: Souk Okaz, Camel Festival, Roses Village, and Sadat Al Baid. Each event gave visitors different experiences in an ambiance full of fun, excitement, and entertainment. There’s nothing like being immersed in all of these adventures for the whole month of August. Every day is an opportunity to get to know Taif, the place and its people, better.

SOUK OKAZ: A Past Always Present

Souk Okaz has become a tourist destination. Every year, the seasonal market opens its doors to locals and expats during the month of Dhu Al-Qidah. This year, the 13th edition of Souk Okaz opened as part of the Taif Season. Seven huge digital screens representing seven distinguished poets whose images and voices are simulated by renowned Saudi artists, welcomed guests to the high-tech version of the souk.

History is the heart and soul of Taif. It has a unique, magical past embodied in Souk Okaz, one of the legendary and best known souk in pre-Islamic times. It was more than a market though; it was a vital center where Arabs settle disputes, pass judgments, announce treaties, and hold competitions for sports and the arts. The souk was destroyed by the Kharijites in 726 but its value lives on through the storytellers of our time.

Stirring theatrical shows were performed at the Okaz Boulevard which accommodated 5,000 spectators at a time. Sitting in one of the concrete benches and watching the show portrayed by men wearing colorful garb, some atop horses and camels, were enthralling; we were given a glimpse into moments long gone but never forgotten. These people were master storytellers and we were glad to listen and watch.

Time is lost when we went inside the market, a re-creation of the ancient souk that hosted sellers of various crafts and wares. We were so engrossed in the shops with products like pottery, handicrafts, silverware, carpets, trinkets, and leather goods. A caravan of camels also went around the market and it was quite a sight to behold. We also enjoyed the horse show at the Knights grounds. The jockeys gave impressive performances in riding their horses and using swords and spears for exhibitions. The female riders who took part for the first time in the souk received the loudest applause. The pavilions inside Souk Okaz also showcased the culture, art, and cuisine of 11 Arab nations including the UAE, Bahrain, Egypt, Jordan, Lebanon, Morocco, Kuwait, Oman, Iraq, Tunisia and of course, Saudi Arabia. The last ten days of the souk saw performances by renowned singers and musicians at the Okaz Main Theater. Saudi stars Abadi Al-Johar and Dalia Mubarak, Emirati singers Hussain Al-Jasmi and Ahlam Alshamsi and Syrian musical artist Asala Nasri gave beautiful concerts befitting the fabled grounds. Truly, the glorious past is always remembered at Souk Okaz for years and years to come.

ROSES VILLAGE: Fine Fragrance of Success Thanks to Taif’s mild climate and its lush green landscapes, a 30-petal damask rose bloomed abundantly. Taif’s famous rose is celebrated for the essential oil extracted from it and a history so complex yet beguiling. Brought by the Ottoman three centuries ago, with stories of it being originally from India, the pink roses with yellow centers are known for its delicate petals and subtle scent. Over 2,000 farms grow these roses and extract essential oil and rose water from them. Celebrating these roses, the Taif Season organized the Ward Village at Al Rudaf Park, a large park in the south of the city that has well-tended lawns, weathered granite rocks, and a majestic fountain. The Ward Village became an entertainment venue with its circus shows, rides, and colorful parades. We rode the mini bus around the park when we first got there to take in the ambiance of the Ward Village. It was beautiful and every corner was worthy of photos and videos to be shared to families and friends. The village has a museum of roses and also a lab that teaches how roses were picked, distilled, and manufactured to become oil and rose water. There was also a market that showcased the fruits of Taif like pomegranates, berries, figs, grapes, and prickly pear. It was a very colorful venue and we enjoyed walking around and checking the featured spots. The fountain show and fireworks display capped the night in the park perfectly. The small, fragrant flower of Taif has come a long way; its expensive rose oils have been used in luxury designer perfumes from Chanel to Guerlain. But its roots are still embedded in the care and love provided by the farmers of Taif’s orchards and honored by the people of the Kingdom. Now that’s the sweet smell of success.

CAMEL FESTIVAL: Epic Animals of Arabia Known for their strength and endurance, Arabian camels thrive in desert conditions. They navigate the shifting desert sands and rocky terrains with ease and grace. These incredible mammals of the desert have long been a part of Saudi Arabia’s history and culture. They were highlighted at the Crown Prince Camel Festival. The festival, considered the largest camel sports festival in the world in 2018, hosted over 10,000 camels from Saudi Arabia and other Arab countries. It aimed to showcase and boost the camel racing heritage of the Kingdom and promote the cultural and economic value of camels. The competitions held within the festival are considered the largest of their kind in the region with over SR 53 million prizes handed out. A towering illuminated sculpture of a camel at the entrance of the festival grounds got a Guinness World Record for being the largest of its kind. The replica is 10-meter wide and 4.65-meter high and lit up with more than 50,000 lights. During our visit to the festival grounds held at the King Faisal Park, we marveled at the camel sculptures and also saw the different sections of the camel village which included a museum, traditional souk, cafÊs, vintage car display, and the Diamond Show which featured an acrobat in the middle of a gem-like foldable structure. The overall ambiance of the place is relaxing. Just like the camels, the ships of the desert, the heritage and culture of Saudi Arabia continue to endure and persevere.

SADAT AL BAID: Call of the Mountains Taif boasts of natural wonders that are surprisingly easy to explore. The city is surrounded by majestic mountains that give an awesome trail to the bold and adventurous and provide captivating views and sceneries to the careful and shy. Mountaineers have been enticed by the Al Hada and Al Shafa mountains in Taif. This is why Sadat Al Baid, part of the Taif Season, was a thrilling experience. The SCTH and Taif Season staff worked hand-in-hand with reputable tour agencies and guides to offer hiking trips during the season. The month was divided into two seasons and both proved to be really successful. People signed up for some outdoor fun including trekking, Scout activities, ziplining, and musical evenings called “Samr Nights” where participants enjoyed a night of music and food gathered around a bonfire under the mesmerizing sky of Taif.

Our trip took us to the winding roads of Al Hada where the popular cable cars of Taif can be found. The cable car ride gave us a scenic view of the mountains and the famed Al Hada Road which I’ve only seen on photographs before this trip. Looking down at the winding roads was an incredible experience. With the mountains serving as a stunning backdrop and the warmth of the sun providing colors to the pristine features of the area, the view was jaw-dropping and awe-inspiring. We can’t imagine how dramatic this scene might turn into at night. Surely, the twinkling lights of the distant towns will take this view into a different level of breathtaking beauty. The mountains of Taif are calling and there are a lot of reasons to heed their call. Visiting Taif for the first time, and just in time for the Taif Season, was an experience of epic proportions. There were so many things going on but for some reason, everything was organized the way they should be. There are many aspects to this season that gave us all the feels. A glimpse of the past, an engagement with the present, and a taste of the future… of things yet to come to Taif and to Saudi Arabia. We can’t wait! See you next season, Taif!

he tall and spacious windows serve as elegant backdrop, to the superbly decorated and “warm” Larder Restaurant, offering the scenery of the hotel’s intricate landscaping. This extensive glasswork streams in the natural light and gives the diners a sense of lightness throughout the day. Refreshments are offered upon seating, such as the Gingerade Detox and Watermelon Aquafresca among many others. You may choose to dine in the beautiful terrace beside the restaurant for an al fresco experience or eat in the indoor restaurant. Should you be arriving with your children, a welcome drink especially for them is offered as well. If they’d like, they can also enjoy at the Kid’s Lounge, where they can run and play with toys, video games and more.

The layout of the buffet area gives off a home kitchen vibe: the marble panels, wooden accents, and a countertop full of fragrant bread, butter and jam were just few of the things that made the space comfortable and familiar.

Leading the Kitchen Team, Chef Logan Carroll designed the Lunch Buffet menu to provide only the freshest and finest of ingredients for their diners. In the coming months, the Team will continue to add more healthy items to cater to the specific needs of their clientele in the DQ and beyond. One of the Buffet’s sections is a “do-it-yourself” Salad Bar where staple ingredients are presented separately, including the condiments – again offering choice. Diners can pick their

vegetables and mix their dressings to their liking. There are also sections featuring a salad selection that’s been already prepared with choices such as the Cobb Salad, Fish and Fennel Salad and a Citrus Salad. For the main course, there are five viands to choose from including meat, fish and vegetarian options. The roast beef that day was particularly stellar, so much so, that we had to go back for seconds. The kids enjoyed the sweet BBQ Chicken Wings and the Chicken and Prawn Noodles. For dessert, there were bitesized cakes and pastries perfect to match with coffee or tea. Otherwise, they also have a selection of freshly cut fruits to cleanse off the palate. GO

Dynamic Djibouti When choosing a place to travel, you will usually go for the popular countries and their most-visited tourist attractions. But a small country filled with unusual landscapes like canyons, salt lakes, and extinct volcanoes will introduce you to a world of sceneries and activities less seen, less done and will give you a whole new perspective. The country of Djibouti located in the Horn of Africa will definitely surprise you.

T

he Republic of Djibouti has a unique and strategic location in the east of Africa, and therein lies the importance. Controlling the southern entrance of the Red Sea, Djibouti is overlooking the Strait of Babel Mandeb which is highly important for international trade and security. Almost 15% of global trade pass through this strategic waterway. On June 27, 1977, Djibouti gained independence from France and became the Republic of Djibouti. HE Hassan Gouled Aptidon was the first president. Djibouti occupies a total area of 23.200 km2, with a population of about one million. Arabic and French are the country’s official languages. Djibouti-Saudi Arabia Relations The relations between the Republic of Djibouti and the Kingdom of Saudi Arabia are excellent and historical. According to some historians, the deep-rooted ties between the Arabian Peninsula and the Horn of Africa date back to more than 2,000 years, and there were social, cultural, and economic ties strengthened by human migration, trade, and religious factors. The Kingdom of Saudi Arabia used to support Djibouti while struggling for its independence. Later on, Riyadh became the main supporter for the newborn state in terms of economic, political, diplomatic, scientific, and educational fields. The announcement of National Independence was acknowledged with the opening of numerous overseas embassies and consulates. Established in 1977, the Embassy of the Republic of Djibouti and the Kingdom of Saudi Arabia became one of the first embassies in the area. Since the founding of these diplomatic offices, bilateral relations have continued to flourish. For over 40 years, Saudi Arabia supports and assists Djibouti on a regular basis. Furthermore, Saudi Arabia's soft power activity towards Djibouti deepens the ties between these countries and their cultural, political, and foreign policy values. Saudi Arabia has become an essential part of Djibouti’s public works, social projects, and activities. The two countries have developed a variety of economic, educational, cultural, political, health, and social projects. The officials of these countries along with the private sector have been able to collaborate in harmony. This has strengthened both the political and strategic connections of the Republic of Djibouti and the KSA. The introduction of a new strategic collaboration between the two countries was highlighted with the visit of the President to Saudi Arabia, in 2015. On this occasion, King Salman and President Ismail Omer Guelleh met in Riyadh and

28

discussed the prospects for new projects and agreements between the two countries. The President awarded the King with the Djibouti Grand Star, in gratitude for his service to the Islamic and Arab nations. The president of Djibouti also commended the exceptional partnership between the two countries. It is not unusual for Ismail Omer Guelleh to often make mention of the Djibouti-Saudi Commission, which is the basis of this bilateral cooperation between the two countries and the Joint Business Council. It aims to bring together both of the business segments from these countries and has been quite successful. These relations are frequently combined with new agreements and projects. Most recently, a new cooperation treaty was signed in 2017, in the fields of industry, energy, mineral wealth, and telecommunications. The settlement also included the fields of information technology, housing, health, agriculture, water, and environmental protection. Tourism Sector On April 19, 2018, the European Council of Tourism and Trade nominated Djibouti as the “World Capital of Culture and Tourism” and named President Ismail Omar Guelleh an honorary member of the Global Academy of Tourism. The President of Djibouti received the award from the President of the European Council of Tourism and Trade, Professor Dr. Anton Caragea, and the Director of the European Academy of Tourism, Mircea Constantinescu. Upon receiving the award, the President Guelleh stated: “This award is proof that Djibouti has chosen the right path by making tourism a pillar of development.”

For the same purpose, a ceremony was held in Djibouti in late April 2018 under the patronage of the President Guelleh. The first lady and president of the National Union of Women of Djibouti Mrs. Khadra Mahmoud Haid, the Prime Minister Abdelkader Kamel Mohamed, the President of the National Assembly Mr. Mohamed Ali Houmed, and many members of the government attended the event. 29

Where To Go Djibouti City, the capital of Djibouti, is one of the largest and most important touristic cities. It is an excellent start for trips to other areas. In the capital, there are many beautiful beaches such as Siesta, Douraleh, and Khor Ambado with a number of coffee shops and restaurants along the coastline. The capital also harbors the biggest International Free Trade Zone in Africa. Located in the western part of Tadjoura Province, at a depth of 155 meters below sea level is Lake Assal or the Lake of Honey. It has the largest salt reserves in the country and considered a national treasure. it is also expected to be listed as a world heritage site soon. Les Sept Frères Islands are in the Gulf of Tadjoura. They are home to the most important places for diving. The Abbeh Lake, on the other hand, lies on the border with Ethiopia. There are also the islands of Muskle and Mousha which are famous for snorkeling sites and clean beaches. Sharks come close to the shore in the months of November and December. The historical city of Tadjoura in the northern part of the country offers many scenic views, especially those overlooking the sea, and attracts many visitors to its beautiful and quiet area. Tadjoura was famous in the past for several names such as The “City of the Seven Mosques” and "White City" because of the many beautiful white houses situated in one of the oldest towns in the country. Ali Sabieh City is the capital of the Ali Sabieh region. It is located in a valley in the southern section of the country. The city is a mountainous and hilly town (756 meters above sea level). This altitude gives the place a milder climate compared to the coastal areas. To the east of Ali Sabieh is a grassland savannah which attracts many types of wildlife.

What To Do A city right on the coast, Djibouti has beautiful beaches and its water sports is the life of the sea. There are water adventures and also excursions to see the whales and dolphins. Wear that sunscreen and enjoy! Visit the wildlife of grassland savannah to the east of Ali Sabieh. See black-backed jackals, dorcas gazelles, Felis, caracal, hamadryas baboons and various bird species. Another option is to visit the wildlife refuge in Decan about 10km south of Djibouti City. The small nature reserve has its own ecosystem where cheetahs, lions, antelopes, zebras and kudus roam. One of the archaeological sites in Djibouti is the Abourma Rock Art Site where you can marvel at the well-preserved rock engravings that date back to the Neolithic times which were uncovered by a team of French archaeologists. These engravings depict animals that are no longer found in the area and also human figures. Be amazed with Lake Assal, or the “honey lake”, a crater lake located at the western end of Gulf of Tadjoura. It is the lowest point on land in Africa with its 155 m below sea level location and also the world’s largest salt reserve. The landscape surrounding the lake is also very interesting with dormant volcanoes and bans of salt and gypsum all around. Savor delicious fresh seafood in restaurants spread in the coastal areas. From gourmet to street dining places, the menu revolves around well-prepared and well-cooked fish dishes.

About the Ambassador

Dya-Eddine Said Bamakhrama

Embassy of the Republic of Djibouti BY ALEXANDER WOODMAN

Assigned as the Ambassador of the Republic of Djibouti to the Kingdom of Saudi Arabia, H.E. Dya-Eddine Said Bamakhrama, has served as the head of the mission since 2002. His distinguished service to his nation has also earned him the title of Dean of the Diplomatic Corps to Saudi Arabia. The government of Djibouti, led by President Ismail Omar Guelleh, paid tribute to his exceptional work and the excellent state of Saudi-Djibouti bilateral relations. In 2017, the Ambassador was presented the Djibouti National Independence Medal of the First-Class degree of a commander. 1977 was named the year for the National Independence of the Republic of Djibouti. Can you share your feelings about Djibouti becoming independent? The feelings of having control of our own country are difficult to describe. We are now an independent nation, which allows our citizens to be involved in the decision-making process of how we shape our society. It is beyond description, but we treasure this freedom every day. We are incredibly honored and happy with our independence and everything that our government has achieved during this period. We look forward to more progress in the future. Saudi Arabia was among the first countries to establish bilateral relations with Djibouti. What are the primary models of diplomacy that Djibouti has learned from Saudi Arabia during the past few years? Saudi Arabia has supported Djibouti before, during, and after its move for independence. The influence of Saudi Arabia in such areas as economic growth, cultural development, and sensitive diplomatic issues was a crucial part of our development. This relationship has endured for more than 40 years and will remain intact for many more. In the past four or five years, KSA has become a more strategic partner in helping to find solutions for different

issues. The bilateral alliance is vital for both Djibouti and KSA. Many challenges we face in the region require more coordinated collaboration between the two nations. I think that the visions of the leaders in both countries, particularly King Salman, the Crown Prince Mohammed bin Salman, and His Excellency President Ismail Omar Guelleh have offered promising strategic solutions. We look forward to many more years of fruitful partnership. Your Excellency, can you discuss the current state of bilateral relations between Djibouti and Saudi Arabia? The Kingdom of Saudi Arabia has helped Djibouti for many years and continues to support our efforts at independence and financial security. The political systems work together within different regional and international regions to ensure global cooperation. This work has secured our success at bi-literalism through the creation of a joint government committee, military committee, AND security committee along with a business council which has joined both nations. Currently, we are working to further develop our economic relationship. Since 2002, you have served as Ambassador of a strong nation. Today, you are the Dean of the Diplomatic Corps to the Kingdom of Saudi Arabia. What are the personal motivations that compel you to continue to serve your country and its people? As you know, the Kingdom of Saudi Arabia is one of the most essential countries not only in the region but in the entire world. It is also clear that the capital of the Kingdom has had far-reaching effects in the global hemisphere and the job of an Ambassador is not an easy one. Thankfully, the leadership and progress in my country are moving forward, and the citizens seem to be satisfied with the work that I do. My work is a political decision; it is not in my hands to decide whether I should remain in office or not. However, I do hope I can continue to serve my country.

31

You were honored with your country’s National Independence Medal of the First-Class degree of a commander. What was the most difficult challenge you faced on your pathway to this honor? I was honored by the president of the Republic of Djibouti H.E. Ismail Omar Guelleh to the National Independence Medal of the First-Class degree of a commander. This decision of the president gave me more responsibility to continue serving my country in a good way. I pray to God to help me do my best in this position every day. I am so happy and honored to receive this high praise. Djibouti Vision 2035 had five strong pillars: peace and unity, good governance, diversified economy, investing in human capital, and regional integration. Can you discuss each pillar and your thoughts on the core values of Vision 2035? As previously mentioned, the strategic position of Djibouti located at the entrance to Bab el-Mandeb, the southern gate to the Red Sea, is of critical importance. The Red Sea is an essential channel since it is located in the middle of the world. It connects Asia and Africa and has two gateways: the Suez Canal from the North and Bab el-Mandeb from the South. We have five new ports in Djibouti. Each works for many global locations since we only have a population of one million people. It also operates for Ethiopia, the Intergovernmental Authority on Development - Djibouti, Ethiopia, Eritrea, Kenya, Somalia, Sudan, South Sudan and Uganda (IGAD), and the Common Market for Eastern and Southern Africa (COMESA). That is nineteen countries, with a population of 450 million, that benefit from the Red Sea. With responsibility for so many areas, we have the challenge to continue to develop our economy and have a clear vision for the future. We have completed work on a new railway to Ethiopia, and we have many new ports in our area. We want to construct two new airports in the cities of Djibouti and Obock since we are considering Djibouti becoming a top tourist destination. As far as 2035, we feel we have a productive and robust vision. I hope that we can arrive there with exceptional decisions and realistic planning for the future of Djibouti. We want to continue to collaborate more often with our brothers from Saudi Arabia to assure a secure future for both of our countries. What motivates you to be an ambassador now? An ambassador is responsible for all of these issues along with the creation of connections between his country and others. I have carefully followed the changes that have taken place inside my country and in the region. I am delighted to have this opportunity to work for the betterment of our land. I will continue to work hard to expand my horizons and to serve my country faithfully.

32

When were you appointed to the position in Saudi Arabia? How many years have you been in Riyadh, Saudi Arabia? I was appointed as the Ambassador of Djibouti to the Kingdom of Saudi Arabia in 2002 and have served in this position for the past seventeen years. Can you share your feelings on what has been the most challenging part of being the Dean? What has been the most rewarding? The job of coordination between the country, the ambassador, and the Dean is essential. They must be in contact often and have a strong sense of coordination to resolve any issues that arise. Most importantly, although it is the most experienced person who becomes the Dean, that person must be very active and available all of the time. Each day the Dean meets with two or three Ambassadors. It is expected that he will help them find solutions for their problems and present to them the advice of the team. Although it is a time-consuming position, it is one that I find most rewarding. On a personal level, what is it about Riyadh that makes it a special place for you? The Kingdom of Saudi Arabia is a vast country with a very diverse culture. With all of its diverse regions, it could almost be called a continent. During my time here, I have learned a great deal about this country. However, I cannot differentiate between any of the regions because each of them has a unique flavor. In general, our culture in Djibouti is not too different from the culture here. Still, the Kingdom is the heart of this region, and it is a humbling experience to be here. What is your favorite place to visit in Riyadh? Today, Riyadh is very different from what it was like five years ago. In and around Riyadh there are many beautiful places to visit. I particularly enjoyed being in the desert, in an open area. I also enjoyed my visit to the surroundings of the Diplomatic Quarter, especially Al-Bujairi. Our new Embassy will be located right in front of the Wadi Hanifah, which is an extraordinary place. I am looking forward to our move there in the next few months.

CHARCOZA: Celebrating Meat and Meze Steak places and Arabic food are abundant in the city. But very few have curated the best meat and varied cooking techniques in elegant fashion -- making Charcoza stand out from the rest.

F

rom the outside, the horizontal, wooden panels seem to allude to the lines found in a grill. On the inside, the ambiance is a play on rustic black charcoal, leather seats, and opulent golden accents. However, the real beauty of this restaurant is housed behind the glass windows of their open kitchen, where the meat cuts are hung and cooked, each hailing from specialty farms from the Greater Omaha to Rangers Valley. “Charcoza” is a fusion of the words charcoal and meza – the center of their cuisine’s inspiration. Meze (or mezza) are known to be shared meals, often in the form of appetizers in this region. Charcoal, on the other hand, is a key component (and flavor) in the preparation of all their meat dishes, combined with the grilling expertise of their international master chefs using clay oven, open woodfire pit, Brasero grill and the Josper grill. From the equipment alone, you can already tell that grilling is

EAT

their passion. But wait until you taste the meat that’s been dredged in selected spices from their Spice Cube, which displays the regional ingredients that breathe life to their recipes such as the Sumac and Wild Thyme from Lebanon and the Maldon Salt from England. As we began with the first course, the obvious and immediate star of the table was the Crunchy Corn and Feta salad. The charring of the corn brought out its natural sweetness and played well with the feta’s brine coupled with that one exciting secret ingredient: little fried quinoa bits that’s been peppered throughout the plate, exuding a mysterious texture in every spoonful. You can also try the Two-Way Brisket Salad, which presents the Angus brisket as both shredded and slow-cooked on one side and crispy and fried on another. It is blanketed by a generous amount of baby greens, avocado slices, walnuts and a slightly sweet onion dressing. Vegetarians are also welcome in their menu with a selection “from the garden”, with dishes such as the Eggplant Bharta – grilled eggplants with leeks and topped with a smokey cheese melt. A truly unique dish from their farm to kitchen is the Charcoza Bone Marrow. The long roasted beef bone is sliced in the middle and smoked, elevating the buttery flavor of the marrow, while brisket shreds and bell peppers have been added to complete the dish. A squeeze of lemon over it makes all the difference in its taste too. An intriguing prelude to our main course was the presentation of steak knives, offered by the servers as if we were to pick a weapon of our choice. From Japanese to German

blades, the set up gave an exciting introduction for the meal ahead. Next, the Beef Casserole entered and proved to be a satisfying choice with grilled Angus striploin, baby potatoes and mushrooms covered in creamy truffle sauce. The piece de resistance was their Wagyu Cross Bred (WX) Ribeye from Rangers Valley in Australia. What makes this meat particularly exquisite is the careful and craftful crossbreeding practice that has produced an unprecedented wagyu and marbling score combination. The cooking showed respect to the meat and brought out its delicate features that made it worthy of its price. As the evening progressed, the tables started to get filled and the mood is more relaxed as we end our dinner with more conversations over a cup of tea. We peeked around their second floor and saw more private dining spaces available for large groups along with a balcony, outdoor seating that had a city view of North Ring Road. Our experience sent us home in a good mood, with fond memories of the flavors and ambiance that Charcoza made sure we had. For another special night out, we’re sure to come back here soon. Delicious and Healthy Recipes BY AYESHA MARIUM

Whip up some delicious and easy-to-make dishes for the whole family! When cooking, it’s very important to provide healthy food as well as reduce wastage. These recipes are just right up that alley. Eggplant Boats with Mint Pesto, Feta and Yogurt Dressing

Eggplant is a staple in Middle-Eastern and Mediterranean cuisines. In addition to being a delicious and versatile ingredient used in stews, dips and grills, eggplants are loaded with benefits, even its skin! They're a great source of vitamin C, vitamin K, vitamin B6, thiamine, niacin, magnesium, manganese, phosphorus, copper, fiber, folic acid and potassium. Studies claim eggplants promote a healthy heart, prevent certain cancers, helps control blood pressure as well as help with anaemia and diabetes. This recipe uses the whole eggplant which reduces wastage and is a great vegetarian option. You can add meat if you like. For a vegan version, omit the cheese in the recipe. Mint Pesto 2 cup mint leaves 1 cup coriander leaves, with stem ½ cup almonds, skinned and chopped 1 clove garlic 1 tsp lemon zest ¼ cups olive oil Salt, to taste Black pepper, to taste Directions: 1. Place the mint leaves, coriander leaves with stem, almonds, garlic and lemon zest together in a blender or a food processor and blend until finely chopped. Stop the machine a few times to scrape down the sides of the blender. 2. Season with salt and pepper, then add half of the olive oil and blend. If the consistency is too thick, add in a little more olive oil until you get a nice green paste with very little chunks.

38

Yogurt Dressing 2 cups yogurt, plain 1 cup laban, plain 1 tbsp sumac ½ tsp salt Directions: 1. Whisk all the ingredients together in a bowl. 2. Cover and refrigerate until use. Eggplant Boats 2 medium-sized eggplants ½ cup onion, diced 1 cup red bell peppers, diced 2 cloves garlic ½ cup feta cheese in oil, broken with a fork ¼ cup mint pesto Salt, to taste Black pepper, to taste Olive oil

COOK Directions: 1. Pre-heat your oven to 180°C. 2. Cut the eggplants length-wise and use a spoon and hollow out eggplants, leaving about a 1/2-inch-thick border around skin to create a boat; transfer to baking dish and drizzle with olive oil and salt. 3. Roughly chop the scooped-out pieces into bite-sized chunks. 4. In a saucepan, heat a tablespoon of olive oil and saute the garlic till fragrant. Add in the red bell peppers, chopped eggplant and onions and season with salt and pepper. Cook until the mixture is soft. 5. Transfer the eggplant mixture to a large bowl and mix in the pesto and feta cheese with oil. Check the seasoning and adjust accordingly. 6. Carefully divide and stuff the prepared eggplant boats with the mixture. 7. Pour a cup or so of water into the bottom of the dish so that eggplant doesn't dry out on the outside, to about 1/4 inch depth. 8. Bake for 55 minutes to one hour, until the eggplants are soft and the tops are browned. 9. Transfer the eggplant boats to a serving dish and drizzle the yogurt dressing. A side of green salad goes perfectly with this dish.

Veggie Potato Cakes for Kids

The vitamins, minerals, fibre and antioxidants in fresh vegetables and fruits are vital in building kids’ immune system and fighting against illnesses. However, manychildren are picky eaters and many parents struggle get-

ting their children to eat vegetables. This recipe is a great trick to sneak veggies into your child’s diet. It comes together quickly, and you can add any vegetables into the potato mixture. I love adding cooked chicken breast or rotisserie chicken into the mixture to make it a complete meal. This version involves frying the cakes in shallow oil but you can bake these in 180°C pre-heated oven for 7-8 minutes on each side. Ingredients: 3 medium-sized potatoes 1 cup carrots, diced ¼ cup onions, diced 1 cup chicken, cooked 1 egg, separated 2 tbsp butter, soft 2 cups breadcumbs Salt, to taste Black pepper, to taste Sunflower oil, for frying Directions: 1. Peel and dice potatoes. Add a teaspoon of salt to a pot of water and boil the potatoes in it until tender. Once cooked, strain the water and place the potatoes in a large mixing bowl and let them cool. 2. Separately, boil carrots until they’re tender and strain the water. 3. In a small saucepan, sauté the onion in a tablespoon of butter. Once the onion is translucent, add in the boiled carrots and sauté further for 2 minutes. Transfer this mixture to a small bowl and let it cool. 4. Take the bowl of potatoes and using a masher, mash the potatoes gently. You can make it as chunky or as smooth as you like. 5. Add in the carrot onion mixture, cooked chicken, egg, the remaining butter and give it a good mix. Season according to taste with salt and pepper. 6. Divide the mixture into 4-6 portions and shape balls then flatten into cakes using your hands. 7. Dip the cakes into the egg white then coat them in breadcrumbs. 8. Shallow fry the cakes in sunflower oil until golden brown on each side and serve.

Ireland Embassy Hosts Turquoise Mountain Presentation BY ROSITSA DOROVSKA

The Ireland Embassy hosted a presentation by Turquoise Mountain titled “Introducing Saudi Arts & Crafts” on Thursday, September 12, 2019. Turquoise Mountain was established in 2006 at the behest of HRH the Prince of Wales to preserve and regenerate historic areas and communities and to revive traditional crafts. In Saudi Arabia, it supports Saudi artisans, especially women. It provides artistic, technical, and economic opportunities that help build a thriving network for them and raise the Saudi craft industry in the international scene. In line with the Crown Prince's Vision 2030, the project’s aim is to boost the craftsmanship in Saudi Arabia as a sustainable economic pillar. D. Herbish revealed, “The Turquoise Mountain and the National Program for character and handicrafts are working on including a similar presentation during the upcoming G20 summit which will be held in Riyadh.” After researching thoroughly in the past three years, the partners have discovered the importance of preserving and developing the endangered crafts of Saudi Arabia. They have toured the Kingdom to find skilled artisans and provide them with training, budget, and market.

One of the program’s very successful stories is that of an old jewellery maker from the Farsan islands. Umm Ahmad is an 80-year-old widow who tasseled handicraft pieces. Her work was displayed during the event. From a poor widow trying to make her ends meet, she is now a trainer and her jewels are becoming famous worldwide. At least 40% of the profit from the handicrafts goes to the artisans themselves so they can be empowered and motivated to participate. Currently, the only retail store of Turquoise Mountain is located at the new Radisson Blu Hotel in the DQ, but the products are available for purchasing via Amazon and the Turquoise Mountain website (https://turquoisemountain.org). For the future, the partners are developing customized series of souvenirs and corporate gifts.

MEET

Patricia Villegas Economist

Over 10,000 residents call the DQ home. Meet Your Neighbor profiles interesting people in our international DQ Community. Learn about the diverse experience, interests, and backgrounds of DQ dwellers. Read on, and Meet Your Neighbor.

Describe your personality. I have a lot of energy so I can hardly stay calm. I love going on road trips, of which I have done plenty all over the Kingdom and in the neighboring countries. I also have a caring soul, be it with my family or the people around me. I feel like I want to take care of everyone. What hobbies are you into? Why do you love doing them? My number one hobby is working out! I enjoy all fitness activities, especially running. I worked hard to finish one marathon in Mexico and the Ironman 70.3 in Bahrain a couple of years ago. Another thing that keeps me busy is searching for healthy recipes online and finding vegan options in Riyadh. With the recent opening of cinemas in Saudi Arabia, I have restarted my love for the full cinema experience including some tasty nachos and the mandatory salted popcorn. From which country are you from? How many years have you lived in Saudi Arabia? I’m from Mexico. I’ve been living in Riyadh for almost four years. What brought you to Riyadh? Initially, I came for one month on a visit visa but out of nowhere, I found a job and it has been 4 years since then. What changes have you seen/experienced in Riyadh since you first came here? The most exciting change I’ve had to experience is women driving, which I am really enjoying! I just get into the car,

play some music, and drive. Sometimes, I don’t even need an excuse to get behind the wheels! I just go! How long have you lived in the Diplomatic Quarter (DQ)? I will complete one year in October living here, but I have worked for three years in the DQ. Since I decided to move here, my life has become more comfortable. Certainly, it was the best decision ever. What were your first impressions of the DQ? The green on the roads was impressive as it is something not common in Riyadh. Also, the visibility of people having open air activities like walking, running and cycling. What’s your day like in the DQ? I normally start my day by walking my dog Halloumie in Yamama Park, then go for a run myself in the walking trail before it gets too hot and over the weekend, my husband and I enjoy having our friends over at home. What do you like most about the DQ? I would say I like the many open public areas that people can use to either go for a walk or arrange for a picnic or for any other activity in the open. My favorite spot is the walking trail behind the King Faisal School. Another thing that I love madly about living here is not having to wear an abaya! What is something you wish the DQ had, but currently doesn’t? Would it be too much if I ask for a cinema to open inside the DQ? Continuing with the wish list, what about a supermarket with a large healthy food section? A Friday bazaar with food and other stalls where people from the community could go to meet with neighbors and invite their friends will also be very much welcome. Where are your favorite places to visit in Riyadh? I enjoy historical places. Old Diriyah is one of my favorites for an evening walk. It’s amazing! Any tips/recommendations/advice for your DQ neighbors? Leave the comfort of the AC at home and go out to explore the parks and walking trails in the DQ.
