If you’ve ever been to any kind of large family function or potluck, you have most assuredly had some form of breakfast casserole. There are as many variations of this casserole as there are utensils in my kitchen, but if you've never attempted to make one, this is a pretty good way to start. Ellen Watson, of Kilgore (widow of Randolph C. Watson, fourth president of Kilgore College, among other things), gave me this recipe more than 25 years ago. I don’t believe I ever attempted to make it until more than 5 years later once we had the girls. It’s funny how quickly it became a tradition in our household. Even though we now have several other favorite breakfast foods, we just can’t stop making this one every Christmas morning. You will only need a few basic ingredients, and you can most certainly add in other fav’s as well. It is very forgiving and you can easily fudge the quantities on any of the ingredients! WHAT YOU'LL NEED:

1 lb ground pork sausage, cooked
·
10-12 large eggs, beaten
·
3 cups milk
·
2 teaspoon dry mustard (or 1 tablespoon yellow mustard)
·
2 teaspoons salt
·
2 teaspoons black pepper
·
8-10 slices of bread (any kind), cubed or torn into 1 inch pieces
·
2-3 cups shredded cheddar
WHAT TO DO: 1. Brown sausage, crumble while cooking, drain and set aside. In a separate medium size bowl, whisk eggs. Add in milk and remaining ingredients. Stir well. Toss in cooked sausage and pour all into a

greased 9x13 casserole dish. Bake at 350 for 45-60 minutes. It is done when you press on the center with a spoon and see no liquid oozing out. Remove from oven and let sit for at least 15 minutes. The original recipe from Mrs. Watson, said to prepare the casserole the night before and bake the following morning. That was actually what enticed us to make it for those early Christmas morning
breakfasts to begin with! We quickly learned when the girls were young, that we could whip it up on the day of, in those early morning hours while viewing Santa’s bounty, and it worked just fine. We would toss it into the oven while everyone oogled over their gifts. While it baked for about an hour, this gave plenty of time for my husband to cut up gift boxes, pick up wrapping paper piles, build a fire, add batteries to toys, as we both slurped down our coffee waiting for the caffeine to kick in. Traditionally, as if the casserole was not enough, we like to add even more carbs to the meal. Our family eats this with warm flour tortillas, drizzled with our local Albert’s Hot Sauce down the middle. Breakfast casserole instantly transformed into a breakfast burrito.

Everyone loves a festive hot chocolate bar. Hot chocolate is one of those seasonal drinks that both kids and adults love, which is why it's the perfect treat to serve at your wedding. We love the idea of setting up a self-serve hot chocolate bar that guests can indulge in during the reception and/or as a late night pick-me-up. Your hot chocolate bar can be as festive and fancy or as sweet and simple as you want it to be. Deck out the table with a statement sign, fancy dishware, and flower dĂŠcor. Or go for an understated, but cozy look by setting up the station on a bare, wooden table decorated with twinkling lights or faux candlelight (wouldn't want to risk a fire!). Your hot chocolate station should have everything your guests need to create the perfect cuppa. Of course you'll want to provide the cocoa mix, cups, and napkins, but the real fun is in the toppings. Think mini marshmallows or bigger ones in fun shapes (hearts or stars, for example), drink stirrers (peppermint sticks, rock candy, or stirrers topped with mini doughnut holes for extra sweetness), chocolate chips or sprinkles, cinnamon sticks, caramel sauce and flavored syrups (coconut, butterscotch, hazelnut, etc.), whipped cream, and bits of candy. With a hot chocolate bar at your wedding, you'll definitely capture the hearts of your guests, as well as keep them warm!
