What Is Vitamin C? Dr. Carolyn Dean Vitamin C - or ascorbic acid - is a vitamin that is found in a variety of foods, such as citrus fruits, peppers, broccoli and brussels sprouts. The main function of vitamin C in the body is to protect cells, which enables them to stay healthy, as well as helping the process of wound healing and maintaining healthy bones, cartilage, skin and blood vessels. Vitamin C does this as it is important in the synthesis of collagen - a protein that makes up the majority of our connective tissue.
