CHEF MARCUS BEAN RECIPE
Roasted leg of lamb with garlic, thyme & parmesan roasted new potatoes
Serves: 6-8
• Prep Time: 10-15 Minutes
For the lamb:
• DukesHill Whole bone-in leg of lamb 2kg
• 6-7 garlic cloves cut in half
• 4 Sprigs of Rosemary, cut into small pieces to spike into the lamb
• Rape seed oil
• Salt
STEP 1
• Cook Time: 25 Minutes Per 500g
For the potatoes:
• 1 kilo new potatoes
• 4 sprigs of Thyme
• Rapeseed oil
• Salt & pepper
• 7 x cloves of garlic cut into small pieces
• 2 sprigs of thyme (remove thyme leave from stem and use)
• 150g Parmesan
Preheat the oven to 160 degrees. Mark incisions in the lamb with a knife and spike with rosemary and garlic all over. This will give a great flavour when it cooks. Cover the lamb with oil and salt and put on a baking tray. Place in the oven and cook for 1 ½ hours or until the lamb reaches 55 degrees for medium (pink). Always check the temperature after 1 hour of cooking.
STEP 2
Place the new potatoes in a pan with cold water, add salt and thyme sprigs. Bring up to the boil and cook for around 15 minutes. Then run under some cold water to cool.
STEP 3
Once the potatoes are cool, slice them lengthways. Place into a mixing bowl and cover with oil, salt, pepper, chopped garlic & thyme leaves. Roast in a preheated oven between 200 - 220 degrees for about 20 minutes, or until golden. Cover the potatoes in freshly grated parmesan and a pinch of salt, and place back into the oven for a further 20 - 30 minutes until golden and crispy.
STEP 4
Once cooked, allow the lamb to rest for at least 20 minutes before carving. Serve with Lucy’s Chorizo Jam and Pickled Shallots.

NEW Easter Ham
DukesHill Easter Ham 2024
Our special edition Easter ham this year is a delectable Apple & Sultana glazed ham. Made using our traditional Wiltshire Cure where the hams spend almost a week maturing in our own-recipe brine. The hams are then air-dried for a further week to mature and remove excess moisture before being steam-cooked for 12 hours, allowing the fat to render and soften to provide a buttery texture. We then coat the hams in our delectable Apple & Sultana glaze before finishing off in our glazing ovens.
The resulting ham has a moist texture with a mild, sweetly spiced Bramley and Braeburn apple flavour and a hint of sultana sweetness. A delightful twist on a classic Easter Ham.

York Ham
The quintessential English ham, dry cured for a saltier flavour and denser texture.
If you are looking for the most traditional and iconic ham to grace your table, look no further than the York. This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries.
We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms.
This results in a beautiful ham with an unparalleled depth of flavour and firmer texture, and is the source of our coveted Royal Warrant. Due to its saltier nature, we recommend that you slice it thinly.

Shropshire Black Ham
Dry cured, then marinated in molasses and spices, resulting in a slightly saltier flavour with a hint of sweetness and a denser texture.
With origins dating back to 1781, this flavoursome ham is a direct descendent of the historic Bradenham Ham. This is a dry cured ham with a robust flavour and firm texture that develops during several months of maturation.
What sets it apart, however, and gives the ham its distinctive black rind, is a fortnight spent wallowing in a special marinade of molasses, juniper berries and spices.
