We are thrilled to announce the latest addition to our collection: the finest A5 grade, fresh Japanese Wagyu Steak. Renowned for its unparalleled tenderness, highest marbling in the world, and exquisite flavour, wagyu steak epitomises fine dining and artisan craftsmanship. Naturally reared with meticulous care and precision, each bite promises a rich buttery flavour and melt-in-themouth texture.

Spring also sees the return of favourites such as our lamb kebabs, bacon burgers, and pulled pork. Along with some delectable new desserts from our friends at Montmartre Patisserie.

Recipe of the Month

How to make chimichurri sauce

Ingredients

• 1 cup firmly packed fresh flat-leaf parsley leaves

• 3 garlic cloves

• 2 tablespoons fresh oregano

• 1/3 cup extra virgin olive oil

• 2 tablespoons red wine vinegar

• 1/2 teaspoon sea salt

• 1/8 teaspoon freshly ground black pepper

• 1/4 teaspoon red pepper flakes (adjust to taste)

Elevate your Wagyu steak experience with a signature chimichurri sauce. Bursting with vibrant flavours and aromatic herbs, this tangy condiment perfectly complements the rich, buttery taste of our Japanese Wagyu. Follow our simple recipe to create a culinary masterpiece of your own.

STEP 1

Finely chop the parsley, fresh oregano, and garlic (or use a food processer – several pulses) and combine in a bowl.

STEP 2

Stir in the red wine vinegar and extra virgin olive oil until well combined.

STEP 3

Add the red pepper flakes, salt, and pepper, adjusting to taste for desired level of spiciness and seasoning.

STEP 4

Allow the chimichurri sauce to sit for at least 30 minutes before serving to allow the flavours to meld together.

STEP 5

Drizzle generously over grilled Wagyu Steak just before serving, or use as a dipping sauce for an extra burst of flavour.

A truly authentic Japanese wagyu experience

Farmers raise their cattle with love and meticulous care to deliver the highest standard of quality. The cattle graze in a temperate climate, with plenty of sun, clean air, and fresh spring water. They are fed pasture grass and rice straw during the rearing and fattening stages and given a nutritious feed, which helps ensure the trademark marbling in the meat. This natural rearing process translates into the taste of the wagyu, which is rich and well-balanced.

With some of the highest marbling in the world, wagyu has a very low melting point, a rich buttery flavour and melt-in-the-mouth texture.

The quintessential English ham, dry cured for a saltier flavour and denser texture.

If you are looking for the most traditional and iconic ham to grace your table, look no further than the York. This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries.

We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms.

This results in a beautiful ham with an unparalleled depth of flavour and firmer texture, and is the source of our coveted Royal Warrant. Due to its saltier nature, we recommend that you slice it thinly.

Shropshire Black Ham

Dry cured, then marinated in molasses and spices, resulting in a slightly saltier flavour with a hint of sweetness and a denser texture.

With origins dating back to 1781, this flavoursome ham is a direct descendent of the historic Bradenham Ham. This is a dry cured ham with a robust flavour and firm texture that develops during several months of maturation.

What sets it apart, however, and gives the ham its distinctive black rind, is a fortnight spent wallowing in a special marinade of molasses, juniper berries and spices.

We use the same top quality British pork, and the same cure as our best-selling Wiltshire hams, but what sets these little gems apart is they are trimmed of all fat and steeped in oodles of clear blossom honey for a minimum of 24 hours to allow the honey to impart its wonderful flavour before baking. A world away from cheaper so called "honey flavoured" hams.
