DukesHill Christmas Ham Our special edition Christmas ham this year is a delectable cranberry glazed Wiltshire ham, generously stuffed with pork & cranberry stuffing. We use our traditional Wiltshire Cure where the hams spend almost a week maturing in our own-recipe brine. We add a touch of brown sugar to our brine recipe to give a subtle sweetness to this mild and delicious ham. We generously stuff each ham by hand with our pork & cranberry stuffing before being steam-cooked for 12 hours, allowing the fat to render and soften to provide a buttery texture. Once prepared, we coat the hams in a delicious cranberry glaze before finishing off in our glazing ovens. The resulting ham has a lovely mild flavour and a moist texture with a quintessential hint of cranberry.

DukesHill was founded with the vision of creating the finest, traditionally cured hams the “old-fashioned way” using top-quality outdoor bred British pork and our ownrecipe brine. Our product range may have grown over the years, but our guiding principle of putting flavour and quality before speed or yield remains as strong as ever.
Whole Wiltshire Hams IDEAL FOR CELEBRATIONS & FAMILY GATHERINGS Our best-selling ham has a proud history. In 1841, Elizabeth Harris, the matriarch of a ham-curing dynasty based in Calne in Wiltshire, perfected a method of curing pork through immersing the pork legs in brine rather than simply applying dry salt. The result was a delicious ham that is milder in flavour than the distinctly saltier dry-cured hams of long ago. DukesHill Wiltshire Hams are cured by immersing the whole pork legs for almost a week in our own-recipe brine, to which we add unrefined brown sugar to give a subtle sweetness to this mild and delicious ham. We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms. Royal Oscietra Caviar
Beluga caviar comes from the Huso huso sturgeon which can reach a maximum length of 8 meters and a weight exceeding 1.5 tons! Originally from the Black Sea, the Caspian Sea and the D’Azov Sea, it was also found in the Adriatic and Ionian.
Extracted from the Russian Sturgeon, a species originally native to the Caspian Sea, Black Sea and Azov Sea. This medium-sized sturgeon can weigh between 20 to 60kg. Only the largest roe are selected for this elegant caviar, with a subtle fruity and nutty flavour and with tones of dark brown to beige in colour. The time required to harvest this caviar is approximately 10 to 11 years. Surpassed only by Beluga in terms of quality.
It is the rarest and hence the most expensive caviar available and is characterized by large eggs (over 3 mm) which tend to be oval, with a colour ranging from pearl grey to dark grey which are harvested from the sturgeon after an average of 20 years.

The Territorials Isle of Mull Cheddar This fabulously tasty, well rounded Scottish cheddar is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows. There is some variation throughout the year depending on the seasons but this adds to the interest. Delivery Information
The photographs throughout this brochure show serving suggestions. As you will see, we show our hams decorated in various ways. Unless specifically stated otherwise, your ham will arrive unglazed and ready for you to dress with breadcrumbs (not supplied) or glaze as you prefer.
All our products are sent to you fresh and packed securely for next working day delivery, except for smaller items and remote destinations. Delivery times aren’t guaranteed for a specific time during the day and during peak periods may be delivered later than usual. Please notify us promptly if your order doesn’t arrive. Delivery notifications are issued by text & email (if details are provided).

Placing your order For Freepost orders, allow up to 3 weeks for your form to reach us. To expedite delivery, affix a stamp and send it to Customer Service at DukesHill Ham Company Ltd, Lodge Park, Hortonwood 30, Telford, TF1 7ET. If your order is for a specific date, please schedule delivery a few days in advance. All our hams keep well after delivery, so it’s better to refrigerate them for a day or two than risk not arriving in time! You must be 18 years old or over to order or receive wines, beers, spirits, and knives. By placing an order, you confirm that you are at least 18 years old. If gifting a food box or sending a luxury hamper or gift box, we will be happy to forward your personal message. This can be added during checkout or please ensure your note or card is enclosed with your order form.
We do not deliver on Sundays or Mondays. We cannot deliver to PO Box numbers or send to overseas destinations.
Weather & Delays If adverse weather or unforeseen circumstances hinder delivery, we will strive to deliver at the earliest opportunity, with limited liability. Snow may cause delays, so please be patient if delivery drivers are not able to get through to you.

All of the key allergens are listed in full on all our packaging and can also be seen on our website.
