Inspire me... Chilli Pork Chops with Pear & Apricots Serves 2 | Prep 30 mins | Cook 1hr 50 mins | A Little Effort

2 pork chops 1 tbsp plain flour ½ tsp sea salt freshly ground black pepper 2 tbsp olive oil 1 onion, roughly chopped 2 garlic cloves, peeled and finely chopped 25g pumpkin seeds ½ tsp coriander seeds ½ tsp cumin seeds ½ tsp Spanish paprika (Pimenton) ½ green chilli, chopped 10g fresh coriander, leaves and stalks chopped 1 tsp concentrated tomato puree 150ml white wine 200ml chicken or vegetable stock 75g dried apricots, whole 2 pears, peeled, cored and quar tered zest ½ orange • Pre heat the oven to 180’C/160’C fan. • In a heavy based pan heat the oil. Dust the chops with the seasoned flour and fry over a high heat until browned, approx. 5 minutes on each side. Remove to a casserole pot. • Whilst the chops are cooking dry fry the pumpkin, coriander and cumin seeds for 1-2 minutes over a high heat just until you can begin to smell their fragrance. Remove from the heat and transfer to a small bowl chopper/food processer. Add the green chilli, fresh coriander and paprika and whizz until chopped finely.

150g baby broad beans, fresh or frozen 150g peas, fresh or frozen 300g linguine 150g pancetta, diced 1cm cubes 2 tbsp olive oil 2 cloves garlic, chopped 125g soft goats cheese (such as Ragstone), crumbled 50g Parmesan, grated 1 tbsp lemon juice ¼ tsp sea salt freshly ground black pepper • Star t by bringing a pan of water to the boil and throwing in the broad beans for 2-3 minutes followed by the peas for a fur ther 2-3 minutes. Drain and immediately refresh in cold water until they have lost their heat. Drain. • Remove the hard outer skin from the broad beans and from the peas if using fresh peas (not necessary if using frozen podded peas).

Dukeshill Bacon

Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too. TOULOUSE SAUSAGES IN GREEN LENTIL SAUCE

1 Dukeshill Pork Belly Confit 500g, diced into 1cm cubes 1tbsp vegetable oil 1 tbsp sesame oil 100g salad leaves 100g sugar snap peas 100g mange tout 60g coriander leaves, removed from stalks ½ cucumber, cut into thin strips 6 spring onions, sliced 400g cooked rice noodles 2 tbsp maple syrup 2tbsp orange juice 2tbsp sesame oil

CONFIT DUCK LEGS

• Firstly, prepare the salad by blanching the sugar snap peas and mange tout for 2 mins in a pan of salted, boiling water. Drain then refresh under cold running water for 2 minutes then drain again.

SAVE

• Throw the noodles, salad leaves, mange tout, sugar snap peas, cucumber and spring onion in a bowl. • Mix together the maple syrup, orange juice and 1tbsp sesame oil and drizzle over the salad. Mix with your hands to ensure everything is coated. • Heat the vegetable oil and 1tbsp sesame oil in a heavy based frying pan over a medium to high heat. Fry the cubes of Pork Belly Confit for approximately 5-7 mins until crispy around the edges. Remove and drain on some kitchen roll. • To serve simply place a large spoonful of salad in a bowl and top with the crispy Pork Belly Confit. • This needs no other additions, not even seasoning.
