Dear Dukeshill Customer, Easter is about so much more than chocolate eggs! Whatever your religious inclinations, it’s also a time for families and friends to get together to enjoy a rare double bank holiday; a time for enjoying longer days as Spring gathers pace; and a time for enjoying some seasonal treats of course! Our perennially popular Leg of Lamb makes the perfect Easter Sunday lunch, and a ham on standby in the fridge should be a no-brainer! KITCHEN

A lovely way to glaze your Wiltshire ham... Ginger Glazed Ham

Serves 35+ | Easy | Prep 10 mins | Cook 25 mins

This is one of my favourite ways to serve our hams. The ginger glaze makes a delicious, sticky ham, perfect for your Easter entertaining. 1 whole bone-in or boneless Wiltshire ham (if using half a ham just halve the glaze ingredients also) Glaze 350g chunky ginger preserve 2 tsp English mustard 100g soft dark brown sugar ½ tsp ground cloves Tip: If you can’t get ginger preserve then try the following glaze: 6 tsp marmalade 2 tsp ground ginger ¼ tsp allspice ½ tsp mixed spice

• Heat the oven to 220°C/200°C fan/gas mark 7. • Place the ham on a foil lined roasting tray and criss cross the fat using your knife to create a diamond pattern.

• Mix all the glaze ingredients together and spoon over the ham. Pop in the oven for 20-25mins.

• Remove from oven and gently spoon any residual glaze from the bottom of the tray over the ham.

• Leave to cool completely before serving.

Roast Leg of Lamb with Preserved Lemons & Anchovy served with a Lemon & Mint Dressing Serves 8 | Easy | Prep 20 mins | Cook 2 hrs

The delicious marinade and lamb juices mingle and transform during cooking into a rich jus, meaning there is no need to make any gravy. Just serve with the zingy Lemon & Mint Dressing which can be made ahead. 1 x 2kg Leg of Lamb Marinade 3 sprigs fresh rosemary, stalks discarded, and leaves chopped finely 2 anchovy fillets, chopped 2 preserved lemons finely chopped, pips discarded 1 red chilli, finely chopped 3 garlic cloves, crushed 2 tbsp olive oil 1 tbsp. runny honey

Lemon & Mint Dressing 1 preserved lemon, pips removed, and skin and flesh chopped 20g fresh mint, finely chopped 6 tbsp extra virgin olive oil 2 tbsp white wine vinegar 2 tsp caster sugar

Pre heat the oven to 200°C / 180°C fan. Gas mark 6. Score the skin of the lamb and pop skin side up in a roasting tray. Mix all the marinade ingredients together in a bowl and pour over the lamb, massaging it into the cuts. Cover and marinate in the fridge for a minimum one hour but preferably overnight. Roast the lamb for 1¾ - 2 hours until cooked. Remove from the oven in its roasting tray along with the juices and cover the lot with foil. Leave to rest for 15 minutes before carving. Meanwhile prepare the dressing by mixing all the ingredients in a saucepan and gently heating for 2 minutes to dissolve the sugar. Remove from the heat and allow to cool. Slice the lamb and serve with new potatoes, green beans and the roasting juices from the tray poured over with the dressing drizzled over the lamb.

Porchetta & Duck Egg Baps with Caesar Salad

Serves 6 | Some Effort | Prep 30 mins | Cook 3 hrs approx.

1 x 1.2kg Porchetta Roasting Joint 6 duck eggs 6 ciabatta rolls

1.2kg joint is sufficient. See Opposite page

Gremolata 25g flat leaf parsley (leaves only) 1-2 garlic cloves zest of one small lemon, plus ½ lemon juiced 100ml olive oil pinch salt and pepper, to taste pinch chilli flakes (optional) Caesar Salad (minus the croutons!) 3 cloves garlic, peeled and crushed 125g mayonnaise 5 anchovy fillets, minced 60g grated Parmesan 1 tsp Worcestershire sauce 1 tsp Dijon mustard 1 tbsp lemon juice salt and pepper to taste 4 tbsp olive oil 1 large romaine lettuce, torn into bite-size pieces

• Roast the Porchetta according to the instructions on its packaging. • Place parsley, garlic and zest in a food processor and pulse until

chopped. Add oil, salt & pepper and lemon juice. Pulse again, until uniformly combined but not too smooth. Add chili flakes for a touch of heat if you like.

• Crush 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 40g Parmesan, Worcestershire sauce, mustard and lemon juice. Season to taste with salt and black pepper. Toss the lettuce with dressing and sprinkle over the remaining Parmesan cheese.

• Fry the duck eggs until white is set but yolk is still runny.

• Heat the ciabatta rolls in an oven to warm and gently crisp, then split. With the cut side down place each roll in the Porchetta pan to mop up some of the juices. Layer with two slices of porchetta on the ciabatta base, top with a spoonful of the gremolata, then a duck egg and replace the ciabatta lid. Serve alongside the Caesar salad.

• Remove the meat from its packaging the day before to allow

the skin to dry out. Remove from the fridge two hours before cooking. Pre-heat the oven to 250°C / 230°C fan. Gas mark 9.

• Place the meat on a chopping board and remove the skin, keeping to one side.

Herby Roast Pork

Serves 6-8 | Moderately Easy | Prep 20 mins | Cook 2 hrs 5 mins

This is a lovely way to roast our pork. Using lots of herbs, spices and shallots it gives a nice boost to the flavours and resulting gravy. 1.75 kg rolled shoulder of pork 1 tsp fennel seeds, crushed 1 tsp crushed chilli flakes 1 tsp sea salt flakes freshly ground black pepper grated zest of 1 lemon 4 cloves garlic, finely chopped 20g fresh parsley, chopped finely 2 tsp fresh rosemary leaves, chopped

2 tsp fresh thyme leaves 5 tbsp olive oil 12 echallion shallots, peeled and halved 1 tsp sea salt flakes 1 tbsp plain flour 200ml white wine

• In a small bowl mix the lemon zest, garlic, crushed fennel seeds, chilli flakes, seasoning, parsley, rosemary and thyme with 2 tbsp oil and mix to a paste.

• Spread this mixture on the meat and pop the skin back on top. Re-tie with string to keep the skin in place.

• Place the shallots in a roasting tin, place the pork on top and

drizzle the remaining 3 tbsp oil over. Sprinkle the pork with the remaining 1 tsp sea salt.

• Roast the pork for 35 minutes, until the crackling is golden and

bubbled. Reduce the heat to 180’C/160’C fan and cook for a further 90 minutes or until cooked to your liking. Remove from the oven, cover with foil and allow to rest for 15 mins before carving.

• Meanwhile make a gravy using the juices in the tin with 1 tbsp

flour and 200ml white wine. Serve with roasted vegetables and cannellini bean mash.

Chicken & Cannellini Bean Casserole

Serves 4 | Moderately Easy | Prep 20 mins | Cook 1¾ hrs

This is a take on a chicken cacciatore with the addition of cannellini beans. Warming, hearty and full of flavour. 4 chicken legs (or 8 chicken thighs), skin on ½ tsp sea salt

freshly ground black pepper

4 cloves garlic, peeled and crushed 37.5cl red wine

• Pre heat the oven to 180°C / 160°C fan. Gas mark 4. • Marinate the chicken in the seasoning, red wine, herbs and garlic for a minimum one hour, but preferably overnight.

• Remove the chicken from the marinade, reserving the

marinade juices and dust the chicken with the seasoned flour.

• Heat the olive oil in a heavy based pan over a medium to high heat and brown the chicken pieces.

• Reduce the heat to low to medium and add all the other

ingredients, including the marinade juice. Bring to a gentle simmer and cover with a lid. Remove to the pre-heated oven for 1½ hours.

• Serve with crusty bread and / or a salad.

Dukeshill Bacon

Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

Moroccan Inspired Sausage Meat Flatbreads Serves 4 | Easy | Prep 15 mins | Cook 20 mins

With Moroccan influences this recipe is packed full of flavour yet not too spicy. Equally good served as a baked potato topping in place of the flatbreads. 4 flatbreads 2 tsp olive oil 1 onion sliced 1 tsp pistachios chopped 2 tsp pine nuts 3 garlic cloves, chopped 400g extra meaty sausages, skinned and crumbled 2 tsp mango chutney 1½ tsp ground cumin 2 tsp paprika ½ tsp turmeric

1 tsp preserved lemons, chopped 2 tsp rose harissa paste 40g sultanas 300g spinach (or chard), chopped or torn 100ml water ¼ tsp salt freshly ground black pepper tahini 60ml natural yoghurt 200ml ¼ tsp salt 4 tsp fresh green pesto

• Fry the onion, pistachios and pine nuts in the oil over a medium heat for a few minutes until the onion is golden.

• Add the garlic and fry for two minutes, then add the sausage

meat and fry for another five minutes until browned, breaking the meat up as it cooks.

• Add the chutney, sultanas, cumin, turmeric, preserved lemon and rose harissa, and fry for one minute.

Pork & Chickpea Casserole with Cheesy Polenta Dumplings Serves 6 | Quite Easy | Prep 15 mins | Cook 1hr 10 mins

KITCHEN

I just love using our Pork Confit, it really is the easiest and tastiest cheat for producing a casserole that your family and friends will think took you ages. As our Pork Confit is cooked for fourteen hours it is meltingly tender already and infused with so much flavour. No tough meat to stew for hours! 2 tbsp olive oil 500g Pork Belly Confit, cut into 2cm chunks (keep the juices and bay leaves from the packet) 1 large onion, chopped 1 large carrot, finely chopped 2 garlic cloves 1 tsp fennel seed small pinch dried chilli flakes 2 tsp paprika 3 sprigs of thyme 1tsp caster sugar 1 tbsp tomato purée 50ml sherry vinegar 400g tin chopped tomatoes 400g tin chickpeas, drained and rinsed 300ml water ½ tsp sea salt freshly ground black pepper Dumplings 100g instant dry polenta 100g Parmesan, finely grated 115g self-raising flour 75ml milk 75g crème fraiche 1 egg

• Heat the oven to 180°C / 160°C fan. Gas mark 4. • Heat the oil in a casserole dish. Sauté the onion,

carrots and garlic over a gentle heat for 10 minutes.

• Add the spices and thyme and cook for a further

minute, before adding the sugar and tomato puree.

• Pour over the sherry vinegar, tomatoes and water and stir through thoroughly.

• Stir the pork confit along with its juices and bay leaves

from the packaging into the casserole, followed by the chickpeas, season with salt and pepper and bring to a simmer with the lid on, about 5 minutes. Pop in the pre heated oven for 30 mins.

• Mix the dumpling ingredients together in a bowl to form a thick batter. Place large spoonful’s of batter onto the casserole and return to the oven for 20 minutes.

• Warm the flatbreads and top with the tahini yoghurt.

Put the sausagemeat mixture on top and serve with the green pesto drizzled on top.

This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

Jonny Crickmore imported his herd of red and white Montbeliarde cows from small French alpine farms, and they now graze the lush meadows of Stow Fen where Jonny makes this fabulous cheese in small batches from raw milk. Dating back to before Tudor times Simnel Cake is now traditionally eaten at Easter to celebrate the end of the 40 days of Lent. This delicious light fruit cake has a layer of almond paste baked into the middle while on the top it is decorated with eleven marzipan balls placed around the edge, representing the apostles. In the case of the loaf cake the apostles have been replaced by three bunnies!
