High Summer Brochure Dear Dukeshill Customer, Welcome to high summer; where longer, warmer evenings are upon us, and summer is in full swing. As ever, Dukeshill is here for all your summer catering requirements, with a wonderful array of delicious food to delight. Whether it be a picnic, BBQ, or celebration with loved ones, you can be sure to enjoy the summer with the finest artisan food from Dukeshill. We have been working in close partnership with award-winning Scottish cider artist, Peter Stuart, to bring an exciting new addition to the range; our delightful Dukeshill Traditional Apple Cider, the perfect refreshing and satisfying tipple for those warm summer evenings. Hand-crafted in small batches, using real fruit and plenty of maturation time makes our traditional apple cider undeniably delicious. Smooth, balanced and lightly sparkling with a crisp apple finish – we are very proud to bring this special product to our wonderful customers this summer. What better way to sample our new craft cider than perfectly paired with the finest cheese and charcuterie? Whether a taster for two or the perfect gift for any cider lover, we have two delectable cider hampers to enjoy this summer. Our Apple Cider & Cheese Hamper features a generous slab of Isle of Mull Cheddar, along with wonderfully creamy Cote Hill Blue Cheese, perfectly paired with our refreshing apple cider. For the Coleslaw 100g grated Carrot 100g grated Cabbage 150g Greek Yoghurt (this can be 0% or full fat) Juice of half a Lemon Salt and Pepper

Let’s begin with the chicken thighs. These have been preseasoned in our delicious BBQ sauce and so are ready to cook straight away! There are a few different ways to cook thighs, but our preferred way is straight into the fan oven at 190 degrees for 20-25 minutes before finishing off on the BBQ for a few minutes on each side, making the skin delicious and crispy! Wash and chop the ingredients for the salad and grate the ingredients together for the coleslaw. The coleslaw can be kept in the fridge overnight, but the salad is best prepared just before eating. Shave the corns of the cooked cobs and add to the salad. Toss in the dressing and tuck in!
