LATE SUMMER ISSUE Dear Dukeshill Customer, Funny old thing, summer. We spend half the year longing for it but by the time we get to what my grandmother called the dog days, I find myself looking forward to a change of season with some relish (pages 34-35). Still, there are plenty of joys still to be found: my garden is giving a bountiful harvest (tomato, anyone?), and should I tire of relaxation there’s always the Ashes to worry about.

Bacon

Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

Jonny Crickmore imported his herd of red and white Montbeliarde cows from small French alpine farms, and they now graze the lush meadows of Stow Fen where Jonny makes this fabulous cheese in small batches from raw milk. The delicious result is the only traditional raw milk Briede-Meaux style cheese produced in the UK. The cheese has a smooth, delicate and silky texture and complex, long lasting flavours that bounce around the mouth.

Similar to a French Reblochon this mellow, buttery-rich, washed rind soft cheese is encircled in spruce bark. Made at King Stone Farm in Oxfordshire by the Haine family using pasteurised milk from 30 cows and animal rennet. It won Supreme Champion at the Artisan Cheese Awards.

250g Portobello mushrooms, sliced 50g butter

2 tbsp flour

150ml white wine, dry

250ml chicken stock

120ml double cream

170g white breadcrumbs 60ml olive oil

Heat oven to 190°C/170°C fan/gas mark 5. Grease an ovenproof dish and place the chunks of chicken and ham evenly over the base. Heat the butter in a pan over a low to medium heat and sauté the leeks and mushrooms for 5 minutes until softened.

Stir through the flour and cook for 1 minute.

Season to taste, then pour over the ham and chicken. Whizz the bread in a processor with the parsley and oil to create the oily breadcrumbs and scatter over the dish. Bake for 25 to 30 mins until bubbling and golden and serve with salads or green vegetables.
