Dear Dukeshill Customer, It’s starting to feel as though Spring has really sprung, and there is real promise of warmer, longer days ahead. It’s always round about now that I feel the urge to get outside a bit more, and that applies to eating as well. It’s never too early to think about giving the barbecue a run-out; our Barbecue Selection is a sure-fire winner. There’s lots of new things to tempt you, but may I draw your attention to our new Scotch Eggs – back by popular demand – a real treat for a picnic if the weather is kind, but you really don’t need an excuse to try these!

A delicious way to use your bacon... Bacon, Cheese & Onion Muffins Serves 9 | Easy | Prep 15 mins | Cook 35 mins

250ml milk

• Cook the bacon for 10 mins at 220°C/200°C fan until crispy. Allow to cool.

• Reduce oven temperature to 180°C/160°C fan. • Melt the butter in a pan over a gentle heat and gently sauté the onion and sage for approximately 5-7 mins or until the onion is translucent and soft.

• In a bowl mix the flour, baking powder, salt, cheese, rosemary and thyme.

• Break the bacon into small pieces (5mm) and add to the bowl along with the sage and onion.

• Mix together the milk and eggs and add to the bowl. Mix thoroughly.

• Put a small blob of butter in the bottom of each muffin pocket and place the tin in the oven for 1 min to melt the butter, then spoon large spoonfuls of the mixture into each pocket.

• Bake in a pre-heated oven at 180°C/160°C fan for 25 minutes. • Remove from oven, allow to cool on a wire tray for 5 mins then serve straightaway with lashings of butter!

Dukeshill Bacon Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

Pancetta, Cabbage & Walnuts Serves 3-4 | Easy | Prep 15 mins | Cook 15-20 mins

We first tried this in a fantastic restaurant called Jo Jo’s in Whitstable. This is my attempt to re-create it and I’m hoping you find it as delicious as I did. 200g pancetta, diced into 1 cm cubes 1 Chou or Savoy Cabbage, shredded very finely 1 tbsp olive oil 25g butter ¼ tsp salt 250ml white wine 5g knob of butter 250ml double cream freshly ground black pepper 50g walnuts, toasted 30g Parmesan, finely grated

• Begin by heating a heavy based

pan over a high heat and cooking the diced pancetta for 3-5 mins. Remove the pancetta from the pan.

• Add the oil and 25g butter to the pan

and allow to heat over the high heat. Once the butter starts to foam add the cabbage and ¼ tsp salt, tossing the cabbage as it wilts down. Keeping the heat high add the wine and reduce by half.

• Add the rest of the butter, then add the cream and seasoning. Bring to the boil to thicken.

• Remove from the heat and stir through the

pancetta. Plate up sprinkling each dish with the walnuts and grated Parmesan.

TIP: This is also delicious served alongside a grilled piece of chicken.

Sausage & Leek Gratin

Serves 4 | Moderately Easy | Prep 15 mins | Cook 1hr

KITCHEN

400g pork sausages

40g plain flour

25g butter

3 sage leaves, chopped

600g potatoes, peeled and sliced thickly 3-4mm 1 onion, sliced 4 leeks, sliced

450ml milk

2 sprigs thyme, leaves removed and stalks discarded 120g Cheddar, grated

• Pre-heat oven to 200°C/180°C fan/gas mark 6. • Bake sausages on a baking tray for 20 minutes turning halfway through cooking. Remove and when cool enough slice into 1’ thick slices.

• Cook potatoes in boiling water for 7 minutes. Drain.

• Melt butter in a large frying pan,

add onion and leeks, sage and thyme. Cook until softened, about 5 minutes.

• Add flour, cook for 1 minute, then add milk, whisking continuously, until sauce thickens, boils and is smooth.

• Remove from heat, add 75g (3oz) cheese and stir until melted.

• Transfer the sliced

sausage to an ovenproof dish, top with the cheese, onion and leek sauce.

• Scatter the potato

slices on top, sprinkle over remaining cheese. Bake for 30 minutes until browned.

Ham Hock Soup

Serves 4 | Easy | Prep 15 mins | Cook 40 mins.

A wonderfully, heartwarming dish and a great way to use up any vegetables lurking in the fridge. Works equally well with swede, cabbage, sprouts, potato etc... 1 Dukeshill Boiled Ham Hock 2 litres water 1 onion chopped 2 celery sticks chopped 3 carrots finely chopped 3 parsnips finely chopped 1 leek sliced 100g red lentils 3 sprigs thyme stalks removed 1 tsp salt ground black pepper chopped parsley

• Place the hock in a large enough saucepan and pour in

the water. Bring to a simmer and simply add all the other ingredients except the parsley. Simmer partially covered for 40 minutes.

• Remove the ham hock and leave to cool for a few minutes

before removing the skin, shredding and adding to the soup. Alternatively whizz the soup before returning the shredded ham hock to the saucepan.

• Serve with a sprinkle of chopped parsley.

Pork Confit Curry

Serves 4 | Easy | Prep 15 mins | Cook 40 mins.

KITCHEN 3 tbsp olive oil 2 onions, chopped 400g waxy small potatoes, cut into 2cm dice 3 cloves garlic, chopped 2cm piece root ginger, peeled and grated ½ tsp turmeric 1tsp curry powder ½ tsp chilli powder

½ tsp cayenne pepper 1x 400g tin tomatoes (use good quality such as Cirio) 1 litre chicken stock 500g pork confit, diced DUKESHILL 100ml coconut cream ¼ tsp salt

• Heat the oil in a heavy based pan. • Sauté the onion gently over a medium heat until translucent, about 5 minutes.

• Add the garlic, ginger and potato to the pan and stir through to coat all in the oil. Continue cooking for 3 minutes.

• Sprinkle over the spices and stir through for 1 minute before adding the tomatoes and the stock.

• Increase the heat and allow to simmer for 20

minutes until the potato is cooked and the sauce has reduced, then add the diced pork confit and return to the heat for a further 10 minutes. Stir through the coconut cream. Season to taste although it probably won’t need it.

• Serve with Basmati rice.

This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest.
