I always find leeks and apple go so well with pork, and the addition of black pudding adds a richness to the mash 400g Dukeshill Pork Sausages 800g Potatoes, peeled & diced 2 leeks, sliced 25g Butter 125g Dukeshill Black Pudding, skinned and diced 1 eating apple, cored and sliced 150ml cider or apple juice 1 sprig of thyme (leaves only) Milk for mashing Butter for mashing Seasoning
• Cook the potatoes for 15 minutes in a pan of
boiling, salted water until soft. During the last 10 minutes add the leeks.
• Meanwhile, melt the butter in a pan and fry the black pudding until crispy.
• Fry the sausages for 15-20 minutes over a medium heat. For the last 5 minutes add the apple to the pan and allow to lightly brown on both sides.
• Add the cider and thyme to the pan and leave to bubble until reduced slightly.
• Drain the potatoes and leeks and mash with a
little butter and milk. Stir through black pudding. Season to taste.
• Serve the sausages in their apple gravy
with the black pudding and leek mash and seasonal greens.

Sausage Goulash Serves 4-6 | Easy | Prep 15 mins | Cook 50 mins
This mildly spicy, warming sausage casserole has just enough of a kick to be interesting, but not blow your socks off! A great favourite in our family using any of our sausages. 2 tbsp sunflower oil 2 packs pork sausages (any in our range work well) 1 rounded tablespoon hot Hungarian paprika (add more if you really like a kick) 1 onion, chopped 1 red pepper, de-seeded and finely chopped 2 cloves garlic, crushed 1 tbsp plain flour 1 tbsp tomato puree 1 tsp sugar 1 x 400g tin good quality chopped tomatoes 250ml water ½ tsp salt freshly milled black pepper 150 ml crème fraiche 15g parsley, chopped
• Pre-heat the oven to 150°C / 130°C fan. • Heat the oil in a heavy based casserole pan over a
medium heat and brown the sausages for 10 mins. Then transfer them to a plate.
• Reduce the heat and in the same pan add the onion and red pepper and cook for about 5 minutes.
• Add the garlic, cook for another minute and stir in the hot
paprika and flour. Stir to soak up the juices, then add the tomatoes, season with salt and pepper, then bring it all up to simmering point, stirring all the time.
• Add the sausages to the sauce, bring back to simmering
point, cover with a tight-fitting lid and transfer it to the oven for 30 minutes.
• Remove from the oven and stir in the crème fraîche.
Sprinkle with some chopped parsley and serve with tagliatelle, mash or dumplings and some buttered cabbage.

Oxtail Stew with Mushrooms & Cannellini Beans Serves 3 | Moderately easy | Prep 20 mins | Cook 5 hrs
In my view, there is nothing more comforting than a rich, unctuous, glistening stew to warm you up on a cold winters day. This one is no exception, the wonderful smell during the long slow cook will have people (and dogs in our case) flocking to your kitchen! 1kg oxtail
2 tbsp olive oil
2 tbsp seasoned flour
2 onions, peeled and roughly chopped
• Coat the oxtail pieces in the seasoned flour and brown over
a medium to high heat in your casserole pot. Remove to one side and reduce the heat.
• Put the onions into the casserole pot and gently soften for
approximately 5 minutes then add the oxtail back to the pot along with any leftover seasoned flour.
• Increase the heat and add the sherry. Scrape any sticky
residue from the bottom of the pot then add the stock, mushrooms, garlic cloves, thyme, bay leaves and freshly ground black pepper.
• Stir and allow to come to simmering point before covering
with a heavy lid and transferring to the pre-heated oven set at 300°F / 150°C / fan 130°C for 4 hours. Check during cooking and top up with water if necessary.

Bacon & Sprout Omelette with Oyster Sauce Dressing

Oh my goodness, who’d have thought this would be such a winning combination but it is. Bacon and nutty, finely sliced sprouts encased by the lightest of batters and served with an intense dressing. It makes for a fabulously tasty lunch or supper dish. Simply serve on its own or with a green or tomato salad and wait for the compliments! Omelette 250g streaky bacon 500g Brussels sprouts, thinly sliced 40g butter 6 eggs 200ml milk 200ml water freshly ground pepper Dressing 1 tbsp oyster sauce 1 tbsp runny honey 2 tsp Worcestershire sauce 2 tsp soy sauce 1 spring onion, sliced
• Pre heat the oven to 180°C / 160°C fan. • In a heavy based pan dry fry the bacon over a medium heat until crispy, about 5 minutes.
• Trim the sprouts, slice finely and add to the pan, along with the butter. Continue to cook for 5-8 minutes until the sprouts are tender but still bright green.
• Meanwhile in a bowl mix together the eggs, milk, water and pepper to form a batter. Don’t be tempted to add salt.
• Remove the Brussels sprouts and bacon from the heat and tip into a
greased baking tray (8 inches / 20cm square). Pour the batter mixture over and pop in the oven for 25 minutes until set.
• Mix together the oyster sauce, honey, Worcestershire and soy sauces and set aside.
• When cooked remove the omelette from the oven and allow to cool for 5 minutes before cutting into 4 squares and serving with a spoonful of dressing drizzled over and some spring onion scattered on top.

Dukeshill Bacon
Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

It also happens to be incredibly easy to put together providing a nutritious meal in moments. • Pop into the oven for 25 minutes until golden and bubbling. • Serve straight from the dish. This is so simple and needs no
accompaniment although a hunk of fresh bread and a glass of red wine always goes well!

This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.
