St. George’s Ham

Due to popular demand, we have added this top selling ham to our year-round range. Formerly known as the “Boxing Day Ham”, we have rechristened it as St. George’s Ham. We cure it in our ever-popular, mild and sweet Wiltshire brine, and let the ham mature slowly before baking in a glaze of spiced oranges, cinnamon, mace and cloves. The Dukeshill Wiltshire Ham

Our bestselling ham has a proud history. In 1841 Elizabeth Harris, the matriarch of a ham curing dynasty based in Calne in Wiltshire, perfected a way of curing pork other than by simply applying dry salt, immersing the pork legs in brine instead. The result was ham that is milder in flavour than the distinctly saltier dry cured hams of yore. Dukeshill Wiltshire Hams are cured by immersing the whole pork legs for several days in brine, to which we add unrefined brown sugar to give a subtle sweetness to this mild and delicious ham. How many servings will I get from my ham? We give an approximate number of servings alongside each ham, based on a couple of generous slices per person; my best advice, however, is always to buy a larger ham than you think you’ll need.

What do I do with leftovers? Traditional curing methods mean that our hams can keep longer; and with a ham in the fridge you never need fret about the next meal or an unexpected guest. They also freeze remarkably well! There are so many ways to use up any leftovers, from simple sandwiches and soups to hearty meals. The Dukeshill York Ham If you are looking for the most traditional and iconic ham to grace your table, look no further than the York. This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries. We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms. This results in a beautiful ham with an unparalleled depth of flavour and firmer texture, and is the source of our coveted Royal Warrant. The Dukeshill Shropshire Black Ham This flavoursome ham is a direct descendent of the historic Bradenham Ham, which originated in the kitchens of Bradenham Manor, Buckinghamshire in 1781. Thus the Bradenham Ham Company was born, and continued to manufacture delicious hams for almost 100 years. Sadly, the company’s fortunes waned, and the recipe was passed from business to business until production ceased. Though we weren’t able to acquire the name, we were able to recreate the recipe, and so the Shropshire Black was born. Like the York, this is a dry cured ham with a robust flavour and firm texture that develops during several months of maturation. What sets it apart, however, and gives the ham its distinctive black rind, is a fortnight spent wallowing in a special marinade of molasses, juniper berries and spices. Dukeshill Bacon Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. Copas Turkeys By day, Copas Free Range Bronze Turkeys roam in cherry orchards and grass meadows under the watchful if improbable gaze of Sage and Onion, two llamas who have proved extraordinarily adept at keeping foxes at bay. At night, border collie “turkey dogs” herd the birds into their sheds for shelter and protection. The turkeys are raised on a balanced cereal diet, rich in oats, with no growth promoting additives. They are reared slowly, for around three times as long as the industry standard; the benefit of a fuller life is denser meat and superior fat cover, which makes dry plucking possible and means the birds do not need to be basted or buttered to retain their succulence. Dry plucking is slow and labour intensive, but because the turkeys are kept dry they can be game hung for an extended period, one of the main reasons for their unrivalled eating quality, providing both truly tender meat and an altogether superior depth of flavour. Every bird comes beautifully packed with a recipe leaflet and detailed cooking instructions; the whole birds and crowns include giblets. What size Turkey do you need? We would normally recommend a whole turkey for a traditional Christmas lunch for the family, but for households of all sizes and appetites, other options are available. Our aim is always to exceed your expectations in terms of product quality, value for money and service. If we have fallen short of that standard, please let us know and we will be happy to send you a replacement or to refund your payment as appropriate.

As you will see throughout the brochure, we show our hams decorated in various ways. Unless specifically stated otherwise, your ham will arrive unglazed ready for you to dress with breadcrumbs (not supplied) or glaze as you prefer. The photographs throughout this brochure show serving suggestions. All our products are sent to you fresh and securely packed by next working day delivery, except for smaller items and those going to more remote destinations. Delivery is not guaranteed for any particular time during the day. Please let us know as soon as possible if your order has not arrived. Smaller items are sent by 1st Class Post and although next day delivery is usual, it cannot be guaranteed particularly as Christmas approaches. If your order is for a specific date, please arrange for delivery at least a few days before you need it. Remember, all our hams keep for at least three weeks after delivery; it is far better that it sit for a day or two in your refrigerator than not arrive in time! If we are unable to deliver on the specified day due to adverse weather conditions or other circumstances beyond our control, we will endeavour to deliver at the next earliest opportunity and our liability is limited to this. Please bear in mind that if there are heavy snow falls, delivery drivers may not be able to get through to you until the roads are cleared and that heavy snows may result in backlogs at the delivery depots. You must be 18 years old or over to order or receive wines, beers, spirits and knives. By placing an order you confirm that you are at least 18 years old. Sorry, we are not able to deliver at weekends or on Mondays. We cannot deliver to PO Box numbers. We regret that we are unable to send to overseas destinations. We take payment at the time of order as our products are prepared specifically to your requirement. We will be happy to forward your personal message. If you wish to send your own note or greetings card, please ensure that it is enclosed with your order.
