Roast Leg of Lamb with Creamy Dauphinoise & Mint Sauce Serves 6-8 | Prep 40 min | Cook 2 hrs 20 min | Moderate
Simple Roast Leg of Lamb
Preheat oven to 200°c/180°c fan/gas mark 6.
2kg leg of lamb, room temperature
Cut incisions into the shank end of the leg and place slivers of garlic into these incisions.
75g butter, softened
Mix the rosemary, salt and pepper into the softened butter and coat the lamb all over as evenly as possible.
1 tbsp freshly ground black pepper
Place the lamb in a roasting tin and roast for 1 ¾ - 2 hours until cooked. Remove from the oven and cover with foil to rest for at least 15 minutes.
1tbsp fresh rosemary, chopped 2 tbsp salt
2 cloves of garlic, sliced Potatoes Dauphinoise
1kg waxy potatoes, sliced thinly 2 cloves of garlic, crushed 4tbsp butter, to grease 250ml double cream 100ml whole milk
½ tsp nutmeg, grated 100g Comté, grated Mint Sauce
10g fresh mint, finely chopped
Place the cream and milk into a large saucepan on a low-medium heat with the crushed garlic and a small grating of nutmeg. Bring up to the boil. Lower the heat and season with salt and pepper. Add the potato slices into the saucepan and simmer for 10 minutes until softened but not cooked completely. Generously grease a baking dish with the butter. Spoon the potatoes into the baking dish and pour the cream mixture on top until just covering the potatoes. Cover the dish with foil and bake for 30 minutes. Lower the oven temperature to 160°c fan. Remove the foil from the potatoes and sprinkle the Comté on top. Bake for a further 15-20 minutes uncovered until cheese is golden and bubbling.

To make the mint sauce finely chop the mint and put in a bowl with the rest of the sauce ingredients and mix until the right consistency.
1tbsp boiling water
Add more water if necessary.
3 tbsp white wine vinegar ¼ tsp salt
Serve with spring vegetables.

This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows. One of our oldest British puddings Lemon Posset deserves a revival. In medieval times Posset was a milky drink with alcohol or citrus added which resulted in the milk curdling and thickening. Over the centuries posset became more of a dessert with the addition of ground almonds, egg yolks etc. Ours is simply made with cream, sugar and lemon and is pure lemony heaven. Delicious on its own or served with a square of our melt in the mouth shortbread on the side. Thursday, Friday & Saturday deliveries. Easter Week delivery will be Wednesday & Thursday only.

Ours is made using organic double cream, sugar and vanilla with a little gelatine which results in a loose set. Simnel Cake Dating back to before Tudor times Simnel Cake is now traditionally eaten at Easter to celebrate the end of the 40 days of Lent. This delicious light fruit cake has a layer of almond paste baked into the middle while on the top it is decorated with eleven marzipan balls placed around the edge, representing the apostles. In the case of the loaf cake the apostles have been replaced by three bunnies!
