This fabulously tasty, well rounded Scottish cheddar is made on the Characteristic French A.O.C. cheese from the Jura mountains. Isle of Mull by the Reade family. It is naturally produced using animal Moreish rich, nutty flavour and firm texture. Intensive, aromatic and rennet and unpasteurised milk from a mixed herd of Friesians, fruity. Made from unpasteurised milk. Ayrshire, Jersey and Brown Swiss cows. There is some variation £8 throughout the year depending on the seasons but this adds to the CHMTS Comté “Grande Saveur” 200g interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

One of our oldest British puddings, Lemon Posset deserves a revival. In medieval times, Posset was a milky drink with alcohol or citrus added which resulted in the milk curdling and thickening. Sausage, Aubergine & Tomato Gratin Serves 4 | Prep 15 min | Cook 45 min | Very Easy
3 tbsp olive oil 400g pork sausages 2 aubergines, diced
8 anchovy fillets, crushed in a pestle and mortar 1 tsp flour
2 cloves garlic, sliced
2 tbsp milk
500g ripe cherry tomatoes (or 400g tin good quality cherry tomatoes)
olive oil for drizzling
½ tsp sugar
120g fresh breadcrumbs 5g parsley, chopped
½ tsp salt First cook the sausages in a heavy based pan in 1tbsp oil over a medium heat for 20 minutes until browned all over. Using the same pan add the remaining 2 tbsp olive oil and reduce the heat to medium/low. Cook the garlic for 1 minute then add the aubergine and tomatoes and cook for 5 mins crushing them down as they cook until soft. Meanwhile heat the crushed anchovies in their oil for a few minutes in another pan, then add the flour followed by the milk to make a savoury roux. Stir this into the aubergine and tomato sauce along with the sausages, salt and sugar. Tip the sausage mixture into an oven proof dish and sprinkle with the breadcrumbs and drizzle the top with more olive oil. Cook in the oven for 15 mins or until the top is a golden brown. Sprinkle with parsley and serve.
